What is it you remember most vividly? I remember every detail. I remember hugging Stuart, and then I remember holding my mum, and she was sobbing, and that killed me. Then I remember walking up the stairs telling myself, ‘Don’t cry. Pull it together’. And I remember vividly getting to the podium and thinking to myself, ‘Don’t look at your mother or Stuart. Don’t look at them because you’ll lose it’. And I was really present. When my name was read, my reaction was, ‘What just happened?’. But everything else I really wanted to be present for and not just float through it. Where do you keep your Oscar now? It’s in my office at my house. Do you miss South Africa? You can get into specifics about food and people and stuff like that, but at the end of the day, I think it’s just something in your bones. I feel very much at home in America, and I became an American citizen. I’ve now lived exactly half of my life in South Africa, and half my life in the US. I really like living in America. If you want to go home, it’s something unexplainable. When you put your feet on the earth, you feel something in your bones, no matter how long it’s been since the last trip. It’s a connection that you never lose. Never. Do you feel like an ambassador for your country when you appear in a movie or receive an award? I have a real responsibility to the human condition. That’s it. If I had a political agenda, or a social agenda, I would be in politics. I don’t want to forget that I’m an actor. I would be a horrible politician. So whether the stories I want to tell have a social message or are socially relevant, for me it’s really about the people. As an actor, I feel that it’s my job. I like representing people whatever the circumstances of their story. What was it like moving from South Africa to Los Angeles? Is it true that your mother sent you to Hollywood with a one-way ticket? Yes. She just said, ‘Go try it out. That’s where actors go’. We didn’t know anything about it. Is it also true that you got a crush on Tom Hanks when you saw him in Splash, long before he directed you in That Thing You Do!? Yes, it’s true. Did you tell Tom about it when you finally met him? Of course not. You don’t tell boys you have crushes on them. It’s social etiquette. And he’s changed a lot since Splash. Would you like to win an Oscar, once again? That’s the greatest gift you can ask for but if you sit around waiting for things to happen, you’re going to run into a lot of disappointment. Winning an Oscar is like getting a standing ovation? The point is that you don’t know if you’ll win. I don’t know what I’m having for dinner tonight. You take every day as it comes. Yesterday was amazing, today is incredible, and tomorrow will be what it is. I enjoy those moments because I don’t sit around waiting for them, and I don’t expect them to be handed to me. I’ve had some movies that were successful and some that weren’t, but they all were successful for me, because I took full responsibility for the things I could control. I made the choices I wanted to make. Whether the critics liked it, or whether it did well at the box office, or whether it won awards, some of the most powerful moments for me have been when the film is screened and I see how many people are moved. That’s why we do this job. We want to move people. We want people to go and sit and forget for two hours about their everyday life, and give them something that’s relevant, that they can relate to. That is powerful.

Can’t stop the MÜS.I.C

Having taken the Vegas show scene by storm, Jabbawockeez are bringing their unique brand of entertainment to the Gold Coast. words Rhonda Oxnam

Is it dance? Is it theatre? Is it entertainment? When it comes to MÜS.I.C [pronounced muse-I-see], the sensational new phenomenon now showing at Jupiters Theatre, the answer to all three questions is a resounding yes. I must admit I didn’t really know what to expect from the show, which is advertised as ‘a 90-minute full scale extravaganza complete with drama, comedy, grand sets and costume changes’. However, from the hilarious pre-show routine (did somebody mention audience participation?) to the explosive finale, I was fascinated by the Jabbawockeez unique mix of freestyle movement and theatre. The group first gained attention with their appearance on Americas’ Got Talent in 2006. They went on to win MTV’s America’s Best Dance Crew in 2008,

before becoming the first dance crew to ever successfully headline their own dedicated stage show in Las Vegas. harmonisation of sound and movement’, MÜS.I.C had me (and the rest of the 2000 strong crowd) mesmerised from beginning to end. Using their signature expressionless white masks and gloves to guide the audience’s attention away from individual identities, the Jabbawockeez cast performed to a track list of songs that ranged from Michael Jackson classics to Singing in the Rain. My personal favourite was a clever and inventive routine set to the iconic Bohemian Rhapsody, while their performance to Beyoncé’s Single Ladies literally had the crowd dancing in the aisles. Every aspect of the show – from the impressive set, which resembles a giant ‘beat box’, to the clever costumes changes, including a cameo appearance by Crocodile Dundee – has been meticulously planned to not only showcase the talent of the cast, but to take the audience on a fascinating dance-inspired journey. Directed by Emmy-nominated and So You Think You Can Dance choreographers Tabitha and Napoleon, the show features a captivating cast of characters, so get ready to ‘LAUGH. CHEER. MOVE’ as Jabbawockeez bring the all-encompassing energy of MÜS.I.C to Jupiters Theatre. Tickets can be booked through Ticketmaster: ticketmaster.com.au or 1300 888 086.

iconic brands

Timeless appeal

Such is the legend of James Bond’s vehicle of choice that its rise to prominence wasn’t slowed by the departure of Mr Martin, or the fact there never was a Mr Aston. words Susan Lang-Lemckert

Aston Martin’s intriguing evolution has been characterised by beneficial partnerships – from the cycling enthusiast friends who started Bamford and Martin Limited (the precursor to Aston Martin) in 1913, to the recent pairing of the now iconic automotive brand with the prestigious Calleija Jewellers. But back to the beginning. Those cycling enthusiasts – Lionel Martin and Robert Bamford – initially established a Singer automobile dealership, however, with a shared talent for mechanics and Lionel’s renown for motoring successes at the nearby Aston Hill Climb races, the move into building their own vehicles was inevitable. And so the legend of Aston Martin was born in 1914. A year later, the very first Aston Martin was registered, before production was halted for the duration of the first world war. Then another valuable partnership – with Count Louis Zborowski, whose financial support saw Aston Martin competing in prominent motor races like the French Grand Prix – fuelled a promising post-war comeback. But their early successes didn’t attract new business partnerships, prompting Robert Bamford to sell his interest to Lionel Martin and exit the company. Following the Count’s demise in a racing accident in 1924, one John Benson (later Lord Charnwood) injected his passion for fine motoring

28

– and his financial support – to the company. A quick succession of major changes followed with the departures of Lionel Martin and then Lord Charnwood, and the company changed hands a number of times over the next few years – not that its fiscal challenges prevented Aston Martin from notching up some impressive motoring achievements during this time. These included taking out 1st, 2nd and 3rd places at Le Mans in 1933 – a mere five years after the company debuted in the famous 24-hour event – and placing 1st, 2nd and 3rd in the 1934 RAC Tourist Trophy. But it was the Atom – crafted at the back of the Aston Martin workshop during World War II – that changed the company’s path forever by wowing David Brown, the man who bought the company in 1946 and has been immortalised through the range of ‘DB’ models. His extraordinary vision saw many highs during his 26 years at the helm, including more prestigious race wins at Le Mans and the World Sportscar Championships, and the dawn of Aston Martin’s famous big-screen association with James Bond. Epitomising his dashing sense of style and fun, Aston Martins carried Agent 007 through numerous cinematic adventures, sometimes – thanks to the wonders of special effects – also taking a leading role in the action. And former Bond actor Pierce

Brosnan became so enamoured of Aston Martins that he now chooses to drive one himself, as do many other discerning celebrities like supermodel Elle McPherson, film director Ben Affleck and singer/actress Jennifer Lopez. “Aston Martin is not a car you are driven in – it’s a car you drive,” states Paul Hewitt, who looks after prestige sales at Sunshine Aston Martin, the brand’s Gold Coast dealership. He attributes Aston Martin’s perennial popularity to the classic but understated designs that have set the brand apart throughout its history, and the fact that each car is unique. “We don’t want our cars to be fashionable – they have a timeless appeal,” he says. “Our designers liken them to masterpieces. They’re the real thing, built without compromise.” A constant of the Aston Martin experience is their being built to the buyer’s requirements, offering a virtually infinite number of combinations of paint colour, upholstery, etc. “Because of the way we build each car individually, no two Aston Martins are the same,” says Paul, “and our customers like things that are specifically tailored to them. They will not compromise on the excellence of what they want to be connected to.” It is this shared commitment to the delivery of

The Calleija for Aston Martin Collection

excellence in bespoke design that led to the brand partnership between Aston Martin and Calleija Jewellers which, according to Paul, is Aston Martin’s only brand partnership in the southern hemisphere. “Calleija Jewellers shares the uncompromising approach to customisation Aston Martin takes to the cars we deliver,” he says. “And we’ll only affiliate ourselves with like-minded people who are achieving the very best in their own industry. “We felt that jewellery and Aston Martin had a strong lifestyle connection. There’s a natural affinity there, that John [Calleija, founder of Calleija Jewellers] – through his work and his interest in cars – shares with us, and is unique within our marketplace.” Launched in April, the Aston Martin jewellery range designed by John includes necklaces, rings, earrings and chains of innovatively-designed links, and also features a new cut of gemstone called the ‘ASTAR’. John describes the trademarked ASTAR, which has been modelled on the iconic front grille of the Aston Martin, as ‘one of our most beautifullyfaceted and brilliant gemstones’. “The Aston Martin collection has been inspired by the curves of the car and the ethos of the brand,” says John. “So designing this range was like taking the fluidity and purity of design Aston Martin represents, and translating that to jewellery.

