Nice’ page for a little history lesson on the city’s most famous monuments. We also head to the Italian Riviera and delve into the wonders of the Qinque Terre.
it has been a perfect season. But while the days get shorter and the nights cooler, we can take comfort in the thought that Nice is alive and well, with plenty to do this month. Kicking off November are the Riviera Comedy Club shows in Nice, Cannes, Antibes and Monaco. So if you are in the mood for a belly laugh and a pick-me-up then be sure to check out these world-class acts. Our guys in purple – Nice Rugby team – are also taking to the field for a few home games. This really is a great day out, with afternoons of cheap drinks and live entertainment at the club-house hard to pass up!
In our restaurant guide, we review one of Nice’s oldest restaurants, Le Virginie, and one of the latest, Giuseppe & Pepimo, trying everything from raw seafood to yummy brunches.
We’ve got loads of great bands playing around the city this month, so make sure you read our ‘Gig Guide’ for locations and dates. We welcome American bar Blast to the live music scene as they open the doors of their very chic upstairs bar. And we say goodbye to De Klomp on the 28th for a few months while they undergo a renovation. Exciting indeed.
This month also sees the first leg of the Louis Vuitton Trophy Regatta. Nice Port will be taken over by yachting enthusiasts and America’s Cup class boats … a fun and interesting event that is worth a visit.

It’s Beaujolais Nouveau! At one past midnight on the third Thursday of November producers race to get the first bottles of Beaujolais nouveau onto the market! Much hype surrounds the release of the vintage, and banners proclaim the good news: Le Beaujolais Nouveau est arrive! or “ the new Beaujolais has arrived!”. Beaujolais nouveau is a purple-pink wine made from Gamay grapes, and is produced from the Beaujolais region of France. Historically, it was a fast-produced wine to drink while the better Beaujolais was taking its natural course. It is similar to white wine in that it lacks the astringent tannins normally found in red wine (due to the early pressing of the grapes), and it is largely dominated by fruity flavours. Beaujolais nouveau is a festive wine best served lightly chilled and is designed to be gulped not sipped! By law, all grapes from the Beaujolais AOC region must be harvested by hand, and the wine is ready to drink just 6-8 weeks later! By the time it is over, more than 65 million bottles will be distributed and drunk around the world. So as you partake in the Beaujolais phenomenon this month remember that the same celebration is taking place in homes, cafes, restaurants, pubs, bars and bistros around the world! Happy Beaujolais!

Louis Vuitton Trophy Regatta Nice Port 7th-22nd November Louis Vuitton Trophy Regatta French luxury giant Louis Vuitton is hosting a yachting regatta in Nice Port from November 7th, an extravaganza hoped to one day rival the planet’s most famous yachting prize – the America’s Cup. Eight teams from seven nations will compete, leading on to four other regattas around the world in 2010. The races are sailed in America’s Cup class boats provided by the organisation. Nice is the first event inspired by the Louis Vuitton Pacific Series in NZ earlier this year. The host team of Nice is ALL4ONE.
A day in Nice THE STORY BEHIND THE ARCHITECTURE A WALKING TOUR OF NICE
Sometimes, we forget to look up as we wander through the ochre coloured streets of Nice, inadvertently ignoring the rich architecture with which we are surrounded. So this month, we take you on a walking tour of the city ... delving into the history of Nice’s most astonishing buildings. Our tour begins at the Opera House on rue Saint François de Paule. It’s origin dates back to 1776 when a wealthy noble family, the AlliMaccarani’s, obtained permission from the King of Sardinia to transform their old mansion into a theatre house. This building was made out of wood, and in 1826 the city of Nice purchased the theatre in order to build an Italian-style opera house, befitting a growing city like Nice. Two well-known architects - Burati (Nicois) and Perotte (Turin) were chosen, and they designed a 4-floored hall without chairs, as was the way of the times. A giant window opened the rear to the sea, and the main curtain beheld a portrait of Catherine Segurante, the heroic washerwoman. Just 15 years later, on March 23 1881, the whole building was burnt to the ground by a gas lamp fire, killing 70 people.

