or the 2nd year in a row the Home Idea Show and Northwest Taste have joined forces to bring you an extraordinary show combining culinary and home service exhibitors. These events will be sharing the Spokane County Fair & Expo Center space November 1-3 and you will want to be a part of it. On one side of the Expo Center will be the Home Idea Show. 41 years strong the Home Idea Show continues to spark inspiration in home owners. From increasing curb appeal to a full blown kitchen remodel, homeowners of all walks can leave ready for a long winter of improvements. Attendees can meet with contractors, flooring suppliers and landscapers all in one convenient location. On the other side of the Expo Center resides Northwest Taste. Northwest Taste will bring out the Julia Child in all of us. Make sure to catch the chef demos and incorporate some new flair into

Independent Chef, Demos at The Kitchen Engine I’ve been creating and cooking recipes for 30 years, and have been teaching for almost a decade. I am the oldest of 5 children. My siblings and I all inherited the cooking gene and a common palate, but our cooking styles couldn’t be more diverse. I specialize in plant-based and vegetarian cuisine, drawing on flavor profiles from around the globe. I create plant driven recipes that use natural ingredients, minimize processed foods, and add more vegetables, fruits, nuts, and legumes to the daily diet. I believe eating healthy doesn’t have to be bland or boring, and it shouldn’t take too much of your time or your budget. Please join me at one of my demos, my mission is to share my passion with
anyone seeking a healthier lifestyle or just loves cooking as much as I do!

Independent Chef, Demos at The Kitchen Engine Kristi has been an integral part of The Kitchen Engine cooking family for over 5 years. She is an avid, enthusiastic cook with a passion for whole, seasonal, local and organic foods. She is an advocate for local farms and a long-time activist in the Slow Food Movement which strives to promote local food and traditional cooking as an alternative to fast food. Her initial culinary education was strongly influenced by her grandmother’s home-cooking. Simple healthy fare of German ancestry, combined
with Depression Era survival and years of feeding hungry farmhands. Kristi’s culinary journey continues through travel and exploration of other cultures and their food traditions. Kristi shares her knowledge and culinary expertise through volunteer work, teaching cooking classes, and as a personal chef.

Holiday Hosting in Small Spaces
G
atherings of family and friends are a big part of the holiday season. Hosting such gatherings can be a great way to show loved ones how much you appreciate them, and hosting also saves hosts the trouble of traveling during one of the most hectic travel seasons of the year. When hosting a large crowd at home, space can be a difficult hurdle to clear. However, a few helpful strategies can help space-starved hosts pull off a holiday soiree where everyone is comfortable.
Pare Down the Menu Holiday feasts don’t have to resemble medieval banquets with excessive amounts of food & drink. Hosts with small kitchens or tiny dining rooms can pare down the menu, limiting offerings to just a single entree and a few simple side dishes, so everyone feels comfortable at the table and has room to eat. A small menu also gives hosts more time to spend with their loved ones during the festivities.
Don’t Overdo it on Drinks, Either When planning the drinks menu, avoid offering cocktails, which take time to prepare and often require guests to visit the kitchen for refrigerated ingredients. Limit drinks to wine, beer, water, and soft drinks, storing cold beverages in a cooler kept outside on a front or back porch or in an area outside the kitchen so cooks can work without interruption. Move Some Furniture If your main living space is small, consider moving some bulky furniture into a bedroom or office where guests won’t be spending time. Then make better use of the open living space by placing folding chairs or other accommodations to ensure there’s ample seating for everyone. A single recliner can only be enjoyed by one person, but removing it from a room may create enough space for as many as three folding chairs.
Go Small on Decorations
If you know you’ll be hosting in advance of the holiday season, decorate with guests in mind. That might mean skipping a six-foot Christmas tree in favor of one that takes up less space. Avoid leaving any fragile decorations out, as adults or overexcited kids may knock them over as they try to navigate a cramped space. Holidays in small spaces can be fun. Baked Eggnog French Toast with Cranberries and Apples

Continued from Page 26 1. For the Glazed Cranberries and Apples: Whisk together the apple cider, corn syrup and brown sugar in a large, heavy saucepan over high heat. Boil until reduced to 1 cup, about 15 minutes. Whisk in 4 tablespoons of the butter until melted. Remove from the heat and set aside. 2. Melt the remaining 4 tablespoons of butter in a large, heavy frying pan over medium heat until hot. Add the apples and saute, stirring, for 2 minutes. Add the cranberries and granulated sugar, and stir until cranberries begin to pop, about 2 minutes. Stir in the reduce cider mixture and cook until the mixture has reduced to a syrup-like consistency, about 6 minutes. Taste and stir in more sugar, if desired. (The cranberries and apples can be prepared 1 day ahead; cool, cover and refrigerate. Reheat, stirring, over medium heat.) 3. For the Eggnog French Toast: Arrange the bread slices in a 9-by-13-inch shallow baking dish. Whisk together the eggnog, nutmeg and cinnamon in a medium bowl. Pour the mixture over the bread.
Cover the pan with plastic wrap and refrigerate for 6 hours, or overnight. 4. Arrange a rack at center position and preheat the oven to 450 F. Butter a large, rimmed baking sheet with some of the melted butter. Using a metal spatula, transfer the bread slices to the baking sheet. Brush the bread with the remaining melted butter. 5. Bake for 10 minutes, and then turn and bake until golden brown on the outside and still soft inside, 5 to 6 minutes more. Watch carefully so they do not burn. 6. Arrange 2 slices on each of six dinner plates and mound the warm fruits on top. Dust generously with confectioners’ sugar and serve. Note 1: If using frozen cranberries, defrost and pat dry. Note 2: You also can use a good, crusty sourdough bread; cut 3/4-inch slices from it, and if they are large, cut them in half. Cooking tip: If eggnog is not available, whisk together 4 egg yolks, 1/2 cup sugar and 2 cups light cream to blend.