“It was challenging, but very exciting, particularly as it’s never been done before,” he says. “This is the first time a prestige automotive company has partnered with a designing jeweller to create a collection of jewellery based around a car. “And it’s particularly flattering that Aston Martin should choose a boutique jeweller based on the Gold Coast to create that collection, when the company has access to some of the biggest designers in the world.” Dr Ulrich Bez, CEO Aston Martin, sees the pairing as a natural partnership. “When we initially discussed the project we wanted something exclusive and interesting to develop the connection between our two brands in an authentic way. “I have followed the development of this project closely and appreciate the level of understanding and attention to detail from John. Only someone who knows what Aston Martin stands for will be able to identify the same quality and innovation that has been integrated into his collection. “The ASTAR is a unique cut of gemstone which draws on the design ethos and originality used to create our One-77 super car. This is the pinnacle of our range and I know the ASTAR will become a sought after gem and take a place of great importance in the Calleija Aston Martin range.”

Ever since the piano was invented, people have longed to own one. In a bygone era they adorned the drawing room in every genteel home, with the piano becoming the treasured family heirloom. Gold Coast Pianos is much more than just a shop. Specialist piano merchant Linda Mooring’s passion has always been to be able to offer the best, most unique and interesting pianos to her clients. The piano selection process is more than size and colour but rather matching the personality of the pianist to the piano. Once the perfect match has been made, the piano moves to its new home to start a relationship with the pianist, which often will last a lifetime. Just like a human relationship, the player’s relationship with their piano will grow and develop, strengthen and mature, sometimes it will eventually expire as the pianist grows and develops past the capabilities of the piano they have chosen.

Gold Coast Pianos shares these experiences with the pianist, constantly offering ways to explore the world of piano with recitals, concert events and soirees, and inviting our piano enthusiasts back to the showroom to play music and share stories. So now you see the wonderful world of the piano is far more than just another retail experience. Over 100 years of musical expertise comes from the teachers, piano technicians and specialists at Gold Coast Pianos & Music. Why would you shop anywhere else for this life-changing purchase?

Restaurant quality The Brisbane restaurant scene is bursting with flavour … Tony Harper explains why.

Esquire

Ortiga

50

Super Whatnot

Brisbane’s restaurant scene always seems to happen in fits and starts; like a kid growing up, or me growing old. At the moment it is in the middle of a growth-spurt, not just in numbers but also in terms of creativity. For diners, it is a very exciting time. The new kids on the block (and perhaps the freshest in terms of persona) are two venues in Burnett Lane – Super Whatnot and Survey Co. (goodness, even the names of these places promise kook and culture). Burnett Lane is the small back alley that runs parallel to the Queen Street Mall, between it and Ann Street. It’s been home to rubbish bins, delivery docks and clandestine goings-on since the Myer Centre moved to the other end of the Mall umpteen years ago. Now, as you walk its shadows, you come across these two narrow venues spilling light onto the street and creating parcels of bustle amid the gloom. It creates a thrill of expectation on the approach! Super Whatnot is more bar than restaurantproper, but what it peddles in food is terrific. Its small menu is based on north-American culture (much of it from the southern states): Po’ Boy Sandwich; Pupusas; and Fried Chicken. It’s both clever and well executed and its lists of both beer and cocktails are supreme. Survey Co. is more about food. Ok, they peddle the bar thing (and it’s a terrific bar with a seriously good drinks list) but the kitchen has some amazing talent and the French/European-inspired menu punches well above its price point and expectation. This is a place to watch! A gentle walk away towards the Eagle Street precinct gets you to Spring. Spring is simply awesome. It’s the brainchild of Sarah Hancock – a newcomer to the Brisbane restaurant scene, but a young girl with a clear vision. She enlisted ex-restaurant critic Lizzie Loel to add some sizzle, and it has worked; the place rocks. It trades from breakfast till supper,

It’s a list that keeps growing as more and more adventurous souls put their money, time and imaginations into restaurants.

switching menus and mood as the day wears on. It boasts some of the best coffee in town, a great takeaway menu, a small but well-stocked retail area (wine, cookbooks, utensils etc) and a terrific bistro. Oh, there’s also a cooking school! Then there are the big four: Brisbane restaurants at the top end, vying with the best in Australia. The darlings are Ortiga and Montrachet. When Ortiga opened in 2009 it forged its own path, creating a new dimension for Brisbane dining. The theme is Spanish, and its upstairs room plays the tapas game backed by beers, wines and sherries: uber-casual and exceedingly slick. Downstairs houses the main event – a moody restaurant dominated by the open kitchen where chef Pablo Tordesillas weaves his magic. It’s fare that oscillates between traditional and ground-breaking and it’s backed by a wine list and service team as well-drilled as any in the country. Ortiga has pushed the modern Brisbane into the national limelight. The Urbane crew has been on the cutting edge for a decade and remains there thanks to a meticulous approach to every aspect of the venue. The food has always been exceptional – breaking rules and raising eye-brows at the same time as it sets hearts racing with its skill and individuality. As I write this the deck is being shuffled: long-term chef and partner Kym Machin, has moved on (to Spring … about 30 metres down the road). Further west in Paddington Thierry Galichet operates the ultimate French bistro … in Brisbane. Montrachet doesn’t try for the culinary heights and trickery of its peers. Nor does it re-invent the wheel when it comes to position and décor. What it does is transplant the food, wine, gorgeous looks and lavish culture of a Parisian (or perhaps a Lyonaisse) brasserie to Brisbane, with extraordinary doses of dedication, atmosphere and flair. I’ve probably saved the best until last: Esquire. Ryan Squires could be the most innovative chef in the country: he’s certainly in the top few. To sit through a ten course tasting menu is a thrilling adventure, a roller-coaster of flavours, textures and stunningly beautiful culinary designs. It all happens at a comfortable pace in a room that uses aesthetic austerity to better highlight the stuff on the plate. Esquire is consummate. There’s more; much more. These are just a few personal favourites from a long and varied list. And it’s a list that keeps growing as more and more adventurous souls put their money, time and imaginations into restaurants. For Brisbane diners, it’s an exciting time.

Chef Profile: MICHAEL CROSBIE Room81 Head Chef Michael Crosbie is no stranger to fine dining. Gold Coast born, Michael has worked for many coveted restaurants both locally and abroad, starting his career at Park Lane Hotel’s Citrus Restaurant in London. He then returned home to Australian shores in 2006 to work for a string of impressive establishments such as Pavilion Restaurant at Qualia Resort Hamilton Island, Astral Restaurant at the summit of Sydney’s Star City and Quay Restaurant under the illustrious Head Chef Peter Gilmore. “I see my cooking style as a dynamic concept. I’m constantly finding new products and inspiration that I hope will excite and challenge guests,” says Michael. “The presentation of food is one of my key passions. For me, dining must appeal to all of the senses and the presentation, the first impression, is paramount. “I’m also a big believer in cooking with the seasons,” adds Michael. “My Early Harvest recipe, for example, utilises some of the best hearty greens and root vegetables on offer this winter.” As testament to Michael and his team, Room81 was recently awarded one Chef’s Hat in the 2012 Queensland Good Food Guide.

The perfect form Tony Harper investigates why some wineries are swapping traditional fermentation vessels for more nature-inspired products. Images courtesy of Living Water Flowforms

Eggs have been lying around wineries forever. Fowl are useful creatures in the vineyard for eating bugs, trimming weeds and spreading their nutrient-rich droppings far and wide; they supply the family with meat (and eggs) and give the kids something to chase. And the whites of their eggs have, for centuries, been used to make fine high quality red wines. In short, egg-layers are useful critters. The last few years have seen a new sort of egg creeping into a handful of wineries: giant ones made of concrete or clay. It’s a fermentation thing, based in part on whimsical hippie-dom, but much more in the application of science and an understanding of fermentation.

Amphora fermentation vessel

Traditional fermentation vessels – oak barrels, concrete tanks and stainless steel tanks – all have different attributes and failings; so too do eggs, not least of which is the visual show of having a couple of giant eggs in your winery.

