Here at The Conscience Collective we’re mad about beautiful products that truly make a difference and have put together a painstakingly edited collection of fabulous gifts to give (and get!) this Christmas, all with careful consideration of their social and environmental impact.

That’s why we begin our Conscious Gift Guide with insight into what the holiday means to some of our favourite influential women (p.3-7) who have made a significant impact on us and the way ethical living has evolved, and feature small businesses, like the Fair Shop (p.33-34), that support social enterprises and local artisans through retail.

We believe in the power of shopping. Whilst some may balk at an “ethical” blog promoting such a superficial past time we have seen firsthand the difference micro enterprise and social entrepreneurship can make to the lives of those less fortunate than us. To put things in perspective, if every American made just one Fair Trade purchase a year, it would lift one million families out of poverty. We have made it our mission to promote the many ethical fashion and lifestyles brands and influential people who champion sustainable living. This magazine is a tribute to their commitment to in-

I try to inspire shoppers in the U.K. to buy beautifully made gifts and clothes that will make them proud to support some of the world’s poorest producers.

I nearly always give at least one Oxfam unwrapped gift at Christmas. Because I’ve spent a lot of time teaching, this is one I might well give - Long Life Learning. I’m quite tempted by the allotment one and the manure one too!

All of the gifts I have purchased so far have been antiques or Made in Britain as I try to ensure that all of my Christmas shopping is as ethical as possible. A great place to shop is Handmade in Britain in the Christmas Arcade at Somerset House where I bought one of Emma Burton’s beautiful silk scarves.

A Christmas gift which I eventually succumbed to buying for myself was an incredible pair of spiral clip-on earrings from Hollywood at the Clerkenwell Vintage Fair. Kim: Notecards made from recycled paper. My sister loves to write encouraging notes to her friends so I wanted to get her some notecards that were sustainably made.

Kim: 31Bits “The Gatsby”- look at the picture, simply beautiful! Plus, i’m all about empowering women and have lots of respect for 31Bits!

Sharon: Scarves and hats knitted from local and fair trade yarn, because it’s a great opportunity to support artisans and give a gift that I created myself.

Sharon: A good vegan cookbook. I’ve been experimenting with a plant based diet, but still struggle a little with creativity and coming up with great dishes on the fly.

CANDY CANE VANILLA CUPCAKES - MAKES 12 CUPCAKES

Heat the oven to 175C (350F). Line a baking tray or a 12-cup cupcake pan with paper liners of your choice. Chop the Chocolate in to small pieces. In a bowl, sift together flour, baking powder, and salt. Beat butter and sugar until light and fluffy with an electrical mixer. Add one egg at a time, beat the mixture well after each egg. Once all eggs are beaten in, add the vanilla extract and then add the dry ingredients, alternating with the milk. Add the chocolate pieces and mix until well combined. Divide the batter evenly between the cupcake paper liners. Bake for about 17-20 minutes (depending on the size of cupcake paper liners), until the middle comes out clean when tested with a toothpick. Let the cupcakes cool on a wire rack (if you are using a cupcake pan, let it rest 5-10 minutes in the pan before cooling them on the wire rack).

FROSTING

DOUGH 3 dl (approx.1 1/3 cups) flour 1,5 dl (1/3 cup) sugar 1 1/2 tsp baking powder 125g butter 3 large eggs 1 tsp vanilla extract 3/4dl (approx. 1/3 cup) milk 100 grams Hershey’s candy cane white chocolate

FROSTING 4 large egg whites 200 gram sugar 250 grams butter 2 tsp vanilla extract TOPPING 100 grams Hershey’s candy cane white chocolate 12 mini candy canes

Put the egg whites and sugar in a clean and heat proof bowl. Put the bowl in a double boiler, the water should be simmering. Whisk sugar and eggs constantly. The mixture should come up to around 65 degrees celcius (140-150 Degrees Farenheit). Remove from heat and whip with an electrical mixer (stand mixer) until the mixture is white, fluffy and has cooled down (takes 10-15 minutes). Start adding the butter, piece by piece. Whip until it’s smooth and thick. If its too loose, just put in the fridge for a couple of minutes and whip again. If the mixture looks like its not mixing together properly just keep whipping. Add vanilla extract and whip until its smooth. Pipe the cupcakes onces they have cooled down. Use a cheese slicer to make the chocolate decoration and chop the rest of the chocolate in small pieces to sprinkle on the frosting. Let’s not forget to put the mini candy canes on the top!

