Entreveaux & Lake Castillon
This month, we take you into the mountains of the Côte d’Azur to a picture-perfect medieval village complete with moat, and breathtaking emerald-green waters at Lake Castillon. It is an easy two-hour drive along the scenic D202 and a memorable introduction to this beautiful inland region.
ENTREVEAUX
The fortified village of Entreveaux offers a unique window into life in the 11th century. In fact, there are very few medieval villages around here like it. To enter the village, you have to walk through an ancient gatehouse onto a long narrow drawbridge arched above a stony river, and through a vaulted gate resting between two towers. High above the village sits a dominating 17th century citadel with a walled stone path snaking its way to the bottom. And winding its way around the village is a picturesque little river. It’s perfect for the camera-clutching tourist. The village is made up of narrow winding streets and passageways, with very small doorways and windows dotted throughout. The whole area is time-honoured and traffic free. There is also an interesting history to Entreveaux. In 1536, the village was betrayed by its lord, Jacques Glandeves, and fell to the troops of Charles V, Holy Roman Emperor. Half the population was massacred, and the remaining half staged an uprising, killing the governor and offering the town to the French Dauphin, King François. In recognition, Entreveaux was declared a royal town of France and its inhabitants exempt from taxation! Unfortunately, its residents are now as accountable to the taxman as the rest of us.
Attractions:
A citadel was built in 1690 to further fortify the town because of its strategic position guarding the valley of the Var and its location on the border with Savoy. The walk to the citadel takes about 20 minutes and affords magnificent views of the region. It costs 3 euros to visit both the citadel and the Powder Museum. Other attractions include the cathedral, which houses beautiful religious works of art including a large 1647 painting of the Assumption of the Virgin by Mimaust and an organ dating to 1717; and a motorcycle museum with a collection of early, mostly European models. In the outer village, you can visit the ancient water-powered flour and oil mills, the latter of which is still in operation.

There are two restaurants inside the village, and three just outside. The local culinary specialty is Secca de bouef - cured beef sliced thinly and served in a variety of ways. Given the size of this small village, a few hours is plenty of time for a tour, something to eat and photos. Then it’s time to hit the D202 again (which turns into the N202) and discover the spectacular Lake Castillon!
LAKE CASTILLON
The lake of Castillon is a magnificent stretch of emerald green water and sweeping limestone cliffs. It forms part of the internationally renowned Verdon Regional National Park and is the perfect place for a lazy sun-filled sail. The lake sits 880km above sea level, is 8 km in length and has a surface of 500 hectares. It is therefore much smaller than its popular neighbour - the Gorges du Verdon – but no less mesmerizing. Each year, the banks of the lake attract thousands of visitors, but this is one tourist hotspot that doesn’t feel overcrowded. A small part of the lake is reserved for the French Navy and forbidden to the public. Still, there is plenty for the rest of us to discover and enjoy. The best way to see the lake is to sail it, and the small village of St. Julien du Verdon has one of two boat ramps along the river. It costs 30€ to hire a motorboat for an hour – which is plenty of time to circle the lake. But if you’d like to do a spot of fishing, some exploring or swimming, then it is best to hire a boat for a few hours. There are also paddleboats, catamarans and sailboats available. As the sun sets over this magnificent part of the world, you can choose to go back the way you came, or head in the direction of Cannes, stopping in the world famous city of Grasse for some dinner, as we did. Sitting in the local square, this is indeed a perfect way to finish your day out!
Getting there:
Head west from Nice along the Promenade des Anglais and turn right onto the Route de Grenoble. Keep following signs for the D202 and this road will eventually bring you to Entreveaux. For the lake, continue on the D202 for about 5km, then follow the signs to St. Julien du Verdon.

