Boca Based Company Buys Back Plastic Straws By Stella Alves One Boca Raton company is putting their money where their mouth is while implementing a unique approach to help keep plastic straws out of our oceans and beaches. FarFromBoring Hospitality has come up with an initiative to rid the environment of plastic straws by offering to buy them back from restaurants and establishments. Many counties across South Florida have started to ban the use of plastic straws, including cities like Fort Lauderdale, Delray Beach, Coral Gables, Miami Beach, Hallandale Beach and even Boca Raton, but some establishments need further incentive according to FarFromBoring. Most cities still allow restaurants and bars to carry plasticstraws, and although they require them to be given out only when asked by customers, this still allows for the circulation of plastic straws into ecosystems. FarFromBoring has decided to take it upon themselves to swap out current stocks of up to 20,000 plastic straws for eco-friendly paper straws they have designed called Rhino paper straws. They have also partnered with Trees For The Future, a Maryland-based nonprofit organization that has planted trees in deforested regions around the world for the past nine years. For every case of paper straws sold, they plant a tree in a community in need. The O.G.
The O.G. Delray is today’s new breed of the neighborhood bar. Think nostalgic charm mashed up with an urban cocktail scene and a hearty dose of counterculture. You’ll find this quaint bar located in the city’s fringy SoFa district just south of the Atlantic Avenue hustle. From the original Ms. Pac Man Arcade to the cup of complimentary popcorn, to the bar’s small lounge space or the quiet outdoor garden patio, there’s a little bit of something for everyone at The O.G. There’s even a market offering locallymade artisanal goods, and artists and musicians are frequently spotlighted on weekends for your jam-out pleasure. The vision is thanks to Miami nightlife guru Challo Schott, the bar’s concept creator whose primary goal is to make O.G. an authentic destination, sourcing design and decor to create his version of a blue collar cocktail bar. Like Schott, the bartenders extend the same unique vibe. They’ll whip you up something special, be it the Hillbilly Martini, a grapefruit twist on the Margarita, or the O.G. Michelada, a beer-spiked with Mexican spices. Or, enjoy some uniquely dressed drinks like the O.G. Frozen Sangria served in an ICEE cup and O.G. The Wilder
The Wilder is more than just another spiffed up cocktail bar. Instead, think of it as a social club for a truly sophisticated imbibing experience. The concept opened in early 2018 and is the brainchild of hospitality veteran David Cardaci and his wife Vanessa, who styled their latest concept from memories of their favorite establishments visited while traveling the globe. While David’s nearby Rhythm & Vine offered area residents the first secret garden-inspired concept complete with a faux grass lawn where you can sip cocktails from an Airstream bar when it first
opened in 2015, today The Wilder follows suit as Fort Lauderdale’s answer to the lack of destination drinking for a higher class clientele in Broward County. Three striking spaces offer unique experiences, each with a distinct personality: a hotel lobby-like front bar offers up masterfully-executed libations; a Europeanstyle outdoor courtyard for sun-soaked revelry; and a dimly-lit great room with a second bar that hosts near-nightly events from a burlesque show, live music acts, and a popular weekly jazz night performance. A half-decade ago, as new-wave cocktail culture swept the nation, South Florida was sorely lacking their fair share. While people in cities like Chicago, New York, and San Francisco were already discovering the joy of a well-made Aviation, perfect Manhattan, or a solid Negroni, South Floridians were still making do with remade, neon margarita mix served in plastic cups. And then came Palm Beach County’s first true cocktail bar to the rescue, opening its doors in a clandestine spot off Federal Highway in Boynton Beach. Like a speakeasy of the 1920s, the aptly named Sweetwater — developed by founders Clint Reed and Sean Iglehart — offers guests a bible-like menu of libations and a staff talented at executing even the most complex request. Armed with an arsenal of bitters, house-made infusions, specialty liqueurs, fresh herbs, fruits, and dozens of specialty, high-end spirits, the barmen here will gladly make you something by request, too. Death or Glory
At Death or Glory in Delray Beach, it’s all about the glory. In April 2017, Death or Glory made its way onto the Palm Beach County imbibing scene when Miami-based Repour’s Isaac Grillo and Fort Lauderdale-based Kreepy Tiki Bar & Lounge’s Ayme Harrison joined forces. Grillo, named the Ultimate Miami Bartender by Magic City Casino during his time at Haven South Beach, was best known for creating the city’s most popular in-the-biz bars, while Harrison’s now-shuttered Kreepy Tiki was named a top destination by Conde Nast. Today, the duo’s Palm Beach County concept fills both voids further north, where two bars offer guests a late-night destination where exotic drinks are coupled with an intimate dining experience. Inside, mixologists offer up a rotating list of seasonally-inspired cocktails. Outside, a short bar located at the back of the restaurant offers tiki-style libations so you can escape your current paradise and find an entirely new one. 116 N.E. Rebel House
At the Rebel House in Boca Raton, you’re encouraged to “imbibe, ingest, and indulge.” We strongly encourage you to focus on the “imbibe” part. Owners Mike Saperstein and Evan David, the duo behind Charm City Burgers and El Jefe Luchador, debuted this casual, chef-driven restaurant several years ago and have become a smash hit for their distinctive American-style tapas paired with some equally fresh and flavorful cocktails. At the bar, whiskey and bourbon are the main focus with creative concoctions that highlight vibrant flavors full of fresh herbs, vegetables, and fruit infusions. A longtime favorite: the Sweet Revenge, the bar’s own take on a from-scratch margarita made extra fresh with loads of muddled watermelon and spiked with jalapeño. Perhaps the best time to go would be during the restaurant’s “Wake and Bake” Sunday brunch, where you can get bottomless watermelon-basil or cucumber-mint mimosas alongside a fresh Roma tomato-based Bloody Mary or maple-syrup-infused bourbon cocktail.