Bumbling around the internet uncovers a few stories on the subject, mostly from the United States. They talk about the permeability of concrete (which their eggs are made of: more on that later) and thermodynamics. But I began this story with a hunch that there is much more to the subject than simply material (after all, rectangular concrete vats have been widely used as fermentation vessels for ages) and the way the liquid moves within, so I delved a little deeper by calling a couple of chaps who I know have been making wine in (amongst other things) eggs; Tom Shobbrook and Anton Von Kloppper – both serious dabblers in biodynamics and ‘natural’ wines. Some of what is about to come might sound a little kooky. It certainly flies in the face of the skepticism that lies in much of our modern thinking. But these guys are clever and their understanding has its feet firmly planted in science: I comprehend only some of what they throw at me, but I believe in it all.

These two use ceramic eggs rather than concrete. Anton is quite passionate about the distinction (Anton is passionate about most things). “Whatever the material used for the fermentation vessel – oak, concrete, ceramic or stainless steel – it imparts flavour. It is all food grade, but their use still affects the taste of the wine or whatever else is put inside them. Modern concrete has no life or soul. Early concrete was quite different.” He goes on to point out that, despite how cheap concrete is and how suitable it is for moulding plates, no one puts their dinner on concrete … lack of soul! Ceramic, he believes, has the soul that concrete lacks. “It comes back to the basics of alchemy and the four elements; earth, water, fire and air. Clay is earth, it is mixed with water, dried in the air and baked in fire.” Kooky perhaps, but I can follow the logic and sense the magic. The shape too is linked to the essence of alchemy with the egg being based on the Phi Ratio (Golden Mean; The Divine Proportion); one of the many miracles of shape in nature. This is an important part of the magic, and one that is very well documented and understood. It’s the principal that shaped both the Egyptian and Aztec pyramids, Da Vinci’s work and – some reckon – much classical music. You’ll find it in seashells, sunflowers, the heart symbol and … the egg.

“It has its own dynamic force,” says Anton. In a practical sense the continuous curve of the egg’s surface helps with both fermentation and ageing. There are no corners or nooks that can disrupt the flow of the wine or let any sediment settle and hide. It allows for constant flow with no stagnation, raising the sediment and nourishing the wine, alleviating the need for mechanical agitation. “If you age wine in a straight sided vessel (tank, barrel or even bottle) it ends up with cold layers on the bottom and warm layers on the top, like when you jump into a swimming pool and the water is colder at the bottom. In eggs there is constant convection and the layers don’t form.” The modern use of eggs as fermentation vessels follows on the heels of a small but growing band of producers using clay amphora. Both are old but revisited methods, and both have their own attributes. In the end it comes down to how the wines taste; the proof lying (we hope) in the pudding. I’ve tasted plenty of amphora wines, most of which were so radically different from the mainstream for reasons not really connected with the amphora themselves that it’s hard to form a judgment. And my experience with egg-fermented wines is limited: a couple of very good whites and a profound Rhone red. Tom Shobbrook has had the advantage of watching his own wines, from the same grapes, form in both egg and more traditional vessels.

Inner circulation diagram

“The egg wines are brighter, more crystalline and more alive,” he insists. Telling words from a guy who makes some of the most textural, individual and ‘alive’ wines in the country. For many readers it will be a hard story to swallow; the stuff of whimsy and fairytale. But if you know a little about the guys who are adopting the egg – experienced, intelligent producers of seriously good wine, and with a great deal of scientific savvy – you’d be willing to believe.

And in recent years, a new surge of river cruising devotees has succumbed to the charms of this all-inclusive, effortless style of holiday. When selecting a river journey, the choices appear limitless, but a great starting point is a cruise from Amsterdam to Budapest, which plies the waters of central Europe. An impressive list of historic ports of call precede you – from the canal city of Amsterdam, to the medieval enchantment of Germany’s heartland towns, through to the erudite splendour of Austria’s capital Vienna and Budapest in Hungary. If you are going to spend your holiday aboard, then you should expect innovative excellence at every turn, and APT’s River Ships certainly deliver. In line with escalating expectations (and competition), tour operator APT has become a master at presenting this fluid form of travel experience in a persuasively polished package. As you embark on your river cruising experience, you’ll literally board your river ship (resembling a waterborne hotel) once and immerse yourself in both the journey, as well as each new destination, in unequivocal luxury. Onboard, time slows down, as leisurely public spaces meet stylishly outfitted suites. At every opportunity, a new shoreline view is revealed to you: from your Twin Balcony Suite (designed to accommodate all weather conditions); from the ship’s panoramic lounges or restaurant areas; and from the decadently relaxed Sun Deck.

Throughout this gentle exploration of Europe’s waterways, timeless riverside vistas of undulating vineyards and gallant castles kaleidoscope with a roll call of stately cities and sleepy villages. There is plenty of time to explore ashore too and choices abound at each destination, to cater for differing tastes. Through the eyes of an expert local guide, discover the architectural landmarks of cities including Bratislava and Cologne; sample delicious Bavarian wines with local vintners; cycle through the cobbled streets of medieval towns and tread in history’s footsteps through the likes of Bamberg and Nuremberg. Back aboard, the ebb and flow of each day is marked by a succession of fine dining opportunities, as well as onboard lectures and entertainment. Simply meander through an epicurean dream, as you choose from up to seven onboard dining experiences. Enjoy a light meal in the Main Lounge or al fresco lunches on the Sun Deck. Sample a specialty-tasting menu in the Chef’s Table Restaurant and enjoy the ultimate in fine dining in the ship’s main restaurant – all accompanied by disarmingly deft service. Gourmet cuisine aboard is thoughtfully created to promote choice and to provide a tantalising taste of each region you visit. Wines are carefully paired with meals to embellish your culinary journey. And the beauty of it all is that meals and tipping are allinclusive, for minimal fuss and bother. So, this year, why not get on board a truly Magnificent Europe river cruise? Then you too can drift through cities, countries and indeed a continent, without – literally – a care in the world.

SAVE UP TO

Bondi … the name alone conjures up images of beautiful blue water, sun-kissed sand and bronzed Aussie lifesavers. But there is so much more to Bondi than just the iconic beach, as I discovered on a recent visit. Electing to stay right in the heart of this tourist Mecca I was very pleasantly surprised by the relaxed atmosphere that permeates the suburb during the cooler months. Autumn seemed to have stemmed the flow of backpackers, and the locals were obviously relishing having the time and space to indulge in their favourite pastimes – surfing and socialising. While I left the surfing to the experts, I was more than happy to while away the days chatting to friends and people-watching. The best advice I can give anyone heading to Bondi is simple … take the time to explore. Wander through the back streets and alleyways where you will discover quirky boutiques, laidback coffee houses and the newest phenomenon to hit Bondi – pop up bars. There are loads of these fun and funky establishments dotted throughout the suburb. My personal favourite is The Crossing but I’m sure there are umpteen others that are just as good. The same goes for restaurants … stroll along Campbell Parade and you will find every cuisine imaginable – at a price point to suit all budgets. I loved Ravesi’s and the Bavarian Bier Café (which, by the way, also has restaurants in Broadbeach and Brisbane if you can’t make your way to Bondi) but again it’s a personal choice. If you want to dine like a local head across the road to the Beach Pavilion where you will find The Bucket List. The restaurant is so named for a very good reason – everyone should visit at least once in their lifetime, if only to mingle with the high profile clientele! The night I was there I spotted two Dancing with the Stars contestants and a number of recognisable NRL players. Taking inspiration from its location right on the famous beachfront, the restaurant-come-wine bar-come-laidback beachside pub is furnished with comfortable deck chairs, bench style seating and even a few milk crates (fully cushioned for comfort). The food, like the location, is amazing … and on a cloudless April evening provided a highlight of my weekend. Further along the esplanade is another iconic landmark, the Bondi Baths, where every Sunday from May to September, hardy locals take to the water no matter what the weather conditions! Perched above the pool is the infamous Bondi Icebergs, the only licensed swimming club in the world. Not to be confused with Icebergs Dining Room and Bar, which is one of Sydney’s most spectacular dining venues (and well worth a visit – just be sure to book well in advance), the Icebergs Club is open to members and visitors and offers champagne views on a beer budget. The Bistro has a great menu featuring juicy steaks and delicious, fresh seafood, while the Unsinkable Bar is the perfect place to sit and enjoy panoramic views of the world famous Bondi Beach – cold beer in hand, of course. If all the wining and dining gets too much, take a bus, taxi or walk to Bondi Junction for a bit of retail therapy. The Westfield there has a great selection of high-end labels such as Chanel, Bally, Jimmy Choo and Alannah Hill as well as the regular department store brands. There is also a cinema, food court and some great coffee shops for when you need a rest from all that shopping. So there you have it … a beginner’s guide to Bondi. While I don’t profess to be an expert I can assure you this beautiful beachside destination is well worth a visit – summer or winter. >>

