As we come into the spring season and (hopefully) shake off the end of winter doldrums, we are starting to think more about the fresh produce that will start to pop up in our grocery stores. While we’ve been able to get “fresh” produce all through the winter, it won’t be long until things grown more locally will start to be available. (Think about those wonderful greens and Jersey asparagus!) That means that you’ll have the chance to eat meals prepared with lots of fresh items that haven’t had to travel long distances to get to your plate. Here are a few dishes that might inspire you. – Serves 4-6 Breakfast for dinner? Yup! In this dish a colorful selection of vegetables pair with protein rich eggs for a hearty meal. Add a salad, or perhaps a quinoa or brown rice side, and you are ready to go! Feel free to mix up the vegetables based on what you like and what’s available. Just make sure to cut them into pieces of a similar size so that they all cook consistently.

• 2 T butter • 1 onion, chopped • 1 small zucchini, thinly sliced • 1 cup mushroom, sliced • 1 large red bell pepper, diced • 1 cup asparagus, cut into small pieces • ¼ tsp thyme, dried • 6-8 large eggs, lightly beaten (you can also use egg substitute or a mixture of eggs and egg whites, as desired) • 2 T parmesan cheese

When I learned that the focus of this issue was “Girls Rule”, I immediately thought of Queen Elizabeth II. Both my mom and my husband were born and raised in England, so the monarchy has always been a part of my life. For the most part, she follows a low carbohydrate diet, and loves fresh fish and mangos, as well as chocolate and a nightcap!

Missing from her diet? Garlic. Can’t serve it to her - ever. Perhaps her love of simple foods has attributed to her longevity.

To make the sauce: Heat oil in large nonstick skillet over medium high heat. Add onion; sauté 7 minutes, stirring frequently. Add mango, tomato, ginger and garlic; cook 5 minutes. Stir in remaining ingredients; bring to a boil. Reduce heat and simmer 20 minutes. Preheat oven to 400 degrees. Bake fish, uncovered, for 12-15 minutes or until fish flakes easily when tested with a fork. Top fish with sauce.

FLOURLESS CHOCOLATE CHAI CAKE

– 8 Servings

½ cup strongly brewed Masala Chai Tea ¾ cup sugar 18 oz bittersweet chocolate, chopped or chips 1 cup butter, cut into 1 T portions 6 eggs

Preheat oven to 300 degrees (F). Grease a 10-inch round cake pan. Combine tea and sugar in a small saucepan. Heat, stirring, until sugar completely dissolves. In a microwave safe bowl, combine chocolate and butter. Microwave at 50% power until melted, stirring every 45 seconds. Be careful with timing as chocolate heated in the microwave can burn very quickly. With an electric mixer, slowly beat the sugared tea into the melted chocolate mixture. Add the eggs, one at a time while mixing. Pour the batter into prepared pan. place the pan in a larger pan and fill the larger pan with water to half up the round pan’s sides. Be careful not to splash water into the cake batter. Bake both pans nestled together in preheated oven for 45 minutes. Chill the cake in the pan for 6-8 hours or overnight. Unmold the cake by dipping the bottom of the cold pan in hot water for 15 seconds, then invert the pan onto a serving tray. Serve immediately or cover and refrigerate the remainder.
