Take a taste tour With everything from classic carbonara to sushi on the menus at St David’s, you can pick your destination. No passport required… Japan The Japanese really know how to eat – from steaming bowls of ramen to perfectly formed sushi, it’s always a winner if you want a tasty, and often healthy, meal. At St David’s choose from Wagamama, YO! Sushi and Mount Fuji.

France In France lunch often lasts for hours. We like their attitude! For croque monsieur, boeuf bourguignon, or moules frites, step into Café Rouge. Fancy a crêpe? Try Crêpeaffaire for amazing sweet and savoury options.

Italy You’re spoilt for choice when it comes to Italian food at St David’s. From the pizza favourites Prezzo and Pizza Express to family-run places like Bellini’s Express and the amazing Jamie’s Italian, you are never far away from an Italian welcome.

City centre business lunches can be fun as well as functional if you head to St David’s. We have plenty of spaces that are chic and sophisticated enough for meeting with colleagues or clients, and the food will definitely impress. Head for Prezzo for an upmarket setting and try one of the pasta dishes or salads. If you’re in no rush to get back to the office, go for three courses.

FOR FAMILY FUN When it comes to bringing the family together to celebrate a birthday or another special event, you want somewhere fun, relaxed and welcoming. You’ll find that Chimichanga at St David’s is all three. Viva Mexico We’ve had a crush on market-style Mexican food since Wahaca opened at St David’s – have you tucked into their tacos yet?

T

he oh-so-cool and colourful Wahaca, celebrated for its Mexican market-style food, opened its first Welsh restaurant here at St David’s in winter 2014 to a Mexican wave of appreciation from the city’s foodies. Founded in 2007 by former Masterchef winner Thomasina Miers, and her business partner Mark Selby, Wahaca was intended to reflect the vibrant colours, flavours and buzz of Mexico’s markets, and it did that brilliantly, overturning the ‘TexMex’ stereotype of tequila girls and greasy tortilla chips. People were queuing up for the exceptional guacamole, Chicken Tinga burritos and signature pork pibil tacos. The Cardiff restaurant sits facing John Lewis, with a can’tmiss-it neon sign and outdoor seating for the warmer months. Inside the décor is something pretty special – we love the wall art and the quirky lights. It’s right at the top of our ‘mustvisit’ list for visitors to Cardiff.

We caught up with the friendly, passionate, and very busy Thomasina Miers, founder of Wahaca and fan of all things Mexican I travelled to Mexico “I travelled to Mexico when I was 18 and returned to live there 10 years later, immersing myself in the food, culture and people. I was completely inspired. I couldn’t believe that all there was available in London was Tex Mex, and that led to my desire to open Wahaca. The Cardiff restaurant is our biggest move since we first launched. We always want to open restaurants somewhere where we can be a part of the local community, and Cardiff has been so welcoming. My new favourite dish is our salmon sashimi dish, made with sustainably sourced

Scottish salmon. It’s delicious and fresh, and served raw with crispy onions, avocado and creamy chipotle mayo. Mark and I have put so much of ourselves into Wahaca that it feels very personal. Our guests have come on a journey with us and it’s wonderful to hear positive feedback.”

Jamie’s Italian at St David’s is a foodies’ favourite in Cardiff. Serving up awesome antipasti, pukka pasta and posh chips, it’s perfect for everything from a big celebration to a casual lunch

verybody knows that Jamie Oliver is a passionate man – he’s campaigned for better school lunches, wants us all to learn to cook, and started his Food Revolution to educate children about food and to fight obesity. What you might not know is that he’s incredibly passionate about his first Welsh restaurant too. The celebrity chef told us: “I’m very proud to be here, and we think of it as a foreign country in order to embrace the Welsh produce and language.” “Cardiff’s a fab city – full of history but really developing. The restaurant’s an absolute stunner too with some great eye-catching features including a massive spray-painted Welsh dragon.”

