From the Publishers You may have noticed by our cover that it’s The Newsy Neighbour’s 3rd Birthday! Yippee! Yahoo! It’s time for a celebration! Three whole years of bringing recipes, articles, columns, interesting reading and jokes into your home each and every month. It would be impossible to print and distribute the magazine if not for all of the advertisers who truly believe in the power of print distribution and target marketing through the magazine. Our gratitude truly cannot be overly expressed to all the business owners who have supported us over these past three years. Actually, April is our 42nd issue so it’s about 3 ½ years but the first 6 issues were quite experimental and not very large and we did not cover the huge distribution area we do now. We have grown into the magazine we are today and expect to see additional growth and exciting changes in the years to come. Cheers and thanks to all our loyal readers and advertisers for your continued support! We actually had a lot of fun trying to get the photo for the cover – when you are dealing with three people, a baby and five dogs, the chances of getting a shot where all are looking with eyes open and kind of (at least) in the direction of the camera is almost an impossibility. Quite a number of photo’s had to be taken before the miracle happened. With the help and patience of our amazing photographer, Di Cozart, we finally got the job done. We are a rescue group for abandoned and stray cats run by volunteers in Strathmore and surrounding areas. We do not have a facility that is open to the public. We do have cats on display that are available for adoption at the Petsmart store in Calgary on Sunridge Way. We eat and drink all day long, but have you ever thought of what happens once your food leaves your mouth and heads down your esophagus? The human body is such a miracle that we all take for granted, unless something goes wrong and then we think, “why didn’t I take better care of myself?!� The digestive system is a complex series of organs and glands that processes food. In order to use the food we eat, our body has to break the food down into smaller molecules that it can process. It also has to excrete waste. Most of the digestive organs (like the stomach and intestines) are tube-like and contain the food as it makes its way through the body. The digestive system is essentially a long, twisting tube that runs from the mouth to the anus, plus a few other organs (like the liver and pancreas) that produce or store digestive chemicals. The start of the process - the mouth: The digestive process begins in the mouth. Food is partly broken down by the process of chewing and by the chemical action of salivary enzymes (these enzymes are produced by the salivary glands and break down starches into smaller molecules). On the way to the stomach - the esophagus: After being chewed and swallowed, the food enters the esophagus. It is a long tube that runs from the mouth to the stomach. It uses rhythmic, wave-like muscle movements (called peristalsis) to force food from the throat into the stomach. This muscle movement gives us the ability to eat or drink even when we’re upside-down! Yeah, they say it works but have you ever tried to eat even laying down, let alone upside down?! In the stomach: The stomach is a large, sack-like organ that churns the food and bathes it in a very strong acid (gastric acid). Food in the stomach that is partly digested and mixed with stomach acids is called chyme. In the small intestine: After being in the stomach, food enters the duodenum, the first part of the small intestine. It then enters the jejunum and then the ileum (the final part of the small intestine). In the small intestine, bile (produced in the liver and stored in the gall bladder), pancreatic enzymes, and other digestive enzymes produced by the inner wall of the small intestine help in the breakdown of food. In the large intestine: After passing through the small intestine, food passes into the large intestine. In the large intestine, some of the water and electrolytes (chemicals, like sodium) are removed from the food. Many microbes (bacteria like Bacteroides, Lactobacillus acidophilus, Escherichia, and Klebsiella) in the large intestine help in the digestion process. The first part of the large intestine is called the cecum (the appendix is connected to the cecum). Food then travels upward in the ascending colon. The food travels across the abdomen in the transverse colon, goes back down the other side of the body in the descending colon, and then through the sigmoid colon. The end of the process: Solid waste is then stored in the rectum until it is excreted via the anus. That is the miracle of your digestive system and all of this work is going on all the time inside your body! It is always working for you – so since it works so hard for you maybe you should think about working hard to return the favour. Life is a miracle – take advantage of this miracle every single day! Ascending Colon - the part of the large intestine that run upwards; it is located after the cecum. Bile - a digestive chemical that is produced in the liver, stored in the gall bladder, and secreted into the small intestine. Mecum - the first part of the large intestine; the appendix is connected to the cecum. Chime - food in the stomach that is partly digested and mixed with stomach acids. Chyme goes on to the small intestine for further digestion. Descending colon - the part of the large intestine that run downwards after the transverse colon and before the sigmoid colon. Digestive system - (also called the gastrointestinal tract or GI tract) the system of the body that processes food and gets rid of waste. Duodenum - the first part of the small intestine; it is C-shaped and runs from the stomach to the jejunum. Epiglottis - the flap at the back of the tongue that keeps chewed food from going down the windpipe to the lungs. When you swallow, the epiglottis automatically closes. When you breathe, the epiglottis opens so that air can go in and out of the windpipe. Esophagus - the long tube between the mouth and the stomach. It uses rhythmic muscle movements (called peristalsis) to force food from the throat into the stomach. Gall bladder - a small, sac-like organ located by the duodenum. It stores and releases bile (a digestive chemical which is produced in the liver) into the small intestine. Gastrointestinal tract - (also called the GI tract or digestive system) the system of the body that processes food and gets rid of waste. Ileum - the last part of the small intestine before the large intestine begins. Intestines - the part of the alimentary canal located between the stomach and the anus. Jejunum - the long, coiled mid-section of the small intestine; it is between the duodenum and the ileum. Liver - a large organ located above and in front of the stomach. It filters toxins from the blood, and makes bile (which breaks down fats) and some blood proteins. Mouth - the first part of the digestive system, where food enters the body. Chewing and salivary enzymes in the mouth are the beginning of the digestive process (breaking down the food). Pancreas - an enzyme-producing gland located below the stomach and above the intestines. Enzymes from the pancreas help in the digestion of carbohydrates, fats and proteins in the small intestine. Peristalsis - rhythmic muscle movements that force food in the esophagus from the throat into the stomach. Peristalsis is involUntary - you cannot control it. It is also what allows you to eat and drink while upside-down. Rectum - the lower part of the large intestine, where feces are stored before they are excreted. Salivary glands - glands located in the mouth that produce saliva. Saliva contains enzymes that break down carbohydrates (starch) into smaller molecules. Sigmoid colon - the part of the large intestine between the descending colon and the rectum. Stomach - a sack-like, muscular organ that is attached to the esophagus. Both chemical and mechanical digestion takes place in the stomach. When food enters the stomach, it is churned in a bath of acids and enzymes. Easter is a religious holiday for Christians to celebrate the end of death and the rebirth of life – the day Jesus Christ was resurrected after spending three days dead in His tomb. Whether you are Christian or not, Easter is a day of celebration, and in our house it is the day of our big Easter Supper. Grandma and Grandpa come to visit and we have a big ham, scalloped potatoes, broccoli with cheese sauce and hopefully one of grandma’s most superb desserts, like pineapple upside-down cake or my favourite, bachelor cake. We used to hide chocolate Easter eggs all over the house and the kids would have an Easter egg hunt in the morning, but those are days gone by and only memories of those joyous giggles and screams remain in my mind. Easter Sunday is April 24th, which makes it perfect for a family day. Sunday should always be a family day – the last day of the week before the dreaded Monday arrives, and we must all go back to the grind. Saturday would be our day of colouring eggs and what fun we would have – I would boil at least 2-dozen eggs, buy all the dyes and all the new fangled crayons, stickers and such and the event would begin. Did you know if you put your egg into all the colours, it turns a really awful putrid brown/green color? I prefer the bright pinks, oranges and yellows, but once the kids get started, they want to experiment just to see what happens. Let them use their imaginations and you might be surprised with what they come up with! Kids love to colour and create, and expand their imaginations. Grab a box of crayons and start decorating your Easter eggs!
