How airplane food goes from the kitchen to your flight By Natalie B. Compton The Washington Post More than 44,000 flights take off around the world every day, and many of those onboard are hungry. On shorter flights, these passengers may opt for a snack pack; on longer ones, they may get a full-fledged meal. Preparing the latter is no small feat. Gate Gourmet is one major player in the airplane catering game, servicing about 750 million passengers a year in some 60 countries. On a typical day at its Dulles International Airport branch, in suburban

In high seasons, that number jacks up to 25,000 meals. Annually, that means Gate Gourmet IAD (as it’s known, using the airport’s code) alone goes through 84,000 Coca Colas, 100,000 yogurt cups and 1,300,000 pounds of ice.

“We’re open 24 hours, seven days a week,” said Gate Gourmet IAD general manager Jim Stathakes (whose preferred airplane meal option is chicken). Gate Gourmet’s Dulles outpost is in airport back country, hidden among office buildings and guarded by security and hygienic checkpoints. The facility measures 132,000 square feet, but the inner workings feel less like a factory and more like a Costco mixed with a commissary kitchen: Around every corner, you’ll find some of the 300 daily employees chopping, washing,

searing and packing food that someone will soon be eating in the sky. Each in-flight meal has to be timed perfectly in a 24-hour window to match its corresponding flight. Produce (usually things you can get year-round, like pineapple) is delivered for just-in-time freshness. Food must be cooked and then blast-chilled, its temperature brought down for safety reasons. Employees must have your meal ready four hours before a flight departs and delivered onto the plane no later than one hour before boarding starts.

Sylvain Harribey is an executive chef at Gate Gourmet who helps design meal plans for its airline clients. While food safety is the No. 1 priority for creations, he also looks to match a meal with its flight path. “We want to make sure we have the right food for the destination” said Harribey, who attended culinary school in Bordeaux, France. “When you sit in the plane, that’s your first step in getting to your destination.” If you’re flying from Tokyo, for example, pork with ginger garlic soy sauce and rice is

fitting. A baguette with your meal, meanwhile, sets the tone for a journey to Paris. But there’s one more consideration, too: How we eat in the sky isn’t the same as how we eat on Earth. “We know that up in the air at 36,000 feet, our taste buds are different,” Harribey said. “We don’t [taste] as much salt because the air is drier within the aircraft.” To overcome that biological quirk, Harribey adds a little more salt to dishes, along with herbs and spices to enhance flavors further. You don’t get all that with the snack pack.

YouTube watching doubled since 2015 By Rachel Siegel The Washington Post More than twice as many young people watch videos every day as did four years ago, and the average time spent watching videos — mostly on YouTube — has roughly doubled, to an hour each day. That’s according to a survey released Tuesday by the nonprofit Common Sense Media. The report found that overall screen time among young people hasn’t changed much since 2015. On average, American 8- to 12-yearolds use 4 hours and 44 minutes’ worth of screen media each day. And teens average 7 hours and 22 minutes — not including time spent using screens for school or homework. But in the past four years, time spent

watching videos online has surged, despite mounting concerns from parents and consumer groups about the grip that smartphones and screens have on kids’ lives and development. Advocates worry that features hardwired into certain tech platforms, like YouTube’s default autoplay setting, capitalize on kids’ impulses to keep watching rather than exercise restraint. “More and more screen time is devoted to content that’s been picked for you by an algorithm,” said Michael Robb, a co-author of the study and senior director of research for Common Sense Media. “And then there’s more individualized uses of media on a personal device, rather than a family sitting together.”

For comparison, Common Sense found in 2015 that watching online videos ranked fifth in terms of tweens’ preferred media activities — after TV, music, video games and mobile games. Today, online videos claim the top spot. Limiting screen time for young people is a rallying cry not only among consumer advocates but also among global health communities. In April, the World Health Organization issued strict guidelines on how often parents should turn to videos and online games to entertain or educate their young children. The WHO’s recommendation: Infants younger than 1 should never be in front of screens. Kids ages 2 to 4, the internation-

al health agency said, should have no more than an hour each day of sedentary screen time. YouTube, which has a global audience of more than 2 billion people, launched YouTube Kids in 2015. The company has information for parents with tools for how to navigate its site with teenagers. The company said that accounts belonging to people under 13 are terminated once discovered and that thousands of accounts per week are shut down for this reason. The company also said parents watching with young people may opt for YouTube’s restricted mode, which helps screen out certain content. “YouTube Kids is our experience designed for kids from the ground up and is what we recom-

