5 ways with confetti paper
In its simplest form, shredded lightweight paper provides a traditional and well known type of confetti. Simple discs (known as chads) c a n b e p u n c h e d o u t o f r e c y c l e d p a p e r. T h e s e fluttering discs in colours from plain white, to pastels or brights, are what our childhood memories of weddings are all about.

I realized this lesson when I was searching for my dress, and it may sound like a cliché, but in the wedding industry we are dealing with realizing the dreams that the majority of brides have had since they were 4 years old. Don’t let that break your spirit – trust your bridal consultant to assist you in finding a dress that suits your body-shape, your personality and your colouring – a dress that will compliment you, and make you look like a dream. Then, stay true to your personal style – Wearing something that is outside y o u r c o m f o r t - z o n e w i l l m o s t l i k e l y m a k e y o u f e e l u n c o m f o r t a b l e t h e e n t i r e d a y. I t ’s v e r y i m p o r t a n t t o k n o w y o u r b u d g e t a n d s t i c k t o i t . D o n o t t r y o n a d r e s s if it falls outside your budget, it will only cause heartache when the dress you won’t is unaffordable. Do your homework and find a bridal boutique that has a reputation for great service, and one that carries dresses that you like, at prices you can afford. I recommend starting close to home, and then venturing further out. Purchasing your dress from a bridal boutique that is conveniently located (i.e. close to h o m e o r w o r k ) i s f i r s t p r i z e , a n d w i l l s a v e y o u a l o t o f t r a v e l i n g t i m e w h e n i t ’s time for your alterations appointments. Start early! Many gowns take 4 to 5 months to arrive after order placement and once it arrives you still have to factor in sufficient time for alterations, accessorising, etc. And, even though most boutiques have the option of rushing y o u r o r d e r, t h i s i s b o u n d t o a d d a d d i t i o n a l s t r e s s t o y o u r a l r e a d y e n d l e s s l i s t of wedding pressures – do yourself a favour and rather place your order with a month or two to spare. In my opinion the ideal lead time is 6 to 7 months. Keep your “dress-search-crew” as small as possible – too many different o p i n i o n s a r e s u r e t o c o n f u s e y o u a n d c r e a t e u n n e c e s s a r y f r i c t i o n . What advice would you like to share with Confetti Chicks brides and grooms to prepare them for their big day? I always tell my brides to “stop” often during the course of their wedding day just to take it all in – it really goes by so quickly and if you don’t stop you’ll miss so much. Always remember that it is YOUR day ... whether it is choosing YOUR dress, the flowers, the seating arrangements – you should have the final s a y. What would you do different if you got married again? Wear a veil! That is really the only thing I would change – I chose not to wear a veil (can’t even remember WHY!). I didn’t regret that until I started receiving the p i c s o f “ m y ” b r i d e s , w e a r i n g t h e i r v e i l s . 5 ways with confetti petals
Rose petals are freeze-dried and a popular natural confetti alternative, especially if your venue prohibits scattering paper confetti. My personal f a v o u r i t e i s t h e s t i l l - s o f t f r e s h v a r i e t y, a l t h o u g h completely dried petals are also fragrant and ethereal. Bonus: petals are biodegradable.

It all started in my parents’ garden on our family farm in the Easter n Free State, my mother picking flowers and arranging them inside the house. In my last years at school I worked in a local florist owned by two wonderful floral artists. I studied fine arts, and a fellow student friend and her mom did flowers for weddings. After I completed my studies I went abroad to gain experience from other florists. I lived in London for four years and worked in a few different flower shops, including with a wonderful florist lady Jude Roberson. Brides should decide what flowers they love most and then research when they are most available based on the seasons. One can then plan the wedding to be around that time of the year to make sure those flowers are available. W ith its many nations and tribes, Africa is very rich in different wedding traditions. Marriage is something that is highly valued in the amaXhosa culture as it is a spiritual and social family affair that involves combining two lives, two families and even two communities. After all, it solidifies relationships but also enriches communities and nations by bring forth new life and new hope. African cultures celebrate the coming of rain and the first harvest of a child, and marriage is a similar cultural process which ushers in new life. In all African communities, the bride plays a very special role and is treated with respect because she is a link between the unbor n and the ancestors. In so doing they are inviting them to bless the occasion as well as introducing the bride to the ancestors. There are no formal invitations for this event but, instead, whoever wishes to can participate in the celebrations – and this often leads to very large crowds. The whole event is joyous and very communal in spirit, and the celebrations go on for at least two to three days at the b r i d e ’s h o m e a n d t h e g r o o m ’s – b u t e s p e c i a l l y a t t h e g r o o m ’s . I n t h e f i r s t c e r e m o n y t h e g r o o m ’s e n t i r e f a m i l y w e l c o m e s t h e b r i d e – a s well as her entire family – as a formal extension of familial relations. At this point both families are now formally related. The bride is given a knife and she has to stick it into the ground. The knife in the ground symbolises the sharing of wedding rings and the accepta n c e o f t h e g r o o m ’s p r o p o s a l , a s w e l l a s s h o w i n g r e s p e c t t o h e r h u s b a n d . The bride and groom are kept apart on the day of the ceremony in order to

