From the Publishers I’m sad to say good-bye to 2013 it really has been an exceptional year for The Newsy Neighbour. I’m not sure I can express the gratitude I feel in my heart for all the success, growth and support we have received from everyone over the past year and winning Small Business of the Year from The Strathmore Chamber of Commerce just finished off the most perfect year. This January Issue is number 75 for us. I have to pinch myself when I say that, wow! Also dieting on New Year’s Day isn’t a good idea as you can’t eat rationally but really need to be free to consume whatever is necessary, moment by moment, in order to ease your hangover. Funny New Year’s Resolutions

to my loved ones when they are in the same room as I am!

I will stop pretending it isn’t time to take the garbage out yet, by repeatedly smashing it down ‘til my arms ache. Really, wouldn’t it have just been easier to take the garbage out?

I vow to never take a laxative and a sleeping pill on the same night!

I will stop drinking water instead of pop just so I can eat a sweet snack after dinner. Seriously, just drink the Pepsi and get the sugar craving over with.

This year, I will post a 2013 picture of me and remove the ones from my freshman year at college. I will actually laugh out loud when I type “LOL” to the person I am messaging with.

I will not gain any more weight. Losing weight is such a hard goal, so I figured why not make it easier - just don’t gain any more!

I will stop hitting the “like” button just because I like the person who posted but not what they wrote.

I will stop sending Facebook messages and emails

I will lose just enough weight so that my guy doesn’t jiggle when I brush my teeth.

Luscious Joys

When I'm feeling a little under the weather or just not in my best form, and cannot decide what to eat or don't really feel like eating at all, my go-to food is always soup. There is just something warm and comforting in having a bowl of homemade soup. You make it yourself, so you know it is good for you. With buttered crackers, is there anything more comforting than a nice bowl of steaming yummy soup? I don't think so! You are going to make these go-to recipes when you just need a big hug of warmth. Especially with the real old time winter we are having this year.

Homemade Tomato Soup

For sure, by a long stretch, I have got to say there is nothing in the world better than tomato soup and a grilled cheese sandwich! This takes only about 10 minutes to prepare and is a delicious way to enjoy tomatoes, which have excellent amounts of vitamin C, beta carotene, potassium, folate and vitamin E. 2 tbsp vegetable oil 2 onions, chopped 4 garlic, minced 1 can 28 oz stewed tomatoes 3 cups vegetable stock or chicken stock 1/4 cup tomato paste 1/4 tsp pepper In saucepan, heat oil over medium heat; cook onions and garlic, stirring, for 5 minutes or until softened. Add tomatoes, stock, tomato paste and pepper; bring to boil. Reduce heat and simmer for 15 minutes or until slightly thickened. Using immersion blender or in blender, puree reheat if necessary.

Cream of Mushroom Soup

The earthy flavour of mushrooms is at its best puréed into this soup. This soup’s rich hearty flavour will easily satisfy your mushroom craving, and there’s enough for seconds or leftovers. It also shows off how well meaty mushrooms and red wine go together. 1 stick Butter 2 pounds button mushrooms, rinced and sliced 3 onions, peeled and chopped a sprinkle or two sea salt and freshly ground pepper 1/2 bottle hearty red wine 4 cups chicken broth 1 cup heavy cream (35%) 1 tablespoon chopped fresh thyme 2 tablespoons cornstarch 1/4 cup water Place a large stockpot over medium-high heat. Add the butter, mushrooms and onions. Season with salt and pepper. Sauté until lightly browned. The mushrooms will initially release a lot of moisture, preventing them from browning. Eventually that moisture will evaporate, allowing the pot’s heat to rise to browning temperature. Pour in the red wine and bring it to a simmer. Continue cooking—the moisture in the wine will evaporate, concentrating its flavour—until the wine has reduced by about two-thirds. Add the chicken broth, heavy cream and fresh thyme. Stir well and bring the soup to a simmer. Meanwhile, dissolve the cornstarch in the water. Add this mixture slowly to the simmering soup, stirring until it returns to the simmer and thickens slightly. If you prefer your soup a bit thicker, feel free to add more cornstarch. Taste and add more salt and pepper, if desired. Serve immediately.