IMAGINATION EASTER EGGS • Crayons • Hard Boiled Eggs • Food coloring or packaged Easter Egg Colors To boil perfect eggs, add a Tbsp. of vinegar to your water – it will help to stop your eggs from cracking. Place into a shallow pan, cover with water and boil gently for four minutes. Turn off heat and cover pan with a tight fitting lid and let sit for 15 minutes. Place pan in sink, carefully drain out hot water and let cold water run over them for several minutes. Turn off water and add several ice cubes and let sit for about 5 minutes more. Be sure that boiled eggs are cool and dry. I spread newspaper all over the table before we start and place a double folded kitchen towel underneath child's hands so if the egg slips out it will have a soft cushion to land on. Use crayons to draw designs on the egg. Have kids hold the egg gently so they do not crack the shell. Mix your food colouring solutions and once the designs are done, place your eggs into the colour solutions. A coffee mug works good for this. Let the eggs sit for a few minutes then remove and let dry. The dye makes the crayon look brighter, especially if you use neon food colouring!
OIL AND FOOD COLORING MARBLED EGGS Easter Eggs with a twist - adding oil for marble looking eggs. This egg decorating idea requires no special materials except a child's imagination! • Hard Boiled Eggs • Food coloring • Vinegar • Cooking Oil • Mugs for dye mixture • Paper towels • Spoons In each mug, combine one tablespoon of each of the following: oil, vinegar, and your choice of food colouring. Add enough water to make the liquid deep enough to cover an egg. Swirl the liquid with a spoon, and quickly lower and raise an egg into it. Pat dry with a paper towel, and repeat with a second colour. Swirl into a third colour, if desired. Some white areas can be left on the egg. Gently pat dry the completed egg, leaving a bit of the oil to give the egg a varnished look.

Desensitizing Your Dog with the Doorbell
When someone rings your doorbell, does your dog change from the loving laidback companion into some crazy out of control stranger? This is such a common problem. Many people feel that if they can control their dog from losing their mind when people arrive than they would have the perfect dog. But how do you change this behaviour? The first thing to understand is the behaviour itself and how it got out of hand. Dogs learn at a very early age that when the doorbell rings, someone is at the doorstep. Typically this situation brings them into a state of excitement, alertness, and sometimes agitation that leads to the excessive or crazy barking. Yet because this is a conditioned response – a learned behaviour, the pattern being that when the doorbell rings someone is there waiting, it can be reversed with some work and effort. To break this response, and desensitize your dog you will need to teach him that when the doorbell rings he never knows when someone is there and that the correct response is not to go into crazy barking but to come to you, perform an easy ‘job’ and receive a reward. You are probably thinking what do I mean by job? So far, to them, their job has been to bark and ‘alert’ you that someone is there; friend or foe, they don’t care, to them it’s still an intrusion, so they go berserk until this intrusion leaves or comes in and stays for awhile. Because of this we now need to re-teach him what the proper behaviour should be. To make this easier, let’s just start with having them learn to regain their composure and come to you when the bell rings. This training is extremely successful when you have multiple people involved but not to worry, even if you live on your own you can re-train your pooch. You will just need to go out to your hardware store and buy an additional doorbell that you can ring while you are in the house. What You Will Need: •A doorbell or someone to knock on the door •Clicker •Your dog on a leash •Really, really good treats like boiled chicken breast cut up into pea sized pieces •Lots of patience! Don’t forget it may take some time to break this habit as he’s been doing it for awhile now! Getting Started First you are going to need to teach your dog about focus and eye contact. If this is new to you, please find a reputable trainer in your area to help you with this easy but powerful step as getting your dog’s focus will help both of you be more successful in a lot less time. Position yourself so that you or your dog are not in direct eyesight of the door. If you are close to the door or to a window, it could make getting your dog’s focus more difficult in the beginning. This is also why you should keep your dog on a leash in the beginning to limit his ability to race to the door while barking. Next, have your partner ring the doorbell. As soon as the doorbell rings ask for eye contact and focus. If your dog is barking hysterically try to break his attention on barking by making a loud noise such as “AHHH!” followed by “Watch Me”, as soon as your dog is quiet for a millisecond click and reward or if you are not clicker training, then mark the behaviour with a “Yes”, then praise and treat as quickly as you can. Make sure your helper waits until the barking has subsided for a few moments before they ring the doorbell again. Continue this pattern, waiting until your dog is quiet to click and/or praise and treat! If you are able to find success quickly you may be able to ask for other behaviours such as “sit” or “down” with the eye contact, but if you are finding this difficult then just be patient and reward the your dog the moment he is quiet. Work on short training sessions and always end on a positive note where your dog has done well! Once his demeanour to the doorbell has changed, you can start asking for other more positive behaviours. But don’t rush and don’t forget to keep up this new fun “game”, as this is a great opportunity for bonding and for you to teach your dog some much needed manners and self control when people do arrive! To Brush or not to Brush
