Remembrance Sunday this year falls on 12th November, when the nation remembers and honours those who have sacrificed themselves to secure and protect our freedom. Paddy and Roger Grimshaw from Tredington are going to host a Remembrance Concert in their barn on Saturday 18th November to raise money for the Poppy Appeal and to remember their friend Harry Robertson who was one of the longest-standing members of the Tewkesbury Royal British Legion. I know it's hard to believe, but Christmas is just around the corner so why not take a trip to one of the many fayres and festivals that are on and start your Christmas shopping early? The Christmas Market returns to town on Thursday 23rd November and the 40+ traditional chalets selling a wide range of festive crafts and gifts are sure to get you into the festive spirit! Cheltenham's Christmas lights will be switched two days later (25th Nov) with switch-ons in the town centre, Montpellier and The Brewery Quarter. Town Centre Talking In a hurry to make a difference – whether you work, rest or play in Cheltenham It’s often said that time flies when you’re busy. If that is the case, then Cheltenham BID is clearly doing something right. It doesn’t seem five minutes ago since we were announcing the news that our businesses had voted in favour of setting up Gloucestershire’s first Business Improvement District. In fact, that was early last summer. The BID was up and running by August 2016 and, before we knew it, we’d not only completed our first year but held our first annual review meeting last month where we reported back to our businesses on exactly how we had spent their money. That is something we must never forget as a BID. We are funded by a levy paid directly by our 600plus businesses (in simple terms, the bigger they are, the more they pay) and we must spend their money wisely and to mutual benefit. The good news was that the businesses that turned up at the meeting seemed pleased with what we’d done so far. We talked about the town centre events we’d put on (from boutique sales to cocktail weeks), the way we’d helped promote the town (with a new map and guide and a gift card) and the direct support we’d given to businesses (from cutting utility bills to improving their digital skills).

On public realm, we have cleaned up significant areas of the town but our focus remains on getting the authorities to sort out the appalling state of much of the High Street. But what the businesses were perhaps most interested in was what comes next. And we had a lot of news for them – and for everyone who works, rests and plays in Cheltenham. We’re going to help improve the Christmas Lights to start with. The BID has put money in (on top of the Borough Council committing the same spending as in previous years) and that will make a big difference with both new lights and some landmark new displays. It is only the start though. In future years, when the John Lewis development is finished, we’re aiming to up the ante even more. We’re also looking at a “Light Up Winter” plan for those quiet weeks around February when we hope to light up some key buildings in a new way. It’s all about bringing

people to the town at times they wouldn’t otherwise visit. That’s just what we’re hoping will happen with some other new ideas - Cheltenham Beauty Week, Foodie Cheltenham and a new trail highlighting the BID zone’s best-kept secrets, called Hidden Histories, Hidden Treasures. On marketing and promotion, look out for our work alongside the new Marketing Cheltenham, which will see massive improvements in the way the town is promoted. We’ll be producing new shopping guides too. French Omelette with Garlic Tomatoes Serves 1

Ready in 15 minutes

Eggs are the perfect fridge standby for a quick and filling supper. Here’s how to make a classic creamy French omelette for one in a few simple steps – the recipe can easily be doubled to serve two people.

Toss the tomatoes and garlic with the olive oil. Place on a foil-lined grill pan and cook under a medium heat for 4-5 minutes until just tender.

Ingredients: • • • • • • • •

8 cherry tomatoes, halved 2 tsp olive oil 1 garlic clove, crushed 2 large eggs 1tbsp milk Salt and freshly ground black pepper Large knob of butter Spinach and rocket leaves, to serve

Meanwhile, lightly beat the eggs and milk in a jug and season with salt and freshly ground black pepper. Heat the butter in a small omelette or non-stick frying pan until it is just foaming. Pour in the beaten eggs and stir gently with a fork, drawing the mixture in from the sides to the centre as it sets and letting the liquid egg run out to the sides. When the omelette is just set, stop stirring and cook for a further 30 seconds to brown the underside (see tip). Place the grilled tomatoes on top of the omelette.

TIP

Take care not to overcook the omelette – keep the heat at medium and remove the pan from the heat when the top is still soft and creamy. Page 10

Slide the omelette onto a serving plate, tipping the pan to gently fold it over the tomatoes. Serve immediately with salad.