Quick Cauliflower or Broccoli Soup

4 cups chicken broth or vegetable stock 1 tablespoon olive oil 1 large onion, chopped (about 2 cups) 2 dried bay leaves, optional 1 head cauliflower OR 1 pound of broccoli crowns and stems, chopped into small pieces (or frozen cauliflower or broccoli) Salt and pepper to taste Heat broth to a boil in microwave. Meanwhile, heat a large pot on medium high. Heat olive oil, then add the onion and bay leaves, stirring to coat with fat. Cook until onions begin to soften and turn gold, stirring often. Add cauliflower or broccoli, stirring to coat with oil and onion flavor. Let cook, turning occasionally for 1 - 2 minutes. Stir in hot broth. Cover and cook for 5 – 10 minutes or until the vegetables are fully cooked. Remove the bay leaves. Transfer a third

of the hot mixture to a food processor or blender. Purée until smooth while continuing to cook the rest. Repeat with another third, then the final third. Season to taste and serve topped with a small spoon of low-fat sour cream or croutons. Or both!

Hearty Hamburger Soup

At family get-togethers, our children always request this spirit-warming soup along with a fresh loaf of homemade bread and tall glasses of milk. It has robust flavor, plenty of fresh-tasting vegetables and is easy to make. -Barbara Brown, Janesville, Wisconsin 1 pound ground beef 4 cups water 1 can (14-1/2 ounces) diced tomatoes, undrained 3 medium carrots, sliced 2 medium potatoes, peeled and cubed 1 medium onion, chopped 1/2 cup chopped celery 4 teaspoons beef bouillon granules 1-1/2 teaspoons salt 1/4 teaspoon pepper 1/4 teaspoon dried oregano 1 cup cut fresh or frozen green beans In a large saucepan, brown beef; drain. Add the next 10 ingredients; bring to a boil. Reduce heat; cover and simmer for 15 minutes or until potatoes and carrots are tender. Add beans. Cover and simmer 15 minutes longer or until the beans are tender. Happy New Year and try to stay warm and cozy! Kathryn Hartwell

Essential Oils Ah, the dreaded cold and flu season. We have all been there: on the couch, feeling like we are dying, thinking, “I wish there was something I could do to never have to feel like this again!” According to modern science, there is a solution: the flu shot. How to Succeed In Your New Years’ Resolutions? Another year has come and gone, which means at some point in January, you will be thinking about New Years’ Resolutions. It has been said that more than one third of them will not be successful. If you are determined to make one, here are 5 steps to help you have a better chance at success or to keep you flowing through your Resolution. 1. Go for a walk; in doing so you can really think about your goal and start to plan the points and steps needed to accomplish it. 2. Breathe; once you are home, the ideas will be fresh in your mind. First, stop and take a cleansing, slow deep breath in and out four times. When you are feeling relaxed and calm write down what you have come up with. Your resolution is starting to come to life! 3. Talk about it; this is something that is important to you, so connect with someone who can help you. Reach out to your doctor, friend, significant other, dietitian, trainer, or anyone who has information and expertise you need. Create a support team. 4. Focus on what you can control; for many, the biggest challenge. We want to change everything at once; but ultimately have to be realistic and genuine with ourselves. Ask the question; “Can I physically, emotionally, mentally, spiritually and financially change this situation?” Do some soul searching and be honest about the answer. If “Yes”, then you need to start writing down the doable steps necessary to help you with your resolution. If “No”, then accept it was not your responsibility in the first place and let go. It is important to not stress over it! 5. Get enough sleep; research has shown a lack of sleep can become chronic and, in the long-term, may lead to diabetes, depression, cardiovascular disease and even weight gain. Reasons You Should Get A Massage Personally, a massage for me has always been a luxury; a vacation gift for myself. There is nothing in this world more luxurious than laying on the beach under a covered cabana with the tropical breeze blowing across your skin while getting a massage. If you take too much, as in mega doses, yes, they could be bad for you. What you should know about magnesium and Vitamin B12 There are so many vitamins and minerals on the shelves these days, it leaves me with a bit of apprehension and confusion. Do I need to be taking vitamins? I just had my yearly blood tests done and my doctor told me I was extremely low in B12 and magnesium. How does this happen? I obviously do not have a well balanced diet! I juice everyday and I thought that should give me all the vitamins and minerals my body would need. But, it seems I’m not eating foods that contain B12 and magnesium. The best sources of vitamin B12 include: eggs, milk, cheese, milk products, meat, fish, shellfish and poultry. The best sources of magnesium are pumpkin seeds, spinach, Swiss chard, soybeans, sesame seeds, halibut, black beans, sunflower seeds and almonds. Your body needs magnesium for many tasks. It’s involved in more than 300 chemical reactions in the body. Muscles need this mineral to contract, and nerves need it to send and receive messages. It keeps your heart beating steadily and your immune system strong. Magnesium supplements are sometimes marketed as super pills that can fix a long list of ailments such as muscle tension, low energy, and trouble sleeping. For people who have trouble absorbing magnesium from food — such as those with celiac disease, kidney problems, alcoholism, or chronic digestive problems, supplements can be useful. Your body needs B12, as it plays a wide variety of roles in our metabolism and is essential for the manufacture of red blood cells; a deficiency leads to a characteristic kind of anemia. If you weren’t scared, what would you do? Should you be focused on today or tomorrow? What’s the one most important thing to get done today/this week/month?

