But there’s more. This issue not only lists all the restaurants participating, but also includes a few interesting articles and some dishes for you home chefs to try out (starting on page 17). Mike’s Deli, Seis Vecinos and Moss Café provided a few of their secret recipes like Salvadoran Pupusas, Chef Dave Greco’s famous Eggplant Parmigiana and Emily’s Scottish Drop Scones. We’ve even included the borough’s signature Bronx Salad.
Special thanks goes to Isha Gutierrez-Sumner for her insights on the Garifuna culture, a thriving Bronx community as well as providing us with her famous Masapan Hudutu recipe (a staple dish of the Garifuna people). Garifunas Adding Color To The Bronx!

providing help in the form of legal information on immigration status, and health and housing services. In the cold months they come for donations of warm clothes, and year-round, they come for that familiar community and a hot, familiar meal. “Wideha” That’s how we make it happen in the BX.
very Friday, I travel back to the coastal village of my youth in Honduras with our familiar native Garifuna language where pleasantries like “idabiña” or “gundatina narihinibu” (how are you? It’s good to see you) abound. San Juan Tela, located in the northern Caribbean coast, has always survived and flourished on the strength of its community, where we help and serve one another. In Garifuna, it’s called “Wideha,” translated as “We’re gonna help!”
In the current political and social climate in America, few places have the ability and willingness to service diverse immigrant communities like the Bronx. Since I arrived 30 years ago, hundreds of thousands of Garinagu have migrated from villages like mine in Honduras, Belize, Guatemala, and Nicaragua, in search of a better quality of life, more stability, safety and community. The vast majority of my people have sought refuge in community of The Bronx.
These coastal journeys back home have none of the warm sand; the abundant and ripe coconut trees don’t sway from that familiar cool breeze; boats are not coming in with Garifuna fisherman hauling in their catch from the morning’s work; there are no sounds of women laughing and singing in tandem as they do chores like laundry or their communal cooking.
Ours is a culture, rich in tradition, that finds expression in our language, music, dance, and most joyfully, in our cuisine. In my soon-to-be a self-published Garifuna cookbook, “Weiga, which means “Let’s Eat!” I talk about what I call our 4 Big Cs: Coconut, Cassava, Community and Continuity. I have learned great lessons in

My team has cooked for the late Anthony Bourdain’s “Parts Unknown,” for Christopher Kimball’s Milk Street Magazine, where we shared one of our staple recipes for coconut flour tortillas. We've also collaborated with Bizarre Foods' Andrew Zimmern. The overly enthusiastic responses have served to further my

determination to preserve and share the Garifuna experience. In the spirit of that Bronx communal and individual ethos, I dream of having a kitchen exactly like the one we used in Gracie Mansion, dream of serving breakfast, lunch, and dinner in my own “Weiga, Let’s Eat!” restaurant in the BX, and dream of having cooking classes for Garifuna and non-Garifuna alike. Wideha has allowed our people from the coastal villages of Honduras to survive and flourish to this day, in the heartbeat of The Bronx, where communities service one another.

In the past two years “Weiga, Let’s Eat!” has branched out to include catering, with the consistent mission of preserving our food culture to service those in need of connecting with home. Our team includes my mother, sister and cousins, as well as skilled cooks and bakers who are friends from villages back home. We have served 1,000 meals in a day to an evangelical Men’s Garifuna conference, participated in Immigrant Cultural Week at Gracie Mansion, where we shared our famous Hudutu with Mayor Bill De Blasio and other international dignitaries. There have been Garifuna tasting dinners in downtown Manhattan and East and West Harlem for upwards of 75 people, and we’ve joyously done small intimate dinners catered to celebrate birthdays and retirements. “Weiga, Let’s Eat!” is all about “wideha.”

community development amongst my people, and to maintain our cultural continuity I have dedicated myself in the past few years to creating a comprehensive Garifuna cookbook that provides context and delves into our culture, shares vibrant pictures, and most importantly, shares our delicious recipes!

A United Nations of Bronx Flavors

he Bronx is one of the most diverse boroughs in the city of New York. Of course there is no shortage of Puerto Rican, Dominican and Mexican restaurants considering the borough’s overall Latino population is over 50%. But The Bronx is also home to African, Middle Eastern and Asian communities, and the cuisine is evidence of it. In the Van Nest section one can enjoy a delicious Yemeni meal and then choose from one of four markets to buy exotic nuts, dips, cheeses and much more from North Africa and the Middle East. One such place is Al-Meraj, located on 1903 White Plains Road. YUMMY TIP: An all-time favorite is the fresh ground coffee with cardamom; the counterman will grind it on the spot for you.