An authentic neighbourhood restaurant When Jamie’s Italian was first conceived, the aim was to recreate what Italians are most proud of - rustic dishes, using recipes that have been tried, tested and loved! Jamie says: “Since I was a teenager I’ve been totally besotted by the love, passion and verve for food, family and

life itself that just about all Italian people have, no matter where they’re from or how rich or poor they might be. Somehow they’ve managed to retain a unique sense of tradition and village spirit.” It’s that village spirit that you’ll find in his St David’s restaurant - a place with a neighbourhood” feel, where people relax, share, and enjoy each other’s company.

Shake Shack

FAST & FABULOUS When Shake Shack opened in late 2015, we chatted about the ethos and the food with culinary director, Mark Rosati

I

n December 2015 we celebrated the opening of Shake Shack here at St David’s. The modern day “roadside” burger joint serves up the most delicious burgers, hot dogs, frozen custard, shakes, beer, wine and more. We sat down with the culinary directory, Mark, to discover more about this amazing American brand and the food we can expect to see on the menu here at their first Welsh restaurant.

“This is our new neighbourhood, so we want to offer something unique.” Eat Guide: Hi Mark, welcome to Wales! Tell us all about Shake Shack. Mark Rosati: Well, what’s unique about Shake Shack is that it’s a community gathering place. It’s the high quality, delicious food, the environment and the staff that bring people together. It’s a place to linger, yet you can get your food fast. We like to describe it as ‘fine casual’ – a fine dining attitude with affordable price points.

dining restaurants and I’d honed my cooking skills in those, then ended up running the shack. My friends thought it may ruin my career! We made a burger using the best ingredients we could get, but it was still affordable – that’s what you get at Shake Shack today. EC: We know you love to add local flavour. Is there any Welsh influence on the Cardiff menu? MR: We’ve added Welsh Cakes from Fabulous Welshcakes to our frozen custard menu. This is our new neighbourhood, so we want to offer something unique. The beers are local too from Celt Experience and Tiny Rebel breweries. EC: What would you order yourself? Assume you’re REALLY hungry. MR: Ha! I like to try lots of things, so first I’d get the ShackBurger – it’s still as delicious as it was the first day we made it. Then I’d have a Shackcago dog and ShackMeister ale. Finally, I’d have to have one of our concretes and the Union Shack is our most famous and popular one – just unbelievably good if you like chocolate.

EC: What makes it different to the fast food restaurants we’re used to? MR: The original Shake Shack was a shack in a park in New York. It was part of a group of fine 10

Carluccio’s

Forever Italian Antonio Carluccio founded Carluccio’s and still works with the brand today. He talks to us about simplicity in cooking and the Italian attitude

S

tep inside our Carluccio’s restaurant and deli and you’ll be surrounded by the smells and flavours of Italy – from juicy olives, to traditional lasagne, and from Sicilian wines to sumptuous tiramisu. It all began with Antonio Carluccio. Born on the south west coast of Italy then brought up in the rural north west, by the time he moved to London in 1975 he had a great knowledge of, passion for, Italian cooking. After running a successful restaurant and deli in the capital, he founded Carluccio’s in 2008, and it’s gone on to become one of the most popular restaurants in the UK - bringing a serving of traditional Italian produce to the British high street. He revealed one of the big secrets of his success to us,

saying: “My cooking is never complicated. My Motto is MOF MOF, which means minimum of fuss, maximum of flavour. My favourite food is food which has taste and is genuine, which is of very good quality and which as much as possible respects its cultural heritage, especially Italian heritage.” For him, it’s the Italians’ attitude to food that sets them apart. “While other nations have

fun eating, the Italian has fun in thinking and imagining it,” he says. “There are 600 shapes of pasta and each can be done as a specialty with a special sauce, special ingredients. Italians want good taste and they’re prepared to use all those wonderful shops. In Napoli especially there were shops selling only pasta, and the pasta was loose, not in packets but in drawers. They really have fun.”

Why we love it: The steaming bowls of ramen are a classic choice for hungry diners, while the innovative menu means there’s always something new to try.