In May 2016, Lake Worth welcomed its first craft cocktail bar with C.W.S. Craft Bar + Kitchen, a concept from the duo best known for their Broward-based concepts including Revolution Live, America’s Backyard, and Stache 1920’s Whiskey Den + Coffee Bar. In a similar vein to Stache, which is considered one of Fort Lauderdale’s first craft cocktail bars when it opened in 2013, C.W.S.’s inside bar showcases a wide array of spirits with an emphasis on more than 300 bourbons, whiskeys and ryes. On the outdoor patio, which seats 80 people, guests can enjoy the ambiance of a classic beer garden, complete with a tented bar featuring 28 local and imported craft beers; tables designed for a communal dining and imbibing; and a gaming area. For drinks, a section dubbed “Nothing but the Classics” gives patrons the opportunity to sample classic cocktails like the French 75, Negroni, Manhattan, Sazerac, or Sidecar using the bar’s spirit library sourced from three distributors. Drinks can even be “upgraded” to draw from C.W.S.’s extensive spirit portfolio offering vodkas, tequila, Scotch, and gin. The Parched Pig is more than just a waiting room for chef/owner Tim Lipman’s Coolinary Café. It’s also a great spot to sip some bubbles, beer, and -- above all -- cocktails. Fort Lauderdale’s newest speakeasy-themed cocktail bar requires one thing most don’t: your own personal door code. Sure, you may have to slip through the back of a bathroom to get into Bodega’s back bar in Miami Beach, and the door marked “employees only” at Coyo Taco in Wynwood doubles as an entrance to its own hidden bar for those in the know. But nothing is quite as clandestine as Unit B, located on the second-floor space above Flagler Village’s Brass Tap. Look hard enough and you’ll discover the entrance to Unit B on the first floor, which is a simple woodpaneled door that, at first glance, appears to be nothing more than a spirit storage closet. A keypad beyond the initial entry will give you pause because you’ll need a door code to gain access, which happens to be a number that will change nightly or for special guests. To get one, a quick visit to the Unit B website will point you in the right direction. Open Wednesday through Saturday, Unit B features eight Prohibition-inspired cocktails, with a twist. Served with whimsical detail, they’re meant to spirit you to a different time and place with all the sights, sounds, and aromas evocative of the 1920s. Try the spicy-sweet 21st Amendment, a blend of Scotch, fresh lemon juice, and orange blossom honey and ginger syrups. Upon serving, the bartenders send it off with a spritzing of Laphroaig 10 from a small perfume bottle for a sophisticated touch.

