So Much To Be Thankful For!
Thanksgiving and Christmas are the most wonderful Holidays. It feels like the entire year builds to complete magic, sparkling lights, love, kindness and lots of appreciation. Thanksgiving is when I really think about all that has happened over the past year.
I am so Thankful for all the clients that have trusted us with their business. I appreciate so much the employees that work hard to make our clients happy and successful. I have the best team I have ever had in 25 years! Last Thanksgiving we were able to take a trip that I have dreamed of for a long time— we took our girls to the Macy’s Thanksgiving Day Parade. Talk about magic, it was amazing! We included some history on the way. We toured Berkeley Plantation, the place where the first Thanksgiving was celebrated. My twins were studying President Lincoln and wanted to see Gettysburg. What a great surprise, Gettysburg has the most amazing history museum and cyclorama. We will have a story on the cyclorama later in the year. We walked back into history in Williamsburg and toured all the top sites in New York City. Of course, in New York we had to start with dinner at the American Girl Doll Store and also had to see the Rockettes!

Crepe myrtles offer a bit of welcoming shade as you gaze upon the other Charleston-style homes lining a street with family-friendly sidewalks. This picture of Southern charm may seem like a dream, but it is truly the reality of living in the Park Place neighborhood, a nine-year-old labor of love that has created a unique lifestyle opportunity right in the heart of Farragut. Park Place is not only a community, it’s a lifestyle. The undermount sink on the Belks’ island makes cleanup a breeze.
The table outside of the master bedroom features an interactive decoration—a tree where you can leave inspirational notes! The Belks’ island is the perfect place for family and friends to gather and perhaps enjoy a cookie or two! The cabinets in Christine Belks’ kitchen came from Wildwood; the kitchen also features a beautiful black walnut butcher block island.

The coffered ceiling accentuates the elegant yet playful design of this bedroom.
The guest bath vanity perfectly encompasses the Southern charm feel of the house. An enclosed shelving unit in the upstairs hallway displays a little neighborhood pride with a Park Place street sign.
Ideally situated minutes from shopping, restaurants and quality schools, this oneof-a-kind neighborhood still manages to maintain an intimate setting despite its convenience. Beautiful outdoor spaces encourage neighbors to stop and chat and children to run and play. Best of all, landscaping is maintenance free, covered by the Park Place HOA! The houses themselves are without compare—Charleston-style with front porches
and private courtyards. The builder’s workmanship is evident in details like custom railings and tongue and groove ceilings on the front porches and fully modern yet tastefully constructed rooms on the interior. In a world where photocopy slab homes have become the norm, Park Place is a neighborhood that stands out from the crowd in all the right ways. Christine Belk, a homeowner at Park Place, says, “We love living in Park

inter is the season for comfort food. Beef Stroganoff has had a long and honored history. It has spread across the world and is common in restaurants from Europe to Asia to South America. Despite an elegant past, beef stroganoff is now more like down home comfort food and can be easily prepared for a hearty and satisfying family dinner. Prepared traditionally, this dish is very rich and delicious. Using beef from grass-fed cattle improves the fat profile and flavor. To make this dish a little more interesting you can use organic whole wheat fettuccini. Fettuccini noodles are a bit narrower than egg noodles, but they give the same substantial mouth feel and a significant amount of fiber.
“Winter is the time for comfort, for good food and warmth, for the touch of a friendly hand and for a talk beside the fire.”
- Edith Sitwell
Classic Beef Stroganoff - Winter Comfort Food Ingredients:
4 tbs all-purpose flour, divided 1/2 tsp salt 1/4-1/2 tsp ground pepper 1 lb beef sirloin steak, cut in 1/4-inch-wide strips (grass fed) 3 tbs butter, divided 1 cup mushrooms, thinly sliced 1 medium onion, chopped 2 cloves garlic, minced 1 tbs tomato paste 1 can (10 1/2 oz) condensed beef or chicken broth (or rich homemade) 1 cup sour cream 2 tbssherry or cognac Half of a 16 oz pachage of egg noodles or fettuccini, cooked
Preparation: 1. Combine 1 tablespoon flour and the salt. Dredge the meat in the flour mixture and brown in 1 T butter. 2. Add the mushrooms, onion and garlic to the meat, and cook for 3-4 minutes or until the onion is barely tender. Remove from skillet 3. Add 2 tablespoons butter to the pan drippings. When melted, blend in 3 tablespoons flour and cook for 1 minute. Stir in the tomato paste. Slowly pour in the broth. Cook, stirring constantly, until the mixture thickens. 4. Return the meat and mushrooms to the skillet and simmer until meat is heated through, about 2 minutes. Combine sour cream with a little of the hot broth (this tempers the sour cream and helps to prevent curdling), then stir in the sour cream mixture and sherry. Season with pepper to taste. Stir briefly. Heat through but do not let boil, just simmer for a few minutes before serving. 5. Serve over egg noodles or fettucini.

