Located in Lake Nona Town Center just south of SR 417 on Lake Nona Boulevard, Park Pizza & Brewing Company is a 5,055-square-foot community-focused gathering place featuring scratch-made pizza from wood-burning ovens, an onsite brewery and indoor-outdoor seating appropriate for families, friends and coworkers to gather and enjoy handtossed pizzas and craft beers.

From crayons to krylon, Leon Tes One Bedore has been creating art on walls for the majority of his life. Tes became a serious street artist in 1992, painting murals and graffiti art throughout the Tampa Bay area. In 1999, he expanded on his natural artistic abilities, with that of the computer age, to develop compelling graphic designs for a number of clients.

by Tavistock Restaurant Collection in Lake Nona Town Center, opened in Nov. 2018 to wide acclaim, serving woodfired pizza with chef-crafted toppings in an open, laid-back space with communal tables and an inviting, family-friendly atmosphere.

The glass-enclosed brewery is a prominent feature in the restaurant’s design, with double-stacked fermenters visible from inside and out. Other design elements include large urban-style murals, art influenced by local artists, interactive wallpaper, and large roll-up garage doors on both sides of the dining room for an open and airy feel during cooler months. Our dining area’s bold murals are hand-painted by Florida artist Tes One. Combining traditional and non-traditional techniques, Tes One creates contemporary works of art that

GRILLED SCOTTISH SCALLOPS WITH SAFFRON ANGEL HAIR AND BLACK TRUFFLE At new Dr. Phillips Mediterranean steakhouse, The H Cuisine, everything is made from scratch, including the saffron-hued angel hair pasta in this decadent summer dish. If you’re making this perfectly composed plate at home, use highquality fresh pasta from a specialty store instead of dried pasta. It’ll make all the difference. Makes 2 servings

INGREDIENTS:

4 large sea scallops, rinsed and dried (U8 is preferable) • 4 oz. unsalted butter • 1 tsp. fresh thyme and rosemary, chopped • 8 oz. fresh angel hair pasta • Edible flowers (for garnish, optional) • Shaved black truffle (for garnish, optional) • Salt and pepper, to taste

FIRST:

Bring a large pot of salted water to a boil over high heat. Add the angel hair and cook for 3 to 5 minutes, stirring occasionally. Drain, rinse with cold water, and toss with a drizzle of olive oil and reserve. Heat a nonstick pan over high heat and add the butter. Sprinkle both sides of the scallops with salt and pepper to taste. thyme and rosemary. Cook the scallops for 2-3 minutes on each side and remove to a plate, keep warm until ready to serve.

FOR THE SAUCE:

1 red onion, chopped • 4-5 black peppercorns • 1 bay leaf • ¼ cup white wine vinegar • ¾ Tbsp. white rum •Pinch of saffron • 8 oz. unsalted butter

Bring a small pot containing the ingredients for the sauce (except the butter) to a slight simmer. Allow to reduce until about 1 Tbsp. of the liquid remains. Discard the solid ingredients. Over low heat, stir in the butter, 1 Tbsp. at a time, until all the butter is incorporated and the sauce is smooth and creamy. Keep warm and stir occasionally to prevent the sauce from breaking.

TO SERVE:

Add the pasta and the sauce to a warm pan and toss to combine and coat each strand of pasta. Gently portion the pasta onto plates. Top with the scallops and drizzle with any additional sauce. Garnish with edible flowers and shaved black truffle (optional).

