his deceased relatives. Despite their adamant proclamations that he return to the Land of the Living, Miguel, along with the help of a bumbling skeleton named Hector (Gael Garcia Bernal) attempts to track down de la Cruz. On paper, the Land of the Dead hardly seems like an appropriate setting for a family film. Inhabited by skeletons, it is a place where, had the film gone in a different, Tim Burton-like direction, could have been absolutely terrifying. In the loving, creative hands of Lee Unkrich and Adrian Molina, however, it is the most spectacularly vibrant, colorful, beautiful film of the year. From the moment Miguel crosses the bridge to the Land of the Dead, a sprawling, awe-inspiring metropolis emerges. Filled with millions of lights and countless brightly colored dwellings, it is a staggering technical marvel, whether you have an affinity for animation or not. COCO does tackle a number thematic elements, obviously, as death is an imperative aspect of the story itself. There are a number of difficult sequences, but unlike the utter devastation that played out in BAMBI, in this particular film, death isn’t a tool used in the destruction of innocence. Instead, COCO introduces the world to a cultural celebration that is based solely on honoring and showering love upon those who are no longer

with us. To Pixar’s credit, it couldn’t have been easy getting this story to the big screen. Not only was the scale of the animation staggeringly ambitious, but to tell an unconventional tale such as this is an incredible risk. Fortunately, like the studio often does, it delivered in every conceivable aspect. Like Tomm Moore’s 2014 masterpiece SONG OF THE SEA, you could take virtually any frame of COCO, and it could stand on its own as a work of art. It is impossible to grasp the full magnitude, and comprehend the full scale of its sprawling wizardry in one sitting. Most importantly, COCO delivers lovable characters who are tender, tenacious, and often laugh out loud funny. Miguel is as likable and well-rounded leading character as Pixar has produced in years, and Hector delivers as the clumsy, lovable loser. The supporting characters are all top-notch as well, ranging from fiery to adorable and everything in between. For a film featuring thousands of skeletons, COCO is full of life, hope, and hubris. The theme of familial love stands at the crux of everything COCO stands for, and this dynamic is simultaneously heartwarming, heart-wrenching, and hilarious. A special thanks goes to Regal Cinemas at Destiny USA for allowing me to attend this month’s film.

Winter Warmers & Holiday Ales: A Boozy 12 Days of Christmas Humans have been celebrating the winter solstice for hundreds upon hundreds of years. The Norsemen arranged huge feasts that included drunken cavorting with beer in preparation for the celebration of the longest night of the year. The Saturnalia was an ancient Roman festival held from December 17 to the 23rd, to praise and honor the god Saturn – it included a public banquet, gambling, gift-giving and 24/7 partying in a Mardi Gras type atmosphere, where they continually consumed beer and wine. The tradition of brewing during the month of December continued on into the Middle Ages by monks who brewed for the winter solstice and religious festivities. In addition, Wassail was created during the Middle Ages. Wassail is a mulled punch, served hot – it was brewed with a variety of different elements including roasted crab apples, cinnamon, nutmeg, ginger, and people would drink it out of a large communal bowl. In fact, there is a traditional carol, popular at the time, about the Gloucestershire Wassail that was sung during the Middle Ages: “Wassail! Wassail! All over the town, Our toast it is white and our ale it is brown; Our bowl it is made of the white maple tree; With the wassailing bowl, we’ll drink unto thee.”

Wassail is a mulled punch, served hot – it was brewed with a variety of different elements including roasted crab apples, cinnamon, nutmeg, ginger. (And now I think we all know how the bubonic plague spread … it wasn’t just the fleas.) The Industrial Revolution in the mid-1700s in England gave rise to beer made with wild yeasts being aged in oak barrels for months to years, with tannins being released during the fermenting process, adding to the complexity and flavor of these winter warmers being produced specifically during the holiday season. All of these cultural and historical celebrations, along with new innovations and recipes, paved the way for our current holiday traditions, parties, and special winter and holiday brews. They are usually darker in color from a light copper to a very dark brown. Pilot Batch: Dark Chocolate Scotch Ale – Genesee Brewing Company, Rochester, NY. Instead of hot chocolate during Christmas morning breakfast, you could just as easily drink this brew and at 7.5% ABV, it won’t exactly get you slobberknockered before noon. This light Scotch Ale has a very pleasant bittersweet chocolate body from start to finish that’s not too sweet or overpowering so that the richness of the malt still shines. It is also brewed with Hedonist Artisan Chocolate’s 72% dark chocolate, and is Genesee’s collaboration with a small business right in Rochester, NY! 2XMAS – Southern Tier Brewing Company, Lakewood, NY. 8% ABV, Winter Warmer Spiced Double Ale. This is most definitely Christmas in a beer bottle. A potpourri of sorts, it’s brewed with figs, orange peels, ginger root, cardamom, cinnamon, and cloves. I find that it is reminiscent of gingerbread or spice cake. It is a brew for sipping, (rather than swigging), while cozying up to a roaring fire with Bing Crosby singing “White Christmas” softly in the background. Truly, this brew could quickly become part of your holiday traditions every year. Saranac Caramel Porter – Saranac Brewery/F.X. Matt Brewing Co., Utica, NY. 5.4% ABV, English-style Porter. This very mild roasted porter with hints of chocolate and caramel is sure to be on Santa’s nice list. The beer is brewed with carmelized sugar, roasted continued on pg 42