Welcome to Singapore Home to nearly five million people, Singapore is a stimulating mix of cultures and cuisine, sightseeing and shopping. words Patsy Rowe

66

we l l t r ave l l e d

Our recent cruise ended in Singapore and our friend Brian Browne, with whom we were staying for the week, was at the wharf to meet us. Brian has been living in Singapore – a tiny island of 697 square kilometres tucked in between Malaysia and Indonesia – for nearly three years. We travelled to his apartment in the spotlessly clean, efficient MRT surrounded by Singapore’s polyglot population. Making up their five million population is a mix of Chinese, Malay and Indian, belonging to Hindu, Taoist, Christian, Buddhist and Muslim religions and speaking four languages – English, Malay, Chinese and Tamil. But whatever their ethnic background, Singaporeans love to eat. Dining, along with shopping, is said to be the country’s national pastime. The diversity of cuisine is breathtaking and a reflection of their multicultualism. Since we ate at some of Brian’s favourite restaurants, we tried everything! I loved Altitude Bar at the top of 1 Raffles Place, an amazing 282 metres high. Being triangular in shape, the bar offers a 360 degree view of the city sparkling below. From the sophistication of Altitude, clearly the hang-out of Singapore’s trendy youth, we also ate in the marketplace, watching dragon dances and parades as Chinatown was lit up with fireworks, with everyone in a festive mood for Chinese New Year. A visit to the zoo is must. The Hamadryas baboons and Nubian ibexes are fabulous and the Jungle Breakfast with Wildlife at Ah Meng Restaurant is a chance to get up close and personal with the charismatic orangutans and the mischievous marmosets. You can even pose with a snake for a photograph! I certainly hit Singapore at the right time and it had nothing to do with Chinese New Year … the sales were on! When I saw 50-70 per cent off I was sceptical, but the reductions were genuine and I bought four pairs of ‘follow me home’ shoes for AUD$105 within the first hour of shopping! Bill was delighted because he thought that would be the end of it, but then began my hunt for a cheongsam. After a day of searching, (the first one I found was $1400 although admittedly it was encrusted with 1,700 pearls and sequins) I discovered one in a tiny shop squeezed in between a man selling live chickens and a fruit stall selling Durian, the national fruit of Singapore. Have you smelt it? Try not to (unless you’re into the stench of rotten onions, turpentine and your son’s gym socks). I’m not surprised it’s been banished from some hotels and public transport, not just in Singapore, but in South East Asia! The shop was about the size of our ensuite bathroom. The owner, Mrs Mi Mi, bounced off her stool and fell upon me with delight handing me a beautiful full length claret cheongsam. A curtain strung across a corner formed the ‘dressing room’ and with boxes balanced precariously around me, I wiggled into it. Having no mirror I had to rely on Brian and Bill to assure me it looked OK. For AUD$60, it was a terrific buy. I was astonished to see kilometre after kilometre of underground shopping malls! Hundreds of shops ranging from famous brand names to the unknown, with prices to suit every budget and the MRT running right into it for convenience! Because Singapore is small with a high density population, the number of private cars is restricted. Car buyers have to pay duties one-and-a-half times the vehicle’s market value and bid for a Singaporean Certificate of Entitlement which allows the car to run on the road for a decade. The cost of this certificate is as much as my Porsche Boxster! No surprise that only one in ten residents own a car. After another two days of frantic shopping (I do love a bargain!) I had to leave my purchases with Brian to bring over on his next trip. Memo to me: If going to Singapore, travel with a spare bag, superb shopping!

The traveller Karen Christensen General Manager & Director Sales & Marketing Australasia – Silversea Cruises Most frequent destination: Europe. Silversea Cruises head office happens to be located in Monaco and it is also a favourite destination of our Australian passengers. An essential travel item: A well-packed toiletry bag with all the necessary essentials and familiar brands. I also cannot be without my connection with the world – mobile, iPad – and my camera. Airlines should: Provide you with the comfort you can afford and a timetable to reach your destination with the least amount of connections and associated stress. To be offered light, healthy meal options would be a bonus – helps with Tip 4. Tips for avoiding jet-lag: Curtail your coffee intake and limit your alcohol on board. Try to sleep on the plane and stay hydrated. Sometimes the reality is … nothing works! Window or aisle seat: Aisle seat. I pass the time by: Watching a good movie or listening to music and trying not to work on the plane. Best/strangest travel story: The Venice Simplon-Orient-Express London to Venice – this is a train journey unlike any other. It’s romance, adventure and style criss-crossing Europe, rolling through sublime scenery to some of the continent’s most alluring cities. Must-see destination: Italy and more specifically Tuscany and the Mediterranean; there is just something about cruising into Sorrento, with the breathtaking Amalfi coastline, and heading into Chez Black for a bit of lunch in Positano. I always seem to come home with a lot of shoes! Favourite hotel: The Hermitage Hotel – Monaco. Overlooking the Mediterranean, the Hermitage cultivates elegance at its highest level. This historic palace imparts an intimate, relaxed atmosphere in the most perfect location; this hotel has the wow factor! It is also convenient to our own Silversea Italian heritage and head office. Monaco offers the perfect harbour to set sail from on your Silversea Cruise – another favourite hotel which just happens to be on water. Best overseas dining: Simple Italian lunch on the riverbank near the Ponte Vecchio Bridge in Florence. Where to shop: United States – it is hard to go past the favourable exchange rate at the moment but the USA also offers exceptional value for money, plus an amazing variety of choice for all works of life. Best ever overseas purchase: Tumi luggage. Best thing about travelling: Experiencing new places and meeting new people to share the experiences with. Top complaint: Unavoidable delays. Car, coach, plane or ship: Definitely a small luxury ship (of course) that transports me to interesting places, where I do not have to sign for anything. Where to next: Vietnam.

Reward yourself The new Audi A6 2.8 quattro has more presence than previous A6s. words Chris Nixon

Audi A6

Full marks to Audi for having the simplest model designation system in the car business. It can’t be easier to understand than 1, 3, 4, 5, 6, 7, 8, all with the prefix ‘A’ and in ascending order of size. There was an A2, but it wasn’t sold here. These days Audi prices start from $32,250 for the small A1 hatchback. It’s one to attract young buyers into the brand. However, when you reach certain achievements in your career, it’s time to reward yourself with an A6. The A6 has been a constant in the Audi range for a long time, but experienced a relatively low profile compared with the volume-selling A4 and luxury flagship A8. The latest A6, introduced in the second half of 2011, deserves to claim more attention. It’s a fine car, well worthy of consideration by buyers.

74

There are five sedans in the A6 range, starting with a 2.0 petrol, front-wheel drive from $77,900 (plus on-roads). The most expensive variant is the $121,500 3.0 TFSI quattro. An A6 Allroad, essentially a wagon version on off-road steroids, will join the Australian line-up towards Christmas. We tested the least expensive of the three choices with the quattro permanent all-wheel drive system, the 2.8 litre petrol FSI priced at $93,900. While it’s exactly in the middle of the A6 range, it’s worth noting that the virtues of its basic design and many of its features are also available in the leastexpensive car. The new A6 has a sophisticated body structure comprising more than 20 per cent aluminium plus some high-tech steels, resulting in a lighter and stiffer platform and an overall

kerb weight of less than 1700 kg. The benefits come in lower fuel consumption, better crash performance, more precise behaviour of steering and suspension and reduced transmission of road and mechanical noise and vibration to the passenger cabin. In other words, it’s a tauter, smoother, quieter, greener ride. Around this structure, Audi has put a nicelyproportioned body with a longer nose, low roof height of 1.46 metres and an elegant sweep to the rear wheel arches and boot. It has more presence than previous A6s. There is plenty of room for five inside, befitting the executive style. Tall people will be comfortable in the back seat, where there is good leg and head room.

The boot has a wide, flat floor and a decent opening for loading bulky cases. (This isn’t always the case; some boot lids make loading big luggage akin to putting a ship in a bottle.) Luxury car or not, the A6 is not above heavy lifting if called upon and the back seats fold down in a 1:2 split to almost double load space. The A6 interior is an example of why Audi has pulled a growing market in recent years. The quality of materials and workmanship is impeccable. Interior equipment is comparable with the opposition, no more or less. This means everything from power-adjustable front seats to fingertip gearshift paddles to fine leather and a terrific sound system. However, a distinctive feature is a pop-up LED screen in the top of the dash for all the audio, ventilation, navigation, phone, trip-computer and other information. I was in two minds about this. I found it distracting and un-aesthetic when up, but liked the fact it could be banished into a recess at the touch of a button when not needed. I imagine that once an owner had made his or her favourite settings for temperature, radio station and so on, the screen might not be used often. But better to have a screen in a fixed position, I’d say. The A6’s 2.8 litre V6 engine provides 150 kiloWatts of power and 280 Newtonmetres of torque. This delivers an appropriate style of performance for an executive vehicle, swift but understated. For the really sporty stuff, buy the supercharged 3.0 TFSI.