Four years later, Niçois architect Francois Aune had created the building you see today. Be sure to look up at the ceiling and marvel at a painting of the Sun by Emmanuel Costa. There are also sculptures of the 4 Muses: music, tragedy, comedy and dance. There were but a few changes to the building in 1902, including a new entrance and grand staircase and the replacement of paintings by mirrors in the entrance. Finally, in 1993, the building was declared an historical monument. Next we move eastwards towards Place Rossetti - a common thoroughfare in Vieux Nice. We have all marvelled at the glorious imposing exterior of Cathedral Sainte Reparate, but perhaps it’s time to take a look inside. The story of Saint Reparate goes back as far as
the third century AD, when France was part of the Roman Empire. Emperor Gaius Decius decreed that every citizen must make sacrifices to the state gods, and those Christians who refused to do this were persecuted and punished. Saint Reparate was a 15-year-old boy who was martyred in 250AD for his beliefs. As legend goes, it took three attempts to kill him - firstly, they tried to burn him alive, but rain put out the fire; then they made him drink hot pitch, but he survived; finally he was decapitated. His body was put into a boat and set adrift coming to rest on the coast of Nice. His remains were returned to the site in 1690. The building was formerly a priory of the Benedictine Abbey of Saint-Pons and was made into a cathedral in 1590. A new cathedral was built on the site and consecrated in 1699. Inside, there are 10 chapels belonging to all the families who help maintain the chapel. There is a magnificent 18th century bell tower dominating the surroundings, and a marble choir balustrade. Lascaris Palace is undoubtedly one of the most beautiful buildings in Nice. The name Lascaris is associated with the Byzantine Empire, which came about with the marriage of one of the sons of the noble Ventimille family with the daughter of the Lascaris imperial line of Eastern Byzantine empire in the 13th Century. The Palace was built in 1648 for Jean-Baptiste Lascaris-Ventimille, a military commander for the Dukes of Savoy. Following the conquest of Nice by Napoleon in 1796, the Palace was sold to the revolutionary government and used as offices. It was then divided into apartments during the 19th Century, but thankfully the city of Nice bought the Palace from the national government in 1943 and restored it to something of its previous grandeur and lustre. It re-opened to the public in 1965 as a museum. Inside, there is a magnificent staircase that was characteristic of the 17th and 18th Century Genovan architecture. The façade is in the Baroque style and garlands of flowers cover its pilasters. The public rooms are covered with frescoes; even the floor is full of colour and expressiveness. The two main attractions are the staircase and the Flemish tapestries. St Martin St Augustin is arguably the oldest church in Nice, but one of the least well known. The St Martin part is an old parish church going

back as far as 1249. The parish church was partially rebuilt between 1681 and 1690, and much of what you see now is from this period. The church retains most of its original Baroque characteristics, especially in the façade. Inside, there is a pieta of the dead Christ in the lap of the Virgin, created by 15th Century artists Louis or Ludovico Brea - who was born in Nice in 1450 and died in Genoa in 1523. Almost opposite the church is a memorial to Catherin Ségurane, a washerwoman who is said to have played an important role in repulsing the Turks in 1543 by showing them her bare behind! Our tour ends at Place Garibaldi. As many times as the city of Nice switched hands, the Place Garibaldi changed names. However, popular pressure led to it finally being named after one of its most famous sons on September 13 1870. Giuseppe Garibaldi was born in Nice in 1807 and his name is forever associated with the Risorgimento period during which modern Italy was created out of the wars involving Austria, PiedmontSardinia, the Papal States and other smaller cities in the Italian peninsula. Garibaldi’s popularity, his skill at rousing the common people, and his military exploits are all credited with making the unification of Italy possible. He did, however, oppose the surrendering of Nice to the French in 1860. In this large square, it is easy to marvel at the beautiful front of the Saint Sepulchre Chapel known as the Archiconfrerie des Penitents Bleus. In its centre stands the statue