Random Thoughts for March!

Back in December after the Grey Cup in Edmonton, I wrote in this column that there would be some major off-season changes with the Calgary Stampeders. It certainly hasn’t been a fun off-season for Stamps head coach and general manager John Hufnagel as we have seen coaches and players defect to other teams and leagues. Throw in a few anticipated retirements and it’s safe to say we are going to see a much different Stampeder team in 2011. The biggest blow comes on defence as coordinator Chris Jones has lost the two best corners in the league. There is always a chance Brandon Browner will be back if things don’t work out in the NFL but to lose free agent Dwight Anderson as well is a major blow to the secondary. Signing free agent Geoff Tisdale out of Hamilton eases the blow but I don’t think anyone would call that an upgrade! Defensive lineman Tom Johnson also bolts to the NFL and the number one ranked defence all of a sudden has some holes. For the second straight year, Stamps fans have a major concern with the offensive line. Three starters from last year’s team are gone. Dan Comiskey because of a concussion. Rob Lazeo retired. (Will somebody please tell Jamie Crysdale at Gridiron Drilling and Blasting to stop poaching linemen?) To top it off, free agent left tackle Ben Archibald, the top offensive lineman in the CFL, signs with Wally Bouno and the BC Lions. The good news? According to my sources inside the organization, the Stamps are not that concerned about losing Archibald. The team is very high on prospect J’Michael Deane from Michigan State. Deane was a third round pick, 21st overall, in the 2010 CFL draft. He’s 6’5 and 312 pounds. The Toronto native is expected to make a major impression in this year’s training camp. In a perfect world, the Stamps would like to change their ratio on the offensive line this season. Instead of going with two Americans, they would like to reduce that to one or even go with an all Canadian line. Tim O’Neil will start at center. Dmitri Tsoumpas and Steve Myddelton are solid guards. A healthy Jon Gott will compete for a starting position with Deane, Zac Carlson, Oama Culbreath and Americans Edwin Harrison and Stanley Byrant. It will be an interesting training camp! Heritage Classic at McMahon Stadium Congratulations to the NHL and the Flames for hosting a very successful Heritage Classic last month. As a fan, you likely have no idea how close the League and the Players Association came to postponing the event. Give credit to

NHL ice maker Dan Craig and his team of ice techs. The Fire and Ice girls they weren’t, but those boys worked their buns off! Did you know Cisco was a major sponsor of the Heritage Classic? Likely not as their signage was on the ice making machines that never did make out for the NHL or WHL game. Apparently the ice was so brittle the ice machines were breaking through ice. I am told they could have used the ice machines for the WHL game on Monday but NHL said no as it would have created a major perception problem. The bottom line...it was a neat event and great for the city. After attending the original classic in 2003 and now this game, I have no desire to attend any more. Except maybe an outdoor game in Florida where I can wear shorts! Where’s Darryl? The Calgary Flames have been on a crazy run ever since Darryl Sutter was fired just after Christmas. Is anybody as surprised as me that Darryl has gone as dark as Jack Bauer on 24? I thought Flames President Ken King said “Darryl would still be involved in the organization as a consultant?” The way the Flames have turned their fortunes around you would think Darryl would like to come out of hiding and gloat a little bit. Then again, maybe his severance package was as big as Gary Holden’s at Enmax, and Sutter was told to keep quiet. I guess we may never know!

Writing and art expand our minds and what a great way to explore ourselves - get our heads out of the everyday expectations and daily chores. Doug is a really cool guy to talk to – he makes you feel uplifted and happy because he is so positive and determined; he has lots of good advice. Derek Donais’ ”Radiation Angels” book review sounds particularly interesting and Jody Brown’s column always gives you something to think about. Well, I hope that old saying is true about March - it comes in like a Lion and goes out like a lamb, because I’m surely not the only one tired of all the cold weather we’ve been having. Brrrr! I know for sure my dogs are tired of it – they stare at me with those longing eyes, wondering why they have not been out for a run in awhile... which reminds me! FOUR LITTLE PIGS It was a bright and sunny summer’s day. Four pink and fuzzy piglets came outside to play. Soon bored, they decided to escape from their pen, Their names were Gertrude and Mable, Madeline and Gwen. Their first stop was the garden, what do you think they found? Sweet and juicy apples lay scattered on the ground. They tasted carrots and beets and berries that were so yummy! They ate and ate until they couldn’t fit anything else in their tummies. They said hello to the kitties, and good morning to the dogs. They chased the ducks and chickens and ran away from a big ugly frog. After running through the hay field, playing tag and hide and seek. The piglets stopped to take a swim in the cool and bubbling creek. Suddenly! They heard a familiar voice calling, The four little piglets all started bawling. Now we’re in trouble, we weren’t supposed to leave our pen. But when we get bored tomorrow, We’ll do it all over again!