Ok, so it is the New Year! Why do we feel the need to make changes when the New Year rolls around? Perhaps change is needed? Maybe there is something you would change about our life, or just maybe you are getting older and you need to be more loving, giving or understanding? Nobody said it was going to be a rose garden and just when you think you are happy and comfortable in your life, life seems to know and throws you a curve ball. I don't get it, one can almost afraid to be happy, because if you are, something will come along to mess it all up. Is this the way life is suppose to be? These are always the great questions in life. Maybe we all need to ask ourselves the big question; what is it all about? Perhaps these may give you reason to sit and ponder, or make changes. Whatever the case may be, make sure your life is the most Fabulous, Fantastic &

Fun journey! Why don’t you do the things you know you should be doing? Life isn’t about figuring out what to do. The real challenge is simply doing the things we know we should be doing. What are your values and are you being true to them? Write down the 3 most important aspects of each of these areas: family, romantic relationships, friends, work, health, sex and spirituality. These are your values. When we don’t act congruently with what we value, symptoms of discomfort arise. In what ways are you being perceived that you’re not aware of? ¬Perception is reality. Make sure, for better or worse, you know


what people really think of you.

What don’t you know that you don’t know? It’s always the obstacles that we don’t even see coming that are the biggest challenges in life. Get in the habit of asking people that have been there and done it before for guidance.

Why not? What would happen if…? Don’t accept that things just are the way they are. Question why something can’t be done. And when you get pushback to these questions, reframe the negative answers with possibilities.

Are your “shoulds” getting in the way of your happiness? The desires of our ego are often in conflict with the emotions of our heart. You’ll always have what you want, if you want what you have.

What/Who did you make better today? The way to measure your worth may just be to give more than you take. Asking what/who you made better each day is a simple litmus test we can all measure ourselves by.

If you achieved all of your life’s goals, how would you feel? How can you feel that along the way? The discipline of delayed gratification is one of the most powerful habits of successful individuals. But most actions we take are meant to elicit an emotion in the now. We’re happier striving for our goals when we let ourselves feel that which we want to feel when our outcome is achieved.

What do you want your life to be in 5 years? If you don’t know where you’re going, you’ll never get there – Lewis Carroll. Write down 5-year goals. They’re close enough to grasp for, yet far off enough to achieve almost anything.

What did I learn today? Who did I love? What made me laugh? I try and ask myself these 3 questions at the end of each day. Regardless of anything else that happens, if you learned something new, loved a good person and got to laugh heartily, it was a day worth having and remembering.

What’s your WHY? If you have a big enough WHY you’ll always figure out the What and the How. If you don’t have a BIG WHY, you’ll always use the What and the How as an excuse for not doing that thing you said you were going to do.

If you weren’t scared, what would you do? Use the rocking chair test. What would your 90-year-old self, looking back on your own life, advise you to do in the moment? If you were dying, would you worry about this? We so easily lose perspective on what takes up our energy and focus. We’re all dying. Sometimes we need to remind ourselves of this to enjoy living. Should you be focused on today or tomorrow? Savour the present but don’t forget your future. Life is a balance of knowing when to enjoy the moment vs. when to plant seeds for

What can you do today to improve? Consistent, incremental improvement is the secret to achieving the greatest of feats.

