PUBLISHER’S NOTE

As a young executive chef, I worked for Servicemaster Food Management Company, which managed over 300 food service accounts and the departments of large hospitals, insurance companies, museums, nursing homes, and private physicians' lounges. In 1996, I was transferred to Lanham, Maryland, to open a new account for Servicemaster at Doctors Hospital. I stayed in a hotel near the hospital for months away from my new wife and stepson, who were back at our apartment in Garfield, NJ. This time apart allowed me to focus on implementing the company's patient feeding programs, and new retail food concepts in the employee/public cafeteria. The time also allowed me to revise the private doctors' lounge breakfast and lunch menus.

Before leaving New Jersey, and accepting the promotion to assistant food service director and executive chef, my Asian cuisine culinary repertoire was limited… At Doctors Hospital most of the hospital's physicians and surgeons were immigrants from Asia — the largest of all seven continents making up for 30% of the world’s landmass and almost 60% of the world’s population… Asia is one of the most diverse continents on the planet... Asian people have different art, architecture, cuisine, customs, lifestyles, literature, languages, music, philosophies, politics, and religious traditions... And, my job as an executive chef was to be able to create menus with diverse ethnic cuisine that would satisfy a wide range of expectations of restaurant-style food for these doctors’ palates. Thank God that wonderful immigrant owners of gourmet specialty food markets were more than willing to teach me about the exotic cooking ingredients of African, Afghani, Arabic, Greek, Indian, Pakistani, and other countries of Asia…

In my 20s, I spent time at Kripalu Yoga Retreat Center and learned about vegetarian foods popular among Hindus and Vegans. As a classically French-trained chef working at Doctors Hospital, in Lanham, Maryland, it was exciting for me to learn from locals how to utilize Halal and holistic ingredients to transform fish, meat, poultry, grains, lentils, rice, and vegetables into Asian-inspired gourmet dishes. Below are photos of our 36-count spice collection and our Chicken Tandoori.

In this issue, we spotlight Farmer’s India Market, a specialty superstore. La Gioia Italian Deli in Schenectady reopened this Spring 2023, with Laura Marino (the daughter of former co-owner Modesta Morson) at the helm of the family’s deli business that opened 34 years ago. Marino is also the niece of former co-owner Anna DiCocco, and was eleven years old when her mother and aunt opened La Gioia (“Joy”) Italian Deli, in January 1989. I was pleasantly surprised to find that Laura Marino is now carrying Sicilian cheeses and many more Italian products. I purchased Il Canestrato, a raw sheep’s milk firm cheese with an awesome aroma and buttery flavor… I also bought Pecorino Primo Sale , one of the oldest 100% Sicilian sheep's milk cheese. This cheese is not used for cooking. Instead, it is grated on pasta, and/or served with antipasti, or charcuterie. ■

Moroccan Lamb Shoulder

BERBER SPICE PASTE INGREDIENTS

3 garlic cloves, peeled and quartered

1 small onion, peeled and coarsely chopped

1 1-inch pieces fresh ginger, peeled and chopped

3 tablespoons sweet paprika

2 teaspoons kosher salt

1 teaspoon ground coriander

1 teaspoon freshly ground black pepper

1 teaspoon finely grated lemon zest

½ teaspoon ground cinnamon

¼ teaspoon ground cardamom

3 tablespoons fresh lemon juice

3 tablespoons extra virgin olive oil

1 boneless lamb shoulder, 5 to 6 pounds

METHOD

1: Make the Berber spice paste: Combine the garlic, onion, ginger, paprika, salt, coriander, pepper, lemon zest, cinnamon, and cardamom in the bowl of a food processor and pulse into a coarse paste. Add the lemon juice and extra-virgin olive oil through the feed tube and blend until well combined.

2: Place the lamb in a nonreactive baking dish large enough to hold it. Slather the meat on all sides with the Berber paste. Cover and refrigerate for at least 4 hours, or overnight.

3: Remove the lamb from the spice paste and scrape off and discard any excess. Roll the lamb shoulder lengthwise into a compact roast and tie it with butcher’s string at 2-inch intervals.

4: Meanwhile, set up your grill for indirect grilling and heat to medium. Brush or scrape the grill grate clean and oil it well.

