Need to cancel plans with a family member or friend? Here are some GREAT excuses! 1. My brother-in-law’s friend’s father’s grandmother’s sister’s aunt’s turtle died, and yes, it was a tragic death. I simply cannot go into the details! 2. My fortune teller advised against it. 3. I promised to help Ashley clean the toilet at the same time. She doesn’t like doing it alone; she gets nervous that she will fall in! Some kind of toilet phobia( a weird name I can’t remember for some reason...). 4. Unfortunately, there is a disturbance in the force, and it is not with me right now. I never go anywhere without the force’ Skywalker strongly advises against it. 5. Harper is coming over tonight for some tea and crumpets. At least that is what his text stated. And like they say, never ditch the Prime Minister; he likes his tea time! 6. Another school year is just around the corner. For some, it can be a very stressful time in their life: first day of school, a new school, finding your friends and just starting a new grade.

Summer vacation will soon be over, and that’s no laughing matter. But take these fun, silly groaners back to school to share with your friends; they might put a smile on someone’s face! Q. Why did the clock in the cafeteria always run slowly? A. Every lunch it went back four seconds! Q. Why doesn’t the sun go to college? A. Because it has a million degrees! Q. Why did the jellybean go to school? A. To become a smartie! Q. What do you call a boy with a dictionary in his pocket? A. Smartie Pants! Q. Why did 6 hate 7? A. Because 7 8 9. Q. Stress can cause many disorders for both parents and students such as not sleeping, headaches, and eating too much or not enough. Remember that stress is a choice, not a condition. We all have a choice to stay calm or to get upset about the situations that we are in. When we realize that the idea of starting school is just that, we can handle it better. Think of it as if you had done it before and that it will be better than it was before. It is a great idea to start getting organized sooner than later; this goes for both parent and student. Talking to a parent or friend can also help get ideas on getting organized. Prioritizing, maintaining your focus and delegating your time are also great ways to reduce stress before and during the school year. As we all know, stress sometimes plays a part in everyone’s life. Here are just some quick tips to help with stress: 1) Take a deep breath in and out slowly and take time out from the situation; this might be a good time to take a walk, as it might clear your mind and thoughts. 2) Try a relaxation exercise of tightening and releasing all the large muscle groups, starting from your toes to your head, breathing while doing this exercise.

½ cup (125 mL) shredded mozzarella Preheat oven to 400°F (200°C). Line 12 muffin cups with paper liners. In a large bowl, whisk together flour, sugar, baking powder, salt, basil and baking soda until combined. Stir in cheddar cubes. In a medium bowl, whisk together yogurt, eggs and butter until smooth. Stir into flour mixture just until well combined and no dry spots remain; stir in sweet pepper (batter will be very thick). Spoon batter into muffin cups, dividing evenly. Spoon 1 tsp (5 mL) pizza sauce on top of each muffin; sprinkle each with shredded mozzarella. Bake about 20 minutes, until golden and a toothpick inserted in centre of one of middle muffins comes out clean. Let muffins cool in pan at least 5 minutes before removing, and then let cool completely on a wire rack. (Freeze muffins in an airtight container for up to 1 month; defrost at room temperature.)

It’s hard to be creative and keep those lunch bags interesting and healthy day after day. Sandwiches, juice box, granola bar and pudding snacks can get really boring after a while. Well, help has arrived! I know the prospect of another year of packing hundreds of lunch bags can make you crazy? Make these the night before for supper and kill two birds with one stone! Bring on the new school year!
You can vary these wholesome, bite-size snacks by adding your child’s favourite veggies to the mix. 1/4 cup (50 mL) frozen corn 3 eggs 1/3 cup (75 mL) grated Parmesan cheese 1/4 cup (50 mL) milk 1/4 cup (50 mL) diced cooked ham 1 tbsp (15 mL) very thinly sliced green onion (optional) Paprika Spread corn out on paper towels to thaw and dry completely. Preheat oven to 350°F (180°C). Spray a 12-cup mini muffin pan with non-stick cooking spray or brush well with oil. In a 2-cup (500-mL) glass measure, whisk together eggs, cheese and milk. Pour egg mixture into muffin cups, dividing evenly. Sprinkle corn and ham into each cup, dividing evenly; sprinkle each with green onion and very lightly with paprika. Bake about 13 minutes until set. Remove from oven and let stand 5 minutes. Run a knife around edges of muffin cups; using a small spoon, carefully scoop out each cupcake. Let cool completely on a wire rack. Refrigerate cupcakes in an airtight container, or wrap in plastic wrap, for up to 2 days. Pack in a lunch box with a chilled or frozen juice box to keep them cold.