spent working in the garden, driving the tractor and spending time in his Granny’s kitchen canning and sampling her fruit pies and preserves. It was here that he developed a strong work ethic and a taste for fresh handmade baked goods that would set the bar for quality at Buttermilk Sky.
O
ur story begins in the kitchens of our maternal grandmothers Ruth and Edith, two Southern ladies, one from Arkansas and one from Mississippi, who shared a spunk best described as “whiskey in a tea cup.” Known as much for their crazy sayings and firm beliefs as for their pies, biscuits and preserves, these special women put a mark on our hearts that will last a lifetime. Scott had the privilege of growing up on a 1,500-acre, second generation farm in rural Southeast Missouri. Summer days were
30
FARRAGUT LIFE WINTER/HOLIDAY 2017
Scott learned all aspects of running the farm, from equipment to livestock to crops, basic business and brokerage principles. He followed up his “farm raising” with a degree in Architectural Engineering and a 20-plusyear career in Construction Management prior to going into the baking business. Scott’s attention to detail and passion for design has been a great asset to the retail build-out process of our stores. When he isn’t working, Scott enjoys fishing with our sons, Bo and Tabb,
watching them play football and hanging out on the porch with his yellow lab, Gunner. I, on the other hand, grew up a city girl from Memphis, TN, home of Elvis Presley and the birthplace of the blues. Memphis is famous for its BBQ and for the desserts that follow it. Memphians know a thing or two about pie, and my Nanny (Grandmother) was no exception to the rule. Nanny was known among friends and family and to many in the community as the “pie lady.” She was often seen toting her marigold-colored Tupperware pie carrier to birthday parties, cookouts, reunions and yes, even funerals. I feel like that old pie carrier must have had more miles on it than her Chrysler Lebaron. My sister and I often spent Friday nights at Nanny’s house. Saturday mornings were always a treat.
Derived from an old Southern weather expression that describes clouds in a thin clabbered appearance like frothy fresh-churned buttermilk, a buttermilk sky often precedes fair weather. And as the song “Ole Buttermilk Sky” says: “Ole buttermilk sky I’m keeping my eye peeled on you, What’s the good word tonight Are you going to be mellow tonight?”
Our signature Buttermilk Pie! Smooth, mild and sweet, our buttermilk filling is like a cross between a chess pie and a custard. In fact, it could even be described as similar to a sugar cookie. This flavor is great for people who prefer something without chocolate or for a taste of a simple Southern pie.

