Peace and Harmony When you change your thoughts, you change your life. The fastest way to achieve peace and harmony is to change your thinking. In order to change your outer world, you must first change your inner world. Your thoughts dictate your behaviour, and when you change your thought patterns, you will be changing your behavioural patterns as well. Altering your behaviour will change the course of your life. Focus on the positive; not the negative. Turn negative situations into positive ones. Everything happens for a purpose 

and a reason. Instead of complaining and feeling wounded after a negative situation, stop and think about how you can change it into a positive one. Remember, you attract what you dwell on; positive attracts positive, and negativity attracts negativity. If your thoughts are negative and victimizing, you will attract exactly that into your life. What are your thoughts attracting? Say what you mean, and mean what you say. Healthy communication is a key element in keeping peace and harmony in your life. Good communication eliminates being misunderstood, and prevents stressful situations. Saying what you mean not only gives you a sense of peace, you also earn the respect from others when they know you are true to your word. Observe your internal chatter. If you find your thoughts are negative or limiting, stop and replace those thoughts with positive ones. Your internal chatter is a good forecast to the direction your life is headed. Meditation is a good way to clear that negative chatter, and assist you in changing your thought process. Thoughts are powerful. After all, everything ever created started with a thought. You are creating your tomorrow with the thoughts you have today. Healthy Baked Snacks Baked Zucchini Chips

1 zucchini Canola cooking spray Seasoned salt, or other seasoning(s) of your choice

Preheat oven to 225°F. Line a baking sheet with parchment paper or non-stick foil, and spray with canola oil. Set aside. Slice zucchini into thin medallions, about the thickness of a quarter. (You can either use a knife & a very steady hand, or a mandolin slicer.) Lay out slices on prepared baking sheet, and spray tops lightly with additional cooking spray. Sprinkle with seasonings of your choice. (A note on seasoning, however - use LESS than what seems appropriate. These shrink considerably in the oven, and if you use too much it gets very concentrated. It’s better to end up under seasoned and add more later.) Place in preheated oven and bake 45 minutes. Rotate baking sheet, and bake an additional 30-50 minutes, until chips are browned and crisped to your liking. These are best eaten within a couple hours of removing from the oven, as they start to get chewy if left out. One zucchini makes one serving (1/4 C. - 1/3 C. of chips depending on the size of your squash). Apple Chips 2 large apples, cored (I used Red Delicious) 2 tsp sugar (optional) 1 tsp cinnamon Canola oil spray Preheat oven to 200 degrees. Thinly slice apples crosswise about 1/8-inch (2 mm) thick with a mandolin or sharp knife. Arrange apple slices in a single layer on two parchment-lined rimmed baking sheets, and spray with canola oil cooking spray. If using sugar, combine in a small bowl with cinnamon. Put mixture into a sieve and sprinkle evenly over apple slices. Bake in the top and bottom third of the oven until apples are dry and crisp, about 2 hours (mine took a little longer than that to get crisp, but I didn’t use sugar). Remove from oven and let ‘chips’ cool completely before transferring to a sealed container for up to 3 days. Makes about 2 cups of apple chips. Sweet Potato Chips Slice sweet potatoes thinly on a mandolin slicer, toss the slices in one teaspoon of olive oil, lay them out on a cookie sheet, sprinkle them with salt, and bake at 400 degrees for 20-25 minutes, flipping once. www.thenewsyneighbour.com

So many fabulous things are green, like bright green leaves in the spring, soft luscious grass, bright beautiful green eyes and the incredible turquoise green of the Caribbean ocean. This being the case, you can well imagine that St. Patrick’s Day on March 17th, with everything green, including beer, is one of my favourite days. This special day commemorates Saint Patrick (c. AD 387–461), the most commonly recognised of the patron saints of Ireland, and the arrival of Christianity in Ireland. Saint Patrick’s Day was made an official feast day in the early seventeenth century, and has gradually become a celebration of Irish culture in general. Originally, the colour associated with Saint Patrick was blue. Over the years the colour green and its association with Saint Patrick’s Day grew. Green ribbons and shamrocks were worn in celebration of St Patrick’s Day as early as the 17th century. Saint Patrick is said to have used the shamrock, a three-leaved plant, to explain the Holy Trinity to the pagan Irish, and the wearing and display of shamrocks and shamrock-inspired designs have become a ubiquitous feature of the day. In the 1798 rebellion, to make a political statement, Irish soldiers wore full green uniforms on March 17th in hopes of catching public attention. The phrase “the wearing of the green,” meaning to wear a shamrock on one’s clothing. In March 2009, the Calgary Tower changed its top exterior lights to new green CFL bulbs just in time for Saint Patrick’s Day. Part of an environmental non-profit organisation’s campaign (Project Porchlight), the green represented environmental concerns. Approximately 210 lights were changed in time for Saint Patrick’s Day, and resembled a Leprechaun’s hat. After a week, white CFLs took their place. The change was estimated to save the Calgary Tower some $12,000 and reduce greenhouse gas emissions by 104 tonnes. I plan on having a St. Patrick’s Day celebration this year with everything green, including the food. This is going to be so much fun! I have my menu all planned and for those of you who would like to celebrate in the same fashion, I have included all the recipes here for you. Have fun and Happy St. Patrick’s Day!!! For a beverage I plan to start with a Lemon Lime Punch 2 quarts water, 2 cups sugar, 2 envelopes unsweetened lemonlime soft drink mix, 1 can (46 ounces) unsweetened pineapple

juice, 1 litre ginger ale, chilled, 1-quart lime sherbet In a punch bowl, combine the water, sugar and soft drink mix; stir until dissolved. Stir in pineapple juice. Refrigerate until chilled. Just before serving, stir in ginger ale and top with scoops of Sherbet. Yield: 6 quarts. For an adult party, a couple cups of vodka might spice it up a bit. For your starter salad, this easy Lucky Lime Salad sounds just perfect! 1 package (3 ounces) lime gelatine, 1 cup boiling water, ½ cup cold water, 1 package (3 ounces) cream cheese, softened, 1/4 tsp lemon juice, 2 cups whipped topping, 1 can (8 ounces) crushed pineapple, drained SHAMROCKS for the top: 1 package (6 ounces) lime gelatin, 2-1/2 cups boiling water In a small bowl, dissolve gelatin in boiling water; stir in cold water. Chill until slightly thickened. Meanwhile, in a small bowl, beat the cream cheese, lemon juice and whipped topping until smooth; stir into gelatin. Fold in pineapple. Pour into a greased 9-in. square dish. Refrigerate until set, about 3 hours. For shamrocks, dissolve gelatin in boiling water. Pour into a greased 11-in. x 7-in. pan. Refrigerate until set, about 3 hours. Using a 2-in. shamrock-shaped cookie cutter cut plain gelatin into nine shamrocks. Cut gelatin mixture into nine squares; top each with a gelatin shamrock. Yield: 9 servings. Your side dish could be this easy Colcannon Recipe. This tasty and traditional Irish recipe for buttery potatoes and cabbage is good any time of year. 1-1/2 pounds medium red potatoes cut into 1-inch cubes, 7-1/2 cups chopped cabbage, 8 green onions, chopped, 1 cup fat-free milk, 1/3 cup reduced-fat butter, 3/4 tsp salt, 1/4 tsp pepper Place potatoes in a Dutch oven; cover with water. Bring to a boil. Cover and cook over medium heat for 12-15 minutes or until potatoes are almost tender, adding the cabbage during the last 5 minutes of cooking. Meanwhile, in a small saucepan, combine green onions and milk. Bring To a boil. Reduce heat; simmer, uncovered, for 5-6 minutes or until onions are soft. Drain potato mixture. Mash with milk mixture, butter, salt and pepper. Yield: 8 servings. Or, Zucchini Cakes! While these crunchy cakes are more yellow in colour than green, they’re still a perfect St. Paddy’s Day treat for your family and friends. 1 large zucchini, grated, 1 large egg, 1 cup panko bread crumbs, Salt and pepper to taste, 1 tbsp Adobo spices, 2 c. Parmesan cheese, grated