The Gem Diner The Gem Diner is an icon in the Central New York Area. This landmark was taken over by Doug LaLone and son Tony seven years ago. At that time, the structure itself had been compromised from years of disrepair, but the LaLone family was determined to restore it to its glory days. They worked closely with the City to acquire special permission to restore and/or replace the steel siding so they could preserve the original trolley. “It was a labor of love,” stated Doug. “We just couldn’t let this historical landmark get demolished, and we knew it would be a lot of work to get it back in working order.” After opening, they added an outdoor porch for additional summer seating. We also use for private parties,” said Doug. The Gem also is the exclusive caterer for the Aloft Hotel at the inner harbor. The family owned business has grown immensely over the last few years. They accredit to the renewal and creation of the Inner Harbor project, but part of it is their own investment and commitment to the West side of Syracuse. This business model is tried and true as evidenced by the 44 employees with minimal turnover. “We treat everyone here like family,” says Tony. “We don’t have the ‘you can be replaced’ mentality, we prefer to work with our people so they know they matter, and are important to our operation.” You can see how happy the staff are when you walk into the door – you are instantly greeted with a smile and “hello.” The other proof of success with this practice is the fact that the Gem has had a record year so far! There is a six-page menu and 20 daily specials – 10 for breakfast and 10 for lunch/dinner. All the specials are made from scratch daily and the extras are contributed by local vendors such as Geddes Bakery and NY Bakery. There is a nice variety of pies and other desserts to cap off your already delicious meal. The LaLone’s are committed to their community and are actively involved with the Carol M. Baldwin Breast Cancer fund and local veterans’ groups. “We have a group of Veterans who come in every day for breakfast, and some are WWII. One fellow is 96 years

Nature Boy As a kid growing up in the late eighties and early nineties, there were few things I looked forward to more than Saturday mornings. Not only did it signify the fact that I had the next two days off from school, but it also meant I was going to get to watch THE SMURFS, and of course, the absurd pageantry that unfolded in the WWF. I cheered for guys like The Ultimate Warrior and Bret “The Hitman” Hart, and loathed the heels like Mr. Perfect and Ravishing Rick Rude. Despite the fact that I knew that it was all a choreographed farce, I still completely bought in to the over-the-top melodrama that unfurled in the squared circle. Though I was a WWF fan, I had friends at the time who watched the rival company WCW, and I was familiar with some of the bigger names attached to it. So, when Ric Flair made his transition from WCW to WWF in 1991, I was at least vaguely aware of him. He

portunity to begin a rigorous training regime with coach Verne Gagne to learn the bare bones of professional wrestling. At first, the headstrong young man felt that the training was too tough, and he was set to quit. Realizing that Flair had incredible potential, Gagne insisted his protégé continue, and from that point on, Flair never looked back.

Though his fame was hardly at the level of a Hollywood star...Ric Flair became a king in his profession. Flair describes his early career as “boring,” but soon developed a persona that took flight. He modeled himself after “Nature Boy” Buddy Rogers, and altered the character enough to make it his own. He began entering the ring dressed in elaborate robes and displayed a grandiose and combative persona that made him stand out amongst all others. He constantly bragged about his wealth, strength, and libido, and his popularity began to skyrocket. Though his fame was hardly at the level of a Hollywood star, or even that of Hulk Hogan, Ric Flair became a king in his profession. He had a wife and children at home, yet the wrestler lived the life of his professional alter ego. He was on the road constantly, fighting in a different town virtually every single night. He took his matches seriously, but the lavish lifestyle that they provided was the most important aspect of all. He was loose with his

money, and the ladies, to the point where there was no separation between the man and his character. He would occasionally show up at home with a present or two for his kids, but he would soon become bored, and would countdown the seconds until he hit the road again. Throughout the film, you witness the damage that the lifestyle reaped upon his family, and yet Flair himself makes no qualms about his choices. Through introspective interviews, the viewer discovers that, even to this day, there is still not really a separation between Fliehr and Flair. We watch as each one of his children lament on the fact that he was never around, and they would keep their eyes on the doors at basketball games and birthdays, hoping to see their dad walk through the door. While Flair readily admits that he was hardly the father that his kids needed and deserved, in the next breath he lovingly laughs about memories from the road. With a bemused smirk he estimates that he has slept with at least 10,000 women, and scoffs at the mere idea of monogamy. At the same time, the man was fiercely loyal to his friends, choosing their longevity over his own career advancement multiple times. This is when Karpf’s documentary becomes surprisingly conflicting. On one hand, you have a man that appears to have principals and values, and on the other, a despondent father and husband who cared little about the carnage he caused at home. Despite living a life that he describes as “every man’s dream,” there is nothing enviable about his existence. His body is broken, his bank account is drained, and he left a trail of destruction in his wake. Each one of his children cried in their interviews, lamenting the fact that their famous father was never there. Flair was a high functioning alcoholic who couldn’t make it through the day without at least 10 or 15 drinks, and as his son Reid entered the wrestling world, the Flair boys would party together. Ric realized, unfortunately much too late, that this lifestyle has its dark side. In 2013, Reid died of an accidental overdose, which left his father utterly devastated. With a lump in his throat, and tears in his eyes, the Nature Boy proclaims that he wishes he could have been more of a father than a best friend. Rather than a mere collection of celebratory clips and sound bites, Karpf’s film is much more enlightening investigation into the fallacies of fame. It allows the film to become more than just fan-friendly fodder for wrestling fans. NATURE BOY examines what it means to have it all, only to realize, much too late, the cost of achieving it.