The A6 interior is an example of why Audi has pulled a growing market in recent years. The quality of materials and workmanship is impeccable. Using premium-unleaded 95 petrol, official average fuel consumption is eight litres per 100 kms. This is thanks in part to the efficient sevenspeed S tronic automatic transmission, Audi’s version of the twin-clutch direct-shift unit made so popular by parent company Volkswagen. Also like VW’s, the S tronic sometimes can feel uncertain in its take-up at manoeuvring speeds. Another aid to using less petrol is automatic stop-start control. Virtually anywhere the car is stationary at idle, the engine will switch off; it re-starts the instant brake pressure is eased. It’s seamless, unobtrusive and takes no time for the driver to get used to. Easy to appreciate how the pollution and cost savings would accumulate over a year’s commuting – and to wish every vehicle beside you in the traffic jam had the same feature. And imagine the silence. The quattro system, Audi’s USP (Unique Selling Point) in the local luxury market, is similarly welcome but unobtrusive. Despite having two extra driven wheels to pull it around, the A6 doesn’t feel any different to drive in normal conditions but its surefootedness will be evident whenever the road becomes slippery. The well-controlled ride tends toward firmness but is not usually uncomfortable on its 18 inch tyres. Adaptive air suspension is an option for drivers who seek a truly executive ride. For additional safety, performance or economy, the A6 comes with its Drive Select system, which allows the driver to adjust the responsiveness of the electric power steering, electronic throttle and auto transmission. Passive safety features eight airbags, including side bags for the outerrear passengers, and earns the car a maximum 5-Star NCAP crash protection rating.

Faster, stronger, newer … words Chris Nixon

NEW VOLVOS SET SAIL Boat analogies applied to cars usually don’t have positive meanings (‘drives like a boat’) but perhaps cynics should except a new limited-edition range of Volvos, which celebrate the manufacturer’s support of the global Volvo Ocean Race. Volvo says its Ocean Race Editions of the V60 T5 Teknik, XC60 D5 Teknik and XC70 D5 Teknik reflect its customers’ adventurous outlook. All feature sport 18” Argus alloy wheels, aluminium centre console inlays, Volvo Ocean Race-branded tread plates and load covers, cross-stitched leather upholstery embossed with the Volvo Ocean Race logo, and paint choices including one called Ocean Race Blue II. The seat-stitching is said to have its roots in sail-making and the wheel design suggests the motion of the sea. BENZ’S NEW B BABY Launched to the world at the Frankfurt motor show only last September, Mercedes-Benz’s new B-Class small hatchback has already found its way to Australia. It is lands here initially in three versions, two petrol and one diesel. The B180 BlueEfficiency costs $38,950 with a 90 kiloWatt turbo-petrol engine and standard sevenspeed, twin-clutch auto transmission. Prices for the C200 petrol and C200CDi diesel were not available at the time of writing. Economy is helped by a package of fuel-saving features called BlueEfficiency, which includes automatic engine stop-start, plus the new twin-clutch auto standard across the range and an aerodynamic drag factor of 0.26. Supporting the premium image, Mercedes has loaded the city-bred hatchback with high-tech features found on its more expensive models, but one stands out – automatic hands-free parking. INFINITI JUST OVER HORIZON A new Japanese luxury brand called Infiniti will go on sale in Australia in the third quarter of this year. Actually, it’s not quite new since it made a brief appearance here in the early 1990s and has been a popular seller in the US and Europe for many years. Could be you have also seen the name on Mark Webber’s racing suit, as his Red Bull Formula One team is an Infiniti partner. Initially, the range will comprise the FX sport crossover, G37 sport convertible and coupe and M luxury performance sedan. The M will come as a petrol or diesel V6 (and eventually a hybrid) with rear- or all-wheel drive. Infiniti is a division of Nissan, which has established a separate new corporate organisation in Australia. There will be just a handful of dealers, one in Brisbane. The Infiniti promises class-leading value for money and quality. SUPERCAR ON A DATSUN DIET One of the world’s fastest sports cars is a Nissan, would you believe, and it just got even better. The exclusive GT-R is a hand-built coupe of mind-boggling electronic sophistication and complexity. It runs with the fastest Ferraris and Lamborghinis from rest to 100 kmh in less than 3.0 seconds, but costs a relatively Datsun-like $170,800 and is as easy to drive as your grandpa’s old Cedric. Around 400 have been sold here in the past four years. The latest version gets more power from its 3.8 litre twin-turbo V6 – 404 kW and 628 Nm – which still gets to the road via fulltime all-wheel drive. Unsurprisingly, Nissan engineers have strengthened the body to cope with the extra power. CONTI V8 HERE SOON Bentley’s second-generation Continental GT coupe, now with a V8 engine, made its first Asia-Pacific appearance at the recent Bangkok International Motor Show and will continue on to Australia for a June national preview tour. Although the original 6.0 litre W12 motor remains available, the 4.0 litre twin-turbo V8 with eight-speed automatic is going to gain fans for its lower fuel consumption and emissions and, reportedly, more nimble driving feel. Despite the inertia of more than two tonnes of sumptuous luxury, the Continental will sprint to 100 kmh in 4.8 seconds and on to a 300 kmh top speed. The new Conti design appears similar but has been revised substantially on the outside and has a much more modern interior, judging by the models the Cove inspected at the Bangkok show. Prices for the Coupe GTC and Convertible GTC will be announced closer to launch and deliveries are due to start in July.

Two good

Alaska 46 Sedan Gen II

Hampton 680 – Cavallino III

The Sanctuary Cove International Boat Show will provide the perfect backdrop to showcase these two exceptional vessels.

Gold Coast based Australasian Marine Imports, the exclusive importers of Hampton, Endurance and Alaska Yachts, will have two vessels, including one new release, on display at the Sanctuary Cove International Boat Show. The majestic Hampton 680 Cavallino III will take pride of place alongside the latest addition to the Alaska range, the Alaska 46 Sedan Gen II, that will be making her debut at the 2012 show. Alaska 46 Sedan Gen II The new Alaska 46 Sedan Gen II is heavily appointed and packed with advanced features, including a revised galley layout and extended full width hardtop. One of the most effective improvements is the change from traditional hallmark bi-fold doors to a single bi-fold door system. This sees the saloon doors open wide, to bring the outside in, and create an open plan that is ideal for entertainment and increased liveability. A port-side wing station has also been added with engine controls, and bow and stern thruster controls, while the new cockpit control station makes the tasks of docking and anchoring a breeze. The perfect entertainer, the Alaska 46 Sedan Gen II accommodation boasts a master stateroom with island queen-size berth amidships and its own en-suite, a cabin forward with two single bunks and guest bathroom, and the ability to turn the saloon lounge into a double bed. The impressive galley, located portside, features dual refrigeration and freezer, dish drawer dishwasher, microwave oven, four burner electric cooktop, generous storage and more. Powered by twin Cummins QSB 5.9 480hp engines, this renowned sea-keeping vessel has a cruise speed of 18/20 knots and a top end speed of 24 knots. Hampton 680 – Cavallino III The Hampton 680 – Cavallino III is a contemporary take on the traditional Pilothouse vessel, featuring a new interior design package. Her interior comforts create an inviting environment and modern feel to the vessel and include cherry timber with satin finish, textured panels, and extensive use of fabric, leather, marble and stone throughout. The accommodation layout on this spacious vessel features a full beam king-size master stateroom with separate shower and a walk-in cedar lined wardrobe and a queen VIP stateroom with island bed and twin room to port. These two cabins share a well appointed, generous sized en-suite. Stepping up to the pilothouse deck, you’ll find dual pompanette helm seats overlooking a modern take of a traditional dashboard, and an instrumentation layout featuring the latest in Simrad technology. From an impressive saloon with beautiful leather fit out and a surround sound entertainment system, to dual wing stations in the cockpit, this Hampton is packed with extensive features and appointments throughout. The flybridge provides an ideal space for entertaining, with its own barbecue, retractable television and U-shaped dinette. Powered by twin Caterpillar C-18 Acert engines, this vessel has a cruise speed of 17-18 knots and a top end speed of 21-22 knots.

French style Jeanneau and Prestige power boats arrive on Gold Coast waterways.

