Try this astounding experiment to trick your body and brain. Vilaynur Ramachandran, the world-renowned neurologist, has used these experiments to investigate phantom limb pain. The Pinocchio experiment with body image. 1) Find 2 willing (and good) friends. 2) Sit on a chair blind-folded, and ask your friend (let’s call her Sam) to sit on a chair in front of you, with her back to you. 3) Ask your other friend to take your right hand and put it on Sam’s nose. 4) Tap and stroke her nose in a gentle random manner, making exactly identical movements with your other hand, on your own nose. 5) Continue this for 60 seconds. 6) About 50% of people will have the extremely odd sensation that their nose is 3 feet long, or somehow their nose is elsewhere!

A car was driving down the street when all of a sudden it started swerving. The car was going back and forth until someone called the police. From the Publishers Love is in the air in February; a time to think of what you can do for your special one. We all get so involved in our own lives that sometimes we forget to say, “I Love You,” or, “You are special to me”. This issue has all sorts of wonderful ideas to make your Valentine’s Day especially memorable this year. And, how about this flu season? Holy guacamole, Batman! It is bad, bad, bad; people are getting really sick and if it has not affected your family, consider yourself lucky!! Our family pages will give you tips on how to keep you and your family safe from all the bugs out there. We have lost one of our valued contributors, Derek Donais who has been with us for as long as I can remember. He has found that his life and other obligations just don’t give him the time he needs for his column anymore. I have got to say, we are so sad not to have his voice in the magazine. You truly will be missed and we wish you all the best that life has to give, Derek! Nurture strength of spirit to shield you in sudden misfortune. But do not distress yourself with dark imaginings. Many fears are born of fatigue and loneliness. Beyond a wholesome discipline, be gentle with yourself. You are a child of the universe, no less than the trees and the stars; you have a right to be here. And whether or not it is clear to you, no doubt the universe is unfolding as it should. Therefore be at peace with God, whatever you conceive Him to be, and whatever your labors and aspirations, in the noisy confusion of life keep peace with your soul. Is the skin on your legs as sensitive as the skin on your arms? And have our chimp-ancestors left us with feet as sensitive as our hands? To find out, try our two-point discrimination experiment. All over your body you have tiny pressure sensors in your skin. Some areas have many pressure sensors and other areas have relatively few. Areas where the pressure sensors are packed in are very sensitive to touch. This two-point discrimination experiment lets you discover which parts of your skin have many pressure sensors, and where they are relatively sparse. The experiment involves gently pressing two sharp points onto a friend’s skin and asking them whether they can feel one or two pressure points. In sensitive areas, the pressure sensors are closer together, so the two tips of the paper clip will activate two separate pressure points. Messages from both sensors are sent to your brain and you feel both tips. In less sensitive areas, the pressure sensors are further apart, so both tips activate only a single pressure sensor. A message from this sensor is sent to your brain, and you only feel one tip on your skin. For this experiment you will need: A paperclip, a pen and paper, a ruler, and a friend. You can also try this on your own, with your eyes shut, concentrating on what you feel. Instructions: 1. Straighten out a paper clip and bend it into the shape of a U. Make sure the tips are level with each other. 2. Now, ask a friend to close their eyes. Arrange the ends of the paper clip so they are about 1 cm apart. 3. Touch both ends of the paper clip gently (and at the same time) onto the back of your friend’s hand and ask if he or she felt one pressure point or two? 4. If your friend felt only one pressure point, spread the tips of the paper clip and try again. The Cheesiest Cheese Loaf 3 1/2 c All-purpose flour 1/2 c Instant potato flakes, dry 1/2 c Grated parmesan cheese 1 Tbsp Baking powder 1/2 tsp Salt 2 c Shredded sharp cheddar cheese 2 Eggs 1 1/2 c Milk 1/4 c Butter or margarine, melted Directions 1. Preheat oven to 375°F. Grease a 9x5x3 inch loaf pan. 2. In a large bowl, mix flour, potato flakes, Parmesan cheese, baking powder and salt. Stir in cheddar cheese; set aside. 3. In a small bowl, beat eggs. Beat in milk and butter or margarine. Stir into flour mixture until moistened. Spread evenly in pan. 4. Bake for 60 minutes or until a wooden pick inserted in center comes out clean. Remove from pan and place on a wire rack. Serve warm or at room temperature. www.thenewsyneighbour.com Valentines

Luscious Joys I am a homemade soup freak. I save all my chicken and turkey bones to make the most delicious soups ever. Talk about healthy and yummyful! Normally I don’t use a recipe; I just wing it, using whatever I have in the refrigerator. That’s the beauty of homemade soup; throw in whatever strikes your fancy that day. Be creative and use your imagination. But for those of you who need a little prompting, I have found a few super easy luscious recipes for you to try. This has got to be the easiest chicken noodle soup recipe I have ever seen. This is great for flu season, as they say chicken soup is perfect if you are feeling a little under the weather.