We want them to enjoy life like any other child. It’s especially important since my son has spina bifida.” The entire family works with or for the Challenger Baseball team in this area. The league was created by parents in the Eastwood area so their children would have the opportunity to play baseball too. They started with two teams and have grown the event to now host 18 teams. Since its inception, the league has grown to 18 teams – 10 junior teams, 6 adult teams and 2 senior teams for a total of 300 players! Since some families have more than one child in the league, they began working with the Town of DeWitt to build the Field of Dreams at Carrier Park in East Syracuse. With donations from business, government and private sources, the Challenger League has built 2 of the 9 fields needed to allow all games to be held in one place. Six million dollars is needed to complete the dream field so the work continues, and the LaLone family is a large part of their future. The league president, Dom Cambareri said, “The Gem Diner is one of the generous businesses that sponsor our teams. But Doug, Tammy and Anthony LaLone are so much more than sponsors. They have been key partners who have come up with creative ideas on how to raise funds and awareness for the project. No, this isnâ&#x20AC;&#x2122;t an ad for Ollieâ&#x20AC;&#x2122;s, but I will admit that I love to go there and browse through the cheap stuff â&#x20AC;&#x201C; especially the books. You never know what oddball gem youâ&#x20AC;&#x2122;re going to turn up there, and this monthâ&#x20AC;&#x2122;s selection is no exception. The Ultimate Survival Manual: 333 Skills That Will Get You Out Alive by Rich Johnson (and the Editors at Outdoor Life) (published 2012) is not just a fun read, itâ&#x20AC;&#x2122;s genuinely informative. While I wouldnâ&#x20AC;&#x2122;t go so far as to say itâ&#x20AC;&#x2122;s a â&#x20AC;&#x153;must haveâ&#x20AC;? for anyone other than a real outdoors-person, it might just come in handy one day if, say, you slid off a lonely road one snowy night. Now, granted, in these days of cell phones, for the most part weâ&#x20AC;&#x2122;re not at the kind of risk our parents and grandparents may have faced while traveling, or on an outdoor expedition. But I do remember traveling back and forth to Vermont when I was young, and our route took us along the edge of the Adirondacks on a sparsely traveled road â&#x20AC;&#x201C; and the

The Wilderness section takes into account just about any eventuality you can imagine, from an accident while hiking to being stranded on a desert island to getting lost in the woods. Just in case you think this would never happen to you, a short tale from my own life (and by the way, the writers have peppered the book with â&#x20AC;&#x153;It Happened to Meâ&#x20AC;? stories from their own lives and adventures). I was silly enough to go snow-mobile riding with a friend one cold winter evening up near his cottage in the woods. It wasnâ&#x20AC;&#x2122;t that far from civilization, and we were following a trail â&#x20AC;&#x201C; what could go wrong? In the lead, I followed a trail to a small bridge over a stream. By now it was dark, so we decided to turn around. Wrestling the machines around,Â I took off back up the hill we had just come down. Reaching a divide in the trail, I waited for my friend to follow and assure me I was taking the right turn. He wasnâ&#x20AC;&#x2122;t behind me. I turned off my sled (which probably wasnâ&#x20AC;&#x2122;t continued on pg 41

The Case with Paul Case Paul Case grew up in the resort town of Sylvan Beach N.Y. which featured a midway with tons of bars. And, for three months a year one could hear 5 bands a night at the Forest Hotel, Lakeshore Hotel and DiCastro’s. Paul Case worked in the midway at a mere 11

“We made one record but it was never released.” says Case. “When we disbanded, I was a hired gun working for John Lee Hooker, James Cotton, Lou Reed and the Winter Brothers...” years old where he was always peeking through the windows to see. Muddy Waters - Kitchen & Bar To say that Muddy Waters is a “New Orleans” restaurant is to do it a great disservice: it’s far more than that. On a chilly Friday evening-after-Thanksgiving, my friend and I found the stairs leading down under Sammy Malone’s to a place called Muddy Waters. We stepped inside and were immediately steeped in the sounds, smells, and sights of another place: the American South of our dreams. Vivid, fun, lively but relaxed. And offering some of the best food in the world. We were there to meet the owner, Tom Taylor, and find out more about this Kitchen & Bar he rightly calls one of a kind, a labor of thoughtful love, and unique among restaurants in our area. With a little time to look around, we were delighted to find one wall covered with scalloped wood that looked like the roof of a fishing shanty; a replica alligator lurked on another wall; street signs on the support beams proclaimed “Bourbon Street,” and “Vieux Carre;” and photos of famed musicians of the south (like Muddy Waters himself) were

Muddy Waters Kitchen & Bar continued from pg 17 Tom, have scouted the south from Maryland, through the Carolinas, to Florida, across the panhandle to that famous delta city, and up the Mississippi to St. Louis to find the best that Southern comfort food has to offer - and then added some staples dear to the heart of any Central New Yorker (like burgers, prime rib, and chicken riggies), so that no matter what your taste, you’re going to go home full and happy. While we waited, I watched a large party with several children fill up a table beside a wall of Mardi Gras lights, and was amused as their waiter delivered four glasses of milk to their table. Comfy booths lined the side walls of the large space with its centrally located bar, and tall tables to one side of the bar were just right for a snack and a drink - and the music that was to come later in the evening. Taylor arrived and immediately insisted we have a drink. My friend chose a favorite beer, which, being a picky beer drinker, he was happy to find, and I contemplated some of the specialty drinks, like a full range of Martinis (a Maple Bacon Martini?!) and Moonshine Margaritas. Then he suggested we try some Crispy Calamari ($10.99). Full confession: I am not normally a fan of calamari, but since my dining partner was - and as it was recommended by our host - I went along. It arrived crisp and golden, with lemon wedges and an exquisite Remoulade for dipping. (The menu also happily notes that it’s a gluten free choice, so yes, you can dine here without fear of going off your diet!) I tentatively bit into a circlet and was transported. It