1. Tell our readers a bit about yourself. Where are you from? What brought you to the States? I am originally from England and first came to the USA in 1996 while I was a student at the University of York studying Electronic Engineering. I came over to coach soccer in Boston during summer vacation working for a camp company. For my first coaching assignment, I was lucky enough to be sent out to work at the Harvard University soccer camp for 2 weeks which was a real treat. From that point on, even though I returned after the summer to get my Masters in Avionics (I’m a closet geek) I knew that my full time career path was now going to be coaching soccer in America. 2. What was the inspiration for XL Soccer? Why Orlando? Me and my Business partner, Kris Lamb, worked together in Boston for the coaching company and we both shared the same passion for travel and soccer. So late in the office one night we got talking about how great it would be if we created a business that involved both of those passions. This led to us starting XL Travel which is a soccer travel company that takes college, club and school teams overseas on 10-14 day tours where they have the full experience of what it’s like to be a pro player. They train at top facilities, play against the international competition and go to live games while staying at great hotels. It was like an all-inclusive soccer vacation. This was September 2001, by the way, which was possibly the worst time ever to start a specialized International travel company. It was really hard but we pushed on and started by taking a U15 girls team from Boston, MA to England that first summer and now we have had teams from over 25 different countries traveling to 30+ countries in 5 different continents. While that was growing we accidentally got into the soccer facility business by buying an old indoor sports center in Raleigh, NC. We refurbished that, turned it around and at the time I was living in Orlando so the next natural expansion split was there. We found a completely run down, dilapidated building and somehow we just both had a great feeling about it. About 20 banks turned us down for financing over the following 12 months as it was 2009-10 and nobody was lending money for commercial buildings. Much like strutting the travel business back in 2001, this, as it turned out, was the worst time to start a business which involved trying to borrow money for commercial real estate. Luckily the 21st bank said yes and we got it done. I suppose that means we have a 100% track record now for picking the worst times to start businesses. 3. The Orlando location has indoor and outdoor fields. Can you talk about the different leagues available to participate in for adults? Co-ed?

We have a league for everyone! No matter what your age or ability we have a league for you. We have really competitive open leagues all the way through recreation COED and even a fun and frolics league which has no contact and doesn’t count scores which is really popular for people who have never tried soccer before or have had an injury and slowly want to come back into it. Along with all the other youth leagues we have, we are also really proud of our fully funded youth program for Autistic children which is funded by our fantastic partner RIPITT. 4. What about camps, clinics, and private instruction available at XL Soccer? We have a very popular camp program. It really helps being a fully air conditioned indoor soccer complex during the summer! Our youth leagues are also very popular where youth clubs from around Central Florida compete in our Summer and Winter leagues. Parents really like that they play at the same location each week in small sided 6v6 games which are terrific for development. 5. Where does your coaching staff come from? Qualifications? Our coaching staff comes from all over the world. USA, UK, Costa Rica and South America. 6. Let’s talk about the new facility in Lake Nona. Will it also have indoor and outdoor fields? Same type of clinics and leagues? To begin with we will just have indoor fields. We will have two 6v6 fields which are slightly larger than the fields in our existing Orlando location and also 2 futsal fields. We will have all the same programs and even some additional ones as we can utilize the futsal courts. 7. What is the projected opening date and location for the Nona complex? We are located behind Valencia College and beside Lowes, so we are in a great spot. We are looking to break ground by the end of August and will be open by June 1, 2020. Once we are 3 months into construction we will be sending out more detailed information on opening and how to register for information. 8. Again, why Nona or say Windermere or Lake Mary Area? There was something about Lake Nona that pulled us toward it. There was clearly something special going on and we went to check it out to see if it would be viable for a new XL Soccer World. Within 2 weeks of that visit my wife and I had gone into contract to buy a house as we just loved it. Although there wasn’t that much going on at the time you could tell that this place was not only going to grow, but that there was a big activeliving feel about it that would feed perfectly into our model of youth and adult play. We actually get a lot of customers who come to our existing facility from Lake Mary