But not everyone knows how to sail, and guided motorised boat tours can be expensive and boring. What’s your next option? Kayaking! I have experienced the beauty of Nice’s coastline from various viewpoints before, but none quite like that from a kayak. There is something deeply satisfying about paddling out into the deep open waters and feeling completely safe in a sturdy kayak. There’s also a fair bit of satisfaction in realising you’ve just paddled all the way to Villefranche and back again! The advantage of sea kayaking is you don’t have too travel far – the meeting point is near La Reserve just past Nice Port. If it’s a clear day with no swell, you can expect a leisurely paddle along the coastline. It’s a great viewpoint from which to see million-dollar mansions and hidden little beaches. If the weather changes, as it did with me, you can expect more of an energised paddle and plenty of fun with the waves!
There was a saboteur in our midst
Watch out for the rapids!
During the calmest parts of the Var river, I found myself lost in my surroundings – the giant forest enveloping the ravine, the isolation, and the old steam train chugging along the river track. Then, it was a quick snap back to reality as I saw the fast approaching rushing rapids, remembering that I actually have a job to do – get through without capsizing! At one point it was too Check List late. With my back turned to the current and happily snapping Equipment: wetsuit, life jacket, helmet, away with a waterproof camera, I’d missed the all-important call shoes, paddle and inflatable kayak – “stick to the left”. It takes about 40 minutes to reach Villefranche, depending on the weather. There, you can get up close and personal with the gigantic cruise liners that dock off shore, take a rest and a swim on one of the isolated little beaches, and even have lunch in Villefranche (if pre-arranged). The whole trip takes about two hours.
RIVER KAYAKING
Guided by the very fun and experienced Eskimos à l’eau team, we entered the river at the village Puget Théniers in our open kayaks. Our instructions: always look and anticipate what’s happening 20 metres ahead, always try and steer the kayak straight forward, and when you become caught on a rock, get out of the boat, dislodge yourself and jump back in … quickly! With that we set out on our 10 km journey down the Var, manoeuvring our way around exposed boulders and pebble beds, paddling against the current and through the adrenaline-inducing rapids. At this time of year, the river is only deep in certain pockets – perfect for the amateur kayaker, like myself. There are five different rivers, however, which Aymeri and his team can guide kayakers of all levels.
Touêt-sur-Var. The hardest part of this whole activity is probably carrying your craft to and from the shore. The rest of your body seems surprisingly ok with the upper body workout. In the spring, this river swells to over 2 metres high, and Aymeri assures me that is one kayaking adventure not be missed. But meanwhile, if you’re looking for some fun outside of the city this month, then I suggest you join these guys for some heart pumping action on the water.

Super yachts are back on the shopping list! This September, billions of euros worth of super yachts will cruise into the ports of Monaco and Cannes for the annual boat shows. After a disastrous 2008/2009, brokers will this year be armed with more buyers and more cash, but also an appetite for a bargain. After suffering through the crippling financial downfall of recent times, the yachting industry now appears to be on the up and up. Yachts are, once again, the must-have toys of high society - if the latest figures are anything to go by. The success of this year’s boat shows will be a good indicator as to where the industry is heading in 2011. But according to the brokers, business will never be the same again.
“The yachting industry, as we know it, is changing.”
When the global financial crisis hit, the luxury yachting industry took a major blow. “From the end of 2008 through to 2009, the bottom effectively dropped out of the market,” says sales broker Neil Gow, “and many potential buyers pulled out of building new yachts.” An unprecedented amount of boat owners put their boats up for sale, flooding the sales market. The result: boat prices dropped considerably. It is a trend that has continued into 2010, changing the nature of the entire broker industry, and perhaps for the better. “There are now good deals to be had,” says Mr Gow, “and yachts are representing a more realistic value of their worth.” So what do the figures say? Well, according to Boat International, 108 super yachts (yachts over 24 metres) were sold between January and June this year, compared with 74 in the same period last year. That’s an increase of 46%. The total value of sales increased by a whopping 70%, from €704 million to €1.2 billion. And it’s the sale of big yachts – 50 to 70 metres - that has seen the most dramatic rise: 13 in the first half of this year compared with 2 in the first half of last year. It appears the endless supply of cash is back, and perhaps the big business-people aren’t feeling so bad this year about lashing out on luxury goods. So, considering around 90% of boats purchased end up for charter, how is that end of the market fairing up? According to charter broker Francesca Edgeworth, 2009 changed the way they now do business. “Last year people knew they could get huge discounts on charters, and that attitude has bled into 2010.” Negotiation is now the norm, and owners have no choice but to accept a lower offer. There is also a lot more uncertainty in the charter industry. “Last minute deals are now standard. The yachting industry has to adjust and prepare for that. It’s going to be tough, but it will happen.”

