Sixth grade students at Robert Smalls International Academy took part in the King Arthur Flour Bake for Good: Kids program where students learned to make bread from scratch. They also discovered that math, science, reading, and baking know-how add up to delicious bread! Students took home ingredients to bake two loaves of bread: one to eat at home and one to be donated to the food pantry at Community Bible Church. A total of 116 loaves of bread were donated to the food pantry who coincidentally was completely out of bread.

On a hot August day, Alan Lathan auditioned for Beaufort Theater’s Christmas Musical, Miracle In Bedford Falls. It’s A Wonderful Life, the film upon which Miracle In Bedford Falls is based, is a personal favorite of the Lathans. They even have ornaments from the film on their Christmas Trees. Alan was quickly cast as the infamous Henry Potter. Potter is a sinister lover of money, seeking to take over the town and make it his own personal dynasty by defeating George Bailey in business. Upon learning of Alan’s new role, Hillary, his wife began to research the production on line. What she discovered, completely floored her. The driving force behind the script was a man named Mark Cabaniss. Hillary knew that name quite well. Could it be the same Mark? More internet research revealed that it was indeed Miracle in Bedford Falls cast members her friend, Mark. Mark and Hillary studied music together at the same university and knew each other before that time, having performed music together in previous productions, concerts, and plays. Hillary was selected by Mark as his accompanist in a musical, The Prince and The Pauper. Mark was the music director almost thirty years ago. In an amazing find, Hillary located the program from that show to share with Mark. Hillary quickly emailed Mark and told him of the play and an old friendship was reunited. As emails over the fall continued, the two of them made a plan to have Mark come as the Lathans’ guest to see the production. He attended Saturday evening’s show. Mark and Hillary were once again together sharing their dreams of music forged so long ago. continued on page 8

USCB Chancellor Search Committee Encourages Community Input The University of South Carolina Beaufort is inviting the public to participate in the search for a new chancellor. The search was prompted by a recent announcement by USCB Chancellor Jane T. Upshaw, Ph.D., that she would retire on Aug. 15 of next year. The search for only the second chancellor in the university’s storied history is being conducted by Parker Executive Search of Atlanta. Parker is a global search firm that is engaged in senior-level search assignments in the areas of academic health sciences and health care, corporate, higher

education, and sports. It has conducted more than 500 successful searches for senior-level positions in the realm of higher education. Second holiday fire claims Gray’s Hill home

The Burton Fire District responded to a second house fire in Gray’s Hill this holiday season in what firefighters are describing as a disturbing trend. The fire was reported on Young Circle just after 9:30pm last night. Initial reports indicated that an elderly couple was still inside the home. Firefighters arrived on scene with smoke and flames coming from the single story home. An elderly male was injured after diving through a window to escape the flames and was transported to Beaufort Memorial Hospital by Beaufort County EMS with non life threatening injuries; no other injuries were reported. The fire was brought under control in less than 10 minutes and fully extinguished in about 30 minutes. It is unknown if smoke detectors were operating at the time of the fire. The fire is believed to have been caused by a wood burning stove. On November 24th Burton firefighters also responded to a house fire on Bruce K Smalls road in Gray’s Hill which destroyed a family home just before Thanksgiving. On December 6th a Grays Hill tragedy was averted when a burning mattress started by a 3 year old child with a lighter was 2

discovered by older children removed and extinguished before the fire got out of control. “Please check your smoke detectors and take a moment to do a safety inspection of your home,” stated Burton Fire Lieutenant John Ireland who was one of the first firefighters on scene at the Young Circle fire, “Make sure ‘if it has heat then three feet’ which means anything that generates heat should be a minimum of three feet from anything that could burn.” Burton Fire Officials are reaching out to the Gray’s Hill Community for opportunities to meet with residents to discuss fire safety and make sure they have all they need for safe holidays. “We’re asking Churches, neighborhood groups, schools, etc, in Gray’s Hill to invite firefighters to meet with the residents to stop this trend before we have another tragedy,” said Ireland. Gray’s Hill organizations or families that would like to meet with firefighters please call 521-5550.