of Garibaldi, commissioned in 1877 and inaugurated in 1891. The sculptor was Antoine Etex who is most famous for his pieces Resistance and Peace on the Arc de Triomphe in Paris. Standing on a pedestal in a fountain, the statue is looking towards Italy and is wearing his famous red shirt. The two bronze figures are representations of France and Italy, right and left respectively. A lion protects each side representing his sons, Menotti and Riciotti, and is astride a cannon symbolizing the 1860 expedition of 1000 on the left and the 1870 campaigns against Prussia on the right. Travel Hotspots The Cinque Terre The Cinque Terre is a treasure of the Italian Riviera, a collection of five tiny villages where time seems to have stood still. Each village weaves in and out of the coastline, amidst terraced hills falling steeply towards the sea. And now is a wonderful time of year to visit Cinque Terre and experience its charm without the mass of tourists who descend here in the summer months. Strung along 18km of serrated cliffs between Levanto and La Spezia, the Cinque Terre comprises Monterosso, Vernazza, Corniglia, Manarola and Riomaggiore. The region is famous for its natural beauty, and became a Unesco World Heritage site in 1997, protecting its marine area and national park. This status has saved it from becoming an overdeveloped tourist trap and part of its charm lies in the lack of visible ‘modern’ development. Cars and motorbikes are not allowed in the villages. Instead, trains connect the different villages, and electric busses scale their sheer streets. Walking paths in the national park are even closed when numbers become too great. Of course, this shouldn’t be a problem for travel in November. Cinque Terre is famous for its pesto. A farmer’s co-op allows local growers to profit from basil, garlic and pine nut crops, and the delicious paste can be tasted in every restaurant and café in the region. The delectable Italian bread Focaccia is also a favourite here, as well as white wine, fresh fish and sweet local lemons. My Cinque Terre: Allan Dransfield ... All of the villages of Cinque Terre have their own character. Some have small beaches; some are perched on the rocky cliffs. But I have to say my favourite village is the first and largest - Monterosso. This village seems to have everything the others have, but displays a more communal feel. Monterosso has the biggest bay that is split into two beaches, separated by a large tunnelled rock. The first beach on the railway side is a large and open strip, full of hotels and summer beach parties. Travelling through the tunnel, you arrive at the old town - which is home to the locals and is, for me, the “real” Cinque Terre. Colourful houses are stacked into the hills, eventually blending into the many olive, wine and lemon tree plantations. On this side of the bay, open-air events in the dock are common most weekends throughout the summer. Being the largest of the five villages, Monterosso also offers the most evening entertainment, which by most standards is still pretty tame. But I prefer smaller crowds, it is easier to meet people and mingle that way. For me, the Cinque Terre is a special place where you can go and loose yourself; detach from the stresses of everyday life and just lead a simple existence. The food is delicious and well priced, and the locals welcome you with open arms. I really feel like I am going home when I return to the Cinque Terre, greeted by the same faces and having an aperitevo in my favourite bar at sunset year after year.
Hiking:
November is the perfect time for hiking between the villages, when the olives are being readied for harvest and the trails are not clogged with tourists. A hiking trail is called a Sentiero in Italian, and there is the famous Sentiero no. 2 (or Sentiero Azzuro) connecting the 5 villages along the coast. It is 11km long and takes an estimated 5 hours to walk. The shortest trail is between Riomaggiore and Manarola and is only 20 minutes on relatively flat terrain. Heavy rainfalls can wipe out sections of the trail, so day-trippers should make sure to check the weather in advance. As with many European villages, some hotels and restaurants in the Cinque Terre tend to close from mid November to March or April. However, restaurateurs in the villages arrange it so that at least one restaurant in each village is open on any given day yearround. So whether you are looking for a quiet autumn getaway or early planning your next summer trip, position the Cinque Terre at the top of your list!