PENNIES FROM HEAVEN

In our February Issue, we included the three choices for the Pennies From Heaven Project. The choices were Project Hope, Happy Cat Sanctuary and the Wheatland County Food Bank. Well, the verdict is in and the readers were unanimous on the winner. Happy Cat Sanctuary will be receiving the $500.00 that was collected from all you big-hearted readers out there. It took awhile but we made it! You see, one person can make a difference, one penny at a time! The Happy Cat Sanctuary is a rescue organization based in Strathmore, Alberta. They are a small group of volunteers dedicated to rescuing and rehabilitating stray and abandoned cats and then finding them loving homes. If I mentioned words like Scapulae, Calcaneus, Humeri, Pisiform or Tarsals, would you know these are all bones in your arms, hands, legs or feet? Well, they are and you have 26 bones in your feet and 27 bones in each hand. The adult human body has a total of 206 bones – wow! Your bones are pretty amazing; they are much lighter than steel or concrete, but weight for weight they are much stronger. We think of them as the frame our muscles are built around, but actually your bones are one of the primary organs of the body and have many different functions and purposes. Inside each bone is a jelly-like substance called bone marrow, which produces blood cells for the body. Blood vessels run through the center of the bone so that it receives food, oxygen and minerals. They are essential for mineral storage including calcium.

My sister had to make the hard decision to part with her dear Jessie after many years of happiness with her faithful friend. Old age and stiff legs were just too heartbreaking to watch. This poem is in memory of Jessie

Almost every bone in your body is made of the same materials. The outer surface of the bone is called the periosteum; it is a thin, dense membrane that contains nerves and blood vessels that nourish the bone. The next layer is made up of compact bone, which is smooth and very hard. Within the compact bone are many layers of cancellous bone, which looks a bit like a sponge. Cancellous bone is not quite as hard as compact bone, but it is still very strong – it protects the bone marrow. A baby’s body has about 300 bones at birth, which eventually fuse to form the 206 bones that adults have. Some of a baby’s bones are made entirely of cartilage, which is soft and flexible during childhood, and as you grow it slowly is replaced by bone, with help from calcium. By the time you are about 25, this process will be complete. The biggest bone in the body is the femur in the thigh, and the smallest is the stapes bone in the middle ear. In an adult, the skeleton comprises around 30-40% of the total body weight, and half of this weight is water. A great deal of what we can do to keep bones strong comes down to not significantly abusing them - make sure you put on a helmet while biking or motorcycling, or www.thenewsyneighbor.com


wear other protective gear while engaged in sports. On the other hand, a little light abuse, while weight training for example, will actually keep bones strong in much the same that running keeps the cardio system in top condition. A proper diet is also essential to keeping bones healthy. Weak bones are more susceptible to injury, so a diet rich in calcium will do bones a world of good. Calcium supplements can also be taken with vitamin D, a nutrient which research has shown to be absolutely essential to bone health, especially later in life, to help ward off such age-related conditions such as osteoporosis. So this March think about your bones! Eat right and make time for a nice long spring walk – for your bones. By: Kathryn Hartwell

ST. PATRICKS DAY & KIDS

St. Patrick's Day is celebrated by the Irish and Irish at Heart! A day for parades, "wearing of the green," music, songs, Irish food, and activities for the kids - crafts, colouring and games. It’s a time for fun. Some communities even go so far as to dye rivers or streams green! “Beannachtaí na Féile Pádraig” is the Gaelic way of expressing a wish that you have all the blessings of St Patrick and the "luck of the Irish" to go with it. Finding or catching a leprechaun (who would then give you gold) was a lucky event that could only take place in Ireland! The Irish are descendants of great Celtic and Viking fighters and their natural fighting skills often ensured survival - hence, they became known as the 'lucky' people. My own descendants on my fathers side are from Ireland and the old 17th Century O' Toole castle has been modernised and is privately owned. A British garrison occupied the castle during the 1798 rebellion. It’s cool to think about days gone by and your ancestors from long ago. For St. Patrick’s Day, besides eating and drinking – be artsy. You can draw your own family tree and open your childs imagination to the past and their heritage. Teach your children to use their imagination – create visions of castles, kings and imaginings of days gone by. It’s fun to create stories in the minds of your children.

GREEN EGGS ANYONE??

Every single day should be about your kids and on St. Patrick’s Day, you can really have some fun. Remember the Dr. Seuss books? I loved those books and have saved many of them for when I have my own grandchildren to read stories to. Well, remember the one GREEN EGGS AND HAM? Now, getting your kids to eat green eggs could be an issue – but what fun it could be. And they are super easy to make - it could not get much easier. Just add green food colouring to your scrambled eggs!! What a fun way to surprise you family!! Haha!!

Since ART AND KIDS are a part of this month's themes, how about making your own rubber stamps – using potatoes? I’m not kidding! Just think about all the different shapes and colous you could use. Just cut a potato in half and cut little shapes out of the inside. Maybe let mom and dad do the cutting. We only want to cut potatoes – not fingers. Then dip the flat side into paint. Stamp onto construction paper. You could also sprinkle glitter on the wet paint. Kids love stamping, even if it doesn't look like anything in particular – what a great way to help them develop their imaginations!

