Heat The hot dog days of summer have arrived. What began as a German delicacy has long been recontextualized as an All-American classic – a culinary nod to our extensive immigrant roots. Now superstar staples of baseball games and backyard hangs, of street vendors and carnival booths, hot dogs can be fun, and easy, additions to summertime menus. Piled high with a variety of ingredients, these good dogs deliver handheld flavor directly to your mouth. And what better way to celebrate your independence from the same old hot dogs than a frank loaded with fiery Texas attitude. Here, a Ridgecrest Black Angus Beef Frank is wrapped in Ridgecrest Apple Smoked Bacon and slivers of jalapeño. It’s garnished with Peak® Yellow and Green Onions, sweet West Creek® Mango Chunks, and crisp West Creek® Hamburger Pickles for a blend of colors and textures. When the summer heat comes rolling in, there’s nothing Americans like more than whetting our whistle. American summers tend to be on the saucy side. And for this handheld feast, a bib is part of the required dress code. With a rib plate in mind, we thought about going Southern BBQ, Kansas City-style, or using some Texas tradition, but ultimately, we were inspired by the gateway to the West. Summers in the Midwest are as AllAmerican as baseball, so it makes sense that this rib recipe hails from one of the great baseball cities – St. Louis. Start by applying a traditional rub to a rack of West Creek St. Louis Ribs. Salt, pepper, mustard powder, and Magellan® spices are blended with dark brown sugar and seep into the tender rib meat. Next, you’ll want to craft a sweet cherry/blueberry BBQ sauce. Fresh dark sweet cherries and blueberries are mixed with West Creek Chicken Broth, apple cider vinegar, brown sugar, and chipotle chili in adobo. Tangy Dijon mustard brings the sauce together. Brush the ribs with this delectable sauce and slap these babies on the grill for a little added caramelization. Preheat oven to 400°F. Chop olives very fine until almost paste consistency. Stir the garlic into the olive paste. Split dough into 1oz. pieces and roll out into desired Pizzetta shape. Cover the dough with the olive and garlic paste. Sprinkle with the thyme. Lay the Pecorino cheese on top of the pizzetta. Season with salt and pepper, to taste. Bake the pizzettas for 12-13 minutes until light brown in color. Serve salad accompanied by pizzettas.