Getting there:
The Cinque Terre is 280km from Nice, so it will take approximately 3 hours to drive there from here. It is important to remember however that while it is possible to approach the Cinque Terre villages by car, there is no use for a car once you’re there. There is daily parking in Riomaggiore and Monterosso. The train is the easiest way to get to Cinque Terre. From Nice, catch a train to Genoa (Genova), then take the local train toward La Spezia and get off at your destination. Or take the express directly to La Spezia and the local back to your Cinque Terre destination.

Restaurant Reviews This month we uncover a real secret in the Nice dining scene, a restaurant that has been favoured by locals for over 60 years, yet remains relatively anonymous among the rest of us. Introducing Le Virginie - famous for it’s seafood and Parisian Brasserie décor. Le Virginie exudes a confidence and knowledge that can only be gained from decades of service. Three generations of the Vannini family have carefully watched over Le Virginie, transforming it from the only pizza brasserie on the outskirts of the city to a seafood-lovers paradise with everything in between. The philosophy behind their preparation of seafood is “as simple as possible”, letting the freshness and exotic flavours reign through. Luckily, it is now the perfect season for seafood; it is at its best both in flavour and size! Therefore, a must-try at Le Virginie is the degustation platter, offering a little bit of everything on ice. Now, my palette has slowly become accustomed to raw food, but when such a platter is laid before you it is very difficult not to indulge. We were treated to a feast of sea urchin, bulot (cooked sea snail which has a distinctly meaty flavour and texture), prawns and fresh oysters. As our host Baptiste informed us, oysters must be eaten alive, and poking the muscle connected to the shell and seeing whether it retracts can determine a fresh oyster. Those who are a little squeamish at the idea of eating raw seafood should remember that sometimes it is necessary

able for lunch on Monday to Friday for 11€. The wines have been carefully chosen and are sourced from Bourgogne, Bordeaux, Loire, Vallee du Rhone, Bandol and Côtes de Provence. There is a satisfyingly large selection by the glass, allowing you to pair wines with each dish. For example, the Muscadet sur lie “Gildas Cormeray” goes perfectly with oysters (16€ bottle), and the soft fruity flavours of the Macon Village 2006 works well with the subtleness of the seafood (16€). The wine list mimics the food ...very affordable with an emphasis on quality.
to just go for it, only to be surprised at how enjoyable it is! Accompanying sauces and vinaigrettes finished the platter off nicely. Apart from the crustations, Le Virginie is also famous for its fish. Sole, loup and daurade are encased in salt and oven cooked. The cast is then cracked open and the fish is filleted tableside. Served simply with a tomato and onion compotée (sauce), it delivers very clean, sharp flavours. Of course it wouldn’t be a seafood restaurant without mussels, so there are the traditional dishes of moules farcie (stuffed mussels) and moule à la mariniere. Non-seafood fans are also well catered for. There is an inviting selection of entrees, including an Italian plate of cherry tomatoes, parma ham, coppa, marinated peppers, mozzarella and olive tapenade (12.50€); duck liver served with a mango chutney (15.50€); and grilled calamari (11€). The list of mains is extensive, offering duck breast with a cèpes jus served with baby potatoes and green beans (19€); penne pasta with a truffle perfume (12.50€); filet of steak with a pepper sauce (23.50€); and oven cooked cod with peppers and chorizo served with crushed potatoes (13.50€). It is worth noting that Le Virginie supports sustainable fishing practices, and all their seafood has been sourced from the same supplier in Brittany for decades. The staff are very friendly, and the atmosphere warm and welcoming - perfect for