ROASTED PEARS WITH CHEESE & NUTS - MAKES 6 3 ripe red pears Cheeses of your choice (blue cheese, camembert, brie, etc.) 1/2 - 1 cup of pistachios or walnuts 50 grams butter 2 tbsp Rum (we used 1919 Angostura Rum) 3 tbsp sugar Olive oil Preheat the oven to 400°F. Wash and cut the pears in half, remove the seeds. With a spoon dig a hole in the middle of each half pear, so you have space for the cheese. Brush the pears with a little olive oil. Bake in the oven for approx. 20 minutes. While the pears are cooling, make the caramelized nuts. Heat up a skillet and add the butter and rum. Once it’s simmers add the sugar and also the nuts, stir constantly. Lower the heat and once the sugar has dissolved and it has a nice color let the mixture cool on parchment paper. SERVING Cut the cheese in slices and add 2-3 slices on each pear and chop the caramelized nuts and sprinkle on top. Makes a nice side dish or as an appetizer on the Christmas table. Serve the rest of the cheese with the dish and also add some crackers of your choice. 32

DOUGH Makes 1 wreath and 15-20 buns

50 g 14 dl 0,5 tsp 1 dl 2 tsk 150 g

yeast, fresh or dry flour (840 g) salt sugar (0,45cup) cardamom, grounded butter, room temperature

FILLING 200 g butter, room temperature 200 g white sugar 10 g vanilla sugar 20 g cinnamon, grounded 10 g cardamom, grounded TOPPING Pearl sugar Sliced almonds

BAKING Mix flour, salt, sugar and cardamom in a bowl. Heat the milk to finger warmth, 37 ° (40 ° if you are using dry yest). Crumble the fresh yeast into a big bowl. Pour the milk over the yeast and stir until it dissolves (if you are using dry yeast, skip this step and just mix the dry yeast with the flour and add the milk to the flour mix). Add small pieces of the butter at a time, and work it in to the dough. Knead the dough well, about 5 minutes in a stand mixer or 10 minutes by hand. Once it’s a smooth dough, cover it with a fresh kitchen towel and let it rise for about 40-45 minutes (make sure it stands in a place where’s there’s no breeze). While the dough is rising, mix all the ingredients for the filling in a bowl. Mix it well. Divide the dough into two pieces and roll the pieces out into rectangles, about 30 x 40 cm, on a floured surface. Spread the filling equally amongst the two rectangles (make sure to spread all the way out to the ends). BUNS: Fold the dough once so that the shape becomes more like a square. Cut the dough into strips about 2 cm wide. Twist the strips and then make a knot out of them. Put the buns on a baking sheet covered with parchment paper. WREATH: Roll the the dough into a long narrow roll. Put the roll as a circle with seam-side down on a baking sheet lined with parchment paper. Cut slanting cuts along the roll with a scissor and pull the cuts right and left carefully. Let the buns and the wreath rise covered once more, about 40 minutes. Preheat the oven to 225° (approx. 437F) Beat the egg lightly (add a little water to it) and brush the buns and wreath. Sprinkle with the pearl sugar (if you can’t find pearl sugar, regular sugar works fine). Bake the buns in the middle of the oven at 225 ° for 8-10 minutes. Lower the oven to 200 °. Bake the wreath in the lower part of the oven for about 20 minutes (check its underneath to see if its cooked). Cover it with parchment paper if it starts getting too much color. Let buns and wreath cool on a rack.