School Improvement Council advisory panel

Beaufort County Board of Education Chairman Bill Evans has been named to a statewide advisory panel for South Carolina’s School Improvement Councils. Evans joins Sherri Horton of Clifton and Allison Jacques of Columbia on the South Carolina School Improvement Council Board of Trustees. The 21-member board acts in an advisory capacity to the South Carolina School Improvement Council, which serves nearly 15,000 members of local School Improvement Councils in the state’s 1,100-plus K-12 public schools. “These three individuals have tremendous commitment to and understanding of public education and its importance to the health and future of South Carolina,” said Board Chair Michael Guarino. “Our board is truly fortunate to have their shared experience and insight, and we look forward to their contributions in assisting the South Carolina School Improvement Council as it provides vital services to our schools, our children and our communities.” Evans has served on the Beaufort County Board of Education since 2011 and as chair since 2013. A retired educator, he was an elementary and middle school teacher in Pennsylvania early in his career and later served as a middle school assistant principal and principal in California. He retired from the Beaufort County School District following 24 years as a high school principal and district administrator, including service as the district’s SIC district contact, athletic director, ombudsman, science coordinator and Director of Secondary Programs. In the community, Evans is a past president of the Rotary Club of the Lowcountry, Community Investment Committee Chair for United Way of the Lowcountry and a member of the North Regional Planning Board. He holds a Bachelor of Arts degree In Biological Sciences/History from Rutgers University, a Masters of Education in Teaching and Curriculum from Penn State University and a Masters of Education in Educational Administration and Doctor of Education degree in Educational Leadership from the University of Southern California.

The artist is back - this time as Coastal Sculptures By Terry Rice

Not long ago, in an old produce stand, on Sea Island Parkway, near the Shrimp Shack, an artist created sculptures made from repurposed wood. These dockscapes feature old fishing buildings complete with shrimp boats moored out front. Unlike a photograph or a painting of this quintessential Southern vision, the sculptures are in 3D. They pop off the wall from which they are hung. They are very popular in homes along the east coast of the United States. Known locally as “Lynwood” and “The Artist Is In” in Beaufort and the Sea Islands, Ray Lynwood Polin, Sr., derives his passion for creating these dockscapes from his experience working as a dockhand on St. Helena’s Island at both Dopson’s Seafood and Gay Fish Co. as a teenager. Ray sees inside those seaside shrimp shacks. He knows the slanting yellow of early morning sun casting shadow on walls. Inside, he can still smell the shrimp and fish and diesel fuel. He can hear the growl of the boat’s engine, can still feel the engine vibrating through the wood – its power coming up through his feet. He can still feel the rain and the salt taste of waves over the bow and if he listens, he can hear the captain calling; can see the men hauling; can see shrimp knee deep, snapping. Decks are glistening with sea life. Ray’s buildings, dock shanties, speak with voices from within. It’s the 1950s. All the words are there inside spilling out. You can’t see them because childhood never goes away. Everyone you ever knew is still there.

Ray Lynwood Polin, Sr. with a recent sculpture They are invisible and yet their presence is felt in the boat and on the dock and especially in the buildings. Men live briefly on the sea, but they really live on the land and in these buildings with colored roofs peeking through – every one of them is filled with stories. You can feel the stories and the lives that tell theses stories just bursting through. Men come back from the sea with so much to tell. Sometimes they just don’t have the words. But the stories are still there. The shrimp, the fish are offloaded – the stories must come ashore, too. If there are too few words to tell the stories or too few ears to tell them to – the stories must go somewhere. There are stories in the buildings with colored roofs, you can feel it just pulsing through. Sometimes the stories are so strong, so powerful, so urgent – doors

and windows are left just hanging open. The wood speaks because it has a history. It was cut, trimmed and shaped by man. Put to a good use near and on the sea, then lost. Lost in time and then found. Each piece of wood – a sentence or paragraph. A building or boat – a chapter. Each collection of buildings and docks and boats are its own little novel. You can feel it, you can smell it, you can taste it. These scenes evoke a nostalgia for something you may never have known. But you long for it anyway and you study them closely and you know something of time and place, of people and land and sea. It’s all here. There’s so much to tell. Hidden inside, it’s hidden in all of us. Choose one of these coastal sculptures, and you’ve just bought a lifetime of stories.

