UPLIFTMENT OF WOMEN
Lingerie makers trained LISA LOTTERING @demilottering
S
hona Macdonald (30) founder of Thursdays Lingerie and Swimwear in Cape Town aims to empower the women of Mitchell’s Plain. According to Macdonald, the lingerie industry has been on a rapid decline for the past two decades, but she believes it is important to retain these skills locally. Elizabeth Dounes (77), a retired lingerie expert from Grassy Park, has come out of retirement to train the next generation of bra makers in Mitchell’s Plain. She says the aim of developing the ladies’ skills is to revive the textile industry. Macdonald says she is thrilled to be working with a female-owned factory to upskill their team to make the products. “They have really taken the challenge head-on and have created beautiful lingerie. Our team shows great promise, and I know that with further training and development, it won’t be long until our products are showcased on an international stage.” Macdonald says the women in training have never made bras before; and are often reluctant to learn how or what the production process is because it takes a long time. “It’s amazing that all these women have come together to equip a new team of women with skills to empower them.” Macdonald also most recently launched the fynbos lingerie collection which consists of two types of bras, the Queen Protea underwire bra and the Cape Everlasting wireless bralette. “We want to encourage young girls to acquire skills that will produce a new generation of bra-makers and textile makers in an area where there are not many opportunities,” she says. Macdonald also recently launched a campaign on rewards-based crowdfunding platform, #ThundaFund, to give bigger boobs more appreciation. Through crowdfunding, Macdonald hopes to expand their product of-

Macdonald hopes to change the lingerie industry with their proudly South African solution with the help of the strong women by her side.
“I want to raise capital to invest back into my business, but I also want to use the campaign as a platform to educate other women on what crowdfunding is, and how viable it can be as a means of finance for a start-up. “I am hoping through the success of my
campaign, more women entrepreneurs are inspired to upload their own campaigns,” says Macdonald. She says bras are made to empower women, make them feel confident and love themselves. “We want to show women the power of working together.”

nown dotingly as Ma Sally, Sarah Dantu (80) is one of the six finalists being honoured at the Community Champions Elders Awards. Ma Sally from Belhar is one of three finalists nominated in the 80+ category of the awards presented by People’s Post, TygerBurger and City Vision in partnership with Spec-Savers. She hand-knits jerseys and delivers them to schools where there is a need. “I do it out of love, nothing else,” says Ma Sally. “I don’t ask, I knit the jerseys. When it’s cold I think ‘Oh, there’s a child with a jersey on’.” Ma Sally, a retired domestic assistant, says knitting is therapeutic to her. “It keeps my brain working,” she says. Ma Sally grew up in the countryside of Groot Drankenstein and moved to Cape Town at the age of 17, following her parents’ divorce in the late 1950s. “I had to leave school to go work before completing my senior certificate. Then I came to Cape Town in my early years and started working as a domestic servant until I got married to my husband,” she says. “18 January 1969,” her husband, Joseph adds. According to Ma Sally, she had a relatively stable life from then. “I had a place to stay in District 6. We lived there for 10 years, in a room. Then we bought this little house and we’re still here, for 40 years.” Ma Sally and Joseph have two daughters: José Franz, deputy vice-chancellor of the University of the Western Cape, and Deirdre Spandiel, an occupational therapist in George. She gave up working as a domestic as-

PHOTO: BENITA JAFTHA sistant 30 years ago when her first grandchild, Jody, was born so that José could return to her studies. “That’s when I carried on with my love for knitting.” She believes that those she knits for don’t have to know where the jerseys come from. “Knowing that I can do good at this age is a feeling money can’t buy.” Ma Sally is regarded as a mother figure in The Shining Light social community group she belongs to. She is thankful that she and her husband have set a foundation for their children and grandchildren to continue the tradition of serving their communities. “I thank God that my children and grandchildren are giving,” Ma Sally says. “I wrote this morning in my memory book that it’s
all by God’s grace, nothing else.” Despite having five grandchildren, Ma Sally says she does not knit for her grandchildren’s school because that is not where the need lies. She was nominated for a Community Champions Elders Award by Parkvale Primary through one of the school’s regular volunteer assistants, Rhonda Arendse. “Ma Sally is a loving, caring, wingless angel,” Arendse wrote in the nomination. “Every year she hand-knits jerseys for the needy learners at our school, all this done at no cost.” She produces eight to 10 jerseys at a time for learners, which she distributes freely and at no cost through Arendse.