In a large bowl, combine all the ingredients. Mix thoroughly. Heat a large pan on medium, and spray with Pam. Shape spoonful’s of the zucchini batter into 2-in. (diameter) patties, and drop onto the sizzling pan. Cook each side for about a minute and a half, or until the outside is golden brown. Finish the cakes off in the oven. 1/2 tbsp. olive oil, 1 cup frozen edamame, thawed, 5 white mushrooms, sliced, 1 roma tomato, diced, 1 cup fresh spinach, 2 organic green bell peppers, 1 tbsp. teriyaki stir-fry sauce, 1/2 cup uncooked quinoa, rinsed and cooked , 1/3 cup water Heat oil in a skillet over medium-high heat. Remove from heat and place in a mediumsized bowl with cooked quinoa. Toss to combine. Set aside to let the filling cool until just warm. Meanwhile, preheat the oven to 350°F. Slice the tops off the peppers, and then core and seed them. Stuff each pepper with the filling, packing it down until each pepper is filled to the top. Place the peppers in a baking dish and replace the tops. Add the water to the bottom of the dish. Cover everything with aluminum foil and bake for 30 minutes. Celiac disease is a condition that damages the lining of the small intestine and prevents it from absorbing parts of food that are important for staying healthy. The damage is due to a reaction to eating gluten, which is found in wheat, barley, rye, and possibly oats. The exact cause of celiac disease is unknown. The lining of the intestines contains areas called villi, which help absorb nutrients. When people with celiac disease eat foods or use products that contain gluten, their immune system reacts by damaging these villi. This damage affects the ability to absorb nutrients properly. A person becomes malnourished, no matter how much food he or she eats. The disease can develop at any point in life, from infancy to late adulthood. People who have a family member with celiac disease are at greater risk for developing the disease. The disorder is most common in Caucasians and persons of European ancestry. Women are affected more often than men. The symptoms of celiac disease can be different from person to person. This is part of the reason why the diagnosis is not always made right away. For example, one person may have constipation, a second may have diarrhea, and a third may have no problem with stools. Gastrointestinal symptoms include: • Abdominal pain, bloating, gas, or indigestion • Constipation • Decreased appetite (may also be increased or unchanged) The Newsy Neighbour

Did you know that one in one hundred and thirty-three people suffer from celiac disease? We just went through a bit of a scare with one of our own family members on this growing problem with people in our society. Because of this, I decided to write this months Body Parts article about information surrounding this disease.

Because the intestines do not absorb many important vitamins, minerals, and other parts of food, the following symptoms may start over time: • Bruising easily • Depression or anxiety • Fatigue • Growth delay in children • Hair loss • Itchy skin • Missed menstrual periods • Mouth ulcers • Muscle cramps and joint pain • Nosebleeds, Seizures • Tingling in the hands or feet • Unexplained short height. Children with celiac disease may have: • Defects in the tooth enamel and changes in tooth colour • Delayed puberty • Diarrhea, constipation, fatty or foul-smelling stools, nausea, or vomiting • Irritable and fussy behaviour •Poor weight gain • Slowed growth and shorter than normal height for their age. Celiac disease cannot be cured. However, your symptoms will go away and the villi in the lining of the intestines will heal if you follow a lifelong gluten-free diet. Do not eat foods, beverages, and medications that contain wheat, barley, rye, and possibly oats. You must read food and medication labels carefully to look for hidden sources of these grains and ingredients related to them. Because wheat and barley grains are common in the American diet, sticking with this diet is challenging. With education and planning, you will heal. You should NOT begin the gluten-free diet before you are diagnosed. Starting the diet will affect testing for the disease. The health care provider may prescribe vitamin and mineral supplements to correct nutritional deficiencies. Occasionally, corticosteroids (such as prednisone) may also be prescribed for short-term use or if you have sprue that does not respond to treatment. Following a well-balanced, gluten-free diet is generally the only treatment you need to stay well. When you are diagnosed, get help from a registered dietitian

who specializes in celiac disease and the gluten-free diet. A support group may also help you cope with the disease and diet. What can you eat that is gluten free? There are actually lots of options. To start, unprocessed fruit, vegetables, meat, poultry, seafood, dairy, and oils are all naturally gluten free. So are beans, legumes, rice, and sweeteners like honey and sugar. In general, you will notice that all of these foods do not need ingredient labels, or have ingredients lists with only one item. When these basic foods are processed into other products, you need to start looking at the ingredient lists to make sure that all of the ingredients in the product are gluten free. When you take a naturally gluten-free potato and fry it and add spices, you need to read the label to make sure that all the ingredients added are gluten free. When you grind meats and add spices and stuff it into casing to make sausage, you need to do the same thing – read the label to make sure the final product is gluten free. The challenge comes when it comes to grains and baking products because wheat is the primary starch used in so many baked goods. There are a lot of different products that can be used when you create gluten-free baked goods, however. 8 Ways to Stick to a Healthy Diet

1. Start a Food Diary. Studies have shown time and again that people who keep food diaries are more likely to lose weight. Before you even start to make changes to your diet, start by writing in a food diary for two weeks. Record everything you ate, the number of calories, and other nutritional information like fat, fibre, and more. Food diaries are a great tool for figuring out what needs to change about your diet. 2. Take a Hard Look at your Lifestyle and Food Habits. Look through your food diary. What sorts of lifestyle habits, both good and bad, are contributing to your food choices and preferences? Don’t have enough time in the morning to eat a big breakfast? Ordering takeout at the end of the day because you’re too tired to make dinner? Find simple solutions like, say, waking up a little earlier each morning or doing some prep work over the weekend to prepare for weekday dinners. Often times, lifestyle changes will bring upon diet changes. 3. Start Slowly. Let’s say you want to run a marathon, but can barely make it a block or two without stopping. Does it mean you’ll never be able to go the distance? Nope, it means you haven’t trained enough. The same thing goes for revamping your diet. If you suddenly cut 1,500 calories a day, your body won’t be very happy, and you’ll be more likely to stray from your healthy eating plan. But you can train yourself to, overtime, incorporate healthy eating plans. Try to swap out, or cut back on, one thing a week. Reach for an apple or a handful of almonds instead of potato chips in the afternoon. Cut the cream and sugar out of your morning coffee. Take a few less bites of ice cream. You get the picture. 4. Consider Not Just What You Eat, But How Much. So much of dieting is about how much we eat, not neces-