Chalk Talk “It’s been an incredible fortnight for animal welfare.” Those are not my words, but those of the RSPCA. But with print and social media dominated by Brexit commentary, a decisive step forward in this area has been almost drowned out. It relates to an issue I care passionately about, and which I know from my email inbox Cheltenham residents do too: the ivory trade. Back in February, I used a debate in Parliament to challenge Ministers to act more decisively over the ivory trade and elephant poaching. It’s now well established that the number of wild elephants has declined by almost a third in the last decade. 20,000 a year are still being slaughtered due to the global demand for ivory. The illegal ivory trade is a highly organised industry, estimated to be worth up to £17 billion a year. Those statistics, as others have said, ‘shame our generation’.

Although the trade of raw ivory of any age is already prohibited, the old rules allowed worked ivory items produced after 3rd March 1947 to be sold with a certificate. That broad exemption, however well-intentioned, created a loophole which is being ruthlessly exploited. And although primary responsibility for conserving elephants rests with the host nations, I believe we must do everything we can to avoid fuelling the trade. The fact is that there were more than 36,000 ivory items exported from the UK between 2010 and 2015, more than three times that of the next biggest exporter, the US. That creates a moral responsibility on us to act. Now the Government has announced plans to tighten the law on ivory sales. The proposed new ban will cover items of all ages, and exemptions have been drastically tightened – relating principally to musical instruments and items

of cultural importance. This change in the law will build on our work both at home and overseas, which includes the training by the UK military of an elite force of anti-poachers in African countries. It also means that we can show global leadership just as we host a major illegal wildlife conference in 2018. I’m determined that we should get robust measures in place before that begins. A consultation on the Government’s proposals has now opened and will run until 29th December. If you have a moment, do respond. Gloucestershire Writers Wow at Cheltenham Literature Festival Twelve, prize-winning Gloucestershire men and women delighted audiences on the last night of the 2017 Cheltenham Literature Festival. The best of Gloucestershire Writers’ Network competition, read their work on the festival theme, ‘Who Do We Think We Are?’ alongside judges: Dr. Lania Knight, award-winning writer and senior lecturer in English and Creative Writing at University of Gloucestershire and acclaimed poet Roy McFarlane, formerly Poet in Residence at Starbucks and the Shakespeare Birthplace Trust. Frances March from Stroud won the poetry prize with her beautiful piece: ‘1956: Sheltered’ and the prose winner was Nastasya Parker from Dursley, with her moving short story: ‘The Maze’. Runners-up were: Val Ormrod (Alvington), Belinda Rimmer (Bishop’s Cleeve), Julie Wiltshire (Cam), Jennie Farley and Judith Green (Cheltenham), Liz Carew and

Hygge The best known of our Scandi set, hygge was massive last winter and it looks like it’s here to stay. Pronounced ‘hoog-uh’, the Danish word is not directly translatable into English, but the overall concept stands for cosiness and contentment, creating a warm and inviting atmosphere, and enjoying good times with friends and family. When you recognise that special moment – it’s the feeling of hygge. It’s well known that the Danes are the happiest people on the planet, and maybe it’s all because of hygge, which is an integral part of the nation’s culture and psyche. The high season for hygge is winter – it helps make long, dark evenings more bearable – and, especially, Christmas. Key elements? Home-cooked comfort food; Page 14

Overall, it’s not about spending money, but trying to be kind to yourself; hygge is when there’s nothing to worry or annoy you, and you take great pleasure from simple things. Lagom The lagom trend hails from Sweden, and it roughly translates as ‘not too little, not too much’ – i.e. just the right amount. It’s applied to everything, from drinking coffee to buying a house, and its aim is fairness and contentment. Apparently, while hygge is a momentary state of happiness, lagom is more to do with an overall approach to life. And this sense of moderation and balance extends naturally to home design – functional, unfussy, minimal and wellmade pieces are key, with an emphasis on durability and sustainability. Naturally, Ikea has created a LIVE Lagom project, in which the Swedish flatpack superstore ‘supports customers and co-workers

