NOTES | Hand-harvested from Sidewood’s Mappinga Road, Oakbank vineyard. A composition of 60% Chardonnay and 40% Pinot Noir, gently pressed with free-run juice fermented in stainless steel tanks with full malolactic fermentation. Secondary ferment via ‘Méthode Traditionelle’ and an astonishing 54 months on lees before disgorgement. A late disgorged wine which showcases wonderful toasty brioche aromas enhanced by green fruits and zesty citrus. The palate has a harmonious balance of orange blossom, biscotti and green apple that complement the slaty, driving minerality.