She made homemade “tea biscuits” cut with an old can. It was just the perfect size to make a petite three-bite biscuit. If we were lucky, she would have a jar of her plum jelly to top them with, and life was good. Afternoons were often spent making pies. While Scott’s Granny was an expert at making fruit pies using fruits from her orchards, Nanny’s specialties were cream pies and pecan pie. The idea for our 4” Cutie Pies came from a child-sized cast iron skillet that Nanny always let my sister and I used to make ourselves “baby pies” as we baked alongside her in the kitchen. It is around our grandmothers’ specialties that we have built our classic pie menu: the fruit pies from Scott’s Granny and the cream pies and pecan pie from my Nanny. I never would have guessed that my prior career as a Speech-Language Pathologist and Scott’s Construction Management career would have ended in the culmination of our childhood memories and entrepreneurial dreams in the form of a pie shop. We first entered the bakery business following my sister’s lead in 2007 and opened The Cupcakery as a licensed location of her original cupcake store in St. Louis, Mo. It didn’t take long for us to figure out that we loved the baking industry and the independence that we gained from owning our own business. It is with great pride in our family’s time-honored recipes and traditional baking methods that we invite you to enjoy the taste of Southern tradition, the taste of Buttermilk Sky Pie Shop.

Giving back to the community is what Buttermilk Sky is all about. And, as a result, the shop’s “Pie it Forward” was born. Each month, Buttermilk Sky donates a portion of proceeds from the sale of one particular pie to a local charity or non-profit organization. “As much as we love the smiles on people’s faces when they taste our pies, we cherish the opportunities we have to give back to organizations close to home. The Pie it Forward program also allows our Buttermilk Sky customers and fans to get involved as well. It’s about community for us.”
Farragut shoppers stop by and say hello to Jennifer Hembree the owner of our Turkey Creek location at 11525 Parkside Drive. She has fresh pies daily and seasonal pies that make for the most perfect dessert of any Holiday gathering.

MY NAME IS CANDACE VIOX. MY PERSONAL STORY BEGINS WITH MY BIRTH. I WAS ADOPTED BY MY TWO WONDERFUL PARENTS AND I GAINED MY FOREVER FAMILY NAME, CANDACE BOONE. I grew up in Southern California, Orange County area to be exact. I grew up in the sands of Seal Beach, Huntington Beach, Newport Beach, Laguna Beach and anywhere that my parents would take me. Church bon fires with a guitar, sunsets on the HB Pier, sand in my toes and a wonderful family home made up my childhood which I will forever remember. At 17, my senior year of High School, we moved to Tennessee and the next chapter of my life began. I graduated from Lenoir City High School and began my personal journey. Roane State CC, Lee University and Pellissippi/UT Culinary Arts program set the stage for where I am today. I married in college and we had our daughter, Alexis Viox. We lived locally in Whittington

Creek while our daughter went to Christian Academy of Knoxville. I worked for Rick and Mary for 10 years at Rick McGill’s Toyota on the motor mile and begin feeling like there was more I needed to do with my life, as 30 was on the horizon. But what? Hence the next chapter of my life. I was at my mother’s home, devastated by years of infertility and private adoption ventures, and we saw Monday’s Child on the local news. I told my mom “That’s it! I am supposed to be a Foster Parent.” I called, enrolled in the class and our family completed the Tennessee State Foster program in 2 months. We received our three beautiful children a
few months later. Jimmy, Cabrin and Sydney. They never left our home and became part of our forever family a year later. Sadly, I was faced with several personal tragedies in 2011. My children and I moved to Farragut in the spring and then my mother unexpectedly passed away in May and I was lost. During my grief, my health failed and my family was torn apart. I was at a personal crossroads. I ran home to my friends in California that summer of 2012. I did not know how to move forward. So, I went to my childhood pier in Huntington Beach with my kids and yelled at God in the sand to the point of exhaustion. My tears were pouring from my soul and the Holy Spirit spoke to me and said,
“ARE YOU DONE YET?”
cheers It was crystal clear. THAT MOMENT changed the direction of my life and I knew It was time for me to begin to heal. I had 4 kids to raise and I was only 35! These events were not going to destroy me; they were going to become part of my story and provide the opportunity to share God’s grace. But how? How can I share with people my story of survival and perseverance and give hope to others so that they can get through whatever it is they are facing? My soul said, “create a safe environment, free of judgement where love, understanding and acceptance prevails. A place where everyone can share their story”. I found listening ears at some of our local restaurants and since met several lifelong friends which supported my concept. Then the story of Water into Wine began. Another chapter of my life. The concept of Water into Wine was born in my soul. I enrolled in Pellissippi/UT Culinary arts program and decided I was going to learn how to open a relational restaurant

