Top Grilling Tips
5 tips that will elevate anyone’s grilling skills!

Don’t Always Go for the Grade.
USDA Prime Beef is great if available and your budget allows, but if not, your best bet is to select a steak based on the color and intramuscular marbling (the white flecks throughout the muscle). Beef should be a nice rose-colored red when is out of the package, and more marbling = more fat = more flavor.

Prep like a Pro.
Allow steak to come to room temperature by removing from the refrigerator 30-60 minutes before you intend to cook it. This sitting time allows the muscle fibers in the meat to relax, which enhances tenderness. After removing from packaging, pat steak dry before seasoning.

Make Your Steak the Star.
When you have great quality, you don’t need to overdo the preparation. Brush your steak with olive oil, and generously salt with Pink Himalayan Salt (our favorite), but kosher or sea salt works well too. Do not use iodized table salt! Give steak a sprinkle of salt again after it is cooked, adding some coarsely ground black pepper as well.

Indirect Heat.
Top-tip to achieve the perfect medium-rare steak: to lock in the juices and create a nice crust, start by searing both sides of the steak for about 1-2 mins. (depending on thickness) at a super-hot high-temperature, then transfer the steak to a section of the grill that does not have the flame directly under it. Let the steak cook to 120-130 degrees with minimal flipping. If you don’t have a meat thermometer, use the touch test: gently press the steak with your finger; it should still be soft to the touch, but it will give you slight bounce back when you press on it.
5.
Let it Rest.
Let the meat rest once it is removed from the heat. Place a loosely tented piece of aluminum foil over the steak, then wait about half the cooking time before cutting. This rest time allows the natural juices to redistribute throughout the meat, and the muscle fibers to relax as the temperature lowers. Your patience will pay off with a more tender and juicy steak.