Prestige 440S

Leader 10

Gold Coast boating enthusiasts have a range of exciting new options with the arrival of a sparkling French range of Jeanneau and Prestige brand power boats. Pacific Motor Yachts is importing the new boats, designed by Italian master Vittorio Garroni. Featuring stylish lines with interiors and decks perfectly suited to the Australian lifestyle, the boats range from seventeen-foot centre console trailerable boats up to luxurious sixty-foot cruisers. Where the smaller models are sleek, practical and comfortable for a day of fun on the water, the larger Prestige models glow with finely polished timbers and plush furnishings. “We are delighted to represent these great brands,” said Brett Thurley, Managing Director of Pacific Motor Yachts. “They embody a high level of quality combined with great value for people seeking modern European design and world-class performance on the water. “These boats represent the exciting new styling of Jeanneau and Prestige,” said Brett. “Vittorio Garroni has brought a fresh look to the latest models with aft galleys and single-level entertaining that will appeal to the Australian market.” Most exciting for enthusiasts is news that five of these new boats will feature at the upcoming Sanctuary Cove International Boat Show. “We already have three new boats on the water,” said Brett. “They include a Prestige 440S sports yacht powered by Volvo IPS, a Leader 10 dieselpowered sports cruiser and an 8.5 Cap Camarat centre console sports boat with outboard power. “As well as these three, our on-water display will feature the award-winning Prestige 500 flybridge and NC9 models.” Brett said the team at Pacific Motor Yachts was building on the experience and expertise gained in building the Clipper Motor Yachts brand and distribution. “Clipper is now the number one selling semi-displacement trawler in Australia,” he said. “The team maintains our commitment to Clipper as we develop this new business. “We are driven by a service culture to support, educate and expand every owner’s boating knowledge, experience and lifestyle. We have a direct import agreement with Jeanneau International that ensures our customers receive top quality service from the importer and attractive pricing.” The company operates from a purpose-build facility at the Gold Coast City Marina at Coomera at the northern end of the Gold Coast. “This is the largest working marina in the southern hemisphere and we chose to base our operations here to have access to the best contractors to commission and support our new and pre-owned vessels while managing ongoing service, education and warranty support for owners,” concludes Brett. Introducing a buoyant, brighter, totally brilliant Sanctuary Cove International Boat Show.

2011 Sanctuary Cove International Boat Show

In the lead up to its 25th anniversary, the 2012 Sanctuary Cove International Boat Show has scored some major coups, secured 60+ global and national launches, and attracted 300 exhibitors showcasing the most innovative and covetable yachts, equipment, accessories and options that celebrate the best of the boating lifestyle. The extensive range of exhibitors at this year’s Sanctuary Cove International Boat Show means there’s something for everybody. There will be a who’s who of international guests and visitors, hundreds of products launches, as well as many firsttime exhibitors and exciting additions to the program. Visitors will still enjoy the latest from traditional exhibitors in luxury power and sail, and plenty of destinations, tours and charter companies to inspire you, along with what’s new in trailerable fibreglass and aluminium boats, engines, electronics and accessories, books, maps and charts. This year’s event promises something to suit every visitor and every budget – from superyachts to several significant releases. Some of the superyachts on show include the Italian-built luxury charter vessel, the Falcon 90 ‘Norseman’ valued at $5.8 million; the brand new Horizon E54 and Horizon AquaCat 80; and the Prestige 500, recently crowned ‘Powerboat of the Year’ in the 45’ category at the European Powerboat of the Year Awards in Düsseldorf. International brands such as Jeanneau, Clipper, Integrity, Catana, Palm Beach Motor Yachts, Maritimo, Mustang, and Seawind will be holding launches during the boat show. There are 40 first time exhibitors, such as Chaparral with its hot new entry level range of 18 and 19 foot Sports and ski/fish bowriders dubbed ‘H20’, stand up paddle boards from Stand Up Surf Co, and the VanDutch luxury day boat will certainly turn heads as it brings some sleek, black-hulled French Riviera élan to Sanctuary Cove. For the thrill seekers, there’s the gamut of PWCs, boards and more. Or you can watch as the experts show us how it’s done with the Australian launch of gravity-defying JetLev R200, which can shoot 30ft (9m) in the air with just a hose linking it to the water. There are also fashion and performance clothing parades, including all the new ranges from Gill, Musto and Burke, and the high quality polarised sunglasses from BarzOptics.

Gear, gadgets and great bargains are on offer this year too, plus new for 2012, the superb range of German precision timepieces from Define Watches, crafted especially for nautical uses: boating, diving and swimming. Visitors have the opportunity to win a $10,000 watch from Define Watches, so listen to Gold FM for all the details. Also new this year is the Superyacht Pavilion structure, used just once previously at this year’s BMW Magic Millions. The structure itself is the first of its kind in Australia. Designed and constructed in Germany by Roder HTS, its walls, glass windows, roof and floor all fit together. Another attribute is the revolutionary ‘tite liner’ ceiling, which is a new style of liner stretched taut between the rafters to give a seamless, snug fit, adding to the crisp, clean lines of the interior. Sanctuary Cove is the only boat show in Australia to have a dedicated Superyacht Pavilion and Superyacht Australia has sponsored the high-tech white structure, which will house some of the country’s leading superyacht exhibitors. If you’re a film-buff, this will appeal: a one-of-akind, classic Chris Craft runabout from the 1950s which featured in the film On Golden Pond will be on show alongside the epitome of contemporary day boat cruising and star of the film Twilight Breaking Dawn, the Chris Craft Silver Bullet. The stunning 20ft, limited edition luxury runabout is the boating equivalent of a sports car. One of only 150 manufactured and available worldwide, the Silver Bullet will be a show stopper! Equally sleek is its companion, the 22ft timber Chris Craft runabout called Mistral, which has an impressive heritage. Built from a kit of authentic parts shipped from the US to Tasmania in 1950, Mistral was then completely restored between 1992 and 2001 by only its second owner since the boat was built. The current owner is now looking for a loving custodian for this marvellous piece of history and has established a sale price of $89,000. In a fantastic coup for the Gold Coast, Sanctuary Cove and exhibitors at the 2012 event, Channel Seven has confirmed Mel and Kochie and all the team from Seven’s Sunrise program will present a three-hour live broadcast from the boat show on Friday 25 May. >>

Boat show organisers have teamed up with Gold Coast Tourism to take the next step in media partnership with Channel Seven, which for several years has been broadcast partner with the program Creek to Coast and The Great South East, along with news packages and weather crosses. “Having the team from Sunrise here live is a tremendous boost for this year’s boat show,” says Sue Thomson, General Manager Boat Show. “Sunrise is the leader in breakfast TV, reaching around 900,000 people each morning. The boat show’s stunning venue will be the backdrop for the broadcast, and live breakfast television will capture the ambience and excitement, as well as featuring the range of boats, accessories, various attractions and interesting options for people who may not have considered visiting the show.” Martin Winter, CEO of Gold Coast Tourism, is equally positive. “The annual Sanctuary Cove International Boat Show maintains a distinguished place within the AsiaPacific boat show schedule, where an extensive and diverse range of marine industry exhibitors will attract between 40,000 and 50,000 boating enthusiasts and curious onlookers,” said Martin. “Our vast range of waterways, including our spectacular coastline, makes the Gold Coast a haven of fun-filled pursuits, where thrill seekers can choose from jetboating, parasailing, kite surfing, diving, jet-ski safaris, snorkelling, tall-ship cruising and yachting.

2011 Sanctuary Cove International Boat Show

“We are ecstatic to be able to showcase our marine assets and images of the city’s spectacular natural landscapes to a national audience to reinforce our position as Australia’s favourite holiday destination.” Another sensational facet of the program this year is the immensely popular ‘Women on Water’ activities, which add another dimension to the boat show. Ita Buttrose will be special guest speaker at this year’s Ladies’ Lunch, on Friday 25 May at Hyatt Regency Sanctuary Cove, with host and emcee, Seven Network’s Kimberley Busteed. When it comes to surmounting the obstacles and challenges of working in a traditionally male domain, Ita – twice voted Australia’s most admired woman – has excelled in all forums: as a businesswoman, journalist, author, advisor to corporate, community and welfare organisations and as a company director. With her star shining as luminous as ever, thanks in part to the success of the ABC series, Paper Giants, Ita remains relevant and influential across the generations. The 2012 ‘Women on Water’ program will include Cooking On Board Your Boat sessions hosted by Seven’s culinary expert, Sally Jenyns, styling your boat interiors hosted by Sarah Egan and the Boat Style team, fashion parades in the Piazza, ‘introduction to sailing’ programs and the popular ‘High Tea on the High Seas’ cruises. Running on both Saturday and Sunday (26 and 27 May), the relaxing cruises will allow ladies to leave their menfolk at the boat show and enjoy a scenic sojourn with fun, frivolity and plenty of pampering. Embark on the MV The Lady, a ravishingly retro function boat fabulously fitted out by Boat Style, for two hours, enjoying champagne and canapés served with the pleasant backdrop of the Coomera River and the magnificent motor yachts and sailing craft on display at this year’s event. In addition to prizes and lively company, each guest will receive a generous gift bag with samples and VIP offers. Tickets for the Ladies’ Lunch and High Tea on the High Seas are strictly limited and available online.

passionate boating enthusiast. Boating has been an integral part of Sarah’s life and after practically growing up on the water, it seems like a natural progression for her to make a career out of it. “In 2010, my husband and I bought a beautiful cruising yacht, Sirocco. I set about in earnest to make her a sanctuary from the hustle and bustle of our busy lives,” Sarah said. “With [so many] recreational boats in Queensland alone, I expected to find all the things required to deck out our new home away from home. I was left wanting, disenchanted by the rather predictable and uninspiring marine furnishings and homewares available.” It was following this that Sarah created Boat Style, an online retail store offering top quality products to furnish every area of the boat. From indoor/ outdoor nautical-print cushions and matching napkins to serving platters, shell coasters and sumptuous 1000-thread-count bed linen, Boat Style offers over 300 products from the marine-themed to the truly unique. The company also provides a bespoke service, giving customers the opportunity to design the perfect pieces for their yacht. Boat Style is a result of Sarah’s belief that all free moments on-board should be dedicated to relaxing and fully enjoying the pleasures of life on the water. Her range of luxury products create the sort of comforting space that one would expect at home.