Kapow! isn’t just a noodle bar, it’s also one of the county’s best craft cocktail bars. Thirsty guests can indulge in a colorful drink selection drafted seasonally by mixologist Angela Dugan and bar manager Brett Robertson, who each take great pride in sourcing not only fresh herbs from the bar’s own Boca Raton-based organic garden, but also using specialty spices and liquors to concoct some pretty intense pairings. Out of more than a dozen cocktails, you can even find several “low impact” drinks — those with fewer calories and less alcohol — to help keep indulging in check. This season, look for new combinations as well as the signature favorite known as the Spicy Lover, which combines fresh muddled cucumber and cilantro with agave, a dash of hot sauce, and a shot of good tequila. Accessible via the side entryway from Himmarshee Village’s Pizza Craft, Apothecary 330 is a crafty answer to the area’s imbibing scene. Here, a short copper bar with seating for up to 15 is mirrored by a cozy lounge area with bottle service on weekends. The cavernous interior includes a T-shaped custombuilt red leather couch and walls adorned with turn-of-thecentury knickknacks like old sewing machines and decades-old apothecary jars the owners sourced from nearby vintage dealers. Behind the bar, guests can find an assortment of rare and specialty liquors (about 250 bottles) with a focus on bourbon and whiskey, including a number of imported picks you might not find locally. Apothecary’s interpretation of classic cocktails will provide the foundation of the menu, with modern takes on old-world favorites like the Sazerac, Hemingway daiquiri, NY sour, a gin fizz, a margarita, and — of course — the old-fashioned. New to the scene but not new to the game, the good people at Driftwood are shaking up the cocktail world in all the right ways. Run by husband and wife team, Jimmy Everett and Ilia Gonzalez, their goal is to provide craft cocktails using unexpected combinations that bring kindness to your palate and an intoxicating smile to your face. The bar space is super cozy and a little unassuming, but out of it comes drinks with really bold flavors in a visually stimulating manner. You can tell that each drink was made with a purpose, from the shape of the glass to the size of the ice to the manicured garnish, and created to be the very best drink it can be. The Trail Mix Mai Tai is made with Flor de Cana 4 Year Rum, Plantation Barbados 5 Year Rum, macadamia, almond, banana and lime, and will definitely throw you for a delicious flavor loop. You’ll find another unique combination of flavors with the Verde Colada, which is made with St. George Green Chile Vodka, coconut, orange, pineapple and nutmeg. T
his self-described hospitality “lifer” loves what he does. Whether that means designing the unique drink menu at Sweetwater, helping to make a memorable experience for a diner, or creating a hand-crafted cocktail to encourage diners to try something new, he’s all in. Sean’s family has been in the Delray area since the 1930s, originally for polo and then real estate development, so he is about as local as it gets. He has a great grasp on the pulse of the city and is always working to stay ahead of the trend curve, which basically means not following the trend. For him and his team, it’s all about offering funky drinks for adventurers, esoteric varietals

for wine drinkers, a wild selection of beers for beer drinkers, and classics done with a twist (pun intended). “We didn’t want to be boring with our names, like Dill Collins,” said Sean, 34. “Instead, we wanted our guests to order with their eyes even if they don’t understand all the ingredients. There is a little method to the madness!” The madness is delicious, no doubt. If you’re up for something worlds more advanced than a whiskey neat (which they will gladly serve you), try the Cherry Poppins with single-malt scotch, maraschino, Amaro, fennel bitters and thyme, or the Breakfast