mend if parents want their kids to watch independently. YouTube is not a site for people under 13,” said Farshad Shadloo, a spokesman for YouTube. Consumer groups caution that despite promises to police inappropriate content, YouTube continues to show violent imagery, drug references, racist language and sexually suggestive content that reaches children. Robb said the percentage of young people surveyed who said they used only YouTube Kids, as opposed to the broader site, was tiny. The Common Sense report pulled from a national survey of more than 1,600 American 8to 18-year-olds about their use of, and relationship with, different types of media. Tweens were defined as children ages 8 to 12, and teenagers as those ages 13 to 18. The report also found that by age 11, the majority of kids — 53 percent — have their own smartphone. That figure rises to 69 percent by children’s 12th birthdays. Young people also spent relatively little

time creating their own content or interacting with others while on their screens. Among tweens, just over half of all screen use went to TV or videos, and 31 percent went to gaming. About 2 percent of screen time each went to video chatting, reading online or creating content like art or music. Common Sense plans to release a similar study in another four years. But James Steyer, the organization’s founder and chief executive, said there was much more urgency for tech companies and federal regulators to respond. Steyer — who is the brother of Democratic presidential candidate Tom Steyer — said children’s screen time has wide-ranging implications for their social and emotional development, how they form relationships, how they identify themselves, and how they are exposed to extreme politics, hate speech and conspiracy theories. “This is central to the fabric of our lives,” Steyer said, “and particularly to our kids’ lives.”

Rubenstein donates $10 million to Jefferson Memorial By Michael E. Ruane The Washington Post WASHINGTON — Billionaire philanthropist David Rubenstein announced Tuesday that he is donating $10 million for upgrades, new exhibit space and other improvements to the ailing Jefferson Memorial in Washington. The money will go toward rehabilitating the antiquated 25-yearold exhibits on the lower level and creating a new exhibit area on the main level near the 19-foottall bronze statue of Thomas Jefferson, the nation’s third president and main author of the Declaration of Independence. Restrooms and mechanical systems will also be upgraded. The National Park Service has already embarked on an $8.2 million project to restore the exterior of the tattered landmark, which has grown dingy in recent years from the advance of a black biofilm of algae, fungi and bacteria, as well as other effects of its exposure to the District of Columbia’s weather, climate and insects. Rubenstein —

co-founder of the Carlyle Group, a global private-equity firm based in Washington — is passionate about U.S. history and has made numerous major history-themed donations in the past. In 2013 and 2015, he donated a total of $20 million to Jefferson’s Monticello plantation, near Charlottesville, Virginia. The 32,000-ton Jefferson Memorial remains open, and the external work should be finished by next spring, the Park Service has said. The memorial sits on fill dredged in the late 1800s from the Potomac River, and on 634 pilings and caissons sunk down to bedrock on the south side of the Tidal Basin. One support goes down through 138 feet of soft earth. Over its seven decades of life, the structure has been affected by the vagaries of its location and the capricious piece of ground on which it sits. As early as 1941, two years before its dedication, some of the supports under the memorial’s main steps began shifting. They had to

be lashed together with steel cable and turnbuckles, according to an engineering report done for the Park Service in 1965. Settlement also caused other supports under the steps to bend slightly, the report says. The steps moved so often that park rangers once kept a special tool at the site to realign them, the report says. Lesser settlement continued during the 1940s and ‘50s. By the 1960s, the front plaza, which was not supported by pilings, began to sink — by as much as three feet — and a $1.1 million engineering project was undertaken to bolster it with more pilings and supports. In 2010, a $12.4 million repair project shored up the memorial’s poorly supported sea wall, which also had been sinking into the tidal ooze. Last year, Rubenstein announced a donation of $18.5 million to help fund what is probably the biggest overhaul of the Lincoln Memorial since the structure was dedicated almost a century ago. The project began in 2016, and the

