The larger political context of the war is kept to the margins, keeping the focus tight on the film’s protagonist. As a story about a man in an extraordinary situation, Eastwood’s direction clenches tight around the heart and hands over a satisfying drama with sledgehammer action sequences. “Cut Bank” (R) — Tucked away in rural Montana, Dwayne (Liam Hemsworth) wants to get himself and his peppy blond girlfriend (Teresa Palmer) out of town, but witnesses a murder instead. By total coincidence, he had his video camera rolling and pointed in the right direction when the town’s first murder takes place in a canola field. Well, maybe it wasn’t a coincidence, and maybe it wasn’t a murder — the plot twists itself into knots, but it’s not a tight fit. Located in the wilderness of northern Canada, the dam is more than a half- mile long at 2,790 feet; experts estimate the structure was started in the mid-1970s. ••• You’ve probably seen ventriloquists perform, but you may not realize that it’s a skill not limited to humans. The crested bellbird, which can be found in the wetlands of Australia and Venezuela, throws its voice in order to misdirect predators. ••• We’ve all heard the childhood tale of George Washington chopping down a cherry tree, then confessing because he could not tell a lie. UV Defense Trumps Style When Choosing Shades By David Uffington© Here comes summer ... and the sun’s damaging glare. Do your sunglasses protect your eyes from the harmful effects of ultraviolet rays? An American Optometric Association (AOA) survey found that nearly half of us don’t look for the level of UV protection when we buy sunglasses. The short-term effects of UV rays can result in actual sunburn of the eye, called photokeratitis. While the condition is temporary, the symptoms can be painful: light sensitivity, tearing and a feeling of grit or a foreign body in the eye. Longer-term effects of exposure to UV rays can be much more serious: macular degeneration, cataracts and even cancer of the areas around the eye. Here are some of the AOA guidelines to look for when buying sunglasses: • Choose sunglasses that block 75 percent to 90 percent of visible light and at least 99 percent of UV-A and UV-B rays. • Pick sunglasses that closely fit your face to keep UV rays from reaching your eyes from the side.
Make sure sunglasses protect your eyes from the sun.
• Avoid sunglasses where the lenses don’t exactly match in color or that have distortions. And don’t forget the kids. Their eyes are much more vulnerable to harmful effects of UV rays. Get them in the habit of wearing sunglasses when outdoors. Here are some terms to help you understand the different types of lenses. • Blue blocking: Good for seeing distant objects in snow or haze. • Photochromic lenses: Lighten and darken according to the light around you. • Polarized lenses: Reduce the glare from water or snow. • Gradient tint: Darker at the top and lighter at the bottom.

For a window into the old days of Phoenix, spend a memorable evening at Durant’s, one of Arizona’s most famous watering holes. Enter by way of the restaurant’s unofficial entrance, “Goodfellas” style, through the back door. A former pit boss for gangster Bugsy Siegel at the Flamingo Hotel in Las Vegas, James E. “Jack” Durant left the city after Siegel’s murder in 1947. Jack “Swede” McElroy, a local business man, invited Durant to Phoe-
nix with the promise of backing him in the opening of a new restaurant and bar. Durant managed the establishment until his death in 1987. Today, Durant’s is still a family-owned business with Carol McElroy, Jack McElroy’s daughter-in-law, as the current owner and manager. Each meal, just like it did in 1950, begins with a cold relish tray featuring carrots, celery and radishes, along with a salad topped with Durant’s signature bluecheese dressing. Then, clean out and shorten your dryer’s vent hose to make your machine more energy efficient. It cuts down on drying time, too, saving you time and money. ••• Got an odd job coming up? Before you go out and purchase an expensive limited-use tool, check with friends and neighbors to see if you can borrow instead of buying. Check with local hardware stores to see if it’s cheaper to rent, too. ••• Plastic grocery bags always come in handy. Try storing them in empty tissue boxes for the car or bathroom, or use an empty 12-pack soda box for more storage under your kitchen sink or in the garage. ••• This is a classic money-saving tip as well as safety advice: Lower your water-heater temperature from 140 degrees to 120 degrees. You’ll save money on heating water, and reduce the risk of a painful burn from scalding. ••• Add a small bit of boiling water to a glass of iced tea to clear it up if it is cloudy. Quesadilla is a Spanish word for “little cheese thing.” The recipe typically calls for mounds of cheese and pork chorizo between two corn tortillas. Although there’s just a small amount of cheese in this recipe, it’s the lean ground chicken and the spices that are the stars of this healthy dish. The substitution of lean ground chicken breast for pork chorizo cuts down on the calories without sacrificing any of the flavor. Chorizo sausage is usually made with ground pork and combined with fat, wine, paprika and salt and stuffed into a casing made of tripe. Paprika and red chiles are the primary spices in Mexican chorizo and infuse it with a deep reddish color. This recipe uses the same spices as the pungent Mexican sausage to marinate the
ground chicken, allowing you to mimic the flavor of chorizo while cutting out the fat. Small, diced potatoes add a distinctive texture and also absorb the spices. Step 1. Combine the chicken, chile powder, salt, pepper, bay leaf, cinnamon, Italian seasoning, cloves and vinegar in a bowl, mix well. Set aside. Step 2. Boil the potato in lightly salted water in a saucepan until tender, drain. Heat 1 teaspoon canola oil in a nonstick skillet over medium-high heat. Saute the chicken mixture, stirring to break up the pieces, until the chicken is almost cooked through. Step 3. Add the potato,
onion and remaining canola oil, cook until the potatoes begin to brown. Remove from heat and mash mixture. Top each of 4 tortillas with an equal amount of chicken mixture. Top with shredded Cheddar cheese, then another tortilla. Spray a griddle or nonstick skillet with non-stick cooking spray. Step 4. Cook the Quesadillas over medium heat until both sides are crisp, turning once. Makes 4 servings.