sarily about what we eat. Studies have shown that people tend to underestimate how much they consumed. You can blame restaurants, in large part, for that one — they’ve gotten us accustomed to larger and larger portion sizes over the years. You can still eat many of the foods you love as long as you monitor your portion sizes. Love chocolate? Try to limit yourself to one small piece a day. Cheese fanatic? Give yourself a little to enjoy with your meal. You have to know your limits, however. If one bite of ice cream is never going to be enough, and you secretly eat it one spoonful at a time over the course of a night until the whole pint is gone, then perhaps its best to not keep ice cream in the freezer at all. 5. Don’t Think About What You’re Giving Up, Think About What You’re Gaining. It’s easy to get in the mindset that dieting is all about what you can’t eat instead of what you can. Don’t think about the white bread or cheese you’ve cut out of your sandwich, think about the healthy greens or other vegetables you’ve added to your sandwich. Make a list of your favourite healthy foods, the kinds of foods that aren’t even a little bit of a chore to eat, and incorporate those into your daily meals. 6. Experiment. Is that list of your favourite healthy foods pretty pathetic? Now’s the time to experiment! Make a point to try one new ingredient, or one new meal, a week. Go to the farmer’s market or grocery store and find a vegetable you’ve never seen before. Don’t just add some steamed broccoli to your usual pasta, but find recipes that incorporate the broccoli and let it shine. If you’ve written off quinoa because of one lousy experience, go back and try a different recipe. Start keeping a list of your favourite healthy meals. 7. Have Healthy Snacks on Hand. Page 18

It’s 3PM and you’re starving, but the only food around is stuff that comes out of a vending machine. Don’t let this happen ever, ever again! Keep a stash of healthy snacks, like nuts, granola bars and fruits and veggies, close at hand. 8. Treat Yourself. Don’t skip that stuffing on Thanksgiving. Don’t stick with a fruit salad on your birthday when what you really want is a slice of chocolate cake. Those may be extreme examples of letting yourself “cheat” on your healthy eating every once in a while, but if you let yourself eat the foods you crave every once in a while (perhaps once a month or even once a week) it will be easier to keep from straying the rest of the time. Or don’t. Everyone is different. Perhaps cheating on your diet isn’t right for you, because you won’t be able to control yourself. I absolutely love having alfalfa sprouts on my sandwiches, and up till now, I did not know I should not be eating them because I suffer from Angioedema, which is an autoimmune condition where my face, tongue or throat will swell. It seems that people with inflammatory conditions should not eat alfalfa sprouts. Isn’t that interesting? So I did a little more research and found there are quite a few other sprouts I could put on my sandwiches, in my salads and add to soups and I can grow them in my own kitchen!

Are sprouts good for you? In the life of a plant, sprouting is a moment of great vitality and energy. The seed, after having remained quiet for an often-long period of time, becomes more and more active and begins its journey up through the topsoil and into the open air. When it sprouts, a healthy seed activates many different metabolic systems. It converts some of its sugar content into vitamin C, to act as an antioxidant in the new open-air environment. It also begins to synthesize a variety of new enzymes, many of them necessary to handle oxygen metabolism in the world above the soil. On a gram for gram basis, sprouts are richer in vitamin C than the older, more mature plants they eventually become, because this moment in their lifecycle calls for a high level of vitality. Sprouts can definitely be good for you! For you to get the benefit of healthy sprouts, the sprouts need to be very fresh, and carefully refrigerated and handled. Most any kind of seed could also be sprouted at home, using one part seed to three parts water, a wide-mouth glass jar, and a screened lid. Many health food stores and natural foods groceries have sprouting starter kits that make the process easy to understand and complete. It’s worth noting here that seeds are smart, and some will not do much sprouting in polluted tap water, making a cleaner water source (like bottled spring water or filtered water) a better choice when sprouting. Although mung bean sprouts and alfalfa sprouts are the most common commercially available sprouts, equally easy to sprout and healthy are red clover, radish mustard, lentil, garbanzo, pumpkin, and sunflower. One word of caution about alfalfa: this seed has higher than usual amounts of an amino acid called canavanine, and some research studies have assowww.thenewsyneighbour.com

ciated canavanine with worsening of inflammatory conditions including rheumatoid arthritis and systemic lupus erythematosus. Individuals with chronic inflammatory conditions, including autoimmune conditions, may want to avoid alfalfa sprouts for this reason. Growing your own sprouts at home I grew sprouts years ago and it was fun! It’s wonderful how the seeds burst open and reveal new life. The other thing about sprouting is that anyone can do it; you don’t need much space or special tools, and it’s easy and exciting. But most of all: sprouts are your alive food, which make you come alive! WHAT CAN YOU SPROUT? All seeds such as alfalfa, sunflower seeds, red cabbage, broccoli, celery, oats, radishes, leeks, you name it. Grains such as wheat grass, barley, rye, millet, rice and buckwheat. Legumes require a longer soaking time (about 15 hours) because they are much harder. But lentils, chickpeas and mung beans are very worthwhile waiting for. WHAT DO YOU NEED? Any glass jar will do. Not too small though; the 1-liter canning jars work good. Cheesecloth and a rubber band to hold the cloth tight around the mouth of the jar. DAY 1 - All you need to do is place one or two tablespoons of seeds or grains of choice in the jars and just cover them with pure water. Put the cheesecloth over the mouth of the jar and secure with an elastic band. Put them in a dark place at room temperature overnight. DAY 2 - In the morning, rinse the seeds very well and turn the jars upside down so all the water can leak out and the seeds won’t get a chance to get moldy. Rinse 2 to 3 times a day. If the weather is warm, rinse more often. Always turn the jars

Depending on the kind of seed, you will already notice some tails ready to come out. DAY 3 - Continue rinsing and draining. Some sprouts will be ready; others will need another day such as wheat grass. Day 4 - Are your sprouts having nice tails? Then they are ready to come into the light! Place the jars upside down in bright light, preferably in sunlight. You will see photosynthesis take place and watch your sprouts turn green in only a few hours. Keep them in the light for a whole day until they are nice and green. Store them in a sealed container in the refrigerator. They keep well for about a week. But don’t wait that long; just eat them to benefit fully from their life forces! SOME SPROUTS TO CONSIDER Alfalfa Sprouts - Sprouts of the alfalfa pea are among the most commonly available edible sprouts. Containing significant sources of dietary phytoestrogens, alfalfa sprouts are claimed to have a preventative effect on menopausal symptoms, as well as on osteoporosis and heart disease. According to a study cited by the International Sprout Growers Association website, alfalfa sprouts were ranked alongside broccoli flowers and brussels sprouts for high levels of peroxyl radical-fighting antioxidants. Alfalfa sprouts are commonly served raw on Page 20

