Crazy Coffee Stories
The coffee that comes from animal droppings
Do you want a really special coffee and have disposable income? Try Kopi Luwak. This special blend is one of the most expensive coffees on the market, and can run hundreds of dollars per pound due to its rich taste and complex process. What makes the process of creating this delicacy so challenging? Prior to being harvested by humans, the beans are eaten, digested, and defecated by civets, strange tree-dwelling, cat-like animals. The digestive juices ferment the berries in a way that creates a smooth-tasting cup of coffee with little bitterness. Unfortunately, according to PETA, civets are force-fed the coffee beans while in confined in cages. By the time the cat-like creatures are released back in the wild, their health is in poor condition.

Some people have undeservedly been lost to history. I would person ally like to give thanks to good ol’ Pope Clement VIII (1536-1605). In the 1500s, coffee was imported from Arabia to Europe through the canals of Venice, Italy. While people in Christian Europe liked the caffeinated drink, it was greeted with suspicion. Some called it “Satan’s drink.” Monks even urged Pope Clement VIII to outlaw the “Muslim” drink. How many spoonfuls of sugar a day is OK? You can eat the carbs, but be careful since the equivalent of 12 teaspoons of sugar adds up quickly. For example: • 1 cup of milk = 2 teaspoons of sugar • 1 bowl of breakfast cereal with milk = 8 teaspoons of sugar • 1 cup of rice (cooked) = 9 teaspoons of sugar • 1 banana = 5 teaspoons of sugar • 1 baked potato (not including skin) = 7 teaspoons of sugar • 1 sweet potato = 8 teaspoons of sugar • 2 slices of bread = 4 teaspoons of sugar • 1 cup of strawberries = 2.5 teaspoons of sugar • 1/2 grapefruit = 2 teaspoons of sugar • 1 average soda/soft drink = 8 teaspoons of sugar
We need the equivalent of 12 teaspoons of sugar for brain energy, cell energy and muscle energy on average a day. Too much sugar poisons our body, causes diseases and ages our bodies too fast.
And guess what the sugar equivalent is of one large croissant or bagel? A whopping 12 teaspoons of sugar! That is all the sugar your body needs with no nutritional value for your cells’ health. (There’s that explanation point again.) In contrast, strawberries give you a big carbohydrate “bang for your nutritional buck.” You can eat lots of them with minimal sugar. Strawberries have lots of water in them.
Work it out with this friendly table: EVERY 20 Calories of Carbohydrate (Sugar) = 5 Grams of Carbohydrate (Sugar) = 1 Teaspoon of Sugar. If you haven’t memorized this simple conversion, please do it now and it will give you the means to staying lean for life! Your goal should be to eat no more than 12 teaspoons of sugar per day, or 60 grams of carbohydrates. This number is in sharp contrast to the average American who eats a whopping 60 to 70 teaspoons of sugar each and every day!

Officially February has just become my new favorite month, why February you may ask? Well, it used to be December and yes in my heart December is probably my favorite month, but this February Issue might just change my entire perspective on life. I’m quite overwhelmed with all the LOVE you will find within these pages. Pretty much all of our regular contributors articles contain an element of LOVE. Even our special friend Jock Wilson (sports writer extraordinaire) wrote his piece on LOVE. Marcy, Carla, Cynthia, Rebecca and Suzzane all in their different and unique ways focused their articles to include LOVE. If you are in need of a little LOVING, SELFLOVE or giving a little bit of LOVE, you have come to the right place. Now, for those of you not feeling a little LOVE right now, we also focused this Issue on FOOD. Now that’s something you do not have to believe in, everyone loves FOOD. There is even a couple articles’ for the special people out there that might be having a little trouble with the FOOD they are eating. A little article on all the preservatives in the food we eat and some special information on the frighteningly growing amount of people walking around with Celiac disease and not evening knowing they have it.

Broccoli has a strong, positive impact on our body’s detoxification system. The dynamic trio of nutrients glucoraphanin, gluconasturtiin and glucobrassicin neutralize and eliminate unwanted contaminants, leaving us feeling lighter and more able to cope.

e have always been big broccoli eaters in our house and I add a few florets of it into my juicer in the morning along with all the other healthy vegetables I use. You’re not going to believe this, but I have finally convinced my husband to start juicing with me! He sometimes moans and groans at the colour of the juice depending on which vegetables and fruits I’ve added, but he always finished his glass.
Broccoli contains high amounts of protein and is one of the richest vegetable sources of calcium, iron and magnesium, vitamin A and contains more vitamin C than an orange!
If you aren’t into juicing, you can still receive all those important nutrients by using vegetables in your side dishes or by making soup. We ended up with a bushel of broccoli last week with both of us buying a huge bag of it, so I sat down with my trusted friend (my computer) and started looking for the best broccoli soup recipe I could find. Oral contraceptives are proven to dramatically reduce levels of circulating B vitamins in the body. The B complex vitamins are required for a number of metabolic reactions in the body including fat and carbohydrate metabolism for proper energy production. Creamy Broccoli Lentil Soup
INGREDIENTS: 1 ½ tbsp. extra virgin olive oil 2 tsp crushed garlic ¾ cup chopped onion 1 large carrot, chopped 1 celery stalk, chopped Pinch of hot pepper flakes 1 tbsp dried basil 2 tbsp (30 mL) freshly squeezed lemon juice 3 cups chopped broccoli (1 large head) ¾ cup dried green lentils 4 cups low sodium chicken broth 2 tbsp grated parmesan 2 green onions, chopped for garnish Salt and pepper, to taste DIRECTIONS: Heat the olive oil in a large soup pot over medium heat. Add onions and garlic and sauté for 3 minutes. Add the carrots, celery and basil and cook for a few more minutes until the spices coat them nicely. Celiac Disease I have recently become more aware of Celiac Disease and feeding a family member who can only eat gluten-free food. I can’t even count how many times I have messed up by adding the simplest little ingredient that would make him sick. You have to check, then double check all the ingredients. Now, you would think this would be easy for me as I have had Angioedema since I was 18 and have been reading ingredients on labels for many, many years. As a matter of fact, there are very few “packaged” foods I can eat because of preservatives and other spices. If you have never been a label reader, you might be shocked at the long list of ingredients in even the simplest processed food item. In fact, even after reading a label and finding nothing I was allergic to, I have still put the package back on the shelf because the contents scared me!!
Here are some of the Facts of Celiac Disease: • Celiac disease is a genetic autoimmune disease that damages the villi of the small intestine and interferes with absorption of nutrients from food. • An estimated 1 in 133 Americans, or about 1% of the population, has celiac disease. • Celiac disease can affect men and women across all ages and races. • A 2012 report by the Mayo Clinic estimated that about 1.8 million Americans had celiac disease, a dangerous immune response to gluten. Of those, 1.4 million are unaware they have it, says Murray. (No such definitive study has been conducted north of the border, but Health Canada estimates some 300,000 people suffer from celiac disease in this country and many of them don’t know it.) It is estimated that 83% of Americans who

have celiac disease are undiagnosed or misdiagnosed with other conditions. • The 2007 Canadian Celiac Health Survey found it took, on average, 6-10 years that the average person waits to be correctly diagnosed. (Source: Daniel Leffler, MD, MS, The Celiac Center at Beth Israel Deaconness Medical Center) • 22% of celiac patients have an immediate family member (1st degree relative) who also has celiac. • That’s because celiac is a multi-symptom, multisystem disease, says Shelley Case, a registered dietitian from Regina and the author of Gluten-Free Diet: A Comprehensive Resource Guide (Case Nutrition Consulting, 2008). “Some people only present with anemia. They’re told to take iron supplements,” says Case. “Or they may be told they have chronic fatigue because their joints ache and they’re tired. But no one thinks of celiac.” Women in their 50s often have symptoms that doctors attribute to menopause. • Celiac disease can lead to a number of other disorders including infertility, reduced bone density, neurological disorders, some cancers, and other autoimmune diseases. • There are NO pharmaceutical cures for celiac disease. • About 47 percent of the respondents to the Canadian Celiac Health Survey reported experiencing a potential trigger within six months prior to symptom onset, including severe stress (23 percent), a severe gastrointestinal infection (nine percent), a pregnancy (eight percent) and a major surgery (seven percent). • A 100% gluten-free diet is the only existing treatment for celiac today • The celiac disease diagnosis rate may reach 50-60% by 2019, thanks to efforts to raise public awareness of celiac disease. Recipes GLUTEN-FREE BAKED CRISPY COCONUT CHICKEN
BUTTERNUT SQUASH FETTUCCINE CARBONARA
INGREDIENTS:
INGREDIENTS:
2 slices (totals about 3 oz.) gluten-free prosciutto 2 tbsp extra virgin olive oil One 2 lbs butternut squash peeled and chopped into ½” pieces. (Or buy a package already cleaned and cut. That saves the work if you’re pressed for time.) 1 tsp sage, minced into small pieces 1 small yellow onion (about 1 ½ in in diameter), sliced into small pieces 2 garlic cloves, minced Salt and pepper to taste 2 cups gluten-free chicken broth 12 oz gluten-free fettuccine or spaghetti ¼ cup fresh grated Italian cheese (Parmigianino Reggiano) 2 Tbsp coconut milk
DIRECTIONS:
Slice the prosciutto into ¼” pieces. Heat the oil in a skillet and then sauté the prosciutto bits until crisp. Use medium heat. Remove from skillet to a small dish, but save the pan. Add squash, onion and garlic to that pan (it should have the juices from the prosciutto). Cook until onion is translucent (about 5-6 minutes). Add salt and pepper to taste. Add broth and bring to a simmer. Lower heat and simmer veggies until soft (about 15 minutes). The liquid should have reduced by about half. When it’s fork-tender and breaking apart when pricked, shut heat. Set pan aside a few minutes to cool slightly. While it’s cooling, put up a pot of salted water for the pasta. Cook pasta when boiling. Pour squash mixture into a blender or small food processor and puree for a minute. Add the coconut milk and 1 tsp grated cheese. Puree again. It should be creamy and silky. Take the pan that you left aside but didn’t wash, and put the sauce in it. When the pasta is “al dente,” drain, but save about 1 cup of the liquid, and place strained pasta in the pan with the sauce. Place heat on low and using a wooden spoon, combine as you stir or toss. If it seems dry, add a tbsp of the reserved pasta water and stir in. When plating, sprinkle the prosciutto bits and sage all over top. Then sprinkle cheese on as well.

