WELCOME

Summer festival opera is unique in offering time to savour at leisure both stage and dining table. At The Grange we pride ourselves on giving you ten minutes more than our peers in the long interval for the unhurried enjoyment of both epicurean and social delights. Our first few years of Grange Estate chef, Becka Cooper’s menus – Dinner inside, Supper outside – have proved a triumph. She and her team have risen magnificently to the challenge of feeding many hundreds of you every evening with locally sourced food of lyrical taste and colourful hue.

Our renowned Hampshire wine merchant, Simon Taylor, knows of old what flows deliciously on highly charged summer evenings. And our trump card, The Grange Sparkling Wine, features prominently among your pre-performance aperitifs. Every restaurant in the land has struggled in recent months to keep costs down. Becka has gone out of her way to do the same. You will not be surprised that our Dinner and Supper prices are a little higher than last time. But we are determined that the performance in the kitchen will match that on the stage.

As you will hear Macbeth sing this summer before his ill-fated Feast, “Pago son io d’accogliere tali ospiti a banchetto – I am happy to welcome such guests to the banquet.” We expect no ill fate.

WELCOME FROM BECKA Wow! What a year it has been. On June 24th we went from 0 to 100 literally overnight and then managed to deliver an opera festival and 2 years’ worth of weddings and events in 4 extraordinary months. There was a lot of flying by the seat of my pants, and we didn’t get much sleep, but with the help of my magnificent front of house, back of house, and kitchen teams, and the fabulous Grange Events team, WE DID IT!

And as a result of that we go into the 2022 Festival as an even tighter team, even more committed to giving our guests a unique dining experience. And the reason for that isn’t because I’m a Michelin-starred chef (yet!), running an enormous glitzy enterprise. It is because we are the Grange Home Team. Not only are all our ingredients grown, produced or reared locally and on the estate, but so is my team. We are home grown – I live here, my kitchen is here, my cooks and waiting staff are all local. We would never pretend to be anything we are not. We play to our strengths, delivering unpretentious food which tastes delicious, with the panache of an ex-opera singer turned cook.


Following last year’s extraordinary Festival when we had to think on our feet, chopping, changing and adapting our dining offering right up until the very last minute to reflect the chopping and changing of Covid rules and regulations, this year we are returning to the more familiar, more formal, Dining in the House as well as the relaxed Supper in the Park. In the house we will be offering 4 different menus, each with a choice of 3 starters, 3 main courses, 2 puddings or cheese. In the park we will also be offering 4 menus and each one has a choice of meat/ fish or vegetarian. These menus will run consecutively, allowing me to make the most of all the wonderful, seasonal ingredients we are so lucky to have here in Hampshire.

We continue to work closely with small local suppliers and producers and a very exciting development is that Worthy Earth, who have established a market garden at Dummer Down Farm will be growing directly for me, giving me access to the best seasonal produce which is grown organically and cultivated by hand. And here on the Grange Estate, our very own Home Farm is also in the early stages of establishing a market garden and going forward I hope that their fruit and veg will be at the heart of my menus. This is field to fork, with minimal food miles, and the inspiration behind the salad which is featuring on each menu in various different guises. As ever, we will endeavour to accommodate your dietary requirements where possible. Please talk to Sofia about these and she will put you directly in touch with me if necessary.

We all care deeply about Dining@TheGrange. We are all personally invested in it and I hope that comes across when you walk into our dining room or into your pavilion or marquee and start tucking in. We want you to have the most fabulous evening ever – a spectacular theatrical experience and a dining experience that makes your taste buds zing and leaves you feeling very well looked after, with a smile on your face. A DAY AT T H E O P E R A Each evening, the park opens two hours prior to the start of the performance, and we encourage you to make the most of this time to immerse yourself fully in the idyllic atmosphere of The Grange.

To begin your evening, why not enjoy drinks and canapés at The Portico Bar with its stunning views. If you have a sweeter tooth, perhaps a visit to The Tea Pavilion with its selection of hot drinks and cake will be your first port of call. New this year is The Grange Landrover. Here you will be able to purchase ice cold bottles or glasses of The Grange sparkling wine. During the season it will make its way around the grounds, visiting all the picnicking terraces. Inside the house, give yourself time to browse Lady Ashburton’s shop and the Art@TheGrange exhibition, before the sound of bells beckons you to take your seat in our award-winning opera house.