Park Service hopes to have it finished for the memorial’s 2022 centennial. In 2015, Rubenstein pledged $5.37 million to refurbish the U.S. Marine Corps War Memorial, the 100-ton bronze sculpture of the flag-raising at Iwo Jima during the war. In 2014, Rubenstein announced the donation of $10 million to Montpelier, President James Madison’s historic Orange, Virginia, home, for reconstruction, refurnishing and archaeology. He has also donated $5 million to the White House Visitor Center; $12.3 million to Arlington House, the home of Robert E. Lee; and $7.5 million to help fix the Washington Monument after the 2011 earthquake. The donation for the repairs of the memorial will go to the National Park Foundation,

which will distribute the funds. “Hopefully what we”ll be able to do is make the experience of visiting the Jefferson Memorial even better than it has been,” Rubenstein said as he sat at a table before the memorial Tuesday afternoon. “While Thomas Jefferson is not without some things that we can question today, clearly he did some great things for our country,” he said. “A very incredible person, a great intellect, a great Renaissance man and one of our greatest Americans, so I’m very pleased to be able to do this,” Rubenstein said.

A black cat delays an NFL game By Cindy Boren The Washington Post When the going gets weird at a game, you’ve got to hope that Kevin Harlan is there to call it. Luckily, he was present when a black cat ran onto the field during “Monday Night Football.” Play stopped as the cat, displaying a high motor and, well, catlike reflexes, scampered around the field at MetLife Stadium, delaying the game between the Dallas Cowboys and New York Giants. “He’s walking to the three,” Harlan deadpanned on the Westwood One broadcast. “He’s at the two, and the cat is in the CDW red zone!” Yes, he worked a sponsor’s plug into the viral moment. “Policemen and state troopers have come onto the field, and the cat runs into

the end zone!” he continued, growling, “THAT IS A TOUCHDOWN! And the cat is elusive, kind of like [running backs Saquon] Barkley and [Ezekiel] Elliott, but he doesn’t know where to go!” The cat briefly ran into the stands, in a feline variant of the Lambeau Leap, then returned to the field and scampered up the tunnel. [We pause briefly to report that the cat has not been found, but that MetLife Stadium officials promised to take it to a veterinarian when he/she is.] The touchdown did not count, of course, because although the kitty broke the imaginary plane of the goal line, it did not have possession of the ball at the time. Duh. Also, the NFL probably is going to fine it for violating

its game-day uniform rules. As for the game, B.C. (Before Cat), the Giants were leading. After the interlude, the Cowboys outscored them, 34-9, and won, 37-18, with owner Jerry Jones, naturally, finding a way to make this all about him. “I haven’t seen one glare at me that far away before. I know he was looking at me the whole time he was out there,” Jones said (via The Athletic). “But things did kind of change when that black cat came. What was amazing to me was how few people wanted to go grab him.” The call was catnip for CDW, telling The Washington Post in an email that it was “awed by this cat’s inspiring display of athleticism, proving what can happen when talent, hard work and opportunity meet. But working the sponsor into the call is some next-level stuff and he wasn’t the only one having fun with the moment, with fans noting that he found the end zone more easily than either the Giants or Jets. Security told Madelyn Burke, a New York reporter, that several feral cats live at the stadium, coming out after the game and being fed.

Nigerian Oscar entry disqualified ‘Too much English’ in script By Sonia Rao The Washington Post Nigeria’s first-ever Oscar entry has been disqualified from competing in the international film category for featuring too much dialogue in English, which happens to be the country’s official language. “Lionheart,” the directorial debut of starring actress Genevieve Nnaji, follows a woman as she navigates a male-dominated industry to save her ailing father’s business. The film’s characters speak in Igbo, a language spo-

ken in southern Nigeria, for a small portion of the 95-minute run time, but not long enough to meet the category’s requirement that each entry feature a “predominantly non-English dialogue track.” The decision to disqualify “Lionheart,” relayed to Oscar voters via email, was first reported by the Wrap. An article published Monday states that the title “had not been vetted” by the Academy of Motion Picture Arts and Sciences before appearing on the

record-breaking list of 93 entries released early last month. Oscar-nominated director Ava DuVernay criticized the category’s criteria by tweeting to the academy that “English is the official language of Nigeria. Are you barring this country from ever competing for an Oscar in its official language?” Franklin Leonard, founder of the Black List, a yearly survey of the most popular unproduced screenplays, pointed out that Nigerians speak English because of colonialism. Nnaji, quote-tweeting DuVernay, joined the discussion Monday.