The stylishly outfitted The Lady will be anything but a nautical cliché, decked out in ultra-modern white furniture and fabrics in fabulous prints and a water-worthy palette of turquoise and cool blue with accents of apple green. Boat Style is all about the merging of style and function, and the fabrics and furnishings use durable materials for the perfect maritime experience. High Tea on the High Seas is the perfect opportunity for ocean-loving ladies to indulge their boating passion in a truly exquisite setting. While the Women on Water program is about recognising women’s contribution to the marine community, Sanctuary Cove understands that a little luxury never goes astray and there are plenty of opportunities to experience some glamour among the business of the Boat Show. A classic event The inaugural Sanctuary Cove Ladies Golf Classic was a resounding success.

Photography Helen McParlane Photography

Staged on two glorious golf courses, with a host of friendly participants and a diamond studded putter on offer for the winner … the 2012 Sanctuary Cove Ladies Golf Classic was always destined to be a premier event on the women’s golfing calendar.

But even the organisers were amazed by just how successful the inaugural event was. “We knew that we were on to a winning formula but the amount of interest shown by local and interstate players was wonderful,” says Event Organiser Faye Wyer. “Everyone who took part couldn’t help but be impressed by the beautiful setting, and the fun spirit in which the competition was played. “We were also very pleased with the support we received from the local community including the Sanctuary Cove Golf and Country Club, Mulpha Sanctuary Cove (Developments) Pty Limited, Sanctuary Cove Publishing, Calleija Jewellers and the various other sponsors who Faye Wyer with Michelle Doherty

came on board.” Played on The Palms and The Pines at Sanctuary Cove, the three-day event attracted more than 100 players of all levels, from right around Australia. The Classic kicked off with a fun Foursome on Day One, followed by two days of 18-hole competition golf. Sanctuary Cove local Michelle Doherty was the ultimate winner, claiming a diamond-set putter generously designed and donated by internationally renowned jeweller John Calleija from Calleija Jewellers – Marina Mirage, Sydney and London.

However, no one managed to walk away with the amazing $50,000 diamond, courtesy of Café St Tropez, which was offered for a HoleIn-One. Away from the course, the players enjoyed a more social atmosphere with ‘Meet & Greet’ evenings, barbecues and presentation functions. The Event also had a philanthropic angle, with $10,000 raised for the Adam Scott Foundation. The much needed funds will be put towards the construction of a Youth Hostel in Labrador. While this year’s event was an unequivocal success, Faye said the committee is determined that next year’s Classic will be even bigger and better. “We are hoping to attract even more competitors and sponsors next year, ensuring that this event becomes one of Australia’s most popular amateur competitions for women,” she said. “We have now set up our own website (www.sanctuarycoveladiesgolfclassic.com.au), where photographs from the 2012 event can be viewed and ordered and the 2013 entry form can be downloaded.”

Village news A variety of experiences are on offer at the ever-changing Marine Village.

Valentine Waturoucha – Black and White Lounge Bar

George Tassis – George’s Paragon

Les Ward – Les Ward Lawyers

Sanctuary Cove’s Marine Village is now home to the Gold Coast’s newest lounge bar venue inspired by the chic nightspots frequented by London’s social set. Black and White Lounge Bar was modelled on the popular RS Lounge in London which is favoured by local celebrities. True to its namesake, one half of the bar is adorned in white from floor to ceiling, with the other half similarly decorated in black. Black and White Lounge Bar creator and exLondoner Valentine Waturoucha said he decided to introduce a new social experience for The Marine Village visitors after identifying an opportunity in the precinct for an upmarket lounge bar that offered a sophisticated ambience, live entertainment and was open seven nights a week. With live music and guest DJs, as well as events, parties and theme nights, Valentine said Black and White Lounge Bar will provide a unique atmosphere and experience for guests and will offer more than just ‘going to a bar and having a drink’. “We will be offering a wide range of music from the 1980s, 1990s, soul, R & B, jazz and dance, so

we expect our clientele will range from people in their 20s to 60s,” he said. “There’s nothing else like it on the Gold Coast.” The lounge bar is in addition to a host of new dining, entertainment and commercial experiences at Sanctuary Cove, with the recent reintroduction of the popular Cove Tavern and The Marine Village restaurant, Leo’s Latina Bar and Grill, undergoing a complete decor transformation and introducing an enticing new menu. Sanctuary Cove General Manager for Sales John Hughes said the first quarter of 2012 saw much movement within The Marine Village commercial precinct, with some existing businesses extending and taking out additional tenancies to facilitate expansion. George’s Paragon, one of the Gold Coast’s much loved restaurant brands tops the list, with owner George Tassis taking on an extra 200sqm adjacent to his existing flagship restaurant, increasing his space to an impressive 1100sqm and making it one of the largest venues in Queensland. “We have welcomed more than 25 new tenancies to The Marine Village community in the

past 12 months,” said John. “Many of our tenants are residents within Sanctuary Cove, which provides a great work/life balance and we are starting to see more and more tenants taking out second or third tenancies, which is the best testament to business success within The Marine Village.” Further additions to The Marine Village’s business services include legal practice Les Ward Lawyers, specialising in commercial, estate law and estate planning. Practice owner and 30-year veteran of the legal profession Les Ward decided to open the practice after he and his family moved to Oxenford from Townsville late last year. John said the arrival of the practice in The Marine Village provided yet another useful and relevant service for residents and visitors. “The Marine Village is well on its way in its goal of providing a wide array of services and experiences for Sanctuary Cove residents,” he said. “It is increasingly a destination where people can do business, shop and relax without the hassle of having to run around town.”

Family fun An ‘Eggstravagant’ Easter Festival attracted record crowds to Sanctuary Cove’s Marine Village. Sanctuary Cove once again hosted its ‘Easter Eggstravaganza’ this year and, by all reports, the festivities were bigger and better than ever before. Close to 1,000 people gathered at Sanctuary Cove on Easter Sunday, turning The Marine Village into a carnival of colour and celebration. The wonderful autumn weather and a fun-filled line up of activities had adults and children alike in high spirits throughout the morning. The little ones were kept busy with face painting, balloon twisting and jumping castles, while live entertainment on the stage kept up the festive vibe. And since it’s not Easter without a truckload of chocolate, the kids had a great time taking part in the Easter Egg Hunt. A very special guest also hopped in to help out with the hunt and proved to be extremely popular among a very excited fan base. The Easter Bunny delighted the crowds by handing out more Easter

Eggs and, together with the goodies collected during the hunt, more than 3,500 eggs were distributed among the crowd. Fortunately, new Marine Village tenant Sanctuary Cove Dental was on hand giving out much healthier prizes of balloons and teeth cleaning packs – which certainly would not have gone astray following a day of such sugary goodness! The morning wrapped up with the Easter Buggy Parade and decorating competition. As usual, participants threw themselves into the task of theming their golf buggies and the crowds were delighted with a vibrant parade through the streets of The Marine Village. The Parris family took out first place for their design and were rewarded with a Marine Village shopping voucher as well as a beautiful Easter hamper. Congratulations also to the Holt family, the Winter and Taylor families, and the Moule family, who took out second, third and fourth places respectively. A special mention also goes to Matilda McCarroll and Romilly Hicks, who did a fantastic job of decorating their families’ buggies without any parental assistance. Following the excitement of the Easter festivities, many of the visitors took the opportunity to relax and explore The Marine Village, with shops and restaurants enjoying a rush of activity. The Sanctuary Cove Easter event was once again a great day of fun and entertainment for everyone involved, proving to be a true ‘Eggstravaganza’ in every sense of the word.