How times have changed! Through all my years growing up, we always had dogs and cats. We would take them in once a year for their shots and that was that. Well, now when I take my dogs in for their yearly shots, the examination runs just short of taking blood. Oh my, your dogs have plaque, aren’t you brushing their teeth? That’s ok, we can fix that right up with just a simple cleaning, but it’s a “little” expensive. Excuse me?! Are you kidding me?! When did this all happen – did the dogs years ago not get plaque or are the vets these days more aware?! Now, ask anyone - I love my dogs dearly and would do anything for them, and I guess that means brushing their teeth. I can hardly wait; it’s going to be a gong show! But I also love money and I don’t want to shell out my paycheque to have their teeth cleaned by a professional! The best way to save that large bill is to start preventative measures - NOW! I have been told you must be patient, because your dog will not want to cooperate – no kidding! – and you should get them used to the feeling by starting with a damp washcloth or gauze. And make sure when you come to the stage of actually brushing their teeth to use a baby toothbrush. There are some things we should all be doing to help stop this condition from happening to our dogs, and the first one is to not feed them table scraps, because they contribute to plaque and tartar buildup and bad breath. That’s bad news for my dogs – I think there needs to be more research on this topic. My dogs love rice, cooked carrots and, of course, beef - and the last time I looked, all those things were in dog food. This is starting to sound like a conspiracy. Now, if your dog has really, really bad breath, the consensuses is your dog may have gingivitis and this is caused because we have neglected the dog’s mouth for several years. I feel a guilt trip coming on. Now, all three of my sisters live on farms and acreages and they all have dogs. As a matter of fact, my sister in B.C. is a dog breeder and has raised many puppies and adult dogs for years. She has never ever had any of her dogs teeth cleaned, and trust me - she has never ever brushed her dogs teeth. But for those of us who are unable to handle the guilt of not doing the right thing, there are a few things we can be doing to help our dogs. For instance, encourage your dog to chew. Rawhide chews, dog biscuits, safe bones and chew toys - and give your dogs the big dog biscuits, even little dogs. All these things will helps to scrape their teeth. Pet ownership provides many health benefits, including increased happiness and decreased depression. However, you should be aware of the following diseases that could be transmitted to your family from your pet if the proper care is not given! These are scary, and very serious so please take proper care of your pets, so you can all live a happy healthy life.
1.Nematodes. These are ‘roundworms’ that look like thin spaghetti noodles. They are passed from mom to pup/kitten through the placenta and milk. Infected animals then pass eggs into the human environment, such as sand boxes and flowerbeds. In warm weather the eggs larvate and then are infectious. People are infected by ingestion of or skin contact with the eggs (ie. Child chewing on rocks at the playground). The worms penetrate the lining of the small intestine or skin and migrate to the liver, lungs, and eyes. Symptoms of infection include abdominal pain, anorexia, nausea, vomiting, fever, cough, enlarged liver, inflammation in the heart, blindness and neurological signs. To prevent infection, your pet and child should be regularly dewormed. 2.Cestodes. These are ‘tapeworms’. These are the little white pieces of ‘rice’ that you may see hanging from your pet’s bum. Cats and dogs become infected by ingesting infected fleas, rodents and birds. Eggs are passed into the environment and people become infected through the ingestion of eggs from the environment. Symptoms of human infection include abdominal pain, diarrhea and itching in the anus or proglottids passed per rectum. The worms can also be distributed to the liver and other tissues to form tumor-like masses. The liver, lung, and brain are most commonly infected. A combination of surgical excision and deworming medication is used to treat the syndrome in people but the disease often has a poor prognosis. Regular deworming of your pet is recommended to prevent infection in humans. 3.Giardiasis. Giardia is a parasite with worldwide distribution that causes severe watery diarrhea in dogs, cats and people. The organism is immediately infectious when passed as cysts in the stool. The most common source is contaminated water, such as rivers and streams in the mountains. The name for the human syndrome is ‘beaver fever’. Vaccines are currently unavailable for this parasite and keeping your pet from drinking from ‘flowing’ water is the most effective prevention. 4.Rabies. Rabies is a virus that is transmitted to pets through bite wounds from infected wild animals such as raccoons, bats, coyotes or skunks. The clinical signs of rabies can include the following: a furious or dumb temperament, hind leg lameness, increased vocalization with a change in pitch of voice, lethargy, anorexia, trembling, vomiting, and aggressiveness. Rabies can be transmitted to humans by a scratch or bite from an infected animal. Authorities should be contacted immediately if an unvaccinated pet has bitten or scratched a person or another animal. Two cases of rabies were diagnosed in southern Alberta last year. These zoonotic diseases can be prevented with routine veterinary care. If you have any questions or concerns, please contact your veterinarian! The Healing Power of Animals It was to be the worst day of my life and the beginning of a journey that I could not even have begun to imagine. There we were sitting talking to each other planning our day. My husband was going to cut the hay and I was going to start my week off with a little well needed R& R. With no warning, he grabbed his head and fell into my arms. No heartbeat! The love of my life gone! What was to happen in the days, weeks, months and years to come would be unimaginable at this point. All I knew is my world became meaningless, and overwhelming. It was a struggle to just get through each day. As I attempted to make sense of my loss, my anxiety, loneliness and fear of the future took me down the dark tunnel of depression. It was my pets (horses, dogs, cats) that kept me grounded to my life. Even if I did not feel well, I had to get up to feed and care for them. My animals gave me a purpose and kept me anchored in the present, distracting me from my negative, anxious thoughts. As time went on the comfort and companionship I found in my animals, assisted me in reaching out and beginning the process of climbing out of my tunnel of darkness. My own story is just one of many that attest to the healing power of animals. At Inner Equine Journeys Growth & Development Center, I’m privileged to continue to see how our 4 legged friends change lives. Although we work primarily with horses, our dogs