Cycles, cycles, everywhere… To delicately broach an issue… about delicates. No, this is not a section about lingerie shopping, though that might be more fun. It’s about all those cycles and selections on our new appliances, especially laundry. Do we really need them, and contrary to marketing’s ‘special’ view of the world – do we really use them? The first question is the best place to start – do we really need them? Laundry appliances are facing a tough time. There are stricter energy use guidelines, increased number of fabric types and colours, and clothing is much more expensive. It’s not unusual to have three hundred or more dollars worth of clothes in one laundry load and a consumer who expects it all to be done perfectly with the push of a button. The problem is that with all the different types of fabrics and clothing – from sleeping bags to hosiery, one cycle selection can’t do it all. Manufacturers have to look at load size, water temperatures, soak and agitation times and speeds, spin speeds, just to mention some aspects. Using the cycles? It seems many consumers simply press ‘normal’, then start, and away it goes. With high efficiency machines this covers a lot of variables but can leave big gaps in performance; such as increased wear and fraying, failure to effectively clean and poor rinsing. The truth is, most high efficiency machines work better on larger loads. In some cases we may simply not have a large load, www.thenewsyneighbour.com

Part of the reason for cycle selections, [most washers have a delicate selection - some even go further with hand wash and fabric type (silk) as selections], is to allow for a cycle that tells the appliance what is required to safely clean this possibly smaller, more sensitive fabric load. Hint: hosiery (not your sports socks), use a mesh laundry bag – some manufacturers have even designed one for this purpose. At the other end of the scale are tougher clothes and stains. There are cycles and settings for these as well – even sani-cycles where the washer will heat the water to hotter than tank temperature. Many have a bulky item selection which is great for jackets, blankets, comforters, etc. High efficiency washers can safely cover many fabrics in one load but selecting a cycle that best matches the clothing or type of load will increase the lifespan and look of your clothes as well as being more efficient. We don’t have to spend hours sorting clothes, but just a little attention to load types and cycle selection can yield big results. We are sharp enough (when we think about it) to realize some features are more hype than value, but there are some that will benefit us by using them. Talk to your local independent appliance retailer – they can assist in the ins & outs of what cycles and selections actually do for you and your clothes. They brought home a bunny. A BUNNY. Do you understand what that means? It means that all the time that was once allocated to paying attention to ME, which was then taken away and went to HER when she came along… well, the VERY LITTLE left-over attention became DIVIDED between me and the BUNNY. A BUNNY!!!!!! I hate the bunny. Mommy let him out of his cage and he ran around smelling all of my stuff and chewing on MY toys. I followed it and kept a very good eye on it, but it kept trying to hide from me behind and under the couch and my beautifulbut-big body couldn’t fit back there so I often lost sight of him. I hated him so much. Mommy kept cleaning out his cage (haha sucker, stuck in a cage) and giving him carrots and lettuce. Hello!! Mommy!! My food dish is empty and I have no water! Nope, nothing. Mommy doesn’t pay any attention to me. She’s too worried about the BUNNY. The bunny ate through the phone cord. Serves them right for bringing him in to MY house. And what’s with his tail? Where is it? It’s even smaller than mine! I don’t like it – not one bit. And he doesn’t walk normal – he hops. I hate it. It’s not natural. And then SHE comes along and instead of wanting to bug ME, she’s all about bugging the bunny. HELLO!!! WHAT AM I, CHOPPED LIVER?? …err… wait…. I hate her so I’m GLAD she isn’t paying attention to me … right .... HEY! I’M RIGHT HERE! Darn bunny needs to leave. And then… just like a fairy godmother heard my prayer, he was gone. One day, mommy put him in the back of her car (in the stinky gross bunny-smelling cage), and drove off. She was gone for a long time and when she came back – no bunny. GLORIOUS! Why would she keep a bunny anyways? I heard mommy tell daddy that someone found him wandering around in their backyard and she had to save him. She should have just left him – this house is no house for a bunny AND a Black Ninja. I should have karate-chopped him. I’ll remember for next time. IF there’s a next time. Things are back to normal. For now. I will keep an eye out for any other strangers trying to sneak their way into my home. I will not sit idly by and allow it to happen again. Q. My dog panics every time there is a thunderstorm. What can I do to help him? This is a very common question during the summer months. Some dogs will become extremely stressed, even before the storm appears, due to changes in barometric pressure and humidity levels. Signs of anxiety may include panting, pacing, finding places to hide, attention seeking, whining, or even defecating and urinating inappropriately. Before jumping to a sedative, we like to try other options first. For starters, always monitor your own reactions during a thunderstorm, any human anxiety or fear can be sensed by your pets and passed onto them. Avoid paying special attention to your dog, and instead be positive and upbeat while going about your normal routine. Playing a game with your pet to keep him or her preoccupied may be beneficial.

It contains canine appeasing pheromone analogue, or a “happy dog” pheromone that can help to reduce stress. Creating a space for your pet to go during the storm that is comfortable and quiet, infused with the Adaptil pheromone will often be enough to take away the anxiety he or she is experiencing. If none of these products are adequate, visit your veterinarian for further options regarding antianxiety medications, or possibly a visit to an animal behaviourist. A nice option is a relatively new product on the market called a “Thundershirt” and has shown great promise in these anxious dogs (and cats too!). Remembering Billy Powers!
July was a sad month as the Southern Alberta sports community said goodbye to Hall of Fame sportscaster and personality Bill Powers and his wife Donna Lee. Not only was Bill a friend, he was a colleague and a mentor. I still remember when I broke into the business in 1981 with KIK FM. XL radio was the king and Billy Powers owned the town. Every young sportscaster wanted to be Bill Powers and most employers wanted their sportscasters to sound like Powers. Billy had a unique ability to make people laugh and feel special. When you were in a conversation with Powers, he made sure you were the most important person in the room. I will never forget one of my first encounters with the legend as I was a young, snotnosed sportscaster. At a press conference together we had a few “pops.” Then we went to a local establishment for a few more, despite having to do a sportscast later in the afternoon. Billy was on the air first and I was listening in back at my station. The guy was smooth – smooth as silk and I am thinking to myself, this is going to be a piece of cake. I go on the air a few minutes later and kick it all over the place. I should have been fired on the spot! I learned a great lesson from the master: if you’re going to play with the big boys, don’t pretend you’re a big boy. “A life is not important except in the impact is has on other lives,” said former baseball great Jackie Robinson. It is safe to say Bill made a huge impact on others as the tributes are still rolling in.

