Your guide to serving a standout bird

Time it right
You’ll find serving size advice on product packaging, but these are a rough guide:
Cook your bird at gas 4, 180°C, fan 150°C and see the front of the pack for cooking times. As a general rule, the bird is cooked for 20 mins per kg, plus either 1 hr 20 mins or 1 hr 45 mins, depending on the weight. (If you do add any stuffing to the bird, make sure you weigh it afterwards.)

Show it some love CLIENT
Don’t skip the prep Keep your turkey well chilled in the fridge, then bring it out one hour (no more than two) before cooking to get it to room temperature. Remove the neck and giblets, if they’re included. You can use them to make gravy (see our tip on p27). Don’t wash the bird as this can spread harmful bacteria.
Full flavour
To allow the bird to cook evenly and safely, it’s best to cook your stuffing separately, rather than inside the bird. You can, however, add bay leaves or halves of lemons or clementines to the cavity for extra flavour. Rub the skin with butter or oil and season well for a golden skin.
Baste your bird for juicy meat. Once the turkey starts to release its juices, spoon them over every 40 minutes, working quickly so as not to lose too much heat.
Check it’s done Insert a kitchen thermometer into the thickest part of the leg, being careful not to touch the bone. If it reads 75°C, then it’s done. If it doesn’t reach this temperature, return to the oven for 15 mins and re-test. Or you can insert a skewer into the thickest part of the leg and check the juices run clear.
Well rested Let the turkey rest for at least 30 mins, covered loosely in foil. This allows the juices to reabsorb into the meat for the most tender, and delicious results.