What’s the one most important thing to get done today/ this week/month? Write this down on a post-it note at the beginning of each day/week, and hold yourself accountable for completing this above all other stuff to do. Can you get it done now? If something is important or urgent and you can get it done now, do it. How would your role models act and carry themselves? Bringing Generations Together with Storytelling You’ve probably heard it a hundred times, read the poster and seen the t-shirt – “If I’d known grandchildren were so much fun, I’d have had them first.” My children changed my life, forever making it better; however, grandchildren provide an additional richness that I never imagined. What made the difference? Perhaps more stability and/or being more settled in who we are. We have a different confidence now that allows us be present and fully enjoy times spent together with both young & old. Long before written histories, ballads and storytellers held audiences in rapt attention as tales both true and fictional were delivered. The same holds true today as families and communities are brought together around kitchen tables, in front rooms or around campfires. One story leads to another and soon everyone is creating and/or sharing stories. The tales may change a bit over time as they are embellished and become living entities. You feel like you were there and part of what happened, even if it happened to someone else.

My grandsons want to know the stories of their moms, dads, aunts and uncles growing up. Even more fascinating to them are the stories of when I was a little girl. They cannot imagine that, so it is time to bring out the pictures. They ask questions that provide wonderful platforms for sharing their heritage. I love hearing younger generations share or request a specific story. Fortunately, it is never too late to have a second childhood. If we missed out as a child or with our children, we are given another opportunity with our grandchildren. I encourage you to put aside anything that hinders your ability to connect and share your true fun loving self with others. We shape not only our future but future generations through our words and actions. How are you shaping your world? You may tell a tale that takes up residence in someone’s soul, becomes their blood and self and purpose. One of the special gifts in my life is a friend who taught me to laugh at what I thought were serious episodes in my life. Her family has many of them; however, early in their lives every incident became a story, even an out of balance washing machine that led to both her husband and her falling down the basement stairs. Life truly becomes what we make it and failing to share our stories may rob future generations of the joy of laughter and some valuable lessons.

It is interesting to know that somewhere between 60-90% of communication is nonverbal, yet so little time is spent learning to “listen” or “read” body language, hand gestures and the tone of what is being shared. Being present requires us to be good listeners using skill and discipline to capture the moment. What a gift such a skill would become to future generations.

When Should Children Leave Home? I just read a funny article written by Christopher Middleton about older children still living at home, and how this is becoming the norm. I’m not going to name any names, and actually we have been quite lucky; only one out of six of our children seems to think that it should be ok to linger around the house as often as possible. Middleton states that a report revealed that some three million children between the ages of 20 and 34 are still living at home with their parents. And even when their mothers and fathers think that at last, they have an empty nest, they find their fledgling young returning, for a stay that can last until they are 27, on average, and can even extend into their forties.

“The first inklings my wife and I had that we might have a ‘failed fledgling’ on our hands was towards the start of our daughter’s final year at university, when we found her poring over the world atlas. Our fears were not diminished by finding handwritten notes, bearing phrases such as ‘Bolivian Salt Flats’ and ‘Hostels – Buenos Aires’,” Middleton writes. You think perhaps if you make them do chores around the house, they may think you are being mean to them and want to leave home. Light duties, like vacuuming the stairs, cleaning the bath, filling and emptying the dishwasher are not too much to ask, but it always seems you are nagging to get it done. It never fails. He also writes, “It makes no difference, either, to stand there and tell your daughter that, when you were her age, you not only lived in a squalid, shared flat, but spent at least half your wages on rent. What does make a difference, though, is when you start asking her for rent. Yes, rent. At first hearing, it doesn’t sound good. Nor at second hearing, either. None the less, the request for $200 a month not only got her job searching, it also oiled the wheels to such an extent that she moved out. She now shares a house with three of her best friends, and although her bedroom is the size of a cubicle, it is, at least her own cubicle.”

I fill the fridge, struggling back from the Co-op with bulging carrier bags. I provided hot meals, I uncork the wine, then opened a second bottle, because that’s how I cope. The only thing I draw a line at is entering their bedrooms. The last time I did, in 2007, the mess would have shamed political prisoners making a dirty protest. There was mould and fungus grow-

Goodbye 2013! Hello 2014!