unlike any around. My professors supported my passion and appreciated my leadership role with the other students. I graduated top in my class and proudly accepted my degree with my children cheering me on. After graduation, my friend Deron Little, encouraged me to intern with him for a year to work and learn the business inside and out. He was an amazing teacher and inspiration and I appreciate the many lessons he taught me. I will be forever grateful for my culinary internship at Season’s Innovative Bar and Grill. In November 2015, it was time for me to sink or swim. I began looking for a location that was small and intimate that I could afford on my small budget. I am a single mother, on a fixed income with no private investors. So, I prayed and I asked God if He wanted me to open a place where everyone can feel loved. I was sure hoping He would say yes and that He had a plan. His plan was amazing. We found the space located at in the Gallery in Farragut in January 2016.
We started construction in March 2016 and opened in May 2016, one day after the five-year anniversary of my mother’s death. I was able to toast her and a portrait of us is proudly displayed on the wall in the back lounge. The name you ask? Water into Wine… my mother said “If Christ’s first miracle was turning water into wine, we could drink it!” And we shared many glasses of wonderful wine over the years. My five-year story has shaped where I am today. It is only because of God’s grace, the love and support from my friends and family and my refusal to give up that I am able to say Cheers! Water into Wine opened in our community to provide a place where everyone can share their story. Because we all have one don’t we?

Celebrates New Knoxville Pop-Up Shop! H o l i d ay O p e n H o u s e : November 17 from 5pm - 8pm
My Kind of Lovely was just a little best friend dream during the holiday season 3 years ago. Katie Lee & Caroline Gillem of Madisonville, TN, were best friends since the ages of 3 & 4. They went through most things in life together as best friends, including baton twirling through high school and even at the University of Tennessee. They grew up together, learned life lessons together and most of all learned teamwork together. Both girls valued the importance of dreaming big and working hard to achieve goals, so when the idea of starting a business together came about, they took on the hard work with a smile and knew they could do whatever it takes to be successful! My Kind of Lovely launched as a traveling boutique hosting trunk shows all over east Tennessee. The girls had so much success in their hometown of Madisonville, TN, they knew almost immediately that would be the home of their first brick and mortar store and opened as a pop-up shop just 6 months later. The Madisonville store is their home

base and the heart of My Kind of Lovely, but just as any overachieving and eager business owner does, the girls have identified a need for a My Kind of Lovely presence in Knoxville. Since My Kind of Lovely is just shy of 3 years old, a Knoxville pop-up shop was the perfect way for My Kind of Lovely to have a presence in Knoxville. Currently, you can shop the My Kind of Lovely popup shop in the Franklin Square shopping center located within Weiss Baby (behind the Chop House). They have partnered up with Megan Rogers, owner of Weiss Baby, to create a beautiful store filled with women’s clothing, gift items, sorority items and baby! My Kind of Lovely & Weiss Baby will be hosting a Holiday Open House Thursday, November 17, from 5:00 - 8:00. The event will debut lots of new holiday items, feature one-night-only holiday specials and will be a fun night to kick off your holiday shopping!

FARRAGUT HOSTED WORLD PREMIERE
O
n October 22, the city of Farragut would play host to a performance unlike any other. Spectators began to take their seats at Christ Covenant Presbyterian Church in apprehension, eagerly awaiting composer Cormac O’Duffy’s latest masterpiece, an oratorio entitled Mine Eyes Shall Behold Him. As the choir began, and the orchestra began to play with the first movement to conductor Gabe Loving, everyone seemed to have one thought in mind. Truly they were beholding something extraordinary, something intimate, something spiritual. Cormac O’Duffy, the creator of this brilliant performance, was born in New Jersey and spent much of his early life in Ireland. Indeed, his true heritage is betrayed by his jovial Irish accent, a rare treasure in the American South. But it is more than his accent that friends and parishioners of East Tennessee have come to adore about Dr. O’Duffy; it is rather his incredible gift of composing compelling pieces of music that accentuate spirituality. O’Duffy has been composing for most of his life, his most notable piece being “Hear, O Israel,” which has received national acclaim. Cormac attributes much of his inspiration to his father and mother. “My father was a tenor, always singing when I was a child. My mother would play the piano, and from a young age, I was compelled to