I spend a lot of time on my computer everyday doing research for articles, and I am also a member of Facebook; but I only go to that site if someone sends me something to view and lots of times they send it in computer lingo that I don’t get. For instance, "lol" – it took me awhile to figure out that it meant “laugh out loud”. I didn’t want to ask because it seems everyone knew the meaning but me. So for young and old alike, I did some research to teach you this new computer lingo language all our kids are speaking - or should I say writing. I only included up to “C” because the magazine it not big enough to include them all. Each month I will enlighten you on more until we get through the whole alphabet - and trust me, that could take awhile. Does your pet get adequate shelter?

According to the Animal Protection Act of Alberta, it is an offence to leave an animal outside for an extended period of time without adequate shelter. Adequate shelter is defined as... insulated, elevated and provides protection from the wind and moisture. During a cold spell please: •Keep your cat indoors! •Bring your dog inside and ensure he has adequate shelter when out and time outside should be limited to what is absolutely necessary. •Bring your rabbit indoors and ensure he has adequate shelter when out. •Bang on the hood of your car before starting the engine. •Contact the Calgary Humane Society at 403.205.4455 if you see an animal outside for extended periods of time without adequate shelter

What is the best option when it comes to Grooming?

Which is the better option for your dog or cat - going to a groomer or having the groomer come to you? There isn’t one easy answer; each situation and pet is unique. There are mobile grooming services that include that groomer coming to your residence with all of their supplies, including a table if needed, and they can set up wherever you would like them to. Preferably, they would have access to a bathroom for bath time; however, it is not necessary (some groomers have a product called “waterless bath” that is great to use on senior pets or pets with mobility issues. It is a spray on product that goes on and is toweled off. It leaves your pet clean and soft as if they have had an actual bath. This can be used on all pets if a bathroom is not accessible). Mobile groomers should have cleaning products and supplies that they bring and they should always promise to leave your home the way they found it. You shouldn’t even know they were ever there! Nervous travelers and pets with mobility issues can benefit from mobile grooming. Make sure you do your research before choosing a groomer for your pet - you want to find one who treats your pet with the love you give them! Within Strathmore town limits some groomers offer FREE pick up and delivery for your pet (or for a nominal fee for out-of-town limits). Grooming at a salon does offer your pet the optimum grooming experience, as the groomer should have a full service salon and a very calming grooming environment. This is a better option for people with small children or who have distractions at home that may distract the pet during its grooming session. I AM A Cauliflower Hello my name is Carmelita and I am a Cauliflower. My ancestors can be traced back to the wild cabbage that originated in ancient Asia Minor, and they resembled kale or collards not what we look like today. Our name comes from the Latin words caulus (cabbage) and floris (flower). We were originally grown in the Mediterranean and Asia Minor as a vegetable for over 2000 years. We were an important part of the diet in Italy and Turkey since 600 BC and we became popular in France after King Louis XIV favoured our nutty sweet flavour after that we became very popular and people all over northern Europe loved to eat us. By 1633, we were known as Cole Florie (cabbage flower) but now people call us cauliflower. We are readily available in supermarkets all year round, but our best seasons are spring and fall. I have lots of different cousins and we can be all sorts of different colors including pale green, white or even purple. We have all sorts of different pretty names like “Snowball”, “Snow Crown”, “Mayflower”, “Snow White” and we have been described as a bridal bouquet. Asian Indians love to eat us with curry spices but we are good with lots of different sauces and the very best with melted cheese. We are packed with vitamins and just one serving of cauliflower can supply you with a whole day's worth of vitamin C and one serving only contains 25 calories. We are also an excellent source of Vitamin K, folate and fibre. We are also naturally high in purines, two types of phytochemicals, glucosinolates and thiocyanates. These chemicals increase the livers ability to detoxify harmful substances in the body, making us a great de-tox companion. Furthermore a sulphur compound in my body called sinigrin, may inhibit cancer development. Experts recommend you should eat at least 3 to 5 servings of cruciferous vegetables per week, including cauliflower, cabbage and broccoli. The high vitamin C content is linked with protection against rheumatoid arthritis. In addition to all this we also contains a phytonutrient, indole-3-56, which is linked to reduced cardiovascular risks. So we are not just pretty to look at we are pretty good for your wonderful body. I have included some yummy recipes so you can enjoy my great flavour and get healthy at the same time. CAULIFLOWER CASSEROLE

1 Medium cauliflower, separated into small florets 6 Tbsp. Butter, divided ½ red bell pepper, finely chopped 4 green onions, thinly sliced 1 Tbsp. chopped parsley 2 Tbsp. all-purpose flour ½ tsp. Salt 1/8 tsp. Pepper 1 ½ Cups milk 1 Cup soft bread crumbs 1 ½ Cups shredded sharp Cheddar cheese, divided Pre-heat oven to 350 degrees and butter a 2-quart baking dish. Steam cauliflower until tender, about 7 minutes. Set aside. In a medium saucepan, melt 4 Tbsp. of butter over medium heat and add bell pepper and cook for about two minutes. Add green onion and chopped parsley cook for another two minutes, add the flour and stir until blended then add the milk and stir until thickened. Add 1 Cup of cheese, salt and pepper and stir until the cheese is melted. Combine with the cauliflower and turn into baking dish and top with remaining cheese. Melt the remaining 2 Tbsp. of butter and toss with the breadcrumbs and sprinkle over the casserole. Bake for about 30 minutes or until nicely browned.