1 lb boneless skinless chicken breast 1 egg 1/4 cup coconut flour 1/4 cup brown rice flour 3 cups Gluten-Free Crispy Brown Rice Cereal 1/3 cup shredded coconut 1 tsp salt Gluten-free non-stick spray Apricot/Peach Dipping Sauce Ingredients: 3 tbsp apricot or peach jam or orange marmalade 1/4 tsp mustard powder 1/4 tsp ground ginger Pinch dried red chili flakes 2 tbsp vinegar 2 tsp coconut aminos or gluten-free tamari
DIRECTIONS:
Combine all the sauce ingredients. Depending on the jam you use, you may want to add more vinegar. Taste it and season it up to your taste. If you like it more or less spicy, adjust the amount of chili flakes. To make it more savory and less sweet, add a bit more coconut aminos or tamari. Don’t be afraid to play with the flavours that are what good cooks do! Just be sure to add ingredients in small amounts and continually taste as you go. Pre-heat the oven to 350°F. If you want chicken fingers, cut the chicken into strips, trying to keep the sizes as even as possible. Otherwise, butterfly each breast and then cut in half. Put the brown rice cereal in a food processor and process until it resembles coarse bread crumbs; these make a great substitute for panko bread crumbs. Clear some counter space. You will need 2 large plates, a wide bowl (not too big) and a sheet pan or cookie sheet fitted with an oven safe wire rack sprayed with canola oil spray. Beat the egg in the wide bowl with 2 tsp water. Leave the fork with the bowl. Put the coconut flour and brown rice flour on one of the plates, add 1/2 tsp of the salt and mix thoroughly. If you don’t have coconut flour, all brown rice is fine. Place the rice crumbs, shredded coconut and 1/2 tsp salt on the other plate and mix well with your fingers. Place the chicken on the flour plate and coat completely. Use your dry hand to sprinkle and press the flour into any crevices. Use your wet hand to transfer the chicken to the egg bowl. Coat with egg, flip with the fork. Then pick it up with the fork or your wet hand, let the excess egg drip off into the bowl and lay it onto the rice crumbs plate. Use your wet hand to flip. Then use your dry hand to press the chicken down. This will help the crumbs to adhere. Flip and press again. If there are any uncoated spots, use your dry hand to sprinkle and press the crumbs onto the chicken. Use your dry hand to transfer the coated breast to the wire rack. Repeat until all the chicken is coated. Bake for 10 minutes, then flip. Bake another 15 minutes or so. Times will vary depending on the thickness and size of your chicken pieces.
COLD THAI BROCCOLI SALAD 8 cups water 4 cups broccoli florets 1/4 cup Thai Kitchen Sweet Red Chili Sauce 1 tbsp lime juice 1/2 tsp salt 1/2 cup shredded carrot Bring water to boil in large saucepan. Add broccoli; cook 1 1/2 minutes or until tender-crisp. Rinse under cold water; drain well. Mix chili sauce, lime juice and salt in large bowl with wire whisk until well blended. Add broccoli and carrots, toss to coat well. Cover. Refrigerate at least 1 hour or until ready to serve.

come from the Mediterranean and I have been cultivated in Crete and Syria for over 5,000 years. I am very old and very wise and I have ancestors who lived in Spain 8,000 years ago. I also have ancient and legendary relatives who live in Asia and Africa. I am a citizen of North America; I came across the Atlantic Ocean along with my Spanish friends in the 1500’s and live in California and Mexico. Technically, I am a fruit of the Olea europea tree (an amazing tree that typically lives for hundreds of years) though most people think of me as a zesty vegetable. Some of us start off green and turn black when fully ripe, or start off green and remain green when fully ripe, while some of my family starts of black and remain black. We are a curious group! Now you are not going to believe this, because of my phytonutrient richness, I have documented health benefits that extend to most of your body systems. I am good for the cardiovascular system, respiratory system, nervous system, musculoskeletal system, immune system, inflammatory system, and digestive system because of my unusual antioxidant and anti-inflammatory nutrients. Dozens of health-protective nutrients have been identified in me, and recent studies have taken a very close look at all my relatives, the way we are processed, and changes that take place in our nutrients. In traditional herbal medicine practices, preparations from olives and olive leaves have often been used in treatment of inflammatory problems, including allergy-related inflammation. New research may help explain how we work to provide you with anti-inflammatory benefits, especially during circumstances involving allergies. Our extracts have now been shown to function as anti-histamines at a cellular level. By blocking special histamine receptors (called H1 receptors), unique components in olive extracts may help to lessen a cell’s histamine response. While commonly recognized as a high-fat food (about 80-85% of the calories in me come from fat, sorry!), we are not always appreciated for the type of fat we contain. In fact, we are unusual in our fat quality, because almost three-quarters of our fat is oleic acid, a monounsaturated fatty acid and, in addition, we provide a small amount of the essential fatty acid called linoleic acid, and a very small amount of alpha-linolenic acid, an omega-3 fatty acid. Recent research studies have also shown that the monounsaturated fat found in my little body (and olive oil) can help to decrease blood pressure. In short, my phytonutrient content makes me nothing short of astounding. Few high-fat foods offer such a diverse range of antioxidant and anti-inflammatory nutrients!! I’m so special; so very, very special! Now, you know that the Greeks are the highest consumers of my oil worldwide and they also have a significantly lower risk for heart disease. It’s estimated that my Greek friends consume an average of 24 liters (roughly 6 gallons) of olive oil a year! Rosemary Tapenade Recipe
This tapenade recipe is one of thousands of variations. The result is a savory and salty spread that can be served before the main course or alongside it. What you’ll need… 2 cups of olives 1 tablespoon capers 2 anchovy filets 2 tablespoons lemon juice 1/8 cup roasted tomatoes 3 cloves of garlic, 3 tablespoons minced fresh rosemary and thyme 2 tablespoons of olive oil (roughly). Assemble all of the ingredients (with the exception of the olive oil) and place them in a food processor or blender. Process until thoroughly mixed and the olives are broken into small, but definable chunks. Slowly add the olive oil. It’s easy to overdo it with the olive oil. It won’t be disastrous if you add too much; your mixture will just have excess oil around the edges. Voila! You can serve this with bread, crackers, or even on veggies or meats. It will keep in the fridge for about a week.
Whitefish with Olives
You can use sol, cod, haddock or your favourite whitefish. ⅓ cup olive oil ¼ cup pitted Kalamata olives ¼ cup pitted green olives 2 tbsp finely chopped parsley 1 tbsp finely chopped garlic 1 tbsp balsamic vinegar 2 tsp capers, rinsed 2 anchovy filets 1 tomato, cored and chopped Kosher salt and freshly ground black pepper, to taste 8 4-oz. fillets fish Combine 2 tbsp. oil, olives, parsley, garlic, vinegar, capers, anchovies, tomato, and salt and pepper in a food processor and pulse until finely chopped; set aside. Heat remaining oil in a 12″ skillet over medium-high heat. Working in batches, add fish; cook, turning once, until golden brown and cooked through, about 5 minutes. Top with tasty topping and serve.