In the heart of the city, Wagamama is a great option for shoppers looking for lunch, or cinema-goers grabbing a bite before catching a film. The refectory-style tables and buzzy atmosphere, modelled on the ramen bars of Japan, make it a great setting for people-watching. The pan-Asian menu is freshly cooked to order and scores top marks for taste, matched by the team’s friendly, efficient service.

YO! Sushi Lower Eastside 029 2060 2174 Fans of Japanese cuisine will love grabbing their favourites from YO! Sushi’s conveyor belt, laden with lovingly-prepared sushi and sashimi. There’s also the option of hot dishes cooked to order, meaning there’s something for everybody to enjoy. Speedy service and a quick turnaround make YO! Sushi a favourite with diners on the go, but don’t be surprised if a quick bite to eat turns into something of a lunchtime marathon when you can’t resist picking up just one more dish!

Why we love it: This relaxed dining experience is shaped by the restaurant’s unique layout. It’s fascinating watching the chefs at work in the open kitchen, too.

Must try: We love the pork pibil tacos - toasted corn tortillas stuffed with slow cooked pork in a Yucatecan marinade. The guacamole and spicy slaw are also out of this world.

Overturning the ‘Tex Mex’ stereotype with every plate served, Wahaca is the brainchild of Masterchef winner Thomasina Miers. This is the Mexican restaurant chain’s first opening in Wales, and we’re not quite sure what we did before we had their tacos and tequila cocktails in our lives. Drop in (most tables can’t be reserved) for a taste of Mexican market eating. It’s a sociable, bustling place with friendly staff and an upstairs cocktail bar that’s perfect for a pre-dinner drink and people watching. We think this is an equally perfect settling for lunch while shopping, date night canoodling, or a fun evening out with friends - the welcome will always be warm.

Frankie & Benny’s Upper Eastside 029 2037 1972 If you’re hankering for Italian-American calssics like pizza, spaghetti with meatballs or ribs, head to our newly-opened Frankie & Benny’s. This celebrated restaurant and bar is the perfect place for a leisurely lunch, a family meal or a drink with friends. Try the delicious salads, sharing platters, pizzas and pastas or sample the house specialities such as the New York Chicken or the Smothered Steak. And this is an all-day kind of place, with a fab breakfast offering. Ed’s Easy Diner Lower Eastside 029 2037 3706 Lovers of Fifties America should hop into a booth at Ed’s Easy Diner. The cool surroundings make it perfect for an informal dinner before heading to the movies. The menu lives up to expectations, too, with classic American hamburgers, hotdogs and fried chicken, plus indulgent milkshakes and waffles. Don’t forget to stick a tune on the ‘Dime Selector’ juke box!

Why we love it: There’s a great junior menu – complete with mini shakes – so you can be sure that the whole family is catered for.

Bellini’s Express Lower Eastside 029 2022 0225 This family-owned Italian restaurant chain has three branches dotted around the city. This, the Express restaurant, is in the heart of the Eastside restaurant area, making it a great place to head after a morning of shopping. Serving up a delicious range of Italian favourites made with high quality, traditional ingredients, plus the fabulous Bambino menu for kids, there’s something for everyone!

Must try: Hungry diners should order the signature Bellini’s pizza, topped with ham, mushrooms, tomato and mozzarella. 14

Must try: We adore the signature Tagliatelle Spezzatino – fillet steak, mushrooms and ribbons of pasta in a rich tomato sauce.

For a taste of Italy, look no further than Signor Valentino. The local chain launched to rave reviews in Cardiff Bay in 2001, and this sister restaurant in our Eastside restaurant area has all the same appeal. The menu is full of Italian classics lovingly prepared with locally-sourced produce, and you can see the talented team of chefs in action in the restaurant’s open kitchen. There’s a great children’s menu for little ones under 10 too, so everybody is sure to find something they’ll enjoy!