but when we ran the analysis for Lake Nona and beyond there were very few as it was just that little bit too far so we decided to go for it. 9. Soccer is the biggest sport in the world. How have you seen the sport grow and change within the United States? Since coming over in 1996 I have seen enormous changes in the sport. Back then, the MLS was only a year old and there was still an uncertainty about whether the league would be taken seriously and survive (awful jerseys and Ginger mullets didn’t help), kids didn’t wear soccer jerseys to camp. As things picked up, we then had the explosion of the English Premier League through what started as Fox Sports World where you got one live game a week, to the Fox Soccer Channel which gave us much more and now NBC where you can basically watch any game you want. Through this period ESPN got the Champions League which, again, gave us so much more access to great live soccer and big superstars. Kids and adults alike started wearing the jerseys, following the teams and embracing not just the European soccer, but the MLS. Now in the past few years we are finally seeing the next generation of children whose parents grew up not just playing soccer, but having it as their number one sport. Volunteer parent coaches are now former D1 college soccer players so the rate of progression is exponential. MLS made a really smart move encouraging clubs to build the stadiums downtown rather than in the suburbs which brought in that core 20-35 year old superfans. Now we are seeing the new generation of young players knowing professional team and players from around the world but more importantly following MLS. Five years ago if you asked a young player who he wanted to play for it would be Barcelona, Man Utd or Real Madrid. Today, my son who is 8 says he wants to play for Orlando City. That is massive progression. The league is here to stay. 10. The US Women’s National Team just won The World Cup. What impact have those players had on the kids you instruct? What a tournament that was! Great fun to watch, great seeing the USA win and also great to see so many close games as we got closer to the final. USA was the best team, but had to battle the whole way to the final. The kids at our camp all wanted to watch the games when they were on and got behind team USA enormously. Following the World Cup we got so many inquiries from parents of girls that were able to start a girls-only program this season and it’s thriving. 11. I understand Orlando City and The Pride practice at times at XL in Orlando? This must be great for the kids who get to see the players up close. When Orlando City first started and Adrian was the coach they used to come in 3 times a week and train in the off season as the small-sided fields we so good for that. The kids used to absolutely love it and the players and coaches were very humble to spend time with them. We have also had the Pride do their pre-season testing which was also a great experience from them. We’ve also been lucky enough to have the Jamaican Women’s National team, New York FC, Abby Womback, Roberto Carlos, Tottenham Hotspur and Alan Smith all come to train or run clinics. 13. How many facilities do you have? We currently have nine facilities up the East coast running from Florida to Maine. Lake Nona will be facility number ten and we have more in the pipeline ready to come online. CENTRAL FLORIDA MONTHLY

LAKE NONA EVOLVES AS THE EPICENTER FOR HEALTHCARE INNOVATION GUIDEWELL INNOVATION CENTER ATTRACTS TOP HEALTH TECH TALENT TO MEDICAL CITY By: Karen LeBlanc In the heart of Lake Nona Medical City, there is a place where imaginations ignite, ideas collide, people collaborate, and innovations happen. GuideWell Innovation Center (GWIC), a 92,000-square-foot facility houses a brain trust of life science and healthcare innovators looking to develop gamechanging companies and products. In addition to the use of high tech offices and lab space, companies headquartered at GWIC have opportunities to collaborate with health care, research, and educational institutions within Medical City. They can connect with thought leaders through speaker panels, forums, and cohorts and grow their company through entrepreneurial mentorships, including acceleration programs. AZZLY, Inc., a healthcare technology company, is one of the latest participants in The GuideWell Scale-Up Accelerator program offered in conjunction with Springboard Enterprises. AZZLY’s core product is a software called AZZLY Rize that streamlines clinical documentation and billing processes with a single technology solution. It reduces the need to use multiple software products or manual processes. “What we deliver is one dynamic system that eliminates fragmented workflow processes, saving time and money. 10

We have an opioid epidemic in most communities and need smart technology to help more individuals receive treatment,” says Coletta Dorado, Founder, and CEO of AZZLY, Inc. Dorado lost a loved one to addiction and made it her mission to improve outcomes. “My experience helped narrow our focus on addiction treatment and behavioral health. It was time to give back.” Dorado developed AZZLY Rize based on her previous work in the financial securities industry, where she implemented a paperless system for workflow and processes. “During the dot.com boom of the 1990s, we were buried in paper processes, inefficiencies with too much room for human error. I led the initiative to move from a paper-based operation to adopt new technology in order to grow our business.” After her employer sold the company in 2001, Dorado faced early retirement. She decided to apply her knowledge and tweak her paperless technology for the fragmented healthcare sector and founded AZZLY, Inc., in 2009. “Substance abuse and behavioral healthcare provide unique services in an outpatient setting that cannot be served adequately by a general electronic health record software and billing software. Our technology eliminates inefficiency, redundancy, human error, and lost data by documenting all