and cats at the Center play a hung role in welcoming and supporting our clients. Bailey, our resident fur ball, is the Center greeter. She greets each new person with her beautiful smile and warm heart. Cali Cat is the comforter with the ability to nuzzle, connect and comfort clients having difficulty dealing with their emotions. According to the Centers for Disease Control & Prevention, the company of a pet or companion animal can help individuals who are living with mental illness. They offer unlimited affection, non judgmental companionship and unconditional love. It has been proven that when in the company of pets or companion animals our own stress level is reduced and our spirits are lifted. Pets are good for anxious, depressed people partly because they keep us focused on the present and distract us from the anxiety and overwhelming negative thoughts. Evidence now indicates that pet owners may be better off than non- pet owners when it comes to their general health. Studies show that pet owners have lower blood pressures and heart rates than non- pet owners. It has been shown that our cortisol levels are significantly lower and our immune system functions increase after interacting with our pets, no matter how large or small. This suggests that companion animals may reduce our body’s physiological response to stress. Loneliness and lack of social supports are large factors in mental health. For many the companionship that animals can provide fills a very lonely heart. Often, pets serve as a substitute for family members and friends. Most animal owners talk about the unconditional love their pets show them. How they can come home after being away 5 minutes or 5 days and their pets are happy to see them, with displays of affection such as wagging their tails and meeting them at the door. Along with the unconditional love, animals have the ability to be non- judgmental and non- critical. They are happy to see us regardless of what we wear, how we look or how we are feeling. As we continue to look for ways to heal, it is obvious that our 4 legged or feathered friends are playing a very important role. In this issue of the Newsy Neighbour, we are celebrating pets and their importance in our lives. I AM A CELERY
YahSU (that means hello in Greek) my name is Christos and I AM A celery. My ancestors were as wild as can be and they came from the Mediterranean regions of North Africa, Southern Europe and the Himalayas. We were a lot shorter then and had way more leaves. We were used as medicine as far back as the 9th century B.C and the Ancient Greeks used our leaves as laurels worn by the winners of the Nemean Games, which started in 573 B.C. because we were considered a holy plant but that’s another story. The Romans also loved us as a seasoning. During ancient times, physicians used our seeds to treat colds, flu, water retention, poor digestion, arthritis and liver and spleen ailments. But it was not until the Middle Ages that people actually started using us for real food – then all of a sudden, in the 17th century, the Italians domesticated us, changing us of our wild ways! We became taller, greener and stronger, but still remained very proud – even though we were no longer wild and free. Now, we’re not all the same you know, some of my cousins are yellow and their last name is Celeriac and they have become very trendy, and my green cousins are called Pascal. Another one of my cousins, Smallage, is grown in Eastern Europe and Asia for its seeds. In some areas, our healthy seeds are used to treat high blood pressure and we are an excellent source of vitamin C, which helps support the immune system. Vitamin C-rich foods like celery help reduce cold symptoms or severity of cold symptoms; over 20 scientific studies have concluded this. Vitamin C also prevents the free radical damage that triggers the inflammatory cascade, and is therefore also associated with reduced severity of inflammatory conditions, such as asthma, osteoarthritis, and rheumatoid arthritis. The Chinese medical practitioners and western science researchers have identified that we help reduce high blood pressure because we contain an active compound called phthalides, which can help relax the muscles around arteries and allow those vessels to dilate; with more space inside the arteries the blood can flow at a lower pressure. Phthalides also reduces stress hormones. We are so good for you! I bet you never would have guessed it! Unbelievably, we are also rich in both potassium and sodium – both important for regulating your fluid balance, which means ridding your body of excess fluid. Just one more thing and then I will stop bragging: we also contain a compound called coumarin, which helps prevent free radicals from damaging your cells, thus decreasing the mutations that increase the potential for cells to become cancerous. Ok, I forgot – just one more important item to tell you; we also contain a compound called acetylenics, which has been shown to stop the growth of tumour cells. Well then, I’m thinking you should eat me more often! I am great for juicing, just add a couple of my beautiful stalks to your carrot juice in the morning and I will make you feel good all day long. 2 heads of celery 1 small onion 1 quart of milk 2 Tbsp. butter 1 Tbsp. flour 1 tsp. salt ½ tsp. pepper
1 head of celery 1 package cream cheese Salt, pepper, mustard, cayenne – ¼ tsp. of each or to taste. 1 Tbsp. butter 2 Tbsp. Fresh parsley
2 Cups cooked celery cut into inch long pieces – to cook boil in salted water for 15-20 minutes or until tender.
Clean the celery and cut into 3” Remove the tender heart of the lengths. Mix the butter, cheese celery and use only the outside and seasonings together and fill stalks for the soup. Cut into pieces the celery, sprinkle with the fresh and put on to boil with the best parsley to garnish. Wonderful for of the leaves and the onion cut in a cocktail party and healthy too! quarters, in enough water to cover. Boil slowly until soft and strain, add the mild, butter and flour, boil very slowly ten minutes CREAMED CELERY AND PEAS then add salt and pepper. Enjoy this wonderful creamy and 4 Cups green peas 2 Cups celery, washed and cut healthy soup. into small pieces Salt and pepper 1Cup white sauce Boil peas and celery in salted water for about 20 minutes drain and add white sauce.
2 Tbsp. Butter 2 Tbsp. flour 1 Cup milk ½ tsp. onion salt Salt and pepper to taste ½ Cup grated cheese of your choice Bread Crumbs Make a sauce out of the butter, flour, milk and seasonings – see white sauce above. Pour over cooked celery in a greased baking dish and sprinkle with cheese and breadcrumbs – bake until golden brown in a 350-degree oven – approximately 15 minutes. This is a simple but tasty dish.