In order to supply the tourist trains that were traveling to the Rockies, the CPR grew vegetables and flowers for the dining cars and the CPR hotel facilities. Although Strathmore and area was settled and developed by the CPR, by the middle 1950’s it was obvious that highway competition was eliminating the railway’s freight business. In 1981 the actual last rail was removed. But the CPR left Strathmore a living legacy – the irrigation system.

February is the month of LOVE but what does that mean? Most of us think we know something about love, but do we really? W hen you hear the word ‘love’, what comes to mind? Is it your roles as husband/wife, partner, lover, friend, boyfriend/ girlfriend, daughter/son and so on? As Spiritual Life Coaches, we are often asked these questions and in order to help individuals with their relationships, we first need to help them learn, grow and completely love themselves unconsciously. So what does love mean to you? Is it respect, trust, support, security, oneness, home, being alive, rescue, certainty, a sense of belonging? Do we need to love one-self before we can truly and completely love another? The answer is yes! Many of us celebrate February for the love of others, but in order to do so, we must first celebrate the love for ourselves. How do we do that? Well, here are some tips that will help you love yourself truly and unconsciously: 1. Can you look in a mirror and say how much you love yourself? Or do you get all choked up and start to cry? Loving oneself unconsciously is all about loving everything about yourself; the good, the bad and the ugly. Loving what you see on the outside as well as the inside. These affirmations will help in the healing of self-love: “I love, forgive, and approve of myself! I am love. I am loved! I am safe.” Do these affirmations every time you look in a mirror. At first it will be hard, but it does become easier as the negative vibrational energy is changing into a loving, positive one! 2. Do you have a hard time saying, “No” or “Yes” to others? Most of us want to be loved and accepted, so we subconsciously become people pleasers. We are not paying attention to what is the best for ourselves, so we allow others to use us. We need to know our boundaries, what we want from others and for ourselves. Making a list of these three things can bring clarity about what makes us happy, leading to self-approval and selftrust. Affirmations that will help: “I trust, love, and approve of all my feeling, emotions, and decisions. I know what is best for my whole self, higher self and my soul self.” 3. Do you worry about what others might think or say about you? Are you overly concerned about problems which really belong to someone else? Worry is a lower energy that can take hold of you, your emotions and life. Ultimately, this stops you from moving forward. You have to take a step back and realize this is happing. Ask yourself, “I am responsible for this situation and are these feelings mine?” If the answer is “yes”, then you need to do something about the situation. If the answer is “no”, then let it go and allow the universe and/or the other person
In a bad relationship? Start a new love affair and let us help! take ownership of the situation. This does not mean you do not care, understand, or support them; it just shows you are practicing self-love. Affirmations about letting go: “I am responsible for all of my feeling, action and decisions. I am divinely guided. I easily and naturally let go of anything that does not service me at this time. I lovingly let go. I am free to be me.” 4. Do you have a feeling about a situation, person or decision you need to make? This is known as instinct, intuition or sick incense. Everyone has this gift, but most of us do not use it to its full potential or we think it is a feeling that is not real. By not listening to our intuition, we are not acknowledging our self-guidance, self-love, and self-help we are giving to ourselves and to others. Practicing self-awareness of all senses will allow us to become more open, honest and loving to all of our needs, wants and desires. Affirmations to help with intuition: “I am divinely guided at all times. I am aware of all my feeling, my thoughts, my actions and my intentions. I love myself, my life, and I am free to be me. Divine provides all that I need, when I need it. I am safe” These are just a few ways to help love yourself completely, truly, unconsciously. We all need to be grateful and celebrate all kinds of love. Loving and caring for oneself and others are keys to a long healthy and happy life. Happy Valentine’s Day! Valentine’s Day Stories, Musings, A Little Adventure And Humour Suzanne is a native Calgarian that lived in Langdon for 15 years before transplanting to Chestermere in 2013. By day she is an accountant with a frustrated creative side that occasionally escapes in form of written musings, which is far more interesting than adding stuff up for people.
I have kind of a love/hate thing where Valentine’s Day is concerned. On one hand, I really like those cinnamon hearts and they are REALLY hard to find at “normal” times of the year. So if we have to tolerate red and white heart shaped everything, briefly, for the privilege of cinnamon hearts, it’s probably worth it. At least there’s no such thing as Valentine’s Day carols.

n the other hand… ugh. There’s a lot of pressure that comes with Valentine’s Day, not the least of which is remembering to do something “special” before you get to the last decent store on your commute home. And no, the corner gas station does not count as a decent store. Trust me.

As a kid in the younger grades, I can remember decorating some kind of container to collect Valentine’s in at school. We’d all bring a shoe box, or the teacher would have us craftily create some kind of big envelope thing, and we’d go mad with the construction paper and glue, trying to create something enticing to hold the cheesy valentines from our classmates. Pressure! Who had the best container decorations? Who got the most valentines? Who got the best valentine? Whose mom made cupcakes instead of buying lame cards with bad puns? Whose mom sent individually wrapped bags of cinnamon hearts to give out?!!! Unless you were THAT kid with THAT mom… pressure. It only gets worse as you get older. Enter the dating scene and Valentine’s Day is a nightmare – you either don’t have someone to be all sappy with and everyone you know does OR you have someone that doesn’t share the same sentiments that you do about the day. You think a great way to celebrate Valentine’s Day is a ginormous bag of cinnamon hearts; your sweetie is expecting dinner out on the town, flowers and some romantic token that better be worth more than $5 from the corner gas station. Worst. Valentine’s. Ever. Another painful dating scenario is to start dating someone shortly before Valentine’s Day, say early January. You dodged the Christmas bullet but lo! Lurking around the corner is the pitfall of Valentine’s Day. Is it too soon to make a fuss? Do you buy a gift? What about just going out for dinner and giving your date a card? But what kind of card? Sappy? Funny? Funny with a hint of sap? What if you do something Valentine’s-y and The Newsy Neighbour Magazine

your date doesn’t; do you look like a moron? Would you look like a bigger moron if you did nothing and they didn’t get the “let’s ignore it� memo? What if they don’t like cinnamon hearts? Is there any point to continuing on with this relationship? Pressure, pressure, pressure, PRESSURE!!! If you are smart, by the time you take the plunge and get married, you’ll have ironed out all of these relationship challenges with your sweetie and harmony, in the form of cinnamon hearts, will exist in your romantic world. If you are extra smart, you’ll get married on Valentine’s Day so you only have one romantic day to remember each year instead of the added burden of an anniversary. Because there are no cinnamon hearts to fix things when you forget your August anniversary. Trust me.

Hey, who ever made the rule that Valentine’s Day is just for your sweetie? Not that that’s a bad thing, but why not make this Valentine’s Day extra special for your whole family? Wouldn’t that be fun?
I
could use it as an excuse to get my family together for dinner, although they might already have plans with their own sweeties. But I could use the excuse that we have not all been together since Christmas!! I know Valentine's Day may not be the cozy, intimate event it was before you had kids, but you can certainly include them in celebrating this important day of love. Start a new tradition with your kids; it does not have to be extravagant at all. It just takes what you already have: lots of love and a little inspiration. Have a romantic and totally fun family dinner at home. Get your kids involved in creating a "restaurant" scene; you can even print out "menus". Then have everyone dress up in something special. I have included a great Valentine’s menu below. Give your Valentine's Day dinner a red theme, with red napkins

You’re Entrée: Stove Top Spinach Ravioli
If you're looking for an easy and delicious way to get your family to eat their vegetables, this is it! Since the spinach is cooked in bacon grease, you get that amazing flavour of bacon, but in vegetable form! Quick stove top ravioli with spinach, bacon and mozzarella, this savoury and decadent dish is perfect for Valentine’s... 1 bag frozen cheese ravioli 4 cups fresh spinach 8 pieces of bacon 1/3 cup mozzarella Liberal dashes of salt and pepper Prepare the ravioli according to the package instructions. Rinse and set aside. Heat a medium pan over medium-high heat. Add the bacon and cook until crispy, about 5 - 6 minutes. Remove the bacon from the pan. Add the spinach to the bacon grease and cook it until it is just wilted, about 3 - 4 minutes. Mix the spinach with the ravioli and top with the bacon and cheese. Serve it warm!
You’re Dessert: Vanilla and Dark Chocolate Ice Cream
Transform that humdrum carton of vanilla ice cream into a gourmet Valentine's Day treat by folding in chunks of premium dark chocolate and honey roasted peanuts. 2 cups vanilla bean ice cream, softened 2 ounces dark chocolate, coarsely chopped 1/2 cup honey roasted peanuts, coarsely chopped Place ice cream in a large bowl. Add chocolate and peanuts and fold into ice cream. Keep ice cream in freezer until ready to serve.
Served with: Chewy Chocolate Chip Pudding Cookies
These soft and chewy cookies will soon become a family favorite! 1 cup butter, softened 3/4 cup brown sugar 1/4 cup sugar 1 (3-ounce) package instant chocolate pudding mix 1 teaspoon vanilla 2-1/4 cups flour 1 teaspoon baking soda 2 cups chocolate chips 1 cup chopped nuts Cream butter, sugar, brown sugar, pudding mix, eggs and vanilla then in a separate bowl, combine flour and baking soda. Blend into egg mixture. Fold in chocolate chips and nuts. Drop by teaspoon onto a greased cookie sheet and bake at 350°F for 8-10 minutes or until lightly browned. Focus on the family on Valentine's Day; we aren’t the young single crazy people we use to be, now you have your children to consider! Even if Valentine’s Day is considered the time to be alone with your sweetie, include you family in on the fun and love, no matter what you do. And while gifts aren't necessary, that little note or trinket you give your daughter or son may be something they keep forever as a reminder of how much you love them.