So, the billions are back in circulation and more yachts are hitting the seas. But what are the other issues facing the industry? Firstly, there is the problem of where to put them all! “There are almost 4,500 superyachts in the international fleet and this number is rapidly growing,” says Mr Gow, “Yachts are getting larger and berthing space is getting tighter, particularly here on the Côte d’Azur. Plans need to be put in place to create more space in an environmentally friendly manner so that supply can at least try to catch up with demand.” A recent proposal for a new port near Nice airport was refused on technical and financial grounds. Secondly, members of the industry have to understand that the nature of their business is changing. Those trying to hold on to the glory days risk losing out to the ones who are interpreting, understanding and adapting to the industry’s evolving needs. Luxury yachts may very well be the ‘must-have’ toy of the super-elite, but these days perhaps even they are realising there is a limit to excess.

Chez Juliette
11e Art is a trendy restaurant with a sophisticated menu morphing different textures and flavours. It fits in well with the contemporary dining scene, leaving a swarm of happy customers in its wake. Situated metres from the Promenade des Anglais and within proximity of the famous Hotel Negresco, 11e Art offers a modern, upbeat vibe without being pretentious. The cuisine is geared towards smallish, accumulative courses with an emphasis on quality ingredients and creative presentation. There is an à la carte menu, but the tastings menus are perfect for sampling a handful of the chef’s creations in one sitting. On this day, the 24€ menu included baby scallops on a bed of seasoned quinoa, duck breast with creamy polenta purée, and a surprisingly superb carrot purée with red pepper sauce. The yoghurt and fresh fruit dessert was clearly made in-house and a delightful end to the procession of dishes. The décor – modern Japanese meets chic lounge bar – is combined with atmospheric background music and happy, well presented waiters. The service was quite impressive: each dish was explained to us, our glasses were never left empty and at no time did we have to refill them ourselves. After hearing only good things about this long-standing restaurant in Nice, it was time to set aside my apprehension of eating at summer tourist hotspots and see if Chez Juliette lived up to its reputation. Thankfully, by the end of the evening I could happily mark off quality food, attentive service and ambiance from my checklist. So, if you are looking for good French cuisine in the heart of the city, its safe to say Chez Juliette ticks all the boxes. The open terrace sits amidst the popular Place Rosetti and is perfect for summer dining. The fake plants, at first a surprise, actually work well to isolate diners from the pedestrians in a qwirky, shabby-chic kind of way. Meanwhile, the baroque interior, swathed in pink tones and Matisse inspired drawings, is intimate and welcoming at any time of year. Menus are presented on chalk boards, suggesting a host of typical French dishes such as entrecôte of beef, duck breast, seafood, pastas and specialty entrées. Prices are close to the 20€ mark for mains therefore expectations are inevitably heightened. But the dishes are quite large and the use of quality ingredients is prevalent. The filet of beef was lean and tender, cooked to perfection and delivered with a tasty pepper sauce, while my duck breast was presented with a delightful honey and peach combination. The accompaniments of sautéed baby potatoes and a courgette medley finished the dishes off nicely. The wine list compliments the cuisine, and I can happily recommend the Côte de Provence rosé at 24€ a bottle. There are a large number of 50cl bottles as well. After ten years, Chez Juliette remains true to its origins and continues to impress residents and tourists alike. Le Pain à Table
Diversity is not necessarily synonymous with dining out in Nice. And, while I enjoy traditional French cuisine as much as the next person, my Australian roots simply compel me to search for variety aswell. I was delighted then to have finally tried Le Pain à Table – a favourite among friends, but one restaurant I had always managed to miss. But as I discovered, Le Pain à Table is more than just a restaurant - it’s also a bakery, a patisserie, a teahouse and a café! Formerly known as Le Pain de Quotidien (a major chain of healthy restaurants throughout the world), the Belgium owners of ten years have now changed the name but not the premise. The restaurant itself resembles a big country kitchen, with long pine wood tables, wall cabinets piled high with specialty preserves, oils and sauces, and their very own bakery brimming with artisan breads and pastries. There is also a quaint little terrace, and outdoor tables which offer views of the Cours Saleya and the flower market. Their bread – a major theme throughout the menu – is wholesome, fresh and tasty. The way bread should be. For breakfast, it is served with specialty jams, eggs, yoghurt or salmon. For lunch or dinner it is delivered in a tartine – the French version of an open sandwich. Thankfully, there is not a reference to ‘club’ or ‘mayonnaise’ in sight. Rather, toppings include truffle cheese, olive tapenade, walnuts, honey, beef carpaccio, smoked salmon and creamy buffalo mozzarella. Not bad for 7€. Salads are also their forte, and my favourites include the Tuscany Plate with olive tapenade, soft white cheese, parma ham and sundried tomatoes; Salad Grimaude with good quality smoked salmon, salad greens and a ball of buffalo mozzarella; and the Italian salad featuring freshly grilled vegetables, three different cheeses, sundried and fresh tomatoes, and parma ham. Their salads are quite large and again great value at around 12€. If you’d like to try Le Pain à Table for dinner, then I imagine the warm plates of lamb, salmon and quiche would go down nicely, as well as their dish of the day.

