Cool Courses Modern Banquet Cookery Welcome to the banquet kitchen! You’ll start by cooking buffet menus that you’ll serve on stateof-the-art induction units in “Farq,” our main student dining hall. Then you’ll switch to creating traditional plated multi-course banquets. (CIA students do eat well!) Principles of Menus and Managing Profitability in Foodservice Operations Design and create an actual menu that you would offer a guest in your hypothetical restaurant. You’ll consider factors like demographics, your restaurant’s concept, the local economy, cost control, and pricing, and then present your menu and analysis results to the class. Wine Studies Why do culinary professionals need to understand wines and beverages? Because that’s where the profits are!