Family Day 2015 “Unplugged” Article by: 5 for Life An Early Childhood Development Coalition
Monday, February 16th is a day to reconnect with family.
These days, connecting with people is easier than ever and many people are constantly doing so using electronic devices. It is great to be able to talk to people around world; however, all of our screen time is having side effects for our society. It is not uncommon to see small children playing games or watching movies on their parents’ phones or tablets, and while some of these may be educational, the American Academy of Pediatrics has recently released an article saying children under the age of two should not have any screen time. Many other experts in pediatric health are agreeing that screens should not substitute human interaction in this crucial stage of development. Furthermore, they, along with the Canadian Paediatric Society, discourage more than one to two hours of screen time for children over the age of two. For Family Day 2015, we are encouraging families to go “unplugged”, and that includes parents. Not only should parents be setting an example for their kids, but researchers are starting to look into the effects of parental device distraction on the development of their children. It is not hard to see how distracted parents could be effecting development when we know that personal interaction and attachment play a large role for all areas of children’s development. There will be many events hap-

pening around town to help you make memories and connect with your family. At the Chestermere Community Playschool we help children grow through teaching that is play-based but also curriculum guided. We also have regular ice-skating time, daily gym time and monthly visits from cool special guests like scientists, dentists and firefighters! Don’t toss those old potatoes or celery scraps. Put them to work and grow a kitchen garden from leftover bits and pieces. Instead of discarding the base of these leafy plants, put them in a bowl of shallow water for the leaves to regrow. Place the bowl in a location with ample sunlight and occasionally mist the leaves with water. After a few days, roots and new leaves will appear and you can transplant your leafy veggie into soil.
Have some extra mung beans or wheat berries? Simply soak a few tablespoons of them in a jar or container overnight. The next day, drain the water and rinse the beans and then put them back in the container and cover it with a towel. Rinse the beans the next day and recover. Beans will likely sprout in just a day or two, but keep rinsing and recovering the beans until sprouts have reached the desired size.
Ginger
Take a section of the ginger root and plant it in soil where it will get indirect sunlight. It grows well both indoors and outdoors. When you need ginger for a recipe, simply pull it up, harvest some of the root and then replant it.
Green onions
Stick the white root base into a cup of water and place it somewhere it’ll get plenty of sunlight. Change out the water every few days, and as the onions grow, simply trim off what you need and let the plant regrow again.
Garlic
If you have extra garlic cloves lying around, plant them in soil in full sun. When a tiny stalk sprouts from the bulb, cut it off and give the garlic several weeks to fatten up.
Potatoes
When your potatoes start to grow eyes, cut them into 2-inch pieces that contain eyes. Let them sit out overnight so the exposed sections can dry out, and then plant them in soil about 4 inches deep, eyes facing up.
Pineapple
Twist the top off the fruit and peel back the bottom leaves of the base. Once several layers of the base are exposed, cut off the tip to get rid of the excess fruit. Poke a few toothpicks into the pineapple top and use them to suspend the fruit in a container of water. Keep the container in a sunny area, and change the water out every few days, keeping it filled to just above the peeled base of the top. Roots will appear in about a week, and once they’re fully formed, transfer the plant to soil. Keep the plant inside unless you live in a warm climate.

It Takes a Village Any number of complex social issues can leave children and youth unable to live at home. Enter Nancy and her husband Mark who have been foster parents for the past 14 years, having cared for over 65 children in their home. Children in their care have stayed for a couple of days to a couple of years depending on the circumstances, with Nancy and Mark providing each child with the support they need until they are able to return home, are adopted into another family, or an alternative permanency plan is in place. They have even been fortunate enough to see a few youth graduate high school while in their care; a significant milestone they were proud to be a part of. These experiences have proved rewarding not just for Nancy and Mark but for their whole family. Their youngest daughter, now an adult herself, shared with Nancy that growing up with foster children has taught her to be more understanding, patient, as well as accepting. “Each of these children have become a member of our family” says Nancy and to this day they continue to have a number of their foster children come back to visit as adults. Over the years, Nancy’s philosophy and reasons for wanting to help have remained the same: “Mark and I believe it takes a village to raise a child and we just want to do our part.” Time and again, Nancy has seen that the more individuals who support a child and contribute healthy experiences, the more these children have thrived, preparing them to make a positive impact on the next generation. Even though the youth and children in her care have come and gone, Nancy feels that the connections formed last a lifetime. “I have often said that when a child leaves, they leave a bit of themselves with us, and take a bit of us with them.” Now that seems like a fair trade. Gibraltar is an amazing co-mingling of past, present and future, and the list of things that a visit to Gibraltar should take in is as long as your arm in reality, but there are some things that you just can’t miss.
I
’m sure most of you have heard of the expression people sometimes use; “Like the Rock of Gibraltar” to talk about something that is so solid and permanent that it will never break or be destroyed. Have you?
As small as the area of Gibraltar is, it would literally take you a week to see all that you can possibly see so you’re quite likely going to have to pick and choose among what interests you the most if your time there is limited. Begin by making your way to the base station of the Cable Car so that you can take a ride to the top and see a little of everything. There is nothing like going straight to the top. The panorama surrounds you on all sides, views of Spain, Africa, the Mediterranean and the Atlantic Ocean, and will quite literally take your breath away with the beauty of it all. Also, make it a point to go out on a whale watching or dolphin watching excursion for the chance to view these fantastic creatures of the deep is one that should not be missed! It is a marvel in and of itself that this is among the most prolific routes for whales and the best place to see whales and dolphins in all of Europe. Gibraltar isn’t just history or shopping or outdoor sports, or even beaches. In reality, it’s all of the above and the best of nearly every world. It’s February! The Super Bowl has been awarded and Valentine’s Day is fast approaching. If you are a hockey fan, you have already fallen in love with the Calgary Flames. The Flames have captured the imagination of even the fringe sports fan as a hardworking, over achieving, great skating team that continues to defy logic. I know my teenage daughter thinks Sean Monahan is pretty hot!

owever, this article is not about hockey. It’s about love and lust and how sport has played a major role in bringing couples together. Remember how the dating website “Tinder” was the big story last year in Sochi? Tinder-gate was not earth shattering news. Why wouldn’t the world’s best athletes, in their physical prime, with endorphins to burn and calories to kill, confined to small living quarters not be interested in extracurricular activity? Sex at the Olympics? Who knew? Apparently there were so many condoms found on the roofs of the Olympic Residences in Seoul in 1988, that the Olympic Association banned outdoor sex. At the 1992 Games in Barcelona, condoms were handed out to the athletes for the first time to encourage safe sex. 70,000 condoms were not enough in Sydney in 2000, so organizers ordered 20,000 more. Over 100,000 condoms were handed out to athletes in Beijing in 2008. It’s only natural that athletes would be attracted to each other and since we are celebrating Valentine’s Day this month, I wanted to highlight my top power couples in the world of sport.