It was in December 2013 when my son (who is an amazing animator) suggested we make the Christmas decorations for the one and only cake I b a k e d a n n u a l l y a n d t h a t w a s t h e f a m i l y ’s C h r i s t m a s c a k e . So off I went to buy some “plastic” icing as I knew it then. I had no clue what I was doing or what tools or ingredients I should be using and my figurines didn’t work out at all. This then inspired me to want to lear n all about cakes and decorating, so I started my first cake decorating lesson the 22nd J a n u a r y 2 0 1 4 . I t t o t a l l y t o o k m e , a n d m y f a m i l y, b y s u r p r i s e – e s p e c i a l l y m y husband who couldn’t understand why I’d work all day and then come home at night and work till the early hours of the morning on a cake! I loved all six lessons and from that moment on all I wanted to do was decorate cakes!
Naked Cake By my third lesson, my daughter started up a Facebook page for “ L u l u b e l l e ’s B a k e s ” – t h a t f i r s t n i g h t I h i t 1 0 0 l i k e s . I w a s o v e r t h e m o o n ! Three years later I have over 34,500 Facebook followers, and also have foll o w e r s o n I n s t a g r a m a n d Tw i t t e r – i t ’s n o t a b o u t t h e “ l i k e s ” o r t h e “ f o l l o w e r s ” o n t h e s e p a g e s – i t ’s a l l a b o u t t h e l o v e l y p e o p l e o u t t h e r e w h o e n j o y seeing my creations and their words of encouragement. W ithout them and m y f a m i l y ’s s u p p o r t , I w o u l d n e v e r, E V E R , h a v e d r e a m t t h a t o n e d a y I w o u l d be running my own business. In June 2014 I was retrenched, and I took this as a sign and turned those lemons into lemonade! I took the first huge step t o w a r d s r u n n i n g m y o w n b a k e r y. My husband even renovated my kitchen to accommodate a full-on bakery; my daughter is a wedding photographer and we often work together on wedd i n g s ; m y s o n , t h e a n i m a t o r, h a s b e e n m y r i g h t h a n d m a n w h e n i t c o m e s t o making cake toppers and my youngest daughter is always there to encourage me on my cakes. They have all been so supportive to a wife and mum who had a professional office job for over 30 years and who now is a baker and works from home all day!
What do you enjoy most about the wedding industry… and what gives you the greatest excitement and joy? W e d d i n g s a r e s u c h a j o y f u l t i m e i n o n e ’s l i f e a n d I a b s o l u t e l y L O V E d o i n g w e d d i n g c a k e s . I l o v e m e e t i n g t h e c o u p l e s – w h e t h e r i t ’s j u s t f o r a c o n s u l tation or a wedding tasting session. I love going to the venues, seeing all t h e s t u n n i n g d é c o r, a n d s e t t i n g u p m y c a k e s w h i c h u s u a l l y a r e t h e c e n t r e o f
Elegant, tiered cake attention – this is such an honour for me too! I always take photos of my cakes at the venues and the last photo I take is the one just before I walk out of the room. I love to glance back at the beautifully decorated room and see my cake there waiting in anticipation for the bridal couple. Always a proud moment for me.
What have been your greatest lessons that you have lear ned about your trade? Probably one of the greatest lessons I’ve lear nt from the cake industry is to be confident in myself and to trust myself to be able to do what my clients w a n t m e t o d o . G o i n g i n t o t h i s t r a d e f r o m s c r a t c h l i t e r a l l y t o o k m e b y s u rprise and I very quickly had to find that inner confidence within myself.
What advice do you have for clients in terms of them choosing their wedding cake? I always ask my clients whether they want a slice for each guest, whether t h e y w a n t t h e c a k e m o r e f o r t h e l o o k , o r w h e t h e r i t ’s p a r t o f a s w e e t t a b l e . Many couples want a 3 or 4 tier cake but they don’t want all the left overs. What I like to suggest to them is to still go for the look but instead of each tier being cake, we add a “fake” cake tier in between which is decorated exactly like the cake and you really can’t tell the difference. So many people don’t know about this option and it such a good idea – not always a cheaper idea as there is still the same amount of work being done on the fake tier as a normal tier but it is a bit more cost effective.
What has been your greatest wedding memory? O h , t h e r e a r e a f e w, b u t p r o b a b l y o n e o f m y g r e a t e s t w e d d i n g s w a s o n e I did for a stunning couple who worked for an international airline and live in Dubai. Their venue was quite a drive from my home so my husband and I stayed at a nearby hotel that night, but the cake was one of my first intricate c a k e s . A s t h e y w e r e b o t h a i r c r e w, t h e y h a d t r a v e l l e d t h e w o r l d a n d I h a d t o p u t t h e w o r l d m a p o n t h e m i d d l e t i e r. T h e r e w a s a b a k e r i n A u s t r a l i a w h o had made a very similar cake so I wrote to her for advice. She got back to me very quickly and gave me some tips on how to do the cake and I so appreciated this advice from a world renowned cake artist! The cake was a huge success and the toppers were made by my son who did a great job. This lovely couple have ordered cakes from me on several o c c a s i o n s w h e n t h e y v i s i t t h e i r f a m i l y h e r e i n C a p e To w n . I t ’s s o n i c e t o keep in touch with my clients and now that I’ve been around for 3 years plus I am seeing them all quite regularly now!
What would you do differently if you got married again or renewed your vows? Definitely won’t be getting married again as I’ve been happily married for 32 years this month! But ... if we were to renew our vows (which secretly is something I’d love to do), I’d pay more attention to my cake!! I can’t even remember the flavour or design of my wedding cake – how sad is that! So much attention to detail goes into wedding cakes now and I would love to have a 5 tier cake (with some fake tiers in between to minimize left overs!)