DISASTER STRIKES
Day hospital caught in blaze LISA LOTTERING @demilottering
R
esidents are advised to make use of the Mitchell’s Plain district hospital after a fire erupted at the Mitchell’s Plain day hospital on Friday 13 September. The City’s fire and rescue services spokesperson Jermaine Carelse, confirmed that they received an emergency call of a hospital alight in First Avenue, Mitchell’s Plain at 12:45. There were six firefighting appliances, a rescue vehicle, and an aerial appliance with a total of 28 staff on the scene. “The quick reaction time of the fire crews resulted in the fire being contained to the theatre section of the hospital,” he says. Carelse confirmed all patients and staff were safely evacuated after the fire was
brought under control just before 14:30. According to Nomawethu Sbukwana, spokesperson of the Western Cape minister of health, Dr Nomafrench Mbombo, the fire affected parts of the theatre. “Eight patients were transferred to the Mitchell’s Plain district hospital for further assessment,” she said. According to Sbukwana all emergency staff and maternity staff will be working at the district hospital until further notice. Sbukwana said at this stage it is uncertain when the day hospital will be operational again. “The damage needs to be assessed first. Only after the assessment it will be determined whether the facilities can be used,” she added. “For now, we advise the residents to use the district hospital until further notice,” Sbukwana concluded.

ATHLONE: EXHIBITION HELD TO HONOUR MURDERED ACTIVIST’S LIFE
Imam Haron’s memory lives on SIPHESIHLE NOTWABAZA @SihleMusic
F
riends, family and followers of Imam Abdullah Haron gathered at Dulcie September civic centre at the launch of an exhibition commemorating his life. The launch, which was a collaborative initiative between the provincial department of cultural affairs and sport and the Imam Haron Foundation, took place on Thursday 12 September. Haron was a Muslim cleric and an activist during the apartheid era. He was killed in police detention in September 1969, leaving behind his wife, Ghaliema, and their young children. At the opening of the exhibition speakers hailed him as a man who was a peacemaker and one who did not only advocate for the rights of Muslim people, but for people in general. The Imam Haron Foundation seeks to keep the conversation going about inequality. The foundation drives dialogue through community projects that involve youth and women by using tools such as the arts and sport. According to the foundation’s national coordinator, Cassiem Khan, the exhibition is about keeping Haron’s memory alive and to also spread the message of justice.
Khan described Haron as a man of peace. He said if Haron was still alive today, he would not have been pleased with all that is happening in the country. He made special mention of the recent murders of women in Cape Town. “If he would wake up tomorrow I would ask him, ‘have we done enough in transforming society and in breaking down racial and political challenges?’,” he explained. Brent Walters, head of the department of cultural affairs and sport in the Western Cape, said they are proud to be associated with the exhibition. He said Haron sacrificed a great deal for the people of Cape Town. “As conditions in the country deteriorated, Haron became more outspoken and actively participated in protests as an Imam and ‘umfundisi’ (priest),” he said. Haron’s wife, who is reportedly quite frail, was not present at the opening, but his daughters were there to share the memories of their father. His eldest daughter who is based in London, Shamela Shanis, said she was taken aback by the love and support shown by the people to her father. “I am amazed, I have just seen the exhibition and I am overwhelmed. I need time to take it all in,” she expressed.
Attending the opening of the exhibition were, from left, Michael Janse van Rensburg, Cassiem Khan, Brent Walters, Shamela Shamis, Fatiema Haron Masoet and Mxolisi Dhlamuka. PHOTO: SIPHESIHLE NOTWABAZA
Celebrating marine life heritage NOMZAMO YUKU @NomzamoYuku As part of the ongoing Heritage Month celebrations, Two Oceans Aquarium will host a unique commemoration focusing on a range of species housed at the aquarium. The aquarium will raise awareness on South Africa’s natural and marine heritage through its online audience, using social media posts and blogs. Renée Leeuwner, spokesperson for the aquarium, says heritage is not just about buildings and artefacts, but also about the country’s endemic animals, marine life and plants that only few people know about. “The more people learn about our natural and marine heritage, the more they will grow
to love it, and be inspired to look after it. Whether it is our cultural, traditional or environmental heritage, continued awareness is important,” says Renée. She calls on the public to consider learning about marine heritage and protecting it beyond Heritage Month. Among others, there will be emphasis on the Galjoen, a mid-sized fish, with oval-shaped, flattened bodies with symmetrical dorsal and anal fins, giving them a distinctive “Snapchat logo” shape. The Galjoen is South Africa’s national fish. “There are so many things that we can be truly proud of. We live in an incredibly biodiverse country. “Just look at the City Nature Challenge that took place earlier this year – Cape Town won,” Renée says. V For more information visit: www.aquarium.co.za.

