then that’s great, but I won’t typically do the photo thing in that situation. “At the end of a photo opportunity you kind of feel a bit empty and like the exchange is for nothing more than a kind of badge when you’ve got what’s usually a pretty ropey photo with a poor backdrop and me looking a bit miserable. Super Seedy Granola Bars Introduction Fuel their back-to-school adventure with these one-bowl, easy bake bars that are ideal for lunchboxes and full of natural goodness.
Ingredients (makes 12 bars) 200g old fashioned rolled oats 100g butter 70g light brown sugar 100g dried fruit (raisins, chopped dates, cranberries etc.) 100g sunflower seeds

Feel free to riff… use whatever seeds or dried fruit you have at hand – you could even include chocolate chips!
Step one Heat oven to 160C/fan 140C/gas 3. Grease and line the base of a 18x25cm tin. Combine butter, honey/syrup and brown sugar in a small saucepan over medium heat. Cook, stirring occasionally until the butter melts and the sugar completely dissolves.

Top Tips • Ensure your finished granola bars don’t crumble by packing down the mixture well in the pan before baking and leaving to chill in the fridge for an hour after. • Add an extra depth of flavour to your bars by toasting your oats and seeds first. Simply place them in your clean, dry baking pan and place in the oven for 5-10 minutes watching carefully in case they burn.

An Evening at
Walking through Emsworth Yacht Harbour towards The Deck felt like we had jetted to the Canary Islands, excitedly approaching the restaurant where we were to spend the summers evening enjoying fresh food and the company of friends and family we've missed over the past year. Myself and my party of three were seated within the newly upgraded balcony area with clear sides that descend when night draws to keep us cosy under the heaters. A beautifully located marina restaurant in a relaxed setting instantly made us feel like we were about to embark on something special.
The lemon sole was both delicate and crisp with capers to add another layer of flavour. The evening menu presented fish, seafood, meat and vegetarian options for starters, mains, and sides. The tentative waiters delivered our drinks of choice, including pale ales and rosé, followed by an Aperol spritz and a Moscow mule decorated with lemon and lime shredding; the perfect cocktails to sip on a summers evening.
The impeccable presentation was noticeable from the off. Pan-seared scallops were cooked to perfection, served on top of a pea puree and decorated with parma ham crisp, for £11 as a starter or £21 for a main. The moreish Moules marinière came in white wine, cream and garlic sauce served with freshly baked white bread. The grand seafood platter consisted of freshly caught and cooked mussels, oysters, prawns, tempura hake, a whole lobster, white crab meat and smoked salmon; presented on a bed of rocket and asparagus accompanied with hand-cut chips, freshly baked bread and aioli. Wow. For £120, this sharing dish was one I will never forget. The lobster was as fresh as I'd ever tasted it. The muscles and prawns were submerged in a bowl of garlic butter sauce to stay piping hot and flavourful. As for the final main, the beautiful slices of steak were cooked to perfection and plated alongside a watercress salad and a flat mushroom, red onion and tomato stack with a side of hand-cut chips and peppercorn sauce for £19. Desserts, both options priced at £8 each, demonstrated that presentation was once again immaculate and the taste even better. Wait until the bread has cooled before tucking in: this is essential to creating the perfect loaf.
(Makes one loaf) • 3 cups of all-purpose flour (405g or 14.3oz) • 1 1/2 teaspoons of salt
No-Knead Bread Introduction
When Sullivan Street Bakery owner Jim Lahey came up with this recipe for no-knead bread – published in The New York Times in 2009 – it caused quite the stir. Surely something so simple couldn’t yield the kind of flavourful crust and airy middle we expect to buy from an artisan baker? Well, just give it a try and see for yourself…
Method 1. In a bowl combine flour, yeast and salt. Add 350ml water and stir until blended; the dough will be shaggy and sticky. Cover the bowl with cling film, then let the dough rest for at least 12 hours, and preferably up to 18, at warm room temperature. When the dough is ready it will be dotted with bubbles. 2. Lightly flour a surface and fold your dough one or twice before covering and resting once more for 15 minutes. Using a little flour gently shape it into a ball. Then coat a tea towel with flour and put the dough seam-side down. Cover
with another towel and let it rise for about two hours. When it is ready, dough will be more than double in size and won’t bounce back when prodded. 3. To bake, heat oven to 220 degrees with a heavy, cast-iron lidded pan inside. When the dough is ready, remove the pot from oven and turn the dough into it, seam-side up. Cover with lid and bake for 30 minutes, then remove lid and bake another 15 to 30 minutes, until loaf is perfectly browned. Cool on a rack.

Top Tips • If you don’t have a cast-iron pot, you can improvise using a pizza stone and an upturned stainless-steel bowl, as maintaining a high temperature is essential for creating that desirable crust, you will need something to trap warm air around your bread. • Don’t worry if you need to leave your dough to rise longer than the stated time. Up to 24 hours is fine as it is this waiting time that allows the yeast to ferment and create air bubbles without kneading. • Don’t be afraid to improvise. Whether you want to try this recipe with a beloved sourdough starter or would prefer gluten-free flour, anything goes as long as you’re prepared for a little trial and error.

