or many people, Halloween provides fun times to dress up in costumes, go trick-or-treating, attend parties, and eat yummy treats. These events are also opportunities to provide nutritious snacks, get physical activity, and focus on safety. Check out these tips to help make the festivities fun and safe for trick-or-treaters and party guests.
Going trick-or-treating?
▸▸ Avoid trick-or-treating alone. Walk in groups or with a trusted adult. ▸▸ Fasten reflective tape to costumes and bags to help drivers see you. ▸▸ Examine all treats for choking hazards and tampering before eating them. Limit the amount of treats you eat. ▸▸ Hold a flashlight while trick-or-treating to help you see and others see you. Always WALK and don’t run from house to house. ▸▸ Always test make-up in a small area first. Remove it before bedtime to prevent possible skin and eye irritation. ▸▸ Look both ways before crossing the street. There are various backpack projects where small children receive all that they need for school. One local mother wanted to give the same kindness to middle and high school students who also deserve a good start to the school year. Packs of Love, Inc. was started in 2010 by Ana Matos, originally as the Backpack Project, as a means for Matos’ own children to help other children. “I basically called Camillus House (a local agency providing humanitarianism to homeless men, women, and children) with the intention of helping a handful of kids with school supplies that summer and ended up committing to 100 kids!” Matos explained. Due to the large amounts of kids in need, Matos needed assistance to help them all, hence the fundraising began and the need for a Non Profit 501 (c) 3 status in order to gain more support with the help of the community. To date, Packs of Love, Inc, has helped over 380 kids through summer fundraising efforts. “We basically fundraise through private donations and provide fully loaded backpacks to Middle and High School kids that are either homeless or in Foster care,” stated Matos. This past summer, Packs of Love, Inc. helped 145 kids in six locations and from four different agencies throughout Miami-Dade raising about $7500 in a short three months time. The students who have been helped by Packs of Love, Inc. include Middle and High School students currently residing at Camillus House Homeless Shelter in Homestead, the Charlee Foster Organization Downtown, Miami Bridge (South River Drive), and Baptist Children’s Home. Packs of Love, Inc. is an organization that relies on complete volunteerism from family, friends, and the community. Since this organization has no overhead costs, 100% of the donations collected go directly to the students that are being helped. Ana Matos believes that these needy middle and high schoolers should receive the same quality materials that her own children go to school with, therefore the organization will only accept financial contributions. All materials are purchased through office supply companies in large quantities in order to ensure that the packs are filled with the same supplies. The donated backpacks include brand new, name brand materials including, but not limited to a backpack, 5 subject notebooks, geometry kits, scientific calculators, USB ports, pens, packs of Paper, and highlighters. Along with the help of volunteers, the bags are given directly to the students themselves. It is heartwarming for the volunteers to be able to meet each student being
helped and see the smiles on their faces as they start the new school year with what they need. When a donor contributes a minimum of $70 for the purchase of materials for the bags, they get to tag their bags with a personalized message to the child receiving the bag. This is a way to show the students that their bag was made especially for them from someone who cares. Contributing to Packs of Love, Inc. is a great way to show those students who need the most motivation to continue on their path of education how 12

t first glance, pasta del giorno is a typical quaint Italian restaurant. The pleasant sounds of Andrea Bocelli fill the room while the eyes are drawn to the classic Italian colors that adorn the walls. A closer look proves there is much more to this gem nestled amongst a shopping center in the Falls area. Husband-and-wife owners, Ariel and Fabiana Pavese, envisioned this restaurant as a quaint and authenticly Italian. Fabiana’s grandmother, “Nona” Arancibia, was the inspiration behind the original recipes. Mrs. Pavese developed the menu with head chef Pedro Valdes using “Nona’s” time-tested methods, combining classic Italian dishes with Argentinean meat selections. Unlike most Italian restaurants, Pasta Del Giorno is open for breakfast and has become quite popular in the morning hours. They currently have four menus– breakfast, lunch, early bird and dinner – and they have something reasonably priced for everyone, from homemade soups and fresh, custom made salads to fish, pizza and, of course, pastas. Not to mention, Pasta Del Giorno has a special gluten free menu and a selection of whole wheat pastas if you choose. One signature dish is their classic lasagna, which is an absolute must have for Italian food lovers. Topped with a heavy coating of mozzarella, freshly shaved parmesan, béchamel sauce and a delicate drizzle of olive oil, its robust tomato sauce, creamy ricotta cheese and fresh meat make it sing with flavor. Some other favorites include the Risotto di Mare, Mahi del Giorno, and the Fiocchi di Gorgonzola. The Fiocchi di Gorgonzola is a pear and gorgonzola tortellini sautéed with gorgonzola cream sauce and topped with walnuts. It is a dish not to be missed. The Truffle Parpadella di