was crisp on the outside, tender on the inside, and the Remoulade gave the sweet meat a gentle kick. I’m converted. While we worked our way through the generous plateful, Taylor explained that the restaurant was the culmination of many years of experience opening, owning, and running a variety of bars and restaurants throughout the area. This establishment was to be a focus on good food, good drinks, and a distinct atmosphere - something Taylor feels is important to offer. “An experience,” he explained. “The culture of the south, the food, and the music.” For a short time, the restaurant was closed and re-opened with an Italian theme, but evidently Taylor’s heart was in Muddy Waters, and soon it was back to its roots. “It seemed right,” he joked, looking out the window at the river rushing by, with the bright half-moon shining on it. Muddy Waters offers music on the weekends, with the occasional extra evening (lagniappe, as the Cajuns say - that something added that you didn’t expect) thrown in. Taylor believes in supporting the local music scene, and even promoting new bands getting a start. We were urged to sample some more food, so I chose a Chicken Po’ Boy ($11.99) for my friend, and I just had to have some Poutine ($9.99), though I admit to contemplating a signature dish: One Hot Mess (Chicken N’ Biscuits, topped with Sausage and Cheddar Gravy, $14.99). It’s fair at this juncture to tell you that I am a big (make that huge) fan of Southern cooking - from Maryland Crab Cakes to a Crawfish Boil (be ready for Muddy Waters to start offering this delicious treat in mid to late Spring - it’s a seasonal dish!), and if I had to eat in one city for the rest of my life it would be New Orleans. The menu didn’t disappoint me in its variety and selection - all my favorites were available, and as I noted, if you’re one of those who hasn’t yet developed a taste for this extraordinary style of cooking, Muddy Waters thoughtfully serves up more traditional fare as well. The Poutine (which is actually an Akkadian dish - that is, French Canadian - and consists of crisply fried potatoes, smothered in sausage gravy and accented with melted NYS cheese curds and a sprinkle of chopped scallions) was perfect, and for this diner at least, a full meal! My friend’s Po’ Boy was the real thing: slices of perfectly cooked chicken filets on a French roll, covered with gravy and a side of those crispy fries. A word about the Po’ Boy: this is not your mom’s “sandwich,” or a deli sub. A good Po’ Boy is sloppy and

full of juicy meat or fish, often served with gravy, and according to tradition, the result of a streetcar (yes, as in Streetcar Named Desire) strike when a local restaurant owner took pity on the “po boys” who were striking, and served them up filling sandwiches. As we were eating - okay, stuffing our mouths as fast as we could! - with our delicious meals, Taylor’s descriptions of good Southern cooking made it clear that he knew his subject (New Orleans cooking isn’t about hot, it’s about using spice and a bit of heat to bring

out flavors; Southern cooking is based on making something delicious out of what’s to hand), and that he had a real appreciation for not just the art but the story of it all (having grits down south convinced him that this was food to be discovered and shared). Today, the show is gone, and for the most part, so are the User Groups.

Why? Because you can Google it. At some point —and quite a while ago now— “google” became a verb. Does anybody know what a “search engine” is any more? This was simply the means by which we located “home pages,” which have now simply become the place you enter a website which once was a long, scrolling bunch of information and has now become a platform of information, tools, resources, interactivity, and even replacement for itself. How’s that again? Think about it: you can use a website and its tools to create your own website. To a degree, in a convoluted way, developers are coding themselves out of a highly-paid job. This can also be said of many of the functions that once commanded reasonably high per-hour fees because the skills required to perform them —and the sheer time it took to develop the needed expertise— were not common. With most technology, there are “generations.” Think of your family’s first television: perhaps it was a little boxy like thing, or a large piece of furniture containing the boxy thing that had a black-white-shades of gray glowing screen with scan lines running up and down it, rendering an image sent through the air – as opposed to via a cable. We have moved so many “generations” along, thanks to the fast rate of reproduction that computers themselves allow, that photographers, graphic artists, news-reporters, a whole host of brain-power and skill-based occupations have been replaced by apps or web platforms. including real-time updates on traffic and weather conditions so that you can leave a little bit early, or take a slightly different route because of an accident. You can share your trip with someone you’re going to meet, or with your mom so that she knows where you are and that you arrived safely. As apps and options become more clever and sophisticated, the people who once made the buggy whips are becoming obsolete. Think about it: you can take a photograph at a very high pixel depth (which once would have required a fine camera, a good lens, bracketing exposures, developing and cropping and burning and dodging to get) with your phone, crop it on your phone, change the exposure, highlight areas, add another layer, get rid of a double chin, remove a pesky shadow – in other words, little-to-no-skill required. Yes, you may still need a good idea, but your ability to take thousands of shots up the odds that one of them will come out clever or well composed. The same is true for most technology skills. We have moved so many “generations” along, thanks to the fast rate of reproduction that computers themselves allow, that photographers, graphic artists, newsreporters, a whole host of brain-power and skill-based occupations have been replaced by apps or web platforms. As of yet, they still require you to interact with them because it is you who has a particular need, but the technological power to fulfill that need don’t demand that you go to an “expert” any more. I watch a series of channels on YouTube these days, sometimes getting off into odd pathways of exploration and sheer amazement that so many people seem to do nothing but stand in front of their phone and chatter – and the millions who seem to do nothing but watch them. Which brings us all the way back to Point ‘n’ Click. Every time a buggy whip manufacturer goes out of business, someone finds a new use for leather. Computing has made many jobs so easy as to be obsolete – and developed a space and an ability to create new ones. What they might be, even five years from now, is anybody’s guess. If Tesla were alive today, I wonder what he might propose?