Emaciated Miracle on the road to recovery I
t’s a miracle she’s still alive ... that’s why the pitbull cross rescued by Mitchell’s Plain Animal Welfare has been named Miracle. Miracle was taken to the Mdzananda Animal Clinic in Khayelitsha on Monday 2 September after her owners contacted Mitchell’s Plain Animal Welfare, claiming despite them feeding her three times a day, she didn’t seem to pick up weight. According to communications manager of the Mdzananda Animal Clinic, Marcelle du Plessis, this is one of the sadder cases of neglect they have seen at the clinic this

year. She was abnormally thin and “her eyes told a story of pain and neglect”. “We have a working relationship with the Mitchell’s Plain Animal Welfare where they are able to bring their organisation’s pets to our clinic for treatment,” said Du Plessis. Vanessa Goedhals of Mitchell’s Plain Animal Welfare said the dog’s owners claimed they had the dog for three months but despite them feeding her, she was in a bad condition. They wanted to surrender her, but Goedhals collected the dog and took her to Mdzananda Animal Clinic for treatment. “It is such a sad story because the house where we collected her from sold takeaways such as fish and chips over weekends. Surely there could have been some food for her,” said Goedhals. Miracle is on the road to recovery, but according to Du Plessis it’s going to take some time for her to heal. “Her stay will be a long one. Once she is healthy and strong, she will be sterilised and vaccinated. The veterinarians are checking up on her daily, she’s getting nutritious food and she’s being treated for mange,” said du Plessis. She added they will be alerting the SPCA inspectors about this case. “We work closely with the inspectors on abuse and neglect cases received at our clinic.” Once Miracle is ready, she will need a new loving home. The Mdzananda Animal Clinic is appealing to the public to support Miracle by making a donation towards her care. V If anyone would like to adopt Miracle once she is ready, send an email to info@mdzananda.co.za or phone the clinic on 082 251 0554 or 021 367 6001.