The Bronx has, not one, but two Cambodian markets both within walking distance of each other. Phnom Penh-Nha Trang is located at 2639 Jerome Avenue and Battambang Market at 229 East Kingsbridge Road. You'll see products from Thailand, Vietnam, China and the Philippines. YUMMY TIP: Look for home-made specialties, including delicious banana fritters, red bean pudding and sticky rice, made from Cambodian recipes. The owners are always willing to help so don’t hesitate to ask. This borough also has some of the best Bangladeshi food around. Many markets and restaurants are clustered on or near Starling Avenue in the Parkchester section of The Bronx. A popular favorite is Bangla Garden at 1864 Westchester Avenue. The street level restaurant has just a handful of tables, but you can go downstairs to eat. Vegetarians will love the menu. Right next door is Bangla Town Supermarket at 1860 Westchester Avenue, with a great selection of products from South Asia and other specialties from around the world. MASAPAN HUDUTU
PREPARING MASHED BREADFRUIT 1. Take 1 large green breadfruit, peeled and cut into medium chunky pieces. Make sure to cut out the dense middle part including the porous. 2. In a medium size pot add water, add the chunky medium pieces of breadfruit to the pot, cover and cook for approximately 15 to 20 minutes or until soft. 3. Mash and put aside.
(serves 4–6; prep time: 1 hr.)
Hudutu is a staple dish of the Garifuna people. A variation of it made with breadfruit is pictured on page 4. Traditionally Hudutu is made with a mix of green and yellow plantains.
PREPARING THE FISH 1. Add the juice of one lime and 1 tablespoon vinegar to a bowl of water. Use the solution to thoroughly rinse the fish. 2. Place the fish on a flat surface, ensuring it hasn’t retained water. 3. Season generously with adobo, salt and pepper and marinate for 10 minutes. 4. On a stove in a mid-sized skillet on medium heat place ½ cup of coconut oil. and fry fish for about 1 1/2 to 2 minutes on each side or until brown, working in batches if necessary. Set aside.
INGREDIENTS: 1 large green breadfruit 1 tbsp sea salt 3 lbs Kingfish (or any firm-fleshed white fish) 1 lime 1 tbsp vinegar 3 tbsp adobo seasoning ¼ cup coconut oil (or substitute canola oil) 13.5 ounce cans coconut milk 3 cups of water ½ green pepper, deseeded and chopped 15 basil leaves 6 culantro leaves (can substitute 6 springs of cilantro) 8 cloves garlic, crushed 2 chicken bouillon cubes ½ tsp of black pepper 1 tsp of Dash seasoning blend 2 tsps of cumin 1 lb medium-sized shrimp
PREPARING THE COCONUT SOUP 1. Add shrimp, and simmer for about two minutes until pre heat coconut milk and water in a large pot over medium heat. 2. As the mixture begins to boil, add green peppers, basil, garlic, and culantro. 3. Bring down the heat to a simmer and season soup with chicken bouillons, adobo, black pepper, Dash seasoning blend, and cumin. 4. When the vegetables have softened and the flavors have melded together, add the fried fish back into the pot and cook for about three minutes. PRESENTATION Ladle the coconut soup into bowls, and enjoy with a side of mashed breadfruit. Add lime juice to taste. PAGE 17

Since 2009, the Robert Wood Johnson Foundation County Health Ranking Report has ranked The Bronx 62 out of New York State’s 62 counties in health outcomes. In response to this, several groups have come together with Bronx residents to build a collaborative effort to improve the health of the borough. The Bronx Salad was created as a way to help promote #not62, a partnership that spans across multiple sectors in The Bronx and whose mission is to address the social and economic conditions that impact the overall quality of life of its citizens..
DIRECTIONS 1. Wash and chop vegetables 2. Toss with lettuce of your choice 3. Top with sliced avocado, mango, and plantain chips 4. Combine vinegar, lime juice, orange juice, mustard, Bronx hot sauce, and honey in a bowl and whisk 5. Season to taste with salt and pepper 6. Whisk in olive oil 7. Check seasoning and adjust if necessary