But from day 1, they’re taken care of by the vineyard crew. The vineyard crew is an integral part to the success of the vines. After harvest, they do some pre-winter pruning to get the vine prepped for the colder months. Repetitive Cruel Jailing Dear Ben: Congratulations. You were a great candidate. Conventional wisdom among your opponent’s supporters, including myself, is that a Republican belief system will not accommodate what is really needed on so many levels to improve our lives. Especially the poor. You may be an exception and the opportunity is yours. I hope you have time to review this column. With you as an advocate this could easily take hold. It speaks of such deeds that comes only from our finest. It is necessary, it is tragically pioneering and a vital step toward embracing human justice in our legal system. Local citizens, many recently removed from childhood, languish in very sad, degrading and useless pain, as we debate. The first step begins the journey. I hope you will consider what I offer here and make it happen.

A Message for Mayor Ben Walsh D-R-U-G---C-O-U-R-T & Attorneys and Judiciary I have come to know several of you over the years and I hope at these times that I have earned a regard that will give me your attention for this brief article. If you do read it, I believe you will consider these thoughts and perhaps take steps that will improve the fate and provi-

dence of your charge. I offer the difficulty and the solution. I am into my senior years. If one sees things with their best judgement tempered with compassion, the wisdom of age can have great value. This little column affords me a unique opportunity to share. I humbly offer you this wisdom, applying fair and missing insight as

I believe this is central to the high esteem of your profession. Sometimes things need to be designed in a way that lights our inner beacon. That is my hope. It is rare and elite politicians, and those involved in law, more than any other that give value to all the crimson sacrifice that has protected our founding decency. When something this grave is in place you must, for your charge and for the honor of your days, use the intelligence and power available to you to change things. As you know, considerations that fall within the range of fighting Drugs and Drug addiction are extremely complex. From American saturation with drugs, to the southern border, to pharmaceuticals that reward Doctors for prescribing OxyContin for sniffles and muscle aches and everything in between. As I do not want to dilute this effort I am going to concentrate on one local grave inadequacy that we can change. I am a former alcoholic. My drug was the worst in those days. It took me years to recover just from alcohol. And it took the strongest part of me to achieve this. I am 37 years removed from this pure hell where the beauty of being human is consumed by a force that chews that beauty to pieces. Today with the emergence of Heroin, alcohol has taken a back seat. Heroin is far more addictive and damaging than alcohol. It twists the mind and takes possession with an unprecedented grip.

Yet we have learned with certainty that penal consequence is cruel and inadequate for those whose plight falls within the true scope of addictive behavior. Incarceration among such wide and varied mitigating circumstance is not a solution. It is society grappling with itself while it inflicts cruel jailing on its people. -Especially our young. Strong people that have never weakened in a true or similar sense, sometimes strongly feel they cannot perceive how addiction can force one to do such things. When that happens it is tragic, as truth is removed in keeping with the strength of that thinking. Believe me, the awesome power of addiction is true. I have lived every wrenching, mind altered moment. You will go for the drug as your children pay the price. You will continue your pursuit knowing your career is on the line. You will use as your divorce is being filed. You will get your drug. Your job, your love, your friends, all that is good will leave you. You will still get your drug. Nothing will stop you except death or a wisdom inducing intervention that reaches that part of submerged good sense that is struggling to survive. This article is largely about Judicial option and thinking, at often the absolute most critical and important moment in an addict’s life, (that moment before the Judge) that is currently not only being wasted but gravely harming the user even further. Please don’t take offense. This has nagged at the conscience of many of you. Those that legislate have not correctly embraced the heart and ramifications of the problem and have left you an alternative that most often does not apply. You often sense that value, fairness, justice and empathy are not served as confused people are sent to languish. Their moment with you is as important as a life a preserver is to someone drowning. This article is about how to give you options that are fair, and sensible, and urgent that provide hope and help. While researching for this article I found that Massachusetts has already taken a vital first step. They have embraced the reality that narcotics and alcohol addiction are a public health emergency and not a crime. Women who have substance abuse cases are no longer taken to criminal prison. They’re taken to civil commitment facilities. This is a first step on a much longer journey. There is no reasonable movement away from incarcerating people from applicable narcotics offenses. Anything that causes a departure from judicial fairness is unacceptable. “Fitting” compassion in the drug arena causes fairness rather than an unequal distribution of justice. And because the system does not give you the right tools your purpose and value in drug cases is often not only neutralized but your profession is reduced to playing a destructive role in already broken lives. This is a harsh and grave reality that cries from great suffering to be seen. Every second in jail that is undeserved diminishes all that is good. The following is idea. It is guideline. Only a small percentage of drug users or alcoholics are able to meet their demands. Failures

This vital step is a vital component in the series of emotional triggers that each individual must undergo at their own pace, until recovery is underway.