BRAISED CELERY
WHITE SAUCE
1 Head celery 1 Medium Onion 1 Tbsp. chopped parsley 2 slices bacon 10 fl. Oz. Vegetable stock salt and pepper to taste Heat butter and flour in sauce- 2 Tbsp. butter pan until melted add the milk little by little and use more milk if Clean celery and cut into one required. Season with salt and inch pieces and place in a pepper. Doesn’t get much easier casserole dish. Finely chop the bacon and onion and sprinkle than that! over celery along with chopped parsley then pour on the stock and dot with butter. Cover and bake in a 350-degree oven for 30-45 minutes. 1 Cup of milk 3 Tbsp. butter ½ tsp. salt 2 Tbsp. flour ¼ tsp. pepper

I love writing Luscious Joys every month because I get to share amazing family recipes from our readers. This month, all the recipes here were sent in by Evelyn Richards. Thank you, Evelyn for taking the time to HANDWRITE all the recipes you sent to us! We didn’t have room to include them all, but they will be in the recipe book – for sure!
SALTED NUT BARS 2-½ Cups flour ½ Cup corn syrup 1 ½ Cups brown sugar 2 Tbsp. butter 1 tsp. salt 1 Tbsp. water 1 Cup soft margarine or butter 1 Cup butterscotch chips 2 Cups mixed nuts Combine flour, sugar, and salt and cut in butter/ margarine. Press into a 10x15 cookie sheet and Bake at 350 degrees for 10-12 minutes. Sprinkle nuts over crust and combine the other ingredients in a saucepan. Boil 2 minutes – no longer, stirring constantly. Pour over the nuts and return to the oven for another 10-12 minutes until golden. Cool before cutting – do not over bake. This sounds like one of those recipes I will not be able to stop eating.

SUNFLOWER COOKIES ¾ Cup butter or margarine 1 ¾ Cup flour 1 Cup white sugar 1 tsp. baking soda 1 Cup lightly packed brown sugar ½ tsp. baking powder 2 Eggs ½ tsp. salt 1 tsp. vanilla 2 Cups quick oatmeal 1 Cup flaked coconut 1 Cup salted sunflower kernels Mix everything together and drop by tsp. onto greased baking sheets. SEVEN MINUTE FROSTING 1 Large egg white 1 tsp. vanilla 1 Cup lightly packed brown sugar ½ tsp. baking powder ¼ Cup cold water On top of a double broiler, combine egg white, sugar and water mix well with a spoon. Place over boiling water and cook, beating constantly with beater until frosting stands in peaks (app. 7 minutes). Remove from heat and beat in vanilla, then baking powder. Frost cake immediately. MY FAVOURITE - FABULOUS - FANTASTIC AND FUN STUFF I love science and all of the new fabulous, fantastic and interesting discoveries and events happening everyday around us. Not all the events are happy ones, though, like the terrible earthquake and tsunami that happened on March 11th in Japan. Man, I’m glad to be living in the safest place in the world; we just have to put up with long, cold winters. I’ll take that over an earthquake any day! It seems like all of a sudden we are having a rash of natural disasters and increasing earthquakes around the world. Now, I know Japan is on the western edge of the Pacific Ring of Fire, which hosts 452 volcanoes and is home to constant earthquake and volcanic activity, so they are always at risk. You see, the surface of our planet is comprised of a series of large tectonic plates, which are approximately 80 kilometres deep. They hover on top of Earth’s hot, malleable centre. Japan is situated right where rigid plates in the Earth’s crust collide, along the rim of the Pacific Ocean. The Pacific Plate, the plate beneath the Pacific Ocean, is moving almost due west and being pushed down into the Earth’s interior, along a trench off Japan’s east coast. On average, the Pacific Plate is moving at 3.5 inches (8.9 centimeters) per year, but this process is not continuous. Movement may stop as the plates stick together for a period and energy will build up, so when the movement does finally occur, it is much more dramatic and that’s when these giant earthquakes happen. Japan’s 8.9 magnitude earthquake is the largest Japanese quake on record, and the fifthlargest quake worldwide since 1900, according to the U.S. Geological Survey (USGS). It is only April 2011, and this is the third earthquake along The Ring of Fire. The Ring of Fire forms a 40,000 km (25,000 mi) horseshoe shape, www.thenewsyneighbor.com
which starts in New Zealand, runs along the eastern edge of Asia, north across the Aleutian Islands of Alaska, and south along the coast of North and South America. The first of 2011 was an earthquake of 6.3 magnitude, which hit the Christchurch area, South Island, New Zealand on February 22nd, followed by an aftershock magnitude of 5.6 fifteen minutes later. It was the second-deadliest natural disaster recorded in New Zealand (after the 1931 Hawke’s Bay earthquake). The second was the Yunnan, China earthquake, a 5.4 magnitude earthquake that occurred on March 10th with its epicenter in Yingjiang County near the Burmese border. And now March 11th, with the biggest earthquake to hit Japan in 140 years. If you look at the Ring of Fire map, you will certainly notice all three of these locations form a line starting at the beginning of the Ring of Fire. It’s kind of eerie! Now, The Ring of Fire is not just about earthquakes, it is also the most volcanically active region on Earth. Three-fourths of Earth’s active and dormant volcanoes, including Mount St. Helens, lie along this arc that is made up of a series of oceanic trenches and volcanic arcs and contains a number of abutting plates. Earthquake activity in New Zealand and Indonesia, for example, is the result of friction between the Australian plate and the Pacific plate; the notorious San Andreas Fault, which runs a 1,300-kilometre course through California, is the boundary between the Pacific plate and the North American plate. The most volatile Canadian stretch of the Ring of Fire is the Queen Charlotte Fault, just north of the Queen Charlotte Islands off the B.C. coast. It has produced a number of significant earthquakes since 1929, and has the distinction of generating Canada’s largest recorded earthquake – an 8.1 magnitude that struck in 1949. This Ring of Fire sounds pretty scary to me – the power of the Earth on which we live is beyond comprehension. Life each day to its fullest – you never know what tomorrow will bring! Expectations and Exploration

Expectations are imposed upon us from all sides. Expectations as to what our success looks like, expectations of what kinds of cars and clothing we should be wearing and also expectations of the kinds of things we will have to do to get there. While expectations may serve us beneficially in some regards, generally speaking the expectations of others can hinder us from finding our best self and what it is we really want. I call that quest, exploration. Exploration is our ability to live our life from a place of authenticity. To explore the things that we want, seek and wish to become. For most in today’s society they rarely venture far down the path of exploration. Expectation demands to much from us to allow for that kind of freedom. As a result, most of us feel an empty desire to seeking for more to fill the void left from lack of self fulfillment. More cars, more clothes, bigger houses, more toys and the sometimes even artificial quick fix relationships to replace the ones that we won’t work at,because expectations are that things should come easy. These false expectation come first from outward sources. People around us tell us how we should measure achievement and success. They paint for us what failure looks like and how people will feel about us if we don’t