It starts with mise en place, a philosophy that goes far beyond station setup and ingredient prep—it’s a way of thinking and problem solving that will prepare you for success in your career and your life. You’ll perfect your “mise” in 1,300+ kitchen and bakeshop hours that form the core of your immersive food and beverage learning experience. You’ll develop your understanding of taste and flavor, and build skills that go beyond the kitchen.

ASSOCIATE DEGREE MAJORS Culinary Arts The kitchen is where you feel at home. Build the foundation for your culinary creativity, from cooking methods to flavor principles to butchery. You’ll learn about sustainability, wellness, responsible sourcing, world cultures and cuisines...knowledge every future-thinking food professional needs.

Baking and Pastry Arts Do you have that special combination of creativity and attention to detail? Learn the techniques, ingredient function, and design principles behind everything from puff pastry to baguettes to entremets—and then envision and create your unique versions. You’ll also learn to prepare savory fare perfect for your own café.

BACHELOR’S DEGREE MAJORS Food Business Management Success in food depends not only on inspired cooking and baking, but also your understanding of business. Whether you want to excel in a company or start one of your own, you need industry-specific knowledge in leadership, marketing, human resources, finance, and more.

Culinary Science Innovative ideas and the ability to turn out a consistently superior product are essential for cooking at the highest level or creating the next big thing in food. With a deep, technique-based understanding of your ingredients, you’ll be equipped to do more inventive and delicious things with them. That’s culinary science, the CIA major with the most kitchen hours.

Applied Food Studies Want to use your passion for food to make a difference? The world needs you. Get an in-the-field immersion in food’s connection with culture, media, sustainability, community, education, and history—and discover how to put what you learn into practice locally and globally.

Hospitality Management This next-level integrated program provides critical business-focused hospitality skills, plus the vital hands-on food and beverage experience you need to become a well-rounded hospitality leader. After all, food and beverage is the heart of the hotel, entertainment and travel experience. With 10x more food and beverage instruction than traditional hospitality programs, you’ll gain the distinct advantage to lead across all aspects of hospitality—from the business and hotel end of operations, to food and event planning. Get Out Into the Ecosystem Tap maple trees and dig in at the Teaching Garden. During Ecology of Food, you’ll explore questions like how and where food is grown, produced, marketed, and its consequences on society—be it positive, negative, or a little of both.

The Science of Deliciousness Fun with hydrocolloids and more! That’s what awaits you in Ingredient Functionality. Through inventive experiments—like making a popping mango gel with sodium alginate and calcium lactate in a fruit purée—you’ll begin to understand the power of your ingredients.

Build a Better Baguette Your challenge in Advanced Baking Principles? Transform traditional recipes for breads, desserts, and other baked goods into new versions tailored for vegan, gluten-free, and no-sugar-added diets that are just as delicious as the original.

Brew U In the Art and Science of Brewing, you’ll learn about the ingredients and techniques of brewing in The Brewery at the CIA and create beers that will be served in our restaurants. Two student brews won gold medals at the 2019 NYS Craft Beer Competition— will yours be next?