Olympic Champion Lindsey Vonn is probably involved in the most high profile sports relationship at the moment... One of my favourite Olympic couples is Dr. Randy Gregg and Kathy Voigt. She was a speed skater, he was a hockey player and they met at the 1980 Olympics in Lake Placid. Gregg also played in the 1988 Winter Olympics in Calgary and he went on to win 5 Stanley Cup Championships with the Edmonton Oilers. The Gregg’s have four children and two of them (Jamie and Jessica) have competed in the Olympics following in their mom’s speed skates. Following in his dad’s footsteps, Jamie is now married to speed skating Olympian Danielle Wotherspoon. Danielle is the sister of speed skating legend Jeremy Wotherspoon who is also married to Olympic speed skater Kim Weger. The Yellow Bellied Sea Snake is one of the most beautiful snakes in the world. However, it is as lethal as many. What makes this one stand out? First of all, it’s normally found in the sea, which is different from most snakes. It hunts at all times of the day, so you’ll find it out and about a lot. They usually never attack humans unless you happen to get too close. Now, the coolest part of this snake is what it packs inside. The poison is obviously lethal, but the way it can kill you is as horrible a way to go as possible. The venom is similar to that of cobras, but more concentrated and more toxic. It’s said that one drop of their venom can kill three grown men. The toxin basically attacks your system like all other poisonous snakes’ venom does. Yet, there is a twist. It attacks the respiratory system, and you can have an issue with paralysis. Worst of all, the venom attacks all the muscles, too. You can barely move, and you’re in a ton of pain, as well. You wish you were dead. This part of it does not kick in for about 30 minutes to an hour, depending on size. However, it’s one of the roughest ways to die imaginable. You will end up experiencing the aches and pains even with the antivenom in your system, no matter how quickly you get it in. It’s just your body’s way of responding to it. CPR is essential to even be kept alive until you can get the antivenom injected. If you don’t, a person can possibly fade out, not only from the pain and shock of it all, but from the issues caused with the lungs. CPR also assists the heart, so the added

People complained about all of this for months afterward, too. OUCH! The yellowbelly is the most widely distributed sea snake and is capable of living and giving birth entirely in the open sea (it is totally pelagic), being found in all coastal waters around the rim of the Pacific Ocean except Alaska south to southern California, and in the coastal waters of the Indian Ocean from the Persian Gulf eastwards. My Favourite Fabulous Fantastic and Fun Stuff
Kimchi make this stuff and they are all a little different. This is the recipe I found to be the easiest and most uncomplicated – some of them sound like science projects! This recipe is not intimidating at all.
I made some Kimchi last year and I was actually surprised at how Fabulous and Fantastic it turned out, and really not that hard to make!
How to Make Kimchi
K
imchi is a traditional Korean dish and has been around since the 7th century. Health Magazine rated it as one of the Top 5 World’s Healthiest Foods. There are many different varieties of Kimchi, but the overall texture and taste of Kimchi can be described as crunchy, sweet, tangy, and, depending on how much spices are added into the dish itself, it can give your taste buds a serious workout. Kimchi that’s made with cabbage is loaded with indole-3-carbinol (I3C), a compound that is well recognized as a powerful cancer-fighting compound. Numerous studies indicate that I3C can offer protection against many different types of cancer and may even stop the growth of existing tumours. It is low in calories and high in dietary fibre and it’s fabulously high in Vitamins A, B, and C. Even if you have never attempted to make Kimchi, there is no time like the present! I know it sounds a little intimidating, but it is actually quite an easy process. It’s basically cutting up vegetables and cabbage, stuffing it into jars and letting it ferment. The process takes a little time but in the end, you will be so proud of yourself. Yes, you can actually make one of the Top 5 Healthiest Foods in the World – how about that?! To let you know, there are about 10,000 different recipes to

4 tablespoons of sea salt or kosher salt 4 cups of water 1.5 pounds Napa cabbage 1 daikon radish, thinly sliced in half moons 3 carrots 1 medium yellow onion 4 garlic cloves 2-inch knob of ginger 1 - 2 tablespoons red chili pepper flakes 4 green onions, chopped 3 tablespoons fish sauce Mix brine from the sea salt and water. Stir well to thoroughly dissolve salt. Coarsely chop cabbage, slice radish and carrots and let vegetables soak in brine, covered by a plate or other weight to keep the vegetables submerged. Soak for at least 5 hours, and up to 24 hours. Prepare spices: dice the onion and garlic. Use a food processor to process onion, garlic, ginger and fish sauce into a paste. Mix in the red pepper flakes and green onions. Drain brine off of vegetables, reserving brine. Taste vegetables for saltiness. You want them to taste decidedly salt, but not surprisingly so. If they are too salty, rinse them with water. If you cannot taste salt, sprinkle the vegetables with a couple of teaspoons of salt and mix. Mix the vegetables thoroughly The Newsy Neighbour Magazine

If necessary, add a little of the reserved vegetable-soaking brine to submerge the vegetables. Weigh the vegetables down with a smaller jar if necessary (fill the smaller jar with liquid to keep everything weighted down). Cover the jar with a towel to keep flies and dust out. Ferment in your kitchen or other warm place. Taste the kimchi every day and check it to make sure it is still submerged under the brine. Depending on your tastes and the temperature of where it is stored, the kimchi can be ready in as soon as a few days or a few weeks. The fermentation process generally takes longer in cool weather and shorter in warm weather. When your kimchi tastes ripe (sour and tangy), move it to the refrigerator and put on the lid. It can last for several months, if not longer, in the fridge as long as it still has some brine in the jar. VERY important! Be sure to ferment your kimchi in a glass jar or glazed ceramic crock. Since the brine and vegetables are heavily salted, it is important to avoid using metal or plastic. Do NOT use iodized salt or any product with preservatives in your kimchi. Iodine is antimicrobial and will prevent the kimchi from fermenting. You do NOT want air touching your vegetables. It is vital to keep everything submerged under the brine. As long as everything is submerged under liquid, mould will not develop. After your vegetables have soaked in the brine, they will lose a lot of moisture and will decrease in volume. Depending on the size of your jar, some of the brine might flow over as the kimchi ferments so put a glass plate under the jar as it sits. ALSO, Things to Look Out For Mushy Kimchi is bad Kimchi - Fermenting too long at room
temperature can soften the vegetables and cause them to breakdown. Mould – If you see any mould during the aging process of Kimchi, immediately throw it out. Taste – If your Kimchi tastes like doo-doo, you know you’re in trouble. The Kimchi most likely has bacteria growing and can be very harmful if consumed! Again, throw it out immediately. I’m not an expert and I have only made it once, but Aleesha (our famous designer) ranted and raved about how much she loved it. So trust me – if I can make Kimchi, so can you! Crazy Volunteer Project of the Month The Group of Men Who Volunteered to Eat Poisoned Food to Protect American Consumers from Dangerous Chemical Additives In 1903, Harvey Wiley, a chemist with the Department of Agriculture, was convinced that the preservatives and dyes added to foods were dangerous. But he needed proof. So Wiley designed a research experiment that would expose healthy adults to high levels of the very chemicals and dyes that he was seeking to eliminate from the American diet. He selected a group of 12 young men who volunteered to eat a balanced diet containing a test chemical. In Wiley’s view, the best animal to test toxicity in humans was a human. The brave men would order, and then chemicals would be added to their food.
Wiley would observe the men and make notes describing the effects of each meal on his volunteers. One reads, “No. 5 was nauseated and sick during the night of February 1 and vomited all of his dinner. He did not eat breakfast on February 2.” Wiley’s experiment attracted the attention of the press, who dubbed his team of young volunteers the “Poison Squad.” Although some volunteers experienced lasting harm to their health due to the experiments, the notoriety of the Poison Squad furthered Wiley’s cause and was instrumental in helping pass the Pure Food and Drug Act in 1906. www.oddee.com

Happy Gang Society Of Strathmore

A review of the year 2014, which passed very quickly. The Happy Gang 50+ Society increased their membership to over 150. Many volunteers got behind the executive and provided new card games and other activities for the Members. There is something for everyone from Pool (3 tables), Yoga, Walking and Line Dancing. There is always room for one or two more. Cards include Rummikube, played with cubes or tiles instead of cards – very fun. Bridge is very popular, as is Whist, Canasta and Crib. Mah Jong, the Chinese Version, is also played with tiles. Darts has become very popular. There are 3 boards and room for more players. April found us busy pricing, sorting, and displaying all the items people brought to our Garage and Bake sale. It was so rewarding that we did it again in October. Thanks to our many volunteers. I think the plan is to do it all over again this April, so start saving your best unwanted articles. During Seniors Week in June, we were kept busy with an afternoon social. The Bridge group sponsored a tournament and so did the crib players. Both were very successful. Our Christmas Social was the highlight of 2014. LaRue catered to over 90 members & guests. Rozella & Friends entertained everyone with Christmas and other lively music. Everyone had a chance to visit with each other and meet new people. It was a fun night. Come to the Happy Gang Centre at 85 Lakeside Blvd to join in the activities. We are located in the Lambert Centre by the Library. For further information, please contact 403 934 2676. I lost a special friend today the kind you can’t replace, and looking at her empty bed I still can see her face. I see the endless energy the sparkling puppy eyes; Not the tired, fragile friend I had to bid goodbye. I know she’s in a special place our Lord has for such friends, Where meadows, fields & flowers help make them strong and whole again. I remember how she’d run to me to play her favourite puppy game, And how her ears would perk right up When she heard me call her name. But as those precious years went by And we both aged and grew, I’d find her often slowing down But we had still so much to do. I’ve noticed in the recent times Her ears were not as sharp. Where is that running ball of fur? The years have shown their mark.