Miracle In Bedford Falls had opened the way to a local miracle of two colleagues coming together not only as professionals, but long lost friends. There are decades of memories to share and new horizons to be accomplished together as old and dear friends have now found each other. As Mark said so eloquently in an email to Hillary, “I hope rehearsals are fun, productive, and rewarding, as we all are reminded that among the most important components of life are love, friendship, and faith...” Mark Cabaniss, president of Alfred Sacred Music, is a producer/publisher/writer/ broadcaster. As an ASCAP composer and arranger, Mark’s compositions have been performed nationally and abroad, and include musicals, cantatas, and instrumental works. Mr. Cabaniss is a multiple recipient of ASCAP’s Popular Music Award and is a Dove Award-winning producer. Mark created the stage adaptation of “Miracle In Bedford Falls.” Hillary and Alan Lathan are international entertainers performing in all types of venues from concert halls to theaters, to local appearances with their duet, Music From The Heart.

Coastal Sculptures - repurposed wood celebrates and reclaims the spirit of a time gone by, is the brand refresh The tagline refers to the connection between the waning shrimp industry lost to rules and regulations with insufficient profits to support a family business and Ray’s lost childhood with his family of origin’s lack of support to nurture physical and emotional growth. In addition to the residential market, TR Marketing plans to target larger entities such as restaurants, banks and private companies along the east coast. For the New England market, Ray will create lobster boats instead of shrimp boats. Plans are underway for a move back to the Beaufort area in early 2015 and will include working out of the old studio at the Sea Island Parkway location. Made My List. Checked It Twice

Several years ago, as one of our Christmas discussions, we talked about what we would buy for ourselves…one sure way to guarantee we got exactly what we wanted. I told you the story about how my father would always buy himself a gift. He’d wrap it and put a name tag on it, and put it under the tree as close to the truck as he could… way inside under the low branches and behind all the other presents. And the tag was always filled out to “him,” from “Your Best Friend.” Then, after all the other gifts were opened, and laying all over the place, he would reach under there and bring out the last gift. And he would act all surprised that it was for him. Opening it had to be watched by all of us, with rapt attention. To this day, each of his kids does the same thing…or some version of. For the kids with pets, pets that make it worse to live with them with a tree than to go without a tree, we just wrap up the gifts and hope the animals don’t choke on the ribbons and bows. But, we each always have a present for ourselves that no one else would know that we even wanted. Today, I will share my list. (I suspect you realize that buying me a bottle of wine would be daunting, even scary. So, I have my list. (Because no one except ‘my best friend’ can buy for me and do as well.) In no particular order, not even alphabetical. Drouhin Côtes-de-Beaune-Villages This wine is an exquisite Pinot Noir from the Burgundy region of France. And an exceptional value because it is priced to suit its appellation, but the grapes in it are much better than the appellation usually is. Like with other ‘special’ Burgundies, red or white, if you know the producer and what he uses

some of his grapes for, you know wines that are better than their prices…sort of the same idea as “second labels” in Bordeaux. At $25.99, this is delicious. But try running it through an aerator. It opens up and becomes even better and perfect for turkey dinners. Left Coast Chardonnay An Oregon wine that is truly the best of two worlds. We’ve talked about Old World style wines and New World style. It seems Oregon is an excellent source for combining these two. The climate and soil there are comparable to Burgundy, France…well suited to Pinot Noirs and Chardonnays. This Chard is layered and complex, always a sign of great wine. It has apple, pear and citrus notes mixed with baking spices and herbs and good acidity to go well with foods (even turkey, and I am not usually a fan of Chardonnay with turkey). This is absolutely one of the best new Chardonnays this year for $19.99. Melini La Selvanella Chianti Classico Riserva I have to include this wine on my favorites list because it was part of my trip to Italy this past summer. It was the one and only winery I got to while in Tuscany. La Selvanella was the first ever ‘vineyard designated’ Chianti made, a sign of the forward thinking at Melini. I love this wine with roasted