@ Tiffany’s, with barrel-aged Old Tom gin, aquavit, cucumber, WWhouse grenadine, lime and celery bitters. If you still have your wits about you, the Mexican Cockfight (Reposado tequila, mezcal, house grenadine, lime, Tabasco and black pepper) will put a little hair on your chest, but not too much so you’ll still be Delta Tango Foxtrot (rye whiskey, pear brandy, honest, lemon, fig and cinnamon bitters). As you can tell, Sweetwater isn’t your average bar. Since the doors opened in 2011, the team (many of who are still with the company) has worked to give patrons exactly what they didn’t know they wanted or liked. “We were one of the first true cocktail-driven bars in the county. We hold the largest spirit selection in the Southeast and are also the first and largest whiskey bar in the state” with roughly 1,175 whiskeys on hand, Sean said. “Most of our team has been at Sweetwater for five plus years. We are constantly changing menus, exhausting trends and pushing the envelope in our industry every day!” He likes to treat their space as a creative incubator for cocktails, and that is sweet, sweet liquid magic for all who enter. For Sean, his greatest bartending joy is the gratification of serving his guests well. Whether that be the entire service, or making them a bespoke cocktail that they love, it’s all happiness for this bottle slinger. You’ll find him working at Sweetwater six days a week
and behind the bar one of those days so he can “keep the finger on the pulse.” You can tell that he’s a mover and a shaker, and is legit thirsty for new concoctions and methods with an end goal to surprise and delight his guests. “Over the years, my regulars that helped launch the place have been absorbed by the rest of my team,” Sean said. “I believe it’s really important for a bartender to have a following. People in hospitality are one of the most important assets an operation can have.” Knowing that, he is driven to make sure his guests are amazed and excited with their experience at Sweetwater, one outside-the-box drink at a time. Even though he says he’s too old for shots now (“I’m a bit older now and the hangovers hurt”), you’ll find him enjoying a light beer or glass of wine when he’s not working. Or, he’s always up for trying any acidic/sweet/bitter concoctions to get some inspiration for the next menu change. If you haven’t been yet, or haven’t been in a while, the time is now so call your bros, ready your taste buds, and go see Sean. He’s waiting for you and knows exactly what you’re thirsty for, even though you may not know.

I
f there ever was a mad scientist behind a bar, Angela Dugan is that person. She loves creating, and is so dedicated to the process that she literally starts from the ground up with the end goal always in mind: pushing the cocktail envelope. The Oklahoma native moved to Las Vegas to work on her masters in holistic nutrition, but also picked up a bartending job to make it through grad school. After a few years in Vegas and needing a change, she found herself working at Disney in Orlando, before being hired as a corporate trainer for a pizza franchise, Pizza Fusion. Little did she know that the person who hired her for that job, Vaughan Dugan, would later become her husband and partner in Kapow! Noodle Bar.

While she didn’t create the original opening cocktail menu, she did start getting her hands on the cocktails and began offering limitedtime weekend cocktails, like a smoked cherry lemonade, every weekend. Eventually, she took over the cocktail menu completely (more than likely due to raving fans who couldn’t get enough of her weekend concoctions) and started creating seasonal menus as well as picking up shifts behind the bar. “When I was creating the limited-time weekend cocktails, I was simply having fun with it and experimenting with different flavors and profiles,” said Angela, 38. “When I started putting together menus, I would have 20 to 40 cocktails on a menu, I think trying to literally hit every palate and always paying homage to classics.