Hoping to keep the peace, Nigel ate lunch with the rest of the family, and even lingered for some pleasant after-lunch chat before retiring to the lounge to turn on the television. Some minutes later, Janet looked in to see how he was and even graciously brought a cold beer for Nigel. She smiled, kissed him on the cheek and asked what the score was. Nigel told her it was half time and that the score was still 0-0. ‘See?’ Janet said happily, ‘You didn’t miss a thing.’

have this burning passion to inspire each of us to seek health and balance – and I have this opportunity to communicate to the upcoming generation some of the tools that I am learning on my own journey. Jeepers, if they only learn now the immense power there is in breath! The best part is, with children, I get to try to communicate it to them in a language that they will not only understand, but relate to, which in short speak means I get to play. I do have the best job. I am also blessed to be the mother of two young boys that are rapidly maturing into young men. I am often in awe of these beings now exploring becoming independent. They are making more and more decisions about the way they spend their time, the way they treat the world around them, and the lifestyle choices that will shape them in so many ways. I often hear and see myself in them, my influence upon the choices they make. Sometimes I am pleased and proud, and other times my emotions move to the other end of the spectrum... on occasion it would appear that my less appealing natures have been impressed upon them more than I would like. of my own evolving into independent young men, the more I am impressed upon something we must do for our children. A gift, but also a responsibility. Self-love. It is more important now, more than any other time in history, to teach our children to love themselves. It is selflove that will most influence the type of person our children become. It will be self-love that will give our children the confidence that this modern era will demand. Self-love will empower compassion, fuel passions amidst discouragement, and encourage them to strive for balance and health in body, mind and spirit. The tricky part, however, is that self-love is something that we do not effectively teach our children. It is only effectively communicated in one way: learning it ourselves, and putting it into practice.
The truth is, our kids are looking to us all the time. If we want to see our children become the best they can be, to not only accept themselves but to love themselves wholeheartedly, then it is our responsibility to do for ourselves first. In this case, the “Do as I say, not as I do” will not pass. If you do not love yourself right now, that does not mean you won’t, or can’t. There are so many ways to start down the path to self acceptance. And the children are watching. As we learn about caring for our physical bodies and develop the discipline to keep it healthy, our children will watch our lifestyle choices and hear our words – and they will see for themselves the how and why. As we learn to love our self in spite of, or perhaps because of, the ways we are different from others, they will learn that their own uniqueness is beautiful and be content. As you learn to turn the tide of thoughts from thoughts of negativity, stress and worry to thoughts of self awareness, peace and personal development, so will they. I think, in the end, my nerves with children has more to do with my fear that they will reflect what they see in me. So I will continue to improve my love for myself as I am right now – and trust that as I learn to observe and accept myself, make better choices as I learn from mistakes, and love with myself more my self-love will in turn teach my own children, and those I am blessed to teach, to love themselves more too. Orthodontic treatment is commonly used during teenage years to correct alignment concerns – moving teeth to create a preferred arch form and ensuring that top teeth meet and interdigitate optimally with lower teeth. But for many individuals, orthodontic treatment was not an option during younger years, so living with an imbalanced bite became the norm, until the repetitive effects of muscle tension and nerve sensitivity forces patients to seek dental treatment as a solution.

Clenching and Grinding of teeth can be a huge trigger for headaches. The force that is exerted during a bout of clenching causes facial muscles to tighten, creating pressure and pain around the temples, top and back of head. Interestingly, the act of clenching and grinding is often the bodies way of trying to create balance to a bad bite, as the brain detects minute discrepancies and high spots and tries to fix them by grinding away at interferences. For example; if you are missing teeth on one side of your mouth, or lack the essential guidance at the front of the mouth due to worn and shortened teeth, an imbalance is created and results in muscle tension, nerve sensitivity and, of course, headaches. Misaligned Teeth Are a Pain T he intricate network of nerves, muscles, tendons and ligaments that surround the jaw joint and travel around the skull and lower jaw are often over taxed due to skeletal abnormalities and bite issues. Often, the most dominant and consistent symptom of bite dysfunction is recurring headaches that don’t respond to over-thecounter medication, leaving a patient feeling physically exhausted and emotionally drained. love drinking tea more than coffee. Tea is soothing and there are so many different choices. Did you know that black tea, green tea and white tea all come from the same plant? Harvesting, processing and even making tea has evolved for thousands of years and considered a high art form. Teas are rich in antioxidants, including catechins. Numerous studies have shown tea to decrease cancer risks, aid metabolic processes for weight loss, and support heart health as well as longevity. Tea has shaped cultures as it has fueled wars. in the world. Real tea is derived from a particular plant (Camellia sinensis) and includes only four varieties: green, black, white, and oolong. Anything else (like herbal “tea”) is an infusion of a different plant and isn’t technically tea. • Tea can boost exercise endurance. Scientists have found that the catechins (antioxidants) in green tea extract increase the body’s ability to burn fat as fuel, which accounts for improved muscle endurance. • Tea is hydrating to the body (even despite the caffeine!). • The antioxidants in tea might help protect against a boatload of cancers, including breast, colon, colorectal, skin, lung, esophagus, stomach, small intestine, pancreas, liver, ovarian, prostate and oral cancers. But don’t rely solely on tea to keep a healthy body — tea is not a miracle cure, after all. While more studies than not suggest that tea has cancer-fighting benefits, the current research is mixed. • Tea helps fight free radicals. Tea is high in oxygen radical absorbance capacity (“ORAC” to its friends), which is a fancy way of saying that it helps destroy free radicals (which can damage DNA) in the body. While our bodies are designed to fight free radicals on their own, they’re not 100 percent effective — and since damage from these radical oxygen ninjas has been linked to cancer, heart disease and neurological degeneration, we’ll take all the help we can get. • Drinking tea is linked with a lower risk of Parkinson’s disease. When considered with other factors like smoking, physical activity, age and body mass index, regular tea drinking was associated with a lowered risk of Parkinson’s disease in both men and women. • Tea could keep waist circumference in check. In one study, participants who regularly consumed hot tea had lower waist circumference and lower BMI than non-consuming participants. Scientists speculate that regular tea drinking lowers the risk of metabolic syndrome (which increases the risk of diabetes, artery disease and stroke), although it’s important to remember that correlation does not equal causation. • Tea might provide protection from ultraviolet rays. We know it’s important to limit exposure to UV rays, and we all know what it’s like to feel the burn. The good news is that green tea may act as a back-up sunscreen. • Regular tea drinking might also counteract some of the negative effects of smoking and might even lessen the risk of lung cancer (good news, obviously, but not a justification for cigarettes). • Tea could be beneficial to people with Type 2 diabetes. Studies suggest that compounds in green tea could help diabetics better process sugars. • Tea can help the body recover from radiation. One study found that tea helped protect against cellular degeneration upon exposure to radiation, while another found that tea can help skin bounce back post exposure. • Tea might be an effective agent in the prevention and treatment of neurological diseases, especially degenerative diseases (think Alzheimer’s). While many factors influence brain health, polyphenols in green tea may help maintain the parts of the brain that regulate learning and memory. Though most research on tea is highly positive, it’s not all definitive — so keep these caveats in mind before stocking up on gallons of the stuff. They say your body needs to be hydrated all day long and what better way of doing this is to be drinking tea?

What Are You Eating? Monosodium glutamate (MSG) is a flavour enhancer commonly added to Chinese food, canned vegetables, soups and processed meats. Although the Food and Drug Administration (FDA) has classified MSG as a food ingredient that’s “generally recognized as safe,” the use of MSG remains controversial. For this reason, when MSG is added to food, the FDA requires that it be listed on the label.

SG has been used as a food additive for decades. Over the years, the FDA has received many anecdotal reports of adverse reactions to foods containing MSG. These reactions — known as MSG symptom complex — include: headache, flushing, chest pain, nausea, rapid, fluttering heartbeats, facial pressure or tightness and allergic reactions such as hives. Order from any number of Chinese takeout restaurants these days, and you might notice that many menus boast “NO ADDED MSG.” The label can also be found in supermarket aisles on snack foods or on packaged seasonings. The labels are meant to ease consumers’ worries, because MSG, which is used as a flavour enhancer, has for decades been popularly linked to some of the health problems listed above. It’s even been considered a factor in infantile obesity.

