A new head bartender has joined the Beaufort Bar at The Savoy in London as part of its mission to maintain its place as one of the world’s best and most creative bars. Kyle Wilkinson (pictured) started in the role yesterday (March 1), taking over from Chris Moore who had been head bartender since the bar opened over ⁐Ҁve years ago. Kyle was most recently bar manager of The Blind Pig at Jason Atherton’s Social Eating House in Soho in London for two years – during which time it won awards such as best restaurant bar in the 2015 global Spirited Awards at Tales of the Cocktail in New Orleans. Previously, he worked at Pollen Street Social in London and Brass Monkey in Nottingham. His competition successes include winning Drambuie’s national competition in 2011. In both 2011 and 2015, he reached the GB ⁐Ҁnal in Diageo MUSIC MAKEOVER 2016

enn man den Charakter eines Hotels kennenlernen will, geht man in die Bar. Oder man trifft Susan im Savoy – das funktioniert aber nur in diesem Londoner Luxushotel. Susan Scott arbeitet als Archivarin für das Hotel, sie ist fest angestellt und die Gralshüterin vieler Geheimnisse, seltener Schätze und guter Geschichten. Da ist zum Beispiel die Anekdote von dem jungen italienischen Kofferträger, der im Savoy das Gepäck der Herrschaften schleppen musste. Er schaute ganz genau hin, was diese Leute anhatten und vor allem, welche Art von Handtaschen und Koffer sie bevorzugten. Der junge Mann hieß Gucci. Guccio Gucci. In den 1920er-Jahren eröffnete er in Florenz ein Lederwarengeschäft. Aus seinen Articoli da Viaggio sollte ein führender Modekonzern werden. Den Lift der Herrschaften durfdurf te Gucci nicht benutzen. „Lift“, das klingt heute so selbstverständlich. Tatsächlich war jener im Savoy der erste Aufzug in einem Hotel überhaupt. Diesen knallroten Lift gibt es heute noch, ausstaffiert mit Spiegel und Sitzbank. Damals wurde den Damen ein Brandy gereicht, so aufregend war die Fahrt. Kein anderes Hotel der Welt bezahlt eine Hotelarchivarin dafür, solche Details zu kennen. Auf ihr Wissen griff schon eine ganze Reihe von Hoteldirektoren des Savoy zurück. „Natürlich konsultiert mich Mr. MacDonald bezüglich historischer Angelegenheiten“, sagt Susan und fügt nicht ohne
Stolz hinzu: „Ich weiß fast alles über das Haus.“ Schon 20 Jahre ist sie im Haus. Ihr Alter verrät sie nicht. Fotografieren lässt sie sich auch nicht. Und ein Blick in ihr Archiv ist tabu. „Ich habe sowieso das Meiste im Kopf“, sagt sie. Immer wieder fragen Gäste bei Susan an, weil sie im selben Zimmer logieren wollen wie einst ihre Eltern. Manche von ihnen haben mitten im Zweiten Weltkrieg im Savoy geheiratet. Dann geht Susan zur Recherche in ihr Archiv, für sie ist es „a kind of a holy room“, eine Art Heiliger Gral. Zusammen mit der goldenen Statue des Count Peter of Savoy, die seit 1904 vor dem Eingang steht, scheint sie darüber zu wachen, dass alles so bleibt, wie es einmal war. Auch die dreijährige Renovierung von 2007 bis 2010, die einzige Schließung in der gesamten Hotelgeschichte seit 1889, änderte die DNA des Hauses nicht wesentlich.