Super Easy Chicken Noodle Soup

1 pound boneless, skinless chicken meat 8 cups water 4 cubes chicken bouillon 2 cups thin egg noodles Measure water into a large pot, add chicken and bouillon. Boil until chicken is fully cooked (30 – 45 Minutes). Remove from broth and chop into small pieces. Return to pot. Add egg noodles and cook until tender (8 – 10 minutes, depending upon the size of the noodles. Season with salt and pepper to taste and garnish with fresh chopped dill, parsley or cilantro. Use your imagination – any fresh herb could be substituted. This next recipe is perfect for when you are craving turkey. If you are like me, I only cook that big bird twice a year, so I was tickled pink to find this easy recipe. Page 18

Ground Turkey Soup

1 pound ground turkey 2 carrots, sliced 8 cups vegetable broth 1 small cabbage, shredded 4 potatoes, peeled and cubed salt and pepper to taste 2 Tbsp fresh-chopped cilantro or parsley In a large pot, combine bouillon, potatoes, carrots and cabbage. Bring to a boil. Lower temperature and simmer. In a separate saucepan, brown the turkey then add to other ingredients. Simmer for 1 hour. Add fresh cilantro or parsley and serve. I have a cupboard full of bags of lentils. I see them at the grocery and think how lovely and healthy they are, and that I should make soup – but I never get around to it. With this easy recipe, that may all change!!

Hearty Lentil Soup

1 large carrot, chopped into bite size chunks 250g red lentils 400g tinned chopped tomatoes 1 litre chicken stock Salt and pepper Worcestershire sauce You can use other veggies like broccoli and parsnips as well if you wish. Now you can make your very own egg drop soup at home. Add fresh herbs, noodles or green onions. I like to add about ½ tbsp fish sauce for that Vietnamese flavour.

Grated parmesan cheese Add butter to stockpot. Melt over low heat. Add oil, onions, and salt. Sauté onions 15-20 minutes, stirring constantly. Sprinkle flour into onions. Stir and cook 2 more minutes. Stir in stock, and simmer 30 minutes. To Serve: toast french bread under broiler. Ladle soup into individual bowls. Place bread slices over soup. Garnish with grated Parmesan cheese.

Easy Egg Drop Soup

Come on now - cheese and beer soup, served with a fresh French roll?! A little bit more work, but definitely worth it.

Onion soup is easier to make than you think. Try this recipe and you will see for yourself.

Onion Soup

4 tbsp butter 2 tbsp vegetable oil 2 pounds sweet yellow onions, sliced thin 1 tsp coarse salt 3 tbsp all-purpose flour 2 quarts beef, chicken, or vegetable stock Fresh ground black pepper, to taste French bread slices www.thenewsyneighbour.com

Beer Cheese Soup

1 tbsp butter 1/2 cup onion, chopped 1/2 tsp minced garlic 1 tsp Worcestershire sauce 1 (12 fluid ounces) bottle beer 1 (14.5 ounces) can chicken broth 3 tbsp cornstarch 2 cups half-and-half 2 cups shredded sharp cheddar cheese Bacon bits, for garnish Melt the butter in a 4-1/2 quart soup pot over medium heat. Add the onion, garlic and Worcestershire sauce and stir well. Add the beer and turn the heat to high and boil for 3 minutes to evaporate the alcohol. Add the chicken broth and bring the soup back to a boil. Lower the heat to medium-low and simmer. Combine the cornstarch with 3 tablespoons of water and mix until smooth. Set aside. Add the half-and-half and shredded cheese to the soup. Stir constantly until the cheese melts. Then stir in the cornstarch mixture. Winter Vampires We are deep into winter. We are approaching the time of the year when only skiers and snowmobilers are really looking forward to more snow. The rest of us are wondering how to find and dip in a frozen river all those people behind the smiling faces in the ‘we are Canadian’ winter ads. Maybe we should dip the marketing media as well…just because. This is also the time of year when we look at our monthly utility bills and watch the blood pressure creep up to volcano level. We all know about the various means of saving on energy costs by turning lights off, turning the thermostat down, (when the ‘significant other’ seriously starts wearing a parka in the living room and muttering about defense lawyers – it may be time to warm it up a little…), but there may be some other energy vampires hiding in your house. One energy sucking creature is taking warm humidified house air and putting it outside and it’s actually using your expensive energy to do it! Not only do most people tolerate this – they actually encourage it! This particular vampire is of course your ever friendly clothes dryer. So handy and always making sure that you have soft warm dry clothes, sheets, towels and more whenever you need them. Little did you suspect the inner deviltry hidden in the workings of this Machiavellian machine. A clothes dryer works by taking surrounding air, heating it (electric or gas), moving the hot air through the clothes and lint screen, and www.thenewsyneighbour.com