I, for one, absolutely 100% disagree with them – I know for a fact that every single time I eat food with MSG (monosodium glutamate) I have an allergic reaction, and most of the time it is very severe with my face or throat swelling (perhaps they should test it on me)! Well, it seems we are still getting it in our food even if the label does not include the words monosodium glutamate; have you ever heard of autolyzed yeast and hydrolyzed protein? If you don’t read food labels, the chances are you have not. “Since the 1970s, MSG has sidled back onto supermarket shelves, under assumed names: mono-

potassium glutamate and vegetable protein extract, hydrolyzed proteins, yeast extracts, protein concentrates and other additives that are not labeled as MSG but, according to nutritionists and the Department of Agriculture, are essentially the same thing; synthetically produced glutamates. The whey protein concentrate and liquid amino that many people buy at health food stores are also, essentially, pure glutamate. According to U.S.D.A. guidelines, “labeling is required when MSG is added as a direct ingredient.” But other glutamates — the hydrolyzed proteins, the autolyzed yeasts and the protein concentrates, which the USDA acknowledges are related to MSG — must be identified under their own names.” If the USDA regards them as the same thing, then that should set off your alarm bells. The howstuffworks.com website states that not everyone will not be affected the same by MSG, and perhaps some will experience no problems at all. The uncertain and somewhat frightening aspect of this compound is that it can cause a variety of symptoms over time that can lead to much greater, more permanent problems. It could also be argued that small amounts in any one food will not be a problem, but if small amounts are in several common foods that are consumed every day, the problem moves to a much graver scale. As with anything, there will always be two sides to the argument. My question is, then: why are you seeing (finally) so many producers stating “NO MSG” in bold bright letters to the front of their packaging? That undoubtedly says it all for me! When natural sources such as sunlight and vitamin D become scarce, we need to get creative and look for other natural sources to boost our immunity and energy. I recently came across a health drink supplement that is made from Wolfberry’s and infused with essential oils.
I love Canada. I am also particularly biased when I say
that I also love Alberta. We are blessed here for so many reasons. To name a few: we have no PST, we are the richest province in Canada, we have Banff, we have fresh water at our disposal and we experience four seasons. I can find joy in each and every one of our seasons, my favourite being summer, then spring (baby animals and it means summer is coming), fall for its beauty, and then winter. Although winter is last, I can still find little things to appreciate about this season. For example, a good snow day where I have the chance to hunker down for the day in my cozy little house with my family and have an excuse to eat popcorn and watch movies all day! I can also appreciate winter activities such as outdoor skating and hot chocolate and tobogganing. What I struggle with is the fact that our seasons are not all created equally. Summer is way too short and winter is way too long. The darkness is long, the months are long, kids and snowsuits and carseats are a pain and it’s easy – too easy – to hide inside in comfy sweatshirts and jogging pants, baking and cooking delicious “comfort” food. I recently heard of a term called “Blue Monday.” This is the first year I have heard this term and I guess someone decided it is supposed to the day of the year when people feel the saddest. Now I am not sure if it is possible to pinpoint one specific day where the majority

of the population is the saddest, but I do think there is something to be said about the aftermath of Christmas bills, longest nights of the year, frigid temperatures, and reduced activity that can cause some individuals to struggle this time of year. I know for myself, February tends to be a long month despite being the shortest. I find my motivation to find active and stimulating activities inside for myself and my family begins to wane and I start to get antsy for sunshine and summertime. Some may refer to this as SAD, Seasonal Affective Disorder. I take mental health very seriously and I certainly am not qualified in any way to self-diagnose myself or anyone else as to what they are feeling during the long dreary months of winter, but I do know that around this time I begin to resent winter. I resent that it is more effort to stay active and that winter means colds and flus take up a large part of our energy. Having an immune system working overtime for months on end can be taxing on a body. Our bodies are doing their best to stay strong and healthy, and sometimes one can struggle to continue to nourish and support our natural systems due to these external factors. Therefore, it may become necessary to find an outside source to give us a boost. Because when our energy feels good, our mood feels good. OK, where am I going with this?? Essential oils, of course! The Fork in the Road
Health
Often we give up on our healthy behaviours because we aren’t seeing immediate results. We feel our efforts are futile and ineffective. Even though you may not see obvious change right away, it is happening. T he beginning of a new year is often accompanied by health and fitness goals…a fresh start to “getting back on track”. Our eagerness can wain within a few weeks however, as we return to our old ways. It is always interesting how easy it is to drop the healthy habits that move us in a positive direction and settle in the comfort of inactivity and unhealthy eating. If this sounds familiar, it may be helpful to remember that health is a process. Just as one unhealthy fast food meal doesn’t create an unhealthy state, one healthy meal or workout is not going to have a significant transformation in the right direction either. Both health and disease are a dynamic processes. Often we give up on our healthy behaviours because we aren’t seeing immediate results. We feel our efforts are futile and ineffective. Even though you may not see obvious change right away, it is happening. It is the repetition and daily efforts that make the biggest change over time...a snowball that begins with one snowflake, and each individual snowflake contributes. If focusing on the long term outcome is daunting or discouraging, focus on what you can do today, what you can do this hour, or what you can do in this moment. Breathe, and trust that every decision we make in regards to our health – from what we eat, to the workout we choose to skip – is moving us towards health or away from it. Rather than beat yourself up for what you haven’t done, decide in this moment what is most important to you. Over time this will become easier, and the rare times you take a step backward, it will have less of an impact on the overall picture. You are the person with the most influence over your own health, but this does not mean you have to do it alone. Support can be in the form of friends or family to help keep us accountable, or professionals who can simplify strategies and monitor

This is the colour surrounding the heart chakra, which is the fourth and middle chakra situated in the heart and lung area of our chest. It is the bridge between the practical side of the first three chakras and the top or upper three spiritual chakras. I LOVE the colour green. It speaks of new growth, new beginnings, and it’s the colour of our evergreen trees. It is the place to be in. We are generally very head-centered people. We think about everything. We work it out in our heads but forget to move into our hearts. The affirmations of our heart center say it well. “I give love,” and “I receive love.” We generally are very good about giving, but in receiving freely we find it a little difficult. Sometimes we don’t feel deserving. Enjoy those small gifts your world gives you every day. Treat yourself to flowers. Appreciate how wonderful you are! “I forgive others” or “I forgive myself” – Which of these is harder for you? If we have a forgiving heart, it brings more joy and contentment to us. Be gentle with yourself.
I have a sweater that has “Trust Your Heart” written across the front. It reminds me when I am over-thinking something to move into my heart center and see if I can get a better perspective. A clothes dryer, (electric or gas), works by taking surrounding air, heating it, then removes moisture from the clothes by moving the hot air through them and the lint screen, then exhausts it outside. The down side (at least in Alberta), is that the warm, humidified air from our residence is further warmed and humidified only to be put outside. It’s energy dollars making nice clouds of steam on a winter night. Government energy guidelines aside, dryers really haven’t changed dramatically over the years. The dryer is not done yet, however; the warm, humid exhaust air contains lint, (fibres, etc.), from our clothes. The lint is wet and loves to collect in the venting, causing air flow restrictions. It can even freeze in the venting or exhaust fixture, causing water/ice buildup and no air flow. Then the lint screen; it will block up and further restrict air flow. All this air flow restriction means that the dryer has to run longer and hotter to dry a load. This costs even more money, increases the probability of repairs and possibly even a fire hazard from lint buildup. Yes, you can find some methods of heat recovery from your dryer but beware; some are against ‘code’ for very important safety reasons.