services provided a patient in one system from intake through the claims submission.” As a participant in the eight-week technology accelerator program, AZZLY receives advice on marketing, sales, strategic partnership, investment, and networking opportunities with other female company founders within the Southeast. “GuideWell is making it possible for companies focused on healthcare innovation to interact with others with the same vision to be a part of the solution. We are using it as our growth launch pad and taking advantage of all healthcare-related opportunities that come our way,” says Dorado, who moved AZZLY’s headquarters to GWIC in 2018, after considering options in downtown Orlando. Today, the company has a staff of 32 employees with two office locations in Orlando, and one in Vero Beach. The software’s rapid-fire implementation and ease of use have propelled AZZLY’s expansion into 19 states and counting. “We plan to continue to grow our business development, customer service, and programming team here at GWIC. We utilize interns from the University of Central Florida and Rollins College for support staff and to identify graduating rising stars. We are looking for local talent in all departments that have a passion for creating the best product and deliver the best service.” The architecture of GWIC creates an eco-system of synergy

among its resident start-ups and early-stage companies. The building’s high-tech office and lab space coalesce as a “journey” through innovation beginning at the lobby where a living wall greets visitors. A gallery displaying the latest healthcare innovation from GWIC tenants leads into the first floor anchored by a 250 seat theater-in-the-round and GuideWell Innovation CoRE™ (Collaborative Resource Ecosystem), a next-generation workspace. Strategic features such as the hydration bar and café and inviting seating arrangments to stimulate conversations among entrepreneurs and thought leaders in an informal setting. A living lab facilitates research and product testings while the Garage provides a flexible work environment with 3D printing tools and digital prototyping software. to extend that level of care and compassion to our patients as well. We know that not everyone loves coming to the dentist and we are committed to helping our patients have a positive, stress free, and engaging experience.

5. Going to the dentist certainly isn’t something most people look forward to. How do you make the experience the best and least stressful for your patients? And young Children? We try to ease stress by taking the time to thoroughly answer patients’ questions and do our best to fulfill their expectations. Additionally, we stay up to date with the latest technology, which shows our patients that we are invested in their health and will be providing them with the best dental care. For young children, we try to make the experience as fun and comfortable as possible by keeping a positive and encouraging attitude, and by talking to them about what to expect during their visit in a way that they can understand.

1. Tell our readers a bit about yourself and your family? My parents, my three sisters and I moved to the US when I was 4 years old so that my father could start his career as a medical physicist at Yale University in Connecticut where my parents still reside. I spent most of my youth in New York City where I attended High School at Iona Preparatory School, then later completed my undergrad at Manhattan College in the Bronx. Following undergrad, I attended and graduated from Dental school at Indiana University School of Dentistry. I am the proud father of two boys ages 8 and 12.

2. When did you establish Dentistry at Lake Nona? Why in Lake Nona? Dentistry at Lake Nona opened in April of 2008. I chose Lake Nona because it was a new and developing area that I felt I could grow with.

3. In your 15 years practicing dentistry, what has surprised you the most? The changes that have come with the growth of technology in Dentistry has surprised me the most as it has allowed dentistry to become more conservative with priority being placed on longevity (of dental restorations). Additionally, over time things have become more integrated between medicine and dentistry creating more of a team approach. I have also really enjoyed watching my patient’s families grow from children to adults.

4. Your staff are so kind and caring. The office has that family-feel to it. Can you explain how you’ve created such a warm environment? We care for each other as if we are extended family and try 14

6. Can you talk more about the services you provide and the latest techniques? Besides general services, we offer more advanced solutions and treatments like Smile Design, veneers, same day ceramic crowns, and 3D implant technology. With Smile Design procedures we take a before photo of the patient’s smile and then digitally design a preview of the outcome which helps show patients what results to expect. This also helps us to design the final veneers prior to any actual work performed in the mouth. With 3D implantology at our office, our in-house CT scanner generates a 3-dimensional view of the patients jaw, which is combined with 3D intraoral impressions and then uploaded into our implant planning software to allow us to perform virtual surgery prior to the actual procedure. In addition, our office uses custom surgical guides during implant placement surgery, these technologies allow for faster healing and more predictable outcomes.

7. What do you like to do for fun? I enjoy the sport of bicycling, spending quality time with my family, traveling (both for family vacations and for cycling trips) and anything automotive.

8. Favorite place to vacation and why? My favorite places to travel include France, Italy, Spain, Colorado, and California. Mountain top views are the best.

9. Where do you see yourself and the practice moving forward? I hope to continue to learn and improve the art of dentistry so I can continue to provide the best care to my patients. One day, I’d like to add another location to better serve the community.