then exhausting it outside. Literally, this process removes moisture from the clothes and puts it outside. The down side, (at least in Alberta), is that the warmed, humidified air from our residence is further warmed and humidified only to be put outside. Energy dollars making nice clouds of steam on a winter night. The dryer is not done yet, however; the warm, humid exhaust air contains lint, (fibres, etc.), from our clothes. The lint is wet and loves to collect in the venting, causing air flow restrictions. It can even freeze in the venting or exhaust fixture causing water/ ice buildup and no air flow. The venting has an evil partner – the lint screen. It will block up and further restrict air flow. All this air flow restriction means that the dryer has to run longer and hotter to dry a load. This costs even more money, increases the probability of repairs and possibly even a fire hazard from lint buildup. Yes – there are some methods of energy recovery from your dryer but beware; some are against ‘code’ for very important safety reasons. Two things you can do to control this energy vampire; 1) Keep your venting and lint screen clean. Periodically check the outside vent for good air exhaust. 2) Consider a high efficiency washer. They are water/energy efficient and have higher spin speeds. This means the clothes are dryer when finished - so less work for your clothes dryer. Talk with your local independent appliance retailer. Appliances and service is their business and they need to know what works. #1 Hoops basketball is moving to its third season this May and June! As the program continues to grow with great success, #1 Hoops is now offering two programs. The first program will be for children Kindergarten to grade 3. The second program will be for children from grades four to seven. The program was designed and written by head coach Shantelle Gieck. Shantelle has played basketball for ten years and has been coaching for seven years. Her background includes playing for the St.Mary’s University Lightning in Calgary, Alberta Shooting Stars, PSA Invictus, Strathmore high school Spartans, and Strathmore Junior High Cougars. In the seven years of coaching Shantelle has been involved with the Steve Nash program, Alberta shooting stars, and as well as some Strathmore club teams. Shantelle is also certified in First Aid and CPR. This program is different from other programs due to its commitment to teach the kids not only the basic fundamentals of basketball but the way to act on and off the court. Every child will receive one on one training and no one child will be treated different no matter their skill level. This program is designed for children of all levels, from kids who just love the game to kids that one day would like to play university basketball.

Things to do before you have kids

Go skydiving/bungee jumping/swimming with sharks...or whatever other crazy, life-risking thing you’ve got on your bucket list. Go to all the restaurants and bars you’ve been meaning to go to. You will still get out to eat when you have kids. But when there’s a sitter on the clock, you’re more likely to pick a place you know will get you in and out, and not stay all night. Stop being so self-righteous. When you see a mom or dad struggling with a tantrum-throwing kid at the grocery store, don’t roll your eyes and think, my kid would never do that. Because he will. Guaranteed Take a road trip. Anywhere. Together or solo. Relish in the complete silence or blast whatever kid-unfriendly music you like. Spend an entire day in bed together watching movies. Have boozy lunches with friends. You’ll probably try this once you have kids, and it will seem great...until you get home and realize you still have to parent and bedtime isn’t for another five hours. Be the last ones to leave the party. When you have kids, you’ll be calling it a night long before your baby-free friends. Trust me! Fly first class. Toddlers are infamous for tantrums and other behaviour issues. To encourage listening and cooperation, follow these parenting tips. Life can be frustrating for toddlers. Though often eager to show their independence, toddlers may not be able to move as swiftly as they’d like or effectively communicate their needs. This combination can easily lead to tantrums and misbehaviour. But you can teach your toddler to behave well by providing love, attention, praise, encouragement and a degree of routine. Show your love Positive attention tops the list of parenting tips for toddlers. Make sure your displays of affection for your child outnumber any consequences or punishments. Hugs, kisses and good-natured roughhousing reassure your child of your love. Frequent praise and attention also can motivate your toddler to follow the rules. Accept your child As your child grows, he or she will display certain personality traits. Some of these are learned, others genetic. Respect your child’s developing individuality and don’t expect him or her to be just like you. While you’re likely to notice certain features of your child’s temperament, avoid labelling these features — which can encourage bad behaviour. Instead, nurture your child’s personality by finding ways to help him or her feel confident. A strong-willed child, for instance, has perseverance. Build on your child’s strength by encouraging him or her to play with a challenging toy. Minimize rules Rather than overloading your child with rules from the outset — which may frustrate him or her — prioritize those geared toward safety first and then gradually add rules to your list over time. Help your toddler follow the rules by childproofing your home and eliminating as many temptations as possible. Prevent tantrums It’s normal for a toddler to have temper tantrums. But you may be able to reduce the frequency, duration or intensity of your child’s tantrums by following