“This movie represents the way we speak as Nigerians. This includes English which acts as a bridge between the 500+ languages spoken in our country; thereby making us #OneNigeria,” she wrote, adding in another tweet: “It’s no different to how French connects communities in former French colonies. We did not choose who colonized us. As ever, this film and many like it, is proudly Nigerian.” “Lionheart” is not the first international entry the academy has deemed ineligible; in 2007, Israel was asked to submit another fea-

ture because a large portion of Eran Kolirin’s “The Band’s Visit” was also in English. The rule disqualifying both films was approved in 2006, ahead of the 79th Academy Awards. Before that point, each entry’s dialogue had to be in the official language of the country submitting the film. The academy’s board of governors altered the category again this past April to promote a “positive and inclusive view of filmmaking,” per a release announcing that the “foreign language film” category would now be called “international feature

film.” The language criteria did not change. Reached for comment on Tuesday, the academy stated that, despite its new name, the “intent of the award remains the same — to recognize accomplishment in films created outside of the United States in languages other than English.” “As this year’s submitted films were evaluated, we discovered that ‘Lionheart’ includes only 11 minutes of non-English dialogue, which makes it ineligible for this award category,” the statement concluded.

Endangered dingo found in Australia By Kim Bellware The Washington Post Weeks after a stray puppy was discovered in a backyard in rural Australia, DNA tests revealed that the furry creature is not a dog at all but an Australian alpine dingo. The news was a welcome surprise for conservationists: Australian alpine dingoes are an endangered species vulnerable to extinction because of inbreeding, hunting and government eradication programs, according to the Australia and Pacific Science Foundation.

The dingo pup, since named Wandi, was discovered in the backyard of a resident in Wandiligong, a rural town in the Australian state of Victoria in August, the Australian Dingo Foundation announced Thursday. Wandi was later moved to the dingo foundation’s sanctuary while results of a DNA test were pending. Lyn Watson, who directs the Australian Dingo Foundation, told the Australian Broadcasting Corporation that of the three types of Australian dingoes, which include inland and tropical, alpine dingoes like Wandi are

the only ones currently in danger of extinction. “For us he is going to be a very valuable little thing depending on his eventual development and the way he continues to get along with everybody else in the sanctuary,” Watson said. The rarity of receiving a purebred as a pup means Wandi could eventually become part of the sanctuary’s breeding program, which includes about 40 other adult dingoes, according to CNN. Experts say most dingoes in the island country are dog-dingo hybrids, Austra-

lian Geographic noted in a 2011 article about the potential extinction of purebred dingoes. “Nowhere on the east coast of Australia can you find a dingo population that isn’t at least fifty percent, and in some cases eighty percent, domestic dog,” Ricky Spencer, an associate professor of zoology at the University of Western Sydney, told the magazine at the time. The unnamed resident who discovered Wandi heard the pup “hiding and crying in the garden,” the Australian Broadcasting Corporation

reported. The resident initially thought Wandi was a stray dog or a fox and soon took him to Bec Day, a local veterinarian. Wandi’s original journey may have ended with him being dinner for an eagle or other bird of prey. Instead, the young pup was likely dropped from its captors talons, Day told ABC, noting what appeared to be claw marks on Wandi’s back. “There were no other pups nearby,” Day said. “The resident hadn’t heard any [other dingoes] calling. So he was just a lonely little soul sitting in a backyard.”

‘Self-partnered;’ latest redefinition of ‘single’ By Lisa Bonos The Washington Post For years, people have been looking for alternatives to describing themselves as “single,” and now Emma Watson has a new one: “self-partnered.” In an interview with British Vogue, the “Beauty and the Beast” actor, who’s 29, describes her stress around turning 30 while still figuring out things such as navigating her love life, starting a

family and building a home. She’s very happy being single, she said, adding, “I call it being self-partnered.” Such alternatives don’t always ring true. At a 2014 panel discussion I attended, one dating coach suggested using the word “available” instead of single. As in: “You’re available to find love,” he said. That term didn’t seem quite right; to me, it felt both creepy and desperate.

