1) I really love adding cinnamon to my baking and pancakes. It just adds a little extra flavour that makes me think of warm days and cozy blankets. I also love to sprinkle cinnamon on my lattes!

1) My family, especially my daughters, really love sushi. We go to Izakaya Tomo quite often for sushi because the service is excellent and the food is excellent. I love anything that they make with salmon.

2) Every year, my mom and I make a huge batch of my grandmother’s tourtiere (meat pie) recipe from scratch. It’s a French family tradition and there’s a debate in the family as to who has the original recipe of my grandmother’s!

2) Food is my mother’s love language; she loves to cook for people [...] Sometimes she’ll make Vietnamese sticky rice, last week she made Vietnamese spring rolls—she’s always feeding us. I think our tradition is we always gather and we bring food and we celebrate around food. It is a huge part of our Vietnamese culture.

2) My father realized that he enjoyed cooking more than my mother, and my mother realized that she’s an okay cook but she doesn’t have passion for it […] So my father took over cooking and it’s now a tradition in my family that, when we’re having family meals together, it’s all the men in the kitchen cooking, and my mother and I sit and drink wine.

Guru Our culinary adventure at Guru began with the Vegetarian Guru Shooters, bite-sized crispy wheat baskets filled with creamy paneer and house chutney. The name “shooter” proved apt as we found ourselves scooping up each delicate basket with a spoon. Their classic Cauliflower ‘65’ followed, featuring perfectly crisp and tender cauliflower florets bathed in a 9-hour sauce. For the main course, we had the Old Delhi Dal Makhani, a North Indian delicacy with black lentils, clarified butter, and roasted garlic, accompanied by fluffy steamed rice and garlic naan. The elegant ambience and attentive service, combined with the spacious setting suitable for large gatherings, rounded out our satisfying meal. Japanese Village At Japanese Village, the unique teppan-yaki cooking experience means the chef skillfully caramelized vegetables and chopped meat on the grill right in front of us. The culinary spectacle included entertaining tricks like the quintessential onion volcano, eliciting oo’s and ah’s from nearby diners. Opting for cocktails, we enjoyed the Saké Caesar (with a deep and complex taste with floral saké) and the dangerously delightful Miss Tokyo (a blend of lychee, pineapple, and cranberry). The main course featured the Teriyaki Beef, thinly sliced AAA Canadian hip cut glazed with Japanese Village’s teriyaki sauce, and Nova Scotian Rock Lobster tails adorned with savoury Misonaise, similar to a hollandaise. Accompanied by a variety of sides, the experience left us with not only a satisfying meal but also leftovers for a post-visit lunch. Our delightful visit to Rosewood Foods in downtown Edmonton offered a charming assortment of baked goods, breakfast, and lunch options in a casual counter-service setting. The standout was the Breakfast Bowl, featuring creamy scrambled farm eggs, aged white cheddar, charred tomato salsa, and chili jam atop crispy potatoes and mushrooms—an enticing blend of savoury, slightly spicy, comfort, and crunch. While satisfyingly filling, the real stars were the diverse baked goods. The Matcha Cronut impressed with its distinct and balanced flavour, while the Asiago Scallion Scone provided a savoury delight with perfect texture and the Strawberry and Rhubarb Brioche Tart showcased a sweet and tangy combination. J

ust like the landscape it emerged from, the culinary history of the Canadian Prairies is unexpectedly vast. Unique dishes, iconic cocktails, and even forgotten favourites have been birthed from the rolling foothills and stunning grasslands of Wild Rose Country. Ginger beef, flapper pie, and green onion cakes—these are only a few dishes that have rich historical roots in our stunning province. And behind each of these Albertan dishes is a local legend. From Edmonton’s Green Onion Cake Man Siu To to Calgary’s Caesar connoisseur Walter Chell, we owe a lot to pioneering restaurateurs who helped establish the Prairies as “one to watch” on the national culinary stage. Although our food scene is currently bustling with inventive new concepts and world-class fine dining experiences, none of it would be possible without the impact of established Edmonton institutions like Bistro Praha, Commodore Restaurant, and, most notably, Blue Willow Restaurant. Opened in 1958, Blue Willow Restaurant is the perfect example of a family-run business that has stayed true to their core values as the city has shifted around them. “My dad’s philosophy has stayed the same,” says Stan Mah, current Blue Willow owner and son of original owner, Vic. We are sitting in the restaurant’s stunning dining room, which is housed in a building that Stan actually designed (with a persistent push from his father!). “When you come into our dining room, welcome to our living room. He treated all our customers as if they were coming into our home.” Although our interview took place a couple hours before dinner service began, it’s not hard to imagine Blue Willow’s cozy tables filled with adoring patrons, diving into their steaming hot plates of Chicken Chop Suey or Blue Willow’s Special Fried Rice. These delicious dishes are enjoyed on signature Blue Willow chinaware, which is also where the restaurant gets its name.