with products, workshops, bespoke advice and an active community to help save energy and water, reduce waste and promote a healthy lifestyle.’ How else can you incorporate a sense of lagom in your home? Keep things simple, declutter, tidy, reduce your carbon footprint (LED light bulbs, for a start) and choose furniture and accessories that are pared-back, practical and stylish without being showy. Use neutral colours and natural materials. gLuggavedur The latest Scandi trend is gluggavedur, from Iceland. It means, literally, ‘windowweather’, or an overall concept of curling up indoors while watching the world go by outside, specifically when the weather looks nice from indoors but is probably not so great when you’re actually out in it. Friends of Pilley Bridge Nature Reserve Apple Day The Friends of Pilley Bridge Nature Reserve was formed in 2012 to protect and improve this environmentally important area as a reserve for wildlife and as a resource for the enjoyment of nature by the local community. In October the Friends held their annual Apple Day; a fun packed event where local residents came together to enjoy freshly pressed

apple juice, home baked cakes, games and a scavenger hunt. Also as a wonderful treat, a ‘train’ was brought along to give children a ride along the recently installed section of track under Pilley Bridge. Over the five years since the Friends group was set up, they have achieved such a lot including improvements to the wetland area to the east of the reserve. A Busy November by Pippa Greenwood

Despite the seasonal slowdown there are lots of jobs which, if done now, could end up saving you time and money later on - so here are the top November gardening tasks to get to grips with. Hoe off weeds that are around now, as some might still set seed during mild, damp periods. Provided they have no seed pods their top-growth can safely be composted, but bin, burn or rot down fleshy weed roots to prevent them growing in the compost heap! Cut back or pick off obviously diseased leaves and stems to neaten flower beds and borders, and remove some of the foliage that is dying back purely due to the time of year. Leave some deteriorating but healthy foliage in place to provide protection for the crowns of more fragile plants. Rabbits become more of a menace as natural food supplies reduce, so make sure that rabbit netting is not damaged and that trees, especially those that have been planted recently, are fitted with tree guards. If there is a sizeable tree near your lawn, rake up fallen leaves on a regular basis to prevent damage to the grass beneath. Page 18

Trees, shrubs and climbers that have been planted recently may need protection from frost and cold winds over their first winter. Use a layer or two of horticultural fleece draped over the plant and pegged in place; it can be removed on warmer days. If you’re planning on hedgeplanting, remember that many hedging plants are cheaper if bought ‘bare root field grown’, meaning lifted from their nursery field without being potted on. Order now to make sure you get the pick of the bunch. Bare root plants are not feasible once the leaves start to appear next year. Use seed catalogues and websites to help decide what you want to grow next year. Many suppliers offer seeds and young plants of many vegetables, so order now and you can relax, knowing that you have got your first choice selection. The extra space that the remaining canes will have will allow them to grow away better, and also gives them more freedom to move about in that way which makes bamboos so very appealing. Less tender bulbs such as nerines and many of the agapanthus will winter better if you give them a little protection now. Mound dry chipped bark or other mulch over the area in which they are planted. And last but not least, before water butts fill up with autumn rain grab a sturdy brush and clean each one out thoroughly, removing deposits of algae, soggy bits of plant and general gunge! Rinse out and then re-install ready to collect some rain. Seventy Years of Marriage The Queen and Prince Philip but, unsurprisingly, he was courting older girls. However, he visited Windsor often and was entranced by the family feeling of Christmas there with Elizabeth in 1943, which his own life so lacked.

On 20th November, Queen Elizabeth II and Prince Philip celebrate seventy years of marriage (the longest of any British monarch). We look back over their 75-year romance. A Queen in WAiting And A HAndsome Prince Born on 21st April 1926 to Albert and Elizabeth, the Duke and Duchess of York, Princess Elizabeth became heir to the throne when her uncle’s abdication in 1936 made her father King George VI. Prince Philip of Greece and Denmark was born on 10 June 1921 to Prince Andrew of Greece and Princess Alice of Battenberg. An oftentragic childhood was spent in exile with relatives, mainly in England without his parents. His mother was taken to an asylum when he was nine. After boarding school, he joined the Royal Navy and served during WWII. Elizabeth and Philip first met at a royal wedding in 1934, but in 1939 Philip gave 13-yearold Elizabeth a tour around Dartmouth Naval College. She was instantly smitten Page 22

