Welcome to the 2015 Edible Garden Show and Good Life Live at Alexandra Palace! Doesn’t time fly! It’s Spring again and that means we have a huge weekend out talking, living and breathing everything that is ‘Edible Garden’, and what a tonic it is. There is something for everyone, whether you want to find the best poultry for a small space, or how to incorporate bees into the backyard, how to preserve your crops or even make cheese or sausages, there is always someone at the show to help, and this year the show is developing into a cracker. Packed into the famous London landmark are a number of zones where you can listen to experts like James Wong and Pippa Greenwood, where you can really get your hands dirty and go into real depth, ask questions and compare notes. There is a Family Zone where you can hang out, explore some great learning experiences with the children, and don’t forget Mr Bloom on Saturday!

We have the British Beekeeping Association, The British Hen Welfare Trust and the Pop Up City Farm with experts waiting to give you the lowdown of what is possible for you. Fancy some proper nosh? Area will delight you with some brilliant recipes from our top notch chefs, including TV’s Mark Lloyd and Rachel Green and you can even take some food you have made yourself away with you, making cheese, bread and preserves in the Make it! Section with Paul and Diana Peacock. And of course, the show is about the exhibitors. A chance for you to get the season’s new seeds, the trees, the jam jars and spades, the supplies we all need, but while you are at it, a library of knowledge and experience thrown in for free. Theatre has everything you need to get started! We have a theory in the Show Office, the best food you will ever eat is cooked in your own kitchen. Whatever your skill level, Rachel Green and Mark Lloyd, our fabulous TV chefs will take you through how to prepare the most mouthwatering meals in easy stages with stunning results. We have some of the country’s finest chefs courtesy of the Craft Guild of Chefs on hand to offer advice and rustle up some tasty dishes!
POP UP CITY FARM The award-winning Surrey Docks City Farm will be bringing all the fun to the Pop Up City Farm! Come and meet Shetland ponies, sheep, rabbits, ferrets, ducks, turkeys, geese, guinea pigs and chickens from the working city farm, which occupies a 2.2 acre site on the south bank of the river Thames in Rotherhithe.
VILLAGE GREEN We will be bringing all the fun of your local village fete to Alexandra Palace this Spring at Good Life Live. You’ll find us at the Village Green! Play some games, keep an eye out for our Morris Dancers and meander into the picnic box for some tasty treats and real ales. A delicious visit!

Make It! is a lively, interactive workshop attraction, to keep children and adults alike entertained while learning new plot to plate and craft skills.
In association with Grow Your Own magazine and The National Allotment Society, The HIPPO Potting Shed includes four separate areas to educate and invigorate your plans for your plot.
Join Paul & Diana Peacock, who will show you how to make your own sausage, bacon, cheese, as well as fantastic loaves in plantpots! Chef Rachel Green is a passionate and committed ambassador for British produce. She has several TV shows under her belt, including BBC 3’s Kill It, Cook It, Eat It. Back by popular demand, she will be inspiring visitors with tasty food that can be whipped up when digging for your dinner!

∞∞ 500g minced pork ∞∞ 2 grated garlic cloves ∞∞ 1 tbsp oyster sauce ∞∞ 3 tsp soy sauce ∞∞ 1/2 tsp 5 spice powder ∞∞ 400g puff pastry Method: Combine the pork and all the seasonings in a bowl and mix everything well together. Oil a large baking sheet and preheat the oven to 200°C/ gas mark 6. Roll the pastry out into a large rectangle and cut into 3 equal rectangles. Divide the meat
mixture into three equal quantities and roll into long sausage shapes to fit the pastry. Place the sausage down the centre and seal the long edge with a sprinkle of water. Cut each into 3 and place on the baking sheet. Bake for 25-30 minutes. Serve warm or cold.
RECIPES - PERFECT PICNIC 11
Quick Mackerel Pâté Serves 4 ∞∞ 4 smoked mackerel fillets ∞∞ 300g cream cheese, light or full fat ∞∞ 2 tablespoons natural yogurt ∞∞ Juice of 1 lemon ∞∞ 1 teaspoon horseradish sauce ∞∞ Ground black pepper Method: Remove any skin from the fish, place the mackerel in a bowl and loosen the flakes. Place all other ingredients in a processor and blend together until smooth. This can be done by hand if you wish.
DIANA’S TERRINE
Add all the other ingredients to the bowl with the mackerel and mix together thoroughly. Spoon into individual ramekins or one large serving dish and chill for 2 hours before serving.
Chicken, Pork and Sun Dried Tomato Terrine Serves 4 ∞∞ 1 small onion, finely chopped ∞∞ 2 cloves garlic, chopped ∞∞ 2 tbsp brandy ∞∞ 12 slices thinly sliced streaky bacon, ∞∞ 400g minced pork ∞∞ Pinch nutmeg ∞∞ Salt and pepper to taste ∞∞ 40g sun-dried tomatoes, drained of oil ∞∞ 12 pimento stuffed green olives ∞∞ 200g chicken breasts ∞∞ 1 tbsp chopped fresh parsley Method: Fry the onion and garlic gently in a little oil until just soft. Stir in the brandy and cook for a minute, set aside to cool. Line a 900g loaf tin with the bacon, stretching it slightly and overlapping each slice by a couple of mm. Put the pork mince in a bowl and season with nutmeg and salt and pepper. Add the onion and garlic mixture and mix well with your hands. Place half of the pork mixture int the tin and press down well. Arrange the olives evenly over the surface of the mince layer. Slice the chicken breasts thinly and place on top of the olives. Press down again. Slice the tomatoes if necessary and place on top of the chicken.
Sprinkle over the parsley and season again with salt and pepper to taste.