In 2015, we coined a new word over here at The Washington Post: solo-ish. We viewed it as a way of saying: My life is my own, but I share it with others, too — family, friends, co-workers. Sometimes there’s a special someone but not always. Whether “self-partnered” speaks to you or not, it harks to the larger trend of sologamy, or marrying oneself. Japanese travel

agencies offer “solo wedding” packages: wedding dress, bouquet, limo, hotel stay and photo album included. An Italian woman hosted a “fairytale” wedding, sans prince, for herself and 70 guests. A New York woman “married” her community, a way of using the wedding ritual to commemorate the strong bonds she has created with friends. And, of course, there was that”Sex and

the City” episode in which Carrie Bradshaw declared she was marrying herself and was registered at Manolo Blahnik. Bella DePaulo, a sociologist, author of many books on single life and Post contributor, thinks “self-partnering” doesn’t quite fit, because it’s still about partnering. “When I want to specify people who embrace single life as their best life, I use the phrase ‘single at

heart,’” DePaulo said in an email. It’s easy to mock solo weddings or Watson, for calling herself “self-partnered,” but both hit on the importance of each person’s relationship with themselves. It”s something you cultivate and work on, and it can change over time. Just like a relationship with someone else, this bond can be healthy, toxic, boring, fulfilling, loving or deficient.

How to create a winter-friendly outdoor living space

By taking measures to make their outdoor living spaces winterproof, homeowners can enjoy these areas of their homes even more.

 Cover your deck. A covered deck may appear to make the space less enjoyable during spring and summer. However, covered decks can protect residents from the sun on especially hot days while also making the space more functional in winter. An overhead shelter on a deck can be outfitted with heaters (and fans to provide a cooling effect in summer) and allow residents to sit outside and watch snow fall without getting wet.  Plant the right trees. Coniferous trees prevent wind, which can be especially harsh in winter. Homeowners who are unsure about which direction wind typically comes from can consult a landscape architect to determine where to plant the trees to ensure they’re most effective.

 Fire up the patio. A firepit or fireplace can warm up an outdoor living area, making such a space warm and cozy even on a cold winter night. A patio with a built-in firepit can cost a pretty penny, but such an addition can withstand winter weather better than a standalone firepit, which might be vulnerable to being tipped over by winter winds.  Install lighting. The sun sets early in winter, so homeowners won’t be able to rely on natural light to illuminate their outdoor living spaces well into the evening like they do in summer. Heat lamps can be used to both warm and illuminate a space, serving dual, budget-friendly functions. With the right adjustments, outdoor living spaces can be enjoyed throughout winter.

Are you ready for insect zombies?

But for certain caterpillars, spiders and worms, it can mean being turned into a puppet slave for days or weeks, until they die a grisly death. Sound like the stuff of Halloween nightmares? It’s just an ordinary day in the world of insects, where an estimated 10 percent — about 120,000 species — are parasitoids (pronounced pare-uh-si-TOID). That is, they occupy and live off a host insect, eventually killing it. Parasitoid insects have been around for at

least 100 million years, since before there were dinosaurs, says Floyd Shockley. He is collections manager in the department of entomology at the Smithsonian National Museum of Natural History. A lot of them are hymenopterans (hi-me-NAHP-terans). This is the order that includes ants, bees and wasps. Shockley says this makes sense because “they’re already equipped with stingers to inject chemicals” to make their victims do their bidding. They’re also all females. That’s because there’s only one reason parasitoid insects

take over other insects: to lay eggs in them. Hatched larvae munch on the insides of their still-alive host. Then, when they’ve matured, they eat their way out. There are fly parasitoids that decapitate (or take the heads off) fire ants. Hairworm parasitoids that make grasshoppers jump into water and drown. Even a fungus that pierces the heads of ants to distribute its spores. “But wasps,” Shockley says, “do some of the coolest stuff.” Glyptapanteles (gliptuh-PAN-teh-leez) wasp larvae feed on an inchworm’s insides till they’re ready to pupate,

or live in a cocoon. Then they push their way through its skin and attach to the outside of its body. “Two larvae stay behind inside, manipulating the worm into protecting their brothers and sisters,” says Shockley. Anelosimus eximius (an-eh-LOSS-ih-mus ex-IH-me-us) spiders build webs in groups and kill invaders. So, Zatypota wasps inject a chemical into a single spider that makes it wander off to spin its web alone while larvae feed on its blood. Shockley says other parasitoids use their hosts’ existing behaviors. But Anelosimus

eximius doesn’t know how to build a web by itself. “The wasp programs a totally new behavior in the spider that it wouldn’t do on its own,” he says. Shockley’s favorite parasitoid might be the emerald wasp. It stings a much larger, heavier cockroach, making it docile. Then it climbs on its head and steers it by its antennae back to its nest “like a dog on a leash,” Shockley says. “It’s weird.” Scientists only recently developed the tools to study parasitoid wasp DNA. They’re researching how hatched larvae avoid triggering immune responses,