When you emerge into the glorious goldenhour light for the 100 minute interval, there is sure to be a dining option which suits your party. For Dinner in the House, head into the faded grandeur of the historic mansion and savour a three-course menu bursting with the best local, seasonal produce. If you prefer to dine al fresco, choose Supper in the Park, a sumptuous picnic supper laid for you in your marquee or pavilion. Alternatively, bring your own picnic and make use of the marquees, pavilions or spread a rug on the beautiful lawns.

Once the performance is over, continue to enjoy the summer evening in your tent or at The Portico Bar. The shop is also open for you to make or collect any purchases. The park is open until 11:00pm.

T H E P O R T I C O BA R Suspended over the monumental steps, The Portico Bar’s beautiful lake views make it the perfect place to begin your evening. Soak up the atmosphere at The Portico Bar whilst sipping on some of our perfectly chilled and perfectly local English sparkling wine – The Grange CLASSIC and The Grange PINK both pair wonderfully with a plate of local smoked trout or Becka’s delicious canapés.

Wine can be pre-ordered by the bottle only, individual glasses can be purchased on the day from The Portico Bar. You can find the full wine list on page 18. There will be a reduced wine list, and a selection of soft drinks and savoury snacks available for purchase on the day. The Grange Landrover will be serving their Sparkling wine by both the glass and the bottle.


T H E T E A PAV I L I O N The Tea Pavilion can be found on the Cedar Tree Terrace and is open two hours before the performance starts and remains open until the end of the long interval with no need to pre-book your tea, coffee or cake. We are delighted to welcome back the team of volunteers from Winchester Hospice to run The Tea Pavilion again for the 2022 Festival. Take a seat, relax and indulge in something sweet and delicious; all while giving back to this fantastic cause. Everything in The Tea Pavilion is available for a donation of your choice.

Winchester Hospice believe that Every Moment Matters. A local hospice in Winchester reduces the amount of time patients and their families spend travelling to receive hospice care or visit loved ones, so more time can be spent with the people who mean the most to them. P R I VAT E D I N I N G If you are bringing a large party, why not consider private dining? The Gallery on the first floor of the main house provides an atmospheric and historic setting for your interval dining. Seating up to 24, The Gallery overlooks the double-height Oval Lawn room with its exquisite chandelier and arresting views up the lime avenue. This is our premium dining room in which you and your guests can enjoy an exclusive dining experience. A dedicated team will serve you. Your table will be decorated with freshly picked estate flowers. The Gallery will also be available to your party before the performance if required.

Separate Dining is also available in the Map Room, situated on the ground floor at the front of the house and seating up to 30. The Map Room has views over the Oval Lawn and Lime Avenue. S U P P E R I N T H E PA R K Arrive at your tent and find everything you need to begin your evening at The Grange. We will provide you with champagne flutes and highball glasses for your pre-performance entertaining. Why not pre-order canapés (page 6) and a bottle of The Grange Sparkling Wine? While you enjoy the first half of the performance, we will set out your picnic in gorgeous bowls and platters so that everything looks beautiful ready for the interval. As you return to the theatre for the second half of the performance, we will clear everything away ensuring a blissfully stress-free evening from start to finish.

Supper in the Park is £50 per person, with a minimum order of two, and includes the food and place settings. You will need to book somewhere to enjoy your delicious Supper. Choose from seats on a long table in one of the two marquees or a private pavilion. Full details can be found on page 22. Very pale with a fine, steady mousse of small bubbles. Gorgeously alluring on the nose – fresh, citrus, light autolysis, russet apples, hint of iodine too. On the palate, smooth supple mousse with fresh, lemony white fruit, refreshingly racy but not too much and again this touch of russet which gives a depth of richness to it, saline and fresh on the finish.

