Ventilate the greenhouse on sunny days
A good wildlife garden is more than just a corner of a garden left to go wild. Whether you are creating a new wildlife garden, or have an established one, think of it as a nature reserve and you are the warden. Soil type, drainage and climatic conditions play a big part in what can grow in your garden. The way it has been managed in the past also influences what lives there. If it has been intensively managed,
or has less green space and more concrete, it is likely to support less wildlife. If you are creating a new garden, look at what grows locally in the wild and in other gardens for ideas. You cannot force plants to grow where they don’t want to, so look to see what flourishes where in your garden. If you find something growing naturally and wish to keep it, leave it where it is instead of trying to move it.

IT’S ALMOST GOODBYE 2014. HELLO 2015!
THE NEW YEAR RENEWS HOPE FOR YOUR DREAMS. And if you are like most people then your dream for the New Year has something to do with losing weight and getting fit. It makes sense, doesn’t it? What better time is there than now to transform your body into the one that you’ve always dreamed of? To get you off to a great start I’d like to share with you some food for thought:
WHY DO YOU EAT?
Now I know at first glance the answer to that question seems painfully obvious—but I want you to dig deeper. You’re probably thinking that you eat when your body is hungry to get the energy you need to sustain life. And you’re partially right. But that’s not the only reason that you eat. The truth is that you possibly eat too much. Your body simply doesn’t need all of the calories that you consume, and it shows in a physique that is less than svelte. If we only ate to fuel our bodies then we’d all have washboard abs. And that’s clearly not the case, right? So what drives you to eat when you shouldn’t? Hmmmm, the answer to this question could be just what you need to see results in 2015.
Here are the four basic reasons that you eat:
1
BECAUSE YOU’RE HUNGRY. This one is obvious. You eat when your body tells you that it’s hungry and in need of fuel. Just like your car lets you know when it’s time to head over to the fuel pump, your body is great at letting you know that energy stores are low. Eating when you are hungry and stopping when you are full is a healthy thing. Too bad this isn’t the only reason that you eat...

BECAUSE YOU’RE EMOTIONAL. ...but the truth is that you also eat when you are emotional. Think back - can you remember a time when you turned to food after a stressful confrontation? Or
how about when you’ve soothed the blues away by treating your sweet tooth? And it’s not just negative emotions that lead to emotional eating—most of us reward happiness with unnecessary calories as well. Emotional eating adds an untold number of calories to your diet - all calories that are unnecessary and turn into fatty deposits on your body.

BECAUSE YOU’RE SOCIAL. Come on, don’t just sit there, have a slice of pizza with us. No one likes to eat alone, and so you feel obligated to eat with others. How many times have you filled up a plate just because everyone else was eating? When eating becomes a social activity with no thought to the calories that are being consumed, only one thing will result: weight gain.

BECAUSE YOU’RE HABITUAL. At the end of each day you relax in front of the television with a snack, and I’m willing to bet that it isn’t because you’re hungry. You simply associate sitting down to watch television with eating something. Or maybe you always visit the vending machine on your break whether you’re hungry or not - it’s just become a habit. As humans we love to form habits, and when your habits involve eating extra calories your waistline suffers for it. Here is my challenge to you: Take the time to examine why you are eating, and choose to only eat when you’re truly hungry. This small action has the potential to dramatically improve your physique in the coming year. Remember that improving your diet is only half of the equation when it comes to reshaping your body. The quickest and most permanent results are achieved when good eating habits are accompanied by challenging exercise.

Winter pot roast chicken & celeriac Serves 4-6 Prep Time: 10 mins, Cook Time: 1 hour 50 mins
INGREDIENTS 2 tbsp thyme leaves 50g butter, at room temperature 1 small Riverford chicken, around 1.6kg 1 lemon, halved ½ large or 1 small celeriac, cut into rough chunks, approx 5cm 4 carrots, peeled & cut into large chunks 2 leeks, halved then cut into thick slices 4 small or 2 large garlic cloves, peeled & crushed or finely chopped 2 rosemary sprigs 2 bay leaves ½ a bottle of Ashridge cider (the rest is a cook’s perk!) 1 pack (500ml) ready-made Riverford chicken stock

Preheat your oven to 200˚C/180˚C fan assisted/gas mark 5. In a small bowl, squidge the thyme leaves into the butter. Carefully push the butter between the chicken skin and breast, taking care not to rip the skin. Gently press your fingers over the top of the skin so the butter gets evenly distributed over the meat. Again, take care not to break the skin. Pop the lemon halves into the chicken cavity. Put the celeriac, carrots, leeks, garlic, rosemary and bay leaves in a large casserole dish and place the chicken on top. Warm the cider and stock in a small pan, then pour over the chicken. Season with salt and pepper, cover and roast for 1 hour. Remove the lid and cook for 30-45 mins, until the chicken is golden, and the meat cooked through (no pink juices remain). Remove the chicken and strain the veg in to a colander over a large pan to catch the cooking liquid. Keep the veg in a warm place. Boil the reserved cooking liquid to reduce it by approx. half, to make the sauce. Check the seasoning. Put the chicken and veg back in the casserole dish. Gently warm through on the hob (or just pour the warm sauce over the top if the dish is not flameproof), then serve at the table, to share. Serve this with a bowl of creamy mashed potatoes, or pearled spelt or barley for a healthier option. Pot roasting meat keeps it tender and juicy.