„O sole mio“ im Lancaster-Saal Die Reihe der illustren Gäste ist lang. „Neun von ihnen haben die Ehre, dass eine Suite nach ihnen benannt ist“, sagt Susan und öfföff net die Tür zur 718, der CharlieChaplin-Suite, die um 5000 Euro pro Nacht zu haben ist. Geld scheint in diesem Haus ohnehin nur eine nebensächliche Rolle zu spielen: Da ist zum Beispiel die legendäre Gondel-Party. Per Blankoscheck beglich der „Champagnerkönig“ George Kessler 1905 die Kosten für sein Geburtstagsfest, das das Motto „Venedig“ trug. Dafür wurde der Lancaster-Saal geflutet, und die Gäste feierten in echten venezianischen Gondeln. Enrico Caruso sang dazu O sole mio, und ein Elefant trug die meterhohe Geburtstagstorte herein. Später tagten Winston Churchill und seine Minister im Savoy, das Hotel hatte ja die ganze Zeit während des Zweiten Weltkriegs geöffnet. Diese Meeting-Tradition hat sich bis heute gehalten. In den Princess-Ida-Room kamen und kommen die Premierminister ein-
mal im Monat zu inoffiziellen Gesprächsrunden. Eine Bildergalerie an der Wand zeigt Fotos von ihnen in Schwarz-Weiß, allerdings hört die Runde bei Tony Blair auf. Für Gordon Brown und David Cameron war kein Platz mehr.
Die Frauen des Savoy
Im Savoy gingen Londons begüterte Frauen erstmals ohne männliche Begleitung zum Essen aus, Marilyn Monroe schwang auf dem Parkett das Tanzbein, und Liz Taylor verbrachte dort ihren ersten Honeymoon. Natürlich fand auch der Krönungsball von Prinzessin Elisabeth und Prinz Philip dort statt. Twiggy hingegen wurde gebeten, wieder zu gehen, weil sie zu freizügig gekleidet war. Eine alte Diva, korrekt gekleidet, durfdurf te dagegen samt Haustier einchecken: mit einem kleinen Krokodil. Ein anderes Haustier genießt im Savoy längst Kultstatus: Kaspar, the Cat. Die Porzellankatze hat sogar eine eigene Visitenkarte, in der Lobby des Hauses wartet sie auf ihren nächsten Einsatz. Kaspar wird immer dann an einem Tisch platziert, wenn dort dreizehn Gäste sitzen. 1898 gab es im Savoy Grill nämlich eine Dinnerparty mit dreizehn Gästen. Kurz nach dem Essen wurde der Gastgeber erschossen. Seitdem gibt es im Savoy keinen Tisch mehr für dreizehn Personen. Kaspar ist immer der Vierzehnte in der Runde, mit eigenem Sessel, eigenem Gedeck und Serviette um den Hals. Seit 2005 gehört das Savoy dem saudischen Prinzen Al-Walid ibn Talal Al Saud. Dürfe er mit der Tradition brechen und allein mit Kaspar dinieren, wenn ihm danach ist, wird Susan gefragt. „In diesem Fall wird der Direktor seine Archivarin wohl nicht um Rat fragen“, antwortet sie.

Posted on March 3, 2016 Welcome news just in – The Beaufort Bar at The Savoy has appointed a new head bartender in the shape of Kyle Wilkinson who has taken over from previous Head Bartender Chris Moore.
Having honed his skills at the likes of Brass Monkey and Pollen Street Social, most recently Wilkinson has been Bar Manager at The Blind Pig in Soho for the last two years. Under Kyle’s supervision, The Blind Pig has become recognised as an industry leader and been nominated for multiple awards notably winning ‘Best Restaurant Bar’ in 2015 at the Spirited Awards at Tales Of The Cocktail. Wilkinson himself is no stranger to awards including winning Drambuie’s National Competition in 2011. In both 2011 and 2015 Wilkinson reached the finals in Diageo’s prestigious World Class competition, and this year he is one of just 5 UK finalists. Wilkinson has also consulted for brands such as Johnnie Walker, Drambuie and worked with experimental foodsmiths Bompas and Parr. Tooting horns; high-rise hotels; bustling streets. London might not seem the kind of destination you’d choose if you had an environmentally-friendly holiday in mind. But, as these seven hotels prove, some of the capital’s most famous hotels have pretty impressive green credentials.
The Savoy Follow Despite sitting in the middle of the busy, often-chaotic Strand, the Savoy has focused its attention on conservation and 1/18 innovative eco-friendly practices.