BEAUTY CONTEST: WINNER WANTS PEOPLE TO LOOK BEYOND THE CROWN
Young beauty aims for the stars SIPHESIHLE NOTWABAZA @SihleMusic
A
liyah Toyer dreams of participating in the Miss Universe pageant one day and wants to help make the world a better place. The 13-year-old Lentegeur resident revealed this after being crowned Miss Magnificent Woman Icon (MWI) Southern Africa at The Venue in Lansdowne on Sunday 8 September. The event was organised by the Shumeez Scott Foundation. The foundation, based in Mitchell’s Plain, is named after the current holder of the Miss Magnificent Woman Icon (MWI) International title. The foundation caters for children and young adults who are living with Down Syndrome. It empowers them by teaching them beauty treatment skills such as massage, manicures and pedicures. The guests attending the pageant were all dressed in black to highlight gender-based violence and to honour the women and children who have lost their lives. Just before getting on stage to be crowned, Aliyah mentioned she felt a little nervous but added she’d “quickly get over it”. This is not the first time the Grade 8 Lentegeur High School learner has won a title. She is the current Miss Princess with a Purpose. She’s also multi-talented: in 2018 she got an honours award for her solo performance at the Western Cape Drama Eisteddfod.
Aliyah said the crown meant a great deal to her but urged people to look beyond beauty and the crown. “It is not about the crown or the title. It’s about proving to the world that, by believing in myself and God, I can achieve anything.” She thanked her grandmother Amina Haron and mother Moezena Toyer for always being there for her, supporting her in everything she does. She started a project called Ariella Project that sponsors disadvantaged children who want to get a foot in the modelling industry. They make sure children are dressed appropriately and even assist with travel expenses if the competition is taking place elsewhere. Aliyah hosts fundraising initiatives in her area to raise money for the project. Moezena said she felt blessed to have a daughter with such a big heart. She congratulated Aliyah on her special day and vowed to always support her. “I am very proud of her. A year ago I would not have thought this would be possible but here we are, celebrating,” she said. Also present to show his support and congratulate Aliyah was Pastor Jeffrey Phillips from Burning Bush Prophetic Ministries in Lentegeur. He said he is a big fan of Aliyah. “When I first met Aliyah, she blew me away. I spoke to her grandmother and I told her she (Aliyah) would go far in life.” He added that she should not allow anyone to make her lose focus.

V Beacon Valley: Mitchell’s Plain police officers arrested a man (23) for possession of drugs. According to a media statement, officers of the Mitchell’s Plain crime prevention unit conducted crime prevention duties on Tuesday 10 September at about 17:05. They executed a search warrant at a house in Rambler Street, Beacon Valley. “While searching the premises, police found 10 mandrax tablets and 20 stops of dagga,” the statement said.

espite last year’s promises from police minister Bheki Cele and the service he leads, violent crime in the Western Cape remains effectively unchanged, that is according to a statement from premier Alan Winde’s office, commenting on the latest crime statistics. They were released on Thursday 12 September, covering the period between April 2018 and March 2019. “I’m deeply concerned that murder increased by 6.6% in the Western Cape. Of these, 47% of incidents occurred in just 10 police stations. The murder to population ratio in the Western Cape is 60 per 100 000 – almost double the national average,” he said. According to a statement, the Mitchell’s Plain crime prevention unit officers received information about drugs being kept at a premises in Korfbal Street in Beacon Valley. count for 18.9% of all murders in the country, while the province only accounts for 11.6% of the population. A total of 11 Western Cape police stations are recorded among the top 30 in the country. This is unacceptable and points to the need for more boots on the ground and more regular statistics. Police need to adopt evidence-based policing, which would lead to deployment at key times in key hotspot locations. We need our police to be in these hotspots before crimes are committed, not after,” he said. Winde referred to last week’s solidarity protests which saw thousands of people standing up against gender-based violence: “We’ve seen communities impacted by gang violence saying ‘enough’. But when asked about whether heads would roll, minister Bheki Cele said he didn’t believe they

Walking in silence NETTALIE VILJOEN
H
undreds of people from Newlands and the deaf community gathered in the area for the 5km Silent Walk on Friday 6 September.
The annual event, arranged by DeafSA Western Cape, is aimed at promoting awareness and understanding of the deaf community in the province. Participants were asked to wear earplugs for the duration of the walk and to communi-
cate using sign language only. Starting from Bastion of the Deaf, corner of Thickett and Hemlock roads, participants followed a route that meandered through Newlands. Premier Alan Winde was one of the ener-

getic people who put on their walking shoes to commemorate Deaf Awareness Month. Provincial ministers Albert Fritz, Sharna Fernandez and Anroux Marias also attended. Winde said doing the walk with earplugs in and in complete silence gave him a small glimpse into what the deaf community experiences every day. “I think walking a mile in someone’s shoes and experiencing what they go through on a daily basis is so important in building understanding and empathy in our society. I encourage other residents to take part next year.” Fritz, the provincial minister of community safety, said it was quite a challenging task as it demonstrated how much we rely on sound in our day-to-day lives. “From a safety perspective, it showed the additional risk that deaf people face as they cannot hear people or things which may threaten their safety. Even walking on the street can be a challenge as you cannot hear a car hooting.” Halfway through the walk, participants completed callisthenics. On their return, they were treated to snacks and various performances. Fritz said he was grateful for having been invited to the event by DeafSA. “It has increased my awareness and understanding. I look forward to returning again next year,” he said. The event is supported by WesternCape on Wellness (WoW!), a healthy lifestyle initiative of the provincial department of health. The Western Cape government supports initiatives and organisations that encourage inclusivity, and which heighten awareness of deafness, disability and of other marginalised groups.

