Make sure that your tools — from bean grinders and filters to coffee makers— are thoroughly cleaned after each use. Rinse with clear, hot water, and dry with an absorbent towel. It’s important to check that no grounds have been left to collect and that there’s no build-up of coffee oil.

Purchase coffee as soon as possible after it’s roasted. Fresh-roasted coffee is essential to a quality cup, so buy your coffee in small amounts (ideally every one to two weeks). Check out our helpful tips on how to store coffee to keep it as fresh and flavorful as possible.

The water you use is very important to the quality of your coffee. Use filtered or bottled water if your tap water is not good or has a strong odor or taste, such as chlorine.

THE BEANS Great coffee starts with great beans. The quality and flavor of your coffee is not only determined by your favorite brewing process, but also by the type of coffee you select. Some of the flavor factors include: • The country and region of origin • The variety of bean - arabica, robusta - or a blend • The roast type While there are a lot of choices, remember that there’s no right or wrong — for instance, you can choose a dark, flavorful espresso roast coffee and still have it ground to be brewed in a drip system.

THE GRIND If you buy whole bean coffee, always grind your beans as close to the brew time as possible for maximum freshness. A burr or mill grinder is best because the coffee is ground to a consistent size. A blade grinder is less preferable because some coffee will be ground more finely than the rest. If you normally grind your coffee at home with a blade grinder, try having it ground at the store with a burr grinder - you’ll be surprised at the difference!

If you’re using tap water, let it run a few seconds before filling your coffee pot, and be sure to use cold water. Avoid distilled or softened water.

ENJOY! Prepared coffee begins to lose its optimal taste moments after brewing, so only make as much coffee as you’ll drink. Otherwise, coffee can be poured into a warmed, insulated thermos to be consumed within an hour.

Since there is a finite amount of caffeine to extract in coffee, what can cause this difference in caffeine concentration? Moreover what does it take to extract caffeine from coffee? We know from earlier entries that caffeine is water soluble. Caffeine is extracted into the brew by hot water acting as a solvent. Since all brewing methods don’t yield the same percentage of caffeine, let’s see what else can affect the buzz.

The grinds need to be 100% saturated to extract all the caffeine available.

Grind can influence how quickly caffeine is extracted. With a finer grind you have the ability to extract caffeine faster. Water reaches the surface area and saturates the grind with ease, as there is a greater contact area.

TEMPERATURE Above we mentioned hot water acting as a solvent. The ideal water temperature is near-boiling, 95105°C. Temperature is going to make a big difference in how quickly caffeine is withdrawn from the bean.

Under-extraction will happen with espresso when the grind is too coarse; whereas you will have over-extraction if the grind is too fine. All these factors influence how quickly caffeine is extracted from coffee. Essentially, you could take a whole bean and saturate it with water, eventually the caffeine will be removed, but how long do you imagine it will take? Espresso is prepared using pressurized water, more ground coffee than used for drip, all of which result in a higher concentration of caffeine than drip.

COFFEE LOVERS, REJOICE The study, thought to be the largest of its kind, followed more than 500,000 people in 10 European countries over the course of 16 years. It found that compared with those who don’t drink coffee, those who do show signs of having healthier livers and circulatory systems, as well as lower levels of inflammation, says epidemiologist and study leader Marc Gunter. The findings also indicated that “higher coffee consumption was associated with a reduced risk of death from any cause,” including circulatory diseases and digestive diseases, says Gunter, who heads the nutrition and metabolism section of the International Agency for Research on Cancer in Lyon, France.

Sure, a rich piece of chocolate cake practically begs to get washed down with a cup of coffee. But have you ever noticed the opposite happens, too? The minute you sip a cup of coffee to get out of your mid-afternoon slump, you suddenly start craving something sweet to go with it. A study published in the Journal of Food Science might have answered why coffee makes you crave dessert—and it’s not just about balancing out the bitterness. Cornell University researchers gave volunteers decaf coffee with either 200 milligrams of caffeine (about the amount in a cup of regular coffee) or nothing added. Both types had sugar to add a bit of sweetness. (Take your coffee without sugar? Normally, a chemical called adenosine binds to nerve cell membrane receptors and makes you feel sleepy. Caffeine binds to the receptors to block them, which is why you feel less tired when you drink it. But that process also has the strange effect of making it harder to taste sweetness.

Afternoon tea menus featured small sandwiches and elaborate desserts that were set out for attendees to enjoy while they socialized about the latest events. Guests would sit in chairs, as opposed to sitting at a table.

This classic children’s story is one of the most popular themes for a tea party, whether for adults or kids. Scatter clocks, playing cards and keys around the room for decorations. Instead of name tags at table settings, use phrases from the book, such as “Drink Me” and “Off With Her Head” to bring back memories. You can even encourage your guests to dress as one of the characters or bring a fun hat to wear. They might also bring a favorite memory related to the story, maybe a book they read or a quote from one of the characters.

HIGH TEA Members of England’s working class did not arrive home from work until 6 p.m. or later, which made it difficult for them to plan an afternoon tea. The costs associated with these parties was another barrier, but many people still wanted to enjoy a social tea setting within their budget. As a result, a high tea menu was enjoyed as part of the evening meal while sitting at their regular (higher) dining table. Butter-Pecan Scones 2 cups all-purpose flour 1 cup finely chopped toasted pecans 1⁄3 cup firmly packed light brown sugar 1 tablespoon baking powder 1 teaspoon salt 1⁄3 cup cold brown butter* 1 (3-ounce) package cold cream cheese, diced ¾ cup plus 2 tablespoons heavy whipping cream, divided 1 teaspoon vanilla extract 1 teaspoon butter flavoring, such as Wilton 1 tablespoon raw sugar

Instructions Preheat oven to 350°. Line 2 baking sheets with parchment paper.In a medium bowl, combine flour, pecans, brown sugar, baking powder, and salt, whisking well. Using a pastry blender, cut brown butter and cream cheese into flour mixture until they resemble coarse crumbs. In a small bowl, combine ¾ cup cream, vanilla extract, and butter flavoring. Add to flour mixture, stirring until mixture is evenly moist. (If dough seems dry, add more cream, 1 tablespoon at a time.) Working gently, bring mixture together with hands until a dough forms. Turn out dough onto a lightly floured surface. Using a rolling pin, roll dough to a ¾-inch thickness. Using a 2¼-inch square cutter, cut as many scones as possible, rerolling scraps no more than once. Cut each scone in half diagonally. Place scones on prepared baking sheets. Using a pastry brush, lightly coat tops of scones with remaining 2 tablespoons.

I love the moon, space & this insane infinite universe so much bigger than us that we’re not nearly amazed enough at.

This year we are doing Alton Brown’s honey brined turke, but John’s favorite for the past few years is Todd English’s. I love Stove Top. And none of the “fancy, schmancy” varieties. “I like OG turkey.” I will say don’t make it too early; it gets mush-mush. Do it at the last minute.

What are the last three items on your credit card statement?

Vitamins. I take multivitamins, probiotics, and vitamin D. I also bought a Big Wheel tricycle for Egypt and paid for his school applications.