sandwiches or in salads. Bean Sprouts - Bean sprouts are among the easiest to grow as well as being commonly available. A number of options are at hand when you want to add bean sprouts to your diet. Blanching is required or recommended before eating most bean sprouts, according to “The Vegetable Bible.” Depending on the specific type, bean sprouts are rich sources of folate, protein, vitamin C, B vitamins and iron. Lentil Sprouts - Lentil sprouts are a very good source of vitamin C, according to sproutpeople.org. When raising lentil sprouts yourself, let them soak up to 10 hours a day for four days. Make sure to rinse the sprouts twice daily. Only whole lentils should be raised because split lentils won’t sprout. In addition to vitamin C, lentil sprouts are sources of thiamine, copper and iron and especially rich in folate and manganese. Broccoli - Broccoli sprouts are considered to be one of the best foods you can eat. They are high in antioxidants, as well as vitamins A, B, and C. They are delicious in soups and stir fries, as well as on sandwiches. They are ready to eat in three to six days, and can be stored for up to two weeks in the refrigerator. Peas - A one ounce serving of pea sprouts provides ten percent of your daily folate requirement, as well as a bit of protein and fibre. They are very quick to produce, providing you with edible sprouts in as little as two days. Radishes - If you like the spicy zing of radishes, try sprouting radish seeds. They are fairly high in nutrients, providing decent amounts of vitamin A, B, C, E, and K, as well as calcium. They take three to six days to sprout, and the sprouts can be stored for up to six weeks in the refrigerator. Wheat - We eat wheat grass for health, and it’s easy to get those same health benefits by sprouting wheat grass seeds in a jar of water on your kitchen counter. Wheat grass sprouts in two to three days, and you can add it to breads, soups, blended health drinks, or anything else you want to sneak some vitamins into. They’ll keep in the refrigerator for about one week. One final all-important food safety note There have been warnings issued about sprouts and E. coli, and most articles about growing your own sprouts contain the obligatory warning. There is one surefire way to ensure that you don’t have to worry about E. coli: buy seeds that are specifically labeled both organic and “for sprouting” (“pathogenfree” is another good label to look for.) Seeds that are labeled in this manner have been harvested, cleaned, and tested for pathogens. Several online sources sell pathogen-free sprouting seed, as do health food stores. If you’re going to eat sprouts from the store, make sure that you purchase fresh, crisp sprouts that have been refrigerated properly. Don’t purchase sprouts that are dark or dull in colour or have a musty smell. Wash thoroughly at home prior to consuming. Pregnant women should not eat store bought sprouts. The Washcloth I was due for an appointment with the gynecologist later in the week. Early one morning, I received a call from the doctor’s office to tell me that I had been rescheduled for that morning at 9:30 am. I had only just packed everyone off to work and school, and it was already around 8:45 am. The trip to his office took about 35 minutes, so I didn’t have any time to spare. As most women do, I like to take a little extra effort over hygiene when making such visits, but this time I wasn’t going to be able to make the full effort. So, I rushed upstairs, threw off my pajamas, wet the washcloth that was sitting next to the sink, and gave myself a quick wash in that area. I threw the washcloth in the clothes basket, donned some clothes, hopped in the car and raced to my appointment. I was in the waiting room for only a few minutes when I was called in. Knowing the procedure, as I’m sure you do, I hopped up on the table, looked over at the other side of the room and pretended that I was in Paris or some other place a million miles away. I was a little surprised when the doctor said, “My, we have made an extra effort this morning, haven’t we?” I didn’t respond. After the appointment, I heaved a sigh of relief and went home. The rest of the day was normal... I did some shopping, cleaning, cooking. After school when my 6 year old daughter was playing, she called out from the bathroom, “Mommy, where’s my washcloth?” I told her to get another one from the cupboard. She replied, “No, I need the one that was here by the sink. It had all my glitter and sparkles saved inside it.”

Healthy Eating We are bombarded everyday with different ideas, theories and studies of what makes a healthy diet; Low fat, low carb, no carb, vegetarian, vegan, raw food, South Beach, paleo, clean eating, 80-10-10, etc. The list of diets and their health claims are everywhere. If that wasn’t confusing enough, you then have different weight loss groups or agencies like Herbal Magic, Dr. Bernstein, Jenny Craig, Weight Watchers, just to name a few. They all have different diet plans and philosophies. Not to mention, it seems like every year what was unhealthy is now healthy, or a new super food is discovered. All of this conflicting information is frustrating, confusing and over whelming to most of us trying to make the healthier choice. What is the healthy choice? Make it simple. Less packaging - Usually the less packaging something has, the more nutritious it is. An example would be an apple or produce has very little to no packaging. Produce is very nutritious and takes little to no prep work before eating. Less packaging is also better for the environment.

Where did it come from? - Look and see where it was made or imported form. Did you know that about 80% of food in Canadian super markets is imported? This not only drives up the cost of groceries, it hinders local Canadian famers. Quality of life - This refers to animals and the products they help make. This includes meat, eggs, dairy products such as cheese, milk, yogurt, etc. When animals are raised in their natural environments or as close to as possible, they are less prone to disease, they are active, humanely treated, and are fed or eat what they would in the wild. How does this affect your meat, eggs, or dairy? Grass fed animals have higher levels of Omega 3, leaner meat and taste great. Not to mention less contaminates, or toxins in their systems or fat. Have you ever cracked a free range organic chicken egg, or farm fresh egg and compared it to a regular “factory” chicken egg? You can see the difference! Mother Nature knows what she’s doing. Man cannot take something whole and make it more nutritious by processing and adding. Think about this next time you buy your low calorie, low fat yogurt, cheese or sour cream. Milk doesn’t naturally come fat free, with vitamins added. Hmm... This article is only my opinion and is meant to make you think about your food choices, and sources.

        We all know that healthy eating and physical activity go hand in hand. Once you learn the basics, you'll find that eating healthy and staying active isn't hard at all. There are many small ways that you can change your eating habits so that you eat healthier foods. Consider these tips when choosing or preparing your foods:  Fry foods with a little bit of olive oil rather than butter, margarine, or lots of vegetable oil.  Use canola oil when baking.  Prepare fish such as salmon or mackerel twice a week.  Sprinkle slivered nuts or sunflower seeds on your salads instead of bacon bits.  Eat Canadian bacon or lean ham instead of bacon.  Try low fat frozen yogurt instead of regular ice cream.  Eat broiled, baked, roasted, or grilled chicken without the skin instead of fried chicken.  Add lettuce, tomato, and other vegetables, rather than cheese, to your sandwiches.  Eat extra lean ground beef (5% fat) instead of regular ground beef (25% fat).  Try whole-wheat tortillas instead of regular flour tortillas.  Try whole-wheat or multigrain bread instead of white bread.  Try low-fat, low-sodium crackers instead of regular crackers.  Eat water-packed rather than oil-packed tuna.  Use mustard, catsup, or low-fat mayonnaise on your sandwiches instead of regular mayonnaise.  Try making sandwiches with 95% to 97% fat-free lunchmeats.  Use lemon juice, herb vinegar, or reduced-calorie salad dressings on your salads.  Choose non-hydrogenated peanut butter. You can tell that it's non-hydrogenated if there's some oil on top of the peanut butter. Hydrogenated peanut butter is solid at room temperature.  Eat lower-fat cookies, such as graham crackers or fig bars.  Choose canned fruits packed in water rather than syrup.