With over 300 deliciously diverse dishes prepared with top quality ingredients, there’s something to please everybody. Fans of Indian food will love the Tandoor live station, while meat-lovers should head to the Tex Mex and carvery areas. As there’s no limit to the number of times you can fill your plate, you can try a little (or a lot) of everything!

The relaxed ambiance and vibrant décor makes it perfect for a funfilled meal out, and the Eastside location means it’s close to all the shops. There’s plenty to entice you on the menu, too! Inspired by LatinAmerican, Tex-Mex and Mexican flavours, you’ll be spoilt for choice with everything from burgers and steaks to burritos and sizzling-hot fajitas. Must try: If you’re in a large group, order a selection of sharing platters for an informal dining experience. Don’t forget the mojitos!

Mount Fuji Lower Eastside 029 2034 0333 Designed to look like a bullet train against the backdrop of Tokyo at night, Mount Fuji is the perfect place to dine Japanese style! The restaurant echoes the city’s traditional eateries, serving up miso soup, bento boxes, teriyaki and noodles alongside a daily sushi bar. There’s also a range of Asian beers and Japanese soft drinks, while the green tea tiramisu is a must try!

Serves 4-6

INGREDIENTS

WAHACA’S WINGS and slaw METHOD Whisk the marinade ingredients for the wings together, add the chicken then pop in the fridge for at least an hour. Bake in an oven at 200˚C for 40-45 minutes or until the juices run clear. While it’s cooking, in a small bowl, mix the slaw dressing ingredients together. Add pinches of salt and pepper.

lettuce, finely sliced 6 large radishes, finely sliced 1 small red onion, finely sliced 1 large carrot, cut into match sticks ½ red chilli, finely sliced 1 tbsp chopped coriander

FOR THE WINGS 1kg chicken wings 100g Wahaca Arbol chilli sauce 3 tbsp olive oil Juice of 2 limes 2 tbsp runny honey A pinch of salt and pepper

FOR THE SLAW DRESSING 1 tbsp good quality mayonnaise 1 small clove of garlic, grated Juice of ½ lime 1 tbsp sour cream 2 tsp Wahaca chipotle sauce Salt and pepper

FOR THE SLAW 1 tbsp pumpkin seeds ¼ firm white cabbage, finely sliced Small head of baby gem

Toast the pumpkin seeds in a dry frying pan until lightly coloured. In a large bowl, mix all the slaw ingredients together, but save some of the pumpkin seeds for a garnish. 10 minutes before you sit down to eat, toss the slaw with the dressing and sprinkle with the pumpkin seeds. Serve alongside the spicy wings.

INGREDIENTS FOR THE SPINACH BALLS 100g breadcrumbs – dry 2 eggs 1/2 garlic clove very finely chopped 50g finely grated Parmigiano Reggiano cheese Ground black pepper and salt Nutmeg – very small pinch 300g cooked spinach Olive oil for shallow frying FOR THE PASTA 120g butter 30g red chillies, finely chopped 3 medium courgettes finely grated 4 garlic cloves finely chopped 250g freshly grated Parmigiano Reggiano cheese 750g largest penne pasta

METHOD Make up 42 mini spinach balls (7 per person) as follows: Cook the spinach in slightly salted water for 2 minutes. Drain and let cool. Squeeze out all the water. Cut the spinach coarsely with a knife (in order to create a well-

In a bowl place the chopped spinach, garlic, eggs, nutmeg and mix well, add in the Parmesan then half the breadcrumbs; season with salt and pepper. Roll and fry one ball. Taste and check consistency. Add more breadcrumbs or seasoning if needed. Fry the spinach balls until golden. Once this is done, cook the pasta to al dente in salted water – this may take from 10 to 15 minutes if

using dried pasta - drain and keep warm. While the pasta is cooking, heat the butter in a pan, add the garlic and chillies. Then add the grated courgettes and pan fry for about a minute or two, taking care not to burn them. Add the cooked pasta into the pan and toss with the grated cheese. Season to taste with salt and pepper. Serve in a pasta bowl with the spinach balls sprinkled on top.