CAULIFLOWER AND BROCCOLI SALAD

TANGY CAULIFLOWER AND PEPPERS

1 Head Cauliflower 1 Bunch Broccoli 2 small onions, sliced and separated ½ Cup mayonnaise 1/3 Cup vegetable oil 1/3 Cup white wine vinegar ¼ Cup sugar ½ tsp. Salt ¼ tsp. Pepper 2 slices bacon, cooked and crumbled

1 medium cauliflower, broken into flowerets 3 Tbsp. red wine vinegar 2 Tbsp. melted butter 2 Tbsp. red bell pepper 2 Tbsp. green bell pepper 1 tsp. sugar ¼ tsp. salt

Wash and trim broccoli and cauliflower. Break into florets and combine with all ingredients. Cover and refrigerate overnight or for several hours. I add sunflower seeds to my salad or you could add nuts or raisins – use your imagination. CAULIFLOWER SOUP

1 Large Cauliflower 3 Tbsp. butter 1 medium onion, finely chopped 3 Tbsp. flour 3 Cups milk 1 Cup sour cream 3 vegetable bouillon cubes, crushed Chopped parsley for garnish Parmesan cheese Steam cauliflower until tender. Sauté onion in the butter until tender and add flour. Slowly add 3 cups of milk and sour cream. Drain cauliflower and blend in a food processor until smooth. Add to onion mixture and cook until heated through. Garnish with chopped parsley

Steam cauliflower for about 7 minutes. Drain and add to all ingredients in a saucepan and cook for 6 – 8 minutes. VEGETARIAN CURRY

CAULIFLOWER

1 ½ tsp. fresh ginger, grated 2 Tbsp. sesame seeds 3 Tbsp. peanuts – optimal 3 cloves garlic, minced 1 Tbsp. cumin 1 tsp. ground cloves 1 tsp. turmeric ½ tsp. cayenne pepper 2 Tbsp. water 1 Tbsp. vegetable oil 2 onions, chopped 1 cauliflower, chopped 1 ½ Tbsp. lemon juice In a blender or food processor grind together the ginger, sesame seeds, peanuts, garlic, spices and water. Sauté the onions in vegetable oil over medium heat about 3-5 minutes then add cauliflower and spice mixture. Cook 10-12 minutes, stirring occasionally until cauliflower is almost done then add the lemon juice and cook for 3 minutes. Enjoy!

Mix flour, salt, baking powder, and add to butter mixture alternately with milk. Add raisins. Pour into 8 X 8-inch pan. Bake at 350 degrees one hour.

Lemon-Irish Whiskey Cake Recipe

Ideally this recipe should be started the day before baking. 1 lemon, zest of, cut into julienne • 3/4 cup superfine sugar (regular sugar can be processed in a blender of food processor) •3 eggs, beaten • 1/4 cup Irish whiskey • 3/4 cup butter, at room temperature • 2 cups flour • 3/4 cup almonds, ground • 1 pinch salt Preparation : Place julienned lemon zest in a small bowl. Let it soak in whiskey overnight. The next day, preheat oven to 350°F .Grease a 9 inch cake pan. Cream the butter and sugar together until light and fluffy and then whisk in the eggs. Sift the flour and add to the butter mixture together with the salt. Stir to blend. Fold in the ground almonds. Strain the whiskey, discarding the zest, and stir the whiskey into the batter. Pour into the prepared pan, and bake for about one hour, until golden brown, and a toothpick inserted in the center comes out clean.

1 pound pork sausage links • 1/2 pound thick-sliced bacon, cut in 2” pieces • 4 large potatoes, (2 pounds) • 2 large onions, sliced 1/4 cup chopped fresh parsley • salt and pepper, to taste 2 cups water Preparation : In a skillet cook the bacon pieces until they turn golden, and then drain on paper towels. Brown sausages (prick in several places with fork) in bacon fat; drain on paper towels and slice into 1/4-inch pieces. Peel and slice potatoes about 1/4-inch thick. In a casserole dish, alternate layers of bacon, sausage, onion, and potato, seasoning the potatoes with salt and pepper. Sprinkle each layer with a little parsley. Pour off all but 2 tablespoons of fat from the skillet. Add water and bring to the boil. Pour over the potato casserole. Cover and bake at 350 degrees for 45 minutes. Remove the cover and cook for an additional 15 minutes, until the top is browned and potatoes become tender.