Calgary Flames president Ken King is on record as saying the Flames will also pay tribute to Bill this season. It’s not just Billy getting the love and recognition. The Jewish Community Federation will honour Donna Lee Powers for her commitment at the Jewish Community Center. Donna Lee’s motto was “Live, Laugh and Love.” The Federation has created the Live, Love and Laugh scholarship and staff award. Besides his passion for family, beer and our professional sports teams, Billy loved to play ball, squash and golf. This has sparked a plan by a few communityminded citizens to approach the city to name an arena or a community ball park after him. This would only be fitting for one of Calgary’s great ambassadors.
Billy, you will be missed but not forgotten!
“Billy was to the Stampeders what my beloved Eddie was to the Flames,” said Nomi Whalen, who kicked off the memorial service at a packed Red and White Club on Thursday, July 18. Whalen had married Bill and Donna Lee 24 years earlier. The Calgary Stampeders honoured Powers with a moment of silent at the Montreal game and retired his seat in the press box. His seat reserved forever with his beer, a Molson Canadian. The Calgary Stampeder alumni played a video tribute and had a moment of silence at their 24th annual charity golf tournament. The Alumni have also created a microphone logo with the initials B.P. and will use this logo on their apparel.

21 Must-See Manly Movies So to start off, let’s define what a “man movie” is or should be. Man movies are not just good movies; they’re not just funny, violent, popular or filled with scantly clad women. Man movies are about men doing manly things. What are manly things? Opinions may vary, but here’s a few things we consider manly: Saving villages, fighting crime, protecting, fighting in wars, battling evil, standing up for something, defending one’s country, defying all odds, beating the crap out of bad guys, taking justice into one’s own hands (vigilantes), and performing incredible feats of strength and courage. So with that in mind, let’s get on to our top 21 Manly Movies List. Here they are: 21) Our manly movies list begins with Hoosiers, a timeless classic that should be part of every man movie collection. If you like sports, underdogs, last-second shots and rousing locker room speeches, you’ll love this one. 20) Rambo – First Blood. Lone war veteran John Rambo takes on a hick police force and brings down a whole town with his knife and a bazooka. Do I even have to justify why this movie makes the list? 19) Jedi’s, storm troopers, light sabers, and droids… need I say more? The original Star wars Trilogy deserves a spot on this list; however, the only place worthy of Jar Jar Binks and the latest Star Wars installment is Vader’s Carbonite Deep Freeze. 18) This movie needs no introduction and certainly no explaining for its inclusion on this list. Bourne Identity has enough action, explosions, fight scenes and high speed car chases to be on a list of its own. If you haven’t seen this one, you haven’t reached full manhood. 17) Enter the Dragon. Spartan King Leonidas and his army of 300 soldiers go head to head with the invading Persians in this manly masterpiece. A perfect underdog story with breathtaking special effects, epic battles scenes, and more testosterone than one can handle. The Dojo gives this one 2 thumbs up and a spot on our manly movies list. 14) Batman Begins takes first prize among bat movies and, of course, deserves a spot on our manly movies list. 13) Taken. Liam Neeson uses his “particular” set of skills to exact justice on dirt bag criminals that have kidnapped his daughter. You may come away from this one with the overwhelming desire to beat up some bad guys.