Wines are very reasonably priced, with the most expensive being a bottle of Chablis for 26€. A glass of house wine is just 3.50€. There’s also a tea ‘palace’ with specialty blends and of the course the mouth-watering selection of pastries. The key to this restaurant’s success is their use of quality ingredients and emphasis on healthy food. The dishes are simple, but not standard, and the ambiance warm and heartening. I also know where I’ll be buying my bread from now on! Le Pain à Table is open every day from 8am to midnight. 11

Time for a good cleanout
When I was researching this article and relaying the information to my friends, the mere mention of a colon cleanse drew cries of “ewww”, “I’m not doing that” and “diarrhoea!” I figure this is the general perception of the population because colon cancer is one of the biggest killers in the world today, up there with breast and lung cancer. Another popular reaction to the idea of a colon cleanse is “well our ancestors never had to worry about it”. Indeed, because our ancestors were not eating such large amounts of processed, refined, low fibre foods packed with addititives and chemicals. Sometimes, the real cause of sickness and disease is the retention and re-absorption of built up toxic waste in the bowels. When the colon becomes sluggish or constipated, toxic poisons build up as the result of multiplying bacteria when foodstuffs travel too slowly through the intestines. These toxins then enter the bloodstream via the colon. Nervousness, aches and pains that move from place to place, ulcers, itching, acne, bad breath, furred tongue, fatigue and menstrual irregularities can all be the result of parasites in the intestines! Similarly, Candida Albicans are yeast infections that can cause chronic fatigue, depression, bloating, gas, cramps, rectal itching, allergies, severe PMS, impotence, memory loss, severe mood swings, and light-headedness or drunkenness after minimal wine, beer or sugar. A colon cleanse isn’t sounding like such a bad idea now is it? The easiest way to get the bowels moving is by having a high fibre diet consisting of fresh fruits and vegetables; whole wheat pasta; bran cereal, whole wheat bread, brown rice; nuts – almonds, cashews, flax seeds, pistachios, walnuts, peanuts; and beans – kidney beans, red lentils, lima beans. You can add extra fibre to your diet by drinking a glass of water or juice with added psyllium husk powder. Herbal remedies work well as stimulants or laxatives to clear the bowels. These range from mild products such as Slippery Elm, to the stimulant Cascara Sagrada, to the stronger Aloes and Senna. Everyone can react differently to these products, so use with caution at first. You can pick up some good blends at health food stores. It is important to drink lots of water to stave off dehydration. You may also feel bad for one or two days as your body detoxes. If you have any serious adverse reactions, discontinue the herbal cleanse. But you can’t go wrong with the high-fibre diet!

