The band then turned its sights on putting together a killer brass section by adding Markis Hernandez on saxophone and flute and trombonist Kevin Cripanuk. When asked about the new additions, Chaumer replied “we’re excited about the extra horns, because having a brass section is a whole lot of fun, especially for the type of music we do which is like a celebrating, fun, and dancing kind of music — its working out really nice.” The most recent change to the group came in June when Moska replaced longtime bassist Jorge with Tom Coughter. Over the years the members of the band have changed quite a bit. Bo, Jean, and Jorge have all moved on, but the heart of the music has remained the same. For Carlos and Moska Project it’s all about “keeping the essence of the Latin side.” In May of this year, Moska Project released their fourth album, Cuatro. The band spent fifteen months working on recording and mastering the album at Q-Tal studios in Jupiter, Florida. When asked about the album Carlos said “we’re super, super happy with the final product, we’re super proud of what we did.” The band has plans to continue to play locally as well as expanding their reach to promote their new music. One of the bands biggest accomplishments this year, along with releasing Cuatro, was their appearance at California Roots’ The Carolina Sessions in Myrtle Beach, SC last April. The band was a part of a talent heavy lineup featuring artists such as 311, SOJA, and The Movement. When asked about the opportunity to perform in front of 6,000 reggae fans Carlos said “It was one of the best experiences we’ve had. He surfed with the Big Kahuna in Hawaii, reveled in the smell of baked dough on the Golden Gate Bridge wafting from a bakery below, and even built surf boards in our own South Floridian backyard. From these and other life experiences, various imprints were made, inspiration took hold, and then bubbled to fruition in the form of enormous, gourmet doughnuts. Nani’s Dough, currently in Boynton Beach, is reinventing how we think about doughnuts. “All these experiences in my life have brought me to this doughnut,” stated Nani. He further expands on the life he has led and how it has influenced his personal take on the doughnut scene in South Florida.

Upon returning to his home state of Florida, Nani felt there was something missing. Having spent time watching bakers use fermented bread in conjunction with fresh dough and witnessing the massive, decadent breakfast cakes in Hawaii, he saw an opportunity to transpose these baking techniques to something unique to South Florida. “As a joke, I started with an online doughnut recipe.” It started with a small frying pan capable of making a single donut at a time but quickly segued to hundreds of donuts all prepped, rolled, fermented, baked, and decorated by Nani. “I personally oversee every doughnut. Quality control is what we stand for,” said the proud owner. Through trial and error, Nani has created the quintessential doughnut he envisioned, “I wanted something that tore like cotton candy.” Starting at Williams Sonoma in Boca Raton, Nani’s Dough has made a name for itself. He was productively fulfilling orders until a big one hit: 1,000 donuts! Seeking a space to accommodate such an order, Nani found his current location within the Bond and Smolders bakery in Boynton. With that large space he was able to expand his growing business by further tapping into his creativity, offering new donut creations daily. Nani’s Dough has become an arsenal of gourmet baked goodness from the popular s’mores donut to the white chocolate mocha, the cinnamon roll, as well as the classic glazed donut…all close to three times the size of a typical doughnut. Referencing the look of resin gloss on a highly polished surfboard, Nani has created numerous flavored glazes with ease and excitement. The frosting, adornments, and delightfully delicious fillings are all made in house from natu-

To that end, Iglehart and the team at Saxon are creating a staple menu of cocktails that are outside the mainstream. “I wanted to create a menu that’s smaller, but create modern classics,” he said. For example, there’s the ‘War and Pisco’, a drink with pisco (a brandy made in Peru and Chile), dry vermouth, grapefruit, elderflower liqueur, and green grapes -- or the Philadelphia Squeaker, made with rosemary shrub, gin, Cocchi Americano (an Italian apertif wine), St-Germain (an elderflower liqueur), and lemon. “That’s an awesome drink. It’s like a Cosmo, a combo of sweet and sour. The idea is to create a balanced menu, and balanced cocktails.”

Though it might seem over-the-top, or a bit kitschy, Saxon has begun to offer themed concept menus throughout the year. “We take an event in history or a person or an era, and create a cocktail menu based around that concept. Our first one was Downtown Abbey. It was great to start off with that show — we could focus on brandy and gin.” Then it was off to Studio 54, based off the iconic nightclub in New York City, featuring “off the wall” cocktails from the 70’s. It’s a concept that allows the bar staff to stretch their creative muscles.

Through the summer and into November, Saxon remains a very tight affair, only opening between 7 p.m. and 2 a.m. Friday and Saturday nights. Then, starting in season, the space opens up to include Wednesday and Thursday, while leaving the other days for special events and industry focused shindigs. For Iglehart, Saxon will retain a special place in his arsenal. “[The space] is a little reminder that we want to conquer the cocktail culture.”