2013 was memorable for all the wrong reasons! Calgary and Southern Alberta was rocked with floods, blizzards, extreme cold, firings, death and the departure of star athletes. Before we turn the calendar to 2014, let’s recount some of the top sport stories of 2013, in no particular order. - Alberta Floods: Not only the biggest news story of 2013, the sports world suffered collateral damage. Two weeks after being underwater, a scaled down version of the Greatest Outdoor Show on Earth was underway! “Come Hell or High Water” was the motto and thanks to the dedication and determination of the Calgary Stampede, the volunteers and hours and hour of man power, the GMC Rangeland Derby and the rodeo went off without a hitch! Two major sporting venues were also heavily damaged in the floods. After months of hard work, the Scotiabank Saddledome and Talisman Centre are now in full operation. - Jon Cornish: It was an epic fail for the Calgary Stampeders in the West Final against the Saskatchewan Rough Riders but it was a memorable season for the Stampeder running back. Cornish became the first

CFL player since Russ Jackson in 1969 to win the Lou Marsh Trophy as Canada’s athlete of the year. Cornish was named the CFL’s most outstanding player, the first Canadian to win the award in 35-years in the American-dominated league. The running back rushed 1,813 yards to lead the CFL. - Jarome Iginla: The Calgary Flames organization was on record as saying their long serving captain and face of the franchise would never be traded. After the NHL lockout ended in January and Flames stumbled out of the gate and fell out of playoff contention, reality finally set in for an organization spinning their wheels. After squashing a trade to the Boston Bruins, Iginla was shipped to the Pittsburg Penguins for Ben Hanowski, Kenny Agostino and a first round draft pick (Morgan Kilmchuk). Iginla signed as a free agent during the summer with the Boston Bruins and in December made his first visit back to the Saddledome. - Billy Powers: The sports world was rocked in July when news broke of a double murder involving Billy and Donna Lee Powers. Billy was the people’s sportscaster and he was a friend, a colleague and my mentor. Billy was a familiar figure on the Calgary sports scene and was a much sought after MC for charitable events. Billy was a big part of the Calgary Stampeder alumni. In a very sad twist, Herm Harrison who spoke at Billy’s funeral passed away

3 months later. They will both be missed, but not forgotten! - Brian Burke: It was no secret the Calgary Flames were looking to expand and grow their hockey department. After Brendan Shanahan turned down the job in the summer, Brian Burke was introduced as the new President of Hockey Operations before the start of training camp. Although he endorsed GM Jay Feaster at the time of the hiring, Burke said he would do a complete review of the organization. 75 days later, Feaster and AGM John Weisbrod were fired. There will likely be more collateral damage in the New Year as a new GM will be allowed to hire his own coach and the future of the scouting department is also up in the air. While a few stories did not make my top five list, an honourable mention would have to go to the success of the inaugural Shaw Charity Classic. The Champions Tour event was a huge hit at Canyon Meadows as over 1 million dollars was raised for charity. The only downside was the event was not more competitive as Rocco Mediate ran away from the field. There was the retirement of Flames goalie Miikka Kiprusoff and the amazing success of athletes like Stamps kicker Rene Paredes and Bobsleigh pilot Kaillie Humphries. www.thenewsyneighbour.com

Now the focus can switch to 2014. It will be a very exciting year for our winter sport athletes as they go for gold in Sochi, Russia. With a new GM, the Calgary Flames will continue to rebuild with another high draft pick. The organization will not be happy with another non-playoff year and with room under the growing salary cap, look for the Flames to be very active. It will be an exciting year in the Canadian Football League with the additional of the expansion Ottawa Red Blacks. The Winnipeg Blue Bombers move back to the Western conference and what does Jon Cornish do for an encore. His sights are set on Mike Pringle’s single season rushing record of 2,065 yards. s we start another New Year, I sit and ask myself the BIG questions, like what are the most important things in life? Is it your job, the car you drive, how much money you make or your family? Well, we all know the answer to this question, don't we? Of course, it is family. There are days you love them, and others you don't. But, in the end, they're the people you always come home to. These days, families come in all shapes and sizes and come together in many different ways. Just thinking about what goes into a family is a bit complicated. George Burns once said, “Happiness is having a large, loving, caring, close-knit family… in another city.” It all boils down to the relationship you have with those closest to you. What kind of family you have is entirely up to you. And it will affect everything about your life. As the saying goes, “When you’re lying on your deathbed you won’t wish you’d just spent more time at the office.” Working towards having a happy & loving family is the most important endeavor anyone could hope to achieve in this world. It is critically important to invest in relationships, give them a chance to flourish and grow. Many of us have little