After his posting home in January 1946, Philip regularly visited Buckingham Palace, carrying a picture of Elizabeth in his bag while she made noticeably more fuss about her appearance! In a letter, Philip wrote that he had “fallen in love completely and unreservedly.” But despite Philip’s loyal service and royal connections, the courtship wasn’t welcomed by all. Philip didn’t have the ‘right’ education, clothes or money - and had sisters married to Nazis. However, Philip’s uncle, Lord Mountbatten, worked to change popular opinion. When Philip proposed in summer 1946, the King consented but insisted on delaying the official announcement until Elizabeth turned 21. Philip renounced his Greek and Danish titles and was merely Lieutenant Philip Mountbatten on their official engagement in July 1947. Before the wedding, however, he was made Duke of Edinburgh, with Elizabeth becoming Duchess on their marriage. mArried life Elizabeth and Philip married at Westminster Abbey on 20th November 1947. A year later their son Charles arrived,

followed by Anne in 1950. But family life was soon disrupted. In February 1953, Philip broke news of the King’s death to Elizabeth while in Kenya, and abandoned his naval career to support her in her new role. They moved to Buckingham Palace and Elizabeth was crowned on 5th June 1953 at Westminster Abbey, watched by millions on TV. Andrew and Edward, born in 1960 and 1964 respectively, completed their family. golden yeArs Throughout the years, they have continued to show affection and support for each other, enjoying the ups (jubilees, the arrival of grandchildren and greatgrandchildren) and weathering the downs (long separations from their children, family scandals and divorces, fires; their ‘annus horribilis’). In a thoughtful gesture, the Queen gave her husband the title of Lord High Admiral, titular head of the Royal Navy, when he turned 90. “Their marriage is a true love story,’’ said former Buckingham Palace press secretary Dickie Arbiter. On their Golden Wedding anniversary in 1997, they paid touching tributes to each other. “He has, quite simply, been my strength and stay all these years,” said the Queen. “Tolerance is the one essential ingredient in any happy marriage,” said Prince Philip. “The Queen has the quality of tolerance in abundance.”

A Common for All? Readers of this magazine might have noticed in the local press that the Cleeve Common Trust organised a series of activities during the summer. Some of you might even have taken part. For my article this month I thought it might be interesting to explain how the Trust came into being. In 1890 Colonel N.B. Thoyts, the mayor of Cheltenham, described Cleeve Common as the town's lungs and free breath. He was giving evidence at a Parliamentary enquiry which had been set up to investigate whether an Act of Parliament was needed to control the uses of the common. The free access enjoyed by the people of the spa town was increasingly resented by the local commoners who had the right to pasture their animals on the common. As a result of the enquiry, an act was passed under the long-winded title of Commons Regulation (Cleeve) Provisional Order Confirmation Act which set up the Board of Conservators who, as the Cleeve

Common Trust, still administer the common today. The minutes of that Parliamentary enquiry make interesting reading, informing us of the perceptions and prejudices of those people with an interest in this upland pasture. The common had been used by the people of Bishop's Cleeve, Woodmancote and Southam as pasture for their sheep, cattle, horses and donkeys for centuries, but when Cheltenham races were held on the hill, principally between 1819 and 1842, they left a legacy of racehorse training, with the horses being brought up from Prestbury, but the trainers there had no rights on the hill. This encouraged a few of the local commoners to extort payments (£40 a time was mentioned at the enquiry) from the trainers to compensate for damage caused by the horses 'galloping by like a whirlwind', sometimes as many as ten in a line. Even riders of horses using the common for pleasure were charged £5. These illegal payments were said to have been subsequently spent in the public house! The members of parliament on the committee did not flinch to label these actions as blackmail which needed stamping out. All the witnesses at the enquiry agreed that the uses of the common needed regulating, but they disagreed about the method. Ironically the two witnesses most