‘Blue Zones’ Are Key to Longevity By Matilda Charles© California, Costa Rica, Greece, Italy and Japan all have something in common. They all have a city with large numbers of people who reach age 100. Only 25 percent of our longevity comes from DNA, says National Geographic author Dan Buettner in his book “Blue Zones.” The rest comes from our environment and lifestyle. With teams of researchers, Buettner traveled the world and discovered the secrets to longevity. There’s no one magic bullet from all of these locations, but lifestyle, spirituality and community combine with a few habits these centenarians follow. Moderate activity, semi-vegetarian diet, a clear purpose and staying socially engaged are common traits among the people who routinely live to be 100. In 2009, AARP joined with the Blue Zones project to add years to the lives of people in Albert Lea, Minn. The end result: The life expectancy of the nearly 800 participants rose, simply by making a few changes in their lifestyle and diet. Buettner’s books are worth reading. “Blue Zones” (subtitled “9 Lessons for Living Longer”) also is available on Amazon.com or BlueZones.com. Be sure to look for the updated second edition released in 2012. Study: Seniors Jubilant After Cleaning House By Matilda Charles© Seniors feel better after cleaning the house, according to a study done by the Frances Payne Bolton School of Nursing. Who knew? Researchers looked at various influences on a senior’s health and emotional well-being, such as environment, smoking, income, education, health, socioeconomics and exercise. The participants (ages 65 to 94) had one serious illness, were enrolled in both Medicaid and Medicare,
and had physical limitations that kept them from at least one daily task, such as bathing, handling medications or dressing. What the researchers didn’t expect was that doing housework and maintaining their own property had more of an impact on seniors than, for example, neighborhood poverty. They were able to prove what they’d seen: Seniors who lived in a neat and tidy environment were more satisfied than
those whose environment was chaotic. I saw something similar when I helped a frail neighbor clean out her pantry. While roomy, the pantry was a jumble of items stacked on top of one another amid outdated, expired food. It was difficult to even write a grocery list because it was impossible to tell at a glance what she had. Haymaker Restaurant Offers Midwestern Comfort Food and Other Culinary Creations By Roberta Meehan© Are you looking for a restaurant that’s great for the family, perfect for the big game and wonderful for a date, while still being just right for breakfast, lunch or dinner? Well, just follow your nose to the enticing aroma emanating from one of Joey Lucidi’s Haymaker restaurants. The technical name for these palaces of palatable food delights is The Haymaker Restaurant Company, but the local name is simply Haymaker. The West Valley is fortunate enough to have two Haymaker locations — the first restaurant at 24762 N. Lake Pleasant Parkway in Peoria, which opened in October 2013; and a second at 1800 N. Litchfield Road in Goodyear, which opened last year. A third location is scheduled to open at the intersection of Tatum and Bell in Phoenix in July, notes Joey. Haymaker is a family-owned and operated business and Joey comes by his food management skills quite naturally. His parents owned 11 restaurants in San Diego (and earlier in Michigan) and he says that he literally did his school homework sitting in the back of the restaurants. While Joey was in college, he took a break from the family trade and earned a degree in business and marketing. “I soon realized, however, that my passion was for food — the neighborhood grill, the family restaurant with something special,” he says. Before opening Haymaker, Joey worked at some recognized national chain restaurants, doing a little bit