knowledge about what “investing” means in this respect and consequently, how to go about investing… and likely one of the reasons we see so many people divorced. The time we spend with our family steadily declines as we age and why many of us spend more time in front of the TV or computer than we spend with our kids. Personally, I don’t think these things happen because we want them to. I think they happen because we don’t allow ourselves the time to reflect on what really matters and, consequently, we’re not fully aware of the impact small choices we make in our day-to-day lives have on our relationships. In order to have good relationships, I believe we need to both spend a considerable amount of time with the people we love and be really present during that time.

Chicken Corn Chowder Soup

1 tablespoon butter 6 green onions 2 tablespoons all-purpose flour 2 cups chopped cooked chicken breast 1/4 teaspoon salt 1/4 teaspoon freshly ground black pepper 2 (10-ounce) packages frozen corn kernels, thawed and divided 1 (14-ounce) can fat-free, less-sodium chicken broth 2 cups fat-free milk 1/2 cup (2 ounces) pre-shredded cheddar cheese Melt butter in a Dutch oven over medium-high heat. Remove green tops from green onions. Chop green onion tops; set aside. Thinly slice white portion of each onion. Add sliced onions to pan; sauté 2 minutes. Add flour; cook 1 minute, stirring constantly with a whisk. Stir in chicken, salt, pepper, 1 package of corn, and broth; bring to a boil. Reduce heat, and simmer 5 minutes. While mixture simmers, combine the remaining corn and milk in a blender; process until smooth. Add milk mixture to pan; simmer 2 minutes or until thoroughly heated. Ladle 2 cups chowder into each of 4 soup bowls; sprinkle evenly with green onion tops. Top each serving with 2 tablespoons cheese. Page 36

RUB 2 Tbsp paprika 2 Tbsp packed brown sugar 1 Tbsp kosher salt 1/2 Tbsp ground black pepper ON TO: 5-6 lbs. baby back ribs 2-3 C favorite barbeque sauce Combine paprika, brown sugar, salt and pepper in a small bowl. Rub the mixture over the meaty side of the ribs. Place ribs in slow cooker standing them upright with the meaty side against the wall of the cooker. Pour the barbecue sauce over the ribs. Cook on low for 4-5 hours until tender. Remove ribs and allow to sit for 15 minutes (cover with foil). Cut ribs apart. Cover with BBQ sauce left in cooker if desired. This recipe is from Leigh Anne. I AM AN........OREGANO Yia sou! That's "hello" in Greek. Me lene, they call me "joy of the mountains." That's oregano in Greek, and yes, I AM Oregano, and I bet you guessed it, I am from Greece. Greece was the first country to grow and use me thousands of years ago and then I became popular in North America when soldiers returning from World War II and they brought me back with them to use on their pizzas. Now, everybody loves me for just about everything; the Italians especially love me and use me in all their dishes. I am very popular! I'm not just used for culinary purposes; I am also used for medicinal reasons, and I was believed to hold magical properties as well. Ancient Greeks believed that I was a useful poison antidote and was used extensively both internally and externally to treat skin irritations and infections, dropsy, convulsions, and as an antidote for narcotic poisons. In Shakespearean times, I was used for just about everything. It is said I encourage good luck and good health, I was used in spells for happiness, tranquility, luck, health, protection and letting go of a loved one. I am always happy and I symbolize joy! Growing oregano near your home is said to protect it from evil forces and if you spread me on the ground, I can repel snakes. I can ease a toothache and help you if you have a cough or asthma. In the western culture, I'm generally associated with spaghetti and pizza, but I am so much more than just flavour for your food. The Romans would chew me as a cure for rheumatism, toothache, indigestion,

