We visit Five Sails restaurant, the west coast home of Executive Chef Pascal Georges, to taste Paris-based Kaviari’ s Prestige Osciètre caviar.

When General Manager Christophe Chabre and Executive Chef Pascal Georges introduce something from their native France, west coast gourmands take notice. Stepping in front of sweeping harbour and mountain views, Christophe began setting out the procession of garnishes, blini and caviar which make Five Sails restaurant a destination for locals and visitors alike. Served on Kaviari’s signature chilled oak pedestal and accompanied by delicate blini triangles, the classic caviar service is offered with sevruga, ossetra or beluga caviar from Paris-based caviar house, Kaviari. Sourced from Bulgaria, the Prestige Osciètre glistens dark olive-brown, with a delicate briny overture and the gentle, mildly nutty finish for which Russian Sturgeon roe is known. The personal preference of GM Christophe, we likewise recommend pairing the Prestige Osciètre with a slightly savoury palate of red onions and chives, which accentuate the milder piscine notes for which ossetra caviar is prized. Whether celebrating a special occasion, or merely seeking to indulge, there is no better way than with a few ounces of your favourite caviar.