5: Place the lamb on the grill grate away from direct heat. Lower the lid. Grill until the meat reaches an internal temperature of

150 to 180 degrees (Moroccans generally prefer their lamb shoulder well-done), 3 hours. Replenish the fuel as needed.

6: Transfer the lamb to a cutting board and let it rest for 10 minutes. Remove the butcher string. Thinly slice the meat and arrange it on a platter or plates. Serve with a tomato chutney, grilled sweet peppers, and grilled flatbread, such as pita bread. Is it done? Though I have been known to recommend the Poke Test, a reliable meat thermometer is invaluable when grilling meat. Memorize the meat temperatures that correspond to rare (120 degrees), mediumrare (130 degrees), medium (140 degrees), and well (150 degrees and up).

NOTE: To make grilled flatbreads like pita, lightly brush the flatbread wedges on both sides with extra virgin olive oil or melted butter. Season with coarse salt or toasted sesame seeds, if desired. Grill for 30 seconds to 1 minute per side, or until lightly toasted. Watch carefully so the bread doesn’t burn.

Remember to rest burgers, grilled chicken, and other grilled meats before serving. ■

BBQ Country-Style Ribs and Fire-Roasted Veggies

3 pounds of boneless Country-Style Ribs (fresh)

1 Tablespoon Adobe® Seasoning

1 Tb Cumin, ground • 1 Tb Granulated Garlic Powder

1 Tablespoon Onion Powder • Sicilian sea salt, to taste

1 Tablespoon Smoked Paprika • 1 Tb EVOO

Hickory Liquid Smoke, to taste • Pink Butcher Paper

Brussels spouts, Garlic, Whole Kernel Corn, and Tomato

INSTRUCTIONS

We cut each rib section and then butterflied each rib... Then we made slits in each boneless rib portion to resemble "rib bones" --- as well as to get the dry and wet rub into each piece of meat. Finally, we added liquid

smoke, and extra-virgin olive oil to the dry rub seasonings... Use your hands to massage the dry and wet rub into each portion of meat --- and marinate the Boneless Country-style Ribs in the refrigerator for several hours, or overnight before bringing them to room temperature to BBQ cook.

On the day you decide to cook the ribs, prep the Brussels sprouts by slicing a piece off each bottom, then cut a cross-groove mark in each bottom. Pre-boil the Brussels sprouts in salted water for 5 minutes, and then drain… Arrange the boneless marinated ribs on the grill grates. Grill the ribs on each side for 3 minutes, and then wrap them in pink butcher paper placed over a sheet pan to catch any drippings. Allow the ribs to rest. Place the Brussels sprouts in a wire grill basket and roast over the coals for 5 minutes. Serve the fire-roasted Brussels sprouts with the cooked boneless BBQ Ribs (155˚ F), and panroasted corn, garlic, and tomato (seasoned with Sicilian sea salt, to taste). ■

TRAVEL FROM QATAR TO VIETNAM

February 1966. Landing at Danang airport the rear hatch of a United States military C-130 transport plane opened and scorching humid air rushed in on an infantry company of the United States Marine Corps.

Southeast Asia is composed of eleven countries of impressive diversity in religion, culture, and history: Brunei, Burma (Myanmar), Cambodia, Timor-Leste, Indonesia, Laos, Malaysia, the Philippines, Singapore, Thailand, and Vietnam

Recently, our plane touched down at Hanoi’s Noi Bai International Airport early afternoon and our guide, The, (pronounced Tay) from Asia Tour Advisors was waiting as my son and I disembarked. Our guide whisked us through security to the airport exit where our driver was waiting to deliver us to the Rex Hanoi Deluxe Hotel in old town Hanoi.

Phở is a Vietnamese soup consisting of bone broth, rice noodles, and thinly sliced meat, originally beef. However, in most hotels and restaurants chicken is also offered. It may also be served with bean sprouts, fresh herbs, limes, chiles, and other garnishes such as those small but fiery red and green pepper slices. The origins of phở are a bit unclear, but it is generally believed to have originated in early 20th-century northern Vietnam.

very close to an area known as “beer street.” A very lively area with many musicians, revelers from the world over, and different beer-centric bars/ restaurants side by side for many blocks. Just a short taxi ride from beer street is the renowned water puppet theatre. Quite a spectacular show!