opposed to the proposals did not live locally. Arthur Heavens-Smith lived in Cheltenham (he had previously lived in Winchcombe) and William Etheridge kept a public house in London, although he came from a local family. They were both commoners because both owned freehold land locally which gave them the right to pasture as many animals on the common in the summer as their land would support in winter. HeavensSmith claimed he could winter twenty 'young beasts' on his fifteen acres but Etheridge failed to explain how the third of an acre holding of one of his tenants could sustain nine sheep in winter! The crucial point to which these two objected was the number of places on the proposed Board of Conservators allocated to Cheltenham, in return for the town council's annual contribution of £50 towards the expenses of administering the common. £40 of this was proposed to pay for a haywarden, the forerunner of today’s rangers, to safeguard the animals. If four were appointed, together with the two appointees of the Lord of the Manor who was the legal owner of the common, these six could block proposals from the other six conservators who represented the local commoners. In the end, Cheltenham accepted three representatives, which decision being agreed by all allowed the chairman to recommend the act be passed. Hospice unveils Christmas beneficiary ball The only hospice in Gloucestershire giving inpatient care has announced details of its prestigious Christmas celebration raising funds for its specialist services. For the first time, the event will be held at the stunning Princess Hall at Cheltenham Ladies College, giving the exclusive opportunity for guests to celebrate with family, friends, staff or entertain partners and clients. Taking place on Friday 15th December the evening offers a traditional Christmas celebration packed with live entertainment and seasonal surprises, including a champagne diamond raffle in association with RJ Spicer Goldsmith. Hosting the evening, which is sponsored by Pulhams Coaches, is Craig Wright and auctioneer Philip Allwood, the star of Bargain Hunt, Flog It and Dickinson’s Real Deal will be overseeing the evening’s charity auction, sending some highly exclusive lots under the hammer to help raise funds for the hospice. Should You Invest In Stocks And Shares, And If So, How Do You Start?

With savings interest rates at a record low, you may be considering whether to take a more adventurous approach with your money. Purchasing stocks and shares is one way to do this – it’s a long-term investment that can reap benefits if you’re prepared to take a risk and branch out from the ‘standard’ savings accounts. Investing in this way can provide you with funds you wouldn’t otherwise accrue, as long as you’re not looking for a return in the short-term. So before we see how to get started, let’s look at what stocks and shares are in more detail. A smAll piece of A compAny When you purchase shares in a company, you’re essentially buying a small part of that organisation. Stock is the term used to cover different types of share, of which ordinary shares, preference shares, and non-voting shares are just a few examples. • ordinary shares - Also known as ‘common stock,’ ordinary shares provide you with a share of a company’s assets and profits by way of dividend payments, as well as voting rights on issues such as executive pay or the Page 30

Payments are usually made twice a year, and you generally have a choice of taking the money as cash or reinvesting it in more shares. growth potential A company’s growth potential relies on a number of factors, including: • Size of their market share. • Management efficiency and experience. • Brand identity and its popularity with the wider population. • Company profits and profit margins. hoW do you get stArted When investing in stocks And shAres? Initially, you should determine the level of risk you’re willing to accept. Understanding that there is always an element of risk, however small the investment, and balancing this with the

potential rewards, is a sensible approach. There are two types of investment when it comes to stocks and shares – direct and indirect. direct investment This involves choosing the stocks and shares yourself, rather than using the services of a broker or other professional advisor. It’s likely to be cheaper, but you won’t receive the expert direction or guidance that a beginner often needs. There are online investment platforms where you can set up an account and pay for your investments as a lump sum, or ‘drip feed’ payments using a monthly direct debit. indirect investment You can also purchase stocks and shares through a stockbroker or financial company. They may also provide online services for buying and selling, but you’ll receive a professional opinion on the most appropriate investments based on your circumstances. Lions Club of Cheltenham November Update The past few weeks have been rather busy for the Lions Club. Four days after the Hurricane hit the British Virgin Islands, members collected money in the High Street to help those affected. As a result, a total of £1,414 was raised and the Club would like to thank all those who gave so generously. Between the 18th and the 24th of September, the Club hosted another of their ever-popular book sales in the Regent Arcade. Over 800 books were sold and the funds were used to make a donation to the Gloucestershire Special Olympics. On 7th of October, the Club held their Autumn Plant Sale at the Exmouth Arms, Bath Road, and would like to thank all their new and regular customers for their support and their friendly nurseryman for supplying excellent plants once again. And now for the big project of the year, The Wenceslas Winter Fuel Allowance