       We all know the answer to this question. The question is, are you doing it?  Fruits and vegetables.  Grains (at least half of your grains should be whole grains, such as whole wheat, whole oats, oatmeal, whole-grain corn, brown rice, wild rice, whole rye, whole-grain barley, buckwheat, bulgur, millet, or quinoa).  Fat-free or low-fat versions of milk, cheese, yogurt, and other milk products.  Fish, skinless poultry, lean meats, dry beans, eggs, and nuts.  Polyunsaturated and monounsaturated fats (found in fish, nuts, and vegetable oils). Also, you should limit the amount of foods you eat that contain:  Saturated fat (found in foods such as fatty cuts of meat, whole milk, cheese made from whole milk, ice cream, sherbet, frozen yogurt, butter, lard, cakes, cookies, doughnuts, sausage, regular mayonnaise, coconut, and palm oil).  Trans fat (found mainly in processed foods such as cakes, cookies, crackers, pies, stick or hard margarine, potato chips, and corn chips).  Cholesterol (found in foods such as liver, chicken and turkey giblets, pork, sausage, whole milk, cheese made from whole milk, ice cream, sherbet, and frozen yogurt).  Sodium (found in salt and baking soda).  Added sugars (such as corn syrup, corn sweetener, fructose, glucose, sucrose, dextrose, lactose, maltose, honey, molasses, raw sugar, invert sugar, malt syrup, syrup, caramel, and fruit juice concentrates). Eating lots of saturated fat, trans fat, and cholesterol may cause plaque buildup in your arteries. Eating lots of sodium may cause you to develop high blood pressure, also called hypertension. Eating lots of added sugars may cause you to develop type 2 diabetes. Both hypertension and diabetes increase your risk of heart disease and stroke.


    You have probably heard by now that physical activity is good for you. Well, the news in favour of regular physical activity keeps coming in! The new Physical Activity Guidelines state that an active lifestyle can lower your risk of early death from a variety of causes. There is strong evidence that regular physical activity can also lower your risk of heart disease, stroke, high blood pressure, unhealthy cholesterol levels, Type 2 diabetes, metabolic syndrome, colon cancer, breast cancer, falls and depression. Regular activity can help prevent unhealthy weight gain and also help with weight loss, when combined with lower calorie intake. It can also improve your cardio respiratory (heart, lungs, and blood vessels) and muscular fitness. For older adults, activity can improve mental function. Physical activity may also help improve functional health for older adults, reduce waistline size, lower the risk of hip fracture, lower the risk of lung cancer, lower the risk of endometrial cancer, maintain weight after weight loss, increase bone density and improve sleep quality. Yet with all the benefits of being physically active, maybe you haven't quite gotten around to setting up a regular routine. If you are having trouble getting started, just checkout the list full of really good ideas to get you going. Activity is important for everyone!

       

Fit it into a busy schedule

 If you can't set aside one block of time, do short activities throughout the day, such as three 10-minute walks.  Create opportunities for activity. Try parking your car farther away from where you are headed. If you ride the bus or train, get off one or two stops early and walk.  Walk or bike to work or to the store.  Use stairs instead of the elevator or escalator.  Take breaks at work to stretch or take quick walks, or do something active with coworkers at lunch.  Walk while you talk, if you're using a cell phone or cordless phone.  Doing yard work or household chores counts as physical activity. Turn on some upbeat music to help you do chores faster and speed up your heart rate.

Make it fun

 Choose activities that you enjoy.  Vary your activities, so you don't get bored. For instance, use different jogging, walking, or biking paths. Or bike one day, and jog the next.  Reward yourself when you achieve your weekly goals. For instance, reward yourself by going to a movie.  If you have children, make time to play with them outside. Set a good example!  Plan active vacations that will keep you moving, such as taking tours and sightseeing on foot.

Make it social

 Join a hiking or running club.  Go dancing with your partner or friends.  Turn activities into social occasions — for example, go to a movie after you and a friend work out. Overcome challenges  Don't let cold weather keep you on the couch. You can find activities to do in the winter, such as indoor fitness classes or exercising to a workout video.  You can also find ways to be active at home. For instance, you can do push-ups or lift hand weights. If you don't have hand weights, you can use canned foods or bottles filled with water or sand.  Don't expect to notice body changes right away. It can take weeks or months before you notice some of the changes from being physically active, such as weight loss. And keep in mind, many benefits of physical activity are happening inside you and you cannot see them. OK, gang – all this information will hopefully give you that little nudge you need to get you and your family started on the road to a healthier way of life! Remember, just put one foot in front of the other and before you know it, you will be running. Have fun and be healthy. You have nothing without your health.

Double Duty Plants for Your Garden All summer flower beds or containers need some tall, spiky plants to add visual interest by providing height and movement among your flowers. Is it time to replace that old reliable refrigerator or washer? There are a number of reasons to consider upgrading. You can save money, save energy, save water, increase your homes re-sale value or just treat yourself with that beautiful new stainless steal appliance you have been dreaming about!

Tall & Short of it… It seems a common belief that humans are getting taller as a species. The reasons for increased height and other changes (such as increased longevity) are still being debated. For a fun evening, bring this topic up in a room full of researchers and watch them work themselves into a veritable tizzy over it. One of the more accepted contributing factors lies in your kitchen. Cold beer? Sorry, close but not quite. It’s your refrigerator. The ability to refrigerate food has had long term benefits to human health and development. Refrigeration has been instrumental in reducing food related health risks and making it easier to store larger amounts. This has allowed for increased production, central distribution and the ability to store more in our residence, thus reducing time we have to spend foraging for nuts and berries. It has also (theoretically) created cost savings that allow us to increase our standard of living. Refrigeration may be considered as the science of food Page 30

preservation by temperature (cooling). Generally, a temperature below 4.8°C (40°F) is considered refrigeration. Below this temperature bacteria and fungus (mold) activity is slowed considerably. Note that it is not stopped (which is why green things can live at the back of the fridge) and there is a definite lifespan to most refrigerated fresh food. We can dramatically increase product lifespan by combining methods of preservation such as pickling and refrigeration. Freezing extends our ability to store food even longer while maintaining a substantial degree of freshness and nutrient quality. OK – there’s a down side - all this time freed from foraging for nuts, berries and t-bone steaks results in more time to spend eating. It doesn’t take much time or great skill to sneak up on a refrigerator. Enter the diet and exercise plan. All this is wonderful in our species development but we must remember that it isn’t free. We need to do a little maintenance on our fridge to keep it working at efficient levels. As most know, fridges work by taking heat from one point (inside the fridge) and putting it somewhere else (outside the fridge). Usually this means that the freezer gets very cold and some of that