measure up. We see these lessons in everything from our advertising to characters in fictional stories. These lessons are then translated into the lives of the people we interact with daily. Our world becomes so saturated with these expectations that we begin to ingest them into our belief and value systems. Many of these false views of success in the end are totally unobtainable. Like the perfectly airbrushed vision of beauty, or the lifestyles of the rich and famous or the argument free life of the perfect family on your weekly sitcom. These expectations create in us the feeling that we are imperfect without these things and we spend our lives chasing this unobtainable destination. What’s worse than these exterior expectations placed upon ourselves are the ones we place on ourselves. We begin to expect realities that don’t exist. And because they are unobtainable we suffer a multitude of challenges when they cannot be reached. Aside from decreased self esteem, challenged confidence, wasted efforts, challenged relationships, workaholism and resources that are thrown away there is one tragedy that superimposes then all. The exploration of self. Upon close examination of all top achievers, today and through out history, we find a significant belief and trust in self. Indeed, even a commitment to self. How can this be found? The first step to believing and trusting self is to find self. This is not a quick process. This is the process of exploration. Almost like with an onion it involves peeling back layers, one at a time, to find the character and individual revealed inside. When you can find the true nature of who you are, what you want, what you are excited or passionate about magical things begin to happen. In fact, through this process you will the true path to creating lasting success. Finding this path is what we teach in our “Finding your Brilliance” seminars. That is really what success is all about. Finding out what your “Brilliance zone” is and tapping it to it, unleash your strongest and powerful self. The outside world would have you identify a comfort zone and then encourage you to step out of it. Do everything that’s new, the things that you are afraid of and find ways to push yourself to new limits. Top achievers don’t work that way. While they do look for ways to grow and stretch. Most of the time their growth is relatively painless as they do it in areas of their brilliance. They seek for growth in the areas that excite them and that will add to their areas of expertise. The areas that they have chosen for themselves through exploration, not expectation. And as they grow they are never really leaving their comfort zone, the are growing within their “Brilliance Zone.” When we grow in this area of our lives we will find greater excitement, more motivation, recognize more opportunity and even our ‘groove.’ Groove of course, is not a scientific term. But how can it be described. It is almost zen like. When we are functioning at our highest level of self and it becomes effort less. These are the moments when inspiration can take our work to a productivity level that passes the ordinary. That is where success and top achievers are born. My challenge to you is to realize that much of what you are doing today may be the result of expectations. Conditioning placed upon you by the society outside of you. You have internalized and are working to fulfill these mostly false expectations about what is needed to make you successful and happy. It is time to pause and take a closer look. A time to explore inside who you really are and what you really want and most importantly why. As you journey to the inside of your being you will begin to find the keys that will unlock your possibilities and create greater successes. It is only with your Live Event! Light Construction & Garden Equipment Trenching It all started back in 1970 when Don Larden moved to Strathmore from Colonsay, Sask. on a transfer as meat manager for the Federated Co-op. He stayed working for the Co-op for just over 3 years, while working general contracting on the side to help support his young, growing family. Then he decided to move back into the general contracting business full time. After a few years working in the general contracting business, because of the locale of Strathmore, and because equipment and tool rentals were not very common back then (even in Calgary), he was purchasing quite a few tools for a variety of different jobs that he only needed on occasion. When he got into building grainery bins, he found himself needing hammer drills to drill into the concrete to anchor the bins down, and he was taken aback on the price to purchase a hammer drill. So, being the entrepreneurial intellect he is, he thought to himself; “Why don’t I rent these tools out to other people when I am not in need of them, to help defer the cost of the purchase?” That was in the early part of 1975. He learned in a hurry, from not being able to recall who has which tool, that it was imperative to have it written onto paper with the contact information of this person (keeping in mind that Strathmore was only about 1500 population!). Luckily, Don knew just about everyone in the community. In February of 1976, he registered Lar-Don Holdings Ltd. with the government. It took him a number of name remittances before the government accepted the name we carry today. The tool and equipment rentals were definitely not lucrative enough to maintain having a store on its own, so they (he and his partner) decided to buy the bottle depot from Tom Grey to help with the cost of building maintenance. They only kept the bottle depot for a short period of time before selling it (just the bottle depot business). “It was a dirty and gross job!” Don claims. They kept the “Mister Soft Drink” line to help with supplementing the building maintenance, which was still a type of bottle depot, but only for the Mister Soft Drink bottles alone. It was a great addition to the business as they sold tons of product to everyone within and surrounding the community. Unfortunately, in 1997, after dealing with this great product for nearly 20 years, Mister Soft Drink sold out to Franks Soda Company, who then registered their bottles with the bottle depot. Therefore, there would no longer be any difference between buying this product from Coke or Pepsi. In 1977, Don decided to purchase their first trencher. It was a larger size walk-behind model. It was rented out fairly frequently throughout the summer months, but towards the end of the summer a customer had it and decided he wanted to run an additional trench along a side hill. He ended up rolling the unit, writing it off and wouldn’t pay for the damages because he claimed he wasn’t instructed clearly enough that it wasn’t designed for that type of job. In the beginning of 1978, Don purchased their first ride-on trencher, because he saw a cliché of things heading underground from the prior year with how steady the walk-behind unit was. But from that point on, you could only rent a trencher with an operator. BAM! He found another great addition to the company, which is his passion part of the business to this day! In April of 1998, I (Jason) moved back to Strathmore from my explorations of other areas and careers, to work with dad in the business. We were still doing a lot of general contracting... if you ask me, too much re-roofing, but as dad always told me, “it isn’t the clean glamorous jobs that keep us afloat, it is the variety of jobs we do well that makes us.”