these parenting tips: Know your child’s limits. Your child may misbehave because he or she doesn’t understand or can’t do what you’re asking. Explain how to follow the rules. Take ‘no’ in stride. Don’t overreact when your toddler says no. Instead, calmly repeat your request. Pick your battles. Only say no when it’s absolutely necessary. Offer choices, when possible. If your child always seems to have tantrums at the grocery store, hire a sitter the next time you go shopping. Also know that children are more likely to act out when they’re tired, hungry, sick or in an unfamiliar setting.

Make it fun. Distract your child or make a game out of good behaviour. Your child will be more likely to do what you want if you make an activity fun. Stick to the schedule. Keep a daily routine as much as possible so that your child will know what to expect. Encourage good communication. Remind your child to use words to express his or her feelings. If your child isn’t speaking yet, consider teaching him or her baby sign language. If your child has a tantrum, remain calm and distract him or her. Ignore minor displays of anger, such as crying — but if your child hits, kicks or screams for a prolonged period, remove him or her from the situation. Protect yourself & your family

Normally, I try to make the Family Page fun and upbeat, giving you ideas on how to spend more quality time with your family. This month I’ve changed it up a bit because I think this is an important issue for all families to consider. I’ve been watching the news and, quite frankly, I am concerned about not only the huge outbreak of the flu this year, but the whole controversy over immunizations in general. The vaccine controversy is a dispute over the morality, ethics, effectiveness, or safety of vaccinations. Medical and scientific evidence surrounding vaccinations demonstrate that the benefits of preventing suffering and death from infectious diseases far outweigh rare adverse effects of immunizations. However, since vaccination began in the late 18th century, opponents have claimed that vaccines do not work, that they are or may be dangerous, that individuals should rely on personal hygiene instead, or that mandatory vaccinations violate individual rights or religious principles. These arguments have reduced vaccination rates in certain communities, resulting in outbreaks of preventable, and sometimes fatal, childhood illnesses. No one knows for sure when influenza began circulating through human populations, but since highly transmissible viruses require densely inhabited areas to spread, most medical historians trace the disease to the establishment of cities. The first description of what sounds like influenza comes from the ancient Greek philosopher and physician Hippocrates. Reports of the rapid spread of fever, body aches and respiratory distress were issued regularly in the densely packed Greco-Roman world. The most severe influenza pandemic to date hit in 1918 and swept the globe for two years, infecting about 30 percent of the human population and killing an estimated 40 to 50 million people. That’s a pretty big number! Now, seriously, people - think about this: reaction to vaccine controversies has contributed to a significant increase in preventable diseases, including measles and pertussis (whooping cough), which is currently experiencing its worst outbreak in 70 years as a result of reduced vaccination rates.

The Flu Is Contagious

Most healthy adults may be able to infect others beginning 1 day before symptoms develop and up to 5 to 7 days after becoming sick. Children may pass the virus for longer than 7 days. Symptoms start 1 to 4 days after the virus enters the body. That means that you may be able to pass on the flu to someone else before you know you are sick, as well as while you are sick. Some persons can be infected with the flu virus but have no symptoms. During this time, those persons may still spread the virus to others.

How Flu Spreads - Person to Person

People with flu can spread it to others up to about 6 feet away. Most experts think that flu viruses are spread mainly by droplets made when people with flu cough, sneeze or talk. These droplets can land in the mouths or noses of people who are nearby or possibly be inhaled into the lungs. Less often, a person might also get the flu by touching a surface or object that has flu virus on it and then touching their own mouth or nose. To avoid this, people should stay away from sick people and stay home if sick. It is also important to wash hands often with soap and water. If soap and water are not available, use an alcohol-based hand rub.


Take Action

If someone in your household is sick and you're worried about germs being passed around, provide separate (or disposable) cups and towels in the kitchen and bathroom. By keeping each family member's items separate, you'll help keep germs from spreading. The single best way to prevent seasonal flu is to get vaccinated each year, but good health habits like covering your mouth when you cough and washing your hands often can help stop the spread of germs and prevent respiratory illnesses

Washing your hands often will help protect you from germs. If soap and water are not available, use an alcohol-based hand rub.