of everything, he says. That experience, along with his college studies and family background, makes it easy to see how the Haymaker concept got its start. The Lucidi family is proud of the food at Haymaker; it is good, wholesome and plentiful. The meals are reasonably priced and appealing. The pricing is also enticing for seniors on a limited budget. “Much of the breakfast crowd on any given day is composed of seniors,” says Joey. The menu at the Haymaker offers a wide variety of foods and something for all tastes, from meat lovers to vegetarians. Vegetarian options (such as veggie patties) can be substituted for meat at no additional cost, notes Joey. Another bonus is that the menu is not complicated to understand, even with its exciting creations. The menu comes from a family grill that, to quote Joey, “offers both Midwestern comfort food and interesting in-house culinary creations.” At Haymaker, breakfasts are made on-site, almost all from scratch, except for the breads, which are all freshbaked from local bakeries. Examples of breakfast dishes include California and Arizona omelettes, Haymaker Benedict and huevos rancheros. The restaurant is open for breakfast 7-10:30 a.m. Monday through Friday, and 7-11:30 a.m. Saturday and Sunday. The meats served for lunch and dinner (beef, pork and chicken) are fresh and never frozen, says Joey. Examples of lunch and dinner items include burgers and sandwiches of many varieties, teriyaki bistroloin

There are also specials for seniors. The Haymaker closes for dinner at 9 p.m. Sunday through Thursday, and 10 p.m. Friday and Saturday. Much of the advertising for Haymaker is done by word-of-mouth, says Joey. Nonetheless, two of the other successful marketing devices used by the restaurant are coupons, which generally promote a summer item, and the burger of the month, which is a year-round specialty. If a burger of the month is highly successful, it could become a part of the regular menu, notes Joey. Children eat for free on Wednesdays at Haymaker. Also, the restaurant offers a different dinner special every night of the week. “Some menu items are exceptionally popular,” says Joey. “For instance, the Peoria restaurant serves between 35 and 40 pounds of pulled pork per
night.” In addition to the menu being the same at all Haymaker locations, so too is the basic restaurant decor. For instance, all Haymaker locations have a “Buffy” — a buffalo head mounted on the wall of the bar, which is made out of brick. Furthermore, “each bar has the best selection of whiskey in the Phoenix area,” says Joey. to any part of the building’s infrastructure,” he continues. “Damage can then occur to the underlayment, the insulation, the drywall, the wood frame, or the stucco — in addition to whatever is inside the building. This is especially true of water damage. People tend to think of roof problems in terms of leaks, but the underlying problem may have to do with improper pipe and vent flashings, broken tiles, or improper underlayment installation, to name a few.” Most roofs in Arizona are classified as tile, shingle or urethane. Flat roofs are most likely to be urethane (technically called elastomeric), while tiles and shingles are more common on vaulted roofs. Sheet metal roofing is also an option and should be discussed separately with an appropriate roofer, suggests George. The tiles used in tile roofing are usually clay, sandcast or concrete. These tiles have an underlayment of felt, which could be organic. “This felt, which is what actually provides the waterproofing, decays and
must be replaced every 12–20 years,” says George. “Sometimes sooner.” Shingles, which come in numerous styles, qualities, and colors, are normally made of an organic or fiberglass material that has been saturated with asphalt and then coated with various weather-resistant minerals. In general, both tiles and shingles weather about the same, and in both cases, the weathering properties depend on the base materials used, notes George. Urethane (also called polyurethane) roofs keep best, but the urethane must be coated every seven years in order to prevent weather damage, suggests George. “As an advantage, urethane is also very lightweight and thus adds little to the external force or pressure on the structure,” he explains. “Polyurethane, in its spray form, can also be used effectively to repair existing roofing systems.” Regardless of the type of roofing one has, Sun City Roofing recommends a 10-year

1. Proper exercise is key: A majority of behavior issues stem from a lack of proper exercise. At least one 30-minute walk per day is sufficient for most dogs. Playing in the backyard or in the house does not count as exercise. 2. Buy a dog backpack for walks: This allows your dog to have a job and adds weight with objects like water bottles or hand weights so the dog expends
more energy. 3. Challenge your dog with brain puzzles: A mentally tired dog will not spend time thinking about how to get in the garbage or waste breath yipping at neighbors. 4. Take a training class: Getting your dog to respect you is critical to having your dog listen to you. 5. Send your dog to a camp or hire someone to take Fido on a walk. A tired dog can be a good dog.