these colder months. While the restaurant is a short distance from the centre of Nice, it is conveniently located opposite the Riquier train stop and is but a 15-20 minute walk from the port. Giuseppe & Pepimo is a sprawling café/restaurant on Place Garibaldi. With its large sun-capturing terrace, modern menu and roaming buskers, it is no wonder why this is fast becoming the new place to be seen! After the first few visits, where drinking wine and soaking up the sunshine were our main agenda, it was finally time to indulge in the delicious looking food that was being served to eager diners around us. Much to our delight, the menu was not dominated by the headings of “pizza, pasta & salads”. Rather, Giuseppe & Pepimo offer a mixture of unique entrées, bruschettas, inventive mains, sandwiches and salads. It delivers the kind of chic café-style menu that is perfect for a late Sunday brunch or a quick, tasty lunch. Complimenting a rather large menu is a specials board with about a dozen further options. It is always a secret pleasure when I can’t decide what to choose. The bruschettas here are a wonderful take on this deliciously simple dish. The La Sudiste consists of figs (now in season), parmesan, parma ham, pesto, tomato, olives and pine nuts. The La Périgourdine offers the exotic flavours of foie gras, fig confit, cantal, smoked duck and nuts. But our favourite has to be the Brunch - a combination of baked baby goats cheese, scrambled eggs, smoked salmon and pancetta delivered on a thin bruschetta. With a healthy serving of salad, these make for a somewhat guilt-free and relatively cheap lunch (8-10€).
ice cream, lashings of cream and chocolate sauce; or “For Men” - lemon and pineapple sorbet with fresh pistachios and vodka! Wine costs as little as 3€ a glass and 8€ a pichet, and while there isn’t a large selection of wines they are consistently good. Buskers are hired by the restaurant to entertain guests, so there is often live music without pushy musicians scanning for money. The position of and vast open space afforded by Place Garibaldi means you can bask in the sun from mid morning to mid afternoon. And it is fantastic to see this once neglected part of town begin to grow and flourish. Giuseppe & Pepimo is open for lunch and dinner, 7 days a week. Cassandra Tanti
The mains include a noodle, vegetable and prawn stir-fry (15€); lamb tournedos served with panisses (made from chickpeas), and a spring onion confit (17.50€); and sausage cannelloni with grilled tomatoes (10€). There is a seafood salad made of prawns, crab & squid (9€) and my favourite - Thai beef salad with coriander and fresh herbs (8.50€). These salads are only available at lunchtime however. For a quick lunch, there are some delicious sandwiches: Club Mediteranée - rocket, pesto, tomato, tapenade, parmesan & pancetta (6.50€); the traditional pan bagna with fresh anchovies and real tuna (7.50€); and a Bora Bora sandwich comprised of avocado, prawns, pineapple, tomatoes and cocktail sauce (8.50€). It beats your average panini that’s for sure! Now, primarily Giuseppe & Pepimo is a gelateria, so you can imagine what their ice creams look like. One simple glance at these deserts onroute to a table is enough to make you order one. Think freshly made

I know I am, and with good reason. We, here in the South of France, have had a relatively easy time. And let me explain why. While housing markets are falling apart all over the world, the market on the Cote d’Azur has remained relatively stable and unchanged. Yes, prices and values fluctuate, but they always rebound with greater strength than before. And never has the case been more true than here in the south of France. So crisis? I don’t think so. News Feature Nice - a vision of the future
long-stretching Promenade des Anglais, matching its wide pavement and cycling lane.
As Nice prepares to celebrate the 150th anniversary of its final succession to France, we take a look at where the city is heading in 2010 and examine the transformation that awaits areas of Nice.