play along.” Mine Eyes Shall Behold Him, which premiered in October at Farragut’s Christ Covenant Presbyterian Church then encored the next day at First Farragut United Methodist, showcased Dr. O’Duffy’s style for choice East Tennesseans to enjoy. “I like music to be a prayer. Through my music, I try to take the essence of classical music and translate that style into something that will enhance the relationship with the individual and their faith. In this case, that story was illustrated through the life and hymns of Fanny Crosby.” In many ways, Mine Eyes Shall Behold Him is an intimate look into the complexity of Fanny Crosby herself. Born in 1950, Fanny Crosby’s life is truly a remarkable one. When she was only a child, a botched medical procedure would cause her to lose the ability to see. Though blindness at such an unspeakably young age would undoubtedly immobilize some, Fanny would not let allow her handicap to cripple her spirit. When she came of age, Fanny began to write poetry, and through her experiences,
she began to be taken notice of and admired as a brilliant writer. Though she had received acclaim and a following as a dedicated wordsmith, she also held a deepseated spiritual tie with her faith. In an effort to express this, Fanny Crosby began writing hymns, expressing this spiritual “sight.” Odds are that you have heard one if not many of her 8,000 + hymns, which are regularly featured in all Christian Faiths. These hymns do not heed denominational borders, Baptist, Methodist, Presbyterian, or Catholic. Fanny’s inspiring words transcend all denominations and bring a sense of unity to all those who call themselves Christians. Fanny Crosby
lived to the ripe old age of 95, and on her death bed, she would scribble down the
words to her final quartet featuring the words “mine eyes shall behold him.” It was this last testament of Faith which Cormac O’Duffy would use to epitomize the performance, framing the context of the oratorio. “We had a lot of fun putting this together and practicing,” said producer Theresa Pratt. “It was beautiful to see so many different parishes and talented people from all walks of life come together to make this happen.” The performance boasted vocal talent from First Baptist, Christ Covenant, First Farragut United Methodist Church and St. Thomas the Apostle. Many of the musicians are members of the Knoxville Symphony Orchestra, and Soloist Amy Porter took center stage as the character of Fanny Crosby. Mine Eyes Shall Behold Him coupled Fanny’s brilliant hymns and personal reflections with Gospel passages from John. The beauty of connecting Fanny Crosby’s literal blindness to her ability to truly “see” speaks in complex terms to the nature of Faith itself, but more simply it gives hope to all that there is a higher truth that can be gifted by the senses alone. The gift of sight is something we hold precious, but perhaps there are some types of spiritual truth that many of us miss as life passes us by. Perhaps in many ways, Fanny Crosby was more gifted with sight than most who might have looked down on her with pity. This truth, when expressed through music, surely cannot be expressed through mere words, but rather by the most intimate part of one’s soul. Mine Eyes Shall Behold Him was recorded. The CD will be available in mid-December. If you would like to see more of Cormac O’Duffy’s life works, they can be found at http://cormacoduffy.weebly.com.