know this is true in my house – or was, having three daughters who inevitably would be in the shower until the hot water ran out. It used to make me want to pull my hair out. Seriously, I cannot believe what we pay for our water bills now that there is only the two of us in our home. We do have droughts in Canada and southern regions of the Canadian Prairies (that’s us!!) and Interior British Columbia are most susceptible. During the past two centuries, at least 40 droughts have occurred in western Canada with multi-year episodes being observed in the 1890s, 1910s, 1930s, 1960s, 1980s, and the early 2000s. Droughts are less of a concern for Northern Canada mainly due to their lower population densities. However, increased frequencies of forest fires during drought years can have serious economic impacts. Were you aware that the world water crisis represents one of the most significant public health issues facing the world today? We need to find ways to conserve this precious resource now more than ever. Drought continues to grip regions of each continent. Drought is a world wide problem.
Here are ten simple things you can do to cut down on your water consumption today:
5. Make sure every tap in your home has a high efficiency faucet aerator. Faucet aerators are the little pieces of hardware that screw into the bottom of faucets. High efficiency aerators can reduce flow by 1.5 gallons per minute or more, saving you piles of money and saving lots of water. 6. Stop that leaky toilet. Not only does it sound annoying, it wastes loads of water. Leaks can often be fixed by making minor adjustments. Test your toilet using some dye tablets. 7. Repair dripping faucets by replacing washers. According to American Water & Energy Savers, a faucet that drips at the rate of one drop per second will waste 2,700 gallons per year. So you can only imagine the amount of water you are wasting with a leaky toilet? 8. You don’t need to take shorter showers, necessarily, but some hardware will help cut the water use every time you shower. At the very least replace your shower head with a high efficiency one. These are designed to maintain water pressure while using much less water than the old-fashioned sort, and you will reduce your shower water use by 20 to 60 percent by doing so. 9. Never throw water away. If you pour too much out or have some left in your glass, use it. Pour the surplus into your dog’s water dish, water a plant, or add it to your water kettle. 10. Set up a rain barrel this summer. You can collect rain water from your eaves to water your garden. Let’s all do our little bit to conserve water! According to WaterFootprint, it takes 140 liters (35 gallons) of water to make just one cup of coffee, 1,000 liters (270 gallons) to make one litre of milk, and 16,000 liters to make one pound of beef? 2. Don’t leave the tap running needlessly. If you are washing your face and you need to get the tap warm, use that initial cooler water to brush your teeth, and then wash your face afterwards when the hot water starts coming out. 3. Choose and use your appliances wisely. Use energy star appliances whenever possible and always use them at full capacity. Choose economy settings and don’t run the dishwasher half-full. 4. Convert your toilet to a dual flush next time you are required to replace your toilet, and don’t flush it more than necessary. If it’s yellow let it mellow, you know? Do You Know How You Rate? S
ince the downturn of the economy over four years ago, financial institutions and various credit adjudicators have tightened the reins on their lending policies, and in particular, pay much greater attention to an individual’s past credit experience than ever before. Nowhere has this been more evident than in the mortgage industry. With foreclosures at historic levels, most lenders, insurers and their investors have reduced their product offerings, while at the same time, they have placed considerably more emphasis on a client’s credit (beacon) score when making their final decision. With that being said, there are a number of things you should know; not only when it comes to you qualifying for any type of credit request, but also in maintaining a good credit rating in general. Due to the fraudulent activity that is occurring in the world today, it is prudent that you check your credit report on an annual basis to ensure that all account information that is contained in the report is accurate. There are two main credit report providers in Canada; Equifax and Transunion. Each of these providers can be accessed online at www.econsumer.equifax.ca and www. transunion.ca. When applying for credit, it is important that you don’t apply to several different banks or financial institutions within a short time of each other. Each time you do so, it is referred to as a “hit”, and this may result in your score dropping enough to prevent you from qualifying for that particular credit product. In the case of purchasing a home or refinancing your existing property,

it is beneficial to use the services of a mortgage broker as we typically access your credit report once, and supply it to the various financial institutions for review. If you access your own credit report by contacting either Equifax or Transunion directly, this does not represent a “hit” on your file and therefore does not impact your score. In order to get your score as high as possible, I would suggest the following. It is best to make at least the minimum payment required for that particular credit card or line of credit each month. If possible, keep your balance(s) at or below 75% of your credit limit(s). In the event that you are either late with a payment or your account has gone to collection, it is vital that you bring the account up to date as soon as possible. You would be amazed how much your score will drop if you are so much as 30 days late on an account regardless of how much or how little that minimum payment required is. The good, the bad and the ugly stay on your credit report for a minimum of six years. In situations where there has either been serious delinquency or a bankruptcy in the past, it can be very difficult to re-establish one’s credit rating. One of the easiest ways to do so, however, is to get a cash secured credit card. It is recommended that you get a limit of at least $1500, which means you need to pledge at least that much money as security. If you hold the card for a year and continue to make the minimum payment each month, you will find your credit score will go up significantly. This same approach may be used in situations where a client doesn’t have any credit whatsoever. Individuals with no credit history are often viewed in the same light as those clients with bruised or poor credit ratings because there is no previous credit to base their decision upon. f you are thinking of freshening up your space this year, some of these upcoming trends will be the perfect addition. We have all seen some pretty horrible trends come and go and it seems everything comes back into style at one point or another. Just like trends in fashion, each trend should only be bought into when it works for you and not just because of popularity. This is the same with your home, I believe items you bring into your home should speak to you and your personality but also be sustainable for years to come and not ‘go out’ a year later. I have selected some great trends for you to add to your home that will also last you for years to come.
Upcycling This is one of my favourite things to do to add character and personality to a home. Not only is this a budget and eco-friendly addition to any home, but makes your space perfectly unique. Mixing high and low items gives a ‘handmade’ feel, yet also streamlines and balances this trend as to avoid an overly shabby chic approach. This also gives you the opportunity to own a one-of-a-kind piece or pieces. This does not only pertain to furniture items, but also to art work and soft finishes. Utilising vintage items as wall décor that will add that unexpected feature piece to your home, or creating accent pillows with your vintage concert tees.

Less is more… Nope, more is more! We are straying away from the clean and sometimes clinical lines of super contemporary design. Before, less was more but now a ‘lived in’ look of a home is where it is at. Layering of different textures, patterns and finishes adds a rich and inviting feel to a space and again makes it uniquely yours. Some ways of adding some items to your space would be to mix metallic finishes with your light fixtures and décor items, layer your couch with an array of different textures, utilising pillows and throws, bring out all those books you have under the stairs, or frame your fire place with some book shelves and display them layered with décor items or (my favourite), create a large gallery wall displaying all your favourite memories.
Last but not least – the statement piece. Every room should have a focal point; a center point that holds all the drama. Creating this and upcycling go hand in hand. For example, if you have found an accent chair with clean and traditional lines, upholstered in a bold geometric print creating something completely unique and contrasting or, as mentioned above, consider making the old new again with reinventing items to create bold art work. An example of this that I have used is a few large and vintage propellers mounted on the wall. This created such character and dimension in the space and brought a whole other element to this builder-basic home. With some of these items you will be able to add character and warmth to your home, which is my perfect vision of every space. If you are to procure items, these will be with you and your home for a lifetime rather than in the garbage a year later when the trend has seen its day. These items will have a story and will be a great topic of conversation for your guests. Creating this look does take time, as it is a work in progress. Painting Tips
5. Avoid Cheap Roller Covers and Brushes
On your next indoor painting project, follow these simple rules and I guarantee that you will save at least 2 hours. Here we go!
This one is important. Cheap roller covers leave fuzz on the wall. Cheap brushes leave streaky brush marks. Avoid those multi-packs of rollers, like ten for a dollar. Pay the extra few cents and get better tools. It’ll be worth it. Honest, it will!

7. Low-Stick Masking Tape
Before painting, slosh your brush in whatever solvent you will be using at the end of the day to clean the brush (i.e., water for latex, mineral spirits for oil, etc.). It’ll be easier to clean when you’re done.
If you don’t feel like cleaning your brush or roller at the end of the day and expect to get back to painting within a few days, wrap the brush or roller tightly in a plastic bag and put in the freezer.
3. Latex Gloves or Lotion, Your Pick
Latex gloves are great for keeping your hands clean (especially if you’re using oil-based paint!). If you can’t stand latex gloves or are allergic, a thick application of hand lotion before painting will make cleaning a lot easier later on.
4. Wet Edge
Always keep a wet edge as you paint, and work away from that wet edge. If you paint over a dry edge, you will get overlap marks.

Will the existing painted surface take new paint? And hold it for years to come? Test this out by adhering a strip of duct tape to the existing painted surface and… rip it off. If flakes of paint more than microscopic size come off, you may need to scrape and sand.
Also known as “blue tape,” this tape comes off easier and doesn’t peel off primer or existing paint. Blue tape, by itself, will save you at least an hour of frustration over the old-style beige masking tape.
8. Rein in Your Paint Can Opener
Paint can openers, those little metal keys (you do use one, don’t you?) are notorious for getting lost in the shuffle. Chain it to a small chunk of wood just like a public bathroom key. Whatever you do, just don’t lose it!

Three years ago, Lynn began working as an Un-licenced Real Estate Admin. Assistant. She brings a variety of work-place experience – Legal Secretary, Oil & Gas Administration, and IT Support - and combined with her OCD nature, she has found her niche. Processing contracts, photography, marketing/social media and working with great people are the essence of her role with the Real Estate REPs. She is a big fan of gardening and outdoor activities like hiking, camping, fishing and snowshoeing. Sharing adventures and laughs with her hubby and three sons is her favourite activity. Lynn relocated from Calgary and really enjoys living in the friendly community of Strathmore.

Candace recently joined The REPs in November 2014 as Admin. Assistant, bringing with her decades of finance, administrative coordinating, client service and general butt kickin’. Working in real estate satisfies her curiosity about Alberta’s ever-changing housing market. She is an avid outdoors woman – biking, rollerblading, camping, gardening, spending time with family and enjoying eggnog lattes, natural hot springs, and randomly running into friends. Candace enjoys acreage living with her husband and two children.