pork loin and tenderloin and with rosemary, both of which are abundant in Tuscany. There is a mellow set of flavors in i…, cherry, herbs, almonds and a hint of terroir, a smooth texture that keeps it easy drinking, and a long, lingering finish so you can remember all of it for minutes after each sip. And, if you are so inclined, this wine is capable of aging for at least five years. It’s worth trying for the $27.99 price. If I get all of my favorites list from my best friend, aging some bottles is going to be important. Numanthia Numanthia Wow! A spectacular wine from Spain. It is named for the area it comes from, in northwestern Spain, which prides itself in their ancient history of resisting the Romans in 153 BC. It comes to us from the Toro region, made from a grape known as Tinto de Toro - a member of the Tempranillo family. The average age of the vines for these grapes is fifty years. Some of them are over one hundred years old even. The flavor is rich and intense and elegant, all at the same time, I have it on good authority that this wine is perfect with prime rib. It seems that is what I’m being served for Christmas day dinner, and I’m looking forward to my glass (glasses) of Numanthia. At $54.99 I may have to share some glasses with others, but it is Christmas dinner. Pol Roger 2004 Brut This is the vintage version of the Pol Roger Brut we talked about last week. The 2004 vintage in the Champagne region was excellent, and this wine is living proof. To declare a vintage in this very northern climate is hard. Plus, if a producer uses most of that year’s grapes to make vintage wine, they can be short in their reserve wines. Not a problem for Pol, though, because they own so many of their

own vineyards. The 2004 Pol is sixty percent Pinot Noir and forty percent Chardonnay. Even if you’ve never had a vintage Champagne before, your mouth is going to know this is a great one. Like filet mignon is to beef. It’s my personal choice for New Year’s. And, if I’m too tired on New Year’s Eve, I can enjoy it the next morning. At $104.99, it’s worth every penny. Cheval de Los Andes $64.99 Yes, a magnificent Argentine red wine from the Uco Valley in Mendoza. This wine is a blend - Malbec, Cabernet Sauvignon, Cabernet Franc, Merlot and Petit Verdot. The five Bordeaux varieties, all hand picked and sorted at the winery. (The parent of this wine is the great Saint Emillion chateau, Cheval Blanc. Probably we can remember that because of its name?) The vines for these grapes all have especially deep roots, which means they work and develop intense, multi-layered flavors…blackberry jelly, menthol, herbs and bay leaf and cinnamon- just some of my favorite wine flavors. A great food wine or sipping wine. A superb gift wine. At $64.99. So, my best friend has her work cut out for her. (Best friends can be male or female. Your choice.) Seems there’s a lot of room under the tree, down around the base, plenty of ribbons and paper to wrap with, and cleaned glasses and flutes lined up ready to be used. FYI, my best friend and I keep in touch all year long. That way some of my gifts are bought ahead of time. And, truly, I can’t come up with this list without her. My best friend. So, we will share these special bottles. Which is what we’re supposed to do with good wines. Share them and the meals and the conversations. Happy sharing with your best friend. Enjoy.

How to Use Your Dog’s Name By Tracie Korol

Often when I am called to consult concerning a dog with no manners I conduct a little test, especially if the offending beast is 6-8 months old and has not previously been to puppy class. It usually goes like this: the front door opens and Dog dashes out, Owner yells “No!” and Dog pauses for a split second before it continues on its happy hello assault. Dog leaps on me, Owner drags Dog back down to the floor with a sharp “No!” As the initial interviews progresses and Dog is rooting in my call-bag or is trying to climb into my lap, the owner again barks a sharp “No!” When I ask if Dog knows his name Owner looks puzzled. That’s when we run an action-speaks-louder-that-words experiment. I instruct Owner to stand in the kitchen area, and I take Dog with me to the far side of the living room. I pet Dog, who is pleased with the attention, when Owner, standing in the kitchen shouts (as we had pre-arranged) “No!” Dog stands up and quite obediently trots off to his Best Friend. On the basis of what he has experienced during his short life, the sound that he has heard most frequently associated with consequences for him