Irish Boiled Dinner

4 pounds brisket corned beef • 1 clove garlic, minced •1 bay leaf •1 can onion soup •4 whole peppercorns •6 medium potatoes, quartered •1/2 cup celery cut into 1” pieces •1/4 teaspoon rosemary, crushed •6 medium carrots, cut into 1” pieces •1 medium green cabbage, cut into wedges •3 tablespoons flour •3 tablespoons water Preparation : Rinse corned beef and place in large heavy pan. Add soup and seasonings. Cover and cook over low heat for 3-1/2 hours. Add potatoes, carrots and celery. Place cabbage on top and cover. Cook for about 1 hour or until everything is tender. The Children’s Bible in a Nutshell

In the beginning, which occurred near the start, there was nothing but God, darkness, and some gas. The Bible says, ‘The Lord thy God is one,’ but I think He must be a lot older than that. Anyway, God said, ‘Give me a light!’ and someone did. Then God made the world. He split the Adam and made Eve. Adam and Eve were naked, but they weren’t embarrassed because mirrors hadn’t been invented yet. Adam and Eve disobeyed God by eating one bad apple, so they were driven from the Garden of Eden... not sure what they were driven in though, because they didn’t have cars. Adam and Eve had a son, Cain, who hated his brother as long as he was Abel. Pretty soon all of the early people died off, except for Methuselah, who lived to be like a million or something. One of the next important people was Noah, who was a good guy, but one of his kids was kind of a Ham. Noah built a large boat and put his family and some animals on it. He asked some other people to join him, but they said they would have to take a rain check. After Noah came Abraham, Isaac, and Jacob. Jacob was more famous than his brother, Esau, because Esau sold Jacob his birthmark in exchange for some pot roast. Jacob had a son named Joseph who wore a really loud sports coat. Another important Bible guy is Moses, whose real name was Charlton Heston. Moses led the Israel Lights out of Egypt and away from the evil Pharaoh after God sent ten plagues on Pharaoh’s people. These plagues included frogs, mice, lice, bowels, and no cable. God fed the Israel Lights every day with manicotti. Then he gave them His Top Ten Commandments. These include: don’t lie, cheat, smoke, dance, or covet your neighbour’s stuff. Oh, yeah, I just thought of one more: Humour thy father and thy mother. One of Moses’ best helpers was Joshua who was the first Bible guy to use spies. Joshua fought the battle of Geritol and the fence fell over on the town. After Joshua came David.. He got to be king by killing a giant with a slingshot. He had a son named Solomon who had about 300 wives and 500 porcupines. My teacher says he was wise, but that doesn’t sound very wise to me. After Solomon there were a bunch of major league prophets. One of these was Jonah, who was swallowed by a big whale and then barfed up on the shore. There were also some minor league prophets, but I guess we don’t have to worry about them. After the Old Testament came the New Testament. Jesus is the star of The New Testament. He was born in Bethlehem in a barn. (I wish I had been born in a barn too, because my mom is always saying to me, “Close the door! Were you born in a barn?” It would be nice to say, “As a matter of fact, I was.”) During His life, Jesus had many arguments with sinners like the Pharisees and the Republicans. Jesus also had twelve opossums. The worst one was Judas Asparagus. Judas was so evil that they named a terrible vegetable after him. Jesus was a great man. He healed many leopards and even preached to some Germans on the Mount. But the Republicans and all those guys put Jesus on trial before Pontius the Pilot. Pilot didn’t stick up for Jesus. He just washed his hands instead. Anyways, Jesus died for our sins, and then came back to life again. He went up to Heaven but will be back at the end of the Aluminum. His return is foretold in the book of Revolution.

MY FAVOURITE - FABULOUS - FANTASTIC AND FUN STUFF If you ask anyone in my family what one of my favourite things in the world might be I’m pretty sure they all would say “Grand Marnier.” I love Grand Marnier. Not only can you enjoy the flavour in many different drinks – my favourite being Blueberry Tea – but you may also cook with it. Sauces, desserts, sides or main courses - there are many different ways to enjoy the incredible flavour of this special liqueur. Here are some fabulous-fantastic Grand Marnier recipes for you to try. I know for sure these will become some of your fantastic and fabulous favourites

CLASSIC CUSTARD

9 Egg Yokes 1/2 Cup Sugar 3 Cups heavy cream 1 tsp. vanilla extract 6 Tbsp. Grand Marnier TOPPING 4 Tbsp. freshly-grated orange zest 1 Tbsp. Grand Marnier Preheat oven to 325 degrees. Beat eggs with sugar until thick and creamy. While stirring constantly with a wooden spoon, add cream in a slow and steady stream, then mix in vanilla and Grand Marnier. Divide mixture into 6 custard cups and place the cups in a 2-inch deep baking pan. Place baking pan on center oven rack and carefully pour in hot water to surround the cups in water 1 inch deep. Bake for 35 minutes until center is set. Remove cups from pan and let cool to room temperature, then refrigerate at least 2 hours. Just before serving, blend orange zest with 1 tablespoon Grand Marnier. Top each of the custards with the zest mixture. If you do not want to go to the expense of using the liqueur or just do not want to use alcohol, orange juice concentrate can usually be successfully substituted in most recipes.