In addition to Vic’s impeccable personality and the restaurant’s signature Cantonese fare, Blue Willow’s longstanding success can be traced back to Vic’s first Edmonton restaurant, the Pan American Café. With some savings and a couple successful restaurants under his belt, Vic purchased this run-down restaurant on Jasper Ave. Over the years, he worked with a team of partners to turn the Pan American into one of the best places to dine—then eventually became the sole owner. At this point, he tore down the building and built the first Blue Willow restaurant, complete with two floors, a bridge in the dining room, and an intimate dance floor for late night clientele. “Blue Willow is the longest single-family restaurant operating under the same name in Edmonton. We’ve been operating for 68 years,” remarks Stan. Sure, he admits, there’s been some changes. A brief delivery-only business, partnerships with Edmonton festivals, and modified hours are only a few of the ways that Blue Willow has had to adapt. Plus, by introducing Szechuan and Mandarin cooking into the restaurant, Stan has been thrilled to continue to contribute to the rich multicultural tapestry of Edmonton’s dining scene. “We wanted to

introduce Edmontonians to a different style of cooking. Now, we have three different chefs who each cook in their different styles.” But, although Blue Willow has been thrilled to change with the times, some things Stan misses from the good old days is the mindset of slowing down and sitting with your meal, which Stan considers a key part of the fine-dining experience. “People are so busy these days, they are often in a rush,” he says. “When you are dining, your next activity [should be] staying in the dining room, having dessert, and enjoying good conversation.” 14

That’s why Blue Willow delivers all their dishes in signature warmers, which keeps your food hot for an hour, inviting you to enjoy your food and really meet people. While some restaurants prioritize quick table turnover and speedy service (some are even using robotic waiters!), Stan takes pride in connecting with all his customers and will never rush anyone out of his restaurant. Even from this brief exchange, it's clear that Vic’s ethos is still an integral part of Blue Willow Restaurant. So, next time you step into Blue Willow, rest assured that Stan’s dining room is just like his father’s: a cozy, comforting living room that feels just like home for newcomers and old timers alike.

There comes a point in every food lover’s life when a particular ingredient transcends its ordinary status and becomes an absolute obsession. For me, that culinary fixation has, for quite some time, been peanut butter. I admit, this started as a self-serving roundup to satisfy my cravings across Edmonton, but I knew I couldn’t be the only one to benefit. Its creamy or crunchy texture and rich, nutty flavour make it a versatile ingredient that can elevate a wide array of dishes. From savoury to sweet, peanut butter adds a unique twist and opens the door to culinary creativity—as you’re about to find out.

Cherished for its velvety texture and nutty richness, peanut butter effortlessly weaves its way through the diverse tapestry of culinary experiences, whether in North American childhood favourites, West African dishes like groundnut soup, or various Asian dishes using peanut sauce (satay sauce) as a dip, a marinade, or a drizzle. Ever wanted to make your own signature cocktail? Or learn more about the world of Alberta distilleries? In its inaugural year, Alberta Spirits and Cocktail Festival hopes to ignite passions and highlight the gems of Alberta’s distilleries while providing unique cocktail and spirits experiences. Alberta Spirits and Cocktail Festival is the newest and freshly exciting festival in Edmonton. It was founded by Robert Pellerin, the festival president, as a way to showcase the many distilleries in the province while providing spirits and cocktail lovers with a uniquely Albertan experience. “There's about close to 80 distilleries in Alberta, which a lot of people aren’t aware of even if they’re into whiskeys, gins, and vodkas,” says Robert. “This festival is here to showcase the products produced in Alberta.” Robert went into this passion project with the goal of exposing more people to the world of Alberta spirits, giving them opportunities that otherwise would not be available. “There are festivals for food and spirits in Alberta, but there really isn’t a festival for Alberta-produced spirits,” says Robert. “So the passion came from discovering all the distilleries in Alberta and all the unique products that are made right here in 20

Alberta, but realizing there was not a space to showcase them.” In addition to enjoying locally sourced food, drinks, and live entertainment at the festival, attendees will have the chance to engage in a fireside chat with master distillers and distillery owners in the “Meet the Distillers Fireside Chats.” Designed to be an interactive exchange between the audience and creative Alberta distillers, attendees can ask distillers questions about the business and what makes their work and products unique, while getting to know more about the ever-growing industry. The day-long sampling festival, which will take place at the Edmonton Convention Centre, will be a space where people can go and not only try the many varieties of gins, whiskeys, liqueurs, and more, but also interact with local eateries, chat with distillers, learn from professional mixologists, and enjoy live music. People will also be able to purchase products that may not be in stores yet, or hard-to-find whiskeys, gins, and vodkas. Cheers to Festival City!