Why our humble feet may be the lynchpin to overall physical health. Miles of pounding the pavements in sweaty running shoes, evenings spent strutting around bars in pinching high heels and long work shifts in flat loafers all take their toll on your feet.

But while you may be familiar with many podiatry ailments such as corns, calluses and blisters, your foot alignment could be affecting other areas of your body as well. It may come as some surprise to realise that many of our joint ailments are caused by ill-fitting footwear, whether that’s a lack of support, a too-narrow fit, or heels that contort your bones. In short, your passion for fashion may be sparking a chain reaction all through your body that causes constant discomfort and pain. With all that in mind, surely it’s time to get some harmony back into your body.
Flat Feet Either inherent or caused by a collapsed arch, flat feet can lead to numerous problems throughout the body. Less able to absorb shock, flat feet can leave you more vulnerable to shin splints, inflamed Achilles tendons and general knee discomfort. Wearing insoles specifically designed for the condition, or specialised orthotics, can greatly improve not only foot discomfort, but general alignment throughout the body. Misaligned feet problems and how to fix them Bunions Presenting on either the outer side of the big toe or less commonly the little toe (bunionette), bunions are a bony lump created by the metatarsal either enlarging or moving outwards. Caused by either wearing shoes that are too narrow or too high, tight calf muscles or feet that tilt either inwards or outwards, they can become incredibly painful and swollen. Choosing shoes that have a wide toe box and arch support will take pressure off your bunions, while
Heel Pain Plantar fasciitis, or inflammation of the plantar fascia – the strong bowstring-like ligament that runs from the heel to the tip of the foot – causes pain not only in the heel, but also in the middle of the foot and also muscle cramps in the calves. This is often the result of repetitive stress and pounding from walking or running due to poor foot alignment. While anti-inflammatory medications will help soothe discomfort, true relief will only come from orthotics or exercises that stretch the tendons and strengthen the lower leg muscles creating strength and stability in the ankle and heel.

How Much is Enough? After thirty years of working in finance, I laugh when I think about the various job titles that have been applied to my business card. The one I use now, ‘Financial Planner’ is, in my opinion, the best description of what I actually do. This is because I work in a service profession, where I can deliver my skills, expertise, and experience to help people plan their financial journey through life. The first meeting with any potential new client is crucial. It is during this meeting that both parties decide how comfortable we’d feel about working together. For this reason, I do not charge for an initial meeting, as I want to get to know you, learn about your issues, and start to think about next steps. The opportunity to sit down together and start to understand your motivations and goals can ultimately lead to a fruitful partnership.
There are no quick fixes when it comes to finance which is why it is so important to clearly establish the long-term goals of each individual. A good example of a first meeting is one where a client has told me that they feel that their savings and/or investments, are not providing the performance that was expected. But by the end of the meeting, the deeper question being asked will more likely be one of the following: ‘Will my money last as long as I am likely to live?’ or, ‘Will my pensions provide me with enough when I retire?’ - In other words, ‘how much is enough?’ Of course, there are no quick fixes when it comes to finance, which is why it is so important that time is spent to clearly establish and agree the long-term goals of each individual. There are a multitude of tools available for me to use, such as Pensions, ISAs, GIAs, EISs, VCTs,

This summer is the perfect time to explore a nature reserve near you. Hampshire & Isle of Wight Wildlife Trust has over 50 nature reserves in our two counties which cover a wide variety of habitats, home to some amazing wildlife. Whether it’s a blooming wildflower meadow or a woodland in leaf, many of the habitats on our nature reserves are looking their best over the summer months. We cover some of our favourite places to explore and the wildlife to look out for as you do.
COLOURFUL MEADOWS
Britain has lost an astonishing 97% of its wildflower meadows since the 1930s, but luckily there are still fine examples of this wildlife-rich habitat to visit in our two counties. Meadows are at their most colourful in summer, with wildflowers stimulating the senses with a tapestry of colour and scents. Delicate lilac harebells, aromatic wild thyme and the yellow froth of lady’s bedstraw are just some of the plants to look for. Insects provide the sound track, pollinators buzzing between the flowers as they feed.
COASTAL ADVENTURES
WILD WOODLANDS
The long days of summer make for unique wildlife encounters. Foxes and badgers venture out in daylight hours - you might see them in the dappled shade of the trees on a forest path. Butterflies basking with their wings open, warming up ready for the day can be seen, and striking day-flying moths like the jersey tiger are also on the wing. On a cool evening, you might get a waft of sweet honeysuckle, a real treat for the nose. Woodlands are a perfect place to brush up on birdsong, as resident species are joined by summer migrants coming to breed.
The Solent coastline is bursting with wildlife in summer. Beneath the waves, seagrass meadows provide a nursery for marine species like bass and seahorses, and a little further inland, the shingle habitats are nesting places for gulls and terns. Listening to the waves crash as noisy seabirds circle overhead as the salt spray hits your face is a wildlife experience not to be missed. Redshank and lapwing raise their fluffy chicks at Farlington Marshes Nature Reserve or hunt for crabs in the shallows at Milton Locks, just minutes away from busy Portsmouth.