Manzo, another fan favorite, is a delightful dish of filet mignon tips sautéed with mushrooms, a touch of red wine and truffle oil, and topped with shaved parmesan over a wide pasta. Some other unique touches found only at Pasta Del Giorno are the amazing and clever original paintings by world-renowned painter, David Schor. t seems tHat almost everywHere we go these days, we can find a dog park to visit with our dog. Everywhere, that is, except our own hometown of Pinecrest. We go to Key West and spend afternoons at the dog park enjoying the ocean air and making new people friends while our dog runs free, plays ball or just rolls around in the dirt. We go to Boca Raton in Palm Beach County, same thing. Pembroke Pines Dog Park is one of at least 26 dog parks in Broward County. And in Miami-Dade County, we have Kennedy Bark Park on South Bayshore and Blanche Bark Park on Shipping and Virginia in the Grove, Amelia Earhart Bark Park in Hialeah and Palmetto Bay Bark Park on South Dixie. But right here in Pinecrest, right in our own backyard, so to speak…no dog park. A dog park is not just for dogs, although they certainly enjoy the freedom to run and play with other dogs. A dog park is for people, too. A bark park fosters a sense of community. It reinforces a kinship with our neighbors. It’s easy to make new friends at a dog park. A dog park is another way to enjoy the outdoors on a beautiful South Florida day, even if that means just sitting on a bench in the shade while your dog chases sticks. And it’s an opportunity for more sedentary dog owners to spend some time outdoors and give their dogs the chance to run and play. In Destin, Florida, a grass roots effort started the wheels turning and a new dog park opened on January 7, 2012. The Grand Opening of the Destin Dog Park saw more than 2,200 dogs and human visitors in the first week alone. A news article quoted a nearby city councilor who said, “I was absolutely amazed and astounded at the sense of community in that little park. I saw children, I saw elderly people, I saw people from all walks of life, all occupational levels, all co-existing in a safe, comfortable environment.” We can do that here in Pinecrest. We certainly have enough dogs and dog lovers. Just walk around your neighborhood any morning or evening and you’ll see people of all ages, shapes and sizes walking dogs of all ages, shapes and sizes. If almost every municipality in Florida has dog parks, surely Pinecrest can find the space and resources to develop our own. A majority of Pinecrest dog owners and residents want a dog park right here. We already have the perfect location for it – Veterans Wayside Park at US 1 and SW 112th Street. This is a community project that is long overdue. And Pinecrest residents can certainly make it happen. If you want a dog park in Pinecrest now, it’s time to speak up to our elected officials. Cutler Bay Academy of Advanced Studies is a comprehensive four-year educational institution within Miami-Dade County Public Schools. The educational program is designed to provide students with a unique and personalized program of study that combines a specialized curriculum with rigorous academic instruction. On April 18, 2012, the School Board of Miami-Dade County voted to approve an Interlocal Agreement with the Town of Cutler Bay. Part of this agreement included the conversion of Centennial Middle School into a high-performing senior high school: Cutler Bay Academy of Advanced Studies. For the 2013-2014 school year, the campus houses students in Grades 8, 9, and 10. Cutler Bay Academy of Advanced Studies is devoted to delivering academic excellence in the classroom. P
redatory lending is wHen a lender imposes abusive, unfair and sometimes illegal loan terms on borrowers, without regard for the borrowers’ ability to repay the loan. When two or more of the following factors are present in a mortgage transaction, the subsequent forensic audit performed on that loan has revealed serious violations of federal and state lending laws.
Property Purchased or Refinanced Between 2003 and 2007.
This four year period marked the peak of the real estate boom in South Florida. Just about anyone, including foreign nationals without regard for past credit history or current ability to pay, could obtain a “sub-prime” loan for up to 115% of the value of the mortgaged property. The sub-prime mortgage market thrived during this time, allowing borrowers to encumber their properties well beyond their true market values.
Mortgage Loan Contains an Adjustable Rate or “ARM” Feature.
These types of loans are initially set at an artificially low interest rate for a brief period of time. They then switch to an adjustable rate for the remaining term of the loan, and the rate can increase as often as every six months. Even if the U.S. interest rate index remains unchanged, the monthly payments on these loans could increase by up to 50%.
Mortgage Loan Suffers From Negative Amortization.
Negative amortization occurs when the monthly mortgage payment is not sufficient to even cover the interest due, and therefore, the balance of the loan increases over time even though payments have been made. If you owe more today on your home loan, than when you originally purchased or refinanced, your loan is negatively amortized.
Mortgage Loan is Interest-Only or Pick-a-Payment.
Under these types of loans, the borrower is only required to pay the interest due on the loan, or a minimum payment that does not cover the interest on the loan. After a few years, the required monthly payment is usually increased to cover the outstanding principal balance. Once the loan payment increases, so does the likelihood the borrower will default.