WAGAMAMA’S CHILLI BEEF RAMEN Serves 2

METHOD

INGREDIENTS

Blanch the beansprouts in a large pan of boiling water for 10 seconds. Drain (reserving the water) and refresh in cold running water. Cook the noodles in the reserved boiling water for 2-3 minutes or until just tender. Drain thoroughly and refresh under cold running water. Heat a griddle or frying pan over a medium heat for 1-2 minutes until hot and almost smoking. Lightly rub the steak with oil, then cook for 2 minutes on each side, before removing from the griddle.

150g beansprouts 250g ramen noodles 350g sirloin steak, 2cm (¾in) thick a little vegetable oil a little teriyaki sauce for brushing 1 litre chicken stock 2 tablespoons chilli ramen sauce (see box for recipe) 4 spring onions trimmed and sliced 1 red chilli, trimmed, deseeded and sliced lengthways ½ red onion, peeled and very thinly sliced 1 lime, quartered 6 sprigs of coriander

Brush with the teriyaki sauce and keep warm while it rests for 3-4 minutes, then slice steak diagonally. Divide the noodles between 2 bowls. Heat the stock, stir in the chilli ramen

sauce, then ladle it over the noodles. Top with the beef, beansprouts, spring onions, chilli, red onions, 2 lime quarters and the coriander.

Chilli Ramen Sauce INGREDIENTS 2 scant teaspoons of sugar 2 tablespoons malt vinegar 3 tablespoons bought sweet chilli sauce 5 tablespoons fish sauce (nam pla)

Makes 12 mini dishes

METHOD

COSY CLUB’S HERB CRUSTED HAKE TAPAS INGREDIENTS FOR BEANS 100g butter beans 100g chickpeas 250g red onion, diced 8 cloves of garlic, diced

Serves 2

INGREDIENTS 1 rump steak (or other if preferred) 4oz of sliced peppers and onions 2oz grated Monterey Jack cheese 1oz sour cream 1oz guacamole 1 handful of chives 2 x 10” tortilla

300g chopped tomatoes 200g water 100g wood-roasted peppers 1g dried mixed herbs 1g smoked paprika 50g extra virgin olive oil Salt and pepper

In a pan, sweat the onions and garlic, then add the beans, tomatoes, water, herbs, paprika and peppers. Bring to the boil and simmer for five minutes, adding salt and pepper to taste. Meanwhile, turn oven on to 200°C. Place all crumb ingredients into a blender, pulse until a fine crumb consistency is achieved. Once oven is warm, lay the 12 pieces of hake onto silicon paper on a baking tray, rub skin with oil and cover with the herb crumb. Bake for 5 minutes or until the fish is cooked and crumb is golden. Serve in a tapas dish on top of the bean mixture. FOR HERB-COATED HAKE Four pieces of hake, each cut into three 10g white bread crumbs 1 clove of garlic, finely diced 5g parsley finely chopped Salt and pepper

CHIMICHANGA’S STEAK BURRITO

METHOD Pre-heat the oven to 200°C. Add a little oil to a frying pan and cook the onions and peppers over a medium heat until soft. Now, get a wide based frying pan or griddle pan searing hot. Coat the steak in a little oil, season and cook to your liking (a couple of minutes on each side should do it). Let the steak rest for a few minutes and then slice it into 2cm strips across the grain. Take your tortillas and place the grated Monterey Jack cheese (or

any good melting cheese) in a line across the middle, leaving enough space around the edges to fold. Place the sliced peppers and onions on top of the cheese, keeping the same distance around the edges for folding. Fold in the sides of the tortilla, then fold over the top and bottom.

Turn over so the folds are on the bottom and place in the middle of the oven for 5 minutes or until warmed through. Remove from the oven, place on a plate and top with the guacamole and sour cream and a sprinkle of chopped chives. Serve with a salad or tortilla chips.