The Mortgage Mogul Do You Know How You Rate? Since the downturn of the economy over two years ago, financial institutions and various credit adjudicators have tightened the reins on their lending policies, and in particular, pay much greater attention to an individual’s past credit experience than ever before. Nowhere has this been more evident than in the mortgage industry. With foreclosures at historic levels, most lenders, insurers and their investors have reduced their product offerings, while at the same time, they have placed considerably more emphasis on a client’s credit (beacon) score when making their final decision. With that being said, there are a number of things you should know; not only when it comes to you qualifying for any type of credit request, but also in maintaining a good credit rating in general. Due to the fraudulent activity that is occurring in the world today, it is prudent that you check your credit report on an annual basis to ensure that all account information that is contained in the report is accurate. When applying for credit, it is important that you don’t apply to several different banks or financial institutions within a short time of each other. Each time you do so, it is referred to as a “hit”, and this may result in your score dropping enough to prevent you from qualifying for that particular credit product. In the case of purchasing a home or refinancing your existing property, it is beneficial to use the services of a mortgage broker as we typically access your credit report once, and supply it to the various financial institutions for review. If you access your own credit report by contacting either Equifax or Transunion directly, this does not represent a “hit” on your file and therefore does not impact your score. In order to get your score as high as possible, I would suggest the following. It is best to make at least the minimum payment required for that particular credit card or line of credit each month. If possible, keep your balance(s) at or below 75% of your credit limit(s). In the event that you are either late with a payment or your account has gone to collection, it is vital that you bring the account up to date as soon as possible. You would be amazed how much your score will drop if you are so much as 30 days late

On the Move... and Choosing a Realtor Selecting a realtor is a major initial step in the process of selling or buying a home. It’s also one of the toughest decisions a homeowner must make. Many people have difficulty distinguishing one real estate associate from another. QUESTIONS TO ASK REALTORS As you shop for a Realtor, ask these questions. The answers you receive will help you make a confident decision about who’s right for your needs. 1. What is your experience in my area? It’s important to find an experienced realtor who can help you understand the local market and price your home competitively. This person should know the price of other homes that have sold recently in the area, how long other homes have been on the market and what buyers are looking for in your location. 2. What has your success rate been for home sales during the past 12 months? What is the average amount of time it took to sell those listings? These questions can help you better understand the real estate associate’s level of expertise. Ideally, you will want to work with an associate who has a high percentage of completed transactions within your home’s price range. How long it takes them to sell a home is a good indication of their marketing ability. Knowing this information about each real estate associate will help you compare and select the best fit.

If you pay your bank’s off-the-rack mortgage rate, you could be making a huge mistake. Never - repeat, never - simply renew a mortgage without trying to arrange a better deal, or have a mortgage broker do it for you! Remember you don’t have to stay with your current lender. What is the due date for a personal income tax return? The due date for most 2012 personal income tax returns is April 30, 2013. Personal income tax returns, except for those of self-employed individuals, are due by April 30th, as is any amount owing. Penalties and interest may be charged for late returns or late payments. Self-employed individuals have until June 15th to file their personal tax returns, but any amounts owing must still be paid by April 30th.

Interest and penalties If your return is late and there is a balance owing, you will be subject to interest and late-filing penalties. Interest is charged on the outstanding balance starting the day after the due date of the taxes payable, and is compounded daily. Interest rates are subject to change quarterly. For current rates, see the Canada Revenue Agency (CRA) web page which provides prescribed interest rates. The late filing penalty is 5% of the outstanding balance, plus 1% of the outstanding balance for every month that your return is late, to a maximum of 12 months (that would be a total penalty of 17% of the balance owing).

How long will it take to get a refund? Canada Revenue Agency (CRA) says it takes about 2 weeks to process returns filed using NetFile, EFile, or Telefile, but they do not start processing returns until mid-February. Have you ever heard of upcycling? It has become quite the rage all over the western world and it is now here in the Strathmore region! The reason is that it works against our consumer modern culture, is creative, fun and helps the environment. Instead of purchasing something new, it encourages people to repurpose. Upcycling is the art of taking an item that would be normally recycled or thrown away after first use and turning it into something that is once again beautiful, useful, or pleasing to look at. These things can be used for economical gifts or enhance any home. Best of all, upcycling is something that anyone can do. Most of us are familiar with the way that grain processors burn waste materials like husks and stems to power their plants – a process that has been around for a long time. But the latest idea of upcycling became popular with the book called “Cradle to Cradle� in 2002. This book was written to encourage people to think about how they use things. As a result, entire pieces of furniture have been built out of discarded materials, bottles have become vases, buttons and computer parts have become jewelry and plastic bags have been made into yarn, just to name a few. There are many ways that you can be a part of upcycling in your community, like dumpster diving for the useful, re-using containers from lotions or food, joining groups who upcycling in your community and doing it together, or developing a business. Although everything does have potential to be used in upcycling, it is a lot of fun to imagine a new use for something. You may be surprised what you come up with. Whether you create something useful, beautiful, or both, reusing creatively is very fun and fulfilling. Men, Vehicles & Sports Future NBA Stars!

He is a towering figure at 7’2” with a wingspan of 7 – 4 and if all goes according to plan, Calgary’s Jordan Bachynski (pronounced Ba-shin-ski) will be an early second round pick in the 2013 NBA draft to be held on June 27th at Madison Square Garden in New York. Mark Stephen and I recently interviewed Jordan on QR77 Sportstalk and I could help but be inspired and impressed with his story. Bachynski suffered through an ankle injury at Centennial High School in Calgary that could have ended his basketball career. He then spent almost two years away from the game while serving a church mission in Florida. As you might expect, NCAA schools weren’t exactly jumping up and down to recruit him despite his impressive size. Jordan left Calgary in 2007 to head to Findlay Prep in Henderson, Nevada. He was hoping the experience would garner him more attention from US colleges. Unfortunately, his ankle didn’t allow him to showcase his skills. He had surgery in November of 2007 and his future in the game was in serious doubt. After serving his church mission in 2008 and his health restored, Jordan was once again ready to follow his dream of playing basketball. “University’s weren’t exactly knocking my door down,” Bachynski told us. “However, I had faith it was going to work out.” There was some interest from BYU and Connecticut, but when the offer came from Arizona State, he was quick to sign on the dotted line. The Sun Devils are glad he did. He didn’t play much in his rookie season as he recorded 7 DNP (did not play) for a below average team that finished 12 – 19. Fast forward two years and NBA scouts are now taking notice of one of the tallest players in the NCAA. Earlier this season, Bachynski recorded 13 points, 12 rebounds and 12 blocked shots in an 87-76 win over Cal State Northridge. It was the first triple-double in Arizona State history. According to his coach Herb Sendek, Jordan released his “inner animal.” “I loved my time in Calgary,” says Bachynski. “My mom and dad are still there and I love going home. However, if you Page 40

want to play hockey, you stay in Canada. If you want to play basketball, you have to go to the States.” Although he does have a year of eligibility left, he told us he does plan to declare himself available for the NBA draft this summer. Now here’s where the story gets interesting. Jordan has a younger brother who is also playing in the NCAA with the University of Utah. Dallin Bachynski checks in at 7’0” and could also be eligible for the NBA draft. “I am not going to declare,” says Dallin who also was a late starter at the NCAA level because of his two year church mission in Croatia. “I still have some learning and maturing to do at this level so I don’t think it would be in my best interest.” As his parents moved to Springbank, Dallin played his high school ball in Calgary at Winston Churchill. He led the Bulldogs to an impressive 95 – 5 record in three years and two consecutive city championships. You have to feel for his parents, John and Yolanda as I am sure their grocery bills were out of this world. “My brother and I ate a lot,” smiled Dallin. “About 5000 calories a day! We still like to eat.” Although Dallin and Jordan have never played on the same team, they have played against each other. On January 2nd, Utah lost to Arizona State in overtime. Dallin was injured for the rematch on February 13 and did not play. “I would love the opportunity to play with my brother,” Dallin told us on Sportstalk. “Maybe one day we will get that chance with Team Canada.” Hopefully Steve Nash and Basketball Canada will give them the opportunity?