this one, but this entire trilogy is worthy of a spot on our list. Indiana Jones is the man we all wish we were. He’s a treasure hunter by trade, a chick magnet, and a Nazi beater and carries a whip like most guys carry their cell phones. 6) Shawshank Redemption. This classic prison escape movie actually flopped in the theaters. However, it’s now considered one of best movies ever made. We couldn’t agree more. 5) Even with the growing popularity of MMA, boxing is still the manliest sport. Few films get you fired up like Rocky and there’s no question this and the entire Rocky series belong on this list. 4) Western movies and manliness go hand in hand. If you like gun fights, saloons, outlaws, and great story lines, you’ll love Tombstone. No manly movies list would be complete without it. 3) Glory. One of my personal favourites. This Civil War classic gives us a glimpse of some of the great sacrifices that were made to keep our country free from slavery. Don’t question your manliness if you shed a few tears in this one; it’s 100% man movie! 2) A near impossible rescue mission, war heroes, tanks, heavy artillery and plenty of action makes Saving Private Ryan another easy pick for our list. 1) Braveheart. Although dubbed historically inaccurate and even offensive to most native Scots, this manly saga will go down in history as one of the best movies of all time and certainly makes a case for being the #1 man movie on our list. William Wallace and his stand against King Longshanks is nothing short of spectacular and makes one appreciate more deeply the freedoms we all enjoy. This blockbuster has all the elements of a classic man movie including epic battle scenes, stirring speeches, men in kilts and even some comic relief. LUSCIOUS JOYS I’m pretty sure the most eaten food during the summer months would be the “hot diggety dog” (frankfurter) or (the easiest food to cook in the world) the simple “hotdog”. They can be boiled, grilled, fried, steamed, broiled, baked, or microwaved, and hotdogs aren’t just for kids. They have become quite gourmet over the years. There is a vast array of condiments for hotdogs and the most common ones include ketchup, mustard, pickle relish, sauerkraut, onion, tomato, cheese, and chili peppers; but hold on to your britches! I’m here to share some completely different ideas you might not have thought of. You better run to the store to pick up your dogs now before you read on; guess what’s for supper tonight! Banh Mi Dog 4 hot dogs ¼ cup mayonnaise 1 tbsp Sriracha or some other hot pepper sauce (such as Tabasco) 1/2 tsp sugar 4 hot dog buns, split ¼ cucumber, thinly sliced 1 large carrot, shredded ¼ cup fresh mint leaves Cook the hot dogs according to the package directions. In a small bowl, mix together the mayonnaise, Sriracha, and sugar. Place a hot dog in each bun and, dividing evenly, top with the mayonnaise mixture, cucumber, carrot, and mint. Tip: try this spicy mayonnaise on turkey sandwiches or in tuna salad. Bacon Wrapped Simply wrap your hotdogs in bacon using toothpicks to keep the bacon in place and bake them at 350 degrees for about 20 minutes or until the bacon is crisp. Top with avocado and a squeeze of lime. Steak Delight Grill or boil your hotdogs and top with thin strips of steak, BBQ sauce, melted cheeze whiz and green, red or yellow peppers. Chili Dogs Your favourite chili sauce then sprinkle with grated cheddar cheese. You could also boil these for a couple of minutes to melt the cheese. Onion Dog Caramelize the onions with yellow peppers for a delicious condiment. Top with Gruyere or Brie cheese. Garden Dog 4 hot dogs 2 cups baby arugula 1/2 cup sliced pickled beets 1 tbsp olive oil 1 tsp red wine vinegar Kosher salt and black pepper 4 hot dog buns, split 1 ounce Parmesan, shaved Cook the hot dogs according to the package directions. In a medium bowl, mix together the arugula, beets, oil, vinegar, and ¼ teaspoon each salt and pepper. Place a hot dog in each bun and, dividing evenly, top with the salad and Parmesan. Pizza Dog ½ cup marinara sauce 4 ounces fresh mozzarella, sliced 1/4 cup fresh basil leaves Grill hotdogs and place into buns. Top with the marinara and mozzarella. Broil until the mozzarella has melted, 1 to 2 minutes. Dividing evenly, top with the basil. You could also add your favourite pizza toppings to this dog. Try sautéed mushrooms, peppers, and onions. Chicago Dog Ketchup is a no-no on the Chicago dog; only dill pickles, mustard, hot banana peppers and tomatoes are allowed. SPECIAL NOTE Hot dogs present a significant choking risk, especially for children. A study found that 17% of food-related asphyxiations among children younger than 10 years of age were caused by hot dogs. Their size, shape and texture make them difficult to expel from the windpipe. Wondering how to get your kids involved in cooking?
We did a lot of cooking together as a family when my children were younger. Cookies and cakes mostly, and I wish now I would have spent more time teaching them entrees, side dishes, casseroles, lasagna, meatloaf and other assorted family recipes. They still call me when they have a cooking question and they have all turned into great cooks. Spending time in the kitchen cooking can be a pleasure for children of all ages. Start them young and with any luck they'll develop a lifelong love of the kitchen as well as skills they can use throughout adulthood. I found this awesome guide to the skills they can learn by age. Children will vary in their ability to undertake different cooking activities. Use your own judgment to choose tasks you think are suitable for your child. Safety is the biggest concern; beyond that, a little trial and error is all part of the fun. Here is a list of suggested activities for under 3s, 3-5 year olds, 5-7 years olds, 8-11 year olds and children 12 and above.
Cooking with the under 3s
Your little one may not be able to dress himself or go to the toilet on her own, but from around 18 months, your child will probably want to start 'helping you out' in the kitchen. Take advantage of their interest to give yourself a break. If they're entertained in the kitchen, you can get on with the business of cooking and you'll both be happy. Ensure all hazards are away from grabbing hands - pot handles, hot food and liquids, sharp or heavy utensils and cleaning products. Think about what they can reach or trip over and make sure there is always a
clear path if you're carrying anything hot, sharp or heavy. You can set them up on the kitchen table so you know they're at a safe distance. Once you've cleared the way, this is your opportunity to teach your child about food and familiarise them with the kitchen environment. Here are some of the activities very young children will enjoy: • Washing vegetables - this is a great way of teaching them the names of vegetables and sparking an interest, which will hopefully encourage them to try different food. • Stirring ingredients - they should be at room temperature. • Mashing with a fork or potato masher – again, watch out for temperature. • Sprinkling - flour, cake decorations and icing sugar; put a tray underneath to avoid too much mess. • Spooning ingredients into scales - you'll need to help! Another way to keep young children occupied is to give them plastic containers and utensils to wash in the sink - this can provide lengthy entertainment while you cook.
Activities to try with 3-5 year olds
• Weighing - pouring or spooning ingredients into scales. Using measuring spoons. • Washing fruit and vegetables. • Cutting soft ingredients like butter, mushrooms, strawberries using a strong plastic knife. • Breading and flouring - you can set up three stations with flour, beaten egg and breadcrumbs for fish fingers. • Mixing - using either a spoon or hands to mix together ingredients. • Tearing and squashing - tearing herbs and lettuce or squashing fruit. • Sieving - it's best to balance the sieve over a bowl and tap it rather than shaking it around! • Using a pestle and mortar - a light wooden one is better than a heavy one. • Kneading - light kneading can be fun but you'll need to step in to complete the task. • Rolling, shaping and cutting dough - choose plastic cutters and a small rolling. • Spreading - buttering bread and spreading icing. • Podding, picking and hulling - podding broad beans, picking leaves, tomatoes off the vine and hulling strawberries