GONE TOO SOON
Country will miss Chester AVRIL FILLIES
T
he country is still in shock after the sudden death of Chester Williams (49) on Friday 6 September, after he suffered a heart attack. He was the “face” of the victorious 1995 World Cup team of Francois Pienaar and Pienaar said in a radio interview that the 1995 team was still recovering from the death of James Small two months ago to deal with another team member’s death. In his tribute to Chester Dougie Dyers, his coach and mentor as a 19-year-old for the then Western Province League, said that every time one of the players he coached through the years dies, another piece of his heart dies. “I am proud on what he achieved and that he came from the SA Rugby Federation. His standards in his personal life and rugby career were very high. He paved the way for all black and coloured rugby players who dreamt of becoming a Springbok, that it can be achieved. “The honour for all Chester’s achievements can be traced back to his family ties and the coaches and mentors he had growing up in Paarl. His dad, Wilfred, uncles, Avril and Randall, as well as his uncle from his late mom’s side, Adam Dombas, all played representative rugby. Avril became the second Springbok after Errol Tobias in 1984 and he and Chester had a close bond,” Dyers said. He also said that the late Bill Jacobs, the rugby club Albions, the Klein Nederburg Primary and High School, and the rugby fraternity in Paarl, moulded Chester and the late Tinus Linee. “Both of them played as centres for the Craven Week teams of the Western Province League, in the senior team before joining Western Province and becoming Springboks in 1993. Chester became the third and Tinus the fourth Springbok from the Federation. Both were advertisements to young players in our communities who didn’t have the opportunities to represent their country like they had,” Dyers said. Other coaches, besides Dyers, and teachers that were part of his rugby career were Norman Mbiko (SA 7s), Charles Williams, Wessel Seconds, as well as the late Phillip Abrahams. Avril, fondly known as A, said he’ll miss their chats about life and family. “When I became a Springbok Chester was 14-years-old and he admired me and what I have achieved in rugby after making my debut in 1984 against Billy Beaumont’s English side. He always said that he’ll be a Bok one day. I never thought that we would play together taking the age gap into consideration but this was achieved when we were both selected for the SA Defence team that toured overseas as the centres. “His outreaches to the community of Paarl at large were one of his attributes that I admired. This part of him was never publicised in the papers because he kept it under

I’ll miss his humbleness, broad smile, interaction with young and old, whether for a picture or to sign a hat or rugby program, or just to pick up the phone for a laugh or a chat if something happened in our lives,” A said. Charles Williams, one of his coaches, said that Chester was a quiet person and spoke very little. “In 1991 I was very unpopular amongst the rugby public because I selected him and Tienie for the WP League and dropped the then captain Wilfred Cupido. He and Tinus complimented each other on the park with their tackling and in attack, I’ve never seen a formidable combination like them again. He always returned to the Paarl community and his friendship with Tinus lasted until Tinus died in 2014 of motor-neuron-sickness,” Williams said. Pompies Williams, his captain at Paarl Leauge, said that Chester showed potential at a very young age when he attended the Federation Week at the army base of the SA Coloured Corps in Faure, a rugby week similar to the Craven Week, before it was integrated. “He never became bigger than rugby and always put rugby first. He never allowed politics to dictate his life and believed that sport can unite a community and that you can overcome differences. His dad was a staunch