And this is only one of thousands of objects that are destined to one day enter our neighbourhood in space. “There are lots of asteroids that we’re watching that we haven’t yet ruled out an Earth impact, but all of them have an impact probability that is very, very low,” Don Yeomans, manager of the Near-Earth Object Program Office at NASA’s Jet Propulsion Laboratory, said at a press briefing. This particular asteroid is called 2012 DA14. NASA scientists reiterated Thursday that people have nothing to worry about. “No Earth impact is possible,” Yeomans said. The asteroid is thought to be 45 meters - about half a football field - long. It will come no closer than 17,100 miles from our planet’s surface. An object the size of 2012 DA14 appears to hit Earth about once every 1,200 years, Yeomans said. “There really hasn’t been a close approach that we know about for an object of this size,” Yeomans said. On its close approach to Earth, the asteroid will be traveling at 7.8 kilometers per second, roughly eight times the speed of a

bullet from a high-speed rifle, he said. If it were to hit our planet - which is, again, impossible - it would collide with the energy of 2.4 megatons of TNT, Yeomans said. This is comparable to the event in Tunguska, Russia, in 1908. That asteroid entered the atmosphere and exploded, leveling trees over an area of 820 square miles - about two-thirds the size of Rhode Island. Like that rock, 2012 DA14 would likely not leave a crater. Here’s a comforting thought: Meteorites enter the Earth’s atmosphere all the time. About 100 tons of rocks come in from space every day, Yeomans said. They are mostly small, from the size of a grain of sand to the size of a human fist. If you have a telescope at least a few inches in diameter, you would see it as a small point of light moving across the sky, said Timothy Spahr, director of the Minor Planet Center at the Harvard-Smithsonian Center for Astrophysics. You’ll have to be located in Eastern Europe, Asia or Australia for the best telescope-aided view, scientists said. It won’t be visible to the naked eye. What else is out there? So, we know that this particular asteroid isn’t going to hit us, but how about all of those other giant rocks floating nearby beyond our atmosphere?

14A BAYSIDE PLACE. STRATHMORE, AB NASA says 9,672 objects have been classified as Near Earth Objects, or NEOs, as of February 5. Near Earth Objects are comets or asteroids in orbits that allow them to enter Earth’s neighbourhood. There’s an important distinction between these objects: Comets are mostly water, ice and dust, while asteroids are mostly rock or metal. Both comets and asteroids have hit Earth in the past. More than 1,300 Near Earth Objects have been classified as potentially hazardous to Earth, meaning that someday, they may come close or hit Earth. NASA is monitoring these objects and updating their locations as new information comes in. Right now, scientists aren’t warning of any eminent threats. Yeomans and colleagues are using telescopes on the ground and in space to nail down the precise orbit of objects that might threaten Earth and predict whether the planet could be hit. Observatories around the world send their findings to the NASA-funded Minor Planet Center, which keeps a database of all known asteroids and comets in our solar system. NASA also has a space probe tracking asteroids to learn more about them. The Dawn probe was launched in 2007 and has already sent back dramatic pictures from the giant asteroid Vesta.

The spacecraft is now heading to the dwarf planet Ceres. Vesta and Ceres are the two most massive objects in the main asteroid belt. A new asteroid adventure in 2016 A mission that’s scheduled to launch in 2016 will teach scientists even more about asteroids. OSIRIS-REX will visit an asteroid called 1999 RQ36, take a sample of at least 2.1 ounces and bring it back to Earth. “This is going to be the largest sample of an extraterrestrial object returned to Earth since end of the Apollo missions over 40 years ago,” said Edward Beshore, deputy principal investigator for the mission, who is based at the University of Arizona, Tucson. The probe will arrive at the asteroid in 2018, study it, and then bring back the sample in 2023. 1999 RQ36 is made of materials “almost identical to those that were present when the solar system was formed about 4.5 billion years ago,” he said. That means studying this asteroid could yield greater understanding about the sources of organic molecules and water that gave rise to life. This asteroid, like the one that will fly by on February 15, is considered a near-Earth object. The mission would further clarify the threat that this particular object poses, and better predict the orbits of other near-Earth asteroids, Beshore said. Scientists at the University of Arizona are collaborating with NASA and Lockheed Martin Space Systems on this mission. To better predict the orbits of hazardous objects, this group is looking at the Yarkovsky effect; a force created when the asteroid absorbs sunlight and re-radiates it as heat. The effect is, at first glance, quite small - Beshore cited his colleague Steven Chesley’s comparison of this effect to the force you feel when you hold grapes in your hand. But over time, it’s an important consideration when trying to understand where an asteroid is headed. “That force, applied over millions of years, can literally move mountains of rock around,” Beshore said. We can’t say this enough: don’t panic over it.

Spring Plants These are a few plants to start thinking about for your garden this spring. I know it is a little early to start thinking about gardens, but honestly I do not think I ever stop thinking about my garden! Next month I will tell you about more spring plants. It is important to have spring plants in your garden to encourage the right kind of bugs to stay. They will have food to eat until the aphids come. Then they will help protect your garden against the wrong kind of bugs (aphids).

Iris

They need full sun and good drainage. The rhizome needs to be visible. If they are planted too deep, it will encourage root rot and disease. Be aware when planting iris’s that the blue and purple varieties are more vigorous. The stronger, more dominant cultivars will take over the iris bed and edge out the other colours.

Marigolds

These are exceptional plants. They are very hardy and definitely one of my favourites. Different varieties have different qualities. Some attract butterflies, others repel ants and other pests. These flowers are one of the first to be found in stores and greenhouses. Marigolds are great for borders, as they are long lasting flowers. They will produce clusters of orange and yellow flowers. Marigolds will reseed if you let them. They look great in most gardens. The flowers start in the spring and last until fall. These plants are upright and bushy and like full sun. I suspect you are trying to fill a gnawing loneliness, and if you are, you inherited it from me. That feeling, Woolf’s “emptiness about the heart of life,” is just part of the deal. Trying to fill that ache with other people (or with anything else, like food, alcohol, numbing behaviours of a zillion sorts you don’t even know of yet) is a lost cause, and nobody will be up to the task. You will feel let down, and, worse, that loneliness will be there no matter what. I’m learning to embrace it, to accept it as part of who I am. I hope to help you do the same. 10. I am trying my best. I know I’m not good enough and not the mother you deserve. I am impatient and fallible and I raise my voice. I am sorry. I love you and your brother more than I love anyone else in the entire world and I always wish I could be better for you. ROCK-A-BYE-BABY Getting enough sleep makes you happier, healthier, slimmer—and should trump all your other priorities.