Along with the skills suggested for 3-5 year olds, you can now introduce your child to trickier techniques and equipment. At this stage, you could think about buying your child a knife designed for young cooks or using a small adult one. With the introduction of sharp cutting tools like knives and scissors, always consider the ability of your child and if you're not comfortable, then leave it for a while. There are still other more complex skills they can enjoy. If you do think they can manage then still always keep an eye on them as it's very easy to slip even for adults. Activities to try with 5-7 year olds • Cutting using a small knife - children should learn how to
form their hand into a claw to keep fingertips out of danger . • Cutting with scissors - if you can get smaller scissors or children's scissors, use them to snip herbs. • Grating - fingers can easily be grated so keep watch and make sure they don't get too close to the end of whatever they're grating. • Measuring - even the very youngest children can do this but as children learn to read and do basic math, this is a great opportunity for them to do this with less supervision. • Rubbing in - rubbing in flour and butter with fingertips is called for in many recipes. • Beating and folding - show children how to beat cake mixture with a wooden spoon or fold in egg whites without knocking out too much air. • Greasing and lining a cake tin or tray. • Peel oranges or hard-boiled eggs - make sure eggs aren't too hot, run them under the cold tap first and be careful of residual heat. • Setting the table - encourage them to cherish the ritual of family meals. Cooking with 8-11 year olds Along with the skills suggested for 3-5 and 5-7 year olds, when children reach 8+, they can start to get involved with planning and undertake activities with a bit more independence. Supervision is still key, due to the number of hazards in the kitchen but take a hands-off approach where possible.

Cooking with 12+ year olds
Along with the skills suggested for 5-7 and 7-11 year olds, when children reach 12+, they can begin to prepare more complex recipes and even start improvising. How much they can achieve depends on how interested they are in cooking and how much they've done before. Even much older children should have some supervision to avoid accidents in the kitchen. Learning opportunities • Food hygiene - washing hands at the beginning and in between touching raw and ready-to-eat ingredients. • Math - counting, dividing portions, doubling recipes, adding and subtracting. • Recognising ingredients and learning their origin. • Recognising kitchen equipment and learning how to use it. • Reading and following recipes in order to create the final dish. • Following instructions - young children are particularly

My Favourite - Fabulous - Fantastic And Fun Stuff
our emotions, beliefs, and thoughts, and that is really the source of what and who we attract and the basis of our sense of well-being. Which means what?
I just finished reading the Dan Brown novel, “Lost Symbol.” It is a fantastic book, well worth the read. Dan has a way of drawing you into the story and the infinite amount of information in his books is fabulous. There is a lot of talk about Noetic Science and the power of the mind and soul, which I find fascinating, so I did more research on this topic. The word noetic is derived from the Greek nous, for which, according to the institute’s website, there is no exact equivalent in English. It refers to “inner knowing,” a kind of intuitive consciousness – direct and immediate access to knowledge beyond what is available to our normal senses and the power of reason.
It’s a little like the book “The Secret” (The Secret is a best-selling 2006 self-help book written by Rhonda Byrne). It is based on the law of attraction, which is said to work by attracting into a person’s life the experiences, situations, events, and people that “match the frequency” of the person’s thoughts and feelings, using the power of your mind. Therefore, positive thinking and feeling positive are claimed to create life-changing results such as increased wealth, health, and happiness. The book has sold more than 19 million copies worldwide and has been translated into 46 languages.
The Institute of Noetic Sciences (IONS) was co-founded in 1973 by former astronaut Edgar Mitchell and investor Paul N. Temple to encourage and conduct research on noetic theory and human potentials. Institute programs include “extended human capacities”, “integral health and healing”, and “emerging worldviews”. During the three-day journey back to Earth aboard Apollo 14, Mitchell had an epiphany while looking down on the earth from space. “The presence of divinity became almost palpable, and I knew that life in the universe was not just an accident based on random processes ... The knowledge came to me directly,” Mitchell said of that experience. Pretty mind blowing! But you know, it has been said many times that we humans use only about ten percent of our brain. What is really meant by this is that the conscious mind needs about 10% of our brain’s resources. In other words, thinking, moving about, making choices, planning, seeing, hearing, tasting, touching, and smelling are all conscious activities, and take up 10% of our processing power. If this is true, what is the other 90% of the brain doing? If the conscious mind takes up 10% of your brain, we can refer to the other 90% as the subconscious mind. By using your subconscious mind, you are capable of changing your life; sounds like a pretty simple concept. So, if changing your thoughts or using your subconscious can make such a dramatic change in our lives, why aren’t we all doing this? Perhaps no one has ever told us how! Make an appointment with yourself. Take a morning or afternoon off to think about your life. If this sounds scary to you, this is one of the first places to change your thoughts. This is fun. What you can dream, you can craft a plan to achieve. Find a quiet place with no distractions such as the library, sitting in your bed, or sitting in your car. 2. Daydream. During your appointment with yourself, think about areas in your life in which you want to make a change. Areas to consider: • Business/Career • Relationships • Finances • House & Home • Physical Health • Spiritual • Leisure • Family 3. Write Your Dreams Down. Write out what you want to change. Maybe there is only one area you want to