Many have never been exposed to another way of life. In any event, without intensive effort only a few percent of addicts recover. They desperately need this recovery experience to begin at sentencing. We need to develop a facility and make law compatible with recovery rather than punishment. This confinement facility should be built to embrace longer term confinements to accommodate associated crime and to better insure recovery. Six months or a year in rehab would be priceless for a drug abuser. Whereas six months or a year in jail enhances criminality and self-loathing. If need and economics are compatible you may want to consider partnering with one or more other counties. If you are successful Central New York can be the beacon for others to seek state and or federal funding for rehab-facilities in lieu of jailing, designed around recovery and social assimilation. How this affects justice system employment will be a major question. Fortunately, this aspect of the idea can be met with great success and improvement. Prison guards may also work at the rehab facility. It would be invaluable to offer them specialized rehab training. There are those that are not attracted to the social work aspect. They should be utilized in the real criminal environment. Many will choose the rehab. This can be done not only protecting Sheriff’s and Correctional Guards but by providing attractive options that may also include specialty pay and at the same time offering varied suitable and needed skills to current employees. In this space I can only hope to offer inspiring idea. The think tank made up of your peers will develop state of the art thinking and course. Once the think tank is confident it has arrived at sound conclusions it is time to write legislation. On one hand you will be seeking funding. On the other you will be revising law compatible with this effort. The easier you make it for a legislator the better your chances. Too much peripheral idea can dilute the main thrust and could endanger passage. Legislation developed by a think tank from your profession will garner attention like no other. If you so decide, this will happen. I would like to leave you with this. Much law is faulty or inadequate. Law is simply rules written by a self-interest lobby or a concerned or disgruntled legislator and either justly or unjustly passed. When in a position of power, I believe your responsibility is very high. The elite have obligation to maintain the standards that make them elite and make this a great land. The treatment of our citizens is the measure by which success is gauged. This will happen if someone decides this is the time to walk tall. All that is needed is Leaders, Effort and Compassion and Central New York can be the beacon for the finest that humans can be. (Please discuss this with your peers – As you know words die on the vine, less one man or woman begins an action.) Ben, if not you, who? Sorry guys, but alcohol can increase your appetite and lower your resolve to resist overeating. In addition, many holiday drinks have as many or more calories than a dessert. Try to limit yourself to one alcoholic beverage per occasion. • Move! Here’s a fact for you. Thinking about working out burns between zero and zero calories. Even if you only have the time to fit in twenty minutes a day, it’s better than doing nothing at all. Take a walk, hit the gym, park at the opposite end of the mall, or use the stairs instead of the escalator. You could also blow the dust off that recum bent bike you’ve shoved in the corner and use it! • Stay active to reduce stress. Exercise is one of the best ways to reduce the stress associated with the holidays. Stress can be a huge trigger for people with little or no self-control. Go sledding with the kids, build a snowman, ski, or have a snowball fight. • Have just one. It’s fine to be excited about that freshly baked pumpkin pie, but limit yourself to just one slice. If one is not in your vocabulary don’t have any. • Just say NO. Say no to the doggie bag. Taking home table scraps will only encourage late night snacking.

There’s no reason why you shouldn’t be able to enjoy family, friends, and food this holiday season. It’s your day-to-day habits that will have the biggest impact on your weight loss efforts, not what you do once in a while. So enjoy the holidays. Yes, even the food. Once the fermentation process is over, the production team gets the bottling line running. Obviously, not all wines are bottled right away. Many of the reds need time to age. A particular wine may also sit in a tank completed for some time waiting for the current vintage to become closer to selling out. The bottling process can be done at any point all year round. Some wineries have a bottling station right on site with a team that runs it. Other smaller wineries hire a mobile bottling company to come and bottle as much as they can in their allotted time. Has this answered the question ‘what goes into a bottle of wine?’ Maybe it’s more like WHO goes into a bottle of wine? It’s the person responsible for grafting the vine onto the best rootstock, the crew that plants each row, which sometimes varies from the crew who painstakingly maintains each row of vines year round. That same hardworking crew that then harvests each variety of grape, treating them like their own child. It’s the winemakers who concoct the perfect combination of yeast, sugars and grape juice to make your favorite wine, and the team that has perfected the art of bottling. We certainly can’t forget those individuals who work on naming the wine, writing a description that perfectly describes what you taste and smell, designing the perfect label and then skillfully marketing it. And we definitely don’t want to forget tasting room staff that are expertly trained on each wine, giving you the best wine tasting experience you can get. Dexa scans (the low dose x-ray test to evaluate for osteoporosis) are the ones that I prefer to do because this is where the action is. No one suffers long from a fractured ankle, not the same way people do with a fractured back or broken hip. Since the dangerous fractures occur in the back and in the hip that’s where the testing should be done. It’s an easy, fast and painless test usually covered by insurance. Now once the doctor establishes a diagnosis of osteoporosis you have options and most of the time that includes taking a bisphosphonate like Fosamax, Actonel, Boniva, or Reclast. You can also use different classes of drugs like Evista or Prolia to treat osteoporosis. Weight bearing exercises can increase bone density and should always be recommended. So there are some high tech drugs that are available to treat thinning bones. Most gynecologists and primary care doctors recommend calcium and vitamin D supplements but the evidence behind this recommendation is very poor and calcium supple-