Cool and drain any excess juice from the tin, but not all of it. Cover with a sheet of cling film and put another loaf tin on top with some weights and chill overnight. Remove from the tin and slice to serve.
Easy Chocolate Truffle Tart Serves 8 For the sweet crust pastry ∞∞ 300g plain flour ∞∞ 80g icing sugar ∞∞ 150g butter, very cold ∞∞ 1 egg, beaten lightly For the filling ∞∞ 180 ml double cream ∞∞ 250g dark chocolate ∞∞ 80g butter ∞∞ Chocolate curls to decorate Method: Make the pastry by sifting the flour and icing sugar together into a mixing bowl. Chop the butter into small pieces with a cold knife and tip into the flour. Rub the butter into the flour with your fingertips until it resembles breadcrumbs. Pour in half of the egg and use a knife to begin mixing it into the pastry. Add more egg
Place a circle of baking parchment in the tin to reach about 10cm free of the tin. Pour baking beans over the parchment and bake blind for 15 minutes. Carefully remove the parchment and beans and bake the pastry shell for a further 10 -12 minutes or until the pastry is light golden in colour. Allow to cool whilst you make the chocolate truffle filling. Make the filling by placing the cream chocolate and butter in a heatproof bowl over a pan of simmering water and allow everything to melt together. Stir gently to combine the ingredients and form a smooth mixture. Whisk lightly with a balloon whisk, pour into the pastry shell. Allow to set before topping with some chocolate curls and a light dusting of icing sugar.

There are few things that compliment really fresh fish more than new potatoes, taken from the plot just minutes earlier, with some steamed vegetables. Mark brings us the perfect recipe for the perfect fish and shrimp combo.

Plaice To cook the plaice Preheat the oven to 200°C
Heat a tablespoon of oil in a non-stick frying pan large enough to lay the whole fish in flat. Take the plaice and make two diagonal cuts towards the tail in each half of the fish on the side with the dark skin.
TV presenter, chef and forager Mark Lloyd has a plaice in our hearts with this lovely recipe! WHY NOT TRY? Potted Shrimp Buy the brown shrimp from markets and fishmongers for the best flavour, but defrosted frozen prawns can be used if you wish.
Serves 2, sharing 1 decent sized plaice
Place the fish in the frying pan, dark shin down and fry over a medium heat for 4-5 minutes. Gently turn the fish over in 1 movement, so now the dark skin side is facing up, it should be slightly crispy and golden.
∞∞ 1 whole plaice, about 750g, cleaned and scaled, skin on, ask your fishmonger to do the fiddly bits, like cutting the pocket in the top ∞∞ 125g brown shrimp or small prawns ∞∞ Juice of ½ lemon
Now add the flavoured butter and a squeeze of half a lemon and as it melts, spoon the melting, foaming butter over the fish to baste it and get that flavour in there, top with the shrimp and carry on spooning the butter over for another minute.
∞∞ 150g unsalted butter, melted To the melted butter add a quarter of a teaspoon of mace, nutmeg, paprika and chilli powder and stir well.
Place in the oven for 8-12 minutes depending on size of fish, a good way to tell if its cooked, you should be easily able to remove the head of the fish with a dessert spoon.
Melt the butter gently in a pan and stir in the salt, pepper and cayenne pepper. Pour the butter over the shrimp and allow to set in the fridge.
∞∞ 250g Charlotte potatoes or Pink fir/Anya. ∞∞ 200g Purple Sprouting Broccoli ∞∞ zest of lemon
Remove from the oven and loosely cover with tinfoil to keep warm.
Serve with warm toast or over hot fillets of white fish for a decadent dish. Delicious.
Serve with steamed greens and new potatoes.
This will keep for 3 days in the fridge.
Plaice with spiced shrimp sauce
Serves 3-4 ∞∞ 250g brown shrimp ∞∞ Pinch salt and black pepper to taste ∞∞ 80g melted butter ∞∞ 1/4 tsp cayenne pepper To cook the shrimp Force as many shrimp as you can into 2 ramekin dishes.