Firstly, the hotel has a ‘Sustainability Manager’, which is pretty impressive in its own right, not to mention its detailed environmental policy. The hotel has made “substantial investment” in being as sustainable as possible, as well as reducing its carbon footprint. Heating and cooling systems have been replaced with high efficiency ones; intelligent energy building controls have been installed; a combined heat and power plant reduces the hotel’s reliance on the energy grid by around 50%. One particularly neat feature is heat from all kitchen appliances is reclaimed and used to preheat the domestic hot water. Another favourite is the hotel’s scheme which recycles food waste into renewable energy and biofertiliser. The hotel says around 20% of its guest rooms are lit by this scheme. The Savoy also has its own water bottling plant, which is says is “a positive step in reducing glass and packaging waste, as well as carbon emissions from transport miles”. The hotel estimates by re-using the glass bottles, it will save 105 tonnes of glass from being used annually. The hotel also has a target to divert 100% of all its waste from landfill. In-house schemes see candles, corks, spectacles and stamps recycled, while old computers and kitchenware are donated to local and overseas charities. Food-wise, the hotel pledges to use produce which supports local growers.

The Savoy, a Fairmont Managed Hotel, welcomes Russell Durnell to head up its Sales and Marketing team. Russell will be based at Assistant Manager, Sales and Marketing, effective from Monday 29 February 2016. Russell brings with him over 20 years of luxury hospitality experience and joins The Savoy from the Jumeirah Carlton Tower, Londo of Operations Director.
Originally from the UK, Russell has spent much of his career working abroad, first in Brisbane and then in Sydney with Starwood, playing a key ro Australia as Director of Sales and Marketing at the W Sydney, and then moving up to a regional Sales and Marketing role with Starwood. Russell opening marketing strategy for W Retreat & Spa Maldives.
Following his time with Starwood, Russell held the positions of Director of Marketing for Langham hotels, based in Melbourne, and then Director

s a nation we drink far more than our fair share of prosecco, spending more money on it than we do on champagne. And no wonder, it has a gorgeous, feathery lightness. But, if you like prosecco, there are so many more sparkling wines waiting for you to pour them into your glass… One of the most prosecco-like is made in Emilia-Romagna in central Italy from a grape called pignoletto. It’s frothy, with an easing edge of sweetness. For sparkling wines with a bit more vinosity – ones that taste more like wine than grape-based pop – the Loire in France is a brilliant hunting ground. Look for the names sparkling Vouvray, Saumur Brut and Crémant de Loire. Styles vary hugely, and I recommend taking advice (or reading the back label) to find out whether you’re buying a cheek-pinchingly sour, dry fizz that tastes of cooking apples, or a more briochescented, meadow-grass-sweet sparkler that’s easier to drink. Other lesser-known French regions that make excellent fizz are the Jura, on the Swiss border; and Limoux, down in the Pyrenées; while New Zealand, Australia and England, too, all have superb sparkling wines that deserve a place in your fridge door.

On Monday it was off to The Savoy to test out its latest Londoninspired cocktail menu, all of which take inspiration from the city’s lesserknown tales. A highlight was Pickering Place (£50) – a two drink sharing cocktail named after the last known London site for a duel – which is served alongside a short silent film. Mar 02, 16 The Savoy may be one of the oldest and most famous hotels in London (if not the world) but that doesn’t mean that they rest on their laurels. I was invited to partake of a new menu recently introduced to the Thames Foyer. The Thames Foyer is dominated by a magnificent glass domed atrium which makes the room all the more enchanting and even a bit whimsical. It’s also the setting for Afternoon Tea which is served everyday. However, it’s not only for Afternoon Tea. The Thames Foyer has now launched The Tempation Wheel and believe me, when you see it, you will be tempted to try everything ( I know I was). The wheel is a specially commissioned and made of polished mahogany and brass. The menus is divided into a painters palette of flavours, each dessert matched with a handmade chocolate and unique cockail. Looking at the at wheel, it’s like an adult version of a kid in a candy shop. The desserts were created by the Savoy’s Executive Pastry Chef, Ludwig Hely and the cocktails by Chris Moore and the team at the Beaufort Bar. Here are a few pics of the desserts and cocktails:

Susan Calman, familiar to listeners of BBC Radio 4’s News Quiz, took the stage first, reading from her new book Cheer Up, Love (Two Roads, May), a memoir of her struggles with depression. As is, ironically, so often the case, Calman’s comic gifts come at a price. “I’m grumpy and I see the worst in life,” she commented, “but you need people like me.” Next up? Garth Greenwell, a Kentuckyborn poet and critic whose first novel, What Belongs to You (Picador), is published here next month, and whose utterly committed, poised reading style had the audience gripped. It helped that his prose was graceful and fearless—for literary fiction that tackles gay sexual relationships unflinchingly, as this book does, still feels daring. With his book, Greenwell explained, he has manipulated the boundaries of autobiography and fiction. The result is a haunting work that, like its creator, throws out received templates for living. Greenwell himself put it most succinctly: “Cruising made me a poet.” In the contemporary written landscape, it is the older person’s perspective that is now arguably the most marginalized. This is a state of affairs that Joan Bakewell—the Baroness Bakewell DBE—is keen to fix with her memoir Stop the Clocks (Virago). “A phrase I hate is ‘declining years’,” she said. “My day is as vivid as yours.” Probably—let’s face it—considerably more so. Still writing and broadcasting at 82, not to mention her important work as a Labour peer, Bakewell is showing no signs of declining. She kept attendees highly entertained with her recollections of youthful transgressions in the 1940s and 1950s, and her refreshing lack of nostalgia. Of course, the “thinking man’s crumpet” tag that’s stuck to her like glue ever since Frank Muir coined it in the 1960s was bound to come up. It prompted a laugh from Bakewell, but she admitted that “in career terms, it was a real nuisance.” Plus ça change. Rounding off the evening was Maggie O’Farrell, reading from her new novel This Must Be The Place (Tinder Press, May), which skips nimbly across time zones and continents as it paints a picture of a marriage between Daniel Sullivan, a New Yorker with a complicated past, and Claudette, a filmstar turnedrecluse. On this, her third Salon appearance, O’Farrell revealed once again her subtlety of touch, unassuming humour and great skill at using character to drive narrative. This event, which has in the past called Shoreditch House and the St Pancras Renaissance Hotel home, suited its new grand ballroom surroundings exceedingly well—the evidence is Dan Llywelyn Hall’s painting, left, executed during the course of the evening. While Ritz was the hotel’s first General Manager, he didn’t have a long career with the Savoy. Carte sacked him in 1898 for fraud after Ritz allegedly stole roughly £250,000 in wine. The success of The Savoy was immediate and attracted from the very beginning a distinguished and wealthy clientele, headed by the Prince of Wales, the future King Edward VII. The Prince was followed over the years by other key figures like Sir Winston Churchill, Frank Sinatra, Christian Dior, Maria Callas, Claude Monet and Katherine Hepburn.

This May will see the momentous homecoming of Age of Discovery, a specially created, barrel aged, limited edition cocktail. Having travelled the globe on board Cunard’s flagship Queen Mary 2, the cocktail will return on 10 May 2016 to The Savoy, a Fairmont Managed Hotel, where it was mixed, sealed and bonded for its world voyage four months previously, in January 2016. Age of Discovery is a truly unique collaboration from three of the world’s most highly acclaimed brands; Cunard, The Savoy and Jack Daniel’s. Renowned for their traditions of service and excellence, these three brands have come together to create a world-class, world-travelled and globally one-of-a-kind cocktail. The cocktail itself is currently maturing in a hand chosen 300 litre, Jack Daniel’s barrel on board Queen Mary 2 during her 41, 000 nautical mile, fourmonth world voyage. Formulated by the team at the world-famous Savoy’s Beaufort Bar, named Best International Hotel Bar 2015, the Jack Daniel’s cocktail 1 is inspired and influenced by the tastes and aromas of the continents Queen Mary 2 will visit; from Europe to Asia, Africa, the Americas and Oceania. Painstaking attention to detail and refinement has gone into the choice of ingredients. The cocktail itself has been crafted to reflect both Cunard’s 175-year ocean-going heritage and the decades of history and patronage associated with The Savoy’s famous cocktail bars. Its home for the voyage, a Jack Daniel’s first fill American oak barrel, was carefully chosen by The Savoy’s Assistant Food and Beverage