The crop of cherry tomatoes we have freshly grated Parmesan (for serving) growing at the Kveno house is bountiful this year. I have talked to other gardeners who have had the same luck with their tomatoes this growing season. I needed to get creative in finding ways to serve this delicious fruit/vegetable (let’s not get into that debate) that utilize the tomato’s fresh flavor. Here’s four recipes that focus on the tasty tomato! Cook pasta in a larger pot of boiling salted water, stirring occasionally, until al dente; drain and transfer to a large bowl.