But, I think my palate, focus and direction have matured over time. I believe I can accomplish the same complexity and story-telling in a 10 to 12 [item] cocktail menu.” And funky complexity is where it’s at. The Easy-Peasy-Japaneasy features Toki whisky, Dolin Rouge vermouth, Luxardo cherry, acid phosphate, Dugan & Dame Morning Wood Bitters, and the Seoul Sunshine has Ty Ku Soju, Espolon Tequila Blanco, Canton ginger, lime and Bonne Maman Fig Jam. They’ve even created PB&J whiskey cocktails, and used fish sauce and Togarashi because she believes that whatever is allowed in the kitchen can find a way into a drink, as long as you’re creative enough. As if that wasn’t enough creating, she also made the time to whip up a unique gin and tonic menu that features homemade tonics from her and her husband’s Dugan & Dame tonic line, including 5-Spice, Smoke’N Flowers and Classic. “Gin and Tonics are huge in other countries and this country is slowly following suit,” Angela said. “Plus, tonics provide ingredients that are just that - toning. They help balance the body and enhance the individual. Ingredients like juniper, anise, quassia bark and peppercorn actually do so much more than just add flavor.” The aspiring herbalist (aka mad scientist) spends her time dedicated to tying Americans back to the plant life that she feels can help heal us. While she’s not into putting CBD in drinks (citing lack of information and efficacy of CBD brands), she thinks that this has opened up the door for less traditional herbs to make their way into cocktails.
“There is a huge array of herbs that have been used for the nutritive and medicinal qualities that I want to bring into the cocktail world,” Angela said. “Currently the closest association to medicinal herbs in this country is bitters. We use bitters to aid in digestion, heat up the stomach as well as settle it, and to better assimilate our food. If people are consuming CBD in cocktails for its effect, then that’s enough crack in the door to start introducing things like ashwaghandha, holy basil and schisandra berries.” She and her team even have a couple of plots in the Boca Raton Community Garden and are growing medicinal plants for their new cocktail menu. From her bounty, she harvests, dries, extracts and makes decoctions, tinctures, syrups, tonics and mixers, and anything else she can think of. On the cocktail horizon, she’s hopeful to continue crafting cocktails using only the finest and freshest ingredients that translate to a memorable experience for each and every guest. “Each new menu we have pushed the envelope just a little further and our patrons have trusted us on the ride. Each cocktail we present tells a story, from the ingredients, to the preparation, to the flavor,” Angela said. “I just want to create. I love creating. I’ll never leave the bar, it’s home. And as long as I’m continuing to create new products and new ideas, I will feel fulfilled in this role.”

DIRECTIONS Place coffee beans and cinnamon stick on a flame-proof plate. Torch coffee beans and cinnamon stick while holding the rocks glass upside down over the flame. Once beans and cinnamon start smoking, place rocks glass over them, trapping the smoke. Combine Ginger Liqueur, Bourbon and Bitters in a stirring glass. Add ice. Stir until chilled. Lift rocks glass from plate, releasing the smoke, and add one large ice cube into the glass. Strain cocktail into glass. Peel an orange slice. Hold outside of the peel toward flame, pinch peel to allow flamed oil to drop into cocktail. Drop peel into the cocktail and serve. Cocoa-Infused Bourbon Recipe Combine a 1/2 cup of cocoa nibs into a 750-milliliter bottle of bourbon and let sit 48 hours. Strain nibs and use.

A
llow me to introduce you to Anthony Barber, owner and operator of Troy’s BBQ. For the past 23 years, Troy’s has become a landmark for good, quality barbeque in South Florida, and there are now two locations, in Boynton Beach and Boca Raton. The concept first began in 1996 with Anthony’s father, Troy Davis, whose passion for barbeque and cooking sparked the flame that has been ignited for almost a quarter of a century. Anthony took over the family business three years ago when his father retired to Savannah, Ga. and continues to keep his eye on the barbeque prize. Luckily, he was well prepared to handle the task at hand, considering he’s had a life-long interest in barbecue. He learned everything he knows about cooking meat from his father. Well, almost everything - the beef brisket was a passion all his own. He took that passion and ran, learning the best methods of preparation, and passing that knowledge along to his team. When asked what it is that makes Troy’s BBQ different from all the other joints out there, Barber responded saying, “We take our time and our barbecue is cooked the hard way. We cook our brisket for 26 hours, and we don’t cut any corners with anything. We cook our ribs over direct heat with oak wood and charcoal.” >>

It certainly is a labor of love. The attention and care that goes into the process is exemplified in the exceptional flavor of the final product. The wood and charcoal they use lend the meat an incredibly unique flavor. One that, dare I say, stands strong saucefree, and in the world of authentic barbecue, that says a whole lot. Although it is tasty enough to stand alone, they do have some fantastic sauces from which to choose, if you’re feeling saucy. Barber recommends mixing their sweet and original, adding “You get amazing flavors from that.” So, what is the favorite dish for this bastion of barbecue? It is, of course, something so special it’s only offered once a week: the beef ribs. “They are so succulent and juicy they fall right off the bone,” says Barber. When asked what he would recommend for those who have yet to have the pleasure of his barbeque, it was a no brainer: the ribs. “That’s what this business was born from,” adding that guests should then “make [their] way through everything else on each trip.” That “everything else” would include the pulled pork, chicken, rib sandwich, and rib tip dinner, as well as