Dijon mustard 2 Tbsp. honey ¼ tsp. chili pepper or cayenne ½ tsp. ground sage 6 boneless, skinless chicken breast halves Place apricot jam, Grand Marnier, balsamic vinegar, Worchestershire sauce, Dijon mustard, honey, pepper flakes, and sage in a saucepan. Gently heat while stirring

GRAND MARNIER POUND CAKE

1 Cup butter, softened 1 2/3 Cups sugar 2 Cups flour 1 tsp. baking powder ¼ tsp. salt ¼ Cup Grand Marnier 1 Tbsp. grated orange zest 5 Eggs 12 ounces miniature chocolate chips Glaze: ¼ Cup orange juice ¼ Cup Grand Marnier ¼ Cup sugar Preheat the oven to 350 degrees F. Generously butter a 10-inch loaf pan, then sprinkle it with flour, tapping out the excess. Set aside. In a large bowl with the electric mixer on high speed, beat the butter until creamy. Gradually beat in the sugar and continue beating until the mixture is light and fluffy. Turn the mixer speed to low. Sift in the flour, baking powder, and salt. Beat just until the flour is absorbed. Beat in the Grand Marnier and orange zest. Beat in the eggs, one at a time, beating well after each addition. Add chocolate chips. Spread the batter in the prepared pan, smoothing the top even. Bake until the cake shrinks from the side of the pan and a toothpick inserted in the middle comes out clean, about 1 hour and 5 minutes. Let stand in the pan on a wire rack for 10 minutes, then carefully unmold the cake onto a piece of wax paper. Glaze: Meanwhile, combine the orange juice, Grand Marnier, and sugar in a small saucepan. Bring to a boil over moderate heat. Lower the heat and simmer until the mixture forms a light syrup, about 5 minutes. Then brush the syrup all over the warm cake. When it is cool, transfer it to a serving plate.

until jam has melted and all ingredients are combined. Remove from heat and let cool to room temperature. Place chicken breasts in a large zip-top bag. Pour in the apricot marinade, squeeze out the air, and seal the bag. Toss to coat chicken. Refrigerate at least 4 hours or overnight. Preheat oven to 375 F. Line a baking pan with nonstick foil. Remove chicken from marinade and arrange in a single layer in the prepared pan. Reserve 3/4 cup of the marinade. Bake chicken breasts about 30 minutes, basting with reserved marinade every 10 minutes. Do not overcook or chicken will be dry. Cover loosely with foil and let chicken rest for 10 minutes before serving.

The Great Canadian Barn Dance “The Kunkel Family Comes Home”

THE DRYLANDERS The name “Drylanders”should get the attention of some longtime residents in the area. In the early 1960’s the Drylanders, Lloyd Kunkel and his musical family, played for dances in many parts of the Calgary area, including Strathmore, Carseland , Standard and others. But most of all they played in Chestermere, at the old Chestermere Hall. Early residents of Chestermere, Lloyd and his sons also played regularly in Calgary at the old Crossroads Hotel and the Palliser. For a time, both fiddler Roy Warhurst and Ron (Buckshot) Barge performed with the band. They moved away many years ago and built the Great Canadian Barn Dance near Pincher Creek and have become well-known throughout the province and beyond for their wholesome family entertainment centre. Now they’re coming back, three generations of Kunkels, for one night only at the Chestermere Recreation Complex, on April 16th. See ad on this page!