Water: the new entrée? A new study suggests that drinking two cups of water before each meal enhances weight loss. Well, we all know the benefits of drinking water, but researchers from the study say this is the first clinically controlled trial comparing people who did and didn’t drink water before meals. All of the 48 people in the trial followed a calorie-controlled diet, while only half drank two 8-ounce cups of water just before they started to eat each meal. Those people lost an average of 7kg, while non-water drinkers lost 5kg. Senior author of the study, Dr Brenda Davy, said the reason drinking water before meals works, is because it has zero calories but gives the sensation of feeling partly full before you even start eating, resulting in fewer calories consumed during the meal. Well, that makes sense!
Repair your brain cells with berries! Berries are in abundance this time of year, and if you ever needed an excuse to indulge then this is it – berries, particularly blackberries, can help you improve your ability to soak up new information! The older you get, the more your brain cells become inflamed making it harder for them to communicate with one another. A 2009 study by Tufts University found that blackberries provide potent antioxidants known as polyphenols that attack inflammation and encourage communication between neurons, improving your ability to take on new information. So, if you’re having trouble learning French, eat some blackberries!
Did you know? According to ‘Men’s Health’ magazine, smoking can shorten a man’s penis by as much as a centimetre! Erections rely on good blood flow and smoking calcifies blood vessels, thereby stifling erectile circulation. Hmm, just one more reason to give up gentlemen! Coconut Spiced Prawns Serves 4 1 stalk lemongrass, very finely chopped 1 tbsp grated ginger 2 large mild red chillis, finely chopped 2 cloves garlic, crushed 1 tbsp vegetable oil 4 tbsp desiccated/shredded coconut 1 kg raw green prawns, peeled, tails left on Salt & pepper Mixed green leaves & lime wedges for garnish
On medium heat fry the lemongrass, ginger, chilies and garlic in the oil, stirring for 2 minutes. Add the coconut and cook for a further 2 minutes until toasted. Remove from the pan and set aside to cool. Wipe out the pan with dry paper towel, reheat and add a little more oil. Add the prawns, season with salt and pepper and cook for 3 - 4 minutes until their colour has changed to pink. Return the coconut spice to the pan and toss with the prawns until well coated. Serve with mixed green leaves and lime wedges.
Domaine Terre de mistral Rosé 2009 Cuvée Rosalie – 15€ This is an elegant wine, full of finesse with notes of white flowers and peach. It has a delicate, fruity texture and a slight acidity.
Crispy Skin Duck with Pak Choy and Spicy Raspberry Sauce Score the skin of the duck breasts with a sharp knife. Pour the soy sauce onto a plate and place the duck breasts on top skin side down. Set aside for 1 hour.
Serves 4 4 duck breasts 4 tbsp soy sauce 1 punnet raspberries 3 cloves garlic, crushed 6 shallots, diced 1 cup chicken stock 2 red mild chilies 1 tbsp olive oil 2 bunches pak choy Salt & pepper Flat leaf parsley, chopped
On a medium heat, fry the shallots until tender, then add the garlic and chilies. Add the stock, raspberries and season with salt and pepper. Reduce heat and simmer for 10 minutes. Meanwhile, steam the pak choy, drain and keep warm. In a very hot pan fry the duck breast, skin side down first, for 5 minutes. Then turn over and cook for a further 4 minutes (this is for medium rare which I suggest for duck breasts). While the duck is cooking, puree the raspberry sauce with a hand blender.
Domaine de l’île, Porquerolles Rosé 2009 – 19€
Salmon in colour, this sleek wine has the aromas of dried apricots and Muscat. There are the exotic understones of flowers and honey, and a lasting flavour of candied fruit.
To serve, slice the duck and place on top of the warmed pak choy, then drizzle the spicy raspberry sauce. Garnish with chopped flat leaf parsley.
Panna Cotta with Berries
Serves 4 3 gelatine leaves 250ml milk 250ml thick cream 1 vanilla pod, split lengthways and seeds removed 25g sugar Mixed berries Mint leaves for garnish
Soak the gelatine leaves in a little cold water until soft. Place the milk, cream, vanilla pod and sugar into a pan and bring to a simmer. Remove the vanilla pod. Squeeze water out of gelatine sleaves and add to the pan, remove from heat and stir until gelatine has dissolved. Divide the mixture between 4 ramekins or wine glasses and let cool. Refrigerate for up to 3 hours. Garnish with the berries, a mint leaf and serve.