Just an hour and a half drive east of Hanoi is the spectacular Halong Bay part of the Gulf of Tonkin where the seascape is a breathtaking display of limestone karsts (mountains) seemingly bursting from the sea. Our boat for three days was a handsome Chinese junk, owned by Peony Cruises. Equipped with 20 staterooms, each with a private deck overlooking the sea. On our second day at sea, the meals were culinary creations with many fine wines available. Our prawn appetizer (below) was almost too pretty to eat.

Our flight to Saigon was less than two hours and Thahn, our guide, and Mr Han, our driver, were there to meet us and take the short ride to the Edenstar Saigon Deluxe Hotel. Another fine hotel with another rooftop pool and bar overlooking the city. Life is good in Vietnam!

The Saigon marketplace is a thriving shopping space where locals usually shop in the morning for their daily meals. Rain or shine the outdoor produce ladies set up their displays. Here, you'll find an endless variety of meat and seafood as fresh as the morning dew.

No trip to Vietnam is complete without spending some time on the mighty Mekong River. Winding almost 3,000 miles from the Tibetan plateau down to the South China

Sea, the Mekong River boasts the world’s largest inland fishery, accounting for up to 25% of the global freshwater catch. Much of the area of the Mekong Delta is covered by rice paddies that are irrigated by delta water and fertilized by delta silt, which gives the river its signature brown color. Along the Mekong, many paddies and farms produce three crops of rice a year, enough to feed the entire country. This beautiful and dynamic river system is the lifeblood of the region and it provides livelihood for millions of Vietnamese. Pictured are a deep-fried elephant ear fish and the restaurant proprietor performing the Vietnamese ceremonial carving.

As you can see in the photographs, the river is a place of beauty, commerce, and a place for pleasure. Every Sunday brings throngs of local folks enjoying the river and partying on whatever happens to float!

After spending a month on two different excursions to Vietnam this year, what impresses me the most is the genuine friendliness of the locals and the physical beauty of the country. We took our flights to Vietnam with Qatar Airways… My layover in Doha, Qatar was only a few hours during Ramadan, the ninth month of the Islamic calendar, observed by Muslims worldwide as a month of fasting, prayer, reflection, and community. Whatever your planned itinerary may be, when you travel to Vietnam with Qatar Airways you’ll find this a most fascinating country to visit.

I have traveled extensively over the last two decades and Vietnam is by far the most affordable destination on the planet. My first trip to Vietnam was as a 19-year-old Marine infantryman… I recently escorted a group of Vietnam veterans and wives on a rewarding two-week journey to the country where we fought a war. I will continue to tour Vietnam with American veterans of any age or branch of service. ■

I do NOT like bean sprouts, so I leave them out of my Ph ở , stir-fry, Thai-style dishes, and soups. ■

Vietnamese Stir-Fry Rice Noodles with Beef & Bok Choy, and/or tender umami velveted chicken, pork, or seafood is just one of a gazillion Bahn Phở rice noodles dishes you will find in Vietnam... Besides, Phở (pronounced "fuh"), the noodle soup, Bahn Phở Vietnamese flat rice noodles can also be stir-fried... The dish, which is called “Phở Xào“, is popular in Vietnam. It is much quicker and more simple to make than traditional Phở soup. Ed Woods and I love Vietnamese food… See USMC veteran staff writer Ed Wood's travel story in this issue of Taste of Schenectady® and Beyond™ magazine on Page 24.

Ph ở Xào is typically made with beef (or optionally chicken), Bahn Ph ở Vietnamese flat rice noodles, and various freshsliced vegetables. All the ingredients are stir-fried in a wok — and the dish is usually seasoned with Asian spices. We use homemade Chinese 5 Spice Powder — and tossed with savory and sweet condiments such as black vinegar, fresh minced garlic, fresh minced ginger, fish sauce, oyster sauce, scallions, sesame oil, soy sauce, and toasted sesame seeds... We like to flash-fry Thai basil to add to our Chow Fun and Ph ở Xào .