BLACK CANADIAN FOOD & CULTURE Sauce Modern Caribbean Cuisine

Black Canadian culinary traditions and histories have been forged through decades of African and Afro-Caribbean immigrants, as well as formerly enslaved Black people who escaped American slavery. Food is central to culture and identity and is how Black Canadians maintain their communal relationships and connect with their heritage. Edmonton is home to numerous and diverse Black communities hailing from all around the world, which has influenced the local landscape and infused culinary traditions rich with foods from African and Caribbean cultures. We have a wide array of restaurants and grocery stores that provide experiences of Black Canadian eats, from Kenkey to jerk. Here’s only a sample of what you can find. 30

1. KENKEY Kenkey is a staple dish from the Ga and Fanteinhabited regions of Ghana and other regions of West Africa. It is usually served with a pepper sauce and fried fish, soup, or stew. Made from corn flour, this West African delicacy has become part of Black Canadian food traditions via the immigration of Ghanaian and West African peoples to Canada. It is a tradition in my Ghanaian-Canadian family to eat Kenkey as a communal meal. It is a great way to connect as a family and with our Ghanaian heritage in Canada. To indulge in this delicious tradition yourself, head over to Kasoa Tropical Food Market, where they have several prepared foods (9320–118 Ave. or 9062-51 Ave.). If you want to try your hand at making it at home, ingredients can be found at Agape Foods (12981–50 St.). Pair it with a chilled glass of iced hibiscus tea and go to flavour town!

3. DORO WAT Doro wat is a spicy Ethiopian chicken stew that is considered the national dish of Ethiopia. It is made with berberé (a blend of traditional Ethiopian spices) chicken, spiced ghee, hard-boiled eggs, and a wide array of other spices. It is typically eaten with injera Bete Africa Ethiopian Restaurant and Bar (Ethiopian flatbread), which is used as an eating utensil to scoop the doro wat. Doro wat is a staple in Black Canadian food traditions thanks to the Ethiopian and Eritrean communities who have lovingly shared this mouthwatering dish. Growing up, I would enjoy this dish often with my Ethiopian friends as a way to bond over our shared African heritage. It was often eaten in celebration of birthdays and is a key dish at holiday festivities. In Edmonton, you can delight in doro wat at Awash Ethiopian Restaurant Edmonton (12952–118 Ave.) and or Bete Africa Ethiopian Restaurant and Bar (9570– 111 Ave.).

4. BARIIS ISKUKARIS Delicious, exciting, and fantastically flavourful, Bariis Iskukaris, also known as Isku-dheh karis, is one of the crown jewels of rice dishes in Black Canadian cuisine. Originating from Somalia, this spiced rice is made from a mixture of xawaash (an aromatic spice mixture that is layered with fenugreek and turmeric), basmati rice, and meat with vegetables. As a festive meal in the Somali community, served during holidays, it is a mouthwatering favourite. Edmonton has one of the largest Somali communities in Canada, bringing this dish to the forefront of our local Black Canadian cuisine. You can experience this flavourful meal at Banaadiri Xamereey Somali Restaurant (11732–95 St.).

5. JERK CHICKEN

Jerk is a style of cooking and a spice, and jerk chicken is perhaps the most famous of AfroCaribbean and Black Canadian ways to liven up a meal. Both the style of cooking and spice originated from the Maroon Africans and Taíno Indigenous peoples of Jamaica. When the Maroons freed themselves from slavery and escaped to the mountains surrounding Jamaica, they were taught by Indigenous inhabitants to preserve meats with available spices and leaves, which developed into jerk. This style of cooking is also smokeless, which helped hide their presence from their enemies (British Colonists and enslavers). Like the patty, the jerk way of cooking, a taste of freedom, was brought to Canada by Afro-Caribbean immigrants in the 1960s and 1970s and can be enjoyed at restaurants in Edmonton such as Sauce Modern Caribbean Cuisine (13655 St. Albert Tr.).