Mortgage Loan Approval Was Based Only on Stated Income.
Many borrowers from 2003-2007 were given “stated income” loans, in which they were qualified based on statements in the loan application as to their income. These statements of income were largely unverified, and often the “stated income” required for the loan to be approved was the exact amount included in the application by the mortgage broker. If two or more of these factors apply to your current loan, you should have a forensic audit of your loan performed to find out whether you have been a victim of predatory lending. If you possess these claims, and they are timely raised against your lender, you may be entitled to actual damages and/or a reduction of the amount you owe on your loan. In 2010, Conway passed all the training to receive his certification as a certified therapy dog and he actually has his own photo ID “Pet Therapy” identification badge for South Miami Hospital. Conway has done agility course training at Paws in Motion near the Falls and has his own set of jumps and hoops that he will jump over and through whenever he is rewarded with a carrot! The photo was taken floating on the pool in his South Miami backyard which is playfully called “Conway Cove”!

elcome to tHe first “dear coacH” column written exclusively for The Florida Villager! Okay...Here’s the Deal: For the next few minutes, I’d like you to be my Coaching Client (and since my Coaching relationships are strictly confidential, I promise I won’t reveal your identity!). Let’s start by establishing the foundation from which to build our ongoing “Coaching” relationship: ▸ My favorite description of Coaching (Executive, Business or Life Coaching) is that I partner with clients to help them close the gap between where they are and where they want to be. ▸ Coaching is about taking action...so for our relationship to make a positive difference in your life, you will need to not only have an intention to take steps toward your goal...but to actually take them (the hard part!). ▸ Each month I will make a request for a specific action (remember, you are my virtual client). ▸ My request might include an exercise, answering a question, dancing in the rain (a personal favorite), creating a strategy, offering up a random (or specific) act of kindness, or any one of a myriad of possibilities. Moving right along to the Coaching YOU part...
WHAT ARE YOU TOLERATING IN YOUR LIFE?
What are you putting up with? “Tolerations” are things, situations, even people in your life that cause stress, drain you of time, energy, happiness and peace. Most are so tiny as to seem insignificant or they have been around so long that we hardly notice them. Once you identify your tolerations and begin to “zap” them, it is amazing how different (in a good way) you will feel. YOUR COACH’S (That’s me...remember?) REQUEST: ▸ Spend a few minutes (literally, a few) creating a list of your Tolerations. ▸ It could be 10, it could be 50! Tolerations come in all shapes and sizes: broken door handle (a “to-do” for months!), torn/mildewed shower curtain (you see it everyday!), lost camera battery charger (cannot use the camera!), pants that need shortening (now almost out of season!), neighbor’s light shines in your bedroom window every night, books to return to library, piles to be filed on your desk... ▸ Got your list? GREAT! My Request is that you “handle” 5 of them by next month’s issue of The Florida Villager. “Handle” means ELIMINATE! Fix the door handle, buy and install a new shower curtain, order a new battery charger, pants to the alterations person, books to the library drop box, file the piles and speak (kindly) to your neighbor about illuminating the flowers instead of your pillow! ▸ Then (an important step) email me to let me know you have completed your commitment (you are committing to this, aren’t you?) at CoachBobette@thefloridavillager.com and let me know how it feels! Grits:
3 slices bacon, chopped 1 pound shrimp, peeled and deveined 2 tablespoons flour 1 1/4 cups sliced cremini mushrooms 1 large garlic clove, finely chopped 2 teaspoons lemon juice 1/2 teaspoon Tabasco sauce 1/4 cup scallions, thinly sliced
4 1/2 cups water 1 cup stone ground grits 1 teaspoon salt 3/4 cup grated sharp cheddar cheese 1/4 cup grated Parmesan cheese 3 tablespoons butter 1/2 teaspoon freshly ground pepper 1/2 teaspoon Tabasco sauce
Cook bacon in a medium skillet over low heat, until crisp. Drain the bacon on paper towels and reserve the bacon fat. Add enough oil to give you 1 1/2 tablespoons of fat in the skillet. Toss the shrimp in the flour until they are lightly coated and shake to remove any excess. Cook the shrimp over mediumhigh heat just until they turn pink, about 1 minute. Add the mushrooms and bacon, cook another minute; add the chopped garlic and toss, careful not to let the garlic burn. Finish with Tabasco sauce, lemon juice and scallions. Remove from the heat. Be sure not to overcook this dish!
Bring water to boil in a medium saucepan over high heat. Whisk in the grits and salt, reduce the heat to low and cook, stirring occasionally, until grits are thickened, 35-40 minutes. Remove from the heat and add the cheeses, butter, pepper and Tabasco. Adjust seasonings as desired.