Albions player, while his uncle from his late mom’s side, supported Rangers, Williams said. Chester and Tinus were the first rugby players that I interviewed when I was a rugby reporter at Die Burger and they launched my career as a rugby writer. I recall a week before his passing he asked me if he will be seeing me in Dubai again, as I am attending the Dubai 7s annually since 2012. We always chatted when we were in Dubai and I remember last year when a six-year-old grabbed his pants with his cap in his hand for his autograph. Chester knelt down to be on the same level as the child and signed and chatted to the child. He was always surprised that young and old still remembers him, although the young ones were not even born in 1995. In that same year we attended the presidential awards at Tuynhuys and when Madiba asked him if I was his fianceé he smiled and said: “No, she is my Rugby Mom,” – that will stay with me for the rest of my life, as he and Tinus were my first rugby children. A memorial service was held last week at the Boland Cricket Stadium in Paarl and his funeral was on Saturday 14 September at Newlands Stadium. He leaves his wife, Maria, and three children behind.

Roadworks at waterfront, use alternative routes The public is warned about the expected traffic interruptions due to roadworks at the V&A Waterfront on Dock Road from Wednesday 18 September to Saturday 30 November. The construction work will include the upgrade of the bulk water pipeline alongside Dock Road. Construction signage will be put in place to mark out the work areas and flagmen will be visible to direct motorists. Motorists are advised to use of the “faster flowing exits” via Granger Bay Boulevard or Portswood Road to join the Helen Suzman Boulevard. The closures will take place as follows: . Throughout the construction period, one lane in the outbound carriage-way will be closed to traffic. All cars will be diverted into the open lane while the works take place. All works will take place inside the closure. In-bound traffic onto Dock Road will be unaffected. Pedestrians will be diverted at Ebenezer Circle using appropriate sig-
nage. . From Wednesday 6 to Wednesday 20 November one lane in the inbound carriageway will be closed to traffic after hours (offpeak) to do excavation (diggings) work across the road. All cars will be diverted into the open lane while the works take place and the working area will be adequately marked. Motorists are warned to drive with care, as they will be driving over metal plate covers on a small section of the road during this period. . Between Wednesday 9 October and Monday 4 November the outbound of the South Arm Road, the trench will be excavated from the middle towards the pavement in the inbound carriage-way. One lane will be closed to traffic. All cars will be diverted into an open lane while the works take place. This phase will also take place after hours. Excavations will be closed using metal plate covers to allow traffic to flow during the day.