their equally amazing sides, such as collard greens, candied yams, peas and rice, and baked beans. Now, for a man whose life is barbecue, barbecue is certainly not all there is to life. Barber also dabbles in music. “If I wasn’t doing BBQ I’d probably be a musician as I play drums and piano, and am working my way through the steel guitar,” says Barber. Now that’s another sweet combination: barbeque and a little steel guitar. Photo: Jeff Zielinski A lot has happened since 2013 when we featured you for the first time. What have you been up to, personally and professionally? It’s been one hell of a ride since then. In 2014, my dad sold his bike shop business and moved our family to Hoschton, Ga. to be closer to our extended family. Shortly after that (I’m talking three months), I moved up to Raleigh, N.C. to pursue BMX as a full time career. For the next four years I spent my time riding BMX stunt shows and performing at the highest caliber of competition all across the world. I just recently moved back down to Central Florida with my beautiful girlfriend Morgan. Growing up in Deerfield Beach, did you ever see professional BMX as a legitimate career? Never in a million years did we actually think this would become a career (haha). To make BMX a career just seemed so farfetched. I was just like any other ordinary BMX kid but slightly more obsessed. I needed to ride. It helped me cope with all the typical grade school problems like bullies and not really being accepted by some of my peers. But at the same time, it was an addiction. It was the sense of accomplishment every time I learned something new, so I was hungry to learn. One thing led to another and the next minute I found myself halfway across the world competing with all the guys I looked up to.

How did your family’s bike shop in Boca Raton help you get a jump start in the sport? Well for starters, I always had the nicest bikes. My dad was super involved with my riding and was always willing to keep me set up on the nicest stuff. So I never had the struggle of breaking a part and my parents being unable/not willing to help keep me rolling. All in all, my parents were just way more supportive because bikes are what we know. Our lives revolve around bikes so I never heard that typical “quit wasting your time messing around with that bike and get a real job” talk. Who were some of the key people that helped you get to where you are now in BMX? The list honestly goes on for days. My family, first and foremost, because without their support there’s no telling where I’d be right now. Dave Brumlow is another person who’s really been there to back me up with my best interests in mind. Dave has done so much for me and the Florida BMX scene over the last 8 or so years. I can say Mike Spinner and Daniel Dhers have played a big role by allowing me to ride their training facilities with them. And last but certainly not least, my lady, Morgan Barbour. She was really there for me at my lowest. When I thought it was the end of this path for me, she pushed me to fight for it and never give up.

Take us back to the 2018 X Games in Minneapolis where you took the bronze medal in dirt. Did anything feel different that day? What was it like to see all of your years of riding pay off like that? The entire week leading up to that event was different. I had been so focused. Preparation was key. That week I got a good night’s sleep every night, dreaming of that run and replaying it in my head over and over again. Honestly, all my years riding had paid off long before that. The feeling of stomping that run in front of my family and girlfriend was what paid off most, because without them it would not have happened. It was 100 percent a team effort and I cannot thank them enough. When you aren’t riding, what are you up to? Hangin’ with my girl! We love getting outside and getting active, going to music festivals, hiking, riding bikes, and more. Either that or when I’m with my folks, we like to get down on some mountain bikes out in the North Georgia hills!

How is the vibe different for competing in the X Games versus other competitions? Well the X Games is the pinnacle of action sports, I can say confidently. In saying that, the stakes are high, and a good finish there can solidify a spot in the following years to come, as well as possible sponsorship opportunities, which enables me to continue this wild ride! Walk us through the first one you competed at in 2017. Nervous? Stoked? Both? Both! It was the most surreal feeling just being there, let alone competing. I was so nervous and it definitely showed in my riding. So much so I couldn’t even land a full run. Not my favorite time to talk about. I definitely wanted to have a bit of a more positive story for my first X Games, haha. How does your triple hit run at the 2017 Nitro World Games stack up against the biggest moments in your career? That one weighed heavily on me. In 2016 I crashed out of the competition the day of separating my shoulder. That was the most upsetting moment I can remember to this day, mainly because it was my first “big time” event so I put tons of pressure on myself to perform well. So 2017 was the comeback story. I laid down the exact run that took me out the year prior, which was good enough for third place. To top it off, I ended up winning a Polaris Slingshot! If you’re not familiar check it out online. My mind was completely blown! I’d say that was a huge stepping stone in feeling confident with myself as a rider and competitor for these larger events.