Egusi stew is a savoury and succulent dish that originates from West and Central Africa. It has been perfected as a key aspect of Nigerian, and subsequently Black Canadian cuisine via Nigerian and West African Canadians. It is made from the seeds of the Egusi gourd, which is similar in shape and size to a watermelon but has a bitter taste. It is cooked with aromatic spices and meat. Served with fufu (pounded mixture of plantain and cassava) or pounded yam, this is the perfect meal for anyone hungry for a rich and flavoursome meal. You can enjoy Egusi stew at Monamie Resto (13427 Fort Rd.) or at Ola's Dining Nigerian Kitchen (Crystallina Nera Way).

6. PATTIES Patties are a popular snack in the Caribbean, especially in Jamaica. The Jamaican/Caribbean patty is derived from the Cornish pasty from England. It was brought over to Jamaica by British colonists and subsequently adapted to the Jamaican way of cooking. The patty is usually made using beef with spices, stuffed in a flaky crust. As Jamaican and Caribbean peoples migrated to Canada in the 1960s and 1970s, they brought this delicious treat with them and it has now become a standard feature in Black Canadian cuisine. Living in the Caribbean, I would indulge in this savory snack with a Ting! or Solo (Caribbean sodas) as a refreshing end to my day. In the realm of soul-stirring melodies and evocative storytelling, Celeigh Cardinal emergers as a luminary. Hailing from Alberta, this Métis singer-songwriter has etched her name into the contemporary folk and soul landscape. Her crowning achievement, the 2019 album Stories from a Downtown Apartment, not only tugged at heartstrings but also clinched the coveted Juno Award for Indigenous Music Album of the Year in 2020. Now, the anticipation builds for her debut with the Edmonton Symphony Orchestra, a collaboration set to redefine the boundaries of her artistry, and her upcoming album. 1) What are you looking forward to while working with the Edmonton Symphony? Standing in front of an orchestra and having this wave of music behind me. Honestly, I’ve always wanted to be Bette Midler from the movie Beaches. At the end she’s playing with this orchestra, she’s singing the glory of love, and I always think about that. That was a dream when I was a kid.

2) How did this opportunity come about? It actually came from Lucas Walden, who used to be a conductor with the ESO. He put together a show and has been pitching it to orchestras across Canada… This is our Edmonton debut and just the second time that we’d be doing this show.

3) What will be a challenge? We’re going to be doing some songs that have not been released yet. They’re going to be coming out of my new album, which I’m releasing in June, and a couple of the songs are really heavy. We’ve never performed them before because there’s orchestration on the recordings, but we’ve never been able to play them live with an orchestra.

4) You mention some heavy content. Could you elaborate? The album is going to be called Boundless Possibilities, and that is the title track of the album. It’s a spoken word poem that I wrote about a friend of mine who passed away in 2020, and I had a dream about her the night after she passed away, where she came from… wherever people go… and visited me, sat on my bed, and we talked. The idea is that she came back into my life and showed me that there’s so much more than what we think there is, that life is full of boundless possibilities. So there’s a lot of grief

involved in this album: her passing and also my son’s father passed away in 2020 as well. And of course, 2020 was a year of grieving for everybody.

5) What’s your favourite song to perform? It changes all the time. Right now, my favourite song on the album to perform is one called “Show You How to Love Me” and it’s super pop-y. I would say there’s a mixture of Prince and the bridge makes me think of Lady Gaga or Madonna. It’s kind of all over the place, but it’s definitely super pop-y. I wrote it with my bass player and that’s the first time we’ve ever written together. But that means it’s funky, and I love to sing it. 6) What are you looking forward to in 2024? I’m looking forward to the release of this album. It’s going to feel—just this process of letting go once it’s out there. It’s going to feel like such a relief. amily and community are how locally founded luxury jewellry brand Paris Jewellers continues to thrive since their inception over 35 years ago. When Thu Luong, the courageous and innovative mother of current co-owners Chau Lui and Trang Wong, first moved from Vietnam to Canada in 1985, she apprenticed at the retail luxury brand Goldsmiths, learning everything from how to design jewelry to dedicated customer service. Inspired and driven, Thu opened her own shop just two years later. Back then, the first Paris Jewellers was a humble 400-square-foot store, and Thu was using her trusty Vietnamese-toEnglish dictionary to communicate with customers. From the start, the newly immigrated family wanted to be an integral part of their community 36

and connect with their customers on a genuine level. Chau recalls that those early days were not only a testament to their mother’s grace and work ethic and dedication to her community and business, but also her commitment to her family and her dreams. Seeing their mother’s work ethic as well as her gratitude towards her customers and community inspired Chau and Trang and influenced their own business philosophy as co-owners of a women-led business. Talking to Chau about the early days, she notes how integral the family business was to her and her sister when they were growing up. She remembers hanging out in the mall where their initial store was located, doing homework in the food court with her sister and helping out at the store. “I think the thing