I think before you take any prescription meds you would do well to look to the supplements that affect bone health … namely vitamin D and vitamin K2. You have heard of vitamin K but you’re usually thinking of vitamin K1 (phylloquinone), which is found in plants with leafy greens etc. whereas vitamin K2 ( menaquinone ) is found in animal fats and fermented foods but also found in eggs and cheese. I don’t think many people know about vitamin K2. The main function of vitamin K2 is to modify proteins to give them the ability to bind calcium. Multiple studies in vitamin K2 have shown improvements in bone related mineral density. Several of these trials also reported fractures and found that vitamin K2 reduce spinal fractures and hip fractures and all non spinal fractures by a greater amount than any of the other drugs listed above. Vitamin K2 is also produced by bacteria in the large intestine and there is some evidence that repeated antibiotic use can contribute to Vitamin K2 deficiency. Luckily you can buy Vitamin K2 at the drugstore. The U.S. Food and Drug Administration (FDA) has not approved any form of vitamin K for the prevention or treatment of osteoporosis. There simply haven’t been enough trials to inform our recommendations. I would If I had osteoporosis or osteopenia ( a milder form of osteoporosis … call it osteo lite! or pre - osteo ) Regarding vitamin D deficiency; it is rampant. It is very hard to take too much vitamin D despite it being fat-soluble. We see literally hundreds and hundreds of patients with vitamin D deficiency and I have seen no-one with vitamin D toxicity in many years and we check Vitamin D on everyone! I usually recommend at least 5000 international units of vitamin D3 . From the Medical Dictionary “Vitamin D3 is synthesised in the skin after exposure to ultraviolet light; ( sunlight) in contrast, vitamin D2 is obtained only from the diet. Both vitamins D2 and D3 are metabolised to 25-hydroxyvitamin D in the liver, and then to the active 1.25 dihydroxy form in the kidney. Vitamin D has a major role in the intestinal absorption of calcium, bone calcium balance and renal excretion of calcium.” So just being exposed to a lot of sunshine is not sufficient alone to get a therapeutic vitamin D level. Treating vitamin D deficiency should be your first response if you have been told you are osteopenic or osteoporotic. Finally a word on calcium supplements. Calcium is important for bone health but taking calcium supplements has not been proven to be beneficial. I know I get a lot of flak from the gynecologists when I bring this up but trial after trial has failed to demonstrate that calcium supplementation in the form of calcium carbonate etc. has been significantly beneficial to bones. I tell my patients get your calcium from food … broccoli, canned salmon, oranges, almonds etc. not from tablets/pills. Finally this is holiday time after all … This is the season to get out and enjoy events with friends and family. Why not try the sleigh ride at Highland Forest or try ice skating downtown? I want you to consider two other events. The first is the Solstice at the Cathedral. This event is December 7th-9th at St Paul’s Cathedral downtown. As taken from their website … “Solstice at the Cathedral” is a musical experience celebrating the Winter Solstice – the return of light after the longest night of the year. This special concert features secular music from some of Central New York’s most critically acclaimed performing artists. Collaborations include a mix of pop, jazz, blues, Celtic, and original compositions combined with creative lighting and a state-of-the art sound system to enhance the overall experience.” Also that same weekend is the Desantis orchestra doing Christmas at the Palace Theatre on Sunday Dec 10th. This is a great show of traditional Christmas music done by local talent young and old alike. You will hear prominent singers and musicians and be introduced to some rising star’s at a traditional Christmas setting and what a great way to start the month of December. Knowing how to build and manage a fire is a key to survival in the wilderness. And I do recall a few lessons from scouting: mark your trail (so, among other things you know you’re not walking in a circle), follow a stream if there is one, moss tends to grow on the south side of trees, that kind of thing. But given the number of natural disasters that we’ve experienced lately, from hurricanes to wildfires to floods, the section on handling these challenges is a good one to start with. Again, the writers begin with that warning to have needed emergency supplies on hand, including a good basic medical kit, matches and candles, canned food and water, and extra batteries. (I have a wind-up LED flashlight which is a handy little tool to keep around – it can’t run out of batteries and doesn’t need replacement bulbs.) Some of the sections here are regionally specific: tsunami instructions are probably not necessary for us here in Central New York, but even so the information is —especially if you’re a fact-junkie like me— interesting reading. (You can learn such gems as how a fault line moves, how to survive a sandstorm, even how to swim through burning oil.) But other sections, like driving in a blizzard, or how to survive if you’re snowbound in a car, could actually come in handy. Power outages aren’t uncommon, and even preparing for an EMP (electro-magnetic pulse) event (not as conspiracy theory-based as it might sound: there actually was a solar flare in 1859, or the so-called Carrington Event, that did take out telegraph machines across the earth) - and the degree to which we depend upon computer chips to manage day-to-day life could mean a much more serious problem if such an event were to happen again. Finally, there is a section on Urban preparedness, from navigating unfamiliar city streets to escaping from the trunk of a car or a burning high-rise building. It’s the sort of book that actually makes you feel more confident than spooked —a little knowledge can come in handy when you least expect it— and that makes good idle time reading as you can pick it up and put it down and never lose the story line. Well-illustrated with clearly drawn instructions for things like knot-tying and woundbinding, the book is nearly 6 years old but most of the information is timeless, and even if you never need it, you can always generate confused stares at a cocktail party when you innocently ask, “Say, do you guys know how to escape a kelp entanglement?” The book is available on Amazon, as well as —for as long as they last— at Ollie’s.

This brew is a classic that’s been brewed since 1988 – nearly 30 years(!) and specifically brewed this ale during the few weeks leading up to Christmas and into the was Harpoon’s first ever seasonal beer. Along the way, they’ve perfected the smoothness winter season. This is a smooth toasted malt brew with notes of treacle (the British term for molasses) and a deep caramel and toffee finish that delightfully lingers. It is brewed of the brew and the balancing act between the spices of cinnamon and nutmeg. The with French Strisselspalt and Aramais hops. Personally, out of all the brews that I tried aroma of the brew is cinnamon and vanilla. Upon first taste it’s sweetly spiced, but not while writing this article, this was one of my favorites that I will definitely be looking forward to for many holiday seasons ahead!