Rebuilding history

New Steve’s Hotel from Esplanade

Originally opened as a bed-and-breakfast, Steve’s has been an integral part of the Perth landscape for over a century. words Susan Lang-Lemckert

“We’re going to Steve’s”. If you’re from Perth, or have spent more than a short holiday there, you’ll know ‘Steve’s’ isn’t the home of a friend called Stephen, but the iconic Nedlands Park Hotel – and you’ve probably been there yourself. If so you would be in notable company – former Australian Prime Minister Bob Hawke set his famous yardglass-emptying record there, literary award-winning writer Robert Drewe was a well-known patron, and an embryonic INXS gigged there when they were still known as The Farriss Brothers.

96

Nestled by the river in leafy Nedlands, the hotel opened as a bed-and-breakfast establishment for visiting farmers in 1908, but didn’t become known as ‘Steve’s’ until 1935, when one Stephen McHenry bought the lease and ran the establishment. The advent of World War II saw Stephen deployed with the 28th Battalion – the Rats of Tobruk – where he was eventually captured. While he was interned overseas, his wife Kitty succumbed to cancer, leaving behind their two daughters, Joy and Julie. Stephen survived internment, returning to

Australia – and to Steve’s – and later marrying again. He and his second wife Hazel had another daughter, Sandra (now Hohnen), and a son Murray. Murray McHenry, who today runs the family concern – which includes the prestigious McHenry Hohnen Vintners in Margaret River – with other family members, has fond memories of growing up around Steve’s, where he kept horses whose stablemates were in the service of officers from the adjacent police station. But Stephen McHenry’s passing in 1958 ushered in more changes for everyone.

“When my father died my mother kept the hotel running on a week-toweek tenancy, although she’d never run a hotel before,” Murray recalls. Murray then spent most of his time with his father’s cousin Rex Roper in rural Western Australia, where his love of the land in general – and the Margaret River area in particular – was fostered. “In those days, I just wanted to be a farmer,” he says. His affinity with the outdoors also saw him develop a love of competitive sport – most notably rowing – in which he progressed from competition to coaching, before work commitments made it impossible to find time for training. Then fate intervened again. “My mother had run Steve’s from 1958 to 1977, then the Swan Brewery decided to sell the freehold of some 30 West Australian hotels – Steve’s being one of them,” Murray explains. “So I came back [to Perth] in 1977 and bought the freehold.” And so began Steve’s next incarnation – as a favourite meeting place renowned throughout the 1970s and 80s for its relaxed ambience and great live music. >>

New Steve’s Bar and Cafe

But nothing stays the same forever, and Steve’s once-famous beer garden has now gone as part of the site’s overall redevelopment – there’s a new building housing a bar and bistro, a wine store and tasting area, function rooms, and newly-built apartments. And the pieces de resistance are the four residences (or super-apartments) that have been created within the former Steve’s hotel building, with as many of the original features as possible – including the glorious internal staircase – being retained. Murray took on every task from overseeing the relocation of bricks from one part of the building to another to ensure uniformity, to designing the carpets to reflect the sense of flowing water evoked by the nearby Swan River, to selecting historical photographs of the site and buildings for display in common areas. The exacting restoration from 1908 hotel to four unique residences was a challenge that required specialists in Heritage, so Philip Griffiths Architect was retained to work with Murray and renowned restoration builder Brenden Mainstone to create these magnificent apartments. “Though we didn’t have any [official] heritage restrictions, we effectively did in that I was virtually born here, so we wanted to recreate it while keeping as much of 1908 here as possible,” he says. And the new apartments, located on the river side of the old building now housing the residences, were designed to form a ‘circle of respect’ around the original Steve’s. The vibrant centre that is the modern Steve’s has now been warmly embraced by the public and neighbouring residents, but it wasn’t always the case. There were difficulties with planning and zoning issues for the redevelopment, and concerns from locals ‘largely because people hate change’,

rooms – they had to wait until about 2.00 am to check in, because we had a function on that night – and we took them breakfast in bed the next morning.

says Murray. The whole process took some 15 years, and has now been much accepted by the West Australian community. “The old hotels – those built in the early part of the last century – had outlived their usefulness, and the suburbs have been built around them,” he says. “There’s been a changing of the guard, and we’re losing the suburban hotels we grew up with, which is a shame. “What we’ve tried to create here is a meeting place that’s close to the community, and is contemporary while retaining the integrity of the old building. And now we’ve made those changes, people here are saying: ‘what a wonderful thing!’.” A casualty of the redevelopment was the overnight suites – which was quite a disappointment to a particular client with a strong connection to the place. “This man had always claimed he’d been conceived at Steve’s, where his parents spent their wedding night,” Murray recalls, “so when he got married himself, he wanted to continue the tradition. But by then, we didn’t offer accommodation. “So we set up a bedroom in one of the function

“He’s since told me his own son was conceived that night, so maintaining our family tradition helped him to maintain his.” For all his dedication to customer service, it’s winemaking – which combines his twin loves of primary production and Steve’s Hotel – that is Murray’s true passion. “It’s a family vision,” he says of the McHenry Hohnen concern. “My sister Sandy, brother-inlaw David Hohnen (formerly of Cape Mentelle in Margaret River and Cloudy Bay in New Zealand) along with his daughter Freya and son-in-law Ryan Walsh are all involved. We’re a pretty close unit, and we have passion for what we do.” Their 120 ha of vines yield 18 varieties of fine wine, much of which is exported and receives glowing reviews, most recently in the James Halliday Wine Companion. Chief Vintner David Hohnen was also honoured with the inaugural Len Evans Award for Leadership in 2007. “One of the great things about winemaking is that you get to nurture [the crop],” he says. “You prepare the land, plant the vine, then pick the fruit, make the wine, and then you take it to the market. Primary producers like ourselves are hands-on with every aspect of what we do. It’s wonderful!” But when asked to nominate his fondest career achievement, Murray’s exacting restoration of the original Steve’s building – his boyhood home – is the obvious standout. “Not many people get to restore and change the nature of a 100-year-old building without losing its integrity. It was an honour to undertake, and I’m happy with what I’ve created. It’ll always be a major part of my life’s achievements,” he says.

Pulling up anchor Bryan Matthews would be quite happy to sail off into the sunset … as long as someone else is at the helm.

I like those ‘Desert Island Discs’ type of radioshows; never mind that – if you did happen to get shipwrecked along with your ten favourite records – you’d still need to find a CD player [or gramophone] and a powerpoint somewhere in the trunk of a coconut tree. I also enjoy that daft hypothetical question about ‘the one book you’d want with you’ if you were to suffer the not inconsiderable inconvenience of being a castaway. Most people say something impressive like The Bible or War and Peace but the best answer came from the comic who said ‘I’d probably take How To Build A Boat’.

cruiser – and responsible for my passengers – I’d be thinking ‘did somebody mention a bar?’ just before hitting one made of sand. As a freeloader on someone else’s boat, I needn’t worry about steering right or left of the green circle and red triangle. Or is it a red circle and green triangle? I could check by popping down to our pontoon right now but I can’t be bothered with the kind of research that distinguishes a Pulitzer winner from a former contributor to The Truth. I’m really not the kind of committed skipper and navigator you want at the helm. Plus the word sextant makes me giggle.

And on that note ... about this time each year I enjoy Sanctuary Cove’s hosting of one of the world’s best boat shows – a rare occasion when thousands of Australians talk about boats without once mentioning the words ‘intercept’, ‘Malaysia’ or ‘Nauru’. So I thought I should write something suitably topical. Problem is that the one thing I know about boats is that I don’t know much about boats. What I do know makes no sense at all. For

skinheads whose likes included jellied eels and a punch-up). The thing I didn’t like about sailing (ditto kayaking upstream or cycling uphill) was ‘tacking’ and it was visiting ‘skins’ – hurling stones from the beach and then removing their boots to swim after me as I zig-zagged hopelessly against the wind – who convinced me that my nautical future lay with a G&T on a comfy seat on a large vessel skippered by someone else. I still admire the commitment of people who own sailing boats – which seem to involve a lot of opposed to those who opt for motorised cruising which seems to involve a lot of sitting down and slicing of cheese or cold cuts. From our lanai, (‘best position on main river’, just ask my realtor) I only ever see yachts motoring their way towards the Broadwater. I’m assuming most yachties step things up when they hit open water but the cynic in me suspects that some have concluded that with the sails up, the boat kind of leans over and you very often spill your beer. A friend of mine imported his yacht from eastern Europe; now it occurs to me that some countries are more famous for making stuff to be drunk on boats rather than for making the boats themselves. There’s a lot to be said for cracking open a bottle but a lot less to be said for cracking open a hull – which is what his spontaneously did in Raby Bay