4. The Action Plan. For your top changes, write out some rough plans about how you could achieve those dreams. Break down the long-term goal into monthly, weekly and/ or daily things you’ll need to do to get there.
7. Gratitude. Take a bit of time each morning to really appreciate what you currently have in your life that is good. In the evening, take a bit of time to review your accomplishments and learnings from the day, either in quiet meditation, in a journal, or with someone who supports you. It can be a nice ritual to create with a spouse, your children, or other person who is important in your life.
5. Mentors. Who else has done what you want to do? Who inspires you? What can you learn from that person or those people? How do they think? How do they handle challenges? Write it all down. Let that person serve as a guide to how you work towards your dreams. Seek out these guides even if it is simply by reading someone’s book or blog. Ask for help and guidance. You’ll likely be surprised to find that when you ask, most people will try to find a way to help you. Lastly, remind yourself every day that if your mentor can succeed, so can you. 6. The Reminder Poster. Use your creativity here. The idea is to create a poster of which you can make several copies to hang in key places such as your bathroom, bedside table, kitchen, car and desk. On the poster (any size you want) list your dreams, your daily action plan, and the

Use an old glue tip to draw or write with acrylic paint. Works perfect! 2. Use a coffee filter to clean your screens. They’ll catch the dust and cut static on the screen, all without leaving behind any fibres like paper towels would. 3. To give a sisal or sea-grass area rug some traction, flip it over and apply lines of acrylic-latex caulking every 6 inches or so. Once dry, you can safely put down your rug; the rubbery strips will hold it in place. 4. Instead of using extra laundry detergent to pre-treat, instead we turn to our old school friend — white chalk. Simply rub onto greasy stains and the chalk powder will absorb the grease, making the stain easily removable by the laundry soap in the wash. 5. Take your favourite liquid fabric softener and soak an old hand towel or flour cloth completely with it. Wring it out and let it dry completely, then throw it in with your next load. Last month we covered a list of ten strategies for dealing with typical worry. We also asked for people to email us some of the best strategies that they have for dealing with stress and we were delighted with the results! So in addition to our list of strategies for handing stress and worry which included ‘Getting the Facts’, ‘Educating Yourself’, ‘Discovering all the Options’, ‘Connecting with Others’, ‘Getting Active’, ‘Helping Others’, ‘Talk Talk Talk’, ‘Set a Limit’, ‘Question Your Worry Thoughts’, and ‘Forgive Yourself’ we received a handful of other tips that included: Readers’ Stress Busters 1. Get Laughing. Try and find humour in the problem or worry that you have. Blow your problem out of proportion by imagining the worry situation as a cartoon scenario amplified to the worst possible degree. So if you are worried about testifying in court, imagine all the things that might go wrong, starting with you tripping as you go up to the stand. Perhaps you then start to babble and spit your gum out accidentally as you are testifying, only to have it land on the judge’s face. You get the idea. 2. Create Lists. One reader likes to create a pro/ con list with all of the possible outcomes in order to understand the situation a bit better. So if you are worried about making a commitment to buying that dream house, you can chart what the benefits of purchasing the house are (like creating an investment) and what the negative aspects are (like having property taxes). By doing this, you can quickly see what your concerns are and be able to see how they balance out. Page 48

3. Vent. Drive out to the deep forest or to that secluded creek you’ve always admired and yell and scream, cry or stamp your feet without fear of judgement. This might be a safe way to express your feelings while still maintaining your dignity. 4. Visualization. Imagine the situation and how you would like it to turn out. Focus on the positive aspects and set the intention that everything will work out for the better good. Our Newsy Neighbour reader liked to practice this strategy on a regular basis right before bed. 5. Seek Professional Help. If you see that your worry is starting to control your life or the lives of others, it is time to consult with a mental health professional or your general physician. Anxiety is extremely common, yet can have very damaging effects to your health and to the health of those around you if do not use positive coping strategies (becoming enraged, being abusive verbally or physically to ourselves or others or regularly isolating ourselves might be indicators for us to go and seek some help). “It is your beliefs about a situation or event that determine how you will feel about that situation or event.” From the book ‘Helping Your Anxious Child: A Step-by-Step Guide for Parents’ by R .Rapee , S. Homemade Croutons
I was making Caesar salad the other day and realized my package of croutons was empty. ‘No problem,’ my son said. “Just make your own!’ In the past, I would have thought, ‘David makes his own croutons?’ But now that he has finished his chef course at Mount Royal and is working as a sous chef at Fairmont’s Jasper Park Lodge, I think he just might know a little about making homemade croutons!!
Day-old French bread (approximately 1/2 loaf) Olive oil (approximately 1/4 cup oil per 1/2 loaf) Kosher salt, to taste Freshly ground black pepper, to taste Optional: Parmesan cheese, dried herbs (basil, oregano, thyme, rosemary), garlic powder Preheat oven to 350°F.
**Warning: after trying out this recipe, you will likely never go back to buying store-bought croutons again. In fact, you will probably find it hard to believe you ever spent money on storebought croutons in the first place.
Using a bread knife, cut the bread into 1/2 inch by 1/2 inch cubes. If you prefer larger or smaller croutons, make your cuts accordingly – just be sure to make your cuts as similarly as possible to help them bake evenly. In a large bowl, toss bread cubes with enough olive oil to lightly coat. Add kosher salt, freshly ground black pepper to taste and any seasonings you prefer. Once cubes are evenly and lightly coated, pour bread onto a baking pan lined with aluminum foil (for easy clean-up). Bake bread in oven for 4 minutes then check them. I check mine every couple minutes, as when all the moisture is gone, they burn very quickly. Take out when the bread is golden and very crunchy. Toss cubes several times during baking. Homemade croutons, stored in a plastic container or a plastic bag, last up to two weeks unrefrigerated.
Not only does making homemade croutons allow you to utilize the ends of the loaves of bread you weren’t going to eat anyway, but it also allows you to make delicious, fresh croutons to add to your salads and soups. To make croutons, all you need is some bread, oil and seasoning. What bread, oil and seasoning (and any combination) you choose will determine how your croutons taste. My personal favourite is to use a day-old French bread. I also save the ends of the regular sliced loaves of bread until I have a decent amount (about 4-6 slices and/or heels is plenty). Otherwise, you can use as many pieces of bread as you’d like. If the bread is too hard to cut but is still good, just pop it in the microwave, wrapped in a damp cloth, for about 20 seconds to loosen it up.