Appeal: On behalf of The Lions Club of Cheltenham, The Mayor of Cheltenham, Councillor Klara Sudbury, launched Wenceslas Heating on Monday 23rd October 2017. It is named after the carol in which the Good King Wenceslas looked out when the frost was cruel and saw a poor man gathering winter fuel. Wenceslas Heating gathers Winter Fuel Allowances to pass to the poor so if anyone feels that they can manage without their Winter Fuel Allowances, Cheltenham Lions provide a direct bridge to those in Cheltenham with insufficient money to pay their fuel bills. The Lions Club of Cheltenham will pass money raised to Caring for Communities and People (CCP), who will distribute it to those in need in Cheltenham. Nothing will be taken for administration or overheads by Cheltenham Lions or CCP. CCP is adept at helping people who are in serious and immediate need. They will ensure that the money is shared fairly and beneficially to those in greatest need. The project is already run successfully by other Lions Clubs in a couple of other

Cheltenham Calendar This month, Cheltenham’s Calendar is one Guy Fawkes would be proud of – and he had a serious social life! Start your month with not just a metaphorical bang but a literal one, as the Brewery and Racecourse both put on their firework displays one day early on the 4th. This means the 5th of the month is left free for a cosy night in with a bunch of sparklers and a blanket. Either one of these displays promises to be spectacular for both the eyes and ears so take your pick. You could even head up high to Cleeve Hill for great views across Cheltenham, it's the ultimate firework watching spot! Gin lovers look alive! A brand new gin festival is coming to Cheltenham. Head down to the Town Hall on the 11th of November for 120 different gins to tantalise your taste buds. With cocktail demos, live entertainment and chances to try your hand at distilling, what’s not to like?! Tickets cost £12 and include a goody bag of a gin glass and a gin bible. drinking with a visit from no other than the King of the Jungle (and comedy) himself Joel Dommett at the Cheltenham Racecourse. After his latest rise to fame from 'I’m A Celebrity', he has not left our screens, popping up wherever we least expect him. His latest stand up show was a success at the Edinburgh Fringe and Joel is now embarking on a UK tour with it. Later on in the month, three days of adrenaline-fuelled displays and races are coming down the final furlong into Cheltenham Racecourse to get the South West jump racing season underway. The November meet kicks off on the 17th and is guaranteed to get you excited for the much anticipated Festival in March next year. You can buy tickets for all the upcoming race days on the

towns around England. It is calculated that around 6,925 households in Cheltenham need to spend 10% or more of their income to achieve adequate warmth. Hospice unveils Christmas beneficiary ball The only hospice in Gloucestershire giving inpatient care has announced details of its prestigious Christmas celebration raising funds for its specialist services. For the first time, the event will be held at the stunning Princess Hall at Cheltenham Ladies College, giving the exclusive opportunity for guests to celebrate with family, friends, staff or entertain partners and clients. Taking place on Friday 15th December the evening offers a traditional Christmas celebration packed with live entertainment and seasonal surprises, including a champagne diamond raffle in association with RJ Spicer Goldsmith. Hosting the evening, which is sponsored by Pulhams Coaches, is Craig Wright and auctioneer Philip Allwood, the star of Bargain Hunt, Flog It and Dickinson’s Real Deal will be overseeing the evening’s charity auction, sending some highly exclusive lots under the hammer to help raise funds for the hospice. The evening will start at 7.00pm with a sparkling drinks reception

and includes a gourmet traditional Christmas three-course dinner with wine and live music performances from The Chip Shop Boys. Matt Reay, Sue Ryder Leckhampton Court’s event fundraiser, said: “This is the perfect seasonal celebration to bring friends, colleagues and clients together in the beautiful and historic surroundings of Princess Hall, Cheltenham Ladies College.” “By booking a table of ten, you could be paying for three hospice nurses for a day and a bed for a day of inpatient care at our hospice. Over the past two years, our sold-out Winter Ball has raised £50,000, helping us to continue providing our vital hospice services supporting hundreds of local people and families.” Kathryn Pulham, Director at Pulhams Coaches which is the event’s main sponsor, said: “We are delighted and proud to sponsor such a prestigious event and support such a worthwhile cause. Cake and Bake Chilled Orange Mousse with Fresh Orange Glaze A light, creamy and refreshing dessert that can be prepared a day in advance. Serve with crisp butter biscuits or shortbread fingers.

