IN THE GARDEN
Spring arrives Spring usually arrives by mid-March and the frequent sunny days provide the opportunity for an increasing range of gardening tasks. It’s time to get busy preparing seed beds, sowing seed, cutting back winter shrubs and generally tidying up around the garden. One of the first signs that spring has arrived is bulbs, such as crocuses, daffodils and chionodoxas. Many of our native woodland plants, such as primula, now flower in certain areas - often under trees before they form a thick canopy of leaves. Other attractive early flowering plants include hellebores and pulmonaria. March is a good planting month, as the soil is starting to warm up while plants are still largely dormant and don’t mind being moved. Evergreen hedges, such as holly or box, make a good screen for front gardens.
If you have space, you could think about planting a shrub or group of shrubs to attract birds through the year. Nectar-rich flowers will attract many flying insects, including butterflies.
Attracting Wildlife Hedgehogs and frogs become active after hibernation. If you want to attract frogs, but don’t have room for a pond, an alternative is to use an old plastic washing up bowl. This can be sunk halfway into the ground in a quiet and shady spot. A large stone put inside it helps frogs climb in and out. You can also attract amphibians into your garden by leaving some damp places, such as long grass and piles of stones for shelter.
A closer look: Grey Squirrels These squirrels have grey fur and often sit upright with their large bushy tails arched over their backs. Grey squirrels, originally from North America, were released in the UK by 19th century landowners. They are now very common and widespread. Grey squirrels are active during the day, foraging for food in trees and on the ground. Grey squirrels tend to breed in between January and April and, if food is plentiful, they may have a second litter in the summer. What does it eat? Acorns, bulbs, tree shoots, buds, fungi, nuts and roots. Occasionally takes birds’ eggs and chicks. Where will I see it? Throughout the garden, especially on peanut feeders. Also in parks, woodland and hedgerows.

Protect new spring shoots from slugs. Plant shallots, onion sets and early potatoes. Plant summer-flowering bulbs. Weeds come back in to growth - deal with them before they get out of hand. Start feeding fish and using the pond fountain; remove pond heaters. Open the greenhouse or conservatory doors and vents on warm days.

RECIPE
Call us: 0191 4871834 Recipes by Kirsty Hale, Riverford Cook and www.riverford.co.uk/recipes
Baked Aubergine with Spiced Lamb, Mint & Pomegranate
Aubergines are great vessels for stuffing. We’ve given the lamb a Middle Eastern style spicing and have served it sprinkled with almonds, mint and pomegranate, though you can leave out the pomegranate if you can’t find any. Good with couscous, a leafy side salad or wilted spinach.
INGREDIENTS • 1 large aubergine • Sunflower oil or light olive oil, for frying and roasting • 25g flaked almonds • 1 onion, finely diced • 1 large garlic clove, finely chopped or crushed • 300g minced lamb • 2 tsp ground cumin • 1 tsp ground coriander • 1 tsp dried mint • ¼ tsp smoked paprika • ¼ tsp chilli flakes • 4 large tomatoes, skinned & chopped • 1 pomegranate handful of mint leaves • Shredded salt and black pepper.
Serves: 2 Heat the oven to 220oC/Gas 7. Cut the aubergine in half lengthways. Score the flesh in a crisscross pattern. Drizzle liberally with oil and season with salt and pepper. Place skin-side up in a baking dish. Bake for 45 minutes or until the flesh is soft and tender right the way through. Meanwhile, put the almonds in a dry frying pan. Heat gently, stirring, until golden. Remove to a plate and keep to one side.
Heat 2 tablespoons of oil in a frying pan. Add the onion and fry on a low heat, stirring, for 10 minutes. Add the lamb and fry, stirring, on a medium heat to brown. Add the garlic, cumin coriander, dried mint, smoked paprika and chilli flakes and stir for 2 minutes. Add the chopped tomatoes. Season and simmer for 30 minutes, adding a splash of water if needed to stop the meat drying out. Cut the pomegranate in half crossways. Take a rolling pin or the handle of a wooden spoon. Hold the pomegranate cutside down in your hand over a bowl and bash the skin; the seeds will fall out (most of them anyway). Pick out any pith that does fall in; there shouldn’t be much with this technique, but it tastes bitter, so remove any you find. Once the aubergine flesh is tender, remove it from the oven. Carefully scoop out as much of the flesh as you can, keeping the aubergine skins intact. Add the flesh to the lamb. Stir and simmer for 5 minutes. Check the seasoning. Spoon the lamb mixture into the aubergine skins. Sprinkle over the almonds, pomegranate seeds and mint to serve.