The growing season really cranks up a gear this month and gardeners will be sure to have their hands full with sowing, planting and general maintenance tasks. The outside world is starting to sing of spring and it’s an exiting time to be out on your veg plot. Some of the most important jobs for this month will be preparing your seed beds for sowing and making sure your ground is ready for any young plants which you’re moving outdoors. You should also dedicate some time to looking after tender young seedlings and making sure they’re developing happily.
THE FRUIT GARDEN Think about sowing tender crops such as cape gooseberry under cover now. Thinly scatter the seeds in a pot of compost, and transplant to individual pots when large enough to handle. Harden off and move to their final growing position in late May or June.

The vegetable garden: n When cracking on with jobs, bear
in mind that the weather in April can be notoriously tricky to judge. Keep protection gear close to hand in case of cold spells and sharp frosts and perhaps delay sowing seeds straight outside until you can be sure the conditions are right. n To
increase your chances of success when sowing outdoors, warm the soil first with cloches or polythene sheeting. n Keep an eye on weeds across your plot and remove any unwanted guests as soon as you spot them.

April focus on: Preparing your seedbeds The quality of the soil in which you sow your seeds is key to ensuring that young crops get off to the best start possible. As the ground can still be a little chilly in April, it’s a good idea to warm the soil before you start sowing. Simply cover the area with plastic sheeting or cloches a few weeks before you want to start your seeds. Weeds will pop up, so when you’re ready to start sowing, hoe these off. Then, rake and sieve the area so that you’re left with fine, crumbly particles.

A beginner’s guide to:
Sweetcorn This sought-after veg is a great addition to your allotment and tastes delicious in the kitchen, too. Now’s the time to sow sweetcorn seeds, so make sure your crop is a success with our simple guide Sown in April and looked after properly, sweetcorn will thrive and come summer, you’ll be enjoying tasty pickings of beautiful cobs – far superior in taste and flavour to their supermarket counterparts. A huge range of varieties are available on the market, so if you’re after a sweet, snack-sized cob, a larger variety or even a multi-coloured option there’s something for you.
The basics
Traditional sweetcorn varieties produce one or two cobs per plant, so bear this in mind when deciding how many to cultivate. You can either sow sweetcorn directly outside, or start your seeds indoors for transplanting later. If sowing indoors, do this in April or
May, and keep seedlings in a warm, sunny spot until they are ready to be hardened off and moved outside. Delay sowing directly outdoors until mid-May when the risk of frost has passed – these plants do not do well in cold snaps. When planting out or sowing directly, remember that sweetcorn requires plenty of sun, so look for a southfacing part of your vegetable plot which will also be sheltered from strong wind. Planting in blocks is key to making sure you get good quality, high-yielding cobs from your plants. This is because they are wind pollinated and kernels won’t develop unless pollen from the male part of the plant makes contact with the immature heads of the corncobs (although some miniature varieties such as ‘Minipop’ are
picked before fertilisation so don’t need to be looked after this way). Plants are usually ready to harvest from around July or August and you could be getting cobs right through to October. Eat as soon as possible after picking as the flavour rapidly diminishes with time.
Potential problems
Wind damage: Because these plants can grow quite tall, it’s important to make sure you choose a sheltered site in order to prevent them from being damaged in high winds. Staking can also help. n Slugs: These slimy creatures will feed on young seedlings, so make sure you have control methods in place. n Birds: You may find that pigeons are attracted to your developing sweetcorn plants. If this is the case, consider placing netting over your crops. n Mice: These little critters will munch on your sweetcorn seeds if you’re not careful, and you may need to set humane traps around your sowing area to prevent this. n

STEP 1
Around April or May, fill modular trays or pots with quality seed or multipurpose compost and water gently, so just moist.
STEP 2
Make a small hole with a dibber, about 2cm deep, and then place one sweetcorn seed in each pot, before covering with compost.
2 ‘Lark’ F1: This is an early extra

4 ‘Northern Xtra Sweet’ F1:

STEP 3
Water carefully with a fine rose watering can and place somewhere warm (you’re looking for a temperature between 15°C and 20°C).
STEP 4
Your seedlings should appear in a few weeks. Accustom these to the outside, avoiding frosts, before planting out in May or June.
PLANTING OUT
Choose a sheltered, sunny position and add plenty of organic matter. Place your plants in a square ‘block’, 45cm apart, in rows 60cm apart. Be careful when moving your seedlings as too much root disturbance can have an impact on the crop. Once in place, water in and mulch. As the plants grow you may need to stake them. When the male flowers open, tap the plant to help pollination. Water regularly and use a high-potash feed when your cobs begin to swell.

STEP 1
When the tassels have turned brown, test the ripeness of your crop. Peel back the sheath and squeeze a kernel with your thumb nail. If the liquid that comes out is watery, it’s not yet ready, but if it is creamy it can be picked.
STEP 2
To pick, twist the cob sharply from the stem. Sweetcorn is best eaten as soon as possible after harvesting – so head straight into the kitchen and enjoy reaping the benefits of all your hard work.
