“What exactly is a concierge, Jean?” Although more and more people are becoming familiar with the term ‘concierge’, very few know where this customer service based profession originated. The word “concierge’ evolves from the French comte Des Cierges, the ‘keeper of the candle’ a term that referred to the servant who attended to the whims of the visiting noblemen at medieval castles.

Christina’s Kalkbay lamb casserole Serves 10 – well depending on the size of your leg of lamb!


“Without a doubt one of the best happy meals I have ever had! I hope you all love it as much as my family does…” 1.6 kg leg of lamb, oven roasted, deboned and sliced 50 ml butter 50 ml extra virgin olive oil 3 aubergines, sliced and fried in extra virgin olive oil 8 ripe tomatoes, peeled 6 cloves garlic, peeled and chopped 1 T dried basil 6 leeks, sliced into pennies and washed well 500 gr feta cheese, crumbled 250 gr black olives, pipped 550 ml thick, creamy béchamel, freshly made* 1 egg 1 T organum, freshly chopped or dried Pre-heat the oven to 180 degrees/Gas 4. Butter a large ovenproof casserole. Heat the olive oil in a saucepan and sauté the tomatoes, basil, garlic as well as the leeks in the oil over medium heat until it has been well cooked and all the flavours are properly infused. Keep aside. In the casserole, layer first the sliced lamb. Follow with a layer of aubergine with a layer of the tomato mixture on top. Sprinkle with some of the crumbled feta and organum and repeat, starting again with the lamb. Try to finish with a layer of aubergine. Add a layer of olives. whisk the egg into the béchamel before pouring the sauce over and through the meat and vegetable dish. Place the casserole in the heated oven and bake, uncovered, for 40 minutes. Remove from the oven and garnish with the freshly chopped organum. Serve immediately with basmati and a green salad * I actually prefer using the meat juices and if needed some stock to rather make a creamy veloute. http://www.goodfoodco.co.za/?p=328