Remy Triton is the sexy resident DJ for High club’s best gay parties –Rainbow Power and Mega Top. The Cannes-born artist began mixing funky hip hop tunes in his bedroom at the age of 14, then moved on to house music three years later. Now, he mixes electro-house and house-vocal at clubs across the Riviera. So, of course we had to ask the question … isn’t being the official DJ at the biggest gay parties in Nice the best job ever? “The energy at these parties is electric because gay people know how to have fun” says Remy, “and DJing is a great way to meet people. I love music and socialising, so yes I love my job!” And how big is the gay party scene in Nice? “Gay people are demanding; they always want something new and fun. Nigella’s expansive commentaries have transformed writing about cooking into a rich, gooey, chocolate mousse experience: her relaxed approach to cooking, her tips on preparation and saving time, and her emphasis on food as a source of enjoyment and comfort. Her delight in the sensual pleasure of eating made one commentator compare cooking with Nigella like a prelude to an orgy. Others credit her with bringing sex into food. Whatever your opinion, this lavish book is richly illustrated and certainly an emotional experience.
Begat: The King James Bible and the English Language by David Crystal David Crystal is a well-known expert on the English language and here he turns his attention to the influence of the King James Bible and the development of English idioms. Even if you haven’t read the Bible, we all know expressions such as ‘a bird in the hand is worth two in the bush’, ‘at his wits end’, ‘sour grapes or eat’, and ‘drink and be merry’. And yes, they all come from the King James Bible that, along with Shakespeare, has made a major contribution to the language, particularly in colourful imagery. Few people in those days were able to read or even possessed a book, so the spoken word had to say it all, strike the imagination and paint pictures that were clear to listeners. David Crystal’s cornucopia of wit and learning is totally engrossing.

Twenty-six years ago this month, the first ever Music Video Awards took place at New York’s Radio City. To celebrate the milestone, we take a look at the history of one of popular culture’s most revolutionary and influential phenomenon’s … MTV. On August 1st 1981, popular culture as we knew it changed forever. MTV was launched by one of it’s creators, John Lack, with the phrase “ladies and gentlemen, rock and roll” followed by the original MTV theme song playing over a montage of the Apollo 11 moon landing – associating MTV with one of the most famous moments in TV history. The first video clip to be aired was the not-so-subtle Video Killed the Radio Star by the Buggles. The impact was immediate and people were rushing to buy records for artists they’d seen on MTV but not heard on radio. MTV has since been influencing fashion, creativity and lifestyle through the medium of music.

Now, with the meteoric rise of the internet and more than 40 competing channels, MTV no longer has the glory it once had. But to our generation, it will always be the channel that bought us the 17-minute epic video clip, Thriller.