Director, Daniel Baernreuther. Daniel travelled to the Jack Daniel distillery in Lynchburg, Tennessee and personally chose the barrel of Jack Daniel’s Single Barrel to be used in Age of Discovery. Daniel then had the barrel itself transported whole to The Savoy in London. This is the very same barrel that is playing host to Age of Discovery for its global journey. When Queen Mary 2 returns to Southampton on 10 May 2016, the barrel will be ceremoniously unloaded and sent to Scotland for bottling. It is estimated that the unique barrel will yield a minimum of 250 litres of Age of Discovery, which will become the latest limited edition bottle in The Savoy Collection; one of the world’s most prestigious and unique collections of one-ofa-kind spirits and liquids. Launched in 2013, The Savoy Collection was created with the support of esteemed drinks experts, Speciality Drinks, to celebrate the rare and the beautiful from the world of drinks. Age of Discovery will also be available at the Beaufort Bar as an exclusive “explorative” serve; inspired by the incredible, vast journey the cocktail has taken. Guests who order the limited edition cocktail, of which there are only 700 serves, will also be given a special keepsake to take home as a memento of the experience. During her four-month circumnavigation, Queen Mary 2 will visit 39 ports of call in 27 countries. The barrel has been secured in open deck space for the duration of the voyage to expose it to the varied elements and climates that will influence the final result. Prevailing temperatures, humidity and sunlight – as well as more inclement conditions – will combine to produce this truly unique barrel-aged cocktail. The progress of Age of Discovery has been charted via social media throughout the passage; across the oceans and appearing in the world’s most iconic ports and cities. The barrel also has its own unique Log Book. Created by the talented team at The Savoy’s Beaufort Bar, the Age of Discovery cocktail has been designed to represent the diverse areas through which it will travel on board the Queen Mary 2 and takes its inspiration from the thrilling era of naval exploration between the 15th and 18th centuries. Neil Donachie from the Beaufort Bar says “The Jack Daniels and Bacardi represent the discovery of the Americas, while the Dubonnet is there as a symbol of Cunard’s royal associations. The spice-infused Madeira, used to sweeten the cocktail, is synonymous with the famous spice trail and oceanic expeditions.” Nidal Ramini, Head of Advocacy at Jack Daniel’s added, “We have a great partnership with The Savoy and they’ve been hand-selecting their own Jack Daniel’s Single Barrel for five years. It’s great to take this partnership to another level and be involved with Age of Discovery. A London icon since it opened in 1889, the Savoy, a Fairmont Managed Hotel, has been a home away from home for celebrities such as Charlie Chaplin, Katharine Hepburn, Winston Churchill, Frank Sinatra, and even Claude Monet, who set up an easel on the balcony and painted his famous views of the Thames. It has had a reputation for culinary excellence since Cesar Ritz, who ran the stately hotel’s restaurant, invited his collaborator Auguste Escoffier into the kitchen. Later, the
American Bar became a refuge for bartenders fleeing Prohibition, like Harry Craddock, who wrote The Savoy Cocktail Book,considered the definitive compendium of classic cocktail recipes. Today, guests of the Savoy are surrounded by history while enjoying all the modern conveniences they expect in a world-class hotel. Rooms and suites pay homage to the property’s pedigree with Italian linens, silk wall coverings, marble baths, and Murano-glass chandeliers.
If you guessed that the hotel’s most popular suite is done up in Edwardian elegance, you’d be right. Though not in the highest category (that is reserved for the Personality Suites), the most requested room is one of the one-bedroom River View Suites, which start at $1,812 per night, located on the seventh floor. The charms of the accommodations are apparent even before guests set foot in the hotel, thanks to a chauffeured transfer, and a welcome drink, butler service, and complimentary garment pressing certainly don’t hurt. The elegant design is the real star, though— the 861-square-foot suite comprises a sitting room, a bedroom, a bath with a freestanding clawfoot tub and separate walk-in shower, an entry foyer, and a cloakroom. “Our one-bedroom River View Suites are the jewel in the Savoy’s crown,” said Sean Davoren, head butler at the Savoy. “We have several regular guests who will not stay anywhere but here. You would definitely have heard of these guests, but I couldn’t possibly say who they are. A butler never tells!”