and as a cough suppressant. Now, you're not going to believe this, but I have a higher antioxidant activity than well-known foods such as vegetables, berries and fruit. Three different types of my cousins -- Mexican, Italian and Greek -- scored the highest in antioxidant activity of a bunch of different herbs, I had 3 to 20 times higher antioxidant activity than the other herbs studied. I'm pretty strong for just a little herb; I have 42 times more antioxidant activity than apples, 30 times more than potatoes, 12 times more than oranges and 4 times more than blueberries. Just one tablespoon of fresh me was found to contain the same antioxidant activity as a medium-sized apple. I even have a higher antioxidant potential than garlic! The Chinese doctor's use me for fever, vomiting, diarrhea, jaundice, and itchy skin. No wonder they call me "Joy of the Mountains". Researchers say that you should use me instead of salt and artificial additives and I am much better fresh. I can be used in so many different foods, like salads, casseroles, soups, sauces and poultry dishes. And, of course, pizzas! Think about it, in addition to adding flavourful nuance and zest to meals, I can provide significant health benefits when included in a balanced diet. I am so wonderful! Ok, enough about me. Now I'm going to help you with some magnificent recipes so you can use me every single day. You know I love you and want you to be happy and healthy. Use me - it's ok - I don't mind!


Marinated Beets

I love pickled beets but have never made them with oregano. It sure sounds good to me! Plus, what a healthy treat. I put them in all my sandwiches and they’re a great little make-ahead side dish that goes well with roasts and veggie feasts. Not quite pickled, but still sweet and also a little sour. About 5 good sized beets 2 Cups white or red wine vinegar 8 Cups water pinch of salt 2 garlic cloves, sliced 1 Tbsp dried oregano 1 red chilli, finely chopped 1 Cup olive oil Wash and scrub the beets under cold running water. Place them in a saucepan with the vinegar, salt and water and bring to the boil. Reduce the heat, cover and simmer for about 1¼ hours until the beets are tender. Meanwhile, combine all the marinade ingredients in a bowl and set aside. Once the beets are cooked, drain, place on a cloth and pat dry. Remove the skins with the help of a cloth. Cut into slices, place in the marinade and mix well. Leave for a day before serving. Keep refrigerated.

Warm salad of potatoes, sweet red onions and oregano

8 medium-sized potatoes 2 small sweet red onions ,sliced very thinly 2 tbsp green olives, chopped ½ Tbsp dried or fresh oregano 8 Tbsp extra virgin olive oil 2 Tbsp red wine vinegar salt Cook the potatoes until tender and slice. Place in large bowl with sliced onions and green olives. Add oregano, olive oil, vinegar and salt. Mix well and serve immediately.

Oregano pesto

Large bunch of oregano, washed, dried and stemmed. 1 - 4 Tbsp Olive Oil 1-3 cloves fresh garlic, sliced Salt and Pepper to taste Add oregano, garlic, salt and pepper to

a food processor or mini chop. Drizzle in oil (amount will depend on how much oregano you have) a tablespoon at a time, until you have desired consistency. Whiz until combined. You can add toasted pine nuts or walnuts if you like. Store in airtight container in the fridge or freeze in ice cube trays. Once frozen, remove pesto cubes to a plastic zip top bag and remove from the freezer when needed. Ideas for the pesto: · mix it with butter and smear it on bread for an herby garlic bread - toss toasted bread cubes in it for salty croutons to soup - toss toasted pita wedges in it for pita wedges to dip in soup - freshen up jarred spaghetti sauce with 2 cubes to make the sauce taste home-made Use your imagination!