e was born in the mid 1730’s, on an island that is now under the waters of Tellico Lake, just west of the present Hwy 411 bridge. The village on the island was called Mialoquo, and his father had just a few years before been one of the few Cherokees to travel across the great ocean and meet the English King. His father was small in stature, but was a warrior skilled in storytelling and speaking. As the boy grew, so did the fame of his father, Attakullakulla. Once, his father and his war party were leaving to fight the Shawnee, and the little boy surprised everyone by attempting to drag a canoe down to the water in an attempt to follow the warriors. The people laughed and shouted “tsi-yu gansi-ni!” which meant, “the canoe he is dragging it!” His father looked back and smiled. From that day, the boy was called Dragging Canoe.
people, named Fort Loudoun, and he saw in just a few years how the British became their enemies too. Dragging Canoe helped Oconostota lay siege to the fort, and in the attack on the whites when they left.
He grew into a young man, in the shadow of the man his father had become, and in the shadow of the greatest of all warriors, the great Oconostota. Like his father he was never tall, but was later described as “portly” and “fierce”. He would eventually become one of Oconostota’s warriors, and fought many times against other Indian tribes, as well as the French. He was about 30 years old with a wife and son when the British built a fort among his
He realized his father and Oconostota, whom he had always looked up to, had grown old and afraid of the whites, and he grew angry until he could no longer hold back. During the talks, he stood up and addressed the whole council, saying: “Whole Indian nations have melted away like snowballs in the sun before the white man’s advance. They leave scarcely a name... We had hoped that the white men would not travel beyond the mountains…
FARRAGUT LIFE WINTER/HOLIDAY 2017
Historically, there is no mention of him until the Spring of 1774. It was at Sycamore Shoals on the Watauga River that Dragging Canoe, and hundreds of other Cherokee, accompanied Attakullakulla and Oconostota to meet with a white man named William Henderson and a hunter named Daniel Boone. Henderson offered several wagons full of merchandise to trade for Cherokee hunting lands called the Middle Ground and Ken-tukee. For several days Attakullakulla, Oconostota, and Henderson’s men talked. And Dragging Canoe could not believe his ears when he heard the old ones agreeing to the sale.
but they have passed the mountains, and have settled upon Cherokee land. They wish to make this treaty. But they will only come on more of our lands…until the whole country, which the Cherokees and their fathers have so long occupied, will be demanded, and the remnant of Ani-Yunwiya, THE REAL PEOPLE, , will be forced to seek refuge in some distant wilderness. … Such treaties may be alright for men who are too old to hunt or fight. As for me, I have my young warriors about me. We will have our lands.” But the old ones agreed to the sale anyway, further angering Dragging Canoe and many of the other warriors who now looked to him for leadership. Before leaving the council, he addressed Henderson and Boone with a veiled threat: “You have bought a good land in Kentukee. But you will find it a Dark and Bloody Ground.” Within a year, the British were at war with the colonists, who called themselves American. Under the influence of British agents, Canoe was part of planning a major offensive against the Americans in Carter Valley, the Holston Settlements, and the Watauga Settlements in July 1776. But a group of traders, led by

