Luxurious Health and Wellbeing in the Historic Heart of Perth

Many aspects of life change over the years but some reassuringly remain constant. Hotels… for example. As Irish playwright George Bernard Shaw once observed, “The great advantage of a hotel is that it is a refuge from home life.” Today his words remain just as pertinent in a 21st century context. Our homes are, in many ways also a refuge from the everyday pressures of modern life, but it is invigorating to escape occasionally and savour new settings and experiences. Especially so when they are embraced by luxurious touches – like those at the newly opened Westin Perth Hotel.

The hotel was designed in keeping with The Westin’s philosophy of health and wellbeing, “ensuring every guest leaves feeling better than when they arrived”. To achieve that feel-good factor – and offer a relaxing getaway that appeals to both business and leisure travellers – project developer BGC Development sought out the international hotel chain as the anchor tenant within a stunning city destination, Hibernian Place. Located in the historic East End of Perth’s CBD, Hibernian Place features a carefully curated mix of tenancies that all enjoy close proximity to the picturesque Swan River, the new Perth Stadium and mix of corporate offices, shopping, entertainment and attractions.

Fronting tree-lined Murray Street and highlighted by sweeping views across the CBD to the Perth hills, the 368-room Westin Perth Hotel is described as “offering its own unique brand of five-star luxury not previously seen in Western Australia”. The hotel includes 24 luxuriously furnished suites, a signature restaurant, Garum, by celebrated chef Guy Grossi, a high-end spa run by Bodhi J Wellness, an outdoor infinity swimming pool and largescale fitness centre.

The world-class establishment also provides meeting and event planners with over 2,300 square metres of meeting space including an 800 square metre column-free grand ballroom and 340 square metres of divisible function facilities.

Meticulous Planning and Direction by Project Manager BGC Development were responsible for overseeing the procurement of the site, including negotiating key commercial terms with State Government agencies representing the vendor and engagement of the hotel operator, Marriott. The team efficiently managed the design approvals process and obtained all statutory approvals required for the project to proceed, before embarking on the engagement and management of the lead architect, sub-consultants and contractor.

This management involved consistent reporting to key project stakeholders, including the City of Perth, Tourism WA, DFES, Heritage Council WA, LandCorp and Marriott.

Their internal design and development consultancy and management team contributed a wide range of solutions including procurement services for Furniture, Fixtures and Equipment (FF&E) and Operating Supplies & Equipment (OS&E). This included

reviewing design intent and implementing practically against budget, schedule and durability; value engineering; reviewing brand standards and establishing project specific strategy (interpreting the strategy to best suit the local market); coordinating installation, defecting and asset registers; coordination of mock-up room works; and facilitating operator sign off.

Additionally, their turnkey solution included a carefully curated food and beverage concept featuring best in class local operators, following a thorough site analysis of the operational logistics required for a successful opening. Equally importantly, the team delivered the project in accordance with contractual dates.

Recapturing the Grandeur of a Venerable Era The Westin Perth Hotel is the jewel in the Hibernian Place crown, “the cornerstone of a new vision for Perth’s East End”. According to the

The historic Hibernian Hall building remains a key feature within the overall Hibernian Place precinct planning. It was designed by prominent Western Australian architects Cavanagh & Cavanagh and opened in 1902 with a grand ball. Hibernian Hall was built by contractor D. Hehir in the Federation Free Classical Style, and was originally developed as a social club to serve the Irish community of Western Australia.

By 1922, Hibernian Hall had been renamed New Scottish Hall and then Cathedral Hall from 1930, as part of St. Mary’s Cathedral, before being purchased in 1947 for conversion into a chest clinic. Today, it continues to make a strong visual contribution to the collection of predominantly late 19th century and early to mid 20th century heritage places in the East End precinct.

From Fire Station to Five-star Luxury

Located at the east end of the city, The Westin Perth Hotel boasts the 75-seat Haven Lounge and signature 120-seat restaurant Garum.

Melbourne-based design firm BAR Studio designed all of the hotel’s 368 guest rooms – including ten Club Suites, eight Westin Suites, five Executive Suites and one Presidential suite.

Caterlink worked with HTS Kitchen Consultancy, the builder BPI and major partner Moffat, over a three-year period to ensure the $3.2 million project met all design, equipment and operational requirements.

Hibernian Place Hibernian Place and the wider precinct is home to The Westin, Offshoot Coffee Roastery by Mary Street Bakery, Arthur & Co. by Graham Arthur, Huxtaburger from Melbourne and rooftop bar Hadiqa by Andy Freeman.

It features a 2000sqm central plaza offering a community open space purpose-built for people to come and relax. A rooftop garden, water feature, mature trees, manicured lawns, Wi-Fi hotspots, and comfortable timber and stone furniture make it the perfect place to go, at any time of the day.

Garum Westin Perth’s signature restaurant, Garum is headed up by acclaimed Melbourne chef, Guy Rossi, and is his first restaurant outside of Victoria. This Roman osteria offers guests a contemporary Roman dining experience in the stunning heritage – listed Hibernian Hall.

Due to the high-profile status of this site, Caterlink supplied and installed an open kitchen using the vitreous enameled black cooking line-up from the Moffat Waldorf Bold range manufactured in Christchurch, New Zealand. This equipment is not only durable and reliable, but also offers a more sophisticated look than traditional installations. Given such limited kitchen space, the Convotherm MINI combination oven, which offers high-power at only 515mm wide, was also used during the kitchen fit-out.

The Convention Centre The hotel boasts 2,300 square meters of event space across nine venues, to cater for its business and conference clientele – including an 800 square metre pillar-less grand ballroom.

Caterlink commercial fit-out team worked with Moffat offering a kitchen that utilizes plate regeneration through the German designed and manufactured Convotherm C4, allowing 400 fully plated meals to be heated and served as quickly as 30 minutes.

Hibernian Hall Hibernian Hall was originally developed as a social club to serve the Irish community of Western Australia. Built in the Federation Free Classical Style, it was opened on the 26th of June 1902, with a grand ball. After several changes of function and name, Hibernian Hall was ready for refurbishment as part of the Westin Hotel complex, but its heritage listing made for a delicate operation. Upgrading this iconic landmark, Caterlink had to coordinate the old with the new, balancing old features with the modern vibe.