Herbed salmon

You can use this method on pretty much any type of thick fish filet if salmon is not available. The herbs, wine and lime gives fish a fabulous flavour. Vegetable oil spray 1-1/2 pounds boneless salmon filet about 1-inch thick 1/2 lime 2 Tablespoons white wine 1 tsp mayo or butter 1/2 tsp salt 1/2 tsp onion powder 1/2 tsp garlic powder 1/2 tsp lemon pepper 1/2 sp dried oregano 1/2 tsp dried dill weed 1/4 tsp sweet paprika Combine all ingredients and drizzle over fish, wrap in a foil packet and cook in a 475 degree oven for 15 minutes. Dear Lifelines: I can’t get it together for the winter. I get down and sad – maybe it’s because I miss all of my summer activities. Not sure – I’m starting to think it’s me…what should I do? Signed, Winter Blues Dear Winter, Whenever we feel down and it starts affecting our daily lives over a period of time, it’s good to get a professional opinion about possible causes. So please check it out with your physician to make sure there is nothing medical causing your sadness first. Secondly, you might wish to pursue other ways to help combat that sadness – one effective way is through physical exercise. You mentioned that you miss the summer activities and it’s true that summer sports and activities are plentiful, but the list is quite impressive for winter activities as well. Instead of layering on the sunscreen like in summer activities, you just have to layer on the clothes and prepare for the cold. There are many mini body heater options now, unlike ever before. You can get the chemical packets that you shake to heat up hands and feet, battery operated heated socks, heated body suits, pants and hat/toque heaters just to name a few. There’s no excuse to not getting out in the winter months anymore! And if you just need to get out but prefer to stay in the vehicle, there’s no better scenery than the mountains, which are only a short drive away. The list of activities is endless for winter fun – here’s a few suggestions: Page 40

Alternative Lending Still Exists With all of the changes in recent years to the mortgage industry, and in particular, the way clients get qualified for mortgages, it’s becoming more and more difficult to get approved these days if your mortgage application doesn’t meet the banks and/or insurers strict criteria. Thankfully, we still have lenders that “look outside the box” and use a more “common sense approach” to its lending practices. For most, the two biggest reasons that clients are turned away and told they don’t qualify for a mortgage is that they can’t prove the income they have declared on their application, or their credit score isn’t high enough to meet the bank’s and/or insurer’s requirements. With “Alternative Lenders” they use “stated income” to qualify clients for their mortgage financing. So for clients who operate their own business, whether it be for less than a year or more than 3 years, these lenders will ask you to sign a letter stating what your income is on an annual basis, and will not require confirmation of this via the standard Notice of Assessments or personal tax returns that the banks and other financial institutions request. These programs can also be an excellent option for clients who are on commission based income, require their year-end bonus to qualify, but haven’t received it yet, or perhaps they work in an industry where tips represent the majority of their compensation. Thankfully, the documentation that is required to qualify with these lenders is reduced significantly compared to the regular channels. Like income, past credit history is looked at very closely by the banks when determining whether they are going to finance a mortgage. For those clients who have had recent challenges with their credit, regardless of the reason, depending on how “bruised” the credit is, there is a good chance they won’t be able to approve a loan based on the rating that exists at that moment. The problem is, the good, the bad and the ugly stay on a credit report for six years, so this can be a long time to wait in order to qualify through a bank. With access to these other lending options, these lenders don’t place nearly as big an emphasis on a client’s credit history. It’s certainly worth mentioning however, that the better the credit rating, the Page 42

better the interest rate that is offered by the lender. The good news is, even if you pay a slight premium to be able to qualify for your mortgage now rather than waiting for your credit score to creep up to acceptable levels by the banks, you only need to consider a short term mortgage. Usually a one or two year term is sufficient to allow clients to “get their ducks in a row”, and once the mortgage comes up for renewal, the chances of transferring the mortgage to any financial institution at that time will increase dramatically. The bottom line…whether your income is unconventional or your credit has been tarnished for any reason, there are still mortgage financing options that exist. Regardless of whether you are purchasing a new home, or wish to refinance your existing mortgage for whatever reason, there may be a mortgage solution that allows you to accomplish your goals. Welcome to January and the New Year. Is it -30 and blowing? Even with a warm Chinook wind, it seems the thought of going back to sleep on an early January morning is more than very appealing. Even though the actual process of sleep is still a mystery, we need regular sleep. Sleep deprivation has a similar impact on the body as it ages and may increase the severity of age-related chronic disorders such as heart disease and diabetes.

Very few go extreme skiing without proper equipment, even fewer do it twice. While maybe not as immediately threatening as out of control speed diving down a mountainside, proper preparation for sleep and a supportive sleep environment are mission critical to the sleep effort. Sometimes going back to the basics is a good starting point. Your mattress and pillow form critical parts of your sleep system and are worth looking at for a new year’s checkup.