This beer (and brewing company) has loads of fans all around the Northeast and beyond – a winter brew that the masses anticipate every year, brewed with orange peels, cinnamon and ginger. True to form, it is spicy and citrusy, but balanced in both, & malty throughout. A crowd pleaser, and easy drinking, this is the perfect brew to bring and share at any of your holiday parties.

This Month’s RECIPE HOLIDAY LASAGNA by Judith Hanneman

INGREDIENTS:

Big Moose Winter Ale – Saranac Brewery/F.X. Matt Brewing Co., Utica, NY. 5.7% ABV, American Pale Ale. If you believe that spices belong in a slice of pumpkin pie, and not in your beer, you will find a friend in the Big Moose. It’s an extremely crisp, floral, and citrusy brew without a hit of cinnamon or any other spice for that matter. And if you’ve tried this in the past, you might want a pick up a 6-pack now, because they’ve revised their recipe a bit – it now includes 2-row Pale, UK pale, Carapils, and Caramel Malt, along with Centennial, Citra, and Amarillo hops. 2017 Celebration Fresh Hop IPA – Sierra Nevada Brewing Co., Chico, CA. 6.8% ABV, IPA. This dry-hopped American IPA has a bold strong hops presence with malt mixed in. There are some pretty great pine notes, especially on the finish. If you haven’t tried a brew with pine notes, I highly recommend it. You might love it, you might hate it, but it’s worth the experimentation. While the Celebration IPA is not considered a “winter warmer,” it is a seasonal brew that only comes out this time of year, and I would be remiss to not mention it, and if including this brew in my list puts me on Santa’s naughty list, then so be it. (Besides, I’m already likely on that list anyways … ) And did I mention pine? The Mad Elf Grand Cru 2017 – Tröegs Independent Brewing Co., Hershey, PA. 11% ABV, Belgian Strong Dark Ale. An ale unlike any other, it is brewed with a spicy Belgian yeast, Balaton cherries, Demerara sugar, wildflower honey, cinnamon and clove. This makes for a sweeter ale, dark ruby red to burgundy in color, and it must MUST be served in a chalice. The same company makes a Mad Elf ale in a 6-pack, that also has cherries, but this is the director’s cut, a special version, that comes in a beautiful 750mL bottle with a corked top, reminiscent of a champagne bottle. Perfect for when the occasion calls for a nice bottle of wine or champagne and you want to be the weirdo who does something different. Choklat, Blackwater Series – Southern Tier Brewing Company, Lakewood, NY. 10% ABV, Imperial Stout. It just wouldn’t be a finale to a list during the holiday season without a dessert beer. (Who doesn’t love dessert?!) This beautifully dark —almost black— heavier Imperial stout is bursting with dark chocolate. It truly is decadent, and a good balance between bitter and sweet, being somewhere in the middle. Instead of a port for your holiday nightcap, try a bottle of this instead. It is sold in 1 pint, 6 fl oz. bottle, which is enough for approx. 2-4 people, depending on the size of your pour. Or have it with dessert, with something vanilla like ice cream or cut-out sugar cookies – In fact, Santa would probably appreciate it if you left this, instead of some crappy almond milk, out alongside his cookies on Christmas Eve. 12 oven-ready lasagna noodles* 1 tub (15 oz) ricotta cheese 1 tbs parsley ¼ tsp oregano ¼ cup grated parmesan or romano cheese 16 oz sliced mozzarella cheese or 4 cups shredded 8 oz Italian sausage 8 oz lean ground beef 1 jar (26 oz) pasta sauce 1 cup water

DIRECTIONS:

Preheat oven to 375 degrees F. You will need a deep 11 x 7-inch or 13 x 9-inch pan. In a large skillet, brown ground beef, breaking up large clumps. Drain and set aside. Place Italian sausage in a saucepan with ½ cup water. Bring to a boil, cover, reduce heat and simmer 10 minutes. Drain and cool slightly. Slice in 1/8 - 1/4-inch slices. Set aside. Mix ricotta, parsley, oregano and parmesan cheese in a small bowl. Mix pasta sauce, water and ground beef in a large bowl. Place 1½ cups of sauce mixture on the bottom of the pan. Lay 3 lasagna noodles across the bottom. Spread 1/3 of the ricotta mixture over noodles. Spread ⅓ of the mozzarella slices or shredded mozzarella over the ricotta mixture. Distribute 1/3 of the sausage slices over the top of the cheeses. Drizzle with 1/3 of the sauce mixture. Repeat 2 more times. Top with the last 3 lasagna noodles, spreading remaining sauce over the noodles. Sprinkle with additional shredded mozzarella if desired. Cover with greased aluminum foil and place the baking dish on a baking tray and bake at 375 degrees for 55-60 minutes. Remove foil and test noodle doneness with a knife. If noodles are soft, replace the foil cover and let stand for 10 minutes. If noodles are still “al dente” then return to oven for an additional 10 minutes. Makes 9 servings. *The same method should work with regular lasagna noodles. I used oven-ready in this but I’ve made this without cooking the noodles even with the “regular”lasagna. Of course you can cook the regular noodles first, but eliminate the 1 cup of water that is mixed with the sauce and it will only require about 30 minutes in a 350 (yes, different temp) oven.