Sometimes her family believed their dream was impossible, but other times they knew it was achievable with incredible hard work and dedication—and now their 400-square-foot idea has expanded to 27 locations across 4 provinces. Growth remains in their future as their business continues to expand, with Chau hinting at the possibility of opening another store out east (stay tuned for updates!). Having a dream remains an integral part of their process. “I have so many dreams, and I always tell my daughters to dream big because the sky's the limit,” she says. Fuelled by dreams and powered by community, the enchanting legacy of Paris Jeweller’s will continue to dazzle well into the future.

HONOURING Time & Space By Akosua Dufie Adasi

Imagine: it’s 1958 and man has yet to land on the moon. Sitting among the stars is a far away dream fuelled by ripening curiosity. But then, a new idea emerges: Canada’s first public planetarium. When it finally opens in 1960, you’re dazzled with the possibilities—and you enter a room with a magical giant projector that gives you pristine 360° views of the stars and planets. Suddenly, a new and enchanting world is within reach. Many of us will still never go to space, no matter how much we may want to. But the re-opening of the historic Queen Elizabeth Planetarium means that world is accessible once again. Now renovated, the elegant marble floors lead to the interior of the dome, where the giant refractor and 360° views are accompanied by LED screens all in the effort to continue the dream once realized between 1960 and 1983. The Queen Elizabeth Planetarium is the crown of Coronation Park, with its iconic bright gold dome designed by Walter Teller and R.F Duke to look like a flying saucer. The planetarium was named to commemorate the visit of Queen Elizabeth II the following year. The sidewalks surrounding this bold landmark are decorated with mosaics depicting the 12 zodiacs to represent their star constellations and add a decorative touch to the already stunning building. The mosaics were designed and made by 38

German immigrant artist Heinrich Eichner, who used stones from nearby riverbeds to construct his masterpieces. The recent restoration project was a means to preserve the heritage and history of the original building whilst creating a space for new generations to appreciate the wonders of space. New upgrades include LED lights and new mechanical systems to further enhance the experience and bring it all to life. The newly restored planetarium is intended to once again bring together the community in the interest of learning and will support public programs and events for the nearby science centre. We as a community celebrated the re-opening in late September 2023, nearly 40 years after the planetarium’s closure. Initially led by Ian McLennan, the first director of the planetarium, this historical landmark has been the home of curiosity and wonder. To commemorate the re-opening and honour the legacy, the street on which it’s located was renamed to Ian McLennan Way. Follow in his footsteps to discover the possibilities and celebrate a strong and scientifically wondrous future in and beyond Edmonton.

s the first-ever craft distillery in the Edmonton area, and only the second in all of Alberta, Rig Hand Distillery is used to blazing trails. Not only have they opened an extensive new property to work as a farm, distillery, restaurant, and tourist attraction, but one of their whiskies was the first Canadian whisky ever selected as the official spirit of Canada’s House of Commons.

“I’m trying to create a whisky that’s more broad-spanning, that the average person would like,” says Geoff Stewart, Rig Hand owner and president. “It’s very approachable.” Winning 90% of the votes in a double-blind taste test against other remarkable spirits in Ottawa, the Rocking R golden rye whisky is made strictly from local ingredients and known for its smoothness, depth of flavour, and unmistakable touch of rugged Alberta charm. Part of that charm is Rig Hand’s commitment to working closely with the community, like partnering with local farmers, hosting on-site tours, and helping guide new distillers in the industry. When first starting his new venture, Geoff had to travel to the United States, training first in Seattle before apprenticing in Ohio. Now, the Rig Hand team hosts their own courses to increase accessibility and encourage more of who Geoff calls “the little guys.” Their new 14,000-square-feet facility outside of Nisku, on the other hand, is anything but little. Officially opening in June 2023, it—much like Rig Hand’s products—is one of a kind. Built by the Rig Hand team using lumber from their own sawmill, the buildings house the distillery, shop, restaurant, and events space, while the surrounding lands

include their crop fields, orchard, farm animals, walking trails, and Indigenous-led education space. A visit to Rig Hand is a must for anyone seeking an authentic Alberta experience. You can learn about local plant life and the famous oil derrick that inspired Rig Hand’s iconic bottles, sip innovative spirits and cocktails or pair them with a tasty dish also using incredible local ingredients, and take a tour to discover their unique distilling process and meet the impressive team.