THINKING AND WEALTH As I have conducted my research on the super successful and super wealthy I have found many clues that are fundamental in creating greater financial success. One that I will talk about in this post is simple but extremely profound. It comes down to appreciation. One of the major differences between those who are highly financially successful and those who are not comes down to appreciating their money. No doubt there are some people there shaking their heads right now saying, ‘this is silly, we all appreciate money.” But do we? Let me explain what I mean by appreciation. Most people think that appreciation simply means to have good feelings or gratitude towards a thing or situation. Maybe you appreciate something someone did for you or a gift someone gave you. Appreciation is so much deeper than that, especially when it comes to looking at money. In fact, a great way to explain this might be to look at the opposite of appreciation – depreciation. This is a word we heard more often when it comes to things in the financial realm. Most people say they appreciate their money, but they most of the time making purchases that depreciate. Therefore we may safely assume that most people really don’t understand what it means to appreciate their money. The dictionary defines appreciation as “understanding of the nature and quality of something.” Most people don’t truly understand the value of their money. Consumer research groups suggest that the average american household spends more than 96% of their income on purchases that immediately depreciate. While it is understandable that some items such as food, clothing and shelter are necessities, the same research indicates that much of the income is currently spent on entertainment. These expenditures have no appreciation value. If you want to see your wealth increase dramatically you need to begin keep a more careful eye on your depreciation spending. I am not against enjoying life and having a great time. But to receive great financial returns a small shift is required. My personal research into the lives of the world’ most successful people demonstrates that by delaying immediate gratification and shifting the purchase mentality to appreciation great wealth can be created. Purchases that appreciate, like investments, begin to place your money in a position where it works for you and grows by itself. So the next time you are about to make purchases, even small ones, pause and consider the value of the purchase – Appreciative or depreciative. You know you’re going to enjoy a book when you have trouble putting it down after the first couple of pages. That was the happy dilemma I faced with James Daniel Ross’s Radiation Angels: The Chimerium Gambit. The book is a fastpaced, gritty science fiction offering that entertains with equal parts futuristic combat action and colourful, dark wit. The Radiation Angels, or Angels for short, are a team of mercenaries led by Captain Todd Rook. In this distant future, humans have migrated into space and inhabited many planets, creating a far-flung system of independent planetary governments. These regimes do not always coexist in peace, of course, owing to human nature. However, the mainstay of planetary armed forces is in space vessels: ships that can carry warfare to other worlds. Because of the great expense and resource allocations necessitated by the construction and maintenance of these interplanetary navies, governments are not usually able to afford a standing army of any significant size. They must turn to mercenary groups, like the Radiation Angels, to carry out their plans on the ground. This is where we are introduced to Captain Rook and his team as the story begins. They have been hired to infiltrate a sprawling, underground citadel on planet Ashley 9 and apprehend a traitor to the government who has barricaded himself within the massive fortress. Because of the sheer scale of the citadel, a number of mercenary armies have been hired to complete the job. Not long after the Angels enter the fortress, Captain Rook and his team begin to realize that things are not as they have been told. The Angels survive an ambush, and soon afterward it becomes obvious that their employer—Supreme Admiral Tomlinson—has sent all mercenaries in with identical orders. What this means is that each team, upon realizing their only chance to make a profit from this dangerous affair lies in being the first to locate and capture the traitor, will face the temptation to openly attack their rivals. Rook knows that many will easily choose the role of the aggressor. Now facing both enemy soldiers and competing mercenary groups, Rook and the Angels continue on, desperate to locate their target. They are attacked by an infamous mercenary team known as the Tribe of Nine: cyborg warriors that are more machine than human. They are incredibly difficult to stop and carry devastating weapons, and the fact that they are few in number is little comfort to Rook and his fellows. Battered and bruised, having lost a number of their brethren, the Angels survive, owing to the quick and heroic actions of several members, including Rook himself. Fortunately, the Tribe of Nine had located the traitor, which allows the Angels to secure the target and complete the mission. Their elation is short-lived, as Tomlinson not only refuses to grant the Angels a number of items specified in their contract, but also manufactures a campaign to vilify them in the eyes of his planet’s population. Rook and his mercenaries escape Ashley 9 with what Rook hopes is the key to a plan that will allow the Angels to redeem themselves and be rid of Tomlinson’s treachery for good. The problem is that they’ve now become the targets, wanted on trumped-up charges of treason. Every rag-tag mercenary group in the vicinity is going to want a chance to strike at the Angels, as is one particular clan that has a score to settle. Ross’s writing style is well-suited to an action/adventure story such as this. He provides rich details about the universe he’s created, from the motivations of individual characters to the complex science behind the weaponry and technology that these mercenaries depend on for their livelihoods. He weaves a tale that is, at once, believable and other-worldly. I highly recommend this entertaining story and I look forward to more from this author. www.thenewsyneighbor.com

When I was a kid, I was always using my imagination. Art is life; it is around us everyday all we have to do is open up to seeing it. Teach your children to look and be more aware of Art – in the sky with the different formations of the clouds, or the patterns in the fields, trees, flowers and even finding strange and creative faces and animals in your speckled ceilings. Open up that most creative grey matter we call the brain. Michelangelo, the Italian Renaissance painter, sculptor, architect, poet and engineer, created two of his most famous works by the time we was 30. I’II bet his parents helped him to develop his inner creativity at a very early age. Art is not just drawing, painting and sculpturing - it is also music. Can you imagine that on March 26th, 1778, at the age of 7 1/2, Ludwig van Beethoven gave his first know public performance? In 1782, before the age of 12, Beethoven published his first work: 9 variations, in C Minor, for Piano, on a march by Ernst Christophe Dressler (WoO 63). Wolfgang Amadeus Mozart, by the age of five, was already competent on keyboard and violin and composing his own music. Now if your young children do not know the incredible music these masters composed, you can listen to them on your computer. Just go to their websites or make your way down to the public library; you just may be surprized with the music they have for your enjoyment and it would not hurt to support your local library! As they did a year ago, the Government of Canada has once again implemented a few new policies pertaining to qualifying for mortgage financing. These changes were announced on January 17th of this year, and will be enforced(primarily) on March 18th, 2011 in a continuing effort to ensure that our housing market remains strong. These changes affect only government-backed insured mortgages, so they won’t impact most conventional mortgage applications. The first of these amendments is reducing the current 35 year amortization to 30 years. This was done in order for Canadians to pay off their mortgages more quickly, thus saving them money in interest while increasing the equity in their home more quickly. The end result will hopefully mean Canadian home owners being mortgage free before they retire. Secondly, Canadians will now only be able to refinance their properties to a maximum of 85% of the value of their home instead of 90%. The government is hoping that this action will promote savings through home ownership, as well as reduce the amount of debt Canadians can wrap up into mortgages that are guaranteed by you and me. Finally, the Government of Canada is withdrawing its guarantee of any home equity lines of credit(HELOCs) that are secured by a residence. So in other words, Canadians won’t be able to acquire HELOCs that exceed 80% of their home value unless the banks are willing to offer these kinds of products without the backing of Canadian taxpayers. This again, is in an effort to reduce the amount of consumer debt that the Government has to secure, that has nothing to do with the property itself. While the first two policy changes will take place on March 18th, the last one will not be implemented until April 18th of this year. Again, these particular changes only affect those clients looking to finance a property with a loan to value greater than eighty percent. As a mortgage broker, I have access to lenders that do not rely on the Government for backing of their mortgages, so they will likely continue to offer different products tailored to a variety of requirements. To Incorporate or Not to Incorporate?