Quick Breads You already know you can make carrot cake and carrot muffins. In fact, I’ve always said that muffins are merely cake in disguise. Quick bread is basically a muffin in a loaf pan. Zucchini bread is quick and easy and practically impossible to get wrong. It comes together in no time and if you don’t have a mixer on hand, you can just use a wooden spoon and some elbow grease. It’s a great after school snack. Zucchini, pumpkins and carrots work so well in breads. I think it’s their dense texture, which, when grated slowly, releases moisture and earthy flavour as it bakes. The garden season will end soon enough, in a fanfare of potatoes and squashes, carrots and pumpkins. As the weather gets colder, you will be glad you took the time to bake these quick breads, snuggled safely in your deepfreeze, perfect for drop-in guests or just an anytime snack.
Zucchini Bread This recipe from Baking at Home with the Culinary Institute of America (Wiley 2004) makes a surprisingly light-tasting loaf and uses up a ton of zucchini. Makes 2 loaves, about 12 slices each 3 1/2 cups all-purpose flour, plus extra for dusting 2 teaspoons baking powder 1/2 teaspoon baking soda 1 teaspoon salt 1 teaspoon ground cinnamon 1/2 teaspoon freshly grated nutmeg 1/4 teaspoon ground cloves 1 cup sugar 2 1/4 cups coarsely grated, unpeeled zucchini 4 large eggs, lightly beaten 1/2 cup vegetable oil 2 tablespoons grated orange zest 1 cup coarsely chopped toasted walnuts or pecans Preheat the oven to 350°F. Grease and flour two 8 1/2-inch loaf pans. Sift the flour, baking powder, baking soda, salt, cinnamon, nutmeg and cloves into a bowl, and set aside. Combine the zucchini, sugar, eggs, oil and orange zest in a large bowl, and mix by hand until evenly blended. Add the sifted dry ingredients to the zucchini mixture. Stir by hand just until the batter is evenly moistened and blended. Fold in the nuts. Divide the batter between the prepared loaf pans. Bake until the edges are browned and starting to pull away from the pan, and the bread springs back when lightly pressed with your fingertip, about 55 minutes. Remove the loaves from the pans and let cool on wire racks before serving.
Pumpkin Bread If you have a stand mixer, it comes together in a flash, but you can also make it quickly with just a whisk and a bowl. It makes an unusually wetlooking batter, but the loaf will dry in the oven and rise a little. Just give it enough time, even if the aroma in the kitchen is driving you mad. Makes 1 loaf 1 1/2 cups walnut halves/pieces 1/2 cup vegetable oil 3/4 cup dark brown sugar 2 large eggs 1/3 cup buttermilk 9 ounces canned pumpkin puree 1/2 teaspoon orange extract
1/2 cup all-purpose flour 3/4 teaspoon baking soda 1 teaspoon cinnamon 1/2 teaspoon salt Preheat the oven to 350°F. Toast the walnuts for 12-15 minutes, chop and set aside. Measure out the 1/2 cup oil. Dip a basting brush in the measuring cup and grease a standard 8 1/2- or 9-inch loaf pan. In the bowl of a stand mixer, combine the brown sugar and oil on low speed. Add the eggs, one at a time, and then add the buttermilk, the pumpkin puree and the orange extract. Let it continue to mix on low speed while you sift the dry ingredients. Put the flour, baking soda, cinnamon and salt in a sifter. Sift together onto a sheet of wax paper. Carefully tilt the contents of the wax paper into the mixer as it continues to run. Mix on low speed, scraping down the sides once, until just combined. Fold in the chopped walnuts gently, and scrape the batter into the greased pan. Bake for 65-70 minutes, or until a skewer inserted in the center of the loaf comes out clean. Cool in the pan for 10 minutes and out of the pan for 20 minutes before serving.
Carrot Bread This recipe from The Fearless Baker, by Emily Luchetti and Lisa Weiss (Little, Brown 2011) makes a sweet, moist loaf — one that can almost pass for dessert. Carrots can vary in the amount of moisture they hold. You can test the interior with a skewer or toothpick. When the end comes out dry or with a few moist crumbs clinging to it, then the loaf’s done. Makes 1 loaf 8 medium carrots 1 1/3 cups unbleached all-purpose flour 1 teaspoon baking soda 1/4 teaspoon baking powder 3/4 teaspoon kosher salt 6 tablespoons (3/4 stick) unsalted butter, completely softened 1 cup granulated sugar 2 large eggs 1/3 cup buttermilk (or 1/3 cup whole milk mixed with 1/2 teaspoon lemon juice) Preheat the oven to 350°F. Grease the bottom and sides of an 8 1/2inch loaf pan with non-stick cooking spray or butter. Peel and slice 3 of the carrots into 1/4-inch rounds. Bring a medium saucepan of salted water to a boil, add the carrots and cook until soft, about 10 minutes. Drain. Let cool, and then puree in the food processor or blender. Coarsely grate the remaining 5 carrots (you should have 2 cups). Set both the pureed carrots and grated carrots aside. Put the flour, baking soda, baking powder and salt onto a piece of parchment paper or into a bowl. Set aside. In a medium bowl, use a wooden spoon (or any other stiff spoon) to mix the butter and sugar until smooth. Stir in the eggs one at a time until combined. Stir in the buttermilk, carrot puree and grated carrots. Add the flour mixture and mix until well-blended. Spread the batter in the prepared pan. Bake until a bamboo skewer or toothpick inserted in the middle comes out clean, about 55-65 minutes. Let the bread cool for 15 minutes. Homemade Granola