Live longer and healthier

The link between sleep and health is becoming clearer. Blood pressure and heart rate are typically at their lowest levels during sleep; people who sleep less tend to have higher blood pressure. The association between hypertension and sleep duration could explain other research findings that link lack of sleep to an increased risk of heart attack, diabetes, weight gain and other problems.

Be happier, less stressed

Statistics Canada surveys reveal that 25 percent of Canadians over the age of 15 regularly have trouble getting to sleep, and 3.3 million Canadians suffer from insomnia. People with insomnia produce higher rates of stress hormones than others, according to new research. This puts their bodies in a hyperaroused state that can make it difficult for them to wind down. The inability to sleep causes more stress, which can have a devastating impact. People who don’t get enough sleep can become depressed, and that causes insomnia. Inversely, more and better-quality sleep can make you feel happier.

Look and feel better

People who are limited to only four or five hours of sleep a night for several nights not only experience more physical ailments, such as headaches and stomach problems, but also undergo changes in metabolism similar to those occurring with normal aging. It’s no wonder we look terrible after a sleepless night.One of the reasons may be growth hormone, secreted during our deepest and most restorative sleep. According to psych¬iatrist Rachel Morehouse, director of the Atlantic Health Sciences Sleep Centre in Saint John, N.B., when we don’t sleep deeply, “growth hormone is almost negligible in the system.” Levels of the hormone drop dramatically between the ages of 20 and 60, says Dr. Mehmet C. Oz, the U.S.based co-author of the You health books. “When you have high levels of the hormone, you have muscle mass, better skin. You want to keep your growth hormone as high as possible, and the number one way to do that is sleep.”

Build a better brain

Not only does sleep depri¬vation lead to poor health, it also affects your concen¬tration, problem-solving skills, memory and mood. Dr. Jeffrey Lipsitz, medical director of the Sleep Disorders Centre of Metropolitan Toronto, says sleep is connected to “alertness, productivity, performance and reaction times.” And that’s not all: Problems with memory, decreased social interaction and difficulty concentrating can all be linked to lack of sleep. Not getting enough sleep can have cog¬nitive and physical effects similar to those brought on by overindulging in alcohol.

Luscious Joys March is our Nutrition and Fitness Issue! I wrote an article in Body Parts regarding Celiac disease, so I thought it only fair to also mention diabetes. An estimated 285 million people worldwide are affected by diabetes. With a further 7 million people developing diabetes each year, this number is expected to hit 438 million by 2030. Today, more than 9 million Canadians live with diabetes or prediabetes. Approximately 10% of people with diabetes have type 1 and the number of people with type 2 is increasing dramatically. When you have diabetes, sweets are off the menu. BUT, I have found 5 luscious recipes taken off the Canadian diabetic website developed just for diabetics in mind. They sound so luscious I most definitely will be whipping these up for my own family!

Banana Split Cake 6 1/2 graham cracker sheets (two 1 1/2-inch squares per sheet) 1 ounce sugar-free, instant vanilla pudding mix 2 cups fat-free milk 8 ounces light cream cheese 10 ounces canned, crushed pineapple packed in juice, drained 4 medium bananas, sliced 8-ounce container light whipped topping 3 tbsp pecans, chopped Cover the bottom of a 9x13 inch pan with graham cracker sheets. In a medium bowl, prepare pudding with 2 cups fat-free milk, according to package directions. Add cream cheese to pudding and whip together. Spread pudding mixture over graham crackers. Spread the crushed pineapple over the pudding layer and top with bananas, and then spread whipped topping. Sprinkle pecans on top.

Chocolate Mousse Pie 1 9-inch prepackaged pie crust 1 1.4-ounce package of sugar-free, fat-free chocolate pudding mix 1 2/3 cups fat-free milk 1 8-ounce container of fat-free whipped topping, divided 2 tbsp mini semi-sweet chocolate chips or shavings. Preheat oven to 400°F. Bake pie crust according to package directions. Remove from oven and cool thoroughly. In a medium bowl, whisk pudding mix and milk. Fold half (4 ounces) of whipped topping into pudding mixture and fold until fully blended. Spread pudding mixture into pie crust and top with remaining whipped topping. Sprinkle top with chocolate chips or shavings.

Peanut Butter Breakfast Pudding 6 slices raisin bread, cut into 1-inch cubes 1-3/4 cup non-fat skim milk 3 whole eggs + 2 egg whites 1/2 cup fat-reduced peanut butter 3 tbsp dark brown sugar 1 tsp vanilla extract 1 tsp grated orange peel OR 1/4 tsp dried orange peel Spray a 9-inch baking pan or dish with non-stick vegetable spray. Add bread cubes to dish and set aside. Combine remaining ingredients in blender container and process until smooth. Pour mixture evenly over bread cubes in baking dish, saturating bread cubes. Cover and refrigerate overnight. When ready to bake, preheat oven to 350°F. Remove cover and bake about 35 minutes, or until lightly browned and puffed.

Chocolate Velvet Mousse 3 ounces unsweetened chocolate 1 cup low fat milk 1/4 cup egg substitute 1/2 cup SPLENDA ® No Calorie Sweetener, Granulated 1 tsp cornstarch 2 tbsp orange liqueur (Grand Marnier, Triple Sec, or brandy)* 1/2 cup heavy cream 3 cups sliced strawberries Place chocolate and milk in a medium saucepan. Heat over medium heat until chocolate melts. Set aside. Stir together egg substitute, SPLENDA® Granulated Sweetener, cornstarch and Grand Marnier in a small mixing bowl. Add to chocolate mixture. Stir constantly. Cook over medium heat while stirring constantly, until mixture begins to thicken (approx. 3-4 minutes). Remove from heat and pour into the bowl of a blender or food processor. Blend or process briefly (10-20 seconds) to make a more creamy texture. Pour into medium bowl and cover. Refrigerate chocolate mixture approx. 2-3 hours or until cool. Whip cream until stiff and fold into chocolate. Refrigerate overnight to set. Will keep refrigerated for 3 days. To serve, layer strawberries and mousse in 6 all- purpose wine glasses.

Old-Fashioned Baked Custard 3 large eggs, slightly beaten, or 3/4 cup egg substitute 2 tbsp sugar 1/4 tsp salt 1/8 tsp ground nutmeg 2 cups fat-free milk 1/2 tsp pure vanilla extract Pinch of ground cinnamon Preheat the oven to 325°F. In a large bowl, combine the eggs, sugar, salt, and nutmeg. Slowly stir in the milk and vanilla. Pour 1/2 cup of custard into each of six 5-ounce custard cups. Sprinkle with cinnamon. Set the filled custard cups in a shallow pan. Pour about 1 inch of hot water in the pan around the custard cups. Bake on the center rack of the oven for 35 minutes, or until a knife inserted in the custard comes out clean. Serve hot, warm, or chilled.