NATIONAL BRAAI DAY
More than meats the eye NETTALIE VILJOEN
T
uesday 24 September is Heritage Day, aka Braai Day; and yes, while salads, sauces and braai broodjies are indispensable supporting acts, for most, the star attraction will be the meat. Jason Allen, the owner of The Hussar Grill in Steenberg, says no matter which cuts you buy or where you shop, meat is expensive. So when you do buy, make sure you buy the best and don’t waste your money by overbraaing it. People’s Post recently joined Allen at the Silwood School of Cookery in Rondebosch for a Steak Masterclass where he shared advice on how to do exactly that. Firstly, he says, don’t deviate from quality and always buy fresh. “Unless you have a long-standing relationship with your butcher, stay away from prepacked marinated meat,” he says. Jason also recommends that you rather buy your meat from a butcher than a supermarket. “The problem with buying meat from big chain stores is that you are not always sure what you are buying.” He explains that besides the grade of meat, you also have to take into consideration the beef’s breed and if it was grain- or grass-fed. A booklet handed out at the masterclass says South Africa produces 85% of its own beef with the rest being imported from Botswana, Namibia and New Zealand. Local breeds include the Nguni, Afrikaner, Brahman, Angus cross-breeds. Feeding techniques have an impact on marbling (streaks of fat in lean meat) and the ratios of unsaturated fats versus saturated fats. “At Husser Grill, we serve A-grade, grainfed Angus beef. If you want flavour, buy meat with marbling, or better still, meat that is still on the bone. But be careful not to mistake marbling for sinew. Fat has a slightly yellow tinge to it while sinew has a shiny, white colour,” he says. Allen says there is nothing worse than
Participants in the Steak Masterclass at the Silwood School of Cookery were taught how to make a blender béarnaise sauce.
Jason Allen, owner of The Hussar Grill in Steenberg, shows how to make a bearnaise sauce at the Steak Masterclass at Silwood School of Cookery. PHOTO: NETTALIE VILJOEN chewing and chewing on a piece of sinew. “Simply remove the lining of sinew by sliding a sharp knife under it. There is no need to dig into the meat, the sinew usually cuts away quite easily.” The tenderness of the meat has a lot to do with the muscle it is cut from X the work the muscle does and the rate it does it at. Meat cut from the shin, leg and cheek, for instance, do a lot of work and need slow, long cooking. Rump, the most popular steak in South Africa, is cut from the hindquarter which needs to be matured. It has a layer of fat that provides extra flavour. Fillet does little or no work. It can be served rare to medium-rare. Of all the cuts, fillet is by far the most tender and it has almost zero fat content. It is cut from the long muscle which runs underneath the backbone of the animal. Jason says if you are going to buy a head of fillet don’t go smaller than 1.8kg and no bigger than 2.2kg. “If it falls out of these perimeters it might be a sign that there was something wrong with the cattle. Either it was under-nourished or it was injected to grow faster.” When it comes to the actual braaing, here are a few tips provided at the masterclass: . Do not freeze your meat. It stops the maturation process and retains water, making the steak dry and flavourless. Ask your butcher to vacuum pack each steak individually and let it wet-age in the fridge for up to 28 days or more. If the bag blows, have it re-vacuumed immediately as oxidisation will set in and the meat will discolour and go off.
. Steaks must be at room temperature. Don’t cook directly from the fridge. Room temperature steaks achieve more even cookthrough due to the shorter time required to cook the centre. . To braai the perfect medium-to-rare steak, grill it for one minute per centimetre of thickness per side. For example, if your steak is 2cm thick grill it for two minutes on the one side, then flip and grill it for two minutes on the other. Do not “roll” the meat, in other words, sear the sides. . If the meat has bone or fat on it, grill it bone- or fat-side first. This is called rendering the fat. The meat will absorb the flavour of the fat as it melts. Remember to cut (shallow incisions about 2cms apart) into the fat to prevent it from curling. . For steak, the coals should be glowing and your clean grid should be oiled (sunflower or olive oil) to ensure that the steak turns easily. Avoid too much flame. Keep hot coals aside and braai chicken and wors first. Then scrape over the hot coals for the steak. . Lightly brush your steak with olive oil and season with your favourite spices. Do not use salt on raw meat. It absorbs moisture and dries out the meat. If you like, you can add it after the meat is done. . Use tongs, never a fork, to lay your steak on the grid and to turn it. A fork punctures the meat, draining the fats and juices. Also, don’t press down on the meat with your tong. Just let it sizzle. . Ideally, steak should be basted at least once on each side during the grilling process, then, just before serving, coat it one more time. . Allow the steak to “rest” in a warm area
for at least three to five minutes as it enables the meat to “relax” and the juices to flow more readily. Upcoming Steak Masterclasses with The Hussar Grill will take place on 10 October, 14 November and 28 November. V To book your place and pay, go to www.silwood.co.za/steak-master-class-1/.

Draft coastal bylaw rouses robust debate Almost 700 submissions have been received by the City of Cape Town on the draft coastline bylaw. The proposed bylaw will assist the City to better manage the coastline; take appropriate action during emergencies and enable law enforcement of activities that may have a damaging impact on the coastal environment. Cape Town’s coastline is a national asset and contributes approximately R40 billion per annum to our local economy. Last month, the City published the draft
coastal bylaw for public comment. Invitations were distributed to residents and businesses at the coastline to participate. The total number of submissions, since the close on Monday 2 September, stands at approximately 700. “Approximately 150 people attended the information sessions, and I can honestly say that these engagements were extremely constructive,” said Mayco member for spatial planning and environment, Marian Nieuwoudt. Officials from the City’s coastal manage-
ment branch are now busy collating the comments. Officials from the City will solicit senior legal advice to ensure that the final version of the proposed bylaw complies with the constitution and the City’s mandate. The draft bylaw will be applicable to the coastal zone, which covers the seashore, the coastal waters, and the environment on, in, under, and above the coastal zone. “The proposed bylaw will give the City the legislative powers to enforce the pub-
lic’s right to access and enjoy our beaches and sea,” said Nieuwoudt. The bylaw will be a legislative tool to ensure the sustainable use and development of the coastal area; promote the protection of the natural environment of the coastal zone; enable better regulation, protection, and governance of the coastline as a sensitive and economically valuable asset. It will also ensure safe and enjoyable use of beaches, and Nieuwoudt is hopeful it will be approved early next year.