Port of Nice development
Nice Port is at the beginning of a massive redevelopment, aimed at reviving this often-neglected part of the city. It is a move that has, not surprisingly, been welcomed by port businesses, which have for years struggled to lure foot traffic from the old town. The entire redevelopment will change the look and ambiance of the port, costing €150 million and taking 10 years to complete. The first phase of transformation begins by making the port more pedestrian friendly, narrowing the traffic lanes and eliminating cars from its façade. It will eventually be an extension of the
The current redevelopment works began on October 5th on quai Lunel and quai Papacino. Phase two will begin in January 2010 until April, widening the pavements on the façade side of Quai Lunel, Quai Papacino and Place Guynemer. The third and final phase begins in 2011 and will involve the renovation of the pavements and the road on quai des due Emmanuel. Therefore, port residents and motorists can expect quite a long period of disruption. But the end result appears to be worth it. Currently, the port is an outdated, heavily trafficked area, where countless cars overshadow the glorious view of luxury yachts, cruise liners and the ochre façades of the 19th Century buildings. After the works, however, it will resemble the now-famous panorama of the Promenade des Anglais, with a large pedestrian area and bike lane for cyclists and rollerbladers. All parking will be underground, with an additional 300 parking spaces bringing the total to 1,000.

The narrowing of the road (while maintaining two-way lanes for traffic) will give more space to restaurant terraces. The pavement will increase from its current two metres to six metres. The final stage will be a lighting plan of the entire port area to highlight building façades and improve public security. The Mayor of Nice has also decided to reduce the number of large cruise liners entering the port of Nice, as focus shifts on it becoming primarily a marina.
Tram - Line 2 The tramline has been a huge success in Nice, despite the initial blowout in budget and schedule. Now, after months of debate, the green light has been given for the line to be extended to the airport – providing a very modern and eco-friendly option for travellers. However, it has not been an easy task for the city’s Mayor, Christian Estrosi, who has faced a massive
backlash from Promenade des Anglais residents and hotel owners, opposed to the noisy and unsightly works of the tramline installation. They were also concerned about the “irreversible” impact on the landscape and the disappearance of palm trees. Finally, after 19 months of quarrelling between those in favour and those opposed to Nice’s second tramline taking a seaside route, the decision was made in October to construct the new line through the centre of the city instead. The alternative line (ligne 2) will travel along the existing bus route of Rue de France onto Avenue de la Californie through to Cassin – Saint-Augustin. It will service the airport and the breadth of the city, passing by the port heading east to the train station at Riquier. Of the total 8.6km-long line, 3.6kms will go underground. By 2016, Nice should have a tram-subway. The alternate route is also said to save around €40 million in compensation payouts, according to hotel finance managers, who estimate business on the affected line will require €15-20 million in compensation, as opposed to €60 million for promenade businesses.
ment is now enforcing the closure of terraces in tourist zones from 12.30am. A massive demonstration of opposition by restaurant and bar owners in August prompted the government to withdraw its plan for early terrace closures. Little did business owners know that the reprieve would be short lived. The government says the early closures, effective from mid October to April, are necessary to curb violence in the city at night. According to one business owner, that reasoning is ridiculous. “People are secure and controlled when they are on a terrace drinking. Without that option, they will take to the beach and streets which are not controlled.” There is also the important issue of money. The early closure of terraces will inevitably impact on the amount of revenue that could be generated within the two hours from 12.30am to 2.30am. And it comes at a time when businesses are already suffering the effects of the off-season. Finally, there is the impact this decision will have on Nice itself. “The city is spending millions of euros on trying to draw people to Nice - the port redevelopment, the new tram line - yet at the same time they are closing terraces and limiting entertainment for tourists.” There are currently strict laws in place that can force the closure of a terrace if there are noise violations or serious complaints. Surely this is enough.
As for whether or not this law is effective in reducing crime in Nice - well, we can only look at the winter crime rate Terrace closures figures in May. In the meantime, locals Is Nice looking more quiet than usual at businesses are forced to comply with night? Well, it’s because after an initial an archaic law and simply hope for the reprieve over summer, the local govern- best.