Isaac Thomas who had been warned by Dragging canoe’s cousin, Nancy Ward, left secretly and were able to warn the whites. While approaching Long Island (present day Kingsport), 2 white women, sisters, were seen bathing in the river. Dragging Canoe’s men wanted to kill them, he refused to allow it, saying “They are only women”. While a fierce warrior, Canoe rarely allowed the killing, or even abuse, of women. He led the attack on the fort at the island, but was shot through the thighs and carried from the field. He recovered, and was soon making a plea for all the Cherokees to rise up against the Americans settling on their lands, but still his father and the Great Warrior refused. Disgusted, Dragging Canoe said he would leave and fight the whites himself. He took his followers south to Chickamauga Creek (present Brainerd area of Chattanooga), and established new towns called the Chickamauga Cherokee Towns. He was further joined by Creeks and other frontier outlaws. Seeing this force gathering against the American “Overmountain Men”, British Agent Alexander Cameron
sent additional guns and powder to the Chickamauga Towns. By January 1777, Canoe’s war parties had resumed operating against the settlers in Watauga and Holston. The terrified whites called him “Draggin’ Canoe”, and sometimes shortened it to “the Dragon”. In October 1780, Canoe was part of an attack on the Watauga Settlements but was defeated by a small force led by John Sevier, just returned from Kings Mountain, at Boyds Creek, near present day Pigeon Forge. Sevier and Colonel William Campbell continued south, raiding the Overhill Towns, Hiwassee Old Town, and Chickamauga Town. Canoe took his people farther downriver to establish new towns at Nickajack and Running Water. In April 1781, a large force of Indians believed to include Canoe attacked the fort of James Robertson at the Cumberland River bluff (present 1st Street and Church St in Nashville) where an all-day fight occurred, known historically as the “Battle of the Bluffs”. The Chickamaugas led by Canoe actively waylayed stray settlers and
were a constant concern to the forts and stations in the Cumberland area. His father was dead by now, and in the Spring of 1782, Oconostota passed away. More Cherokees defect to the Chickamaugas, and Canoe became the “Great Warrior” of the Cherokee. He was now about 50 years of age. For the next decade, he continued to fight the whites, attempting to run them off the lands he believed still belonged to his people. But the warrior life took its toll. In March 1792, now about 60 years old, he fell into his bed, exhausted after an allnight war dance at Running Water. The next morning he was found there, dead. The last of the great warriors was gone. Two years later, in the summer of 1794, the Chickamauga towns were destroyed by men from the Cumberland settlements. Without Dragging Canoe, the last of the old Cherokee power was gone. Within 40 years, so was all the Cherokee, leaving only their memories, and the bones of Dragging Canoe and the rest of their ancestors behind. Joe D. NOVEMBER IS NATIONAL ADOPTION AWARENESS MONTH
Hats Off To Hatter How This Extraordinary Woman is Making a Difference in the Lives of Foster Kids. Written By Sydnee Brashears
A
doption is an often overlooked but important step in taking care of the least of these. Whether adopted at birth or late in life, finding a steady home is an incredibly vital step to the well-being of the child’s mental and physical health. When the original home can be improved, and the child or teen can stay in their own area, their own school, that is considered the best case scenario. It’s this scenario that Michelle Hatter works hard to achieve: that the home can be returned to, or that they can find an area home where the child will be safe and loved until they’re ready to make their mark in the world. Michelle works for and is in charge of Camelot Care Center, Inc. As a private care industry, Camelot Care Center works with the Department of Children’s Services by taking care of the children who come into DCS custody in the state of Tennessee. Children and teens who go into DCS custody have been put there on a hopefully temporary hold while the home is being evaluated for abuse, neglect, or is in some other way unfit for the child to stay in. Camelot Care Center helps find those safe homes for the children to wait in. 50
FARRAGUT LIFE WINTER/HOLIDAY 2017
The branch owned by Michelle Hatter covers Knoxville and the thirteen surrounding counties, but the Camelot Care name stretches across all of Tennessee. They are known for their excellent customer service, support, training, and home studies. Doing all that she can to ensure the family is ready for the responsibility of raising a child, Michelle sees 1 in 4 children adopted by foster families. The other ~75% she hopes to restore to their former homes. The Camelot Care Center doesn’t just let the child loose with an inexperienced family, however. All families receive complimentary training according to a child’s level of trauma. These trauma levels come in stages- 1, 2, and 3. Three is the highest, and needs the most care and attention. After and during training the potential parents, they provide therapy and emotional support for the child or teenager due to the trauma of being taken away from their home. And, if the child or teen is returned home, they negotiate where the foster family can come visit for birthdays or other special occasions. A child’s
average stay is about a year, and 24% are adopted within that time. Michelle’s biggest goal, however, is to return the child to their biological parents. After that, the foster family can maintain a mentoring relationship with the minor. There is another option called a respite home for foster parents who do not wish to do so full-time. These stays are typically 1-10 days. “The biggest thing we need right now are homes in the Monroe County.” Michelle Hatter says. “When children are removed, our idea is that we want kids to stay in community they know. The school they know.” Unfortunately, there are not enough homes in the Loudon and Monroe area to fulfill the needs of the children and teenagers in their program. While the ages of the children go anywhere from newborn to 18, the biggest age group needed to be adopted are the kids aged 5-12. The second largest need is teenagers. Michelle remarked that they’re easier to get along with because of their communication skills, but it’s harder to find someone willing to foster or adopt them. “It’s so sad to see them age out of the system.” “My husband and I are in the process of adopting a dog.” Michelle said, “And it’s so sad to see them in their cages. They’re waiting for someone to love them. It reminded me of the kids. They’ve been removed from their homes because their parents were neglectful or abusive. They’re waiting for a home.”
Kids in the foster system often lose confidence in their own abilities. They blame themselves for the neglect and abuse they’ve suffered. They believe they’ll never amount to anything if even their parents didn’t love them. Michelle Hatter has a small trick to helping them realize that they aren’t broken just because their home has been. She keeps a list of famous people who’ve been adopted so they can see that the circumstances they find themselves in do not have to define who they are. Among the list is my favorite writer, Maya Angelou, and household names such as John Lennon, Faith Hill, Steve Jobs, and Eddie Murphy. This encourages the children to thrive despite the hardships they face.