If possible, stay home from work, school, and errands when you are sick. You will help prevent others from catching your illness.

Germs are often spread when a person touches something that is contaminated with germs and then touches his or her eyes, nose, or mouth.

Cover your mouth and nose with a tissue or your arm sleeve when coughing or sneezing. It may prevent those around you from getting sick.

Clean and disinfect frequently touched surfaces at home, work or school, especially when someone is ill. Get plenty of sleep, be physically active, manage your stress, drink plenty of fluids, and eat nutritious food.

Influenza is dangerous for children

Influenza (“the flu”) is more dangerous than the common cold for children. Each year, many children get sick with seasonal influenza; some of those illnesses result in death. Children commonly need medical care because of influenza, especially before they turn 5 years old. Severe influenza complications are most common in children younger than 2 years old. Children with chronic health problems like asthma, diabetes and disorders of the brain or nervous system are at especially high risk of developing serious flu complications. Each year an average of 20,000 children under the age of 5 are hospitalized because of influenza complications. Even healthy people can get very sick from the flu and spread it to others.

How do flu vaccines work?

Flu vaccines (the flu shot and the nasal-spray flu vaccine (LAIV)) cause antibodies to develop in the body about two weeks after vaccination. These antibodies provide protection against infection with the viruses that are in the vaccine. The seasonal flu vaccine protects against three influenza viruses that research indicates will be most common during the upcoming season. Three kinds of influenza viruses commonly circulate among people today: influenza B viruses, influenza A (H1N1) viruses, and influenza A (H3N2) viruses. Each year, one flu virus of each kind is used to produce seasonal influenza vaccine. Now, I’m not trying to influence you one way or another, but I have my flu shot every year and I have never had the flu. So for me, I believe in it. To each their own. I’m just saying it might be something to consider.

Flames captain Jarome Iginla didn’t leave much to the imagination prior to the start of the 2013 NHL season. “Winning is very important,” stated the 35 year old future hall of famer. “That is where the desire is. My preference would be to play here on a great team and win. I think we can do that.” I think I can win the lottery too, but the odds of that happening are very slim and this is why I believe Iginla will not be a Flame after this season. What Iginla is going to have to do in the next couple of months is sit down with his wife Cara and agent Don Meehan and perform a S.W.O.T. analysis. He has likely done this already, but if not here are the pros and cons for Iggy to make his ultimate decision: Strengths: 1. Calgary is a great city! It’s clean and vibrant with a good education system and low crime; it’s a great place to raise my family. 2. My wife and I recently built our dream home in Calgary and we love it! 3. It would be cool to end my career as a Flame! Play for one organization for my entire career! That is a rarity in today’s NHL. 4. This city is hockey crazy with amazing fans. 5. My roots are in the province. 6. The Flames have treated me well and paid me well! 7. Miikka Kiprosoff and the guys in the room. I really do like the players. 8. I have made solid endorsement money despite being in a smaller market. Weaknesses: 1. Flames are not a contender! Maybe a playoff team but not a team built to win CUP. 2. Murray Edwards is not Harley Hotchkiss. Organization has changed under new majority owner and not for the better. Edwards was a hawk during CBA. 3. City is hockey crazy and I can’t go out in public withPage 32

out being recognized. I can’t have a life away from the Saddledome. 4. I could make even more endorsement money in a larger market. 5. I am 35 years old and I want to win a Stanley Cup before I retire. Time is running out as I turn 36 in July. Opportunities: 1. Economy in Calgary is very good and job opportunities after hockey will be excellent. 2. Flames will likely offer me a cushy job in the organization after I retire. 3. Who am I kidding, I have invested well and I am set for life. I want to win a Stanley Cup. Threats: 1. Will my brand in Calgary suffer if I go to another team? It didn’t seem to hurt Ray Bourque as he won a Stanley Cup in Colorado and still had his jersey retired by the Bruins. 2. Mats Sundin didn’t wave his no-trade clause for the Leafs and he was roasted by the media and the fans. 3. There is no guarantee I will win a Cup if I go to another organization! However, there is no chance if I stay. 4. Will my wife and kids be upset if we leave? Happy wife, happy life! In conclusion, obviously this is a very difficult decision for Iginla. However, if his ultimate goal is to play on a great team and win this is not happening in Calgary anytime soon. The question is, who will blink first? Will the captain ask for a trade or with the Flames approach the captain and ask for a list of teams he would like to be traded for? About Jock Wilson:

The Top Three Cold & Flu Myths: Separate Fact from Fiction “Feed a cold, starve a fever.” “Wet hair will make you catch a cold.” It’s likely you’ve heard at least one of these theories. But are these myths, or actual medical advice worth following? One thing is certain: cold season is here and it’s nothing to sneeze at. More than 90 percent of all Canadians have at least one cold a year, and many have several. To keep your family healthy, let’s sort out what’s fact - and what’s not - regarding the top three cold and flu myths. 1) Feed a Cold; Starve a Fever False. While Mark Twain may have a beloved spot in American history, this centuries-old saying he popularized is simply not true. Whether you’re battling a cold, fever or both, all sick kids and adults need nutrients and liquids to get better. If someone doesn’t feel up to eating solids, try soups, juices, popsicles and other fortified liquids. 2) Breathing the Same Air as a Sick Person is the Page 40

Easiest Way to Catch a Cold False. While cold viruses can travel through the air especially when a sick person coughs or sneezes it’s not likely they’ll infect you this way. Rather, one of the best ways to catch a cold is to grab something that has been touched by the infected individual. The moist environment, especially found on soft toys, is the perfect breeding ground for germs. 3) Wet Hair Will Make You Catch a Cold False. Mom may know best about some things, but it’s not true that being cold can cause a cold. According to babycenter.ca, “If a cold virus happens to land in your nose, it doesn’t really matter whether you’re wrapped in an electric blanket or standing in a bucket of ice water - you’re probably going to get sick.” However, there is some controversy surrounding this myth. Researchers in Wales recently tested this theory and found those people whose feet were chilled for 20 minutes were significantly more likely to develop a cold over the next few days than those whose feet stayed warm. Their belief is that chilling a person lowers their immunity. The best advice? If you or your child is already carrying a virus, your body will be less able to fight it off. When you start to show signs of a cold, stay indoors and away from public places. If you do need to take go outside, make sure you are warm and properly clothed. A good rule of thumb is to dress layers. Doctor Knows Best While it may be difficult to decipher fact from fiction, it’s best to take advice from your doctor, rather than friends or relatives. Get Back At It! January is over and the honeymoon phase with fitness has worn off. Around 80% of people who set a fitness goal in January will have fallen off the wagon by February. If you are one of the small percentage who is still at it, good for you! If you are one of the 80% that has fallen off the wagon, get back at it! It’s never a bad idea to get fit, or start getting fit.

The best way to stay at it is to set goals. Something fun that will get you active. Spring is on the horizon, so think outdoors. Sign up for a 5 km race, or a walk for charity. By signing up for something fun, you’re more likely going to make time for it, and involve friends and family, which are two key factors for staying motivated. Another important piece of the puzzle is not setting a goal too far in the future. When you set a goal for 6 months or longer, it’s easy to lose sight of its importance. It’s best to set a goal for no more than 12 weeks or three months away. This gives you enough time to train for an event but is a short enough time to still stay focused on the end result. Help For Seniors - New Seniors Property Tax Deferral Program and Education Property Tax Assistance The Government of Alberta is kicking off a new program this year designed to help seniors who are in financial need. It is called the “Seniors Property Tax Deferral Program”. This program allows eligible seniors, who are homeowners, the opportunity to defer their property taxes in part or whole through a low interest home equity loan. Seniors who apply would enter into an agreement where the Government of Alberta would pay property taxes to the municipality on the eligible senior’s behalf. The loan and interest is repaid upon the sale of the seniors house, or sooner if desired. In order to qualify for this program, you must be over 65 years of age and a homeowner who resides in Alberta. For those who are struggling on a fixed income, this may allow seniors who own their homes to stay in them longer by freeing up funds they would normally designate for taxes. “We’ve heard from seniors that it gets harder and harder each year to pay their increasing property taxes, especially because their retirement incomes stay the same,” said George VanderBurg, Minister of Seniors. “A seniors’ property tax deferral program will give seniors the opportunity to take advantage of the value in their home. My MyFavourite Favourite– –Fun Fun–– Fantastic and Fantastic andFabulous Fabulous There are a lot of things I would call one of my Favourite, Fantastic, Fabulous and Fun Stuff – but fish is not one of them. In an attempt to be “the better me, this year” I have decided to eat fish at least once a week. There’s lots of research on the power of fish to prevent heart disease. Examples are fatty fish or “dark fish” like tuna, salmon, sardines, swordfish, mackerel or bluefish, which are all high in Omega 3 fatty acids. There is now evidence that the salmon you’ll have for dinner tonight can actually treat heart disease! A study compared 229 women who had already been diagnosed with heart disease. Researchers tracked participants who ate 2 or more servings of any kind of fish each week (or 1 or more serving of dark fish). After three years, the results showed that those who ate more fish had less progression of their heart disease. There’s also evidence for fish being beneficial for many health problems, including osteoporosis and infections. There are even studies that show that fish has a major role in the prevention of cancers, including kidney, skin and colon cancers. So that should be enough to convince you to start eating fish! Even if you don’t like stronger-tasting fish, like tuna and salmon, freshwater fish, which are lighter tasting, may appeal to you. While leaner freshwater fish such as trout, bass, and whitefish may not be the best source of omega-3 and omega-6 fatty acids, they still have them and they’re still both delicious and low in both calories and fat. So to help you out with “the new you” in 2013, I have included 4 super recipes for you to experiment with using a variety of different fish. I love Cilantro and Ginger so this recipes works for me!