The future of La Poste We all recognise the distinctive blue and yellow insignia of La Poste, but what is the story behind the perceived privatisation of one of France’s bestloved institutions? Thousands of post office workers have been striking to protest job cuts and government plans to convert the organisation into a publicly owned limited company. The postal union is joined by all five of France’s main trade unions in co-ordinating the strikes. La Poste said last year it was considering opening up its capital to private investors and asked to be allowed to change its status to that of a limited company to enable the move. It wanted to raise €3 billion from selling shares but the plan was abandoned when the global financial crisis hit. The government now plans to provide a capital injection of €2.7 million directly and via state-owned bank Caisse des Depots. La Poste says it needs this injection to become more competitive against aggressive international rivals such as United Parcel Service and privatised German post office operator Deutsche Post. The government says the move is necessary both to open up access to new sources of funding and to prepare for the liberalisation of the postal sector in 2011 under European Union rules. It denies the move is a first step towards privatisation. Unions, however, compare La Poste to Gaz de France and France Telecom, who have been partially or completely privatised despite early government declarations to the contrary. The reform is expected to take effect in January 2010.
Art & Culture Robert Longo
The American artist’s paintings hung on Patrick Bateman’s walls in American Psycho, he directed Johnny Mnemonic (with Keanu Reeves) and shot videos for New Order and R.E.M. Now, it’s our turn to step into the black and white world of Robert Longo. Mamac (Musée d’Art modern et d’Art contemporain) is filled with Longo’s fun and dramatic paintings of sharks, waves, dancing people, guns and planets. Probably his most famous work, the ‘dancing’ people, helped create a typical eighties yuppy look in the apartment of Patrick Bateman’s in American Psycho. The exhibition in Nice is the first important retrospective of Longo’s work in Europe since the 1990’s. He uses charcoal and graphite on paper yet somehow manages to create a picture-like effect. ‘The Shark’ is particularly realistic and the chiseled strokes draw you in to confirm that this is indeed a painting and not a photograph.

Recipes from the Riviera Braised Rabbit with Celery and Sweet Potatoes served with a Roasted Baby Beet Salad Now is the season for leafy green vegetables and roots. Fruits such as apples, cranberries, lemons, pears & kiwis, together with artichokes, bok choy, carrots, cabbage and broccoli are all at their best & are cheapest this month. Game is also now high in quality, low in fat, rich in flavour and as free range as it comes!
INGREDIENTS 1 whole rabbit, cut into pieces 1 cup seasoned flour 1 cup red wine 1 onion, diced I cup water 2 cups vegetable stock 6 cloves garlic, finely diced 1 whole celery, roughly chopped 3 sweet potatoes, peeled and roughly chopped Olive oil 1 bunch fresh oregano 1 bunch fresh parsley Juice of 1 lemon 4 large or 6 small baby beets 3 tablespoons tomato paste 1 bag rocket 1 tablespoon grated fresh Parmesan Cheese Balsamic vinegar
METHOD: Coat the rabbit pieces in seasoned flour and fry in a little oil until golden brown. Add the diced onion, garlic, red wine, stock, water and tomato paste. Bring to the boil and simmer for one hour on low heat, remembering to add extra water if the sauce reduces too much. In the last 30 minutes of cooking, add the chopped celery and sweet potatoes. Cook for the remaining half an hour or until tender. Meanwhile, fill a large pot with enough water to cover the beets and boil for 6-10 minutes or until the skin comes away slightly. Run the beets under cold water and remove all of the skin. Cut into wedges and place in a baking tray. Drizzle with the lemon juice, 4 tablespoons of olive oil, salt & cracked pepper. Roast for 15-20 minutes until golden brown. In the last 5 minutes, add the fresh chopped oregano and parsley to the beets and continue to roast. TO SERVE: Dress the rocket in a bowl with salt, freshly cracked black pepper, a dash of olive oil and balsamic vinegar. Toss through the warm roasted beets and herbs. Serve the salad on a plate beside the hot braised rabbit, sprinkle with grated Parmesan cheese and chopped parsley. Bon AppĂŠtit.