It means watch, listen, or pay attention; I am communicating specifically to you. So many times we teach the dog to come to his name. For example, we call, “Scooby! Scooby! Scooby!” in a high pitch tone, making ourselves attractive and potentially interesting so he scampers to our side. We may even give him a treat. So what does it mean to our dog? Hey, that’s a command – “come to me.” Then, one day he does something naughty and we bark “Scooby!” in a gruff and serious tone. “HUH?” he thinks. Then, we come home one day--“Hey,

Scooby!” we greet him casually, he comes to our side and we walk away from him to check phone messages. “Hey, I came over,” he thinks “and now I am not even rewarded with a smile.” What gives? Now “Scooby!” means confusion; he has no idea what his own name means. A name means simply, “I am talking to you.” It’s a simple way of getting his attention. Say his name and then wait a second before issuing the command. So it becomes “Scooby …(he looks to you)...… sit.” Too often I’ll hear, “Sitscooby,” “Downscooby,” or “Herescooby”. Poor Scooby only hears the emphasis on his name, as it is the last word. I can see it in his face -- “What?!” To teach what the name means to a young dog, say his name—I use my Smurf

voice--and then make a little noise between my lips and when he looks up expectantly I’ll use whatever command and show him what is required. Repeat and reinforce. Works like a charm. But here’s the caveat: when your dog does something wrong, often the first word that comes to mind is his name. Following almost every discovery of the kitchen garbage all over the floor the first word out of my mouth was “BEAGLE!!” It was almost a reflex. My bad. In fits of pique we tend to use their names harshly and without thinking or simply scream “Noooo!”; we’re only human, after all. But what does that action mean to your dog? What does it mean when we speak a name harshly to anyone we love? Or shreik a negative in their direction? It doesn’t go over very well. It’s a general inter-species point of confusion. When used harshly a name means punishment, it means you are in trouble and who wants to come back just to get yelled at? As with peopleto-people interaction, associating a name with a good action, a clear command and a nice experience reinforces the message that we are friends talking to each other and the next request will be rewarded. It’s the same with your Best Friend.

Military families and elves By Lee Scott

I got to be an elf this year. Through the donations of many in my Dataw community, we hosted a Holiday luncheon for the children of parents who are deployed out of the Marine Corps Air Station in Beaufort. This was the fourteenth year. Jack and Vickie Cummings have been the driving force behind this event. As a new volunteer, I was not sure what to expect but decided to dress for the part. I wore my Reindeer ears, my Santa Claus earrings and my Grinch Christmas socks with my Christmas outfit. I got to greet mothers and children and help throughout the function. The large dining room was decorated with Christmas trees and lights and on one long wall the hot buffet was arranged and on another wall were toys. Hundreds of donated toys from the people in our community. And of course, Santa Claus was seated next to all the toys. It was incredible to see these mothers with young children dressed up in their Christmas clothes. Red velvet dresses for the girls, nice shirts for the boys and

some ties too! What an honor to be able to give back to these women and children who are also serving our country as their father’s serve. But what amazed me the most was how well behaved the children were to their mothers and to all of us elves. They stood in line quietly to get their food. They said please and thank you when we asked them what they wanted to drink. When Santa announced that it was time to pick out a toy from the large collection, they were orderly and friendly. As I was helping kids pick out toys, one after another would come up to me and say “Thank you for my gift”. After they picked out a toy, they had the opportunity to have their picture taken with Santa. Kids were laughing and smiling throughout the entire event. Everyone just enjoyed themselves. The remaining toys were donated to the Marine Corps Air Station for other events throughout the season including Toys for Tots.