Halibut with Cilantro Ginger Sauce 1 Tbsp sesame oil 1 medium shallot (minced) 2 Tbsp fresh ginger ½ Cup low sodium chicken broth ¼ tsp salt fresh ground pepper to taste

½ Cup fresh cilantro leaves 1 tsp unsalted butter spray olive oil 4 – 4 ounce halibut filets Place a large skillet in the oven and preheat to 425°F. Place the sesame oil in a small skillet over medium heat. Add the shallot and cook for about 3 minutes until just translucent. Add the minced ginger and cook for another three minutes. Add the chicken stock, salt, pepper and stir. Simmer for about 15 minutes. Place the sauce in a blender and add the fresh cilantro. Puree until smooth. Return to the skillet over low heat. Add the butter and allow to melt. Spray the large skillet with oil and add the halibut skin side down. Roast for about 10 – 14 minutes until done. Serve topped with the sauce.

In my world I cannot imagine eating salmon without dill, so this recipe works for me!

Poached Salmon with Lemon Dill Mayo

¼ Cup reduced fat mayo ¼ Cup reduced fat sour cream 1 tsp prepared horseradish 1 Tbsp fresh lemon juice ½ tsp lemon zest 2 Tbsp fresh dill 1/8 tsp dried tarragon ¼ tsp salt Fresh ground pepper to taste 3 Quarts water 1 small shallot 2 bay leaves 6 black peppercorns 4- 4-ounce salmon fillets Combine the mayonnaise, sour cream, horseradish, lemon juice, lemon zest, dill, tarragon, salt and pepper in a small bowl and mix well. Chill. Place the water in a large skillet over high heat. Add the shallot, bay leaves and peppercorns. When the water begins to boil, reduce the heat to medium low so that the water is barely shivering. Let the water heat at that temperature for about ten minutes. Add the salmon filets to the poaching water and increase the heat slightly. Do not let the water come to a higher boil than a shiver. Poach the salmon for about 8 - 12 minutes depending on thickness. Remove to a paper towel to blot dry and


then place on a plate. Top with the mayonnaise and serve. Sake and Wasabi – OH YAH – this recipe works for Seared Tuna Steak with Sake-Wasabi me!

Seared Tuna Steak with Sake-Wasabi Sauce

2 tsp low-sodium soy sauce 1 Tbsp Sake (save the rest for enjoying with your meal) 1 Tbsp fresh lime juice 2 Tbsp honey 1 tsp wasabi paste

4 – 4 ounce tuna steaks 1/8 tsp salt black pepper to taste 1 tsp sesame oil 2 green onions Mix the soy sauce, sake, lime juice, honey and wasabi paste together in a small bowl. Whisk until the wasabi is completely dissolved. This can be done a day in advance and refrigerated. Rinse the tuna steaks and pat dry. Sprinkle one side with the salt and then pepper liberally on that side. Place the sake sauce in a small saucepan and heat over low heat. Do not allow the sauce to boil. Set the oven to warm and place serving plates inside. Heat the sesame oil in a large non-stick skillet over high until very hot (almost smoking). Add the tuna steaks, seasoned side down. Cook over medium-high heat until well seared and turn. Rare tuna will take about 4 - 5 minutes per side. Remove the plates from the oven and spoon about 4 tablespoons of the heated sauce into the bottom of each plate. Garnish by sprinkling the chopped scallions over the fish and serve. I love everything Mediterranean – this recipe works for me!