Uber’s self-driving cars have flaw; jaywalkers look out! By Hannah Knowles The Washington Post Software detected the woman almost six seconds before Uber’s self-driving car hit her, investigators say, in the crash that would lead to her death and prompt the ride-share giant to slam the brakes on its autonomous vehicle testing. But the SUV didn’t try to stop until about a second before impact. One big reason: It wasn’t designed to recognize a pedestrian outside a crosswalk, according to documents released this week by the National Transportation Safety Board after a 20-month investigation. Revelations that Uber failed to account for jaywalkers — with deadly results in Tempe, Arizona, last March — fuel long-standing objections from critics who accuse companies like Uber of rushing to deploy vehicles not ready for public streets. They’re skeptical that automakers eager to lead on industry-transforming technology are doing enough to avoid another tragedy as they continue to test cars out in the real world. “Even the most junior human driver knows to expect that people sometimes walk outside of crosswalks,” said Jason Levine, executive director of the Center

for Auto Safety, a District of Columbia-based nonprofit. “When we have public road testing that has programming that essentially chooses to ignore the realities of how people interact with public infrastructure, it’s really dangerous.” The bigger question for Levine: Could similar serious oversights plague other models across the self-driving industry? “The answer is, we don’t know, because there’s no requirements around how you program this technology before you put it on the road,” he said. He wants to see federal regulation. Uber has made “critical program improvements” in the wake of Elaine Herzberg’s death, spokeswoman Sarah Abboud said in a statement. The company’s system is now able to handle scenarios like jaywalking in which people or bicyclists are not following road rules, she added, though human drivers may still need to intervene at times. She declined to say how long Uber had been aware of the failure to recognize a pedestrian not in a crosswalk, and said the company is not commenting on specifics of the investigation because it is ongoing. “We deeply value the

thoroughness of the NTSB”s investigation into the crash and look forward to reviewing their recommendations once issued after the NTSB’s board meeting later this month,” Abboud said in a statement. The crash that spurred the inquiry is thought to be the first death related to testing of autonomous vehicles. A human was in the driver’s seat but didn’t keep the car from plowing into 49-year-old Herzberg near a busy intersection, according to authorities. Hit as she crossed the street, Herzberg would die in a hospital. Multiple issues contributed to the crash, the NTSB’s documents indicate. Herzberg would likely be alive if Uber hadn’t blocked its car from using a builtin automatic emergency brake, the board found, though it will not issue its decision on what caused the death until its meeting later in November. But another major problem was software’s inability to identify a person in the car’s sights, and its resulting failure to predict how that person would move into the vehicle’s path. Uber’s system perceived Herzberg as a vehicle, a bicycle and an “other” object in the seconds before collision — but

not a human being. The death halted Uber’s testing as scores of companies, from Google to General Motors, explored self-driving technology. It drew strong reactions from many experts who warned of a need to hold vehicles deployed in public to stricter standards. But others argued that cars can’t be fine-tuned without real-world driving experience. Nine months later, Uber resumed its test drives in Pittsburgh. The company hopes to bring its self-driving cars back to other cities such as San Francisco, Abboud said Wednesday, but is focusing right now on

using human drivers to collect data on those particular locations that it can incorporate into its testing in controlled environments. Arizona was particularly hospitable to companies looking to test their young autonomous tech in the years leading up to Herzog’s death. Before that crash, Gov. Doug Ducey, a Republican, said he welcomed Uber’s self-driving cars “with open arms and wide open roads” while criticizing California for stifling such testing with “more bureaucracy and more regulation.” Difficulties recognizing pedestrians aren’t unique to Uber’s self-driving cars, said

Across the board, he said, many autonomous vehicles struggle to successfully navigate more than 10 or 20 without human intervention, though some standouts like Google’s car can make it much farther.