The place setting includes 1 x wine glass, 1 x water glass, starter, main and dessert plates, cutlery for each course and a linen napkin. If you are booking Supper in the Park you do not need to order cutlery and crockery as this is included in the price. If you prefer to dine al fresco, there is plenty of space on our beautiful lawns for you to bring your own picnics, rugs or tables and chairs. No gazebos, large parasols or barbecues permitted.

T H E F E S T I VA L E X P R E S S The Festival Express is our dedicated service from Basingstoke Railway Station to The Grange. Our driver will meet the selected train and transport you to the venue with enough time to drink in the wonderfully relaxed atmosphere at The Grange. This service departs 15 minutes after the performance from the Oval Lawn outside the house and will take you back to Basingstoke Station. £20 per person for a return ticket and you can book this service up to 48 hours before your visit. Please ensure you book well ahead of time as space is limited.

AC C E S S I B I L I T Y Our site has moderately challenging terrain, but we will always do our best to help those with restricted mobility. We offer a dedicated car park with a buggy service to transport you to your destination and back. If you have severely restricted mobility, we can arrange the use of our drop-off zone. The Portico Bar, Theatre and House have wheelchair ramps and both sets of facilities have an accessible toilet. THE GRANGE The Grange Festival is unique among opera festivals in having its own vineyard, making rare and delicious sparkling wines. In 2009 the four Baring siblings decided to work together to produce something exceptional from the soft, chalky landscape that had supported the family for 200 years. They wanted something more than a simple agricultural product, something that would stand the test of time – beautifully crafted, low-volume, English sparkling wines seemed a perfect goal.

Twelve years after the first inklings of a plan and barely more than a mile from the theatre, The Grange are now producing exceptional, award winning wines that sing with the harmonies of chalk and flint and the gentle, rolling downland. The judges at The International Wine Challenge said of The Grange, PINK sparkling wine “powerful red fruits at its core, finely balanced with long lovely flavours…” and The Grange CLASSIC was described as “luminous and crisp with flavours of apple snow and croissant” by Victoria Moore in The Daily Telegraph. T H E G R A N G E H O M E FA R M The Grange Home Farm is a Victorian Model farm built in 1878 by Alexander Baring, who was keen to encourage and enhance agricultural innovation on his estate through a demonstration farm. It was designed to be both beautiful and utilitarian, showcasing the latest technological improvements in a picturesque setting. With a dairy, creamery, poultry house, piggery, granary, laundry, stables, smokery, prep room and 12 horsepower Easton & Anderson engine, the farm was an exemplary feat of agricultural technology. If you’d glanced over your right shoulder as you came down the Festival drive, you’d have caught a glimpse of the red brick faced farm nestled into the slopes of the parkland.

However, this type of mixed farming was not the one that came to dominate the British landscape. Over the years, the redundant buildings of Home Farm slowly fell into decay as the estate moved along with the tide of modern agriculture.


Until 2020, when another Baring passionate about farming, returned to restore the derelict Home Farm. Fred Baring brings scientific and ecological practices back to the family farm, which now supplies local shops and the Festival’s menu with seasonal organic produce. The farm is committed to regenerative practices that enhances the local ecology whilst growing top quality and delicious produce.

These forms can be used to book your interval Dinner and any pre-performance food and drinks. There is a separate page for each of the four menus menus.

Use this form to book: Supper in the Park (which includes cutlery and crockery), Private Pavilions, Marquee space and cutlery and crockery.

Please note, it is only possible to pre-order wine by the bottle, but wine by the glass will be available on the day.

If you do not know what these are please contact the office on 01962 719208 or 01962 791020 and we will be able to assist you. 3 Once you’re logged in, you will see all your Festival booking history. Please select the most recent option and it will take you to your bookings for the 2022 Festival. 4 Select the performance date you wish to book for and click ‘edit’. This will show you all available options for that evening.

5 You will now be able to make your booking for food, drinks and Marquees or Pavilions. 6 If you wish, your guests are able to add their menu choices independently by sending them the link to the booking page. If you are splitting the cost of the booking, your guests can also make payments independently using this link. 7 If you are booking food, please detail any dietary requirements you or your guests have. If necessary, the Dining@ TheGrange team will be in touch to discuss any amendments needed to the dishes. 8 For more detailed instructions please email dining@thegrangefestival.co.uk