That is the question. And the misconceptions and urban myths surrounding this question are manifold and varied. Today we will examine some of the facts and factors that need to be considered when considering the incorporation of your business., bearing in mind that the answer to the question, as with almost all tax strategy questions, is, “It depends!” One of the most commonly cited reasons to incorporate is as a means of transferring liability for debt and legal actions to the corporation instead of the business owners personally. Take this one with a grain of salt; creditors (including the Canada Revenue Agency) almost always seek or enforce a personal guarantee from the directors anyway, and appropriate insurance should be in place to cover any surprise lawsuits. Still, in many industries, putting a corporation between yourself and your personal assets can have tremendous value. What about saving taxes? Again, this depends entirely on your business’s profitability, family situation, and personal financial requirements. We often hear things like, “Don’t incorporate until you have $70,000 in profits, or $100,000 in sales,” or some other essentially random measurement. I’ve seen businesses where incorporation makes sense with revenues of only $20,000 and some who gross $150,000 and shouldn’t. The key is to fully assess the needs of the individuals involved, future plans and goals of the family and business, and the immediate costs and benefits. For example, the actual incorporation will cost an absolute minimum of $250 (we suggest paying more to get a proper share structure and advice), bank charges will be at least $12/month, and your accounting and legal fees will be higher since statutory requirements are more strict for corporations. These financial burdens need to be weighed against the potential tax savings to be derived from the new business structure. Such tax savings can be profound with proper planning and execution. The most crucial advice I can offer is to speak to an experienced accountant as soon as possible to help you with your decision. A proper assessment of your situation goes far beyond the scope of an editorial; we often spend two hours with clients helping them understand the process. And if you’ve recently incorporated, it’s no less important. Just complying with CRA’s requirements can be an extremely expensive minefield to navigate, so it’s very important to be doing things properly from the moment you decide to incorporate. March is such a happy month, as the days are getting longer and it is a much warmer month than February. You can feel the warm rays of sunshine on your face and the anticipation that those cold winter days are behind us. Sap flows in the trees, green buds begin to appear and the bears, chipmunks and woodchucks leave their winter hiding places. The first robin is a sign that spring is really here. The name of March comes from ancient Rome; back then March was the first month of the year and named Martius after Mars, the Roman god of war. March’s birthstones are aquamarine and bloodstone and both these stones mean courage. The flower is the Daffodil. If you were born before March 20th you are a Pisces and after March 21st an Aries. Spring in the northern half of the world begins with the vernal equinox, which occurs on March 19, 20, or 21. On this day, the center of the sun is directly over the equator. We often hear that “March comes in like a lion and goes out like a lamb.” This means that the first day of March is often stormy, and the last day is mild and warm. March 17th is St. Patrick’s Day the day of leprechauns (it is also our very own Denise’s and her husband’s wedding anniversary!), 4 leaf clovers, rainbows and pots of gold. Green beer is served in the Irish pubs and don’t forget to wear green! There are also some other fun days to celebrate in March – the 1st is Peanut Butter Day; there’s nothing like a peanut butter and jelly sandwich or yummy peanut butter cookies! The 14th is National Chip Day and the 22nd is Goof-Off Day; have some fun doing something you would not normally do! On the 26th it is Make Up Your Own Holiday Day – hmmm... ok... how about Take Mom Out To Dinner Day or Buy Mom a Nice Present Day or even maybe Clean the House for Your Wonderful Mother Day! Also, on March 26th at 8:30 p.m., hundreds of millions of people around the world will turn off their lights for an hour to demand action on climate change. You can do lots of fun things in the dark! Plan a candlelight dinner for your sweetie. March is nutrition month in Canada. The theme for this year’s campaign is “Celebrate food…from field to table.” In keeping with this theme; make a habit of choosing healthy and nutritious food, whether you get it from a farmers market or the grocery store. Whatever you do in this glorious month of March just remember “To be alive, to be able to see, to walk, to have houses, music, paintings - it’s all a miracle.