1998 was a very busy year, with us building the new location that we currently inhabit, along with operating the rental shop and doing construction and trenching. Thanksgiving weekend was the time it all came to the end of the craziness as we moved into our current location (15 Spruce Lane, Strathmore). In 2000, I moved to working mainly the shop while dad and a helper worked the construction that dad was slowly fazing out (at 56 years of age). He had decided that it was starting to be harder on his body than he wanted, and the rental shop was finally doing enough business that the extra income wasn’t a necessity. Although he would not give up on trenching, as it is still his passion to be out operating it. I picked up the dealership for our excellent ECHO POWER PRODUCTS, along with selling other brands of new and used equipment, and servicing customers’ equipment. The last 11 years have gone so quickly that it has been a joy to sit back, and reminisce about all the great times and trials that have hit our doorstep. All the great conversations that have arisen with our excellent customer base of the people in Strathmore, Carseland, Cheadle, Langdon, Indus, Standard, Rockyford, Hussar, Beiseker, Irricana, Chestemere, Gleichen, the farmers and so on. We even have people coming to us from Three Hills and Trochu because they like how we always find the time to just sit and “shoot the ship” with them. That is by far my own favourite part of the business – taking the time with our customers, trying to get to know them, the jobs they are working on, and if I can suggest an easier way for them to get the job done – especially if it can be at a cheaper price for them. Our customers are the most unique people I have ever had the opportunity to meet. It almost seems like if you live in our demographic area, it is a requirement to have a friendly, personable manner about you. This year, as we are celebrating our 35th anniversary, I ask all of you to please keep an eye out in the local publications, because we are going to be having celebrations throughout the year. Not exactly sure of when right now, but they will be advertised and I hope all of you great people who have supported our business and have helped us grow so that we can serve you better with a wider range of equipment and tools to help you get your jobs done will come and help us celebrate! Who knows, there may even be even better deals to be had, than we already give on our retail merchandise!

MAD LIBS Mad Libs are games in which players supply the words for stories without knowing how the words will be used. The words are then inserted in the story, and the completed story is read aloud. The results can be hysterically funny! You can play with as little as 2 people. Only one person sees a copy of the story to begin with. That person will ask for random words to place into the Mad Libs. To pick words properly, you will need a refresher in your English lesson. Adjective - A word that describes or clarifies a noun. Adjectives describe nouns by giving some information about an object’s size, shape, age, colour, origin or material. Example – It’s a BIG table. Noun - A word used to name a person, animal, place or thing. Example – Did you see that BIRD? Verb - A word that expresses action or a state of being. Example - I LOVE cheese!! HAVE FUN!!!

Calgary played host to the Miss Teen AlbertaWorld pageant February 20, with 15 year old Shelbi Ramsay taking the crown, and the title of Miss Teen Wheatland County-World, representing Strathmore and Wheatland County. Ramsay was chosen as one of the 18 title holders out of nearly 50 contestant to participate in the Miss Teen Canada-World competition in Toronto in July -the preliminary for Miss Teen World. In July 2011, Shelbi will attend the Miss Teen Canada - World pageant in Toronto, representing Strathmore and Wheatland County. The Official charity of Miss Teen Canada-World is Free the Children, dedicated to empowering youth to help other children internationally through education. Fundraising is also necessary for the competition, and Ramsay is hopeful to get sponsorship and put herself in the community. It’s that time again! Spring is here and so is the fashion! Snow is melting, trees and flowers are budding, the sun is out, and you can find beautiful bursting colors in shoes, dresses, jewelry, but of course my personal favorite…in makeup! When I think of Spring, I think of freshness, regeneration, warmth, and brightness. Naturally, as a makeup artist, I have this vision of flirty, vibrant eyes; decked out in lilacs, lime greens, turquoises, and tangerines. Now I know most women out there are afraid of trying such colors. Do not be afraid of it! Especially with what this season’s colors look like, how can you resist? And if you think you can’t pull it off, you’re wrong! I’ll show you exactly how, following some simple steps and tips! The first thing you should know when it comes to wearing bright eye shadow, is to be sure to find a color that is a completely different one than your eyes. For example, if you have blue eyes, opt for greens, purples, and oranges. Brown eyes actually have the advantage of wearing every
bright color. First, prime your eyelids with a good eye primer so that the shadow adheres and doesn’t crease. Using a small-medium eye shadow brush, apply color using a dabbing or patting motion. This way you can build up the color. Apply only on the eyelid, as when you blink, it just gives a nice flash of color. If you are more daring, extend it just above the eye crease, but be sure to blend the edges to create a soft, not harsh look. If the thought of the bright shadow scares you, try brightly colored pencil eyeliner instead (GOSH brand makes excellent ones). Just apply a thin line to your upper lash line, and/or lower lash line, starting from the outer corner of your eye working inward. Lastly, finish with a few coats of mascara (loving Cover Girl’s Lash Blast Fusion right now), and you’re done! All set to pair those flirty eyes up with a pretty dress and some sassy heels! The Elevator
A fifteen year old Amish boy and his father were in a mall. They were amazed by almost everything they saw; but especially by two shiny, silver walls that could move apart and then slide back together again. The boy asked, ‘What is this, Father?’ The father (never having seen an elevator) responded, ‘Son, I have never seen anything like this in my life. I don’t know what it is.’ While the boy and his father were watching with amazement, a large old lady in a wheel chair moved up to the moving walls and pressed a button. The walls opened, and the lady rolled between them into a small room. The walls closed and the boy and his father watched the small numbers above the walls light up sequentially. They continued to watch until it reached the last number... and then the numbers began to light in the reverse order. Finally, the walls opened up again and a gorgeous 24-year-old blonde woman stepped out. The father, not taking his eyes off the young woman, said quietly to his son.. Go get your Mother.