Our mission is to strengthen and support our community by promoting business growth, education and economic development. In addition to hosting over 40 weekly networking events and an average of 30 ribbon cuttings each year, the Farragut West Knox Chamber of Commerce (FWKCC) provides member businesses and the community with the opportunity to participate in multiple special events in order to further unite businesses, professional people and business owners in an effort to expand the economy of an area. The FWKCC is a not-for-profit organization funded by its membership and events, managed by a professional staff and led by a core group of volunteers. The Board of Directors is made up of a broad spectrum of volunteers of corporate and community leaders from throughout Farragut and West Knoxville.
BREAKFAST SPEAKER SERIES The Breakfast Speaker Series are events held multiple times a year featuring speakers presenting on informative and entertaining topics relevant to the local community. Past guests have included mayors, coaches, radio personalities, Knox County attorneys and many more. The event is sponsored on several levels and tickets are available to the members and public. 22 YEARS AND RUNNING The Chamber hosted its 22nd annual Fall 5K Run, 1-Mile Walk and Pet Parade on Oct. 8th of this year! This annual event involves approximately 200 runners/walkers and dozens of volunteers. The race is USATFsanctioned and managed by the FWKCC and
Total Race Solutions, and has even attracted out of state competitors. Sponsorship opportunities include community sponsors, sleeve sponsors, and presenting sponsors. Multiple businesses are represented via participation, sponsorship, donations of food or door prizes. A portion of the registrations are donated to local charities and this year’s recipient was Mountain Service Dogs, a non-profit that trains and donates mobilityassistance dogs to wounded veterans.
USHERING IN THE HOLIDAYS Each year in early December, the Chamber has welcomed the season with a Holiday Open House to say “Thank you” to all of the member businesses that support the Chamber and to provide one last chance to get together before the new year. This exciting occasion includes sampling of favorite foods from member restaurants and caterers, chair massages from local spas, and live performances by local students. On average, over 30 businesses participate in this fun and festive opportunity, providing them with substantial advertising via email, social media, web and print.

Looking Back FARRAGUT
PRESIDENT REAGAN VISITS FARRAGUT HIGH SCHOOL “It was better than I’d thought it be. He’s a real nice guy. He’s like you knew him when you first seen him.” That’s what one high school student said moments after President Ronald Reagan visited his classroom at Farragut High School back in 1983. The President’s visit was part of the reading of the “National Commission on Excellence in Education Report” at Farragut High School. Reagan visited a Knox County School because he said he wanted to learn. “Your state legislators, your governor, your teachers are calling national attention to the sorry state of America’s educational system,” said President Reagan before a packed hours. “It’s a system that was once the finest in all the world, so I’ve come here to listen and learn. Farragut High School & the Knox County School System are shining examples of that.” President Reagan visited East Tennessee several times during his presidency including when he took part in opening ceremonies for the 1982 World’s Fair in Knoxville. Regardless, President Reagan’s time at Farragut High School is still a vivid memory in the minds of students who experienced his visit. WBIR - Knoxville, TN Photos: Farragut Folklife Museum