How to make Khmeli-Suneli: In a spice grinder, combine fenugreek, coriander, celery seed, bay leaves, marigold powder (or calendula petals), parsley, marjoram (or summer savory), dried dill, tarragon (or hyssop) and grind until the powder is almost fine. Season with salt and pepper. Mix to combine evenly. Heat one cup of vegetable oil over mediumhigh heat until the oil is at 300° F, then remove from the heat, and add 1/4 Cup of the Khmeli-Suneli to the oil. Allow the oil to cool for at least 20 minutes before using. Strain the infused oil into a jar, and discard the solids. Serve with Grilled Shrimp Skewers

CEDAR PLANK SALMON: Presoak a cedar plank in water for 1-2 hours. Coat the salmon with the cooled Khmeli-Suneli infused oil and season with cracked peppercorns and 1 tsp sea salt. Drain the cedar plank, and place the salmon fillet on top. Preheat a charcoal grill to medium heat (350˚ F). Grill the salmon covered until the fish is cooked through. Garnish with fresh lemon slices

One can find congee shops everywhere in Hong Kong. Congee is served all-day with different ingredients. You can have congee with minced pork, with a pig's stomach and intestines, with thousandyear-old egg and salted pork meat, with octopus and minced beef and pig's skin (people call it boat's congee because it was used to be available only on boats), and many other ensembles of Congee.

Preserved duck eggs, also known as “Century” or thousand-year-old eggs, are cured using an ancient mixture of salt, lime, and ash, then wrapped in rice husks for several weeks. The process transforms the egg whites into an opaque black jell with a turquoise green yolk — the taste is a gastronomic ecstasy with hot oil. ■

CONGEE AND CHINATOWN, PA

Recently, we stopped in to eat Congee at Hong Kong Bakery & Bistro, located at 8 Wolf Road, in Colonie, NY… The bistro decided to “eighty-six” congee that day from the menu, so we ordered Chow Fun… We soon left for vacation in Philadelphia, and then the Poconos… The latter involved a 4-day/3-night timeshare stay and tour… We loved the Latin food and dining at El Cocinero Restaurant in East Stroudsburg, PA.

You have to visit Chinatown Philadelphia for its Cantonese, Hong Kong, Korean BBQ, Vietnamese, and other Asian restaurants, Asian tea shops, Cantonese-French creamery/pastry shops, and indoor & outdoor markets… Asian-style butcher meat & poultry shops and huge fresh fruit, fish & seafood, and fresh vegetable street vendors make up Chinatown Philadelphia... Here, you'll find salons, Chinese Christian churches, Szechuan music bars, statues, Asian wall murals, temples, apartments, and hotels… There are also All-u-can-

eat Asian Hot Pot houses that stay open past midnight— where people gather to share cooking their own meat and vegetable garnishes in a large communal metal pot of hot savory broth and/or hot oils. And, the Phở ("fuh") houses and noodle bars are everywhere—as well as other eateries specializing in pick-your-own-to-eat Dungeness crab, fresh swimming eel and fish, fresh frogs prepared many ways on the menu (we like our frog fried crispy), and live prawns.

At 12th and Arch Streets is the famous Reading Terminal Market with its over 100 artisan shops, fresh produce, and food vendors—with an open area in the center with plenty of seating.

In April 2023, Neil Golub , a founding member of the Schenectady METROPLEX Development Authority , announced at Proctors a $250,000 advertising and branding campaign that’s all about “ letting the world know that something is different ” in the Electric City.

“ Today is the day that Schenectady officially comes out of the shadows of the past and into the sunlight , ” Golub proclaimed. “ We’ve come a long way and today we’re looking at a new brand and a new image for our community, a new reputation, a new Schenectady. We are a New Schenectady .”

Neil Golub’s family-owned business, Price Chopper/Market 32, and the Golub Corporation are still headquartered in Schenectady, New York.

Golub worked hard with former Union College Roger Hull on the Schenectady 2000 vision plan that ultimately led to the creation of what is now METROPLEX —which for decades has led the renaissance of downtown Schenectady. Golub credited METROPLEX Chairman Ray Gillen for his efforts. ■

BTW: Huế is a city in central Vietnam that was the seat of Nguyen emperors and the national capital from 1802 to ế City, Vietnam encompasses the former emperor's palace home, shrines, and many tourist attractions... Our travel photographer and USMC veteran/writer Ed Woods recently escorted a group of Vietnam veterans and wives on a rewarding 2-week journey to Vietnam. Van’s owners vacationed before opening their second restaurant location in Rotterdam.

Bún Bò Huế Phở ($15.95) comes with a side of bean sprouts, sliced jalapeños, a fresh lime wedge, and a large fresh bunch of Thai basil leaves...