Monthly Book Review by Derek Donais Join me each month as I review a great read. My passions are fantasy and science-fiction, but I do read other genres. Really, I do. I also lean toward local authors, when possible, as I think we have a wealth of artistic talent here in Alberta. I currently live in Strathmore with my wife, Connie, and my two children, Kieran and Maia-Lynn. I’ve been a teacher for most of the time we’ve lived in the province, which is over a decade now. My debut novel, MetalMagic: Talisman, was released in September, 2010, and I’m diligently working on the sequel—that is, when I’m not reading books or writing for my column. Stupid to the Last Drop: How Alberta is Bringing Envrionmental Armageddon to Canada (and Doesn’t seem to Care) William Marsden Vintage Canada, 2008 ISBN: 9780676979145
I suppose, seeing as the debate surrounding the issue is so polarized, especially here in Alberta, I should begin this review with a disclaimer. Something like, “The views and opinions expressed in this book are not necessarily those of the reviewer, The Newsy Neighbour or its advertising partners.” Having said that, it’s pretty clear to anyone perusing the title of this month’s book just what perspective the author holds on the subject. Stupid to the Last Drop, by William Marsden, is a rather scathing condemnation of the state of Alberta’s oil and gas driven economy and the political climate that, “… for the last 18 years has sold out the province’s environment and its economic future to the energy industry … .” These are certainly highly-charged and serious allegations. Marsden commits a good deal of effort and research to the goal of justifying these claims. Though there are some overlaps and skipping from one topic or era to another occasionally happens, the book is divided into three sections. In Part I, Marsden begins with an historical account of the oil industry in Canada and early ideas about harvesting resources from the geological formation now known as the oil sands. Surprisingly, one of the earliest schemes devised was to use underground nuclear blasts to, “… produce temperatures and pressures several million times greater than we normally experience on earth, vapourizing, melting and crushing rock to create [a] cavity and release the precious oil. An oil recovery well would then be drilled and pumps would bring the crude to the surface. Just like a conventional well.” This idea never became a reality, as time and circumstances allowed for the development of less drastic measures to extract crude from Alberta’s oil sands. Marsden dedicates Part II of the book to the business of the oil industry in Alberta and elsewhere, chronicling the rise and fall of many domestic oil and gas companies as global economic forces, realizing that reserves of fossil fuels were not limitless, began to influence the hunt for new oil-producing areas and improved extraction processes. The United States, in particular, became increasingly concerned with the future of its economic well being, Marsden notes, and a focus on Canada—more specifically, on the Alberta oil sands—resulted. The fascinating story of Jeff Tonken, who became a multi-million-dollar player in the Alberta oil scene after 1987, serves as a prime example of the boom and bust nature of not only the industry during this period, but of the fate of the businessmen who staked their fortunes and reputations on it. Part III examines the environmental impact that the pursuit of oil in has had on Alberta throughout this intensifying drive to produce more energy. Marsden points to the poisoning of the Athabasca River, the contamination of rural Alberta aquifers, the in-filling of wetlands and the invasion of the pine beetle as examples of what the reckless pursuit of fossil-fuel energy has brought. In turn, Marsden claims that the Alberta government has cut funding to the environment department, meaning that there is no means to reliably “monitor climate change, or even enforce environmental laws.” Marsden’s book leaves the reader with a bleak vision of the future, based on his suggestion that today’s apathy and self-investment will only lead to a continuation of this downward spiral into “Environmental Armageddon.” A balanced approach to the issue, this story is not, so if you’re looking for a book that puts both positive and negative arguments forth and asks the reader to decide which is best, I would advise you to keep searching the shelf. However, if you agree with the anti-oil sands movement and you’ve jumped on board the climate change train, then you’ll love this book, although in that case I’d bet you’ve read it by now. www.thenewsyneighbor.com

Free Down Payment Option Assists Canadians In Purchasing First Homes… With home prices continuing to increase year after year, one might think that it would only become more difficult to qualify for mortgage financing. Thankfully, some of the lenders and insurers have been working together to come up with unique products in order to offer Canadians more flexibility in qualifying, and help increase their borrowing power. For those who don’t have access to a traditional down payment to purchase a home, the “free down payment mortgage” continues to assist Canadians in qualifying for mortgage financing and getting them(in many cases) into their first homes. For many individuals, saving the standard 5% down payment is very difficult, especially if you are paying rent each month. This option allows you to purchase a home without any down payment whatsoever. Clients with favourable credit history are also eligible to take advantage of flexible down payment sources to help come up with 5% down in order to perhaps get a lower interest rate or save money by reducing the default insurance premium. Such sources may include borrowing the down payment from your line of credit or perhaps getting a bank loan for the sole purpose of forming your down payment. Either way, you must be able to meet the financial institution’s debt servicing ratios in order to qualify for the mortgage. Increasing amortizations on mortgages from the standard 25 year period to a maximum of 30 years also assists clients in qualifying. By extending your amortization, your mortgage payments are lowered and this may help increase your purchasing/borrowing power. While not every bank or lender may offer the same mortgage options, working with a mortgage broker who has access to all of these products will qualify you based on your individual situation. I am writing this article on March 8th, and I just saw a whole flock of little red-tailed finches in the tree in the backyard! It’s been -20 degrees for over two weeks now and what a joy to see these sweet little birds – must be a sure sign spring is coming. April, what a glorious month! When I think of April, I think and hum in my head those famous lyrics of the most amazing Al Jolson: “Though April showers may come your way, they bring the flowers that bloom in May. The first time I saw this I was very young and would just cry because I did not understand what my mom was doing! My father would videotape her on those old video cameras they had back then, and watching those old black and white movies now is a scream! Oh, how times have changed.