THEATRE
Classic fairytale staged during the holidays T
he Lilliput Children’s Theatre Company will be performing one of its most popular shows to date – Goldilocks and the Three Bears – during the September school holidays. The show will run from Monday 23 September to Saturday 28 September at 10:30 and will be staged at the Nassau Theatre Centre, on the grounds of Groote Schuur High School, Palmyra Road in Newlands. Goldilocks and the Three Bears follows the adventure of Goldilocks in the forest before her birthday. Her grandfather is organising a birthday party for her. Goldilocks gets lost in the woods and stumbles across a house belonging to the three bears. With nobody home, Goldilocks goes inside and makes herself at home. The three bears come home to find their visitor fast asleep with hilarious consequences. This fairytale classic is full of laughter and audience participation. It is adapted and directed by Elton John Duffy (Edgemead), who has been producing children’s theatre for the past 26 years. The show stars Desle Mc Conney from Athlone as Goldilocks, Buddy-Bo Butler from Fish Hoek as Mama Bear, Niki Ricardo from Bellville as Papa Bear, Kaylee Kensley from Goodwood as Baby Bear and Elton John Duffy as Grandpa. V Tickets are R90 a person. Bookings can be made at any Computicket outlet or Shoprite or Checkers. Tickets can be booked online at www.computicket.com. All roads lead to Turfhall T
he annual three-day Softball South Africa (SSA) Masters tournament will kick-off at Turfhall Softball Stadium on Saturday 21 September.
Organisers promise the event is going to be “bigger and better than ever before” as a record number of 20 ladies’ teams are scheduled to take part in this year’s tourna-
PURE JOY AS CENTRAL SEAL HISTORIC LEAGUE WIN: Players from Central Hockey Club celebrate after the final whistle to seal the victory for the Western Province Grand Challenge league title after they beat Pinelands 6-1 at Vygieskraal on Saturday 14 September. They went on a 15 game unbeaten streak this season to clinch league honours, which the club last won 20 years ago. PHOTO: RASHIED ISAACS
ment. “The Masters, a division of SSA, utilises this event to honour those sporting legends, heroes and icons that made a significant contribution to the development, transformation and growth of softball in South Africa,” says SSA spokesperson Karen Blanchard. Last year’s ladies winner, Westridge Yankees Maestros, will be back to defend their title, however, Battswood, Blackheath, Kenfac Phillies, Michigan, Table View Tornados and Mandela Bay Flamingos (all the way from the Eastern Cape) are the newcomers to watch. In the men’s division, last year’s winners, Flames, are back in action, with Cape Town teams Pirates, Khayelitsha Eagles and Table View Tornados to garner some strong support from locals. SSA says there will be enough to keep the crowds entertained throughout the tournament, with live broadcasting of other weekend sporting action on the clubhouse’s big screen. “The tournament falls in September, which is Heritage Month. Our theme for the tournament is: ’Celebrating Heritage in Diversity’. We have introduced a heritage prize for the team that best displays heritage and diversity in colour,” adds Blanchard, confirming that the winner
will receive R5 000. The local softball fraternity joined hands with their baseball counterparts to show their solidarity against gender-based violence, which the award will further go on to highlight on a national level. “With the violence happening in our country, we need to celebrate our heritage, our diversity and remind each other of Ubuntu, I am because we are. “As Softball Masters Organisation, we pledge to use sport to celebrate our heritage and to strengthen our social cohesion. We sincerely thank the media in advance for their support in covering the Masters Tournament. The countdown has officially begun,” says Blanchard.
