We asked Mowgli founder, Nisha Katona, how we can eat more like an Indian. She said: What’s found in curry houses is a far cry from the way Indians eat at home and on their streets. Indians eat meat infrequently. The homely food we eat is fresh, light and delicate, while breathing bright intense rich flavours. At Mowgli we have the Hindu menu section in which we use no garlic or onion, and this makes the food pure and untainted. We also have a ban in our restaurant kitchens on cream and cooking with ghee there is no need. We don’t do that in the Indian home.

DIRTY BONES Craving satisfying comfort food this winter? Dirty Bones will hit the spot. Bringing the best flavours of The Big Apple to Oxford, it’s a must-visit.

Hunker down in the nostalgic 1970s’ Brooklyn-inspired restaurant, or pull up a chair on the outside terrace, and keep the cocktails flowing. Tuck in to the likes of cheeseburger dumplings, fried mac & cheese balls, beef short rib or a Yankee dog while enjoying a soundtrack of old school funk and soul.

We caught up with Executive Head Chef, Andrew Woodford, to find out about his love for NYC and how the city has inspired the menu at Dirty Bones ... Q: We always love visiting Dirty Bones when we’re in need of some tasty NYC-style comfort food. Have you been to NYC? If so, what was your favourite food experience there? A: I had the privilege of living in New York for two years. The thing that impressed me the most was the diversity of the city from a foodie perspective. You can get amazing pizza, delicious Chinese, awesome sour pickles and then have the best burger all within a 20-minute radius! This incredible food diversity inspires us to be creative with our ideas and menus, for instance our ultimate fusion dish, Cheeseburger Dumplings. Q: Are there any new NYC food trends you’re noticing at the moment? A: NYC is always booming for brunch, and there’s a rise in popularity of indulgent sweet brunch dishes. PHO

Pho serves up great value, healthy Vietnamese street food that’s cooked fresh daily. Grab some chopsticks, stat!

Pho’s cosy outside space on the Roof Terrace is ideal for slurping a delicious bowl of noodle soup this season. Wrap up in a blanket, and take in the views of the Oxford spires while being warmed by zingy and exciting flavours. The menu at Pho is over a quarter vegan, and almost entirely gluten free, so it caters to everyone. 08 Roof Terrace Guide

DIY PHO GA

(CHICKEN NOODLE SOUP)

1. Heat 2L of chicken stock in a large pan. Meanwhile, in a dry wok, toast 1/2 a white onion, a star anise, a clove, a cinnamon stick, a piece of ginger, a garlic clove and 2 tsp of coriander seeds to release the aroma, then add to the stock. 2. Cover and simmer gently for 30 minutes. 3. Strain, season to taste and keep on a low heat. 4. Cook 200g of flat rice noodles following pack instructions. Drain and divide between the bowls. 6. Top the noodles with 200g of cooked shredded chicken and 4 sliced spring onions, and pour over the hot stock. 7. Garnish with a squeeze of lime, fresh herbs, a sliced red chilli and 150g of crunchy bean sprouts.

CARAMELISED RUM PUNCH INGREDIENTS

Appleton Estate Rum Grand Marnier Watermelon syrup Lime juice Pineapple juice Demerara sugar Cinnamon and nutmeg dust METHOD

“It’s tropical Christmas in a glass”

1. Caramelise the demerara sugar in a small pan over heat. 2. Add a measure of Grand Marnier, which will catch fire! 3. Shake in some ground cinnamon and nutmeg. 4. Remove from the heat and add pineapple juice, some watermelon syrup and a squeeze of lime juice. 5. Add a meaure of Appleton Estate Rum. 6. Stir and serve in a long glass. Sip and enjoy!

Specialising in modern-Indian cuisine using innovative cooking techniques, Cinnamon Kitchen is open every day for brunch, lunch and dinner, as well as cocktails and light bites. We recommend Vivek Singh’s sharing menu, complete with sticky ginger toffee pudding to end!

CHINGRI MALAI CURRY

(KING PRAWN COCONUT CURRY)

1. Blend 10 garlic cloves and a 2” piece of ginger to a paste and set aside. 2. Marinate 800g of prawns in ½ a teaspoon of turmeric and salt. 3. Heat 25ml vegetable oil in a pan and sear the prawns briefly before setting aside. 4. Blend 3 bay leaves and 6 onions into a paste with 100ml

vegetable oil. Sauté the paste with some more oil in a pan for 10 minutes until light brown. 5. Mix 2tbsp ground cumin, 1tbsp turmeric and the gingergarlic paste in 150ml of water and add to the onions. Reduce the flame and cook out for a further 5 minutes stirring regularly. 6. Add 3tsp salt, 4 sliced green chillies and the prawns and stir

for 2-3 minutes. 7. Mix in 200ml coconut milk and simmer for 2-3 minutes or just until the prawns are cooked. 8. Grind 5 green cardamoms with a pestle and mortar, then sprinkle in the powder and stir in 2tbsp ghee before serving immediately. 9. Best eaten with steamed rice.