Homemade GLUTEN FREE Granola
The more things I can make myself without having to resort to store bought and pre-packaged, the happier I am. I know what’s in it – and what isn’t. Plus, a lot of things just taste better homemade, and they are healthier. Take granola for example. Even a lot of the organic, “healthy” granola you buy in the store is made with sugar. While it may be organic sugar, it’s still sugar. While it may be made with organic vegetable oil, it’s still vegetable oil. This granola contains no refined sugars or vegetable oils. Instead, it’s made with raw honey and super-duper healthy and delicious coconut oil. Making granola is not an exact science, so it’s an easy thing to customize to your preferences. Substitute any dried fruits, nuts or seeds of your choice. Prefer it sweeter? Add some more honey. I like adding sesame seeds. They add a great flavour, especially once they’ve been toasted with the oats. You could also add flax seeds; they are high in omega 3′s and fibre. Sunflower seeds are a good source of vitamin E and magnesium. They also have a great flavour. Tailor this recipe to your likes and needs.
Ingredients: 8 cups certified gluten-free rolled oats 3 cups raw, unsalted sunflower seeds 2 cups flax seeds (not ground flax meal) 1 cup raw sesame seeds (not toasted) 1 cup chopped raw unsalted almonds 1 cup chopped raw unsalted walnuts 1 cup chopped raw unsalted pecans 1/2 cup unsalted butter OR ghee (clarified butter) 1/2 cup fine quality oil (recommended - sesame oil OR light olive oil) 3/4 cup honey 1/4 cup 100% maple syrup 1/2 cup brown cane sugar 1 tablespoon ground cinnamon 1 1/2 teaspoons salt 1 tablespoon vanilla extract Optional - 1 cup dry unsweetened fruit (raisin, apricots, etc.) If adding dried fruit decrease amount of sunflower seeds from 3 cups to 2 cups)
Ingredients: 4 cups raw oats (not quick or instant) ¾ cup unsweetened dried flaked coconut ⅓ cup chopped or sliced almonds 3 tablespoons sunflower seeds (unsalted) 1 tablespoon flax seeds 1 tablespoon sesame seeds ⅓ cup raw honey 3 tablespoons extra virgin coconut oil ½ teaspoon almond extract (optional) 1 cup assorted dried fruit, like apricots, raisins, cranberries, cherries, pineapple, dates, etc. Preheat the oven to 325°F. Place the oats in a large mixing bowl. Add the coconut flakes, nuts and seeds and stir to combine. Place the honey and coconut oil in a small saucepan and bring to a boil. Boil for one minute and remove from heat. Stir in almond extract, if using. Pour honey mixture over the oat mixture and stir until coated. Spread the granola out on a large baking sheet. Bake for 20-25 minutes or until lightly toasted, stirring every few minutes to prevent burning. Let the granola cool completely then add the dried fruits and stir to combine. Store in an airtight container. Keeps for about a week. Serve with milk and fresh berries if desired.
Preheat oven to 325° F / 163° C. Line 2 large baking sheets with parchment paper. Mix certified gluten-free rolled oats, sunflower seeds, flax seeds, sesame seeds, almonds, walnuts and pecans in a large (at least 6-quart) mixing bowl. Stir to thoroughly combine. Place butter, oil, honey, maple syrup, brown cane sugar, cinnamon and salt in a heavy saucepan. Bring to a boil over medium high heat. Remove from heat. Whisk in vanilla extract. Carefully pour half of hot syrup mixture over oat mixture in bowl. Stir to coat dry ingredients. Pour remaining syrup over oat mixture and stir again, until all dry ingredients are thoroughly coated. Pour half of mixture on each parchment paper lined baking sheets and use a large spoon or spatula to evenly spread mixture on baking sheets. Place baking sheets in preheated oven. Bake for 10 minutes. Remove baking sheets from oven and stir ingredients. This ensures even baking. Return baking sheets to oven and bake for another 10 to 15 minutes, or just until mixture starts to turn golden brown. Watch baking time carefully to avoid burning. Remove baking sheets from oven. For chunky gluten-free granola, stir ingredients once and allow to completely cool. For a more cereal-textured granola, stir the granola more frequently as it cools. When cool, place granola in air tight containers and store in refrigerator.