You injured your knee recently. What happened, how did the surgery go, and what kind of rehab will you need to go through? Big time bummer! I tore my ACL, lateral meniscus, and medial meniscus. It’s a mouthful, that’s for sure, haha. Surgery went great! Dr. Dellaero, who is a resident at DUKE and part owner of North Carolina Specialty Hospital, does more than 200 ACL surgeries a year so I was super comfortable/confident with putting the job in his hands. I’m going on two-and-a-half weeks out of surgery and already back turning the pedals. Not on the BMX bike, but the feeling of pedaling has been good enough for me. I’m doing tons of range of motion stuff along with getting this chicken leg back in shape. I had a hamstring graft, which is what they used as a replacement for the ACL. In losing that piece of muscle, I’m having to work double time to build all the muscles back around my knee to strengthen it. When you’re back home in South Florida, what are your favorite spots to hit up? First spot I hit up is Rattlesnake Jake’s down on Deerfield Beach. The owner, Junior, is a long-time family friend and always whips up some amazing food for me and my folks whenever they can make their way down there. They say big things come in small packages and Rattlesnake defines that! When you’re training, what does a normal day look like? Wake up and eat a healthy breakfast, unless I’m fasting until noon. Then, bikes, whether I’m talking about them or riding them. My entire day revolves around my “job” and I say that because it’s more of a lifestyle than anything else, for me at least. After you’re back in action, what goals are on the horizon? I want to go for gold at the X Games.

Standing up with “Waves of Healing” BY DARIEN DAVIES In an effort to fill a void, Cash put fingers to keyboard and wrote his first book. Not only is it a major accomplishment for him, it’s a book documenting major accomplishments of children with autism. “I attended Palm Beach Atlantic University in West Palm Beach, studying journalism, from 2010-2014,” said Cash Lambert, 27, author and avid surfer. “At PBA, you have to attain a certain number of volunteer hours every year. I stumbled across Surfers for Autism searching for volunteer opportunities in 2010. Not only did I volunteer, helping push children with autism into waves, I also began to write articles about the events because I found them so impactful.” But, his articles were dictated by word count and even though he was sharing his stories in publications such as (yours truly) The Atlantic Current, Autism Parenting Magazine and Eastern Surf Magazine, he had many more quotes and stories to tell. When someone told him he should write a book, he jumped on board. “Every person who’s read it has told me that it made them cry,” Cash said. “My running joke has been that if the book doesn’t make you cry, we’ll give you your money back. Of course, I don’t have the power to do that, but that’s been the consensus so far, that the stories in the book have been truly inspiring.” “Waves of Healing” features stories about the struggles children with autism face, including the struggle to stand on a surfboard, the struggle to communicate, and the struggle to make progress in a world that accepts “normal” and rejects all else. But it’s also very

hopeful. There are stories of breakthroughs, of authentic joy and unbridled excitement as they learn to see their world from a new perspective, which is happily standing tall atop a surfboard and riding a wave all on their own. “For those who are touched by autism, I hope [the book] inspires them to keep going and to never give up as they search for pieces to the autism puzzle for their son or daughter,” Cash said. “I also hope it motivates people to act. To move. To volunteer. To give of themselves to a cause. It doesn’t have to be for autism, it can be any cause. When you give yourself to something expecting nothing in return, amazing things can truly happen. Just ask SFA volunteers.” “Stand up, up UP!” is the mantra of Surfers for Autism, and a reminder to us all that perseverance and faith can help in all aspects of life, including a three-year goal for writing a book about a subject he’s passionate about. He said that helping a child surf, seeing the child smile and have fun, watching his/her parents cheer, and then having the parents endlessly thank him is an experience he won’t forget. “Waves of Healing” is published by Hatherleigh Press in partnership with Penguin Random House, and is out now.