What different or unusual elements would you love to see a couple incorporate into their wedding? I like to suggest to couples that their cakes should be cut at the beginning o f t h e i r e v e n i n g r a t h e r t h a n a t t h e e n d . D o i n g i t t h i s w a y, w i l l m e a n t h a t a l l their guests are there to see the couple cut their cake and take photos of them. Doing it at the end, some people may have left, some people are outside having a smoke and some people are maybe a little bit tipsy to r e m e m b e r t h e e v e n t . I t ’s j u s t t h a t t h e y g o t o s o m u c h t r o u b l e a n d e x p e n s e with their wedding cake that everyone should see it and see their cake c u t t i n g c e r e m o n y.

My forté was administration when I used to work in an office, and I always kept my filing and correspondence meticulously up to date. I still do this now in my business, because cake decorating is not just about cakes. I keep a spreadsheet of every invoice I have sent out, from my first one to the most recent ones. I have a filing cabinet full of receipts, invoices and info. If my office is in a mess, then my head space is in a mess so I always try and keep things tidy and up to date. I also employ my niece to help with my admin when things get a bit hectic in the kitchen. I am a wife to an amazing husband, a mother to three lovely children and a granny to the two most adorable grandchildren ever!

INGREDIENTS
NUT CRUNCH CHOCOLATE FUDGE!
2 cups chopped dark chocolate 1 tin (385g) condensed Milk 1 Tbs butter 2 cups roughly broken shortbread biscuits 1 cup coarsely chopped roasted nuts\
METHOD Line a 22cm square baking tin. In a large thick bottomed pot, combine the chocolate, c o n d e n s e d m i l k a n d b u t t e r. Stir over medium heat until mixture is evenly melted and smooth. Cook, while stirring, over medium heat. Remove from the heat then stir in broken biscuits and nuts. Spread into prepared baking tin. Refrigerate until firm before slicing into blocks. Makes about 24.

Heat the cream in a small saucepan until just below boiling point. Immediately pour the cream over the chopped chocolate and allow to stand for 5 minutes before stirring until smooth and g l o s s y.
