Yellowstone History, Trivia & Fun Facts • Yellowstone is the WORLD’S first National Park. • President Ulysses S. Grant declared Yellowstone a National Park on March 1, 1872. • Yellowstone is made up of 2.2 million acres. That is larger than Rhode Island and Delaware combined. • There are about 290 waterfalls in the park. The Lower Falls, shown in our Grand Canyon of the Yellowstone souvenir, are an impressive 308 ft drop. • Old Faithful, a world-famous geyser, erupts every 92 minutes on average. • The park is in 3 States: 96% in Wyoming, 3% in Montana, & 1% in Idaho • More than half the world’s active geysers are found here (over 500). • The park has 5 entrances and 466 miles of roads.

Enjoy these with your tea

3. Add the cashews to the processor with the wet ingredients. Combine thoroughly. If mixture is too wet add coconut. If it is too dry, add more sweetener and blend a bit more.

Raw Lemon Macaroons This cookie is so versatile. It can be an on-the-go snack, after dinner dessert, and is a great light crust for fruit tartlets. I just love the lemon tanginess of these winning, plant-based, low cal treats. Makes 15 macaroons Ingredients * 1/2 cup raw cashews * 2 cups dried, shredded coconut * 3 tbsp fresh lemon zest * 1/2 tsp sea salt * 1/4 cup agave, yacon or honey

Instructions 1. Place the cashews in the bowl of a food processor fitted with the metal blade and process to a fine meal. Transfer the mixture to a bowl. 2. Place the coconut, lemon zest, honey and salt in the food processor. Process until the mixture is fully blended and begins to form a ball.

Forming the Macaroons 1. Using a 1 to 2 ounce ice cream scoop or melon ball scoop, scoop the mixture and press it with the palm of your hand. Release and place the macaroon on a tray. Note: Transfer to the refrigerator to chill before serving. * Add Matcha Powder to some of the mixture to make Matcha Lemon Macaroons.

As the pandemic was spreading around the world, Grace and I were brainstorming new ideas and ways to do business. Grace is a wedding photographer, who’s lost a lot of her 2020 shoots. But, never fear, her creativity kicked in and she started “doodling” and writing personal letters to create an income for herself. As the idea of subscription boxes surfaced in my mind, I immediately asked Grace if she wanted to “doodle up” some National park postcards and stickers. I hope you enjoy her “doodle” work as much as I do. There will be a new postcard in every future box!