Ingredients: • • • • • • • •

3 gelatine leaves 150ml fresh orange juice 250g ricotta cheese 250g full fat soft cheese 100g caster sugar 2 tsp orange zest 300ml double cream 2 egg whites

FOR THE ORANGE GLAZE • 1 gelatine leaf • 150ml fresh orange juice • 2 oranges, peeled, segmented and flesh chopped • Fresh mint sprigs, to decorate

Serves 8 Ready in 1 hour, plus cooling and chilling

TIP Stir a spoonful of warmed fine-shred marmalade into the orange glaze before it cools for an extra tangy flavour. Page 36

1. Soak the gelatine leaves in a shallow bowl of cold

water for 5 minutes until soft. Heat the orange juice in a small pan until almost boiling then remove from the heat. Squeeze the excess liquid from the gelatine leaves and stir into the hot juice until dissolved. Cool for 15 minutes.

2. Beat the ricotta and cream cheese together in a

large bowl until smooth, then beat in the caster sugar and orange zest. Fold in the cooled gelatine.

3. Whip the cream in a bowl until softly peaking and in

a separate bowl whisk the egg whites until stiff. Fold the cream into the orange mixture followed by the egg whites.

4. Spoon the mixture into a 20cm square baking dish that is at least 5cm deep. Gently level the surface and chill in the fridge for 3 hours, or until set.

5. To make the orange glaze, soften the gelatine in

cold water as in step one. Heat the orange juice in a small pan until almost boiling then remove from the heat. Squeeze the excess liquid from the gelatine leaf and stir into the hot juice until dissolved. Cool for 30-40 minutes, stirring occasionally until beginning to thicken. Pour over the chilled mousse then top with the diced orange flesh. Chill in the fridge for 2 hours, or until the glaze has set. Serve cut into squares decorated with fresh mint sprigs.

Hobbies Bottoms Up! Let’s Toast This Terrific Tasting Hobby By Kate McLelland Wine tasting is the practice of using the senses of touch, sight and smell to evaluate different wines. It is believed that the first wines were produced in Mesopotamia - an ancient region that included present day Iraq and Kuwait together with parts of Syria and Turkey - between 4,000 and 3,000 BC. By the time of the Roman Empire, the production of wine had spread throughout the Mediterranean, even as far as the British Isles. However it was not until the 14th century that more formalised ways of sampling and evaluating wines began to emerge.

The four sTages of wine TasTing The first phase in the four recognised stages of winetasting is appearance. The liquid is examined to see how well it reflects or refracts light, whether it is cloudy or clear, and how much the process of oxidisation over time might have affected its colour.

The final part of the process is to consider the impression left on your tongue when you have either swallowed or used a spittoon to clear the wine from your palate. At this stage you’ll be able to tell a well-made wine by its crisp, clean finish: poor quality wines often leave a watery and insubstantial aftertaste. The best quality wines leave a “long finish”: that’s a flavour that remains in the mouth after the wine has gone.

The wine’s smell (also known as its “nose”) is then judged. Tasters must attempt to describe the perfume it gives off, as determined by its “aromas” and “bouquets”. “Aroma” refers to the smell of the specific grape - or Page 44

To judge the taste, swirl the wine around your mouth so your taste buds can do their work. As well as teasing out the specific flavours of the wine, you’ll be considering the amount of sweetness and/or tartness you find. You might also want to judge the amount of astringency (bitterness caused by the tannin in grape skins) you can detect. Overall, you’ll be looking for “balance” in the wine, deciding whether all its components are in harmony.

a number of excellent courses, taking place nationwide. On the jobs and training website run by the Reed Group you’ll find a short online course costing £97 (visit the Hospitality and Catering section at reed. co.uk for details), alternatively the well-known TV wine connoisseur Jilly Goolden runs wine-tasting afternoons under the title “The Wine Room” at £125 per person, taking place in the Ashdown Forest, East Sussex (telephone 01342 822251 or email wineroom@ jillygoolden.com). As you develop confidence you’ll be able to explore some of the 400 or more commercial vineyards that operate in the UK. Visit England (visitengland. com) has a list of vineyards, many of which are open to the public, offering luxury on-site accommodation in B&Bs and self-catering accommodation so you can relax and make the most of your wine-tasting experience. Whether you’re planning to become the next Jilly Goolden or you’re simply someone who loves to explore the subtleties and complexities of wine, you are certain to find a course or vineyard experience to suit.