Mediterranean Whitefish in Foil 8 tsp olive oil 4 tsp capers 2 tsp caper liquid 2 tsp pure maple syrup ½ tsp salt

4 Tbsp fresh oregano black pepper to taste 1 tsp fennel seed (crushed to fine powder) 2 – 15 ounce navy beans (drained and rinsed) 1 large zucchini 4 – 4 ounce whitefish fillets 16 grape tomatoes, halved 16 large black olives cut into slivers 4 Tbsp white wine aluminum foil Fold each of the four sheets of foil so that it is almost a square (15 inches x 12 inches). Starting at one end of the folded edge cut a half of a heart shape in such a way that when the parchment is opened it is in the shape of a heart. Place the olive oil, capers, caper liquid, maple syrup, salt, oregano, pepper and fennel seed in a bowl and whisk until blended. Place 1/4 of the beans in each pouch, in the center of one half of the foil. Center them on one side of the cut heart so that the other side will fold over the top of the filets easily (do this for all four pouches). Add 1/4 of the diced zucchini in each pouch. Rinse the halibut filets in cold water and pat dry. Put the filets, one in each pouch, on top of the beans. Scatter 1/4 of the tomatoes and olives evenly over the fish in each pouch. Pour 1/4 of the olive oil mixture over the fish in each pouch. Add 1 tablespoon white wine to each of the pouches by pouring it over the beans. Close the foil by rolling the edge inward, starting at the point of the heart and working around to the base of the heart. The foil pouch with the fish inside will be in the shape of a large half circle. Preheat the oven to 325°F. Place the pouches on a cookie sheet and then into the oven. Cook for about 12 to 15 minutes. To serve, remove each pouch to a plate and let stand 30 seconds before cutting the pouch open and eating directly from the open pouch. There will be some hot steam that escapes when the parchment is cut, so be careful. I’m converted! I really don’t think eating fish at least once a week is going to be a problem for me anymore. Amazon Rainforest I watched a documentary the other day about the Amazon rainforest and I just have not been able to stop thinking about it - it was so interesting! So I thought I would share some information about this most amazing place. The Amazon rainforest, also known in English as Amazonia or the Amazon Jungle, is a forest that covers most of the Amazon Basin of South America. This basin encompasses seven million square kilometers, of which five and a half million square kilometers are covered by rainforest. This region includes territory belonging to nine nations. The majority of the forest is contained within Brazil, with 60% of the rainforest, followed by Peru with 13%, Colombia with 10%, and with minor amounts in Venezuela, Ecuador, Bolivia, Guyana, Suriname and French Guiana. The Amazon represents over half of the planet's remaining rainforests, and it comprises the largest and most species-rich tract of tropical rainforest in the world. The rain forest has been in existence for at least 55 million years. More than 20% of Earth’s oxygen is produced in the Amazon rainforest; they call it the “Lungs of the Planet”. 70% of plants found to have anticancer properties are found only in the rainforest. An estimated 90% of Amazon rainforest plants used by Amazon natives have not been studied by modern science. The Amazon Rainforest is home to about 2.5 million insect species, tens of thousands of plants, and some 2,000 birds and mammals. To date, at least 40,000 plant species, 2,200 fishes, 1,294 birds, 427 mammals, 428 amphibians, and 378 reptiles have been

scientifically classified in the region. One in five of all the bird species in the world live in the rainforests of the Amazon, and one in five of the fish species live in Amazonian rivers and streams. Scientists have described between 96,660 and 128,843 invertebrate species in Brazil alone. The biodiversity of plant species is the highest on Earth with some experts estimating that one square kilometer (247 acres) may contain more than a thousand types of trees and thousands of species of other higher plants. The rainforest contains several species that can pose a hazard. Among the largest predatory creatures are the black caiman, jaguar, cougar, and anaconda. In the river, electric eels can produce an electric shock that can stun or kill, while piranhas are known to bite and injure humans. Various species of poison dart frogs secrete lipophilic alkaloid toxins through their flesh. There are also numerous parasites and disease vectors. Vampire bats dwell in the rainforest and can spread the rabies virus. Malaria, yellow fever and Dengue fever can also be contracted in the Amazon region. Between 1991 and 2000, the total area of forest lost in the Amazon rose from 415,000 to 587,000 square kilometres, with most of the lost forest becoming pasture for cattle. Deforestation has declined significantly in the Brazilian Amazon since 2004. From 2002 to 2006, the conserved land in the Amazon rainforest has almost tripled and deforestation rates have dropped up to 60%. About 1,000,000 square kilometres have been put onto some sort of conservation, which adds up to a current amount of 1,730,000 square kilometres. AMAZING!!
