IN THE GARDEN
Spur into action

One for the kids: Make a recycled bird feeder Make a bird feeder from the bottles you would throw away. STUFF YOU NEED Plastic drinks bottles, yoghurt pots or milk cartons (make sure they’re clean), wire or string, bird seed, scissors. IMPORTANT NOTES This will require adult help with cutting. Be aware of nut allergies.
With the lawn mower back out, trim regularly and continue adding clippings to the compost heap.
Use the half-moon edging iron, or a spade, to create a 7.5cm (3in) gutter around the lawn edge. This will prevent grass from creeping into the border from the main lawn.
spurred into action by a spell of sunny weather. Now is a good time to prepare beds for planting by digging them over, weeding and adding compost.
Apply a high nitrogen summer lawn fertiliser to encourage a healthy-looking lawn, taking care to avoid any runoff as this may cause pollution. Always follow the manufacturer’s instructions carefully.
Garden centres will be full of bedding plants, but as an alternative, consider planting perennial flowers, which will come back year after year. A good way of bringing a bit of countryside into the garden is to get pot-grown wild flowers, which are now more widely available. Your local Wildlife Trust may sell a supply grown from seed of local origin.
May is one of the busiest months for the vegetable and flower grower, and even the non-gardeners among us can be
Follow these steps • Cut a hole in the side large enough to allow a free flow of seeds, but in such a way that it won’t all fall out on the ground in the slightest puff of wind, and won’t get wet if it rains.
• Make a few small holes in the bottom of your feeder to allow any rainwater to drain away. • Hang it with wire, or even strong string from a tree or your washing line.
This month’s jobs Plant evergreen hedges and keep them well watered. Plant containergrown shrubs. Plant herbaceous plants. Trim back winter-flowering heathers. Prune spring-flowering shrubs such as forsythia after they have flowered. Make hanging baskets. Sow hardy annuals. Plant herbs sold in pots.Sow vegetable crops outdoors including salad crops, peas and cabbages. When all threat of frost has passed, plant out tomatoes and courgettes in grow bags. RECIPE
Call us: 0191 4871834 Recipes by Kirsty Hale, Riverford Cook and www.riverford.co.uk/recipes
Frying-pan Spinach Soufflé The word soufflé seems to strike fear into the hearts of even competent cooks, but this version is simple and accommodating. All you’re looking for is to get the eggs to rise slightly, then crisp a little on top, like a puffy omelette. You need a smallish frying pan which can go in the oven 21-23cm in diameter.
INGREDIENTS 300g spinach, washed, leaves stripped from their stalks 4 eggs ¼ tsp ground nutmeg 1 good tsp wholegrain mustard 75g grated Cheddar Sunflower or light olive oil, for frying Salt and pepper
Serves: 2 The two things to get right with any form of soufflé are to whisk your egg whites until you can tip the bowl over your head without them falling out (really!) and to fold them in gently to keep as much air in the mixture as possible. Heat your oven to 210˚C/Gas 6. Cook the spinach in a pan of boiling water for 1–2 minutes, until wilted. Drain and refresh in
a bowl of cold water, then drain again. Wring it out with your hands to remove excess water, then roughly chop the leaves. Separate the egg whites and yolks into 2 bowls. Whisk the egg whites until they form firm but soft peaks – an electric whisk makes life easier. Lightly beat the egg yolks together. Add the spinach to the yolks, then add the nutmeg, mustard and three quarters of the cheese. Season with salt and pepper. Take a spoonful of the egg white and stir it into the egg yolk mixture, then very gently fold in the rest. Pour 1 tablespoon of oil into a 21–23cm frying pan. Wipe the base and sides with kitchen paper to coat it. Heat the oil gently, then tip in the egg mix and tip the pan from side to side to cover it. Sprinkle over the remaining cheese. Transfer the pan to theoven for 10 minutes, until the mixture has risen and is fluffy and slightly golden from the melted cheese on top. Cut in half or wedges to serve.
