Make a wildlife stack

An incredible 5-star luxury wildlife hotel is easy to make. You’ll be surprised how many of the materials you already have lying around your home and garden. All you need is a steady hand to pile them up! Choose a level, firm site in the sunlight or light shade - most invertebrates prefer moist areas of dappled shade. Find somewhere easily visible, perhaps close to a hedge, shrub bed or pond. • Arrange some bricks on the ground on their side. If you have those with holes in them, face the holes outwards. If not, butt a pair of bricks together side by side and leave a small gap before the next pair. Try creating ‘H’ shaped cells of bricks and fill the space between with woodchips, leaf litter and sand (frogs and toads like to bury themselves into sand and soft soil). • Lay a wooden pallet or strips of wood across the top of your bricks and then construct the next level in the same way. Remember to fill the gaps with your materials like hay, straw, dry leaf litter and wood chippings. Straw will provide nesting sites for ladybirds and thin twigs will provide shelter for larger insects. Place another pallet across the top and repeat. Logs and pine cones will provide extra homes for all sorts of insects. • Keep your stack dry with roof tiles or a sheet of board covered in roofing felt or polythene. On top of this, place crushed brick rubble,

concrete or limestone chippings and plant with sedum or other low growing drought tolerant plants. Things you could use: Pallets, or strips of wood, pen casings, drinking straws, cardboard tubes, corrugated card, straw, hay, dry leaf litter and moss, plant pots,

The gentle sunlight of autumn can often produce soft, golden colours as the foliage on shrubs and trees such as acers, berberis and witch hazels turns from green through to orange and red. At this time of year, traditional countryside hedges are full of blackberries, elderberries, rosehips, haws and sloes, forming a supply of food for birds through the winter. You can mimic the traditional hedgerow in your own garden by planting a fruiting hedge. For example, you could mix native roses, elder and hawthorn

Containergrown plants can be planted at any time of year, but you can save money at this time of year by opting for bare-rooted hedging, or root-balled trees and shrubs.

Parsnip Skordalia

Skordalia is a Greek side dish of potatoes and garlic whipped into a dip, thickened with stale bread or nuts and spiked with lemon. This parsnip version is good warm with lamb or mushrooms, or at room temperature as a dip for pitta bread. Parsnips are less likely to go gluey than potatoes when blended. The pungency of raw garlic is all part of the appeal in the original dish, but we recommend you add it a little at a time and taste.

INGREDIENTS 1kg parsnips, peeled and chopped into even sized chunks 1 bay leaf 400ml milk 60g fresh breadcrumbs 80g flaked almonds, lightly toasted 3-4 garlic cloves, crushed 80ml good olive oil Juice of 1 lemon Salt

Serves: 4-6 as a side or dip Put the parsnips into a pan with the bay leaf and cover with the milk. Bring gently to the boil and simmer for 15–20 minutes, until very soft. Strain the parsnips, reserving the milk. Put the parsnips into a food processor with a dash of the milk and

blend until smooth. Add the breadcrumbs, almonds and half the garlic and blend while adding the olive oil in a steady stream. Add half the lemon juice and a good pinch of salt. Check the seasoning and add more garlic, lemon juice and salt as you wish. If the mix is stiffer than you want, add a little more of the warm milk to loosen it. •

Variations This dish can be warmed up with a little bit of spice. A clove or two added to the milk when you cook the parsnips works well (remove before you blend), as does a teaspoon of freshly ground cumin.

If the punch of raw garlic is too much for you, take the edge off by adding the peeled garlic cloves to the milk and simmering them with the parsnips.

Replace the almonds with toasted and skinned hazelnuts.

B AT T L E O F NEWBURN FORD 1640

King Charles I’s attempt to impose a new prayer book on the Scots led to military conflict in the summer of 1640. To avoid assaulting the strong defences on the north side of Newcastle, a Scottish army of up to 20,000 men under the command of Alexander Leslie (below) decided to cross the Tyne and attack from the weaker southern side. Lord Conway opposed the crossing from the south bank of the Tyne, constructing fortification to defend both of the fords.

The defences at the fords were breached and the English retreated in confusion, being ill trained, ill paid and largely reluctant to fight a battle for which they had little commitment. The English cavalry and infantry scattered in disarray in different directions. Some headed for Ryton, scaling the slopes of Holburn Dene and others headed for Stella, probably up Peth Lane which appears to have been in existence since medieval times. The Scots went on to capture Newcastle, which Lord Stafford hastily abandoned to its fate. The consequences for King Charles were to prove serious. The cost of raising the army had been enormous, and he then had to pay £200,000 to free Newcastle.

The Battle of Newburn Ford was the only battle of the Second Bishops’ War. Politically it was of the greatest importance. He was forced to recall Parliament in November- the famous Long Parliament - that sat until the Restoration, long after the king had lost his head and the Monarchy, as an Institution, much of its power. The landscape of 1640 was profoundly different from that of today. The river had been straightened and the floodplain largely developed. Even so, the topography allows an understanding of the course of events during the battle, which took place over pastureland with woods on the steep river cliffs.
